Abstract
A high demand exists in bisphenols (BPs) screening studies for quick, reliable and straightforward analytical methods that generate data faster and simultaneously. Herein, we describe a combination of enzymatic probe sonication (EPS) and ultra-performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS) for quick extraction and simultaneous quantification of eight important BPs in animal-derived foods. Results obtained demonstrated that the ultrasonic probe power could not only enhance the enzymatic hydrolysis efficiency, but also accelerate the liquid-liquid extraction procedure. Under optimized EPS parameters, one sample could be exhaustively extracted within 120 s, as compared with 12 h needed for the conventional enzymatic extraction which is more suitable for high-throughput analysis. The method was successfully applied to analyze residual BPs in animal-derived foods collected from Beijing, China. Widespread occurrence of BPA, BPS, BPF, BPAF, BPP, and BPB were found, with detection frequencies of 65.2%, 42.4%, 33.7%, 29.4%, 28.3%, and 27.2%, respectively. The highest total concentration levels of BPs (sum of the eight BPs analyzed, ΣBPs) were found in chicken liver (mean 12.2 μg/kg), followed by swine liver (6.37 μg/kg), bovine muscle (3.24 μg/kg), egg (2.03 μg/kg), sheep muscle (2.03 μg/kg), chicken muscle (1.45 μg/kg), swine muscle (1.42 μg/kg), and milk (1.17 μg/kg). The estimated daily intake (EDI) of BPs, based on the mean and 95th percentile concentrations and daily food consumptions, was estimated to be 5.687 ng/kg bw/d and 22.71 ng/kg bw/d, respectively. The human health risk assessment in this work suggests that currently BPs do not pose significant risks to the consumers because the hazard index (HI) was <1.

Abstract
Simple Summary Along with concerns about the shortage of future food resources, the problem of ensuring a stable supply of feed materials is emerging. The rapid growth of the pet food market is also increasing the demand for new food ingredients, requiring the evaluation of their safety and nutritional value. Recently, insects and fermented foods are some of the materials that have entered the spotlight as potential future foods, and studies on their usefulness as food are being actively conducted. This study aimed to evaluate and verify the safety of fermented oat (Avena sativa) and black soldier fly larva (Hermetia illucens L.) when used in a dog food as part of the effort toward discovering suitable nutritionally excellent and functional food materials. Our results show that 10% fermented oat flour, 5% black soldier fly larva meal, or a combination thereof in the food did not negatively affect food intake, body weight, fecal status, skin condition, or hematological and biochemical parameters. Overall, our findings suggest that fermented oat and black soldier fly larva can be used as food ingredients for dogs. Abstract The aim of this study was to evaluate the suitability of fermented oat (FO) and black soldier fly larva (BSFL) as food ingredients for dogs. A total of 20 spayed female dogs were divided into four treatment groups, with 5 dogs per group. The four treatment groups consisted of a control group, a diet with 10% FO, one with 5% BSFL, and one with 10% FO and 5% BSFL, and each experimental food was fed for 12 weeks. The feeding of FO and/or BSFL did not affect the daily food intake, body weight, body condition score, fecal score, or skin condition of the dogs. In all the experimental groups, no significant differences in serum IgG, IL-10, or TNF-α levels were observed upon the feeding of FO and/or BSFL. Some hematological (white blood cell and basophils) and serum biochemical parameters (phosphorous, globulin, and alkaline phosphatase) showed significant differences with FO and/or BSFL feeding compared to the control group, but they were within the normal reference range. No adverse clinical signs related to these parameters being affected by FO and BSFL were observed. The feeding of BSFL for 12 weeks reduced the serum cholesterol level (p < 0.05) at the end of the experiment. Our findings suggest the suitability of FO and BSFL as food materials for dogs.

Abstract
There is a growing need for protein for both feed and food in order to meet future demands. It is imperative to explore and utilize novel protein sources such as protein from leafy plant material, which contains high amounts of the enzyme ribulose-1,5-biphosphate carboxylase/oxygenase (RuBisCo). Leafy crops such as grasses and legumes can in humid climate produce high protein yields in a sustainable way when compared with many traditional seed protein crops. Despite this, very little RuBisCo is utilized for foods because proteins in the leaf material has a low accessibility to monogastrics. In order to utilize the leaf protein for food purposes, the protein needs to be extracted from the fiber rich leaf matrix. This conversion of green biomass to valuable products has been labeled green biorefinery. The green biorefinery may be tailored to produce different products, but in this Review, the focus is on production of food-grade protein. The existing knowledge on the extraction, purification, and concentration of protein from green biomass is reviewed. Additionally, the quality and potential application of the leaf protein in food products and side streams from the green biorefinery will be discussed along with possible uses of side streams from the protein production.

Abstract
The societal acceptability of different applications of genomic technologies to animal production systems will determine whether their innovation trajectories will reach the commercialisation stage. Importantly, technological implementation and commercialisation trajectories, regulation, and policy development need to take account of public priorities and attitudes. More effective co-production practices will ensure the application of genomic technologies to animals aligns with public priorities and are acceptable to society. Consumer rejection of, and limited demand for, animal products developed using novel genomic technologies will determine whether they are integration into the food system. However, little is known about whether genomic technologies that accelerate breeding but do not introduce cross-species genetic changes are more acceptable to consumers than those that do. Five focus groups, held in the north east of England, were used to explore the perceptions of, and attitudes towards, the use of genomic technologies in breeding farm animals for the human food supply chain. Overall, study participants were more positive towards genomic technologies applied to promote animal welfare (e.g., improved disease resistance), environmental sustainability, and human health. Animal “disenhancement” was viewed negatively and increased food production alone was not perceived as a potential benefit. In comparison to gene editing, research participants were most negative about genetic modification and the application of gene drives, independent of the benefits delivered.

