Abstract
Background/Objectives: Heavy metals are a group of metals and metalloids that have a relatively high density. They can cause toxicity even at very low levels. Trace elements are required by all living organisms to maintain their normal growth, metabolism, and development. Oral intake is the main route of exposure to both heavy metals and trace elements. Phenylketonuria (PKU) is the most common amino acid metabolic disorder, and the best known treatment for patients requiring treatment is a phenylalanine (Phe)-restricted diet. The objective of the present study was to evaluate the plasma heavy metal levels, sources of exposure, changes in these levels according to dietary regimen, and trace element levels and their correlations with heavy metals in PKU patients. Methods: The study was conducted between July 2022 and January 2024 on 105 patients aged 2-6 years diagnosed with PKU. Results: The percentage of Pb levels in individuals in the upper quartile increased by 3.47 times (95% CI = 1.07-11.29) in those who consumed canned foods and 7.29 times (95% CI = 1.21-44.03) in those who consumed spring water. The percentage of As levels in the upper tertile increased by a factor of 7.26 (95% CI = 2.09-25.28) in individuals under four years of age and 8.17 times (95% CI = 2.13-31.27) in canned food users. The odds of having blood Cd levels in the upper tertile were 0.09 (95% CI = 0.01-0.96) for those being breastfed for 6-11 months compared to 0-5 months. Zn levels were lower (93.0 vs. 83.6 µg/dL, p = 0.008) in patients on a Phe-restricted diet. Conclusions: The present study did not find a relationship between heavy metal exposure and the dietary treatment status of patients with PKU. Our findings indicate that canned food consumption is a significant contributing factor to heavy metal exposure in PKU patients. Furthermore, our findings revealed a relationship between age, perception of economic level, breastfeeding, kitchen equipment, and water usage and the levels of certain heavy metals.

Abstract
This study used inductively coupled plasma and mass spectrometry, followed by microwave digestion, to assess the concentration of six trace metals (Cr, Ni, As, Cd, Hg, and Pb) in three canned products (tuna in oil [TIO], sardine in oil [SIO], and mackerel in oil [MIO]), two pickled products (prawn pickle [PP] and fish pickle [FP]), and one smoked product (masmin) collected from Tuticorin market, southern India. Trace metal (TM) levels in canned, pickled, and smoked fish varied from 0.01 to 1.48, 0.009 to 0.94, and 0.08 to 4.13 mg/kg, respectively. The concentration of TMs in the seafood was observed in the following order: As > Cr > Pb > Ni > Cd > Hg. Regarding their accumulation in the seafood products, masmin showed the highest levels followed by SIO, MIO, TIO, FP, and PP. The results revealed that smoked products showed higher TM concentrations, followed by canned and pickled products. The level of TMs in seafood products was below the maximum residue limit set by the European Commission (EC/1881/2006) and the Food Safety and Standards Authority of India (FSSAI). Risk assessment for consumer health implied that the evaluated target hazard quotient (THQ < 1), hazard index (HI < 1), and target cancer risk (TCR < 1.E-04) values did not exceed their guideline values and did not cause non-carcinogenic and carcinogenic health impacts through seafood product consumption. The pollution index (Pi) values of TMs in seafood products ranged from 0.01 to 0.7, with As and Cd showing the lowest and highest values, which were below 0.7, indicating their safety for consumption. The metal pollution index (MPI) for TMs in seafood ranged from 9.E-05 to 0.007, with the lowest and highest values associated with PP and TIO products. The MPI value for seafood products was below 1, signifying low TMs accumulation, suggesting the safety of seafood for consumption. The maximum seafood meal consumption limit (CRmm) was calculated, showing that adults can safely consume > 16 meals/month without chronic or acute toxicity. The results of this study suggest that the accumulation of TMs in the analyzed seafood product was below the health guidelines and pollution index values, making it suitable for smooth domestic and international export as well as safe consumption.

