Abstract
The objective of current research was to measure the amount of acrylamide in falafel samples by GC-MS (Gas chromatography-mass spectrometry) technique. The results presented, the average amount of acrylamide in falafel samples was 1.23 ± 0.83 mg/kg (ranged from 0.12 to 3.75 mg/kg). Also, the results showed lower temperature and frying with electric oven and low oil, reduces the average formation of acrylamide (0.73 ± 0.42 mg/kg), while frying at high temperature and frying with gas and immersion in edible oil, increases the average amount of acrylamide formation (1.72 ± 0.86 mg/kg). The highest and lowest average amount of acrylamide was observed in falafel cooked with canola oil (1.57 ± 0.96 mg/kg) and cooked with soybean oil (0.92 ± 0.32 mg/kg), respectively. Based on the MCS (Monte Carlo Simulation) results, the THQ (Target Hazard Quotient) and ILCR (Incremental Lifetime Cancer Risk) related to exposure to acrylamide via commercial falafel for adults were 2.72E-2 and 2.77E-5; and for children were 9.69E-2 and 9.25E-5, respectively. Therefore, there doesn't a significant health risk from falafel consumption.

Abstract
For the first time in Iran, in this study, the amount of 19 trace elements in some types of commonly consumed Iranian fruits (in their peel and pulp) was evaluated by ICP-OES (Inductively coupled plasma-optical emission spectrometry) method. Based on the outcomes, the highest and lowest average detected elements in all fruits samples were related to (Al) aluminum (1842.18) and (V) vanadium (0.28) ppm, respectively. Mercury (Hg) and antimony (Sb) were not detected (ND) in any samples. Also, the maximum mean of elements in quince, lemon, grapefruit, kiwi, orange south, orange north and tangerine samples was related to(Fe) iron (2048.32 ppm), (Zn)zinc(753.45 ppm), Fe (1056.33 ppm), Al (9794.41 ppm), Zn (717.78 ppm), Fe (1334.87 ppm) and Fe (974.93 ppm), respectively. Furthermore, our outcomes revealed, the highest mean of elements in kiwi peel, kiwi pulp, orange North peel, orange North pulp, orange South peel, orange South pulp, quince peel, quince pulp, grapefruit peel, grapefruit pulp, lemon peel, lemon pulp, tangerine peel and tangerine pulp was related to Al (17967.79 ppm), Al (1621.03 ppm), Fe (1350.01 ppm), Al (1457.66 ppm), Zn (934.71 ppm), Fe (728.06 ppm), Fe (2768.11 ppm), Fe (1328.54 ppm), Zn (1008.54 ppm), Fe (1198.00 ppm), Zn (683.35 ppm), Zn (823.55 ppm), Fe (1182.59 ppm), and Fe (767.27 ppm), respectively. Based on the Monte Carlo simulation results, the THQ (target hazard quotient) and ILCR (Incremental Lifetime Cancer Risk) related to exposure to heavy metals via fruits for adults and children showed that there is no significant non-carcinogenic risk (THQ < 1) and carcinogenic risk (ILCR < 1E-4) for adults and children.

Abstract
This research examines the concentration of 10 trace elements including arsenic (As), lead (Pb), chromium (Cr), zinc (Zn), iron (Fe), cobalt (Co), cadmium (Cd), nickel (Ni), manganese (Mn), and aluminum (Al) from among 36 different samples of coffee (3 brands and 2 types of simple and instant) and mixed coffee (3 brands and 4 types of simple, creamy, chocolate and sugar free) collected from market of Iran's and analyzed by using ICP-OES (inductively coupled plasma-optical emission spectrometry). The recovery, limit of quantification (LOQ), and limit of detection (LOD) ranged from 93.4 to 103.1%, 0.06 to 7.22, and 0.018 to 2.166 µg/kg, respectively. The findings showed that the highest and lowest average concentrations were 498.72 ± 23.07 μg/kg (Fe) and 3.01 ± 1.30 μg/kg (As) in coffee and mixed coffee samples. Also, in all samples, the maximum concentration of trace elements was related to Fe (1353.61 µg/kg) and the minimum concentration was related to Al, As, Co, Cr, Ni, Pb, and Zn that were not detected (ND). The samples of mixed coffee had highest levels of trace elements compared to coffee samples. In coffee samples, type of instant coffee had highest levels of trace elements compared to simple coffee and mixed coffee samples. The type of creamy mixed coffee had highest levels of trace elements (except Ni and Cr) compared to other type of mixed coffee samples. Finally, trace elements were less than the standard levels of Iran and other countries (in all samples); therefore, it does not threaten Iranian consumers.