Abstract
The aim of this study was to investigate the impact of ewe genetic merit on ewe performance and efficiency parameters. The study consisted of three genetic merit groups (New Zealand [NZ], High Irish, and Low Irish) and ran from 2016 to 2019, inclusive. Each genetic merit group contained 30 purebred Suffolk and 30 purebred Texel ewes, which were selected based on their maternal genetic indexes in their country of origin, namely Ireland (€uro-star Replacement index) or New Zealand (New Zealand Maternal worth). Ewe body condition score (BCS), ewe body weight (BW), milk yield, milk composition, dry matter intake (DMI), and efficiency parameters were all analyzed using linear mixed models. Ewe BW was similar across all genetic merit groups at each time point (P > 0.05). In comparison to both High and Low Irish ewes, NZ ewes had a higher BCS at mating, mid-pregnancy, lambing, week 10 post-lambing (PL, P < 0.05). Ewe BW change was similar across genetic merit groups, except between mating and mid-pregnancy where ewe BW loss was greater for NZ ewes than Irish ewes (P < 0.05) and between weeks 6 PL and 10 PL, where NZ ewes gained BW and High and Low Irish ewes lost BW (P < 0.01). Ewe milk yield, milk fat, total solids, and gross energy content were superior for milk produced by NZ ewes at week 6 PL in comparison to milk produced by High Irish and Low Irish ewes (P < 0.01). NZ ewes produced a greater quantity of milk solids/kg of BW at week 6 PL compared with High Irish ewes (P < 0.01), whereas Low Irish ewes did not differ from either NZ or High Irish (P > 0.05). Low Irish ewes had a greater daily DMI than High Irish ewes in late lactation (week 10 PL, P < 0.05) and had a greater DMI/kg of ewe BW compared with the High Irish ewes at the same time point (P < 0.05). NZ ewes weaned a litter BW equivalent to 60.4% of their mating BW, which was more than the Low Irish ewes who weaned 57.1% of the ewe's BW at mating (P < 0.01), whereas the High Irish ewes did not differ from either the NZ or Low Irish ewes at 59.3% of the ewe's BW at mating (P > 0.05). This study presents a range of parameters across ewes of high and low genetic merit, demonstrating the ability to achieve gains through selection of animals of high genetic merit. Sheep producers should consider genetic indexes as a tool to assist in the decision-making process of selecting replacement ewes and/or breeding rams, once satisfied the animal is correct, and meeting the breeding objectives of the system.

Abstract
The increasing world population with improved living conditions has increased the demand for food protein. This has intensified the search for sustainable alternative plant-derived high-quality protein sources for human nutrition. To study the effect of plant and milk proteins on growth in weaned pigs as a model for humans, 96 weaned pigs were divided into 48 pens and fed one of 4 different diets for 3 weeks. The dietary protein originated from either 50% rice + 50% 00-rapeseed protein (RICE + RAPE), 50% milk protein (MPC) + 50% 00-rapeseed protein (MPC + RAPE), 50% milk + 50% rice protein (MPC + RICE), or 100% MPC, and were supplemented with crystalline amino acids to meet the amino acid requirements. Weekly feed intake and body weights were recorded and after 3 weeks, a blood sample was taken 1 hour after a fixed meal, while organ weights were measured, and liver- and muscle tissue, and bone samples were collected at euthanasia. All pigs had a high daily gain and a low feed-to-gain ratio (F : G, feed intake per kg weight gain), but feed intake and daily gain was lowest and F : G highest in the RICE + RAPE diet. Metacarpal bones were longer and heavier in MPC + RICE and MPC fed pigs compared to pigs fed diet RICE + RAPE (P < 0.05), and intermediate in MPC + RAPE fed pigs, with no differences in bone thickness (P > 0.05). Plasma levels of all essential amino acids except Cys and Lys decreased markedly when fed a diet containing only plant protein. The differences were not associated with differences in plasma insulin or IGF-1, nor in the abundance of mRNA related to growth in liver and longissimus dorsi muscle. In conclusion, the growth of piglets fed a combination of milk and rice protein did not differ from the pure dairy-based diet, whereas the pure plant-based diet consisting of rice and rapeseed protein led to reduced growth. This was most likely caused by a lower feed intake and a lower than expected amino acid digestibility of the 00-rapeseed protein. There were no indications that the milk protein, beyond a favourable amino acid composition and high digestibility, specifically stimulated growth factors or other biomarkers of growth via the IGF-1 and insulin signalling pathways.

Abstract
Entomophagy - the consumption of insects - is often rejected by Western society despite its benefits over traditional animal-based proteins. While several factors have been identified as potential predictors of people's willingness to try insect foods, this study introduced an under-explored factor: curiosity, which is a powerful motivator of behaviour that can overcome negative emotions and motivate us to seek new experiences. In two experiments (Ns = 240 and 248), participants (all UK residents, 99.6% British citizens) rated a number of food dishes, half of which contained insects, on a number of factors including curiosity and willingness to try the dish. Across both studies, curiosity predicted willingness to try both insect and non-insect foods above and beyond other factors. Furthermore, we unexpectedly (but consistently) observed a "curiosity-boosting effect" in which curiosity positively interacted with other predictors, increasing their effect on willingness to try insect foods, but not familiar foods. These findings suggest that curiosity promotes the willingness to try insect food in two different manners: A direct effect (above and beyond other factors) and a boosting effect.

Abstract
Residual biomass is acknowledged as a key sustainable feedstock for the transition towards circular and low fossil carbon economies to supply whether energy, chemical, material and food products or services. The latter is receiving increasing attention, in particular in the perspective of decoupling nutrition from arable land demand. In order to provide a comprehensive overview of the technical possibilities to convert residual biomasses into edible ingredients, we reviewed over 950 scientific and industrial records documenting existing and emerging waste-to-nutrition pathways, involving over 150 different feedstocks here grouped under 10 umbrella categories: (i) wood-related residual biomass, (ii) primary crop residues, (iii) manure, (iv) food waste, (v) sludge and wastewater, (vi) green residual biomass, (vii) slaughterhouse by-products, (viii) agrifood co-products, (ix) C1 gases and (x) others. The review includes a detailed description of these pathways, as well as the processes they involve. As a result, we proposed four generic building blocks to systematize waste-to-nutrition conversion sequence patterns, namely enhancement, cracking, extraction and bioconversion. We further introduce a multidimensional representation of the biomasses suitability as potential as nutritional sources according to (i) their content in anti-nutritional compounds, (ii) their degree of structural complexity and (iii) their concentration of macro- and micronutrients. Finally, we suggest that the different pathways can be grouped into eight large families of approaches: (i) insect biorefinery, (ii) green biorefinery, (iii) lignocellulosic biorefinery, (iv) non-soluble protein recovery, (v) gas-intermediate biorefinery, (vi) liquid substrate alternative, (vii) solid-substrate fermentation and (viii) more-out-of-slaughterhouse by-products. The proposed framework aims to support future research in waste recovery and valorization within food systems, along with stimulating reflections on the improvement of resources' cascading use.

