Advances in sustainable food packaging applications of chitosan/polyvinyl alcohol blend films

Researchers are addressing environmental concerns related to petroleum-based plastic packaging by exploring biopolymers from natural sources, chemical synthesis, and microbial fermentation. Despite the potential of individual biopolymers, they often exhibit limitations like low water resistance and poor mechanical properties. Blending polymers emerges as a promising strategy to overcome these challenges, creating films with enhanced performance. This review focuses on recent advancements in chitosan/polyvinyl alcohol (PVA) blend food packaging films. It covers molecular structure, properties, strategies for performance improvement, and applications in food preservation. The blend's excellent compatibility and intermolecular interactions make it a promising candidate for biodegradable films. Future research should explore large-scale thermoplastic technologies and investigate the incorporation of additives like natural extracts and nanoparticles to enhance film properties. Chitosan/PVA blend films offer a sustainable alternative to petroleum-based plastic packaging, with potential applications in practical food preservation.

Zeolitic imidazolate frameworks (ZIFs): Advanced nanostructured materials to enhance the functional performance of food packaging materials

Zeolite imidazole framework (ZIF) materials are a class of metallic organic framework (MOF) materials that have several potential applications in the food and other industries. They consist of metal ions or clusters of metal ions coordinated with imidazole-based organic linkers, creating a three-dimensional solid structure with well-defined pores and channels. ZIFs possess several important features, including high porosity, tunable pore sizes, high surface areas, adjustable surface chemistries, and good stabilities. These characteristics make them highly versatile materials that can be used in a variety of applications, including smart and active food packaging. Based on their controllable compositions, dimensions, and pore sizes, the properties of ZIFs can be tailored for a diverse range of applications, including energy storage, sensing, separation, encapsulation, and catalysis. In this article, we focus on recent progress and potential applications of ZIFs in food packaging materials. Previous studies have shown that ZIFs can significantly improve the optical, mechanical, barrier, thermal, sustainability, and preservative properties of packaging materials. Moreover, ZIFs can be used as carriers to encapsulate, protect, and control the release of bioactive agents in packaging materials. ZIFs are capable of selectively adsorbing and releasing molecules based on their size, shape, and surface properties. These unique characteristics make them particularly suitable for smart or active food packaging applications. By selectively removing gases (such as oxygen, carbon dioxide, water, or ethylene) ZIFs can improve the shelf life and quality of packaged foods. In addition, they can be employed to control the growth of spoilage microorganisms and minimize oxidation reactions, thereby enhancing the freshness and extending the shelf life of foods. They may also be used to create sensors capable of detecting and indicating food spoilage. For instance, ZIFs that change color or release specific compounds when spoilage products are present can provide visual or chemical indications of food deterioration. This feature is especially valuable in ensuring the safety and quality of packaged food, as it enables consumers and retailers to easily identify spoiled products. ZIFs can be functionalized using various additives, including antioxidants, antimicrobials, pigments, and flavors, which can improve the preservative and sensory properties of packaged foods. Moreover, ZIF-based packaging materials offer sustainability benefits. Unlike traditional plastic packaging, ZIFs are biodegradable and can easily be disposed of without causing harm to the environment, thereby reducing the adverse effects of plastic waste materials. The application of ZIFs in smart/active food packaging offers exciting possibilities for enhancing the shelf life, quality, and safety of foods. With further research and development, ZIF-based packaging could become a sustainable alternative to plastic-based packaging in the food industry. An important aim of this review article is to stimulate further research on the development and application of ZIFs within food packaging materials.

Electrospun nanofiber-based sensors for the detection of chemical and biological contaminants/hazards in the food industries

Food contamination reveals a major health risk globally and presents a significant challenge for the food industry. It can stem from biological contaminants like pathogens, parasites, and viruses, or chemical contaminants such as heavy metals, pesticides, drugs, and hormones. There is also the possibility of naturally occurring hazardous chemicals. Consequently, the development of sensing platforms has become crucial to accurately and rapidly identify contaminants and hazards in food products. Electrospun nanofibers (NFs) offer a promising solution due to their unique three-dimensional architecture, large specific surface area, and ease of preparation. Moreover, NFs exhibit excellent biocompatibility, degradability, and adaptability, making monitoring more convenient and environmentally friendly. These characteristics also significantly reduce the detection process of contaminants. NF-based sensors have the ability to detect a wide range of biological, chemicals, and physical hazards. Recent research on NFs-based sensors for the detection of various food contaminants/hazards, such as pathogens, pesticide/drugs residues, toxins, allergens, and heavy metals, is presented in this review.