Abstract
This paper reviews the published terminology, mathematical models, and the possible approaches used to characterise the risk of foodborne chemical hazards, particularly pesticides, metals, mycotoxins, acrylamide, and polycyclic aromatic hydrocarbons (PAHs). The results confirmed the wide variability of the nomenclature used, e.g., 28 different ways of referencing exposure, 13 of cancer risk, or 9 of slope factor. On the other hand, a total of 16 equations were identified to formulate all the risk characterisation parameters of interest. Therefore, the present study proposes a terminology and formulation for some risk characterisation parameters based on the guidelines of international organisations and the literature review. The mathematical model used for non-genotoxic hazards is a ratio in all cases. However, the authors used the probability of cancer or different ratios, such as the margin of exposure (MOE) for genotoxic hazards. For each effect studied per hazard, the non-genotoxic effect was mostly studied in pesticides (79.73%), the genotoxic effect was mostly studied in PAHs (71.15%), and both effects were mainly studied in metals (59.4%). The authors of the works reviewed generally opted for a deterministic approach, although most of those who assessed the risk for mycotoxins or the ratio and risk for acrylamide used the probabilistic approach.

Abstract
This study determines the association between adult Saudi Arabian coffee consumption and serum iron levels. The extensive Saudi Arabian population, including both sexes - male and female, participated in this cross-sectional community-based study from 1 October 2020 to 31 June 2022. The participants were selected arbitrarily using the systematic simple random position. The current study enrolled 113 participants with a mean age of 33 years, including 94 (83.2%) females and 19 (16.8%) males. The concentration of iron absorption assessed among 62 individuals who participated in the group of occasional coffee drinkers was higher (54.9%) than the 51 individuals who participated in the group of regular coffee drinkers (45.1%). In daily coffee consumption, paired samples statistics in mean baseline WBC level (103/μl) was 6.396. On day 31 of June 2022, WBC level (103/μl) was 6.114. Paired samples statistics in mean baseline iron level was 44.29. On day 31 of June 2022, iron level was 72.15. The paired samples correlation in baseline and day 31 iron levels was 0.719, with a significant difference of 0.000. It is critical to acquire the most recent information and local statistics on the frequency of low serum iron levels in Saudi Arabia's diverse adult population. The adult population of Saudi Arabia correlates with coffee consumption and changes in serum ferritin or iron levels and WBC counts. Neither the WBC numbers nor the iron levels were significantly altered. Further research is needed to determine the potential mechanisms causing these relationships.

Abstract
Exposure to mycotoxins in food is largely unavoidable, and concerns about their health effects are growing. Consumption of vegetable oils such as peanuts oil has increased, hence several studies have been conducted on concentration of aflatoxins (AFs) in peanuts oil. Search was performed in Scopus and PubMed databases on prevalence and concentration of AFs in peanuts oil from 1 January 2005 to 15 April 29, 2022. Prevalence and concentration of AFs in peanuts oil was meta-analyzed based on country and type of AFs subgroups. In addition, health risk was calculated using monte carlo simulation method. Pooled prevalence of AFB1 in peanuts oil was 47.9%; AFB2, 46.45%; AFG1, 46.92% and AFG2, 54.01%. The Overall prevalence of AFTs was 49.30%, 95%CI (35.80-62.84%). Pooled concentration of AFB1 in peanuts oil was 2.30 μg/kg; AFB2, 0.77 μg/kg; AFG1, 0.07 μg/kg; AFG1, 0.28 μg/kg. The sort of country based on mean of MOEs in the adults consumers was Japan (47,059) > China (17,670) > Ethiopia (7,398) > Sudan (6,974) > USA (1,012) and sort of country based on mean of MOEs in the children was Japan (120,994) > China (46,991) > Ethiopia (19,251) > Sudan (18,200) > USA (2,620). Therefore, adults consumers were in considerable health risk in Ethiopia, Sudan and USA and for children in USA (MOE < 10,000).

