Abstract
There are several factors that affect the welfare and meat quality of pigs during pre-slaughter transport. Among various factors, the effects of weather conditions and loading density were studied. A total of 3,726 finishing pigs were allotted to one of nine groups arranged in a 3 × 3 factorial design according to the weather conditions (low temperature [LT], under 10°C; normal temperature [NT], 10°C-24°C; high temperature [HT], upper 24°C), and loading density (low density [LD], upper 0.43 m2/100 kg; normal density [ND], 0.37-0.43 m2/100 kg; high density [HD], under 0.37 m2/100 kg). Each treatment group follow as: LTLD, LTND, LTHD, NTLD, NTND, NTHD, HTLD, HTND, HTHD. In terms of carcass composition, pigs had the highest carcass weight and backfat thickness at LT. Comparing the HD transport to the ND transport, the meat quality indicated a lower pH and more drip loss. The incidence rate of pale, soft, exudative (PSE) pork was high in the order of the HD, LD, and the ND transport (20%, 9%, and 2%, respectively). The HT transport showed the lowest pH and greatest L* value under the given weather conditions. Pigs transported under the HTHD and LTLD conditions had the greatest rates of PSE pork (40% and 20%, respectively). Pigs exposed to HD transport had the shortest laying time and the highest overplap behavior. The LDLT transport pigs had a shorter laying time than the LDNT and LDHT transport pigs. In conclusion, too high or too low density transport is generally not excellent for meat quality or animal welfare, however it is preferable to transport at a slightly low density at high temperature and at a slightly high density at low temperature.

Abstract
Environmental enrichment consists of a way to provide better living conditions for animals, but its influence on physical integrity, thermoregulatory responses, and quality of pork meat is not known. The objective of this study was to evaluate the thermoregulatory responses, lesion score, lameness, carcass traits, and meat quality of pigs with and without access to environmental enrichment (EE) in the finishing phase. A total of 432 pigs of the Hampshire lineage, males and females, with average initial and final weights between 22-27 kg and 110-125 kg respectively were evaluated. The experimental design used was in randomized blocks, with 6 treatments, distributed in a 2×3 factorial scheme (sex × environmental enrichment), with 12 repetitions per treatment, totaling 72 stalls. The treatments were branched chain for males (T1), branched sisal rope for males (T2), males without EE (T3), branched chain for females (T4), branched sisal rope for females (T5), and females without EE (T6). Weekly, two assessments of physiological data were performed, in loco, in the morning and afternoon. Lesions on the tail, ear, body, and lameness were evaluated on the 1st, 16th, 37th, 51st, 79th, 93rd, and 112th days. On the 112th day, 72 animals were slaughtered for carcass traits and meat quality analyses. Statistical analysis was performed using generalized and mixed linear models. There was no effect (p>0.05) of the interaction of the studied factors (environmental enrichment × sex × period) on the head, back, leg, and average temperature. However, there was an effect of the period factor (p<0.01), with higher temperatures in the afternoon compared to the morning. For tail injury, there was no association between injury degree and gender (p=0.56) and between injury degree and enrichment (p=0.99), and there was no interaction effect (p=0.15). For ear injury, there was no association between the degree of ear injury and gender (p=0.72), as well as for the degree of ear injury and enrichment (p=0.99) and interaction (p=0.47). There was a higher occurrence of categories 2, 3, and 4 for lesions on the body in males (p=0.0257), regardless of the EE. Water retention, carcass yield, cut yield, marbling pattern, pH, and color showed no effect for sex, enrichment, and interaction between the two factors (p>0.05). The use of environmental enrichment with sisal ropes and branched chains does not change the thermophysical responses, carcass traits, and meat quality of finishing pig.