Abstract
This study analyzed 34 canned fish products, including 28 tuna specimens, 3 salmon specimens, 1 mackerel specimen, and 1 anchovy specimen, from 13 different brands purchased in Türkiye. The study aimed to determine metal/metalloid levels in canned fish and potential health risks for both children and adult consumers. The metal/metalloid levels in the samples were determined using an Inductively Coupled Plasma-Mass Spectrometer (ICP-MS), with the range of levels found as follows (mg/kg, ww): Fe (12.12-101.4), Cu (2.19-11.68), Zn (4.06-33.56), Se (0.24-10.74), Al (1.41-14.45), Cr (0.06-4.08), Pb (0.10-0.43), Cd (0.001-0.110), and As (0.01-0.13). Estimated weekly intake (EWI) levels were found that the consumption of canned fish products did not pose any risk based on the EWI levels and provisional tolerable weekly intake (PTWI) limits. However, three tuna samples had target hazard quotient (THQ) levels above the threshold (>1). Arsenic levels were found to increase the carcinogenic risk for child consumers if they heavily consumed 18 canned fish products, including 15 tuna, 2 salmon, and 1 mackerel. The maximum allowable consumption rates (CRmm) for each canned fish product were calculated monthly. Consequently, the consumption of canned fish by children can pose health risks.

Abstract
In this study, concentrations of 6 different elements (copper (Cu), tin (Sn), zinc (Zn), iron (Fe), cadmium (Cd) and lead (Pb)) in 9 different processed seafood (marinated and smoked mackerel, smoked mackerel, marinated octopus tentacles, marinated octopus salad, marinated squid salad, salted and dried mackerel, marinated and smoked anchovy, smoked salmon and smoked bonito) randomly taken from markets in Mugla province (West Anatolia, Turkey) were determined with the method of inductively coupled plasma mass spectroscopy (ICP-MS) after microwave wet digestion process. In addition, risk assessment for consumer health was conducted by the determination of estimated daily intake (EDI), target hazard quotient (THQ), total target hazard quotient (TTHQ) and carcinogenic risk (CR). According to the obtained results, the seafood product samples with the highest concentrations of each metal were marinated and smoked anchovy for Fe (65.85 ± 16.03 mg kg-1), marinated and smoked anchovy for Zn (64.58 ± 25.16 mg kg-1), marinated octopus salad for Cu (26.33 ± 17.76 mg kg-1), smoked mackerel for Sn (0.42 ± 0.18 mg kg-1), smoked mackerel for Pb (0.28 ± 0.18 mg kg-1) and marinated squid salad for Cd (0.31 ± 0.12 mg kg-1). According to risk assessment for consumer health, it was found that EDI results did not exceed the tolerable daily intake (TDI) values. As a conclusion, any risk for consumer health in terms of CR, THQ and TTHQ values was not detected in the examined samples.

Abstract
Serum toxic metals have been implicated in development of many diseases. This study investigated the association between blood levels of lead and cadmium with abnormal bone mineral density (BMD) and incidence of osteoporosis. Sixty Saudi male adults age matching were assigned into two groups: A healthy control group (n = 30) and osteoporosis patients diagnosed according to T-score (n = 30). Serum calcium, vitamin D, osteocalcin, lead, cadmium were measured. Osteoporotic group showed a highly significant elevation of blood lead and cadmium levels compared to the control group (p <0.001). BMD was negatively correlated with serum osteocalcin level compared with control. There was a significant negative correlation between the cadmium and lead levels (r=-0.465 and p-value = 0.01) and calcium (p < 0.004). Our findings suggested that high cadmium and lead were negative correlated to BMD and increased the risk factor for osteoporosis.