Abstract
The aim of this study was to assess the level of PAHs and associated health risks in different types of fish cooked with different methods, using the MSPE-GC/MS technique (magnetic solid phase extraction with gas chromatography/mass spectrometry). The limits of detection (LODs), limits of quantification (LOQs) and recovery percentages ranged from 0.1 to 0.63 μg/kg, 0.3-1.89 μg/kg, and 93.7 to 102.6%, respectively. The results showed that the mean of ƩPAHs in all samples was 20.31 ± 6.60 µg/kg. Additionally, PAH4 and BaP levels in all samples were 4.58 ± 1.40 and 1.08 ± 0.36 µg/kg, respectively, which were below the European Union (EU) standard level (12 and 2 µg/kg, respectively). The results showed that among 5 types of fish, starry sturgeon had highest average total PAHs (13.24 ± 1.84 µg/kg), while Caspian Sea sprat had the lowest average total PAHs (1.24 ± 0.8 µg/kg). In terms of cooking methods (charcoal-grilled fish, fried fish and oven-grilled fish), charcoal-grilled fish had the highest average total PAH level at 25.41 ± 7.31 µg/kg, while the lowest average total PAH was found in the raw fish sample at 16.44 ± 4.63 µg/kg. The Monte Carlo Simulation was used to determine the 95% ILCRs (Incremental Lifetime Cancer Risk) due to ingestion of fish. The results showed that the ILCR for adults was 2.85E-9, while for children it was 1.32E-8. Therefore, based on these findings, it can be concluded that the consumption of fish cooked with different methods does not pose a risk to human health in terms of the amount of PAHs (ILCR < 1 × 10-4).

Abstract
A rapid and efficient method using an alkyl-functionalized magnetic nanoparticles-based extraction technique combined with Ultra-High Performance Liquid Chromatography was developed for the detection of trace amounts of polycyclic aromatic hydrocarbons in tea leaves. As a popular coating for chromatographic column packing materials, C18-alkyl has been demonstrated to be effective in separating polycyclic aromatic hydrocarbons. Additionally, the magnetism of the nanomaterials accelerates the extraction process while their high surface ratio enables desirable dispersity in the sample matrix. Meanwhile, the adsorbents can be washed and reused 30 times without compromising recovery, which greatly reduces the budget. The effects of various parameters were investigated and optimized, and the recoveries for five analytes were in the range of 84.8-105.4%. The RSD of intra-day and inter-day were below 11.9% and 6.8%, respectively. The limits of detection and limits of quantification ranged from 1.69-9.97 ng g-1 and 5.12-30.21 ng g-1, indicating satisfactory sensitivity. Thus, the proposed methodology is rapid, highly efficient, and economical, and it expands the application of magnetic cleanup approaches in complex food matrices.

Abstract
Meat, poultry, and seafood such as fish are a valuable source of protein, vitamins and minerals. Considering their high consumption in the human diet, it is necessary to study pollutants (such as PAHs) in them. This present study has focused on the PAHs level and probabilistic risk of health in meat, poultry, fish and related product samples by MSPE-GC/MS technique (magnetic solid-phase extraction with gas chromatography-mass spectrometry). The maximum mean of 16 PAH was detected in smoked fish samples (222.7 ± 13.2 μg/kg) and the minimum mean of 16 PAH was detected in chicken (juje) kebab (112.9 ± 7.2 µg/kg μg/kg). The maximum mean of 4PAHs was detected in tuna fish (23.7 ± 2.4 µg/kg) and the minimum mean of 4PAHs was seen in grilled chicken and sausage samples (non-detected). Our results showed the 4PAHs and B[a]P were lower than the EU (European Union) standard levels (these standard levels were 30 and 5 μg/kg, respectively). Furthermore, the correlation among the type and concentrations of PAHs congeners was investigated through cluster analysis by heat map and principal component analysis. The 90th percentile ILCR (incremental lifetime cancer risk) of PAH compounds in fish, poultry, meat and related products samples was 3.39E-06, which was lower than the maximum acceptable level of risk (10-4). Finally, the highest ILCR was related to hamburger (4.45E-06). Therefore, there is no risk in consuming these foods in Iran, but it is necessary to monitor PAHs concentration in different types of foods.

Abstract
Diet is one of the main factors affecting human health. The frequent consumption of heat-treated meat has been classified as both directly carcinogenic to humans and as a risk factor, especially in the case of cancers of the gastrointestinal tract. Thermally processed meat may contain harmful muta- and carcinogenic compounds, including polycyclic aromatic hydrocarbons (PAHs). However, there are natural ways to reduce the risk of diet-related cancers by reducing the formation of PAHs in meat. The purpose of this study was to determine changes in PAH levels in pork loin dishes prepared by stuffing the meat with dried fruits (prunes, apricots and cranberries) and baking it in a roasting bag. High-performance liquid chromatography with fluorescence detection (HPLC-FLD) was used to conduct a quantitative analysis of seven PAHs. Recovery results ranged from 61 to 96%. The limit of detection (LOD) was 0.003 to 0.006 ng/g, and the limit of quantification (LOQ) was 0.01 to 0.02 ng/g. Gas chromatography-mass spectrometry (GC-MS/MS) was used to confirm the presence of PAHs in food. The total PAH content of the roasted pork loin was 7.4 ng/g. This concentration decreased by 35%, 48% and 58% when the meat was roasted with apricots, prunes and cranberries, respectively. The cranberries also inhibited the formation of benzo(a)pyrene to the greatest extent. Thermally treating meat stuffed with dry fruits may be a simple and effective way to prepare foods with reduced levels of mutagens and carcinogens belonging to PAHs, and thus reduce the risk of cancer.