Abstract
The principal by-product from the two-phase olive oil production process is olive mill solid waste (OMSW). It is a highly-pollutant by-product, not only because of its characteristics, but also because of the considerable volume of OMSW which is generated, amounting to 2 to 4 million tons per year in Spain. The anaerobic digestion of this by-product is a well-studied process, and results in the generation of biogas, methane and carbon dioxide mainly of high calorific values (20-25 MJ m-3), and an effluent or digestate. The digestate of this by-product has never been characterized. This study presents an informative view on how the composition of OMSW digestate shows promising implications as a soil amendment or fertilizer due to the quality of the biomass from Lolium rigidum, a useful grass specie for the production of forage. Three OMSW digestate alternative applications or treatments were investigated: the digestate and the solid fraction of the digestate for a nutrient-poor soil amendment and the liquid fraction of the digestate as fertilizer. The results confirm that all the OMSW digestate treatments studied presented suitable characteristics for agricultural use, and showed an optimal Carbon/Nitrogen ratio with adequate values for heavy metals which are below the limits established by the Spanish and European legislation in the absence of pathogens. However, fertirrigation was the treatment that provided Lolium rigidum with the best characteristics, improving its shoot biomass, photosynthetic rate and nutritional content.

Abstract
The dairy industry struggles to maintain consumer attention in the midst of declining fluid milk sales. Current trends create an opportunity to incorporate plant-based proteins with milk to produce a high-protein, multisourced, functional food product. Plant-based proteins, such as those in peas, can be challenging to use in food systems because of their low solubility and undesirable off-flavors. Casein micelles have unique structural properties that allow for interactions with small ions and larger macromolecules that aid in their noteworthy ability as a nanovehicle for hydrophobic compounds. The objective of this study was to use the inherent structure of the casein micelle along with common dairy processing equipment to create a stable colloidal dispersion of casein micelles with pea protein to improve its solubility in aqueous solutions. We created 3 blends with varying ratios of casein-to-pea protein (90:10, 80:20, 50:50). We subjected the mixtures to 3 cycles of homogenization using a bench-top GEA 2-stage homogenizer at 27,580 kPa maintained at 4°C, followed by pasteurization at 63°C for 30 min. The resulting blends were homogeneous liquids with increased stability due to the lack of protein precipitation. Further protein analysis by HPLC and AA sequencing revealed that vicilin, an insoluble storage protein, was the main pea protein incorporated within the casein micelle structure. These results supported our hypothesis that low-temperature homogenization can successfully be used to create a colloidal dispersion with increased stability, in which insoluble plant-based proteins may be incorporated with casein micelles in an aqueous solution. Additionally, 3-dimensional microscope images of the blends indicated a noticeable difference between the surface roughness upon addition of pea protein to the casein micelle matrix. This research highlights a promising application for other plant-based proteins to be used within the dairy industry to help drive future product innovation while also meeting current processing conditions and consumer demands.

Abstract
The urgency for a protein transition towards more sustainable solutions is one of the major societal challenges. Microbial protein is one of the alternative routes, in which land- and fossil-free production should be targeted. The photohydrogenotrophic growth of purple bacteria, which builds on the H2- and CO2-economy, is unexplored for its microbial protein potential. The three tested species (Rhodobacter capsulatus, Rhodobacter sphaeroides and Rhodopseudomonas palustris) obtained promising growth rates (2.3-2.7 d-1 at 28°C) and protein productivities (0.09-0.12 g protein L-1 d-1), rendering them likely faster and more productive than microalgae. The achieved protein yields (2.6-2.9 g protein g-1 H2) transcended the ones of aerobic hydrogen oxidizing bacteria. Furthermore, all species provided full dietary protein matches for humans and their fatty acid content was dominated by vaccenic acid (82-86%). Given its kinetic and nutritional performance we recommend to consider Rhodobacter capsulatus as a high-potential sustainable source of microbial food.

Abstract
Single cell protein (SCP) is the first product of the fermentation process and has proven to be a good protein alternative. Food competition is becoming more intense as the world’s population continues to grow. Soon, SCP may be able to compensate for a protein deficit. Various global businesses are focusing on SCP production, and the scope of its application is expanding as time and knowledge increases. High quantities of SCP can be produced by microorganisms, such as algae, yeast, fungi and bacteria, due to their fast development rate and the significant level of protein in their chemical structure. Beside proteins, SCP contains carbohydrates, nucleic acids, lipids, minerals, vitamins and several important amino acids. SCP has been an effective substitute for more expensive protein sources such as fish and soybean products. In conclusion, SCP can easily replace traditional protein sources in human and animal feed without detrimental effects. Potential substrate candidates and optimization strategies for SCP production have been extensively studied. This review article focuses on the various aspects of SCP, from its production, using different substrates, player microorganisms and nutritional benefits, to its economic aspects.

Abstract
In connection with the active growth of poultry processing, the issue of rational use of poultry by-products is urgent. The paper proposes hydrolysis of the gizzards of broiler chickens and hens of the parent stock with bifidobacteria liquid concentrate (BLC) and Propionix liquid concentrated starter culture (Propionix LCSC). The effect of enzymatic treatment on changes in the structural components of the gizzards was studied using scanning electron microscopy (SEM) and determination of the dispersed composition. As a result of the research, the multiple regression equations and the response surfaces were obtained, which describe the optimal parameters of the gizzard´s hydrolysis process. The temperature and the time of hydrolysis are factors that have a significant effect on the degree of hydrolysis. The results of the structural and microscopic analysis confirm the high hydrolysability of the by-products by changing its structure and increasing the number of smaller protein particles. It was found experimentally that the gizzards of hens are more susceptible to the action of probiotic microorganisms’ enzymes compared to the gizzards of broiler chickens.