Abstract
The presence of metals in canned fish has been associated with adverse effects on human health. The aim of this study was to evaluate risk-based fish consumption limits based on the concentrations of eight essential elements and four elements of toxicological concern in sardines and tuna brands commercially available in the Latin American canned goods market. One brand of canned sardines and six of canned tuna were collected and evaluated by ICP-MS and direct mercury analysis. The Hg content was much higher than that previously observed in scientific literature. According to the calculated hazard quotients, all brands may present some risk in terms of this element, especially brand F in which levels up to 3.1 µg/g were measured. Sardine samples surpassed the maximum limits of Mn and As. Stricter quality control in retail chains and industries should be implemented in order to guarantee safe levels in fishery products.

Abstract
Introducción Salmonella enterica subsp. enterica serovar Give se encuentra en mamíferos rumiantes, cerdos, aves y ambientes acuáticos, pero rara vez en humanos. En Colombia este serotipo ocupó el decimoprimer lugar en frecuencia en la vigilancia por laboratorio de la enfermedad diarreica aguda entre el 2000 y el 2013. Objetivo Caracterizar el fenotipo y el genotipo de S. Give en aislamientos relacionados con un brote de enfermedad transmitida por alimentos en el departamento de Vichada en la quinta semana epidemiológica del 2015. Materiales y métodos Se buscó Salmonella spp. en 37 muestras de materia fecal con el método de estudio del Instituto Nacional de Salud. La muestra de sardinas enlatadas fue procesada según la norma ISO6579:2002 Cor.1:2004. Se determinó el serotipo en los aislamientos confirmados mediante serología o PCR en tiempo real, y se hicieron pruebas de sensibilidad a antimicrobianos y electroforesis en gel de campo pulsado con las enzimas Xbal y BlnI. Resultados Todos los aislamientos de origen humano (11) y el aislamiento del alimento (1), se identificaron como S. Give y este último presentó resistencia a la tetraciclina. El análisis por PFGE-XbaI agrupó bajo el patrón COIN15JEXX01.0005 diez aislamientos de origen humano y a los restantes bajo el COIN15JEXX01.0006, con un 96,3% de similitud. Los resultados de todos los aislamientos se confirmaron con la enzima BlnI; cuatro de ellos (tres humanos y el del alimento) se agruparon bajo el patrón COIN15JEXA26.002, con un porcentaje de similitud del 95,65%. Conclusión El estudio confirmó que las sardinas enlatadas se relacionaron con la transmisión de S. Give en el brote, que es el tercero ocasionado por este serotipo en Colombia.

Abstract
The kinetic reaction for changes in some essential mineral contents (iron, zinc, calcium, sodium, and copper) of silver carp canned in sunflower oil, soybean oil, olive oil, and brine as filling media was assessed after a short- (1 year) and long-term storage (3, 5, and 7 years). The mineral nutrition value of cans was also determined to take into account the changes in estimated daily intake (EDI) of elements during storage and then clustered by principal component analysis (PCA). Results revealed that the reduction of trace elements in brine was higher than in other filling media due to formation of insoluble metal hydroxide. No changes were detected in the mineral content of cans after 1-year storage in comparison to fresh cans, while the content and daily intake of zinc, iron, calcium, copper, and sodium were significantly decreased in all filling media after 3, 5, and 7 years of storage. The first-order reaction model was detected for reduction of mineral contents in filling medium. Post-storage daily intake of iron, sodium, calcium, zinc, and copper was 0.06 up to 0.18, 1.9 up to 9.7, 1.8 up to 9.1, 0.02 up to 0.10, and 0.004 up to 0.02 mg/day/person, respectively. Filling medium had significant effects on estimated daily intake of zinc, sodium, calcium, and copper in long-term sorted cans. PC1 and PC2 explained 93.7% of the total variance of the dataset, contributing 68.7 and 20.5%, respectively.

