Abstract
Colorectal cancer (CRC) is the third most common type of cancer, posing a serious threat to human life. It is widely believed that dietary factors may be crucial modifiers of CRC risk, with pro-and/or prebiotics being especially promising. In this review, a synthesis of CRC prevention and treatment of strategies relying on usage of pro- and/or prebiotics supplements is given, as well as discuss mechanisms underlying the contribution of pro-and/or prebiotics to the suppression of colonic carcinogenesis. Furthermore, a framework for personalizing such supplements according to the composition of an individual's gut microbiome is suggested. Various factors including diversity of one's intestinal microflora, integrity of their intestinal barrier, and the presence of mutagenic/carcinogenic/genotoxic and beneficial compounds are known to have a prominent influence on the development of CRC; thus, clarifying the role of pro- and/or prebiotics will yield valuable insight toward optimizing interventions for enhanced patient outcomes in the future.

Abstract
Photocatalytic sterilization is an eco-friendly strategy to utilize solar energy for treating water contaminated with resistant bacteria. Here, we propose interface engineering to induce an internal electric field (IEF) in leaf-like Ti3C2Tx/TiO2 based on the work function (Φ) theory, which enhances photocatalytic sterilization performance by steering interface charge kinetics. Density functional theory (DFT) calculations and in situ irradiation X-ray photoelectron spectroscopy (ISI-XPS) results show that photogenerated charge carriers can be directionally separated by the IEF. The efficient charge kinetics benefits the reactive oxygen species (ROS) generation and hence a superior broad-spectrum sterilization performance. We employ the intrinsic physical characteristics of MXene to steer interface charge kinetics for photocatalysis, which exhibits great potential in water disinfection.

Abstract
A nanocomposite (UiO-66/Ce-MnO2) was fabricated by combining UiO-66 with cerium-doped manganese dioxide (Ce-MnO2) for colorimetric detecting vitamin C (Vc). Compared with traditional artificial enzymes, the as-synthesized UiO-66/Ce-MnO2 were simple to prepare and did not require the participation of other active substances. The doping of cerium increased the oxygen vacancies and the UiO-66 as a carrier improved the dispersibility. The formation of superoxide anion (O2-) and the inside Ce4+/Ce3+ and Mn4+/Mn3+ redox couples of UiO-66/Ce-MnO2 endowed UiO-66/Ce-MnO2 with a high catalytic capability, which could catalytically oxidize 3, 3', 5, 5'-tetramethylbenzidine (TMB) into oxidation state TMB (oxTMB) without H2O2, accompanying with color change and a prominent peak at 652 nm in UV-vis spectra. Based on the inhibitory effects of Vc on catalytic oxidation of TMB, detection of Vc can be achieved, exhibiting a linear relationship in the concentration of 1.13-17.01 μmol L-1 with a low detection limit of 65.82 nmol L-1. This system can also be detected by smartphone, the linear detection range is 12.47-22.67 μmol L-1. Vc contents in fruits and vegetables detected by the sensor were in good agreement with the 2, 4-Dinitrophenylhydrazine colorimetry method (P > 0.05), indicating a reliable sensor for Vc detection.

Abstract
Lactic acid bacteria can convert selenium (Se) from inorganic to organic and elemental forms, but the distribution and existence form of organic Se in the bacteria are not clear after Se enrichment, and the effects of selenization on the growth and nutritional value of strains also need to be studied. In this study, Pediococcus acidilactici MRS-7 could absorb up to 67% of inorganic Se and convert most of it into organic Se; about 75% of organic Se was selenoprotein, 2.7% was Se-polysaccharide, and 4.6% was Se-nucleic acid. Additionally, Se-enriched treatment increased the levels of amino acids and essential elements in P. acidilactici MRS-7. Finally, after Se enrichment, Se nanoparticles (SeNPs) were found on the surface of P. acidilactici MRS-7, but they had no harmful effect on its morphology, and its survival during gastrointestinal digestion was not affected, indicating that SeP has potential probiotic value in the food industry.

Abstract
The aim of this study was to evaluate the ability of the Saccharomyces cerevisiae strain with probiotic properties isolated from Tibetan kefir grains to ameliorate Fusobacterium nucleatum (Fn) infection and dextran sulfate sodium (DSS) treatment-induced murine model of colitis. The tolerance to simulated gastrointestinal conditions, hydrophobicity test, autoaggregation assay, and the antioxidant effect of strains was used to screen one strain with colonization and probiotic potential. The murine model of colitis was established by giving 109 cfu Fn 3 weeks by intragastric administration and 3% DSS in water 1 week before sacrifice. The results indicated that S. cerevisiae JKSP39 (SC) possessed optimal probiotic characteristics in vitro. Supplementation with SC increased the body weight and the expression of anti-inflammatory cytokines (IL-4 and IL-10), while decreasing the disease activity index score and expression of proinflammatory cytokines (TNF-α, IL-6, and IL-17F) in mice undergoing experimental colitis as compared with the colitis model group. Additionally, tight junction proteins and the number of goblet cells per crypt were significantly increased in the SC group, which indicated that the gut barrier was well repaired. The mechanism of SC ameliorating Fn-DSS-induced colitis could be related to the decreased levels of reactive oxygen species (myeloperoxidase, total superoxide dismutase, catalase, H2O2, and malondialdehyde) in the colon, the inhibition of endoplasmic reticulum stress, and the regulation of gut microbiota.

