Abstract
Heavy metals, common environmental pollutants with widespread distribution hazards and several health problems linked to them are distinguished from other toxic compounds by their bioaccumulation in living organisms. They pollute the food chain and threaten the health of animals. Biologically, heavy metals exhibit both beneficial and harmful effects. Certain essential heavy metals such as Co, Mn, Se, Zn, and Mg play crucial roles in vital physiological processes in trace amounts, while others like As, Pb, Hg, Cd, and Cu are widely recognized for their toxic properties. Regardless of their physiological functions, an excess intake of all heavy metals beyond the tolerance limit can lead to toxicity. Animals face exposure to heavy metals through contaminated feed and water, primarily as a result of anthropogenic environmental pollution. After ingestion heavy metals persist in the body for an extended duration and the nature of exposure dictates whether they induce acute or chronic, clinical or subclinical, or subtle toxicities. The toxic effects of metals lead to disruption of cellular homeostasis through the generation of free radicals that develop oxidative stress. In cases of acute heavy metal poisoning, characteristic clinical symptoms may arise, potentially culminating in the death of animals with corresponding necropsy findings. Chronic toxicities manifest as a decline in overall body condition scoring and a decrease in the production potential of animals. Elevated heavy metal levels in consumable animal products raise public health concerns. Timely diagnosis, targeted antidotes, and management strategies can significantly mitigate heavy metal impact on livestock health, productivity, and reproductive performance.

Abstract
The intricate balance between the beneficial and harmful effects of selenium (Se) intake means that its quantification in food needs to be done correctly. Therefore, in this review, we systematized 105 articles to identify the most studied methodologies, analytical techniques, and food matrices. Among the analytical techniques employed, inductively coupled plasma mass spectrometry (ICP-MS) (n = 29) emerged as the most commonly used method. The most prevalent hydrolysis methodology to digest Se in food matrices involved the use of nitric acid combined with ultrasound, which improved both the yield and digestion time. Optimal recovery values were achieved when total Se quantification accounted for the sum of Se(IV) and Se(VI) (94.4-99.4%) and for SeCys (88-96.5%). These findings are relevant for advancing methodological approaches, and their results emphasize the importance of developing alternative, faster, and lower-cost protocols for Se quantification in foods and beverages.

Abstract
Nowadays, there is an increased consumption of plant-based protein beverages like soy beverages (SBs) as substitutes for cow milk (CM). Both accumulate toxic metals like lead (Pb), cadmium (Cd), and manganese (Mn), which, although essential, are neurotoxic at high levels. Metals can also perturb the normal development of children. This work aimed to evaluate these metal concentrations in CM and SB purchased on the Portuguese market. After validation of the method, linearity of calibration curves, work range, detection and quantification limits, and selectivity, metals were determined in 14 CM and 14 SB brands using atomic absorption spectrometry. The values were compared between CM and SB and with permissible limit values. Soy beverages had significantly (p < 0.05) higher concentrations of Cd (5.6 ± 4.2 µg/L) and Mn (117.4 ± 30.3) µg/L) than CM (2.15 ± 1.84 µg/L and 5.93 ± 1.21 µg/L, respectively); the Pb concentrations in CM (19.3 ± 12.1 µg/L) were not significantly (p > 0.05) higher than in SB (13.4 ± 9.6 µg/L). These values were similar to other studies and close to but under permissible limit values. Nevertheless, due to the toxicity and bioaccumulation of metals, the fact that these foods are routinely ingested by all ages, mainly children, and represent key ingredients in many processed foods, including baby foods, we suggest strict surveying of metal levels in CM and SBs.

Abstract
Milk and its derivatives are basic foods in Peru, especially for children. The Junín region, in the central Andes, is one of the leading dairy basins. However, the safety of milk is affected by mining-metallurgical activities, wastewater dumping, organic residues, and inappropriate use of organophosphate fertilizers in agriculture whose contaminants reach the food chain, putting human health at risk. The purpose of this study was to evaluate the bioaccumulation of lead (Pb), cadmium (Cd), and arsenic (As) in milk produced on a representative farm in central Peru, which uses phosphorous agrochemicals and is adjacent to a small mineral concentrator and a municipal solid waste dump, and to evaluate the potential risk for the Peruvian population of 2-85 years considering three levels of daily intake by age, which constitutes the innovative contribution of the study. These three elements were quantified by flame atomic absorption spectrometry following standardized procedures. The mean contents of Pb (0.062 mg/kg), Cd (0.014 mg/kg), and As (0.030 mg/kg) in milk exceeded the maximum limits allowed by international standards. At all ages, the target quotient hazard followed a descending order of As > Pb > Cd, being > 1 in the case of As. The hazard index was >1 for children under 7, 9, and 11 years of age in the scenarios of low, medium, and high milk intake. The information is valid for formulating policies to prevent adverse health effects and develop standards and awareness programs, monitoring, and control of heavy metals in milk in Peru.