Abstract
Currently, metal bioaccumulation in fish is increasing and is a cause of concern due to toxicity. Total arsenic, cadmium and lead concentrations in fresh and processed tuna (110 samples) marketed in Galicia (NW Spain) were determined by ICP-MS spectrometry. The average concentrations of As and Cd, 3.78 and 0.024 mg kg-1 w.w., respectively, in fresh tuna were statistically significantly higher than those in processed tuna (p < 0.001). The contents in processed tuna were 0.295-7.85 mg kg-1 for As and ND-0.045 mg kg-1 for Cd. The Pb content was negligible in both types of tuna. In canned tuna, decreasing As and Cd concentrations were observed in different preparation-packaging media: olive oil > natural > pickled sauce. Of the two species studied in canned tuna, Thunnus alalunga showed statistically significant higher levels both for As 1.28 mg kg-1 (p < 0.001) and Pb 0.013 mg kg-1 (p = 0.0496) than Thunnus albacares. No samples surpassed the limits set by the EU for Cd and Pb. The limit for As in fish has not been established, but the arsenic contents in fresh tuna reported here are important, as they are among the highest reported in the literature. Considering public health in children and adults with respect to the investigated metals, the estimated daily intakes (EDIs) did not exceed the tolerable intakes. No chronic systemic risk was found since all the target hazard quotients (THQs-TTHQs) were far below 1 (critical value), and the carcinogenic risk (CR) for As did not exceed the acceptable value of 10-5. Thus, tuna consumption in the Galician diet does not pose a risk for different population groups in terms of these studied metals/metalloids.

Abstract
The concentrations and compositional patterns of the USEPA 16 polycyclic aromatic hydrocarbons were investigated in three commercially available fish species, Chrysichthys nigrodigitatus, Cynoglossus senegalensis and Polydactylus quadratifilis, from the Bonny and Cross River systems in the eastern Niger Delta of Nigeria. The objective of the study was to provide useful information on the levels and sources of polycyclic aromatic hydrocarbons (PAHs) and the associated risks with their consumption. The 16 PAHs in the fish samples were extracted by ultrasonication with hexane/dichloromethane, and the concentrations of PAHs in the extracts were quantified by gas chromatography-mass spectrometry. The measured concentrations of the Ʃ16 PAHs in Chrysichthys nigrodigitatus, Polydactylus quadratifilis and Cynoglossus senegalensis ranged from 106 to 491, from 43.1 to 1734 and from 96.4 to 937 μg kg(-1) in the Bonny River system and from 20.0 to 975, from 24.7 to 506 and from 24.9 to 387 μg kg(-1) in the Cross River system, respectively. The compositional patterns of the PAHs showed that the three- and four-ringed PAHs were the major contributors to the PAH burden in these fish species. The diagnostic ratios indicate that the PAHs in these fish samples originated mainly from combustion processes. The health risk assessment, as determined from the benzo[a]pyrene potency equivalent factor, margin of exposure and incremental lifetime cancer risk, indicates that PAHs in the majority of these fish species can induce potential carcinogenic effects.

Abstract
The concentrations of metals (Cd, Pb, Ni, Cr, Cu, Co, Fe, Mn, and Zn) were determined in selected brands of canned mackerel, sardine, and tuna in Nigeria with a view to providing information on the dietary intakes of metals and lifelong health hazards associated with the consumption of these products. The concentrations of metals were determined by using atomic absorption spectrometry after acid digestion. The mean concentrations of metals in canned mackerel, sardine, and tuna were found as 0.04-0.58, 0.06-0.44, 0.32-0.83 μg/g for Cd; 0.05-2.82, 0.70-2.98, 0.23-2.56 μg/g for Pb, 1.33-11.33, <0.20-17.53, nd-34.2 μg/g for Ni, 0.49-3.79, 0.22-1.89, 0.66-14.39 μg/g for Cr, 0.33-0.92, 0.03-1.51, <0.08-1.31 μg/g for Cu, 0.11-2.17, nd-0.75, 0.14-0.50 μg/g for Co, 6.45-26.90, 6.06-53.54, 3.06-95.78 μg/g for Fe, 2.30-3.84, 0.95-21.78, 1.65-2.33 μg/g for Mn, 1.15-7.19, 3.60-17.88, 1.21-5.35 μg/g for Zn, respectively. The mean concentrations of Cd, Pb, and Fe in some of these brands of canned fish were above their permissible limits while other metals occurred at levels below their permissible limits. The estimated daily intakes of metals from consumption of 20.8 g fish per day by a 60 kg body weight adult were below the provisional tolerable daily intakes for Cd, Pb, Ni, Cr, and Cu and recommended daily intakes for Co, Fe, Mn, and Zn. The estimated target hazard quotients of the examined metals were less than 1 in the majority of the samples indicating no long-term health hazard at the present circumstance.