Abstract
COVID-19 threatens human life because of the super destructiveness produced from its coronal morphology and strong transmembrane infection based on spike glycoprotein. Inspired by the coronal morphology of COVID-19 and its means of infecting, we designed an "artificial virus" with coronal morphology based on the concept of "defeating superbacteria with superviruses" by self-assembling a transacting activator of transduction peptide with triple-shell porous graphitic carbon nitride (g-C3N4) embedded with cobalt nanoparticles to forcefully infect methicillin-resistant Staphylococcus aureus (MRSA). The results confirmed that this "artificial virus" had unique properties of crossing the bacterial cell membrane barrier, heating the internal bacterial microenvironment and triggering ROS outbreak, based on its coronal morphology, membrane penetration, temperature-rising and heat insulation, oxidase-like activity and excellent visible-light harvesting properties. It had a high sterilization efficiency of 99.99% at 20 min, which was 18.6 times that of g-C3N4, and the efficiency remained at 99.99% after 3 rounds of recycling and reuse. Additionally, it can rapidly inactivate bacteria in river water and accelerate wound healing.

Abstract
Photocatalytic disinfection is a promising way to combat bacterial pollution in the water environment. Inefficient use of visible light and undirected diffusion of reactive oxygen species (ROS) reduce photocatalytic disinfection efficiency. Herein, inspired by the concentrating effect of convex lens, photocatalysts with particular "nano-magnifying glass effect" (TCNMgNOs) were designed by embedding magnesium oxide with "converge effect" into the tailored hierarchical triple-shell porous g-C3N4 with "one light multi-purpose effect" to boost the visible-light utilization. Meanwhile, the ATPase hydrolysis homeostasis of bacteria was destroyed by TCNMgNOs to achieve the targeted movement of ROS. The results confirmed that the photocatalytic sterilization efficiency of TCNMgNOs was amplified by 30 times over g-C3N4, which was achieved by focusing visible light, multiple reflecting visible light and light transmission within the porous thin shells as well as the "addictive sterilization mechanism". The sterilization efficiency still maintains 98.8 % (15 min) after 6 rounds recycling and reusing in practical river water disinfection. A novel pathway for fighting against microbial contaminants in natural water was explored.

Abstract
Concerns about environmental and food contamination caused by chlortetracycline (CTC) residues have prompted people to explore efficient and convenient CTC monitoring platforms. However, the reported fluorescent probes generally fail to selectively detect CTC due to the structural similarity of tetracycline antibiotics. Herein, an intrinsic dual-emission carbon dots (D-CDs) ratiometric fluorescence sensor was prepared for highly sensitive and selective determination of CTC over other tetracyclines by one-step synthesis. The sensor exhibited a significant fluorescence enhancement at 425 nm after introducing CTC. The fluorescence "turn on" of the sensing system is due to aggregation-induced emission (AIE) phenomenon formed by hydrogen bonds and π conjugation promoting the specific recognition of CTC by D-CDs. The linear detection varied from 0.98 to 143.67 ng mL-1 with a low limit of detection (LOD) of 1.29 ng mL-1 (R2 = 0.998), which was lower than most reported in the literature. The D-CDs sensor was applied to detect CTC in spiked milk, blocked normal human serum, and fish samples with recoveries of 95.5-104.2% and relative standard deviations (RSDs) of 2.6%. Particularly, D-CDs based test papers with a smartphone were prepared for portable and visual detection of CTC by analyzing the various color changes of RGB of fluorescence color, with an LOD of 7.18 ng mL-1 (R2 = 0.9909). The fluorescence sensor designed in this work could be used as a rapid tool with high performance and selectivity for monitoring control in foods.