Abstract
In this article the content of toxic xenobiotics (heavy metals and pesticides) in cow milk collected from 5 districts of Eastern Kazakhstan was examined and their cumulative properties were determined. The content of organochlorine pesticides (HCCH, DDT) was not detected in the analyzed milk. The content of mercury and arsenic in milk samples does not exceed the maximum allowable concentration (0.005 and 0.05 mg/kg, respectively). The content of cadmium above the maximum allowable concentration (0.03 mg/kg) was found in milk sampled from Shemonaikha and Katon-Karagai districts. The content of lead and zinc above the maximum allowable concentration (0.1 and 5.0 mg/kg, respectively) was found in milk samples taken from all 5 studied districts. The content of copper above the maximum allowable concentration (1.0 mg/kg) was found in milk samples collected from 4 districts under study (Borodulikha, Beskaragai, Shemonaikha and Katon-Karagai). Based on the analysis of information data the need to develop an accelerated method of determining toxic xenobiotics in milk was substantiated. The basic directions of modernization of the biosensor for determination of cadmium and lead salts in milk and dairy products were selected. A new approach to the process of immobilization of the enzyme on the surface of a substrate for cadmium and lead salts determination in milk has been developed. The efficiency of using a polymeric plate with a graphite conducting layer as a basis for the enzyme biosensor was established.

Abstract
The aim of this study was to provide information on the levels of toxic (Cd and Pb) and essential (Cu, Fe, and Zn) elements in cow's milk produced in the State of Pernambuco (Brazil). A total of 142 samples of raw milk were collected, and the concentrations of essential and toxic elements were determined using inductively coupled plasma-optical emission spectrometry. In almost 30% of the samples analyzed, the Pb content exceeded the maximum level established in the Brazilian legislation (0.05 mg/L). By contrast, in all the samples, the Cd content was below the maximum allowable level (0.02 mg/L). The essential trace elements Cu, Fe, and Zn were generally present at lower concentrations than reported in other studies and can be considered within the deficient range for cow's milk. Statistical and chemometric procedures were used to evaluate the main factors influencing the metal concentrations (proximity to major roads, presence of effluents, and milking method). The study findings demonstrate that the proximity of the farms to major roads influences the concentrations of Cd, Pb, and Cu and that this is the main factor explaining the Pb content of milk. In addition, the presence of effluents influenced the concentrations of Cu, while no relationship between the metal content and the milking method was observed. Thus, in accordance with the study findings, the consumption of cow's milk produced in the region can be considered a risk to public health due to the high concentrations of Pb and the low concentrations of other essential minerals such as Cu, Zn, and Fe in some of the milk samples.

Abstract
Bovine milk is a pillar of the human diet and plays a key role in the nutrition of infants. Perfluoroalkyl substances (PFASs) are well-recognized highly stable organic compounds that are able to pollute ecosystems persistently and threaten both human and animal health. The study aimed to analyze the distribution of 14 PFASs within the milk matrix by comparing their content in whole milk, and its skimmed and creamed fractions. Raw milk samples were individually collected from 23 healthy cows (10 primiparous and 13 multiparous) reared on a farm in Northern Italy not surrounded by known point sources of PFASs. Each sample was fractioned in whole, skim, and cream components to undergo PFAS analysis using liquid chromatography-high-resolution mass spectrometry. All samples contained at least one PFAS, with perfluorobutanoic acid (PFBA) being the primary contaminant in all three fractions, followed by perfluorooctane sulfonate (PFOS) and perfluorooctanoic acid (PFOA). PFOS was shown to be significantly (p < 0.001) more concentrated in cream than in raw and skimmed milk. Multiparous cows showed a higher frequency of positive samples in all analyzed fractions. Further research is necessary to assess the risk of dairy diets and high-fat dairy products and to investigate the toxicological effects of PFASs on cattle, even in environments without known PFAS sources.

