Abstract
A taste sensor with global selectivity can be used to discriminate taste of foods and provide evaluations. Interfaces that could interact with broad food ingredients are beneficial for data collection. Here, we prepared electrochemically reduced graphene oxide (ERGO)-modified interdigital electrodes. The interfaces of modified electrodes showed good sensitivity towards cooking condiments in mixed multi-ingredients solutions under electrochemical impedance spectroscopy (EIS). A database of EIS of cooking condiments was established. Based on the principal component analysis (PCA), subsets of three taste dimensions were classified, which could distinguish an unknown dish from a standard dish. Further, we demonstrated the effectiveness of the electrodes on a typical dish of scrambled eggs with tomato. Our kind of electronic tongue did not measure the quantitation of each ingredient, instead relying on the database and classification algorithm. This method is facile and offers a universal approach to simultaneously identifying multiple ingredients.

Abstract
We present a new electrochemical system that combines paper-based sensing and ion-transfer voltammetry, bringing the latter a step closer toward point-of-care applications. Studies at the interface between two immiscible electrolyte solutions (ITIES) are often performed to detect redox-inactive species; unfortunately, due to the inherent instability of the interface, it is rather poorly explored outside specialized laboratories. Here, we address this limitation by combining a pen-like device containing the gelled organic phase with a paper-supported aqueous phase. This combination makes the system more user-friendly, potentially low-cost, and easy to assemble. We show the applicability of the new cell to analyze both simple and ionophore-facilitated transfer of ions and proteins, preconcentration of species, and analysis of mixtures through combination with paper chromatography. The native ion content of the paper also enabled measurements without added electrolytes. Those studies could broaden the scope for the application of the label-free electrochemical detection of nonredox-active species at points-of-need.

Abstract
The present paper describes the development of a multisensory system for the analysis of the natural water in the Danube, water collected in the neighboring area of Galati City. The multisensory system consists of a sensor array made up of six screen-printed sensors based on electroactive compounds (Cobalt phthalocyanine, Meldola’s Blue, Prussian Blue) and nanomaterials (Multi-Walled Carbon Nanotubes, Multi-Walled Graphene, Gold Nanoparticles). The measurements with the sensors array were performed by using cyclic voltammetry. The cyclic voltammograms recorded in the Danube natural water show redox processes related to the electrochemical activity of the compounds in the water samples or of the electro-active compounds in the sensors detector element. These processes are strongly influenced by the composition and physico-chemical properties of the water samples, such as the ionic strength or the pH. The multivariate data analysis was performed by using the principal component analysis (PCA) and the discriminant factor analysis (DFA), the water samples being discriminated according to the collection point. In order to confirm the observed classes, the partial least squares discriminant analysis (PLS-DA) method was used. The classification of the samples according to the collection point could be made accurately and with very few errors. The correlations established between the voltammetric data and the results of the physico-chemical analyses by using the PLS1 method were very good, the correlation coefficients exceeding 0.9. Moreover, the predictive capacity of the multisensory system is very good, the differences between the measured and the predicted values being less than 3%. The multisensory system based on voltammetric sensors and on multivariate data analysis methods is a viable and useful tool for natural water analysis.

Abstract
This work reports on a low cost microfluidic electronic tongue (e-tongue) made with carbon interdigitated electrodes, printed on paper, and coated with boronic acid-containing hydrogels. Using capacitance measurements, the e-tongue was capable of distinguishing between different types of sugars (e.g. glucose, fructose and sucrose), in addition to distinguishing between commercial brands of apple juice using a small volume of sample (6 μL). The channels of the microfluidic e-tongue were made using a wax printer, and were modified with hydrogels containing acrylamide copolymerized with 5 or 20 mol% 3-(acrylamido) phenyl boronic acid (Am-PBA), or a crosslinked homopolymeric hydrogel based on N-(2-boronobenzyl)-2-hydroxy-N,N-dimethylethan-1-aminium-3-sulfopropyl acrylate (DMA-PBA). Such hydrogels, containing a phenyl boronic acid (PBA) moiety, can bind saccharides. Combining various hydrogels of this nature in an e-tongue device enabled discrimination between apple juices, which are known to contain higher amounts of fructose compared to glucose or sucrose. Changes in capacitance were captured with impedance spectroscopy in the frequency range from 0.1 to 10 MHz for solutions with varying concentrations of glucose, fructose and sucrose (from 0 to 0.056 g mL-1). The capacitance data were treated with Principal Component Analysis (PCA) and Interactive Document Map (IDMAP), which then correlated overall sugar content from different brands of apple juice. This low-cost, easy-to-use, disposable e-tongue offers great potential in the routine analysis of food and beverages, while offering comparative performance to alternatives in the literature.