Abstract
In the current study, we assessed health risk posed to Iranian consumers through exposure to metals via oral consumption of coffee, tea, and herbal tea of various trademarks collected from Iran market. Level of As, Cd, Cr, Cu, Fe, Hg, Ni, and Pb in 243 samples was quantified by inductively coupled plasma-optical emission spectrometry (ICP-OES). The metal levels in coffee samples from different trademarks of a specific country had statistically similar levels of metals; however, metal levels differed significantly among brand names form different countries. Metal levels in tea samples differed significantly between domestic and imported products, while different trademarks of similar countries did not show significant variations in this respect. Metal level in herbal tea samples did not show significant variations among different trademarks. Nevertheless, it should be highlighted that mean concentrations of metals statistically differed among different herbal tea samples. Deterministic hazard quotients (HQs) were <1.0 for all non-carcinogenic metals and total hazard index (HI) values indicated no risk; however, probabilistic assessment calculated HI values >1. In both deterministic and probabilistic scenarios, carcinogenic metals As and Ni had an estimated incremental lifetime cancer risk (ILCR) of medium level while that of Pb indicated no cancer risk. Sensitivity analysis showed that the concentration of metals had the most significant effect on non-carcinogenic and carcinogenic risks.

Abstract
The research goal was to estimate the level of risk to human health posed by polycyclic aromatic hydrocarbons (PAHs) in Vietnamese takeaway coffee. A variety of roasted coffee beans were collected and tested for the presence of PAHs in various takeaway locations throughout Vietnam. Furthermore, the effect of roasting conditions on PAH concentrations in Vietnamese Robusta coffee was also studied and demonstrated. Gas chromatography-mass spectrometry, a modern, accurate, and fast method, was used to determine the research results. Six PAHs, namely naphthalene, anthracene, pyrene, fluorene, phenanthrene, and benz[a]anthracene, were found in the 100 collected samples, with average concentrations (μg/kg dry weight) of 943.7 ± 40.3, 195.1 ± 4.9, 36.1 ± 1.1, 33.3 ± 2.2, 28.2 ± 1.7, and 2.0 ± 0.1, respectively. It was found that the tested samples were almost free of PAH4 contamination. The research showed that the total value of PAH quantifications in Robusta coffee increased with increasing roasting temperature and decreased with increasing roasting time. In addition, the calculated value of the total hazard quotient (THQ) was less than 1, and the obtained value of the incremental lifetime carcinogenic risk (ILCR) did not exceed 1·10-5, meaning that coffee consumers in Vietnam are safe from exposure to PAHs present in the investigated coffee beans.

Abstract
The objective of the present study was to investigate the level of 16 PAHs in fruit juice samples (orange, apple, peach, pineapple, and mango) with three different packages (PET bottle, Tetra Pak, and canned packaging) by using MSPE/GC-MS (magnetic solid-phase extraction and gas chromatography-mass spectrometry) method. In this method limit of detection (LOD), and limit of quantitation (LOQ), and recovery were 0.030-0.280 μg/L, 0.090-0.840 μg/L, and 94.8-102%, respectively. Our results showed the median of total PAHs and PAH4 (in all samples) were 7.67 ± 3.19 and 0.370 ± 0.160 μg/L, respectively. The median of BaP in samples was )0.060 ± 0.030 μg/L( lower than the standard level (0.200 μg/L in drinking water) of US Environmental Protection Agency (USEPA). Also, our results showed that pineapple juice had a maximum median of total PAHs of 12.4 ± 4.84 μg/L and mango juice had a minimum median of total PAHs of 5.17 ± 1.24 μg/L. Additionally, canned packaging had a maximum average total PAHs of 10.6 ± 5.22 μg/L and PET bottles had a minimum average total PAH of 5.25 ± 2.03 μg/L. A heat map approach was also used to cluster samples. The Monte Carlo results indicated that the estimated daily intake (EDI) rank order was Na > B(g)P > Ch > I(cd)P > B(b)F > Ph > B(k)F > F > Ace > Fl > B(a)P > B(a)A > P >A. The Monte Carlo simulation (MCS) results showed the incremental lifetime cancer risk (ILCR) at the 95th percentiles for adults and children was 4.91 × 10-7 and 9.12 × 10-7, respectively. It is concluded that the concentration of PAHs compounds in Iranian fruit juices is lower than the existing standards, and in terms of the risk of carcinogenesis, it does not threaten the human health (< 10-6).