Abstract
Insects have emerged as a novel feed protein source that could help to produce enough food to feed the growing global population. Good-quality protein content, minerals and bioactive compounds are the main reasons for the use of insects in livestock. Nonetheless, insects should be proven to be safe for use before being used as feeder insects for livestock. The accumulation of heavy metals in the feedstuff is becoming a major food safety concern, as this poses a serious problem to animal health and threatens human health through the transmission of toxic substances into the human food chain. It has been shown that feeder insects grown from agricultural waste materials contain chemical contaminants such as pesticides and veterinary drug residues. Current research mostly focuses on the safety evaluation of undesirable substances in edible insects for human consumption, but rarely indicates if these insects are safe to use in livestock feeds, particularly for avian species. Therefore, owing to the potential risks of heavy metal in animal production, heavy metal residues in feeder insects have received scientific attention. Hence, this review article is intended to evaluate and discuss selected heavy metals in insects, comparing them with toxicity limits for feedstuff of animal origin, and their potential risks of exposure. A literature search on metal elements present in insects was conducted using electronic databases. In addition, the citations included in articles were used to find other relevant articles or documents on this topic. Identified published articles were grouped and evaluated according to the insect species, growth stage and substrate from which the insects were grown. It was observed that the accumulation of heavy metals in insects is mainly associated with agricultural waste materials fed to insects. Furthermore, metal toxicity in animals varies according to animal species and age, metal type, concentration, and chemical form.

Abstract
The aim of this work was to determine the concentrations of selected mutagenic elements (As, Cd, Co, Cr, Cu, Fe, Mn, Ni, Pb, and Se) in raw ewe milk from undisturbed environment in Orava region, northern Slovakia. There are possible sources of some of the analyzed metals which may be distributed from the metallurgical plants located in the Ostrava region, Czech Republic, and Katowice, Poland. In total, forty milk samples were analyzed in June and August using an inductively coupled plasma optical emission spectrometry. The differences in elements concentrations between the seasonal periods were not significant except of iron (p < 0.0001). The concentrations of most of the metals in ewe milk were low and under the permissible or recommended limits. However, arsenic and selenium concentrations were elevated and could pose a risk of the mutagenic effect, particularly in children. The frequency of element occurrence in June was as follows: Se > Fe > As > Cu > Mn > Ni > Co > Pb > Cr > Cd, and in August: Se > Fe = As > Cu > Mn > Pb > Co > Ni > Cr > Cd. The correlation analysis revealed very strong positive correlation between Cu:Pb (p < 0.05), very strong negative correlation between Fe:Se (p < 0.05). The strong correlations were also found between other elements. The present study showed that milk produced in the relatively undisturbed environment might contain various mutagenic elements. The relationships between the elements might result in the additive or synergistic effects of elements and increase the risk of their mutagenic effects even in low concentrations. Therefore, attention must be paid to the monitoring of metals in the areas where food sources destined especially for child nutrition are produced.

Abstract
Lead (Pb) contamination in the environment affects both humans and animals. Chronic exposure to Pb via dietary intake of animal products such as milk from contaminated areas poses a health risk to consumers; therefore, the present study investigated Pb contamination in cow milk and its health risk impact on humans through consumption of milk from cattle reared in the proximity of a Pb−Zn mine in Kabwe, Zambia. Fresh milk samples were collected from cows from Kang’omba (KN), Kafulamse (KF), Mpima (MP), Mukobeko (MK), and Munga (MN) farming areas. Pb determination was performed using Graphite Flame Absorption Atomic Spectrophotometry (GFAAS). Cow milk Pb levels showed different concentration patterns according to season, distance, and location of the farms from the Pb−Zn mine. The overall mean Pb levels were ranged 0.60−2.22 µg/kg and 0.50−4.24 µg/kg in the wet and dry seasons, respectively. The mean Pb concentration, chronic daily intake (CDIs), target hazard quotients (THQs), and incremental lifetime cancer risk (ILCR) results obtained were all within the permissible limits of 20 µg/kg, 3 and 12.5 µg/kg-BW/day, <1 and 10−4 to10−6, respectively. In conclusion, although Pb was detected in milk from cows reared in Kabwe, the health risk effects of Pb exposure associated with the consumption of milk in both adults and children were negligible.