Abstract
To understand characteristics of carcass traits and meat quality in pig population, 22 indicators of carcass characteristics and meat quality traits were measured on 278 Duroc × Landrace × Yorkshire barrows that were slaughtered in different seasons (spring, summer, autumn and winter). The effects of body weight and season on carcass characteristics and meat quality were analyzed by GLM procedure, followed the Bonferroni multiple test. The phenotypic correlations among those traits were calculated by employing the CORR procedure. In addition, the linear regression equations were constructed by stepwise regression model in REG procedure. The results showed that pigs slaughtered in spring had the heaviest body weight among the four seasons (P < 0.05), pigs slaughtered in summer had the lowest backfat depth and shear force (P < 0.05), and pigs slaughtered in winter had the lowest drip loss (P < 0.05). The results showed more variation in backfat depth, drip loss, intramuscular fat content, and shear force, compared with other indicators across pigs. Body weight had a significant association with loin eye area, average backfat depth and L⁎24 h (P < 0.05). Furthermore, regression equations for drip loss, cooking loss, shear force, and intramuscular fat content were constructed using more accessible indicators. Collectively, this study provided an overall view of carcass and meat quality traits in a commercial pig population in China, and illustrated that season significantly affected carcass characteristics and meat quality traits independently of body weight.

Biosecurity and Lairage Time versus Pork Meat Quality Traits in a Farm-Abattoir Continuum. Animals (Basel) 2022; 12:ani12233382. Abstract
The modern pig production chain is increasingly focused on biosecurity, quality, and safety of meat and is associated with many challenges impacting world meat markets, such as animal disease outbreaks and sanitary restrictions, trade regulations and quality requirements. To overcome such challenges and assure more consistent pork meat quality (and safety), there is a need to develop an effective and reliable monitoring system in a farm-abattoir continuum that can be based on selected biomarkers. This study assessed interrelations of selected stress and inflammation biomarkers (acute phase proteins (APP)) between farm biosecurity score versus pork meat quality traits after two different lairage periods. Briefly, the maximum recorded levels of stress hormones (436.2 and 241.2 ng/mL, for cortisol and Chromogranin A (CgA), respectively) and APP (389.4 and 400.9 μg/mL, Pig Major Acute Proteins (MAP) and Haptoglobin (Hp), respectively) at four commercial farms were within the recommended threshold values. Cortisol and APP were negatively correlated to the internal and total biosecurity scores of farms. The increase of level of both sets of biomarkers was found at bleeding (after transportation and lairage period), but with lower values after long (18-20 h) versus short (1-3 h) lairage lay-over time. In general, negative correlation was confirmed between stress and inflammation biomarkers and carcass/meat quality traits. The farm total biosecurity level significantly affected chilling yield, meat temperature, and a* value. Pig-MAP emerged as a good biomarker with a promising potential for assessment and anticipation of broad aspects in the pork meat chain. It can be used for detection of failures in the pig production system and might be incorporated in certification programs for the pork meat industry.

Abstract
This study investigated the effect of two different rest periods (R0: no rest time, and R12: 12 h of rest) on several stress indicators, including plasma and serum stress parameters, in dromedary camels (Camelus dromedarius). This study involved 60 healthy male dromedary camels aged 5 years, from which blood samples were collected. Cortisol, glucose, urea, creatinine, the enzymatic activity of creatine kinase, lactic dehydrogenase, aspartate aminotransferase, alanine aminotransferase, and alkalinephosphatase were analyzed. Data obtained indicated that rest time had a significant effect on cortisol, creatinine, creatine kinase, lactic dehydrogenase and aspartate aminotransferase (p < 0.05). However, no statistically significant effect was found for glucose, urea, alanine aminotransferase, and alkalinephosphatase. The values of cortisol and creatinine showed a significant decrease at R12. In contrast, the enzymatic activity of creatine kinase, lactic dehydrogenase, and aspartate aminotransferase, significantly increased at R12. Additionally, several correlations between different studied parameters were documented, including for lactic dehydrogenase. The results obtained in this study suggest that rest time may influence welfare indicating parameters. In summary, a rest time of more than 12 h is recommended in order to allow camels to recover from the effects of pre-slaughter stress. Additionally, lactate dehydrogenase might be suitable to use as an indicator of stress in camels during the slaughter process.