Abstract
In the present study, magnetic solid phase extraction (MSPE) method and gas chromatography-mass spectrometry (GC/MS) technique were used to measure 6 PAE in fruit juice samples. The mean of total phthalic acid esters (ƩPAEs) in all samples was 3.55 ± 0.66 µg/L. The mean concentration of DEHP (bis(2-ethylhexyl) phthalate) in samples was 0.82 ± 0.31 µg/L, which was lower than the mentioned United States Environmental Protection Agency (USEPA) standard level in drinking water (6 μg/L for DEHP). The pineapple juice samples (4.44 ± 0.57 µg/L) and mango juice samples (2.77 ± 0. 1 µg/L) had maximum and minimum mean levels of ƩPAEs, respectively. Also, results showed that brand B (3.76 ± 0.87 µg/L) and samples in the time of expiration date (3.64 ± 0.72 µg/L) had the highest PAE levels. The rank order Chronic Daily Intake (95%) values for adults were DEHP ([Formula: see text]) > butylbenzyl phthalates (BBP) ([Formula: see text]) > diethyl phthalate (DEP) ([Formula: see text]) and for children were DEHP ([Formula: see text]) > BBP (9.07E-04) > DEP ([Formula: see text]), which were below the tolerable daily intake (TDI) value. The noncancer risk of PAEs based on the target hazard quotient (THQ) was acceptable (< 1). The results exhibited that the Incremental Lifetime Cancer Risk (ILCR) was below the permissible limit (< [Formula: see text]). Therefore, the risk of carcinogenicity and noncarcinogenicity of PAEs in juices does not have adverse effects on human health.

Abstract
With the development of medical drugs, the widely used tetracycline has brought many adverse effects on the ecosystem and human health. Tetracycline pollution of water environment is becoming more and more serious, and has become an emerging environmental problem. As single celled organisms, microalgae are not only model organisms for risk assessment of aquatic ecosystems, but also can efficiently purify sewage. Microalgae-mediated pollutant remediation has attracted more and more attention from researchers. In this paper, Chlamydomonas reinhardtii (C. reinhardtii) was used to remove tetracycline in aqueous solution, and the removal efficiency and mechanism of microalgae on tetracycline were studied. The results showed that the removal rates of tetracycline by active and inactivated microalgae at a density of 5 × 106 cells·mL-1 were 81.9% and 89.8%, respectively. C. reinhardtii removed tetracycline through biosorption and nonmetabolic processes. Microalgal cell supernatant and hydroxyl radicals could significantly promote the removal of tetracycline. The positively charged tetracycline was electrostatically adsorbed on the microalgae surface and extracellular polymeric substances. Microalgae biomass can promote the production of ROS and enhance the ability of microalgae to remove tetracycline.

Abstract
In the present research, an ultrasound-assisted magnetic solid-phase extraction coupled with a gas chromatography-mass spectrometry hybrid system was developed for extraction/determination of trace amounts of polycyclic aromatic hydrocarbons in high-consumption soft drinks and non-alcoholic beers in Iran using magnetite graphene oxide adsorbent. The magnetite graphene oxide was characterized by scanning electron microscope, transmission electron microscopy, Fourier-transform infrared spectroscopy, X-ray diffraction, and vibrating-sample magnetometer techniques. The highest extraction recovery (73.05 to 95.56%) and enrichment factor (90.65 to 106.38) were obtained at adsorbent mass: 10 mg, adsorption time: 30 min, salt addition: sodium chloride 10% w/v, desorption time: 20 min, eluent type: hexane: acetone (1:1, v/v), and desorption solvent volumes: 200 μL. Under optimum conditions, the linearity range for polycyclic aromatic hydrocarbons determination was 0.2-200 ng mL-1 with coefficient of determination> 0.993, limit of detection = 0.09-0.21 ng mL-1 , limit of quantitation = 0.3-0.7 ng mL-1 , and relative standard deviation < 8.1%, respectively. Relative recoveries in spiked real samples ranged from 94.67 to 109.45 % with standard deviation < 6.05%. The proposed method is effective, sensitive, reusable and it is promising for the analysis of polycyclic aromatic hydrocarbons residues in environmental samples. Abstract
The analysis and probabilistic health risk assessment of polycyclic aromatic hydrocarbons (PAHs) in cereal products were done by using magnetic solid-phase extraction (MSPE) method and gas chromatography/mass spectrometric (GC/MS). The results of method showed LOQ and LOD of PAHs compounds were 0.105-0.180 and 0.035-0.060 µg/kg, and the recorded values were 4.3-12.1 and 6.1-20.3% for repeatability and reproducibility with an estimated recovery of 94.4-103.4%. In this study, we analyzed kind of bread (Barbari, Sangak, Baguette, Taftoon, Lavash), macaroni, lasagna, and cooked rice that mean of total PAHs were 98.2, 121.7, 134.9, 166.3, 176.3, 176.2, 130.1, and 248.3 μg/kg, respectively. Further, the correlation between the type and amount of 16 PAHs with cereal products samples evaluated with multivariate principal component analysis and heat map visualization. The highest incremental lifetime cancer risk (ILCR) was found in cooked rice (7.80E-6), while the lowest ILCR was found in Lasagna (2.35E-07). In conclusion, the PAHs content in the tested products were in low health risk ranges (1 × 10-6 < ILCR < 1 × 10-4), and all of the cereal products sold in Tehran are considered safe for consumers. Therefore, cereal products should be regularly evaluated and monitored by regulatory agencies to reduce contaminants in these high-consumption products.