Abstract
Algae are a large and diverse group of autotrophic organisms that are multicellular and single-celled and found in a variety of environments. Biofuel production and value-added chemicals produced through a sustainable process are represented by the biorefinery of algae. Algae are important because of the production of polysaccharides, lipids, pigments, proteins, and other compounds for pharmaceutical and nutritional applications. They can also be used as raw materials for biofuel production. Moreover, they are useful for wastewater treatment. All these factors have absorbed the attentions of researchers around the world. This review focuses specifically on the potentials, properties, and applications of algae as a sustainable renewable resource, which can be a good alternative to other sources due to their high biomass production, less land required for cultivation, and the production of valuable metabolites.

Abstract
Black soldier fly (Hermetia illucens) has received considerable interest as an alternative protein source. Aqueous solutions of black soldier fly larvae (BSFL) protein and glucose (2:1 w.w−1, pH 9) were heated at 50, 70 and 90 °C, for 2–10 h at 2 h intervals, respectively. The zeta-potential (ζ) of BSFL-Glu conjugates heat-treated at 70 °C ranged from -10.25 to -25.25 mV while the native BSFL protein ranged from -12.84 to -16.70 mV. The ζ-potential analysis revealed that the glycation reaction modified the surface charge density of the BSFL protein as a function of reaction time and temperature. In addition, an increase in thermal stability of the BSFL-Glu conjugates was observed by means of Thermo-gravimetric analysis (TGA) and differential scanning calorimetry (DSC). Fourier transform infrared spectroscopy (FT-IR) analysis indicated that the most apparent structural changes in the BSFL protein were in the amide I and amide II region. Well-separated clusters permitting differentiation between native BSFL and BSFL-Glu conjugates were observed by using principal component analysis (PCA) on FT-IR spectra. At 50, 70 and 90 °C the first two principal components (PC1 and PC2) showed an accumulated total variance of 91, 96 and 95%, respectively. A classification efficiency of 91% was obtained when using soft independent modelling of class analogy (SIMCA). Infrared spectroscopy combined with SIMCA is a powerful tool to monitor the formation of edible insect protein–sugar conjugates by Maillard reaction. As a result, combining FT-IR spectroscopy with multivariate techniques (PCA and SIMCA) exhibited a strong potential to differentiate between native and glycated protein samples from black soldier fly larvae.

Abstract
With the intensification of agriculture, the simplification of crop rotations, and the rise in demand for meat, dairy and cereal products, legume production and consumption are at an historic low in Europe. But as the environmental consequences of agriculture (biodiversity loss, high greenhouse gas emissions, water pollution) and the health outcomes of modern diets (heart disease, cancer, diabetes, obesity) become better known, so great and varied hopes are being expressed about the future role of legumes in the food system. This paper catalogues and scrutinises these hopes, mapping the promissory narratives now orbiting around legumes. It identifies six food futures, each of which is made possible through the greater use of legumes in various production, processing, marketing and consumption contexts. These promissory narratives are theorised as contrasting responses to three major areas of contestation in the food systems literature. Namely i) the sustainability of livestock management, ii) the role of technology in different visions of the 'good diet', and iii) the merits of different models for how to make agricultural management more sustainable. It identifies the promiscuity of legumes - in terms of the range of food futures they permit - before distilling three points of consensus amongst advocates of the potential of legumes. These points of consensus relate to their nitrogen fixing capacity, their high protein content, and their long-standing historical role in the context of European food and farming. This map of legume dreams serves to guide deliberations amongst researchers, policymakers and industry stakeholders about the futures of plant-based food in Europe.

Abstract
PURPOSE Fish is a delicate and valuable source of protein, and aquaculture is expected to provide the required amount of fish needed at reasonable prices. Packaging is a vital stage to preserve hygiene, quality and freshness of aquaculture products. The purpose of this study was to identify environmental hotspots in farmed seabass and meagre during the packaging stage and to examine scenarios for reducing environmental impacts, aiming at greenhouse gas neutrality. METHODS The life cycle assessment method was applied for the first time at three packaging plants of farmed seabass and meagre in western Greece, in order to assess their environmental impacts, taking into account the amount of electricity, expanded polystyrene, and other plastic and packaging materials needed. Moreover, different scenarios were designed involving the energy mix/alternative sources, recycling and reuse of packaging materials, and the replacement of standard polystyrene boxes and wooden pallets, in order to suggest environmentally friendly improvements in the packaging process. RESULTS AND DISCUSSION Conventional operation of seabass and meagre packaging plants requires significant amounts of energy and packaging materials. In fact, electricity, boxes and pallets were documented as the main contributors to most of the environmental impact indicators. Seabass packaging had a slightly lower overall environmental impact compared to meagre, due to its smaller market size. Impact minimization scenarios resulted in various degrees of reduction of environmental burdens in both species; however, near-zero GHG emissions were achieved when energy from photovoltaic panels and recycling/reuse of packaging materials were combined with the use of non-fossil-based boxes and recyclable pallets. Such readily applicable adjustments to the conventional operation of packaging plants would contribute to overall environmental sustainability and to better consumer acceptability of the final product. CONCLUSIONS In a nutshell, the life cycle assessment method proved to be a valuable tool for assessing the environmental performance of Mediterranean aquaculture packaging processes. Moreover, it served to identify critical factors directly related to the EU GHG neutrality target. Accordingly, environmentally friendly decision-making/strategic management in the farmed fish packaging sector will inevitably rely on alternative energy sources, recycling of packaging materials, and use of recyclable corrugated board boxes or similar non-fossil-based materials.

Abstract
The acceptance of eco-friendly black soldier fly larvae meal (BSFLM) as sustainable alternative protein ingredient in poultry feeds continues to gain momentum worldwide. This study evaluates the impact of BSFLM in layer chick and grower diets on the growth, carcass quality and economic returns. Mean weekly weight gain and total live weight per chick and grower varied significantly. The highest final weight gain was achieved when birds were provided diet with 25.6% BSFLM. Average daily feed intake (ADFI), average daily weight gain (ADG) and overall weight gain of the chick varied significantly, except for the feed conversion ratio (FCR). For grower birds, ADFI, ADG, FCR and overall weight gain did not vary significantly across the various feeding regimes. The weight of the wings and drumsticks had a quadratic response with a maximum weight obtained at 33% inclusion of BSFLM. The weight of the internal organs were not significantly affected by dietary types. Positive cost–benefit ratio and return on investment was recorded for diet types with higher BSFLM inclusion levels (>75%). Diets with 25% and 100% BSFLM inclusion were the most suitable and cost-effective, respectively. Thus, BSFLM represents a promising alternative source of protein that could be sustainably used in the poultry industries.