Abstract
This research aimed to determine the influence of stress of various etiologies in pigs caused by transportation and pre-slaughter conditions on meat quality. For this purpose, pigs were divided into 11 groups within two meat processing enterprises, depending on the duration of transportation (short, long without breaks and long with breaks) and the conditions of keeping animals before slaughter. Also, within the two groups were created two subgroups with pigs of different breeds. A total of 156 pigs were studied. Blood was collected from all pigs to determine cortisol and lactate levels, and a sample of meat from the longest back muscle. The pH of the meat was determined at different stages of its maturation, and the weight loss of the sample was determined. As a result of the research, it was found that the highest quality pork was obtained from pigs that experienced lower levels of stress before slaughter. Keeping pigs for 10 – 14 hours before slaughter without access to water and food resulted in higher stress levels, which were probably expressed in higher blood concentrations of cortisol and lactate. Pigs’ access to food and water during pre-slaughter retention allows for high-quality meat by reducing the influence of stress. Pigs’ access to water before pre-slaughter does not affect the stress level but positively affects the loss of meat weight during maturation. The higher the concentration of lactate in pigs’ blood, the faster the pH of the meat decreases after slaughter, which negatively affects its quality and moisture retention. If there is a long-term transport of pigs, there is no rest stop that can significantly reduce stress levels in pigs. Duration of transportation of pigs does not correlate with stress levels, as the conditions before slaughter content.

Abstract
The shedding of foodborne pathogenic bacteria by food-animals can be affected by multiple factors, such as animal health, diet, stress, and environmental conditions. The practices that come with transport involve fasting, handling, mixing with unfamiliar pigs, and fluctuating temperatures. These practices, especially fasting and transport, can increase the microbial load in the feces of animals. The use of alginate hydrogels is a novel delivery system that can be a potential food safety intervention during transport to induce satiety and provide electrolytes to the animal’s system. This study sought to observe microbial shedding as affected by fasting and hydrogel bead supplementation during transport. Sixty market pigs were subjected to a 12 h fasting period and an additional 4 h transport period, in which a treatment group was fed hydrogel beads and a control group was not. Sampling points were before fast (BF), before transport (BT), and after transport (AT). Fecal samples were collected from every animal at each sampling point. Results from this study showed a significant increase in the concentrations of both Enterobacteriaceae and Escherichia coli between the before fast (BF) and after transport (AT) sampling points. However, no difference (p > 0.05) was found between the treatment (hydrogel) and control (no hydrogel) during transport. Moreover, no significant difference was found in the prevalence of Salmonella and E. coli O157:H7 at the three different sampling points, or between the treatment and control groups.

Abstract
Abattoir meat inspection has been proposed for the collection of welfare outcomes. The identification of suitable animal-based measures (ABM) is still a critical point that needs to be implemented to avoid collinearity among measures. The present study aims to benchmark the presence of ABM such as skin and tail lesions and ham defects in carcasses from 79 batches of Italian Heavy pigs and to identify possible relationships between the assessed ABM and pre-slaughter factors such as the season and the overnight lairage. Furthermore, the study also considers the effect of pre-slaughter conditions and ABM on carcass traits parameters (cold carcass weight and lean meat percentage). Skin and tail lesions were recorded at the slaughter line. The presence of abscesses, muscle tears and veining defects were assessed in the hams at trimming, according to the Parma Ham Consortium. A multivariate analysis was performed to identify relationships between ABM and pre-slaughter factor; therefore, a linear model was built to assess the effect on carcass weight and lean meat percentage. Main welfare issues were represented by skin and tail lesions and muscle tears (prevalence above 10%). Multivariate analysis evidenced that skin lesions and veining defects were mostly associated with the warm season. Abscesses and muscle tears in the hams were more likely related to overnight lairage, while tail lesions contributed equally to both season and lairage. Moreover, lairage related factors showed to affect lean meat percentage. The findings of the present study suggest that ham defects might be useful indicators of pre-slaughter stress. The validation of these findings with physiological parameters could be of interest for further studies.

Abstract
The final phase in pork production is the transport of finisher pigs to the slaughterhouse. Fasting is one of the parameters that influence the stress coping ability of the pigs during transport and lairage. When implemented correctly with attention to the local factors, pre-slaughter fasting can improve animal welfare, pathogen risk and carcass hygiene. The length of pre-slaughter feed withdrawal time is important to the success of the production practice. In practice, a fasting time before slaughter between 12 and 18 h enhances pork safety, pork quality, and animal welfare. This means that communication between producer and slaughterhouse is essential when planning the fasting and lairage times to avoid carcass and technological pork quality problems (such as pale, soft, and exudative (PSE) meat or dark, firm and dry (DFD) meat).