Abstract
The four polycyclic aromatic hydrocarbon markers (PAH4) of benzo[a]anthracene (BaA), chrysene (Chr), benzo[b]fluoranthene (BbF), and benzo[a]pyrene (BaP) are indicators showing polycyclic aromatic hydrocarbon (PAH) contamination levels in Chinese medicine raw materials (CMRMs), extracts and health food products; Samples of herbal medicine, herbal extracts, and food supplements were extracted with n-hexane, then cleaned up sequentially on Florisil and EUPAH solid-phase extraction (SPE) columns. A gas chromatography-mass spectrometry method for the determination of four polycyclic aromatic hydrocarbon markers in Chinese medicine raw material, extracts, and health food products was established; In spiked-recovery experiments, the average recovery was about 78.6-107.6% with a precision of 2.3-10.5%. The limit of quantification (LOQ) and limit of detection (LOD) of the PAH4 markers in this method were 2.0 μg/kg and 0.7 μg/kg, respectively. When the developed method was utilized to determine PAH4 contents in 12 locally available health food products, 3 samples contained over 10.0 μg/kg BaP, and 5 samples contained over 50.0 μg/kg PAH4. The European Union (EU) limits for BaP and PAH4 are 10 and 50.0 μg/kg, respectively; therefore, more attention must be drawn to the exposure risk of BaP and PAH4 in CMRMs, their extracts, and health food products. According to the risk assessment based on the Margin of Exposure (MOE) method, it is recognized that the products mentioned in this study pose a low risk.

Abstract
Baby food is one of the most sensitive foods available, which is closely monitored for carcinogens. In this study, 16 Polycyclic Aromatic Hydrocarbon (PAH) compounds were evaluated by using the method of magnetic-solid-phase-extraction and gas-chromatography/mass-spectrometry (MSPE/GC-MS). The recovery, limit of detection (LOD), and limit of quantification (LOQ) of PAH compounds were 93.4–101.6%, 0.06–1.12, and 0.18–3.38 μg/kg, respectively. The results indicated the mean of total PAHs in all samples was 3.73 ± 0.8 μg/kg, and the mean of Benzo[a]pyrene (BaP) was 0.29 ± 0.14 μg/kg that were lower than the USA-Environmental Protection Agency (USEPA) standard level (1 μg/kg, BaP in baby foods). In addition, our results showed that mixed five cereal-based baby food had a maximum mean of ΣPAHs (5.06 ± 0.68 μg/kg) and mixed wheat and date-based baby food had a minimum mean of ΣPAHs (3.03 ± 0.41 μg/kg). The carcinogenic risk due to PAH in the tested baby foods sold in Iran was adequately low, and all examined products were safe for consumers. Therefore, it can be said that the consumption of baby foods does not pose a threat to consumers.

Abstract
Polycyclic aromatic hydrocarbons (PAHs) are epidemiologically associated with cardiovascular diseases characterized by early key events involving in the disruption of endothelial barrier function. Whether PAHs can induce adverse cardiovascular outcome by directly destabilizing endothelial barrier function remains elusive. Herein, we investigated the effect of anthracene (ANT), 9-nitroanthracene (9-NANT), and 9,10-anthraquinone (9,10-AQ) on vascular endothelial barrier functions in human umbilical vein endothelial cells (HUVECs). The integrity of endothelial barrier in HUVECs was disturbed with a 1.15-1.42 fold increase in fluorescein leakage, and 21.8%-58.3% downregulated transendothelial electrical resistance. ANT, 9-NANT and 9,10-AQ promoted paracellular gap formation as revealed by transmission electron microscope. The disrupted cell junctions after 24 h exposure to ANT, 9-NANT and 9,10-AQ at 0.01 μM were indicated by the downregulated mRNA expression of vascular endothelial cadherin (VE-cadherin), zona occludens-1 (ZO-1) and occludin by 33.2%-71.4%, 19.1%-21.0%, and 31.9% respectively, and the downregulated protein expression of ZO-1 and occludin, and by the internalization of VE-cadherin. We demonstrated that ANT and its derivatives at environmentally relevant concentrations induced endothelial barrier dysfunction via the disruption of cell junctions, providing essential in vitro evidence on the association with their adverse cardiovascular outcomes.