Abstract
The silkworm (Bombyx mori) is an important economic insect that can be used as food in many countries in Asia. However, silkworms and their metabolites are an important source of allergens, which can induce severe allergic reactions. So far, there are no systematic studies on the potential allergens in silkworm and its metabolites. These studies have important guiding significance for the prevention, diagnosis, and treatment of silkworm allergy. The aim of this study was to identify the potential allergens from larva, pupa, moth, silk, slough and feces of silkworm and analyze the sequence homology of silkworm allergens with other allergens identified in the Allergenonline database. We have found 45 potential allergens in silkworm. The results of the homology comparison suggested that silkworm allergens likely cross-react with those of Dermatophagoides farinae, Aedes aegypti, Tyrophagus putrescentiae, Triticum aestivum and Malassezia furfur.

Abstract
Fishmeal is the main source of dietary protein for most commercially farmed fish species. However, fishmeal prices have been raised even further because of competition with domestic animals, shortage in world fishmeal supply, and increased demand. Increased fishmeal prices have contributed to the quest for alternatives necessary to replace fishmeal as a global research priority. A literature search was conducted using these terms on Google Scholar and EBSCOhost; fishmeal replacement in fish feeds, fishmeal alternatives in fish feeds, animal protein sources in aquaculture, insects in fish feeds, terrestrial by-products, and fishery by-products. To calculate the variation between experiments, a random effect model was used. Results indicated that different fish species, sizes, and inclusion levels were used in the various studies and showed that the use of insects, terrestrial by-products, and fishery by-products has some limitations. Despite these drawbacks, the use of animal protein sources as a replacement for fishmeal in fish diets has had a positive impact on the feed conversion ratio, variable growth rate, final weight, and survival rate of different types of fish species of different size groups. Findings also showed that some animal by-products had not been assessed as a protein source in aquaculture or animal feeds, and future studies are recommended.

Abstract
Microalgal oils (AOs) emerged recently as an alternative to fish oil and to nutritionally poorer vegetable oils for fish species. In this trial, two experimental diets containing fish oil (negative control: 2.1%; positive control: 13.8%) and two diets incorporating AO at 3.5 and 0.7% were fed to grow out gilthead seabream (Sparus aurata) of 64.5 g initial body weight. After 110 days of experimental feeding, performance (final body weight mean = 147 g) and survival (>99%) were similar across treatments. The highest eicosapentaenoic acid (EPA) + docosahexaenoic acid (DHA) content in positive control (PC) and 3.5 AO feeds (3.11 and 2.18% of diet, respectively) resulted in the highest EPA + DHA deposition in the fillets (18.40 and 12.36 g/100 g fatty acid, respectively), which entirely reflected the dietary fatty acid profile. Feed and fillets from fish fed the AO diets had lower levels of dioxins and polychlorinated biphenyls (PCBs). Moreover, sensory quality of AO fillets scored equally to the PC fish. Collectively, these findings offer a more resilient means for sustaining the future growth of seabream aquaculture, whilst maintaining the nutritional value of the resulting seafood. The data supports the addition of seabream to the list of aquaculture species where microalgal oil can be used as an ingredient to fulfil their challenging nutritional demands.

Abstract
The biorefinery technology aiming at protein extraction is rising and identification of suitable plant biomass input with valuable protein compounds for extraction is needed. Forage crops have been evaluated by the Cornell Net Carbohydrate and Protein System (CNCPS), and the result used as proxy of extractable protein in a biorefinery process. This serves as a helpful link between crop production and refinery output; however, the method has never been validated. Such validation is the main aim of this study. Five forage species-white clover, red clover, lucerne, perennial ryegrass, and tall fescue-were cut at four dates during spring and processed in a lab-scale refinery (screw press and subsequent protein precipitation from the green juice). The pulp fraction and the precipitated protein concentrate were both CNCPS analyzed to follow the initial crude protein (CP) plant input into these two fractions. Total recovery in concentrate was highest for the legumes, which points to an advantage of these species in protein extraction setups. High recovery of B1 and B2 (50% or higher for the grasses) in the pulp demonstrated a large proportion of soluble protein ending up in the fibrous pulp and shed light on the reason behind high feed quality of the pulp fraction. In conclusion, the existing tentative assumption of extractable protein being equal to CNCPS fractions of B1 and B2 and partly B3 was shown to be too simplified. The presented findings can improve crop species screening in terms of expected extractable protein yield.

Abstract
The aim of this review is to compile up-to-date information on the superworm, Zophobas morio (F.), regarding its biology and ecology, but also its further potential for use as a nutrient source for food and feed. We illustrate certain basic characteristics of the morphology and bio-ecology of this species, which is marginally considered as a 'pest' in durable amylaceous commodities. More recent data show that Z. morio can be a valuable nutrient and antimicrobial source that could be utilized further in insect-based feed and food production. The inclusion of this species in aquafeed has provided promising results in a wide range of feeding trials, both in terms of fish development and health. Additional data illustrate its potential for use in poultry, indicating that this species provides comparable results with those of other insect species that are used in feed. Moreover, Z. morio can be a viable waste management agent. This review aims to summarize the available data and underline data gaps for future research, toward the potential of the utilization of Z. morio for human food and animal feed. Based on the data presented, Z. morio appears to be a well-promising insect-based protein source, which potential still remains to be unfold.