Polycaprolactone/polyacrylic acid/graphene oxide composite nanofibers as a highly efficient sorbent to remove lead toxic metal from drinking water and apple juice

Due to the characteristics of electrospun nanofibers (NFs), they are considered a suitable substrate for the adsorption and removal of heavy metals. Electrospun nanofibers are prepared based on optimized polycaprolactone (PCL, 12 wt%) and polyacrylic acid (PAA, 1 wt%) polymers loaded with graphene oxide nanoparticles (GO NPs, 1 wt%). The morphological, molecular interactions, crystallinity, thermal, hydrophobicity, and biocompatibility properties of NFs are characterized by spectroscopy (scanning electron microscopy, Fourier transform infrared spectroscopy, X-ray diffraction, Thermogravimetric analysis), contact angle, and MTT tests. Finally, the adsorption efficacy of NFs to remove lead (Pb2+) from water and apple juice samples was determined using inductively coupled plasma optical emission spectroscopy (ICP-OES). The average diameter for PCL, PCL/PAA, and PCL/PAA/GO NFs was 137, 500, and 216 nm, respectively. Additionally, the contact angle for PCL, PCL/PAA, and PCL/PAA/GO NFs was obtained at 74.32º, 91.98º, and 94.59º, respectively. The cytotoxicity test has shown non-toxicity for fabricated NFs against the HUVEC endothelial cell line by more than 80% survival during 72 h. Under optimum conditions including pH (= 6), temperature (25 °C), Pb concentration (25 to 50 mg/L), and time (15 to 30 min), the adsorption efficiency was generally between 80 and 97%. The adsorption isotherm model of PCL/PAA/GO NFs in the adsorption of lead metal follows the Langmuir model, and the reaction kinetics follow the pseudo-second-order. PCL/PA/GO NFs have shown adsorption of over 80% in four consecutive cycles. The adsorption efficacy of NFs to remove Pb in apple juice has reached 76%. It is appropriate and useful to use these nanofibers as a high-efficiency adsorbent in water and food systems based on an analysis of their adsorption properties and how well they work.

Methylcellulose/chitosan nanofiber-based composites doped with lactoferrin-loaded Ag-MOF nanoparticles for the preservation of fresh apple

Increasing demand for high-quality fresh fruits and vegetables has led to the development of innovative active packaging materials that exhibit controlled release of antimicrobial/antioxidant agents. In this study, composite biopolymer films consisting of methylcellulose (MC) and chitosan nanofibers (ChNF) were fabricated, which contained lactoferrin (LAC)-loaded silver-metal organic framework (Ag-MOF) nanoparticles. The results indicated that the nanoparticles were uniformly distributed throughout the biopolymer films, which led to improvements in tensile strength (56.1 ± 3.2 MPa), thermal stability, water solubility, swelling index, water vapor barrier properties (from 2.2 ± 2.1 to 1.9 ± 1.9 × 10-11 g. m/m2. s. Pa), and UV-shielding effects. The Ag-MOF-LAC2% films also exhibited strong and long-lasting antibacterial activity against E. coli (19.8 ± 5.2 mm) and S. aureus (20.1 ± 3.2 mm), which was attributed to the slow release of antimicrobial LAC from the films. The composite films were shown to maintain the fresh appearance of apples for at least seven days, which was attributed to their antimicrobial and antioxidant activities. Consequently, these composite films have the potential in the assembly of innovative active packaging materials for protecting fresh fruits and vegetables. However, further work is required to ensure their safety and economic viability.

Rapid and sensitive detection of tetracycline residue in food samples using Cr(III)-MOF fluorescent sensor

As tetracycline antibiotics were used in the poultry sector, their residue in edible animal products may adversely affect food safety and human health. The development of selective and sensitive tetracycline sensors has garnered a lot of interest due to the complexity of food samples. Therefore, a fluorescent sensing probe based on chromium(III)-metal-organic framework was developed for the rapid detection of tetracycline. After the addition of tetracycline, blue emission at λem 410 nm was effectively quenched by the interaction between TC and Cr(III)-metal-organic framework material. Under optimized conditions (sensor concentration: 30 mg/L and pH: 10.0), the sensing probe showed a fast response time (1 min), and low detection limit (0.78 ng/mL) with a linear range (5-45 ng/mL). Interestingly, the Cr(III)-metal-organic framework was successfully applied to quantity tetracycline residue in chicken meat and egg samples with recoveries of 95.17-06.93%. To deduce, our work can provide a new strategy for the direct detection of tetracycline in food samples.

Analysis of polychlorinated biphenyls (PCBs) in edible oils using the QuEChERS/GC-MS method: A health risk assessment study

Population growth has made it difficult to provide safe food; because various toxic substances such as polychlorinated biphenyls (PCBs) can contaminate food products such as edible oils which have very high-rate consumption worldwide. Aims of study are to determine the concentration of PCBs in edible oil samples and to evaluate the carcinogenic risk of PCBs in them among Iranian people by Monte Calo Simulation (MCS). After finding the location of high customer hyper market in Tehran, 42 samples of 7 various types of edible oils were collected; then PCBs content of them measured using the modified QuEChERS (Quick, Easy, Cheap, Effective, Rugged, and Safe) extraction method and GC/MS technique. According to the findings the mean level of NDL-PCB in oil samples were ranged from 1.88 to 25.62 ng/g fat. Results of uncertainty analysis showed that among children the 95th percentile of Incremental Lifetime Cancer Risk (ILCR) were 7.80E-3, 5.37E-4, 5.37E-4, 2.00E-3, 1.59E-3, 13.9E-3 and 7.04E-4 for animal oil, corn oil, frying oil, olive oil, bran oil, sesame oil and sunflower oil, respectively. Also, the 95th percentile of ILCR among adults were 4.12E-2, 3.04E-3, 3.09E-3, 1.06E-2, 8.43E-3, 7.38E-3 and 3.74E-3 for animal oil, corn oil, frying oil, olive oil, bran oil, sesame oil and sunflower oil, respectively. The risk evaluation showed that in all edible oils the 95th percentile of simulated ILCR were more than 10-5, so it can be threatening health among both aging groups, although, the producers don't deliberately subject the users' lives to such danger, but high consumption rate and accumulation of PCBs in body tissues are contribute to increasing carcinogenic risk. Also, the 95th percentile of ILCR among adults were more than children, because the edible oil ingestion rate among adults was more than children.