Abstract
This study assessed the effects of season on health, behaviour, physiological stress parameters, and carcass and meat quality in a total of 480 slaughter pigs. The following health indicators were recorded: pneumonia, pleurisy, milk spots, and pericarditis. Behaviour was monitored during unloading (slipping, falling, turning back, reluctance to move, panting, shivering) and lairaging (panting, shivering, huddling). Blood lactate and glucose concentrations were determined at exsanguination. Performance indices (live weight, daily weight gain), carcass (carcass weight, backfat and loin thickness, lean meat content, carcass lesion score), and meat quality (pH, temperature, drip, thawing and cooking losses, colour, marbling) traits were measured postmortem. Pigs slaughtered in winter had the highest live weight, carcass weight, loin thickness, and carcass lesion score, while the lowest live weight, carcass weight, and backfat thickness were recorded in pigs slaughtered in summer. The highest lactate and glucose concentrations were recorded in pigs slaughtered in summer. The highest prevalence of red, soft, and exudative meat was recorded in pigs slaughtered in winter. Pigs slaughtered in summer had the lowest pH, the highest thawing loss, L* value, b* value, and occurrence of pale, soft, and exudative meat. Pigs slaughtered in autumn had the lowest drip loss, cooking loss, L* value, b* value, and the greatest percentage of red, firm, and nonexudative meat. In conclusion, the summer and winter temperatures compromised health and welfare and reduced carcass and meat quality in slaughter pigs, indicating that protection against heat and cold stress is not yet effective.

Abstract
Loading, transport, unloading, lairage and stunning are the principle ante-mortem events that generate negative responses associated with stress in pigs. For this reason, it is important to verify the condition of animals throughout the supply chain in order to ensure their welfare and obtain, at the end of the slaughtering process, high-quality carcases and meat. Several studies have identified the indicators and samples that need to be taken into account to properly measure and evaluate the responses that these animals emit to the stressors involved. However, these procedures must be carried out quickly and by non-invasive means so as not to impede the flow of animals through the operations of loading, transport, unloading and lairage. Therefore, the objective of this review article is to analyse the stressful events that pigs experience during these events and discuss the use of the infrared thermography (IRT) as an alternative tool for measuring stress based on temperature changes on the surface of pigs’ skin. We argue that infrared thermography can be used as a strategy to improve animal welfare during loading, transport, unloading and lairage by preventing fatigue and deaths, and decreasing negative impacts on meat quality, such as pale, soft and exudative (PSE), or dark, firm and dry (DFD) conditions.

Abstract
The killing of pigs for human consumption (slaughtering) can take place in a slaughterhouse or on farm. The processes of slaughtering that were assessed for welfare, from the arrival of pigs until their death, were grouped into three main phases: pre-stunning (including arrival, unloading from the truck, lairage, handling and moving of pigs); stunning (including restraint); and bleeding. Stunning methods were grouped into three categories: electrical, controlled atmosphere and mechanical. Twelve welfare consequences the pigs can be exposed to during slaughter were identified: heat stress, cold stress, fatigue, prolonged thirst, prolonged hunger, impeded movement, restriction of movements, resting problem, negative social behaviour, pain, fear and respiratory distress. Welfare consequences and relevant animal-based measures were described. In total, 30 welfare hazards that could occur during slaughter were identified and characterised, most of them related to stunning and bleeding. Staff were identified as the origin of 29 hazards, which were attributed to the lack of appropriate skill sets needed to perform tasks or to fatigue. Corrective and preventive measures for these hazards were assessed: measures to correct hazards were identified, and management was shown to have a crucial role in prevention. Outcome tables linking hazards, welfare consequences, animal-based measures, origins and preventive and corrective measures were developed for each process. Mitigation measures to minimise welfare consequences are proposed.