Abstract
Mycoprotein is a protein-rich fungal-derived sustainable food source that was first discovered in the early 1960's. Since then, a sizeable body of research has investigated the health benefits of mycelium protein. Given this, the present publication aims to systematically review the effects of mycoprotein on human health. A literature search of human studies was conducted using PubMed Central, ClinicalTrials.Gov, Google Scholar and a manual search. Sixteen controlled trials, totaling 432 participants were included – of these 5 studies reported total cholesterol, 5 reported on energy intake, 7 on insulin levels, 8 on glucose levels and 4 studied protein response. Risk of bias showed that 7 studies were good quality although heterogeneity was apparent between studies. Results showed that acute mycoprotein ingestion was associated with reduced total cholesterol levels, particularly amongst those with hyperlipidemia. Evidence was less conclusive for effects on blood glucose and insulin levels. Mycoprotein also appears to be a promising bioavailable source of essential amino acids that could induce muscle protein synthesis. Overall, given growing interest in sustainable proteins and accruing health evidence for mycoprotein, firmer embedment with food-based dietary guidelines is now worthy of consideration.

Abstract
This study investigated the potential of Lemna minor to valorise agricultural wastewater in protein-rich feed material in order to meet the growing demand for animal feed protein and reduce the excess of nutrients in certain European regions. For this purpose, three pilot-scale systems were monitored for 175 days under outdoor conditions in Flanders. The systems were fed with the effluent of aquaculture (pikeperch production—PP), a mixture of diluted pig manure wastewater (PM), and a synthetic medium (SM). PM showed the highest productivity (6.1 ± 2.5 g DW m−2 d−1) and N uptake (327 ± 107 mg N m−2 d−1). PP yielded a similar productivity and both wastewaters resulted in higher productivities than SM. Furthermore, all media showed similar P uptake rates (65–70 P m−2 d−1). Finally, duckweed had a beneficial amino acid composition for humans (essential amino acid index = 1.1), broilers and pigs. This study also showed that the growing medium had more influence on the productivity of duckweed than on its amino acid composition or protein content, with the latter being only slightly affected by the different media studied. Overall, these results demonstrate that duckweed can effectively remove nutrients from agriculture wastewaters while producing quality protein.

Abstract
High levels of meat consumption are increasingly being criticised for ethical, environmental, and social reasons. Plant-based meat substitutes have been with reservations identified as healthy sources of protein in comparison to meat. This alternative offers several social, environmental, and probably health benefits, and it may play a role in reducing meat consumption. However, there has been a lack of research on how specific meat substitute attributes can influence consumers to replace or partially replace meat in their diets. Research has demonstrated that, in many countries, consumers are highly attached to meat. They consider it to be an essential and integral element of their daily diet. For the consumers that are not interested in vegan or vegetarian alternatives to meat, so-called meathybrids could be a low-threshold option for a more sustainable food consumption behaviour. In meathybrids, only a fraction of the meat product (e.g., 20% to 50%) is replaced with plant-based proteins. In this paper, the results of an online survey with 500 German consumers are presented with a focus on preferences and attitudes relating to meathyrids. The results show that more than fifty percent of consumers substitute meat at least occasionally. Thus, approximately half of the respondents reveal an eligible consumption behaviour with respect to sustainability and healthiness to a certain degree. Regarding the determinants of choosing either meathybrid or meat, it becomes evident that the highest effect is exerted by the health perception. The healthier meathybrids are perceived, the higher is the choice probability. Thus, this egoistic motive seems to outperform altruistic motives, like animal welfare or environmental concerns, when it comes to choice for this new product category.

Abstract
By 2050, the global population is projected to be in excess of nine billion people. This will result in an increased burden and stress on the food production systems, particularly in adjustments to several stages of the value chain that will require improvements and/or modifications in their effectiveness such as reducing waste, adapting to climate change, food security, and health. Disruptions such as digital agriculture, digital food, food agility, big data, have been utilized to characterize the changes in the way agro-food systems evolve and function, as well as in the approach they have been analyzed, measured, and monitored. It has been long recognized that the food industry is considered as a data driven enterprise. These characteristics are very important as the food industry becomes global and sustainable. The food industry is currently undergoing significant changes, and with this, challenges are occurring. These challenges are brought about from the food chains, climate changes, and the ability to be resilient in the production of food. Furthermore, health and cultural changes to food are occurring, where the diseases of obesity, diabetes, and aging in the population will continue to change the consumer's patterns and choices; whereby the consumer will be persuaded to choose and eat healthy and more nutritious foods. Indeed, the cultural awareness and social innovation to prevent food waste and therefore improve food security and sustainability will also prove to further complexities. This short review will briefly discuss some of the forefront issues in food value chains with a focus on using technology.

Abstract
Single cell protein (SCP) provides an alternative protein source to partially replace the conventional agricultural resources and support the increased nutritional needs. Inexpensive feeding source is one of the key limiting factors for the expansion of SCP production. The present study examined the valorization of biogas derived from the anaerobic digestion (AD) of sewage sludge and the discarded effluent as nutrients source to produce SCP using methanotrophic bacteria. Results indicated that the mixed methanotrophic culture can grow well on the pasteurized AD supernatant and biogas, succeeding in promising dry weight (DW) yield (0.66 ± 0.01 g-DW/g-CH4 and 11.54 ± 0.12 g-DW/g-NH4+). Methylomonas (56.26%) and Methylophilus (24.60%) spp. were the two main representatives of the mixed culture. The produced dried biomass had a protein content higher than 41% w/w, including essential amino acids like histidine, valine, phenylalanine, isoleucine, leucine, threonine and lysine. The cultivated SCP shows potential utilization as protein source for animal diets.