Abstract
The concentrations and profiles of polycyclic aromatic hydrocarbons (PAHs) in 10 popular fish species in the Nigerian market were determined with a view to providing information on the health hazards associated with the consumption of these fish species. The concentrations of PAHs were measured by gas chromatography-mass spectrometry after extraction by ultrasonication with acetone-dichloromethane and clean up. The concentration ranges of the Σ16 PAHs were 20 to 39.6 μg kg(-1) for Parachanna obscura (African snake head), 6.8 to 532.3 μg kg(-1) for Oreochromis niloticus (tilapia), 7.4 to 91.1 μg kg(-1) for Gymnarchus niloticus (Asa), 13.1 to 34.1 μg kg(-1) for Sebastes fasciatus (red fish), 11.2 to 80.0 μg kg(-1) for Gadus morhua (cod), 23.9 to 34.6 μg kg(-1) for Chrysicthys nigrodigitatus (silver cat fish), 63.4 to 131.4 μg kg(-1) for Sardinella aurita (sardine), 22 to 52.9 μg kg(-1) for Trachurus trachurus (Atlantic horse mackerel), 21.0 to 63.7 μg kg(-1) for Scomber scombrus (mackerel), and 27.7 to 44.5 μg kg(-1) for Pseudotolithus senegalensis (croaker). Benzo[a]pyrene occurred in 23% of these fish samples at concentrations above the European Union permissible limit of 2.0 μg kg(-1). The calculated margins of exposure based on the indicators for occurrence and effects of PAHs were greater than 10,000 indicating no potential risk for the consumers of the species evaluated in this study.

Abstract
BACKGROUND Metal pollution of waterways directly affects human health and can impact the food chain. Seafood living in polluted water can accumulate trace metals. The purpose of this study was to analyze the toxic metals Pb and Cd and the dietary essential metals Zn and Mn in 120 cans of tuna species from four different brands processed in Iran and purchased in 2012. RESULTS The mean level of metals for each brands of canned fish obtained in mg/kg were as follows: yellowfin tuna (Pb: 0.19 ± 0.015, Zn: 5.77 ± 4.17, Mn: 0.08 ± 0.07, Cd: 0.15 ± 0.12), Kilka (Pb: 0.95 ± 0.88, Zn: 30.47 ± 29.82, Mn: 1.01 ± 0.73, Cd: 0.07 ± 0.05), Kawakawa (Pb: 0.28 ± 0.23, Zn: 6.77 ± 5.21, Mn: 0.17 ± 0.12, Cd: 0.12 ± 0.09), longtail tuna (Pb: 1.59 ± 1.56, Zn: 7.44 ± 6.11, Mn: 0.04 ± 0.03, Cd: 0.06 ± 0.04). Pb, Zn and Cd levels were generally higher than the FAO/WHO permissible limits (Pb: 0.50 mg/kg, Zn: 50.0 mg/kg and Cd: 0.50 mg/kg) and the European Union acceptable dietary limits. CONCLUSIONS Based on the United States Environmental Protection Agency health criteria, there is no health risk associated with Mn concentration in the samples analyzed. The limits of detection of the method for Pb, Zn, Mn and Cd in mg/kg were 0.01, 0.5, 0.01 and 0.01, respectively. The result of the one-way analysis of variance suggested significant variations (p < 0.05) in the concentration of the metals in the different types of canned fish with the following being outside of compliance levels.

