Abstract
The metabolites synthesized by plants to protect themselves serves as natural antimicrobial agents used in biomaterials. In this study, avocado oil (AO), was incorporated as a plant source and natural antimicrobial agent into polycaprolactone (PCL) membranes. The effects of varying AO ratios (25, 50, and 100 wt%.-PCL@25AO, PCL@50AO, PCL@100AO) on PCL membrane morphology, chemical structure, wettability, antimicrobial activity, and cell viabilities were investigated. It was demonstrated that the AO acts as a pore-forming agent in solvent-casted membranes. Young's modulus of the membranes varied between 602.68 and 31.92 MPa and more flexible membranes were obtained with increasing AO content. Inhibition zones of AO were recorded between 7.86 and 13.97 mm against clinically relevant microbial strains including bacteria, yeast, and fungi. Antimicrobial activity of AO was retained in PCL membranes at all ratios. Resazurin assay indicated that PCL@25AO membranes were cytocompatible with mouse fibroblast cells (L929 cell line) on day 6 showing 72.4% cell viability with respect to neat PCL membranes. Viability results were supported by scanning electron microscopy images and DAPI staining. The overall results of this study highlight the potential of PCL@25AO membranes as a biomaterial with antimicrobial properties, cytocompatibility, and mechanical strength suitable for various biomedical applications.

Abstract
In this study, carotenoid microemulsion was encapsulated in zein nanofibers via emulsion electrospinning. Optimization study was applied to determine optimum parameters by response surface methodology. The voltage, flow rate and distance as optimum conditions were determined as 23 kV, 1.7 mL/h and 12.75 cm, respectively. Lycopene, β-carotene, encapsulation efficiency, encapsulation yield and zeta potential of zein nanofibers in optimum conditions were estimated as 4.054 mg/kg, 0.649 mg/kg, 77.78%, 41.76% and -29.73 mV, respectively. The addition of microemulsion affected nanofibers diameter and morphologies. Diffusion coefficient of zein nanofibers decreased with addition of microemulsion under optimum conditions. The electrospinning improved thermal stability of microemulsion. The carotenoid microemulsion could be entrapped into the zein fibers according to ATR-FTIR spectrum. Model foods were fortificated with zein nanofibers. The addition of nanofibers changed color of the foods during the storage. Carotenoid compounds were more stable in nanofibers followed by olive oil, milk and water.

Abstract
This study aimed to create long-lasting carriers by producing electrospun nanofibers loaded with dill seed (Anethum graveolens L.) essential oil (DSEO), using cactus mucilage (CM) and poly(vinyl alcohol) (PVA). Continuous and uniform electrospun nanofibers with a diameter of 158 ± 18 to 230 ± 26 nm were successfully made from the CM/PVA blend solution and the CM/PVA/DSEO emulsion. Atomic force microscopy topographic images revealed that the electrospun nanofibers had a tubular morphology. The thermogravimetric curves of DSEO, CM, pure PVA, and electrospun nanofibers demonstrate that the polymers used and the essential oil have effective chemical interactions. The water contact angle results suggest that the manufactured nanofibers are hydrophilic. CM/PVA consistently achieves a remarkable encapsulation efficiency of 100% DSEO. The electrospun nanofibers enabled the controlled release of free and encapsulated DSEO, resulting in sustained long-term release. The agar disk diffusion technique was used to study the antimicrobial activity of electrospun nanofibers and nanofibers containing DSEO against Gram-positive and Gram-negative bacteria. With a minimum inhibitory concentration of 2.5 mg/mL and a minimum bactericidal concentration of 5 mg/mL, electrospun nanofibers containing DSEO demonstrated bacteriostatic and bactericidal activities against foodborne pathogenic bacteria (Staphylococcus aureus and Pseudomonas aeruginosa). The DSEO-loaded electrospun nanofibers derived from carbohydrates show promise as an active interior coating for use in biomedical and food packaging applications.

Abstract
In this paper, the effects of different proteins (soybean protein isolate, wheat protein hydrolysate, tremella protein) on the activity of tremella polysaccharide under different conditions were studied. The optimal protein-polysaccharide complex was determined by grafting degree and activity screening, and the microstructure and rheological properties were studied. The results showed that when the ratio of soybean protein isolate to tremella polysaccharide was 2:1 and the solution pH was 7, the optimal complex was obtained by heating at 90 °C for 4 h, and its grafting degree and antioxidant activity were the best. Studies have shown that tremella polysaccharide and soybean protein isolate complex (TFP-SPI) solution is pseudoplastic fluids. At the same time, tremella polysaccharide (TFP) and TFP-SPI were used for electrospinning to observe its spinnability. When the ratio of PVA/TFP-SPI/PL was 8:1:1, nanofibers with uniform diameter and good morphology were obtained. This paper provides a theoretical basis for the comprehensive utilization of tremella polysaccharide and its electrospun fiber can be used as active film for food packaging.