Abstract
Simple Summary Tea residue is the remaining residue of tea after drinking or deep processing. With the annual consumption of tea, a large amount of discarded tea residue is produced. If the tea residue is not effectively utilized, it will cause not only environmental pollution, but also represent a waste of resources. In this study, strains of Bacillus subtilis, Aspergillus niger, and Saccharomyces cerevisiae were used to produce fermented tea residue (FTR). Different levels of FTR were used instead of corn and soybean meal. The resulting product was used to feed pigs bred for rapid growth, also known as fatteners. We explored its effects on growth performance, digestion performance, meat quality, serum antioxidant capacity, and intestinal morphology in fatteners. The aim is to provide a scientific basis for the future use of FTR as a feed material. Abstract This study investigated the dietary supplementation of tea residue fermented by Bacillus subtilis, Aspergillus niger, and Saccharomyces cerevisiae, to explore its effects on growth performance, digestion performance, meat quality, serum antioxidant capacity, and intestinal morphology in pigs bred for rapid growth, also known as fatteners. One hundred and ninety-two healthy “Duroc × Landrace × Yorkshire” ternary hybrid pigs (body weight 70 ± 1.0 kg) were randomly divided into four groups according to the feeding test requirements, with four replicates in each group, and 12 fatteners per replicate. The control group (CG) was fed the basal diet. Treatments 1 (T1), 2 (T2), and 3 (T3), comprising ratios of 10%, 15%, and 20% of tea residue were added to the basal diet. The test period was 60 days. The results showed that supplementation of FTR in fatteners’ diets increased final body weight (FBW), average daily gain (ADG), and feed conversion ratio (FCR) in the T1 and T2 groups (p < 0.05). Compared with the other groups, the lightness (L*) and pH were significantly affected in the T2 group (p < 0.05). Compared with the CG, dietary supplementation of FTR significantly increased the nutrient digestibility of crude protein (CP), ether extract (EE), calcium (Ca), and phosphorus (P), improved the lipase and trypsin activities, and reduced drip loss and the shear force of fatteners (p < 0.05). Glutathione peroxidase (GSH-Px) and total antioxidant capacity (T-AOC) were significantly increased in the T2 and T3 groups compared with the other groups (p < 0.05). Supplementation of FTR in the jejunum significantly increased the villi height of the T2 group and the ratio of villi height to crypt depth of the FTR groups. Compared with the other two groups, the T2 and T3 groups significantly reduced the ratio of the villous height to crypt depth in the duodenum (p < 0.05). In conclusion, the tea residue after fermentation was shown to have beneficial effects on the fattening performance, digestion performance, meat quality, serum antioxidant capacity, and intestinal morphology of fatteners.

Ease of handling decreased as the group size increased. Moving pigs in smaller groups improve animal welfare parameters and carcass quality. However, meat quality classifications of the carcasses were not affected by the groups size used in preslaughter handling. Based on the results, moving groups of five pigs seems to be the best strategy to improve animal welfare and carcass quality. Abstract The effect of different group sizes of pigs (3, 5, and 10 pigs) during handling on physiological parameters, carcasses, and pork quality traits at the farm and slaughterhouse were evaluated in 360 pigs from five farms (four repetitions or group/treatment/farms). Data was analyzed as a factorial of 3 × 5 (3 treatments × 5 farms) to check effects of treatments by analysis of variance in ANOVA. Ease of handling decreased as the group size increased. However, time taken in handling was not influenced by the group size (p > 0.10). Moving pigs in groups of five animals reduced effects on blood cortisol levels (p < 0.05). Fighting and handling lesions in the carcasses increased for bigger handling groups (p < 0.05). Pigs handled in groups of three and ten animals had a higher pHu and initial temperature in Longissimus thoracis and Semimembranosus (p < 0.05) and lower drip loss in Semimembranosus (p < 0.05). However, meat quality classifications of the carcasses were not affected by treatments. Based on the results, moving groups of five pigs seems to be the best strategy to improve animal welfare, carcasses and pork quality.

Abstract
The incidence of non-ambulatory non-injured (NANI), non-ambulatory injured (NAI) and dead pigs on-arrival at three Brazilian slaughterhouses were evaluated in 37,962 pigs to identify risk factors linked to them, besides carcass bruises and limb fractures. Total pre-slaughtering losses were 1.18%, in which NAI (0.39%) and NANI (0.37%) incidences contributed the most. A positive relation between on farm steeper ramp slope >20° and the incidence of NAI, NANI and dead pigs at unloading was found. Farm size, pigs/pen, enthalpy at loading, transportation time, truck loading order, muscle thickness and carcass weight, were identified as risk factors for pre-slaughtering losses. Loading procedures influenced the occurrence of limb fractures and bruises (which are a welfare issue and should be reduced). Therefore, personal training on pre-slaughter handling is essential to reduce the risk factors to improve animal welfare and avoid losses during the pre-slaughter process.