Abstract
Contaminants in the environment do not appear singly and usually occur as mixtures. We applied the combination index (CI)-isobologram method which allows computerized quantitation of synergism, additive effect and antagonism to determine the nature of toxicological interactions of two pesticides λ-cyhalothrin, imidacloprid, and heavy metal cadmium towards earthworm Eisenia fetida. In an artificial soil test, λ-cyhalothrin and Cd combination was slightly synergistic at low effect levels which turned into a slight antagonism above f(a) values of 0.6, while the binary mixtures containing imidacloprid exhibited antagonism. The presence of imidacloprid in the ternary mixture also resulted in an antagonistic effect to the earthworms. This behavior became more antagonistic in the ternary mixture in filter paper tests.

Abstract
Several studies have shown that canned meat products may be contaminated with fungal elements, bacteria and even heavy metals which may occur during the transportation, storage and handling processes. We conducted this study to determine the fungal, microbial and heavy metal contents of canned meats in Saudi Arabia. Of the 13 canned meat samples studied, Aspergillus and Penicillium were found in more than 70% of the total samples. Sequences of Penicillium species isolated from meat samples generated a phylogenetic tree which shows that the studied isolates were clustered in four groups. No bacterial contamination was noted in all of the samples. Nine of the 13 samples had iron concentrations above the permissible limit. All samples had zinc and copper levels below the maximum permissible limit. Four samples had cadmium levels above the maximum permissible level. All samples had levels of lead above the maximum permissible levels. These results indicate that fungal elements and higher levels of heavy metals such as lead and cadmium can be found in canned meat products. This may pose as a real danger to consumers, since canned meat products are readily accessible and convenient in Saudi Arabia.

Abstract
The exposure to chemical mixtures is a common and important determinant of toxicity and receives concern for their introduction by inhalation and ingestion. However, few in vivo mixture studies have been conducted to understand the health effects of chemical mixtures compared with single chemicals. In this study, the acute and 90day sub-chronic toxicity tests of combined Pb and Cd were conducted. In the acute toxicity test, the LD50 value of Pb(NO3)2 and CdCl2 mixture by the oral route was 2696.54mg/kg by Bliss method. The sub-chronic treatment revealed that the low-dose combination of Pb and Cd exposures can significantly change the physiological and biochemical parameters of the blood of Sprague-Dawley (SD) rats with dose-response relationship and causes microcytic hypochromic anemia and the damages of liver and kidney of the SD rats to various degrees. Histopathological exams showed that the target organs of Pb and Cd were testicle, liver, and kidneys. These observations suggest that Pb and Cd are practically additive-toxic for the SD rats in oral acute toxicity studies. The lowest observed adverse-effect level in rats may be lower than a dose of 29.96mg/(kgbwday) when administered orally for 90 consecutive days.

Abstract
The combined subchronic effects of exposure to lead acetate and cadmium chloride on oxidative stress and metallothionein (MT) gene expression were detected in the liver and kidney of rats to investigate the hazards of environmentally relevant, low-dose exposure to these compounds. Pb and Cd co-induced oxidative stress in liver and kidney tissues. This result was indicated by a significant (P<0.01) increase in the maleic dialdehyde level and decreased levels of reduced glutathione, superoxide dismutase, catalase, and glutathione peroxidase. MT mRNA and protein significantly increased (P<0.01) in the liver and kidney of rats. Furthermore, the expression levels of MT-1 mRNA and MT-2 mRNA differed between the liver and kidney. The findings indicate that Pb combined with Cd induced oxidative damage in the liver and kidney of rats, and MT may be a biochemical environmental indicator.

