Milk fat yield and composition during abomasal infusion of cis or trans octadecenoates in Holstein cows

The role of trans-C18:1 fatty acids in milk fat depression was examined. Six rumen-cannulated Holstein cows were assigned to two Latin squares with 21-d periods. The common basal diet contained 40% forage and 60% concentrate. Treatments were the uninfused control, 750 g/d of a mixture of cis fat (65% high oleic sunflower oil and 35% cocoa butter), and 750 g/d of a mixture of trans fat (93% shortening and 7% corn oil) infused into the abomasum via a tube that passed through the rumen cannula. Milk yield was similar among treatments. Milk fat percentage and yield were lower, and milk citrate concentration was higher, for the trans than the cis treatment. Changes in the fatty acid composition of milk were similar for the cis and trans treatments compared with the control except for trans-C18:1. The concentration of trans-C18:1 was greater for the cis and trans treatments than for the control and was greater for the trans than for the cis treatment. These data clearly demonstrated that infusion of trans-C18:1 fatty acids into the abomasum depressed milk fat percentage and yield. We speculate that reduced synthesis of fatty acids and reduced activity of acyl transferase in mammary tissue contributed to depressed milk fat percentage for the trans treatment.

Dietary fat and adipose tissue metabolism in ruminants, pigs, and rodents: a review

Effects of dietary fat on dairy cows are reviewed. Dietary fat did not affect gain in BW or body condition score after peak lactation but tended to increase BW loss during early lactation and body fat deposition in growing cattle. Dietary fat decreased de novo fatty acid synthesis in adipose tissue. Basal FFA release from adipose tissue in vitro and beta-adrenergic lipolytic responses were increased by protected polyunsaturated fatty acids. Dietary fat increased body fat in growing pigs and decreased BW loss in lactating sows. Dietary fat decreased de novo fatty acid synthesis and basal glycerol release in adipose tissue and tended to increase simultaneously beta-adrenergic lipolytic responses to increased membrane fluidity. Dietary fat increased body fat in rats. Polyunsaturated fatty acids were sometimes less efficient than saturated ones in increasing body fat. Lipoprotein lipase activity in adipose tissue generally decreased. Hepatic fatty acid synthesis was decreased sharply by polyunsaturated fatty acids, and adipose tissue response was less important. beta-Adrenergic-stimulated lipolysis decreased, and fatty acid esterification increased, particularly from saturated fatty acids. A trend toward insulin resistance, which was more marked with saturated fatty acids, occurred in adipose tissue.

Feed and animal factors influencing milk fat composition

Genetic selection for increased milk fat percentage leads to increased proportions of short-chain fatty acids in milk fat and decreased proportions of long-chain fatty acids. Milk fat composition is strongly influenced by stage of lactation; proportion of short chains (de novo synthesis) is low initially and increases until at least 8 to 10 wk into lactation. Milk fat composition is changed more by the amount and composition of dietary fat than any other dietary component. Seasonal and regional differences in milk fat composition are measurable, most likely because of local differences in feed supplies. Milk fat composition can be modified readily by changing the feeding regimen. The most significant changes in milk fat quality relate to rheological (melting) properties, which influence numerous aspects of character and quality of manufactured dairy products. Dietary fat fed to change milk fat composition may also influence contents of protein, urea, citrate, and soluble calcium in milk and influence oxidative stability and flavor. It is important for both dairy nutritionists and dairy food chemists to understand the consequences of feeding programs on milk quality.

Diets containing high oil corn and tallow for dairy cows during early lactation

Four multiparous Holstein cows averaging 49 DIM and fitted with ruminal cannulas were utilized in a 4 x 4 Latin square design with 21-d periods to determine the effects of diets containing high oil corn grain and tallow. Cows were fed diets of alfalfa haylage and concentrate (37:63, DM basis) for ad libitum intake. Treatments were 1) control, no added fat; 2) high oil corn grain replacing regular corn grain; 3) high oil corn grain and 2.5% tallow; and 4) high oil corn grain and 5% tallow. Intake of DM, milk production, and yields of milk fat, milk protein, milk SNF, and 4% FCM were not affected by dietary fat, although DMI tended to be lower when cows were fed 5% tallow. Percentages of protein and SNF in milk were lower when cows were fed diets containing fat. Percentage of milk fat was lower when cows were fed diets containing tallow. Supplemental fat decreased total VFA concentrations in ruminal fluid. Cows fed high oil corn had a greater molar proportion of acetate and a larger acetate to propionate ratio in ruminal fluid than cows fed high oil corn and tallow. Digestibility of total fatty acids decreased when tallow was added to diets containing high oil corn. No differences were observed among treatments for total tract apparent digestibilities of DM and fiber or utilization of energy and N. Dietary high oil corn and 5% tallow tended to decrease DMI and to alter ruminal fermentation characteristics.