Assessment of cheese frauds, and relevant detection methods: A systematic review

Dairy products are widely consumed in the world due to their nutritional and functional characteristics. This group of food products are consumed by all age groups due to their health-giving properties. One of these products is cheese which has a high price compared to other dairy products. Because of this, it can be prone to fraud all over the world. Fraud in food products threatens the world's food safety and can cause serious damage to human health. There are many concerns among food authorities in the world about the fraud of food products. FDA, WHO, and the European Commission provide different legislations and definitions for fraud. The purpose of this review is to identify the most susceptible cheese type for fraud and effective methods for evaluating fraud in all types of cheeses. For this, we examined the Web of Science, Scopus, PubMed, and ScienceDirect databases. Mozzarella cheese had the largest share among all cheeses in terms of adulteration due to its many uses. Also, the methods used to evaluate different types of cheese frauds were PCR, Spectrometry, stable isotope, image analysis, electrophoretic, ELISA, sensors, sensory analysis, near-infrared and NMR. The methods that were most used in detecting fraud were PCR and spectrometry methods. Also, the least used method was sensory evaluation.

Sumac (Rhus coriaria L.) anthocyanin loaded-pectin and chitosan nanofiber matrices for real-time monitoring of shrimp freshness

In this study, pectin (PC)/chitosan nanofiber (ChNF) films containing a novel anthocyanin from sumac extract were successfully developed for freshness monitoring and shelf-life extension of shrimp. The physical, barrier, morphological, color, and antibacterial properties of biodegradable films were evaluated. The addition of sumac anthocyanins to the films caused intramolecular interactions (such as hydrogen bonds) in the film structure, as confirmed by using attenuated total reflectance Fourier transform infrared (ATR-FTIR) analysis, suggesting good compatibility of film ingredients. Also, intelligent films showed significant sensitivity to ammonia vapors and changed color from reddish to olive color at the first 5 min. Moreover, the results showed that PC/ChNF and PC/ChNF/sumac films have significant antibacterial activity against Gram-positive bacteria and Gram-negative bacteria. In addition to the good functional characteristics of the smart film, the resulting films showed acceptable physicomechanical properties. So, PC/ChNF/sumac smart film exhibited the strength = 60 MPa with the flexibility = 23.3 %. Likewise, water vapor barrier reduced from 2.5 (×10^-11 g. m/m². s. Pa) to 2.3 (×10^-11 g. m/m². s. Pa) after adding anthocyanin. The results of the application of intelligent film containing anthocyanins of sumac extract for shrimp freshness monitoring showed that the color of the intelligent film changed from reddish to greenish color after 48 h of storage, which shows the high potential of the produced film for monitoring the spoilage of seafood products.

The impact of cold plasma innovative technology on quality and safety of refrigerated hamburger: Analysis of microbial safety and physicochemical properties

Atmospheric cold plasma (ACP) is an innovative non-thermal decontamination technology that is considered a great alternative to conventional preservation methods. Most importantly, improving microbial safety along with maintaining the sensory and quality properties of the treated foods, especially for perishable products. Hence, this study aimed to investigate the antimicrobial effects of novel dielectric barrier discharge (DBD) and Jet cold plasma systems and their impact on the physicochemical, color, and sensory properties of refrigerated hamburger samples. In the current study, hamburger samples were inoculated with Staphylococcus aureus, Escherichia coli, Molds and Yeasts microbial suspension (~10⁶ CFU/mL), and then were treated with argon (Ar), helium (He), nitrogen (N), and atmosphere (Atm) gases at different times (s) (0, 30, 60, 90, 180, 360). Similarly, uninoculated samples were considered for total viable count (TVC) testing. The results exhibited that plasma system type, gas type, and treatment time had a significant antimicrobial effect with a microbial reduction ranging from 0.01 to 2 log CFU/g and 0.04-1.5 log CFU/g for DBD and Jet plasma systems, respectively. Also, a treatment time longer than 90 s for DBD and 180 s for jet resulted in a significant reduction in microbial count. The ability of atmospheric cold plasma to inactivate tested foodborne pathogenic bacteria (E. coli and S. aureus) was stronger than other gases because the concentration of O₃ and NO gases in atmospheric plasma is higher than other used plasma gases. Surface color measurements (L*, a* and b*) of samples in both methods (DBD and Jet) were not significantly affected. Moreover, samples treated with various plasma gases have indicated insignificant oxidation changes (Thiobarbituric acid assay). These outcomes can assist to reduce microbial contamination and oxidation of hamburgers as a high-consumption and perishable product using ACP technology. Owing to the non-thermal nature of ACP, samples treated with ACP have exhibited no or least effects on the physical, chemical, and sensory features of various food products. As a result, cold plasma innovative technology can be proposed and used as an efficient preservative method to increase the shelf life of food products.