Abstract
The water bodies within industrial areas are often used for the disposal of effluents leading to metal contamination in water, soil, and vegetation. However, the impact of metal enrichment in the food grown in these areas has not been much explored. The present study investigates the food chain contamination of eight metals (Al, Cd, Cr, Cu, Fe, Mn, Pb, and Zn) in the milk from the cattle grazing on a shallow lake bed within the industrial town of Ranipet, India, and associated health risk from the consumption by adults and children. It also considers the possible sources of metals into the cattle from water, forage, and soil. The total number of cattle grazing in the study area was identified, along with their average daily intakes. The total milk yield from these cattle and the milk consumption rates were identified from surveys conducted among cattle owners and milk buyers. The primary sources of all the metals, except Al are forage; whereas for Al, it is the soil. The projected milk consumption pattern indicates that 531 children and 1279 adults drinking contaminated milk are at considerable risk. The hazard indices ranged from 0.86 to 2.74 for children, and 0.35 to 1.13 for adults. The Cancer Risk values for Cd and Cr were above 10-4 for adults and children, signify serious health risk. The analyses of tail switch hair samples indicated that cattle are also environmentally exposed to metals indicating their subclinical effect. Hence, the study substantiates that soil can be a potential source of metals in the food chain, and apprises stringent quality control and monitoring food chain contamination from milk in industrial belts.

Abstract
Milk and dairy products are among the most important food sectors in Georgia, and milk is considered one of the most essential foods in the human diet according to Georgian food culture. Kvemo Kartli is one of the major regions in Georgia for milk production. This region suffers from heavy metal contamination in soil and water because of the mining industry. This study was conducted to determine the concentrations of cadmium, lead, iron, zinc, copper, chromium, manganese, cobalt, nickel, selenium and molybdenum in milk and cheese and to evaluate whether the concentrations of these elements correspond to the permissible levels of toxic elements in milk and cheese for Georgia and the EU. In total, 195 milk samples and 25 cheese samples (16 from Imeruli cheese and nine from Sulguni cheese) were collected from nine different villages in the Kvemo Kartli region in Georgia: Chapala, Vanati, Bolnisi, Mtskneti, Sabereti, Ratevani, Khidiskuri, Kazreti, Kvemo Bolnisi. The determination of heavy metal in all samples was carried out by inductively coupled plasma-mass spectrometry. The research results show that the concentration of these elements in most milk samples is fairly constant for all villages and is less than the permissible levels, except for seven samples from the following villages: Kvemo Bolnisi, Bolnisi, Mitskineti and Ratawani, where the concentration of lead in the milk samples was higher than the permissible limits mentioned in the literature, ranging from 0.027 to 1003 mg L−1. As for copper, its concentration in milk in Sabereti and Vanati villages was above the permissible limits according to the EU limit, ranging from 0.42 to 1.28 mg L−1. For cheese samples, the concentration of cadmium, lead, copper, Co and Ni in the two types of cheese was less than the permissible limit according to the laws of Georgia. Finally, the heavy metal concentrations in Imeruli and Sulguni cheese for manganese (Mn), chromium (Cr), selenium (Se), molybdenum (Mo) zinc (Zn) and iron (Fe) were above the permissible limit. Thus, the study results showed that the consumption of milk does not pose a direct and serious threat to the health of consumers. As for the two types of cheese, future studies and continuous monitoring are necessary to assess the cheese content of trace elements and the risk of its consumption to the consumer.