Abstract
This work focused on developing an active bilayer film based on natural extract. Thus, the jaboticaba peel extract (JPE) was produced and characterized and showed promising application as a natural additive in biopolymeric materials. The zein fiber and bilayer films were produced using a chitosan film (casting) and zein fiber (electrospinning), with and without JPE. All samples were evaluated according to thickness, solubility in water, water vapor permeability, and main diameter, and for these, zein fiber, chitosan/zein fiber, and chitosan/zein fiber + 3% JPE showed values of 0.19, 0.51, and 0.50 mm, 36.50, 12.96, and 27.38%, 4.48 × 10-9, 1.6 × 10-10, and 1.58 × 10-10 (g m-1 Pa-1 s-1), and 6.094, 4.685, and 3.620 μm, respectively. These results showed that the addition of a second layer improved the barrier properties of the material when compared to the monolayer zein fiber. The thermal stability analysis proved that the addition of JPE also improved this parameter and the interactions between the components of the zein fiber and bilayer films; additionally, the effective presence of JPE was shown through FTIR spectra. In the end, the active potential of the material was confirmed by antimicrobial analysis since the bilayer film with JPE showed inhibition halos against E. coli and S. aureus.

Abstract
As a renewable resource, the market trend of plant protein has increased significantly in recent years. Compared with animal protein, plant protein production has strong sustainability factors and a lower environmental impact. Many bioactive substances have poor stability, and poor absorption effects limit their application in food. Plant protein-based carriers could improve the water solubility, stability, and bioavailability of bioactive substances by different types of delivery systems. In this review, we present a detailed and concise summary of the effects and advantages of various plant protein-based carriers in the encapsulation, protection, and delivery of bioactive substances. Furthermore, the research progress of food-grade bioactive ingredient delivery systems based on plant protein preparation in recent years is summarized, and some current challenges and future research priorities are highlighted. There are some key findings and conclusions: (i) plant proteins have numerous functions: as carriers for transportation systems, a shell or core of a system, or food ingredients; (ii) plant protein-based carriers could improve the water solubility, stability, and bioavailability of bioactive substances by different types of delivery systems; and (iii) plant protein-based carriers stabilize bioactive substances with potential applications in the food and nutrition fields.

Abstract
Over the last twenty years, researchers have focused on the potential applications of electrospinning, especially its scalability and versatility. Specifically, electrospun nanofiber scaffolds are considered an emergent technology and a promising approach that can be applied to biosensing, drug delivery, soft and hard tissue repair and regeneration, and wound healing. Several parameters control the functional scaffolds, such as fiber geometrical characteristics and alignment, architecture, etc. As it is based on nanotechnology, the concept of this approach has shown a strong evolution in terms of the forms of the materials used (aerogels, microspheres, etc.), the incorporated microorganisms used to treat diseases (cells, proteins, nuclei acids, etc.), and the manufacturing process in relation to the control of adhesion, proliferation, and differentiation of the mimetic nanofibers. However, several difficulties are still considered as huge challenges for scientists to overcome in relation to scaffolds design and properties (hydrophilicity, biodegradability, and biocompatibility) but also in relation to transferring biological nanofibers products into practical industrial use by way of a highly efficient bio-solution. In this article, the authors review current progress in the materials and processes used by the electrospinning technique to develop novel fibrous scaffolds with suitable design and that more closely mimic structure. A specific interest will be given to the use of this approach as an emergent technology for the treatment of bacteria and viruses such as COVID-19.

Abstract
This work focused on the recovery bioactive compounds from jaboticaba peels and to develop ultrafine fibers from zein incorporated with the jaboticaba extract by electrospinning technique. Jaboticaba peel extracts (JPE) were obtained by maceration according a central composite rotational design (CCDR) and characterized with respect to total phenolic content (TP), antioxidant activity (AA) and total anthocyanin (TA). The optimal condition for the extraction was obtained using a desirability function in order to maximize the presence of bioactive compounds. Under these conditions the amount of cyanidin-3-glucoside (Cn-3-Glu) and the antimicrobial inhibition (AI) of E. coli were evaluated. Ultrafine fibers were obtained by electrospinning technique using zein in an aqueous ethanol as solvent and freeze-dried JPE at different concentrations (1.7% and 3.3%) to produce a composite membrane. The apparent viscosity and electrical conductivity of the polymer solutions, as well as the morphology, thermal stability and functional groups of the ultrafine fibers, were evaluated. The optimal conditions for extraction were 88 °C and pH 1. Under these conditions, a high amount of Cn-3-Glu was obtained (718.12 mg 100 g−1), along with 22.2% antimicrobial inhibition against E. coli. The addition of JPE into composite membranes did not affect the morphology of fibers, which presented a homogeneous and continuous format. Therefore, fibers containing JPE showed interesting characteristics for the food packaging industry.

Abstract
Intelligent food packaging refers to packages with the ability to sense foodstuff changes and to inform customers of the packaging content variations. They are often accompanied by smart detecting devices. Providing a suitable platform to include these devices into packaging polymers has always been discussing. Electrospun nanofibers produced through the electrospinning have been recently utilized as an outstanding and novel platforms for this purpose. Thus, the main aim of this study is to investigate recent trends in producing intelligent food packaging using electrospinning technique. In this regard, this paper was categorized into two chief sections, including (a) the principal of electrospinning technique to fabricate fine nanofibers and the parameters affecting the quality of electrospun fibers, and (b) the role of nanofibers as a platform to cover pH indicators in intelligent food packaging.