Thienopyrimidine-based agents bearing diphenylurea: Design, synthesis, and evaluation of antiproliferative and antiangiogenic activity

An important role has been considered for the vascular endothelial growth factor receptor 2 (VEGFR-2) in the angiogenesis process, so that its inhibition is an important scientific way for cancer treatment. In this work, new thienopyrimidine derivatives were synthesized and evaluated. Compared with sorafenib, the majority of the target compounds had antiproliferative activity against the PC3, HepG2, MCF7, SW480, and HUVEC cell lines, especially 9h with IC₅₀ values of 4.5-15.1 μM, confirming the noticeable cytotoxic effects on the listed cell lines (PC3, HepG2, SW480, and HUVEC). Analyses by flow cytometry on SW480 and HUVEC cells revealed that 9n, 9k, 9h, and 9q led to apoptotic cell death. The result of the chick chorioallantoic membrane assay showed that 9h effectively reduced the number of corresponding blood vessels. Finally, the inhibitory effect on VEGFR-2 phosphorylation was considered as the outcome of Western blot analysis of compound 9h.

High performance biopolymeric packaging films containing zinc oxide nanoparticles for fresh food preservation: A review

Biodegradable food packaging films (FPFs) assembled from sustainable biopolymeric materials are of increasing interest to the food industry due to pollution and health risks resulting from the use of conventional plastic packaging. However, the functional performance of these FPFs is often poorer than that of plastic films, which limits their commercial application. This problem may be partly overcome by incorporating nano-additives like zinc oxide nanoparticles (ZNPs) into the films. The incorporation of ZNPs into FPFs can improve their functional performance. The properties of these films depends on the concentration, dispersion state, and interactions of ZNPs with the biopolymeric matrix in the films. ZNPs-loaded films and coatings are highly effective at preserving a variety of fresh foods. Studies of ZNPs migration through FPFs have shown that the zinc is mainly transported in an ionic form and the amount entering foods is below safety standards. This article reviews recent developments in the design, fabrication, and application of ZNPs-loaded FPFs based on biopolymers, focusing on the impacts of ZNPs on the optical, barrier, mechanical, water sensitivity, and antimicrobial properties of the films. The potential applications of ZNPs-loaded FPFs for fresh food preservation is also discussed.

Metal-Organic Framework Fluorescence Sensors for Rapid and Accurate Detection of Melamine in Milk Powder

In this research, a simple, label-free, and ultra-sensitive fluorescent platform based on a metal-organic framework (MOF) has been developed to detect melamine in milk powder. This fluorescence sensor was fabricated from sensitized terbium (Tb)@NH₂-MIL-253 (Al) MOF using a hydrothermal method that involved combining the green emission of Tb (λ_em = 545 nm) with the blue emission of NH₂-MIL-253(Al) MOF (λ_em = 430 nm) under a single excitation wavelength (λ_ex = 335 nm). The fluorescence sensor was then used under optimized conditions (pH = 9.0; sensor concentration = 30 mg/L; response time = 30 s) to quantify melamine in milk powder. The accuracy, sensitivity, and reproducibility of this sensor were established compared to the high-performance liquid chromatography (HPLC) method. The linear range and lower limit of detection (LLOD, computed with 3σ/S) of the sensor were between 40-396.45 nM (equal to 25 µg/kg-0.25 mg/kg) and 40 nM (equal to 25 µg/kg), respectively, which is much less than the maximum residual level (MRL) for the detection of melamine in infant formula (1 mg/kg) and other foods/feeds (2.5 mg/kg). Additionally, the results had good agreement with the HPLC outcomes, suggesting that the NH₂-MIL-253(Al) MOF sensing probe has great precision and repeatability. To conclude, the new fluorescence sensor developed in this study can accurately and sensitively detect melamine in food samples, which may be useful for screening for adulteration of milk powders and other foods.

Polychlorinated biphenyls: A review of recent updates on food safety and environmental monitoring, health and toxicological implications, and analysis

A class of organic chemicals is known as polychlorinated biphenyls (PCBs), consisting of chlorine, hydrogen, and carbon atoms. High boiling points, chemical stability, non-flammability, and insulating properties have enabled them to be used in various industries. Because of their high toxicity, PCBs were one of the first industrial compounds to be banned from production. These compounds have high-fat solubility with bioaccumulation and biomagnification properties in the environment, food chain, and individuals. Hence, they may have an impact not only on individual organisms but ultimately on whole ecosystems. The main sources of PCB exposure are food and environmental pollutants. In the toxicology of PCBs, oxidative stress plays the most influential function. The induction of CYP1A1 due to the high affinity of PCBs for aryl hydrocarbon receptors is considered a trigger for oxidative stress. Production of reactive oxygen species and depletion of glutathione occurs due to phase Ⅰ and Ⅱ metabolism, respectively. Thus, cellular redox balance may be disrupted in the presence of PCBs and their metabolites. Chronic and long-term exposure to these compounds can often lead to life-threatening diseases like diabetes, obesity, cardiovascular and neurological diseases, cancer, and reproductive and endocrine disorders. We present the current knowledge of the routes of PCB exposure and bioaccumulation, the outlook regarding environmental and food safety, the potential role of PCBs in various diseases, the principal mechanisms responsible for PCB toxicity, and the main detection techniques used for PCBs.