Abstract
The aim of this review is to comprehensively present disorders of the reproductive system in cattle exposed to contact with toxic metals. Toxic metals are a common environmental pollutant and can come from mines, smelters, fossil fuel combustion, or volcanic eruptions. Metals have the ability to bioaccumulate in living organisms, thus contaminating the food chain and may pose a threat to humans. They accumulate mainly in the liver and kidneys, but also in muscles and fat tissue. Toxic metals such as lead (Pb), arsenic (As), mercury (Hg), and cadmium (Cd) have a negative impact on the fertility of animals; they can lead to abortions, premature calving, or oocyte dysfunction. Moreover, in the male reproductive system, they disrupt spermatogenesis, and cause apoptosis of sperm and oxidative damage. The main source of exposure of livestock to toxic metals is through the consumption of feed or contaminated water. It is important to monitor the level of heavy metals in animal products to prevent human poisoning. Toxic metal biomonitoring can be performed by testing urine, blood, milk, plasma, or hair. Chromium (Cr), arsenic (As), and cadmium (Cd) are excreted in the urine, while lead can be detected by examining the blood of animals, while in milk, arsenic (As), cadmium (Cd), nickel (Ni), and lead (Pb) can be detected. Moreover, toxic metals do not biodegrade in the environment. To purify soil and waters, remediation methods, e.g., biological or chemical, should be used.

Abstract
Concentrations of selected essential (Ca, Mg, Zn, Se, Fe, Cu) and toxic elements (As, Cd, Hg, Pb, Ni) were analyzed in milk of sheep (300 ewes of Tsigai breed) depending on lactation stage in area of Slovakia with slightly disturbed environment. To determine the real state of environment in the selected area, the study was extended to include analyses of the soil and animal feed (green pastures). Analyses of elements in soil were performed using ICP-OES and elements in feed and milk using the AAS-HG, AES-ICP, AAS-ETA, AAS-AMA, and AAS-F. Analyses of soil samples and feed samples revealed the presence of toxic elements in this area, but their concentrations did not affect concentrations in milk and were below the LOQ (limit quantification). Significant decrease of Ca as well as Mg and Zn (P < 0.05) concentrations was found between early and middle stages of lactation and significant increase between the middle and late of lactation period. Concentration of Se and Fe in milk during the lactation significantly increased (P < 0.05) in the last stage of lactation. Concentration of Cu in milk of sheep was below LOQ during all stages of lactation. In the milk of sheep during the lactation stages, the significant positive correlations between concentrations of the following elements were observed: Ca-Mg, Fe-Se, Ca-Se, Ca-Fe, Mg-Se, Mg-Fe, Ca-Zn, and Mg-Zn. The low concentrations, below LOQ of selected toxic elements in milk of ewes, indicate the safety of this milk for direct consumption or for further food processing.

Abstract
OBJECTIVE The goal of this study was to determine the levels of lead (Pb), cadmium (Cd), and aluminum (Al) in raw bovine milk. Milk consumption was used to calculate the estimated weekly intake (EWI), provisional tolerable weekly intake (PTWI), and target hazard quotient (THQ) for individuals. Metal distribution in dairy products and byproducts was studied as a result of artisanal processing. MATERIAL AND METHODS Seventy-five raw bovine milk samples were collected from artisanal producers in Alexandria city, West Delta, Egypt, and analyzed using the atomic absorption spectrophotometer. The effect of artisanal dairy processing on metal distribution was studied. RESULTS The averages of Pb, Cd, and Al in milk samples were 45.06, 4.77, and 2.93 μg/l, with 13.33% and 1.33% of analyzed samples had Pb and Al levels higher than the permissible limits, respectively. The EWI values of Pb, Cd, and Al were 1.050, 0.111, and 0.068 μg/kg body weight, which contributed to about 4.20%, 1.59%, and 0.97% from the PTWI, respectively. The THQ of three metals was <1, which referred to safe consumption. Metal residues were heavily concentrated in artisanal cheese and yogurt after coagulation and fermentation compared with other dairy products. Accordingly, the maximum average and reduction values of Pb, Cd, and Al were 745.87, 51.99, and 71.58 μg/l and -72.87%, -56.5%, and -40.96% in Damietta cheese; 535.51, 40.11, and 62.43 μg/l and -24.11%, -20.74%, and -22.94%) in Kareish cheese; and 418.42, 31.26, and 50.66 μg/l and 3.02%, 5.90%, and 0.27% in yogurt, respectively. CONCLUSIONS The results indicated that consumption of raw bovine milk did not pose a risk to Alexandria citizens. Metal concentration increased in artisanal cheese and yogurt because of metal bio-gathering after coagulation and fermentation. Fat separation, churning, and boiling milk might keep metal concentration in dairy products and byproducts at lower levels than milk. Thus, they are suggested to be applied especially in highly contaminated areas.