Abstract
Abstract One of the actual areas of processing the aquatic biological resources is the production of chilled fish semi-finished products, the most prepared for heat treatment. Such products have a very limited shelf life, because fish raw materials have high enzymatic activity. This research work aimed to improve the technology of chilled fish semi-finished products from Japanese mackerel with an extended shelf life. To achieve this goal, Japanese mackerel was injected with multicomponent salting media, containing food additives that slow down microbial contamination, have a bacteriostatic effect and assist in improving the organoleptic characteristics of the finished product. New receptions of salting multicomponent compositions provide faster salting and ripening of raw materials compared to the control sample. Salt concentration in fish, amine nitrogen and peroxide value were determined by titration methods. The total number of mesophilic aerobic and facultative anaerobic microorganisms (КMAFAnM) in fish semi-finished products was determined by identifying the number of grown colonies of microorganisms on nutrient media from agar. The treatment of Japanese mackerel with developed salting media, including moisture-retaining components, organic acids and flavoring additives with anti-bactericidal properties, improves the organoleptic characteristics of the finished product, promotes more salting and maturation of fish, as well as reducing the number of microorganisms (KMAFAnM). The increase in amine nitrogen content ranged from 1.4 g/kg (at the beginning of the salting) to 1.55 g/kg in the control and up to 3.05 g/kg in the test samples by the end of the salting. Salt concentration in Japanese mackerel treated with control salting media amounted to 1.19%, new developed salting media - from 2.84% to 3.17%. The total abundance of microorganisms in Japanese mackerel was 2.0 x 102 CFU/g, after salting it decreased to 0.1 to 3.0 x 101 CFU/g depending on the formulation of media for salting. According to the research results, the rational duration of the salting of Japanese mackerel, with new media for salting was 4 to 5 h at a temperature of 6 °С to 8 °С. Along with the salting media developed by us, the use of modern packaging materials in the technology provided chilled culinary semi – finished products from Japanese mackerel with longer shelf life of up to 20 days at a temperature of 0 °С to 5 °C, and humidity 95% to 98%.

Abstract
High levels of meat consumption are increasingly being criticised for ethical, environmental and social reasons. Plant-based meat substitutes have been identified as healthy sources of protein that, in comparison to meat, offer a number of social, environmental and health benefits and may play a role in reducing meat consumption. However, there has been a lack of research on the role they can play in the policy agenda and how specific meat substitute attributes can influence consumers to partially replace meat in their diets. This paper is focused on consumers' preferences for so-called meathybrid or plant-meathybrid products. In meathybrids, only a fraction of the meat product (e.g., 20% to 50%) is replaced with plant-based proteins. Research demonstrates that in many countries, consumers are highly attached to meat and consider it as an essential and integral element of their daily diet. For these consumers that are not interested in vegan or vegetarian alternatives as meat substitutes, meathybrids could be a low-threshold option for a more sustainable food consumption behaviour. In this paper, the results of an online survey with 500 German and 501 Belgian consumers are presented. The results show that more than fifty percent of consumers substitute meat at least occasionally. Thus, about half of the respondents reveal an eligible consumption behaviour with respect to sustainability and healthiness, at least sometimes. The applied discrete choice experiment demonstrated that the analysed meat products are the most preferred by consumers. Nonetheless, the tested meathybrid variants with different shares of plant-based proteins took the second position followed by the vegetarian-based alternatives. Therefore, meathybrids could facilitate the diet transition of meat-eaters in the direction toward a more healthy and sustainable consumption. The analysed consumer segment is more open-minded to the meathybrid concept in comparison to the vegetarian substitutes.

Abstract
Duckweed is a potential alternative protein source for food and feed. However, little is known about the nitrate accumulation in this plant. A high nitrate level in vegetables can indirectly lead to an elevated intake of nitrites and N-nitroso compounds, increasing the risk of diseases for humans and animals. This research hypothesizes that the nitrate accumulation of Lemna minor differs between growing media. Additionally, it evaluates whether legal safety levels of nitrate for human and animal intake are exceeded. The duckweed was grown on (i) rainwater, and (ii) three synthetic media containing different nutrient levels. Furthermore, (iii) biological effluent of swine manure treatment and (iv) aquaculture effluent from pikeperch production were used, as these are potential media for closing nutrient loops in the agriculture sector. It was found that nitrate levels increased with the increasing availability of macronutrients in the water, and pH showed a particularly strong negative correlation with the nitrate levels in the plant. Nevertheless, nitrate content never exceeded 530 mg NO3 kg-1 fresh weight. To conclude, Lemna minor's nitrate content was below safety limits for human consumption in all tested growing media; however, a potential risk for ruminants was observed as these are more sensitive to nitrate conversions in their gastro-intestinal track.

Abstract
Optimum body composition in terms of higher muscle and bone mass is crucial for balancing metabolic activities for sustainability of healthy human life. Individuals with lesser muscle mass respond poorly to stressed states such as traumatic injury, sepsis and advanced cancers. Most common diseases like obesity, heart disease, cancer and diabetes can be prevented by muscle mass modification. The nutrients like protein, lysine, calcium and vitamin D play a critical role in the maintenance of muscle mass and bone health. Poor dietary protein quality owing to high amounts of cereals and little animal foods have a marked negative impact on health in resource-limited settings. Lysine intake in developing countries is low mainly due to lesser food intake, consumption of cereals as staple diet and processing loss of lysine. Furthermore, lysine intakes have been shown to be marginal in low socio-economic groups which are of even greater concern. Cereal-based diets and cereal-based food subsidy programs offer low quality proteins and pose a risk of quality protein deficiency. Diets lacking in vitamin D contribute to vitamin D deficiency which is prevalent in epidemic proportions in large part of the world. Cereal-based vegetarian diets are responsible for lesser bioaccessibility of calcium as well. For obtaining optimal health, optimal muscle mass should be maintained at a younger age, which can be achieved by improving nutritional quality of diets. Dietary and medicinal supplementation of lysine, calcium and vitamin D may improve the body composition of young adult women in the form of proportionally more muscle mass, bone mass and lesser fat mass, which in turn, may prove helpful in improving general well-being, physical fitness as well as preventing metabolic diseases in developing countries.

Abstract
During ageing, skeletal muscle develops anabolic resistance towards the stimulation of protein synthesis induced by dietary amino acids. The stimulation of muscle protein synthesis after food intake remains insufficient, even with a protein intake recommended for healthy adults. This alteration is one of the mechanisms known to be responsible for the decrease of muscle mass and function during ageing, namely sarcopenia. Increasing dietary protein intake above the current RDA(0⋅83 g/kg/d) has been strongly suggested to overcome the anabolic resistance observed. It is also specified that the dietary protein ingested should be of good quality. A protein of good quality is a protein whose amino acid (AA) composition covers the requirement of each AA when ingested at the RDA. However, the biological value of proteins may vary among dietary sources in which AA composition could be unbalanced. In the present review, we suggest that the quality of a dietary protein is also related to several other determinants. These determinants include the speed of digestion of dietary proteins, the presence of specific AA, the food matrix in which the dietary proteins are included, the processes involved in the production of food products (milk gelation and cooking temperature), the energy supply and its nature, and the interaction between nutrients before ingestion. Particular attention is given to plant proteins for nutrition of the elderly. Finally, the timing of protein intake and its association with the desynchronized intake of energetic nutrients are discussed.