Abstract
Patulin (PAT) is an unsaturated lactone mycotoxin primarily produced by Penicillium expansum and Aspergillus clavatus. Given the potential health risks and economic losses associated with PAT, the rapid detection of PAT using fluorescent aptasensors is of significant importance in evaluating food safety. However, it easily increases the cost and complexity caused by signal labeling. We combined TCPP/BDC-NH2 mixed ligands functionalized Zr metal-organic frameworks (Zr-MOFmix) and terminated three-stranded DNA gates (ttsDNA gates) to fabricate a label-free fluorescent aptasensor for PAT detection. The Zr-MOFmix system was synthesized via a one-pot strategy and could be used to address the problem of pore size limitation and increase the loading amounts of dyes. TtsDNA gate was integrated into the Zr-MOFmix system to control the release of dyes, exhibiting a high signal-to-background ratio. The single-stranded aptamer region in ttsDNA gate situated away from the surface of the Zr-MOFmix, resulting in a natural release of dyes in the absence of PAT. While binding to PAT resulted in target-induced conformational changes that helped form the hairpin structure of the aptamer. This structure hindered the release of dyes from the pores of Zr-MOFmix, thus reducing the fluorescence signals intensity. The stimuli-responsive DNA-gated material provides a platform for PAT analysis under conditions of a low limit of detection (0.871 pg/mL). Furthermore, the excellent specificity and anti-interference of the fluorescent aptasensor make the system suitable for the analysis of apple juice samples. This label-free strategy is cheaper and simper compared with labeled detection, especially for the development of multi-target-detection.

Abstract
Ochratoxin A (OTA) is a secondary metabolite of several fungi and widely exists in various species of foods. The establishment of effective methods for OTA reduction is a key measure to ensure food processing and human health. This article reviews the current research of OTA reduction by biological approaches, summarizes the characteristics and efficiency of them, and evaluates the transformation pathways and metabolites safety of each degradation technology. The shortcomings of various methods are pointed out and future prospects are also proposed. Biological methods are the most promising approaches for OTA control. The defect of them is the long processing time and the growth of microbial cells may affect the product quality. Therefore, the control of OTA contamination should be conducted according to the food processing and their product types. Besides, it is significant for the exploitation of new strains, enzyme and novel adsorbents.

Abstract
Bacterial infection causes wound inflammation and slows wound healing, posing a great threat to human health, which needs to explore more antibacterial nanobiomaterials to promote wound healing. Therefore, this study was conducted to develop low-cost silver/Fe3O4@Chitosan@polyvinyl alcohol (Ag/Fe3O4@CS@PVA) via a one-pot method to promote healing in bacteria-infected wounds. Scanning electron microscopy (SEM), high-resolution transmission electron microscopy (HRTEM), X-ray diffraction (XRD), Fourier-transform infrared (FT-IR), X-ray photoelectron spectroscopy (XPS), and vibrating sample magnetometry (VSM) confirmed that Ag/Fe3O4@CS@PVA was successfully prepared. In vitro antibacterial experiments demonstrated strong antibacterial activity of Ag/Fe3O4@CS@PVA against Escherichia coli and Staphylococcus aureus. The Ag/Fe3O4@CS@PVA destroyed the bacterial cell membrane or internal structure, thus resulting in cell death for antibacterial effects. Cytotoxicity and hemolysis rate tests showed that Ag/Fe3O4@CS@PVA posed fine biocompatibility. In addition, in vivo assays confirmed that Ag/Fe3O4@CS@PVA not only promoted the healing of wound infection caused by bacteria, but also had no toxic effect on mouse organs. Therefore, the low-cost Ag/Fe3O4@CS@PVA nanocomposites have great potential in controlling 'bacterial' pathogen.

Abstract
The crucial features of persimmon are required to detect real-time moisture, water-soluble tannin, and soluble solids contents during the drying process. This study developed a method based on hyperspectral imaging (HSI) to execute online and non-destructive assaying of persimmon features. A total of 144 samples were collected, and 150 bands were scanned. The spectral data were analyzed by partial least squares regression (PLSR), principal component regression (PCR), least squares support vector regression (LS-SVR), and radial basis function neural network (RBFNN) with seven preprocessing methods. LS-SVR provided excellent performance for moisture content prediction, while PLSR was better in the analysis of water-soluble tannin and soluble solids contents. Successive projection algorithm (SPA) was used to select the optimal wavelengths to simplify the models, and about twenty important variables were chosen. Overall, these results indicate that HSI could be considered a valuable technique to quantify chemical constituents in dried persimmon fruits.

Abstract
In the present study, the color, total sugar, contents of soluble protein, total polyphenols, total flavonoids, and soluble vitamins, and other indicators of black fungus treated with sodium metabisulfite under different conditions were measured to evaluate the sensory and nutritional changes in black fungus after sulfite treatment. The results showed that use of sodium metabisulfite increased the lightness of black fungus, significantly increased the contents of total polyphenols and reducing sugars in the fungus (p < 0.05), increased the content of soluble protein, and decreased the content of total flavonoids. In addition, sodium metabisulfite destroyed vitamin C and B1 in black fungus. When the concentration of sodium metabisulfite was 0.5% and the soaking time 20 or 30 min, the color of black fungus improved markedly, and nutrients were not negatively affected. Therefore, the use of sodium metabisulfite improved the quality of fungus to a certain extent.