Abstract
The aim of study was evaluate of the concentration and health risk of nitrosamines in 150 meat products samples by using gas chromatography coupled with mass spectrometry (GC/MS), with the chemometric approach. Among the identified nitrosamines, the levels of N-nitrosopyrrolidine (NPYR), N-nitrosopiperidine (NPIP), and total nitrosamines in meat sausages samples were significantly higher than chicken sausages (p < 0.05). Principal component analysis and heat map visualization confirmed meat percentage and sausages type (meat or chicken) which had significant effects on nitrosamines content. The NPIP and NPYR intake was 1.17E-07 and 2.12E-07 mg/kg bw/day, respectively. The Monte Carlo simulation results indicated that the 95th percentile from NPIP and NPYR based on ILCR index were 9.07E-07 and 4.72E-07, respectively. In conclusion, the carcinogenic risk of nitrosamines was considerably lower than the safe risk limit (CR > 1E-4) recommended by United States Environmental Protection Agency for Iranian population.

Abstract
A newly synthesized free fatty acids from waste palm oil functionalized magnetic nanoparticles immobilized on the surface of graphene oxide (FFA@MNP-GO) was successfully synthesized and characterized in this research. The combinations of long alkyl chain of free fatty acid with graphene oxide that consists of large delocalized 77-electron systems and abundant of hydrophilic groups with hydroxyl, epoxide and carboxylic groups offer the determination of simultaneous wide range of polarities of organic pollutants in real matrices through hydrogen bonding, hydrophobic and 77-77 interactions. The fabricated adsorbent was successfully applied as a magnetic solid phase extraction (MSPE) adsorbent for the simultaneous separation of selected phthalate esters (PAEs) and polycyclic aromatic hydrocarbons (PAHs) in apple and cabbage extracts prior to their high performance liquid chromatography with diode-array detector (HPLC-DAD) determination. Factors affecting the extraction efficiency such as amount of adsorbent, desorption solvent, volume of desorption solvent, extraction time, desorption time, pH and sample volume were investigated and optimized. The results revealed that under optimal conditions, the detection limit of selected PAEs and PAHs were in the range of 0.56-0.97 ng mL-1 and 0.02-0.93 ng mL-1, respectively. The spiked recoveries of real apple and cabbage extracts for PAEs and PAHs were in the range of 81.5-117.6% with good relative standard deviation (RSD) (n = 5) less than 10% and 86.7-118.2% with acceptable RSDs (n = 5) ranging from 1.5 to 11.0%, respectively. This study reported for the first time the use of MSPE procedure for simultaneous determination of chosen PAHs and PAEs in real samples including apple and cabbage extracts by using new adsorbent, FFA@MNP-GO.

Abstract
Phthalic acid esters (PAEs) are compounds that are used in the bottle as the main plasticizers. Therefore, the possibility of releasing phthalate esters into beverages is very high and there is a concern to consumer health and monitoring organizations. The aim of this research was to assess the phthalic acid esters (di-n-octyl phthalate (DNOP), butyl benzyl phthalate (BBP), dimethyl phthalate (DMP), diethyl phthalate (DEP) and dibutyl phthalate (DBP), bis(di-ethylhexyl) phthalate (DEHP), and total PAEs) in bottled non-alcoholic malt beverages (n = 120) by multi-walled carbon nanotubes were magnetized with iron (MWCNT-Fe3O4) using gaschromatography/mass spectrometry (GC-MS). The results showed that the highest and the lowest levels of total phthalate esters in samples were 9483.93 and 2412.50 ng/L, respectively. The mean of DEHP which has also been found to be carcinogenic in all samples was lower than 5944.73 ng/L. The highest concentration of DEHP in four samples was upper than 8957.87 ng/L. Perceived limit of detection (LOD) ranged from 13 to 30 ng/L and the limit of quantification (LOQ) ranged from 39 to 90 ng/L. Multivariate techniques and heat map visualization were used to assess the correlation among the type and levels of PAEs with the brand, color, product date, pH, sugar, volume, and gas pressure. Therefore, based on heat map and principal component analysis (PCA) results, the DEHP and total PAEs were the closest accessions, indicating that these variables had similar trends. Based on the results, it can be stated that due to the low average of total phthalate esters in non-alcoholic malt beverages, there is no serious health hazard of these compounds for humans.

