Abstract
The cause and trend of color change and their links to oxidative properties were investigated by simulating shelf storage conditions for fragrant rapeseed oils (FROs). Under illumination, the L* value gradually increased with the storage time. The a* and b* values showed different trends depending on brands. The photodegradation rates of chlorophylls were 8.6 ∼ 15 times higher than those of carotenoids. The change in color of FROs was mainly caused by the light-induced photodegradation of chlorophyll. Compared with the hydroperoxides, the contents of some secondary oxidation products [i.e., 2-butenal, octane, (Z)-2-octene, 2,4-octadiene, (Z)-2-heptenal, (E, E)-2,4-heptadienal, and (E)-2-decenal] were more closely associated with the color variation with correlation coefficients of 0.6 ∼ 0.94. Significant negative correlation was found between α-tocopherol content and oil color difference. Therefore, illumination was the main reason for the color degradation of the FROs. The varying degree of color difference was strongly linked to the quality deterioration caused by oxidation.

Abstract
Premium extra virgin olive oils (PEVOO) are oils of exceptional quality and retail at high prices. The green color of recently extracted olive oils is lost during storage at room temperature, mainly because of the pheophytinization of chlorophylls. Since a green color is perceived as a mark of high-quality oils by consumers, it is especially important for PEVOO to maintain their initial green color. This study assessed the effect of applying low temperatures (refrigeration and freezing) and modified atmospheres on the color of four PEVOO for 24 months. Also, the effect of two freezing methods (slow freezing by placing the oil at -20 °C and fast freezing by immersing the oil in a bath of liquid nitrogen) was studied. Results showed that the green color was better preserved in oils frozen and stored at -20 °C whereas in oils frozen with liquid nitrogen the green color was lost much faster during frozen storage. An in-depth study of this unexpected phenomenon showed that this loss of green color was mainly due to a pheophytinization of chlorophylls. This phenomenon did not happen at the moment of freezing with liquid nitrogen, but over the first 100 days of storage at -20 °C. In addition, correlations between single chlorophyll and pheophytin contents and chromatic coordinates were established.

Abstract
This paper presents, for the first time, a method for the rapid quantification of β-carotene in olive oil by Raman spectroscopy. Using a 532 nm Raman laser source, our procedure requires only one drop (100 µL) of oil, for β-carotene content to be determined. Results show that β-carotene content is associated with the lutein/β-carotene ratio, a parameter whose value describes how healthy the olives were before processing, specifically whether an olive fly attack occurred. Since olive fly attacks are not always visible to the oil producers, this method gives them the means to control the validity of the prevention strategies they adopted.

Abstract
This study examines the ability of fluorescence spectroscopy for monitoring the quality of 70 Moroccan virgin olive oils belonging to three varieties and originating from three regions of Morocco. By applying principal component analysis and factorial discriminant analysis to the emission spectra acquired after excitation wavelengths set at 270, 290, and 430 nm, a clear differentiation between samples according to their storage time was observed. The obtained results were confirmed following the application of four multivariate classification methods: partial least squares regression, principal component regression, support vector machine, and multiple linear regression on the emission spectra. The best prediction model of storage time was obtained by applying partial least squares regression since a coefficient of determination (R2) and a root mean square error of prediction (RMSEP) of 0.98 and 24.85 days were observed, respectively. The prediction of the chemical parameters allowed to obtain excellent validation models with R2 ranging between 0.98 and 0.99 for free acidity, peroxide value, chlorophyll level, k232, and k270.

Abstract
The valorization of minor accessions of olive is potentially a good way to improve the qualitative production of a specific territory. Olive oils of four minor accessions (Ciciarello, Tonda di Filogaso, and Ottobratica Calipa and Ottobratica Cannavà clones) produced in the same area of the Calabria region were characterized for the principal qualitative analyses at two drupe harvesting periods (October and November). Good quality in terms of free acidity, peroxides, spectrophotometric indexes, and fatty acid composition was observed in olive oils produced at both drupe harvesting times, with the exception of those of Tonda di Filogaso, which showed a free acidity level over the legal limit for extra virgin olive oil in the second harvesting time. All of the olive oils possessed at both production periods averagely abundant total polyphenols (460–778 mg/kg) and tocopherols (224–595 mg/kg), and the amounts changed in the experimental years for expected different environmental variations. Ottobratica Cannavà and Ottobratica Calipa clones showed some peculiar qualitative characteristics (free acidity, peroxides, fatty acid composition, and total polyphenols), distancing themselves from the principal variety of reference, Ottobratica.

Abstract
Monovarietal virgin olive oils (VOOs) are very effective to study relationships among sensory attributes, the compounds responsible for flavour, and factors affecting them. The stimulation of the human sensory receptors by volatile and non-volatile compounds present in monovarietal virgin olive oils gives rise to the sensory attributes that describe their peculiar delicate and fragrant flavours. The formation of these compounds is briefly illustrated and the influence of the agronomic and technological factors that affect their concentrations in the oil is examined. The relationships between compounds responsible for the olive oil flavour and sensory attributes are discussed. Several approaches for the varietal differentiation of monovarietal virgin olive oils are also overviewed.