The role of additives on acrylamide formation in food products: a systematic review

Acrylamide (AA) is a toxic substance formed in many carbohydrate-rich food products, whose formation can be reduced by adding some additives. Furthermore, the type of food consumed determines the AA intake. According to the compiled information, the first route causing AA formation is the Maillard reaction. Some interventions, such as reducing AA precursors in raw materials, (i.e., asparagine), reducing sugars, or decreasing temperature and processing time can be applied to limit AA formation in food products. The L-asparaginase is more widely used in potato products. Also, coatings loaded with proteins, enzymes, and phenolic compounds are new techniques for reducing AA content. Enzymes have a reducing effect on AA formation by acting on asparagine; proteins by competing with amino acids to participate in Maillard, and phenolic compounds through their radical scavenging activity. On the other hand, some synthetic and natural additives increase the formation of AA. Due to the high exposure to AA and its toxic effects, it is essential to recognize suitable food additives to reduce the health risks for consumers. In this sense, this study focuses on different additives that are proven to be effective in the reduction or formation of AA in food products.

A systematic review and meta-analysis of the impacts of glyphosate on the reproductive hormones

Worldwide use of glyphosate is constantly increasing and its residues are detected in drinking water, agriculture, and food products. There are controversial data regarding the potential reproductive adverse effects of glyphosate herbicide. Therefore, we conducted a systematic review and meta-analysis on the studies in which the alteration of at least one sexual hormone including testosterone, luteinizing hormone (LH), follicle-stimulating hormone (FSH), and estradiol was reported as a measured outcome in rats. In November 2020, 284 articles were screened, of which eight were eligible for the meta-analysis. An overall considerable effect of glyphosate exposure was found on decreasing of testosterone (7 studies, WMD = - 1.48 ng/mL; 95% CI, - 2.34 to - 0.61; P = 0.001), LH (3 studies, WMD = - 2.03 mIu/mL; 95% CI, - 3.34 to - 0.71; P = 0.003), and FSH (3 studies, WMD = - 2.28 mIu/mL; 95% CI, - 5.12 to 0.55; P = 0.115). According to our results, glyphosate intake could have major effects on the health of reproductive system. Consequently, strict monitoring of the residual glyphosate content in the drinking water, agricultural crops, and food products is necessary.

Nano-enabled plant-based colloidal delivery systems for bioactive agents in foods: Design, formulation, and application

Consumers are becoming increasingly aware of the impact of their dietary choices on the environment, animal welfare, and health, which is causing many of them to adopt more plant-based diets. For this reason, many sectors of the food industry are reformulating their products to contain more plant-based ingredients. This article describes recent research on the formation and application of nano-enabled colloidal delivery systems formulated from plant-based ingredients, such as polysaccharides, proteins, lipids, and phospholipids. These delivery systems include nanoemulsions, solid lipid nanoparticles, nanoliposomes, nanophytosomes, and biopolymer nanoparticles. The composition, size, structure, and charge of the particles in these delivery systems can be manipulated to create novel or improved functionalities, such as improved robustness, higher optical clarity, controlled release, and increased bioavailability. There have been major advances in the design, assembly, and application of plant-based edible nanoparticles within the food industry over the past decade or so. As a result, there are now a wide range of different options available for creating delivery systems for specific applications. In the future, it will be important to establish whether these formulations can be produced using economically viable methods and provide the desired functionality in real-life applications.

Smart Biopolymer-Based Nanocomposite Materials Containing pH-Sensing Colorimetric Indicators for Food Freshness Monitoring

Nanocomposite biopolymer materials containing colorimetric pH-responsive indicators were prepared from gelatin and chitosan nanofibers. Plant-based extracts from barberry and saffron, which both contained anthocyanins, were used as pH indicators. Incorporation of the anthocyanins into the biopolymer films increased their mechanical, water-barrier, and light-screening properties. Infrared spectroscopy and scanning electron microscopy analysis indicated that a uniform biopolymer matrix was formed, with the anthocyanins distributed evenly throughout them. The anthocyanins in the composite films changed color in response to alterations in pH or ammonia gas levels, which was used to monitor changes in the freshness of packaged fish during storage. The anthocyanins also exhibited antioxidant and antimicrobial activity, which meant that they could also be used to slow down the degradation of the fish. Thus, natural anthocyanins could be used as both freshness indicators and preservatives in biopolymer-based nanocomposite packaging materials. These novel materials may therefore be useful alternatives to synthetic plastics for some food packaging applications, thereby improving the environmental friendliness and sustainability of the food supply.