Abstract
AbstractThe current study aims to investigate the levels of the toxic metal in agricultural products (legumes, wheat, and potato) collected in Markazi province, Iran, and human health risk by using inductively coupled plasma - optical emission spectrometry (ICP-OES). The levels of arsenic (As) and cadmium (Cd) in all samples were lower than the limit of detection (LOD), while the level of Cd in potato samples was lower than the maximum permisible level (MPL) of the European commission (EC). The non-carcinogenic and carcinogenic risk assessment by direct ingestion of agricultural products was calculated using the United States Environmental Protection Agency (USEPA) method. The highest mean of toxic metals was observed for lead (Pb) in legume samples (562.17 μg kg− 1). Mercury (Hg) and Pb levels in all samples were higher than LOD, while Pb level in wheat samples were lower than of EC. The rank order of Hg and Pb levels in all samples based on target hazard quotient (THQ) value was wheat> potato>legume. The THQ index of Hg and Pb by the deterministic method in wheat was 1.37 and 0.454; in potato 0.139 and 0.104; in legume 0.092 and 0.41, respectively. The carcinogenic risk index was at an acceptable range. The high hazard index values were estimated and the THQ index for Hg in wheat suggests a non-negligible health risk.

Abstract
Polycyclic aromatic hydrocarbons (PAHs) are chemical compounds comprised of carbon and hydrogen molecules in a cyclic arrangement. PAHs are associated with risks to human health, especially carcinogenesis. One form of exposure to these compounds is through ingestion of contaminated food, which can occur during preparation and processing involving high temperatures (e.g., grilling, smoking, toasting, roasting, and frying) as well as through PAHs present in the soil, air, and water (i.e., environmental pollution). Differently from changes caused by microbiological characteristics and lipid oxidation, consumers cannot sensorially perceive PAH contamination in food products, thereby hindering their ability to reject these foods. Herein, the occurrence and biological effects of PAHs were comprehensively explored, as well as analytical methods to monitor their levels, legislations, and strategies to reduce their generation in food products. This review updates the current knowledge and addresses recent regulation changes concerning the widespread PAHs contamination in several types of food, often surpassing the concentration limits deemed acceptable by current legislations. Therefore, effective measures involving different food processing strategies are needed to prevent and reduce PAHs contamination, thereby decreasing human exposure and detrimental health effects. Furthermore, gaps in literature have been addressed to provide a basis for future studies.

Abstract
The aim of current study was to evaluate the acrylamide level in chicken, meat and shrimp nugget samples cooked in both traditional and industrial methods using "Quick, Easy, Cheap, Effective, Rugged, and Safe" QuEChERS extraction and gas chromatography-flame-ionization detection (GC-FID). Results revealed the traditional frying method has significant effect on the increase of acrylamide compared to industrial frying method and it was also found that the different cooking temperatures and time have significant effect on increase of acrylamide formation (p < 0.05), but type of edible oils had no significant effect. The highest acrylamide level found in shrimp nuggets (27 ± 1.5 ng/g) which fried by colza oil and traditional cooking method (6 min at 220 °C), while the lowest content of acrylamide found in chicken nuggets (7.3 ± 0.1 ng/g) which fried by corn oil and industrial method (3 min at 180 °C). Monte Carlo simulation (MCS) results indicated that the trend of potential non-carcinogenic risks on THQ for children was chicken nugget (3.51E-3) > meat nugget (1.36E-3) > shrimp nugget (1.43E-4) and for adults was chicken nugget (3.49E-4) > meat nugget (1.35E-4) > shrimp nugget (1.38E-5). The health risk of acrylamide for adults and children, was considerably lower than the safe risk limits (HQ >1 and CR > 1E-4) for Iranian population.

Abstract
The study evaluated the changes in polycyclic aromatic hydrocarbons (PAHs) of Oolong tea samples at each heat treatment stage of the manufacturing process, different post-treatment methods and different brewing conditions. The content of PAHs in the tea leaves was significantly increased during stir fixation (280 °C for 8 min) stage of the manufacturing process. In the subsequent heat treatment process, the PAHs content did not change much until the Oolong tea product (primary) was further roasted. The level of PAHs increased with the roasting time. Charcoal roasting resulted in higher PAHs content in the product compared with electric roasting. Higher brewing temperature caused higher level of PAHs released into the tea infusion. The level of released PAHs decreased with the increase of the number of tea brewing (the total released PAHs was about 4%). The risk assessment results for PAHs in the tea infusions showed a low level of health concern.