Abstract
This work reports on the composition and bionutritional value of organic virgin olive oil from the Nocellara del Belice variety, one cultivated in the olive areas of the Sicily region, Italy. Destoned oils obtained by processing olives with a destoning-based procedure were compared with conventional oils. This innovative technique, consisting in removing the stone from fruits prior to processing, strongly enhanced the already high-quality level of the conventional product. An in-depth analytical investigation from 2008 to 2010 showed how this innovative olive extraction process led to an excellent peculiar final product, mainly attributable to the improved biophenol and volatile composition, as well as higher concentrations of the lipophilic and vitamin antioxidants (tocopherols and tocotrienols). It had higher levels of oleocanthal (p-HPEA-EDA), a nutraceutical compound exerting actions against COX1 and COX2 (cycloxygenases). Its head-space aroma displayed new volatile phytomolecules and also had higher levels of green volatiles from the lipoxygenase (LOX)-pathway (one having as precursors the polyunsaturated fatty acids containing a cis-cis-1,4-pentadiene system). Among the other bioactives, we highlight its significant levels of trans-β-carotene and xanthophylls (lutein, violaxanthin, neoxanthin and other carotenoids). Its enhanced nutritional value was also attributable to the increased intensity of valuable tasting notes.

Abstract
The potential of microwave-assisted liquid-liquid and solid phase extraction coupled with fluorescence spectroscopy and employing one- to three-way spectral data was assessed in terms of their capacity for the rapid detection of heavy polycyclic aromatic hydrocarbons (PAHs) in olive and sunflower oils. Tocopherols and pigments groups (chlorophyll and pheophytin) present in oil matrices were the main interference compounds in the detection of PAHs using fluorescence spectroscopy. Partial spectral overlap and inner-filter effects were observed in the emission range of the analytes. The effectiveness of removing these interferences using solid phase extraction (silica, C18 and graphitized carbon black) was examined. Solid phase extraction with silica was the most effective method for the removal of pigments and tocopherol and allowed for the detection of PAHs in edible oils using fluorescence spectroscopy. The limit of detection was observed to depend on the use of one-, two- or three-way fluorescence spectral data in the range of 0.8 to 7.0 μg kg(-1). The individual recoveries of PAHs following the microwave-assisted L-L extraction and SPE with silica were assessed using HPLC-FD with satisfactory results.

Abstract
This review provides an overview of traceability studies performed to date (April 2009) for olive oils. Special emphasis has been made on the botanical origin because high-quality monovarietal olive oils have been recently introduced on the markets and their quality control requires the development of new and powerful analytical tools as well as new regulations to avoid fraud to consumers. Several parameters with discriminant power have been used for olive oil traceability according to the olive variety used in the production of the oil. They have been considered as traceability markers to the botanical origin and classified, in this work, as compositional and genetical markers.

Abstract
The analysis, for the first time, of the chlorophyll and carotenoid profile of olive fruits of the varieties Coratina, Frantoio, and Koroneiki has revealed important differences with Spanish varieties. First, a high chlorophylls/carotenoids ratio and a low chlorophyll a/b ratio imply that the photosynthetic apparatus has structural differences with respect to other olive varieties; second, in the carotenoid fraction, a low percentage of lutein, a high percentage of beta-carotene, and a high content in neoxanthin are signs that in these three olive varieties the carotenoid biosynthetic pathway is displaced, favoring the beta,beta series over the alpha,beta series. These differences in the chlorophyll and carotenoid profiles of the fruit are reflected in the corresponding virgin olive oils. It is proposed that the limits of the pigmentary parameters of authenticity of virgin olive oil previously established for the Spanish varieties be extended to obtain markers at a general level, independent of the geographical origin.

Abstract
Extra virgin olive oils from drupes of three Sicilian varieties (Biancolilla, Cerasuola, and Nocellara del Belice) collected at three different harvesting periods were analyzed upon heating by means of DSC, and thermal properties were related to the chemical composition of the samples. All thermograms exhibited multiple transitions with a minor exothermic peak, followed by a major endothermic event. Cerasuola samples showed higher overall enthalpy and narrower range of transition at all harvesting periods, as compared to the other oils. A more ordered crystal structure originating from a more uniform chemical composition, with higher triolein content, in Cerasuola may be hypothesized. At different harvesting periods, thermal transitions started at lower temperatures and developed over a narrower range in all cultivars, probably due to the insertion of molecules derived from triacylglycerol lysis (diacylglycerols and free fatty acids) and lipid oxidation products into the triacylglycerol crystal lattice. All heating thermograms were deconvoluted into one exothermic and five endothermic constituent peaks, and the effect of chemical components on thermal properties of the peaks was evaluated. DSC application upon heating appears to be very promising in discriminating among oil samples from olives of different cultivars and/or harvesting periods.