Supplemental dietary fat from extruded soybeans and calcium soaps of fatty acids for lactating cows

Holstein cows (n = 33) were assigned to one of three diets containing soybean meal, supplemental fat from extruded soybeans, or supplemental fat from Ca soaps of fatty acids. Total mixed diets containing (DM basis) 25% corn silage, 25% alfalfa hay, and 50% of the respective concentrate mixtures were fed wk 4 through 15 postpartum. Milk production (29.2, 32.4, and 31.8 kg/d) was higher for cows fed supplemental fat diets. Milk protein percentages (2.99, 2.93, and 2.81) were higher for cows fed the soybean meal diet and were higher with extruded soybeans than with Ca soaps of fatty acids. Milk fat percentages (3.20, 2.69, and 3.47) were higher for cows fed Ca soaps of fatty acids than for cows fed extruded soybeans. Milk fat from cows fed supplemental fat was more unsaturated than from those fed soybean meal and was most unsaturated from cows fed extruded soybeans. Dry matter intakes (17.8, 18.4, and 16.6 kg/d) were not significantly different among diets. Extruded soybeans and Ca soaps of fatty acids were equally effective in increasing milk production, but milk fat content was reduced, and the proportion of unsaturated fatty acids in milk fat was increased, with extruded soybeans.

Milk composition, ruminal characteristics, and nutrient utilization in dairy cows fed partially hydrogenated tallow

Four Holstein cows (84 DIM) were used in a 4 x 4 Latin square with 21-d periods to determine the effects of increasing amounts of partially hydrogenated tallow in the diet. Tallow replaced ground shelled corn at 0, 2, 4, or 6% of total DM; diets contained 3.3, 5.1, 7.3, and 9.0% total fatty acids. Feces and urine were collected during d 16 to 21 of each period. Milk production (31.1, 31.7, 34.6, and 32.8 kg/d), milk fat content, and DMI (21.2, 20.8, 22.2, and 21.5 kg/d) were not significantly different among diets supplemented with 0, 2, 4, or 6% tallow. Tallow decreased contents of CP and SNF in milk but increased production of NPN. Percentages of short- and medium-chain fatty acids in milk fat decreased linearly, whereas percentage of C18:1 increased with increasing dietary tallow. Ruminal pH, concentrations of total VFA and NH3 N, molar percentages of VFA, and acetate to propionate ratio did not differ among treatments. Total tract apparent digestibilities of DM, OM, NDF, ADF, cellulose, hemicellulose, ether extract, energy, and soluble residue did not differ among treatments. Digestibility of total fatty acids decreased in diets containing tallow. Increasing tallow linearly increased N apparently absorbed, but utilization of energy and N was not significantly different among treatments. Partially hydrogenated tallow included at 6% or less of dietary DM did not adversely affect DMI, digestibilities, or ruminal fermentation characteristics.

Potential for enhancing the nutritional properties of milk fat

Milk fat has been identified as a hypercholesterolemic fat because it contains cholesterol and is primarily saturated. However, different types of dietary saturated fats do not have equivalent effects on plasma cholesterol levels relevant to ingestion of polyunsaturated fats. Research suggests that the hypercholesterolemic effect of saturated fats in human diets is largely due to 12, 14, and 16 carbon chain length fatty acids. Evidence also suggests that stearic acid (C18:0) is as effective as oleic acid (C18:ln-9) in lowering plasma cholesterol levels when either replaces palmitic acid (C16:0) in the diet of men. Milk fat has a unique fatty acid profile with approximately 10% short- and medium-chain length saturated fatty acids (less than 12 carbons) and 35% of total fatty acids from stearic and oleic acids. The contribution of milk products to fat and cholesterol intake in the typical American diet is less than that provided by other animal products. This paper will review the recommendations of the National Cholesterol Education Program, the effects of milk fat ingestion on blood cholesterol, and the rationale and feasibility of three approaches to modifying the lipid composition of milk fat.

The composition of milk fat

Bovine milk contains about 3.5 to 5% total lipid, existing as emulsified globules 2 to 4 microns in diameter and coated with a membrane derived from the secreting cell. In homogenized milk, the coat is mostly casein. About 98% or more of the lipid is triacylglycerol, which is found in the globule. Phospholipids are about .5 to 1% of total lipids, and sterols are .2 to .5%. These are mostly located in the globule membrane. Cholesterol is the major sterol at 10 to 20 mg/dl. Data are presented on the membrane and the emulsion. Bovine milk contains substantial quantities of C4:0 to C10:0, about 2% each of C18:2 and trans-C18:1, and almost no other long-chain polyunsaturated fatty acids. The fatty acid composition is not altered by ordinary changes in diet. The triacylglycerol structure is unique, with much of the C4:0 to C10:0 at sn-3. The effects of milk cholesterol and fatty acids on human blood cholesterol levels and nonnutritive roles of some microlipids are discussed.