Abstract
Although fish intake has potential health benefits, the presence of metal contamination in seafood has raised public health concerns. In this study, levels of mercury, cadmium, lead, tin and arsenic have been determined in fresh, canned and frozen fish and shellfish products and compared with the maximum levels currently in force. In a further step, potential human health risks for the consumers were assessed. A total of 485 samples of the 43 most frequently consumed fish and shellfish species in Andalusia (Southern Spain) were analyzed for their toxic elements content. High mercury concentrations were found in some predatory species (blue shark, cat shark, swordfish and tuna), although they were below the regulatory maximum levels. In the case of cadmium, bivalve mollusks such as canned clams and mussels presented higher concentrations than fish, but almost none of the samples analyzed exceeded the maximum levels. Lead concentrations were almost negligible with the exception of frozen common sole, which showed median levels above the legal limit. Tin levels in canned products were far below the maximum regulatory limit, indicating that no significant tin was transferred from the can. Arsenic concentrations were higher in crustaceans such as fresh and frozen shrimps. The risk assessment performed indicated that fish and shellfish products were safe for the average consumer, although a potential risk cannot be dismissed for regular or excessive consumers of particular fish species, such as tuna, swordfish, blue shark and cat shark (for mercury) and common sole (for lead).

Abstract
The present research reports the heavy metal (Fe, Cr, Pb, As, and Co) contamination in caviar of Persian sturgeon (Acipenser persicus) caught from Southern Caspian Sea sampling site using ICP-OES. Heavy metal concentrations (microgram per gram, wet weight; means ± S.D.) in caviar samples were: Fe, 71.33 ± 0. 37; Cr, 0.27 ± 0.019; Pb, <0.01 ± 0.002; As, <0.01 ± 0.002; and Co, <0.01 ± 0.001, respectively. Comparative evaluation of these metals in different samples showed that except Fe, the average concentrations of Cr, Pb, As, and Co are significantly lower than adverse level for the species themselves and for human consumption when compared with FAO/WHO permissible limits. Therefore, their contribution to adverse health effects on human body can be considered as negligibly small.

Abstract
The presence of heavy metals in the environment could constitute a hazard to food security and public health. These can be accumulated in aquatic animals such as fish. In the present paper, three heavy metals (mercury, selenium, and tin) in canned products produced and sold in Iran were studied: longtail tuna, Kawakawa, Kilka, and yellowfin tuna were determined using inductively coupled plasma-optical emission spectrometer and a direct mercury analyzer. Analytical results were validated by spiking the samples with various concentrations of these metals to test recovery. The metal contents, expressed in micrograms per gram, wet weight, varied depending upon the species studied. The levels of Hg ranged from 0.0003 to 0.408 μg/g, the levels of Sn ranged from 0.036 to 0.480 μg/g, while the levels of Se ranged from 0.130 to 4.500 μg/g. Comparative evaluation of these metals in different brands of canned fish showed that the average concentrations of Hg, Sn, and Se of all species is significantly lower than adverse level for the species themselves and for human consumption when compared with FAO/WHO permissible limits. Therefore, their contribution to the total body burden of these heavy metals can be considered as negligibly small.

Abstract
Caviar (fish roe of sturgeon) may contain high levels of contaminants. An inductively coupled plasma-optical emission spectrometer and a direct mercury analyzer were used to assess the contents of four heavy metals (Hg, Se, Sn, and Ba) in caviar of wild Persian sturgeon sea foods. The levels of Hg ranged from 1.39 to 1.50 μg g(-1), Se from 0.90 to 1.10 μg g(-1), Sn from 0.23 to 0.33, and Ba from 0.71 to 1.17 µg g(-1). Evaluation of these levels showed that except for Hg, the average concentrations of other metals are significantly lower than adverse level for the human consumption when compared with Food and Agricultural Organization of the United Nations and World Health Organization permissible limits. Therefore, their contribution to the total body burden of these heavy metals can be considered as negligibly small given that caviar is a luxury product.