Abstract
Good-quality water and food are the basic needs of humans, plants, and animals. Polluted groundwater and soil directly and indirectly affect organisms, which is the main environmental concern. In the current study, standard protocols of atomic absorption spectrometry were adopted for the investigation of selected metals (lead, chromium, and iron) in the collected groundwater and soil samples. The Pearson correlation coefficient (r) applied to groundwater and soil samples shows a positive perfect correlation among water parameters (conductivity and total dissolved solids) in all three sources. In the hand pump samples between water table (WT) and water source depth (WSD), Pearson correlation coefficient (r) value was found (r = 0.87) while between EC and TDS, it was r = 1. Similarly, in the bore hole samples between WT and WSD (r = 0.66), EC and TDS (r = 1), EC and Cr (r = 0.70), and TDS and Cr (r = 0.70), which showed weaker correlation. In the tube well samples, correlation between EC and TDS was high (r = 1). The correlation coefficient (r) values of the soil parameters in the hand pump (soil) samples between Fe and Cr (r = 0.86), in bore hole samples between Fe and Cr (r = 0.77), in tube well samples between Fe and Cr (r = 0.69), while all the other parameter correlations were found lower (r = 0.60). Between electrical conductivity and total dissolved solids, high relation has been observed between them (r = 1). Overall, results showed that in most of the studied samples, contents of the target metals were found above the allowable limit set by the World Health Organization (WHO) and the United States Environmental Protection Agency (USEPA).

Abstract
The aim of this work was to determine the content of lead (Pb), chromium (Cr), cadmium (Cd), arsenic (As), copper (Cu), strontium (Sr) and thallio (Tl) in blood, milk and urine from cows fed forage irrigated with sewage water and cultivated in the vicinity of the Popocatépetl volcano and determine the rate of transfer of these elements from blood to milk and urine. Digestion was performed in a microwave oven (CEM-MarsX). The determination was made using an ICP -OES. The Cd in the blood was significantly higher than in milk and urine. The Cr in the blood was higher than in the urine. In milk the content of Pb and Cu was significantly higher than in blood. Sr and Tl concentration in the urine was higher than that detected in milk and blood and Pb in blood. Milk transfer Index revealed a significant difference in relation to the TI values found in the urine and only in the case of Cu in milk was TI > 1. In urine, the values found of Sr and Tl were higher than milk TI. It is concluded that when metals are ingested by cows in fodder, they are easily transferred to milk and urine through the blood. Presence of heavy metals in the different matrices determines the degree of environmental and trofic chain contamination with which we can consider the cow a biomarker.

Abstract
The objective of this study was to measure the concentrations of eleven essential, potentially toxic and toxic elements (arsenic – As, calcium – Ca, cadmium – Cd, copper – Cu, iron – Fe, mercury – Hg, magnesium – Mg, nickel – Ni, lead – Pb, selenium – Se, zinc- Zn) in raw cow’s milk (spring, summer, and autumn season), feed (spring and autumn season) and soil (spring season) from three different environments by routine methods in the certified testing laboratory. The samples were collected in the undisturbed region around Novoť, the moderately disturbed region around Tulčík, and the strongly disturbed region around Čečejovce. The concentrations of all toxic elements (As, Cd, Hg, Ni, Pb) and two essential elements (Cu, Se) in milk were under the limits of quantification (LOQ) from all investigated areas and during all seasons. Concentrations of other elements in milk from the undisturbed and disturbed areas were significantly different, generally with the highest levels in summer. In soil samples, the significantly highest concentrations of Ca, Cu, Ni were found in a strongly disturbed area, Mg and As in moderately disturbed area, and Fe, Se, Zn, Hg, and Pb in an undisturbed area. Cadmium was under the LOQ. In feed, the concentrations of essential elements, except of Se, were higher in the autumn. The significantly highest concentration of As, Ni were recorded in a moderately disturbed area and Pb in the undisturbed area in both seasons. Cadmium and Hg were under the LOQ. Despite the higher level of some elements in soil (Fe, Mg, Ca) from all regions, there were not elevated concentrations of any element in feed or milk. The concentrations of all toxic elements in milk were under the permitted limits. Thus, the milk from all investigated areas was not contaminated with the elements posing a health risk for consumers and it is considered safe for human consumption.