AbstractAimThe effect of moderate-intensity pulsed electric fields (MIPEF) was evaluated on vegetable protein concentrates from pea, rice, and gluten.MethodsFive percent (w/w) suspensions of protein concentrates (pH 5 and 6) were exposed to up to 60,000 MIPEF pulses at 1.65 kV/cm. Both structural modifications (absorbance at 280 nm, free sulfhydryl groups, FT-IR-spectra) and functional properties (solubility, water and oil holding capacity, foamability) were analyzed.ResultsMIPEF was able to modify protein structure by inducing unfolding, intramolecular rearrangement, and formation of aggregates. However, these effects were strongly dependent on protein nature and pH. In the case of rice and pea samples, structural changes were associated with negligible modifications in functional properties. By contrast, noticeable changes in these properties were observed for gluten samples, especially after exposure to 20,000 pulses. In particular, at pH 6, an increase in water and oil holding capacity of gluten was detected, while at pH 5, its solubility almost doubled.ConclusionThese results suggest the potential of MIPEF to steer structure of proteins and enhance their technological functionality.

Abstract
Pigs, as one of the most common livestock species worldwide, are expected to have a fast growth rate and lower subcutaneous fatness but higher intramuscular fat ("marbling meat"). Nowadays, it is believed that not only host genetics but also its gut microbiomes can modulate farm animal phenotypes, however, many of the mechanisms remain elusive. We measured the body weight (BW), average daily gain (ADG), backfat thickness (BFT), and intramuscular fatness (IMF) of 91 Enshi pigs at 260 days of age, then genotyped each one individually using a 50K single nucleotide polymorphism array and performed 16S ribosomal RNA gene sequencing on 455 microbial samples from the jejunum, ileum, cecum, colon, and rectum. The microbial diversity showed notable spatial variation across the entire intestinal tract, with the cecum and colon having the highest α-diversity. The cecal and colonic microbiotas made greater contributions to BW and ADG and accounted for 22-37% of the phenotypic variance. The jejunal and cecal microbiotas contributed more (13-31%) to the BFT and IMF than the other segments. Finally, from cecum, colon, and jejunum, we identified eight microbial taxa that were significantly correlated with the target traits. The genera Alloprevotella and Ruminococcaceae UCG-005 were highly positively correlated with BW and ADG. The genera Prevotellaceae UCG-001 and Alistipes in the cecum and Clostridium sensu stricto 1 in the jejunum were highly positively correlated with BFT and IMF. The genera Stenotrophomonas, Sphaerochaeta, and Desulfovibrio were negatively associated with the mentioned traits. These findings could aid in developing strategies for manipulating the gut microbiota to alter production performance in pigs.

Abstract
Indispensable amino acid (IAA) composition and standardized ileal digestibility (SID) of five animal- and 12 plant-based proteins were used to calculate their respective Digestible Indispensable Amino Score (DIAAS) according to the three age categories defined by the Food and Agriculture Organization (FAO). Mean IAA content and mean SID obtained from each protein dataset were subsequently used to simulate optimal nutritional quality of protein mixtures. Datasets revealed considerable variation in DIAAS within the same protein source and among different protein sources. Among the selected protein sources, and based on the 0.5- to 3-year-old reference pattern, pork meat, casein, egg, and potato proteins are classified as excellent quality proteins with an average DIAAS above 100. Whey and soy proteins are classified as high-quality protein with an average DIAAS ≥75. Gelatin, rapeseed, lupin, canola, corn, hemp, fava bean, oat, pea, and rice proteins are classified in the no quality claim category (DIAAS <75). Potato, soy, and pea proteins can complement a broad range of plant proteins, leading to higher DIAAS when supplied in the form of protein mixtures and at specific ratios. Such complementarity highlights the potential to achieve an optimal nutritional efficiency with plant proteins alone.

Abstract
Methane-oxidizing bacteria (MOB) that can use biogas and recycled nitrogen from wastewater as a sustainable feedstock for single cell protein (SCP) synthesis are receiving increasing attention. Though promising, limited knowledge is available on the alternative strains especially the ones that can tolerant to strict environments such as acidic conditions. Furthermore, how would the hydrogen sulfide affect the MOB (especially the alternative strains) for SCP synthesis when crude biogas is used as feedstock is still unknown. In this study, the capability of an acidic-tolerant methanotrophic bacterium Methylocapsa acidiphila for SCP production using raw biogas and the associated inhibitory effect of sulfide on the bioconversion was for the first time investigated. Results showed that the inhibitory effect of sulfide on the growth of M. acidiphila was observed starting from 8.13 mg L-1 Na2S (equivalent to approximately 1000 ppm of H2S in crude biogas). The total amino acid content in the dry biomass decreased more than two times due to sulfide inhibition compared with the control samples without the presence of sulfide (585.96 mg/g dry biomass), while the proportion of essential amino acids in the total amino acid was not affected when the concentration of Na2S was lower than 5.73 mg L-1. The performance of M. acidiphila in a sulfide-rich environment was further studied at different operational conditions. The feeding gas with a CH4/O2 ratio of 6:4 could help to alleviate the sulfide inhibition, compared with other ratios (4:6 and 8:2). Moreover, the sequential supply of the feed gas could also alleviate sulfide inhibition. In addition, the MOB's growth rate was higher when applying a higher mixing rate of 120 rpm, compared with 70 rpm and 0, due to a better gas-liquid mass transfer. The inoculum size of 20% and 10% resulted in a faster growth rate compared with the 5%. Furthermore, M. acidiphila could assimilate either NH4+ or NO3- as nitrogen source with a similar growth rate, giving it the potential to recycle nitrogen from a wide range of wastewaters. The results will not only create new knowledge for better understanding the role of hydrogen sulfide in the assimilation of raw biogas by acid-tolerant M. acidiphila but also provide technical insights into the development of an efficient and robust process for the waste-to-protein conversion.