Influence of cooking process on the content of water-soluble B vitamins in rice marketed in Iran

The aim of this study was to analyze the effect of cooking method on thiamin (B1), riboflavin (B2), and pyridoxine (B6) vitamin content of rice samples consumed in Iran by using high-performance liquid chromatography technique. The amount of B1, B2, and B6 obtained ranged from 2.98 to 15.89, 1.15 to 22.19, and 0.96 to 4.44 μg/g, respectively, for the boiling method. In the traditional method, these vitamins had a concentration between 4.09 and 29.55, 4.87 and 16.19, and 1.52 and 12.18 μg/g, respectively. However, limit of detection (LOD) values for B1, B2, and B6 vitamins were 0.159, 0.090, and 0.041 μg/ml, respectively. Multivariate methods and heatmap visualization were applied to estimate the correlation among the type and amount of vitamins and cooking methods. According to heatmap findings, B1 and B6 vitamins and the cooking method had the closest accessions, representing that this variable had similar trends. Nevertheless, it can be concluded that the traditional cooking method can maintain more vitamins in rice samples.

Titanium dioxide nanoparticles as multifunctional surface-active materials for smart/active nanocomposite packaging films

Environmental issues such as plastic packaging and high demand for fresh and safe food has increased the interest for developing smart/active food packaging films with colloidal nanoparticles (NPs). Titanium dioxide nanoparticles (TNPs) are cost effective and stable metal oxide NPs which could be used as a functional nano-filler for biodegradable food packaging due to their excellent biocompatibility, photo catalyzing, and antimicrobial properties. This article has comprehensively reviewed the functional properties and advantages of TNPs-containing smart/active films. The advantage of adding TNPs for ameliorating food packaging materials such as their physical, mechanical, moisture/light barrier, optical, thermal resistance, microstructure and chemical properties as well as, antibacterial, and photocatalytic properties are discussed. Also, the practical and migration properties of administrating TNPs in food packaging material are investigated. The ethylene decomposition activity of TNPs containing active films, could be used for increasing the shelf life of fruits/vegetables after harvesting. TNPs are safe with negligible migration rates which could be used for fabrication of multifunctional smart/active packaging films due to their antimicrobial properties and ethylene gas scavenging activities.

Application of Nanotechnology to Improve the Performance of Biodegradable Biopolymer-Based Packaging Materials

There is great interest in developing biodegradable biopolymer-based packaging materials whose functional performance is enhanced by incorporating active compounds into them, such as light blockers, plasticizers, crosslinkers, diffusion blockers, antimicrobials, antioxidants, and sensors. However, many of these compounds are volatile, chemically unstable, water-insoluble, matrix incompatible, or have adverse effects on film properties, which makes them difficult to directly incorporate into the packaging materials. These challenges can often be overcome by encapsulating the active compounds within food-grade nanoparticles, which are then introduced into the packaging materials. The presence of these nanoencapsulated active compounds in biopolymer-based coatings or films can greatly improve their functional performance. For example, anthocyanins can be used as light-blockers to retard oxidation reactions, or they can be used as pH/gas/temperature sensors to produce smart indicators to monitor the freshness of packaged foods. Encapsulated botanical extracts (like essential oils) can be used to increase the shelf life of foods due to their antimicrobial and antioxidant activities. The resistance of packaging materials to external factors can be improved by incorporating plasticizers (glycerol, sorbitol), crosslinkers (glutaraldehyde, tannic acid), and fillers (nanoparticles or nanofibers). Nanoenabled delivery systems can also be designed to control the release of active ingredients (such as antimicrobials or antioxidants) into the packaged food over time, which may extend their efficacy. This article reviews the different kinds of nanocarriers available for loading active compounds into these types of packaging materials and then discusses their impact on the optical, mechanical, thermal, barrier, antioxidant, and antimicrobial properties of the packaging materials. Furthermore, it highlights the different kinds of bioactive compounds that can be incorporated into biopolymer-based packaging.

The prevalence of foodborne parasites in raw vegetables in Iran: a comprehensive systematic review and meta-analysis

Foodborne parasites in raw vegetables could cause parasitic infections in humans. An effective approach to the reduction of pathogenic microorganisms in vegetables involves identifying the main sources of contamination and the ecology of the involved microorganisms. This review aimed to evaluate the prevalence of foodborne parasites in raw vegetables in Iran. According to the reviewed studies, the prevalence rate of Ascaris spp., Giardia spp., Toxocara spp., Fasciola, Trichuris, Cryptosporidium, Dicrocoeliasis, Taenia spp., and Entamoeba histolytica was 6 % (95 % CI: 5-8 %), 6 % (95 % CI: 5-7 %), 6 % (95 % CI: 4-7 %), 2 % (95 % CI: 1-2 %), 1 % (95 % CI: 1-2 %), 10 % (95 % CI: 6-15 %), 2 % (95 % CI: 1-3 %), 5 % (95 % CI: 4-6 %), and 3 % (95 % CI: 2-4 %), respectively. According to the standard deviation map, Ilam province was one of the high-risk areas in terms of food-borne parasites in raw vegetables (3 SD < prevalence < 4 SD). Given the key role of raw vegetables in human parasitic contamination, governments must implement more stringent programs for effective wastewater treatment, preventing domestic and wild animals from entering farms, not using human and animal manure on farms, using ready-to-eat packaged vegetables, food safety training for households, implementation of GMP and HACCP in the factory vegetable packaging are required in this regard, especially in the high-risk areas of Iran, such as Ilam province.