Abstract
Electronic tongue systems are traditionally used to analyse: food products, water samples and taste masking technologies for pharmaceuticals. In principle, their applications are almost limitless, as they are able to almost completely reduce the impact of interferents and can be applied to distinguish samples of extreme complexity as for example broths from different stages of fermentation. Nevertheless, their applications outside the three principal sample types are, in comparison, rather scarce. In this review, we would like to take a closer look on what are real capabilities of electronic tongue systems, what can be achieved using mixed sensor arrays and by introduction of biosensors or molecularly imprinted polymers in the matrix. We will discuss future directions both in the sense of applications as well as system development in the ever-growing trend of low cost analysis.

Abstract
Due to their electrochemical and economical characteristics, pencil graphite electrodes (PGEs) gained in recent years a large applicability to the analysis of various types of inorganic and organic compounds from very different matrices. The electrode material of this type of working electrodes is constituted by the well-known and easy commercially available graphite pencil leads. Thus, PGEs are cheap and user-friendly and can be employed as disposable electrodes avoiding the time-consuming step of solid electrodes surface cleaning between measurements. When compared to other working electrodes PGEs present lower background currents, higher sensitivity, good reproducibility, and an adjustable electroactive surface area, permitting the analysis of low concentrations and small sample volumes without any deposition/preconcentration step. Therefore, this paper presents a detailed overview of the PGEs characteristics, designs and applications of bare, and electrochemically pretreated and chemically modified PGEs along with the corresponding performance characteristics like linear range and detection limit. Techniques used for bare or modified PGEs surface characterization are also reviewed.

Abstract
The following manuscript details the stages of construction of a novel paper-based electronic tongue with an integrated Ag/AgCl reference, which can operate using a minimal amount of sample (40 μL). First, we optimized the fabrication procedure of silver electrodes, testing a set of different methodologies (electroless plating, use of silver nanoparticles and commercial silver paints). Later a novel, integrated electronic tongue system was assembled with the use of readily available materials such as paper, wax, lamination sheets, bleach etc. New system was thoroughly characterized and the ion-selective potentiometric sensors presented performance close to theoretical. An electronic tongue, composed of electrodes sensitive to sodium, calcium, ammonia and a cross-sensitive, anion-selective electrode was used to analyze 34 beer samples (12 types, 19 brands). This system was able to discriminate beers from different brands, and types, indicate presence of stabilizers and antioxidants, dyes or even unmalted cereals and carbohydrates added to the fermentation wort. Samples could be classified by type of fermentation (low, high) and system was able to predict pH and in part also alcohol content of tested beers. In the next step sample volume was minimalized by the use of paper sample pads and measurement in flow conditions. In order to test the impact of this advancement a four electrode system, with cross-sensitive (anion-selective, cation-selective, Ca(2+)/Mg(2+), K(+)/Na(+)) electrodes was applied for the analysis of 11 types of wine (4 types of grapes, red/white, 3 countries). Proposed matrix was able to group wines produced from different varieties of grapes (Chardonnay, Americanas, Malbec, Merlot) using only 40 μL of sample. Apart from that, storage stability studies were performed using a multimeter, therefore showing that not only fabrication but also detection can be accomplished by means of off-the-shelf components. This manuscript not only describes new paper-based, potentiometric sensors but also according to our knowledge is the first description of an electrochemical paper-based electronic tongue with integrated reference.