A systematic review and meta-analysis of the impact of cornelian cherry consumption on blood lipid profiles

Polyphenolic and flavonoid compounds are claimed to improve blood lipid profiles and to provide protective effects against cardiovascular disease. For this reason, we conducted a systematic review and meta-analysis of studies that comprehensively investigated the effects of cornelian cherry supplementation on lipid profiles in rat models. Up to December 2020, 855 articles were screened, and finally, seven articles were selected as eligible for the meta-analysis. This meta-analysis revealed that cornelian cherry supplementation significantly decreased low-density lipoprotein (LDL) (WMD = -6.38 mg/dl; 95% CI, -9.93 to-2.84; p < .001), triglyceride (TG) (WMD = -52.36 mg/dl; 95% CI, -80.50 to -24.22; p < .005), and cholesterol level (WMD = -37.16 mg/dl; 95% CI, -51.19 to -23.13; p < .005) in treated rats compared with control groups. A nonsignificant increase in high-density lipoprotein (HDL) level was observed (WMD = 4.21 mg/dl; 95% CI, -3.25 to 11.66; p = .268). These results suggest that cherry supplementation may have health effects by modifying lipid profiles. However, there is a need for more well-controlled human clinical trials to make more definitive conclusions about the potential health benefits of cherry supplementation.

Recent Advances in the Development of Smart and Active Biodegradable Packaging Materials

Interest in the development of smart and active biodegradable packaging materials is increasing as food manufacturers try to improve the sustainability and environmental impact of their products, while still maintaining their quality and safety. Active packaging materials contain components that enhance their functionality, such as antimicrobials, antioxidants, light blockers, or oxygen barriers. Smart packaging materials contain sensing components that provide an indication of changes in food attributes, such as alterations in their quality, maturity, or safety. For instance, a smart sensor may give a measurable color change in response to a deterioration in food quality. This article reviews recent advances in the development of active and smart biodegradable packaging materials in the food industry. Moreover, studies on the application of these packaging materials to monitor the freshness and safety of food products are reviewed, including dairy, meat, fish, fruit and vegetable products. Finally, the potential challenges associated with the application of these eco-friendly packaging materials in the food industry are discussed, as well as potential future directions.

Carbohydrate-based films containing pH-sensitive red barberry anthocyanins: Application as biodegradable smart food packaging materials

A novel pH-sensitive colorimetric film was prepared based on immobilizing red barberry anthocyanins (RBAs) within composite chitin nanofiber (CNF) and methylcellulose (MC) matrices. The incorporation of CNFs and RBAs improved their mechanical properties, moisture resistance, and UV-vis screening properties. Moreover, the RBAs could be used as colorimetric indicators to detect food spoilage because they are sensitive to changes in pH and ammonia gas production. The RBA-halochromic indicator changed from reddish/crimson → pink → yellow with increasing pH, and from pink → yellow with increasing ammonia vapor concentration. Furthermore, the smart films possessed good antioxidant and antimicrobial activity owing to the presence of the RBAs and CNFs. Finally, the validity of the indicator to monitor the freshness/spoilage of a model food (fish) was demonstrated. Overall, this study shows that active/smart films can be assembled from food grade ingredients that can protect and monitor the freshness of products, like meat and fish.

Assessment of Rice Marketed in Iran with Emphasis on Toxic and Essential Elements; Effect of Different Cooking Methods

Rice is one of the most valuable nutrients in the diet of most people in the world. The aim of this study was to evaluate the effect of various pre-cooking (washing, soaking) and cooking processes (traditional and rinse) of rice on the amount of toxic and essential elements in the various brands of rice in Iran and assessing human health risks from their carcinogenic and non-carcinogenic effects. For this purpose, totally, 144 sample sizes were examined from three brand (Iranian (n = 48), Pakistani (n = 48), and Indian (n = 48)) in order to the amount of toxic and essential elements using inductively coupled plasma-optical emission spectrometry. The results showed that pre-cooking processes such as washing and soaking in the rinse method were significantly effective in removal toxic metals than the traditional method, so that the most changes were observed for potassium and aluminum metals. The estimated daily intakes of copper, magnesium, manganese, iron, and zinc in different cooking methods were 1.19-1.2%, 0.29-0.32%, 1.01-1.23%, 0.4-0.98%, and 0.9-1.32%, respectively. The Monte Carlo simulation results showed that the rank order of toxic metals of cooked rice based on target hazard quotients value was arsenic > chromium > cadmium > mercury > lead > aluminum, respectively. The result of cancer risk probability was lower than the safe risk limits (1E-4), representing no remarkable cancer risk probability that was due to ingestion of rice for adults and children in Iran. According to the this results, it is recommended to use the rinse method due to further reduction of metals especially toxic metals for rice samples, although the amount of essential elements was also removed by this method.

Molecular Mechanisms of Salmonella Effector Proteins: A Comprehensive Review

Salmonella can be categorized into many serotypes, which are specific to known hosts or broadhosts. It makes no difference which one of the serotypes would penetrate the gastrointestinal tract because they all face similar obstacles such as mucus and microbiome. However, following their penetration, some species remain in the gastrointestinal tract; yet, others spread to another organ like gallbladder. Salmonella is required to alter the immune response to sustain its intracellular life. Changing the host response requires particular effector proteins and vehicles to translocate them. To this end, a categorized gene called Salmonella pathogenicity island (SPI) was developed; genes like Salmonella pathogenicity island encode aggressive or modulating proteins. Initially, Salmonella needs to be attached and stabilized via adhesin factor, without which no further steps can be taken. In this review, an attempt has been made to elaborate on each factor attached to the host cell or to modulating and aggressive proteins that evade immune systems. This review includes four sections: (A) attachment factors or T3SS- independent entrance, (B) effector proteins or T3SS-dependent entrance, (c) regulation of invasive genes, and (D) regulation of immune responses.

The Effects of Lactobacillus casei on Glycemic Response, Serum Sirtuin1 and Fetuin-A Levels in Patients with Type 2 Diabetes Mellitus: A Randomized Controlled Trial

Background:

Type 2 diabetes mellitus (T2DM) is related to the gut microbiota with numerous molecular mechanisms. Modulating the gut microbiota by probiotics could be effective in management of T2DM. The aim of the present trial was to evaluate the effect of Lactobacillus casei on glycemic control and serum sirtuin1 (SIRT1) and fetuin-A in patients with T2DM.

Methods:

Forty patients with T2DM (n = 20 for each group) were divided into intervention (probiotic) and placebo groups. The intervention group received a daily capsule containing 10⁸ cfu of L. casei for eight weeks. The patients in placebo group took capsules containing maltodextrin for the same time duration. Anthropometric measurements, dietary intake questionnaires, and blood samples were collected, and the patients were assessed by an endocrinologist at the beginning and at the end of the trial.

Results:

Fasting blood sugar, insulin concentration, and insulin resistance significantly decreased in probiotic group compared with placebo group (-28.32 [-50.23 to -6.41], 0.013; -3.12 [-5.90 to -0.35], 0.028; -32.31 [-55.09 to -9.54], 0.007, respectively). Moreover, HbA1c reduced after intervention, but the reduction was not significant (-0.45 [-0.96 to 0.05], 0.077). In comparison with placebo, the L. casei supplementation significantly increased SIRT1 and decreased fetuin-A levels at the end of the trial (0.52 [0.026 to 1.02], 0.040; -17.56 [-32.54 to -2.58], 0.023, respectively).

Conclusion:

L. casei supplementation affected SIRT1 and fetuin-A levels in a way that improved glycemic response in subjects with T2DM. Affecting the SIRT1 and fetuin-A levels introduces a new known mechanism of probiotic action in diabetes management.

Whey protein isolate/cellulose nanofibre/TiO2 nanoparticle/rosemary essential oil nanocomposite film: Its effect on microbial and sensory quality of lamb meat and growth of common foodborne pathogenic bacteria during refrigeration

The use of biodegradable nanocomposite films in active packaging is of great importance since they can have a controlled release of antimicrobial compounds. This study was conducted to evaluate the efficacy of whey protein isolate (WPI)/cellulose nanofibre (CNF) nanocomposite films containing 1.0% (w/w) titanium dioxide (TiO₂) and 2.0% (w/v) rosemary essential oil (REO) in preserving the microbial and sensory quality of lamb meat during the storage at 4±1°C. Initially, the best concentration of each compound to be added to the film was determined by micro-dilution and disc diffusion methods. The microbial and sensory properties of lamb meat were controlled in two groups (control and treatment) over 15days of storage. Then, the samples were analysed for total viable count (TVC), Pseudomonas spp. count, Enterobacteriaceae count, Lactic acid bacteria (LAB) count, inoculated Staphylococcus aureus count, Listeria monocytogenes count, and Escherichia coli O₁₅₇:H₇ count. Microbial analysis and nine-point hedonic scale was applied for the sensory analysis. Results indicated that the use of nanocomposite films significantly reduced the bacterial counts of treatment group. Higher inhibition effect was observed on Gram-positive bacteria than on Gram-negative bacteria (P<0.05). The microbial and sensory evaluations also showed that the use of nanocomposite films significantly increased the shelf life of treated meat (15days) compared to the control meat (6days). Based on the results of this study, the edible nanocomposite films were effective in preserving the microbial and sensory qualities of lamb meat; therefore, this application is recommended in meat especially red meat.

Dermatology Quality of Life Impairments among Newly Diagnosed HIV/AIDS-Infected Patients in the University of Ilorin Teaching Hospital (Uith), Ilorin, Nigeria

The study sought to describe the quality-of-life impairments in newly diagnosed HIV/AIDS-infected adult patients with cutaneous lesions. This was a hospital-based, cross-sectional, descriptive study of 160 newly diagnosed HIV/AIDS-infected adult patients attending the HIV/AIDS clinic of University of Ilorin Teaching Hospital (UITH). Systemic random sampling technique was used in recruiting respondents for the study. The Dermatology Life Quality Index (DLQI) was used to gauge the quality-of-life impairments. The study showed high prevalence of cutaneous lesions in HIV/AIDS-infected patients. Majority of the respondents (83.7%) scored more than 10 in DLQI score. This signifies that the skin lesions had large negative effects on their quality of life. The assessment of the impact of dermatoses on patients' quality of life is important for clinical management. It is pertinent to detect patients at higher risk of experiencing worse quality of life in order to treat them holistically.
