Abstract
The unique profiles of betacyanins as well as their stability and antioxidant activity in purple leaf extracts of the fast-growing, soft-stemmed vine Basella alba L. var. 'Rubra', known as Malabar spinach, are partly characterized for the first time. The distribution of gomphrenin and its acylated derivatives in the leaves is completely different from the profiles of the pigments in the fruits. The most abundant acylated pigment in leaves (24%) turned out 6'-O-E-sinapoyl-gomphrenin (gandolin), however, the most significant difference in the pigment profiles is a presence of two novel pigments tentatively identified as highly abundant 6'-O-(3,4-dimethoxy-E-cinnamoyl)-gomphrenin and 6'-O-(3,4,5-trimethoxy-E-cinnamoyl)-gomphrenin as well as their isoforms. Significant degradation of the pigments in the fruit extracts under the impact of selected metal cations and UV-Vis irradiation as well as high protective activity of the leaf extract matrix were observed. Partial chromatographic purification of the leaf extract resulted in an increase of the pigment concentration which was correlated positively with the increased antioxidant activity of obtained fractions.

Abstract
Clitoria ternatea Linn. (Fabaceae) is a medicinal and ornamental plant, widely used in Ayurvedic and Chinese medicine. There is no strong scientific evidence on the consumption of the tender fruits/seeds of blue- and white-flower plants as vegetables. Analysis of the nutrient composition revealed that the total carbohydrate, protein, and lipid were highest in the mature-stage seeds of both varieties. UHPLC analysis revealed the presence of rutin (1.66 mg%) as the major compound. LC-HRMS confirmed the presence of other bioactives, such as sinapic acid (m/z 223), catechin derivatives (m/z 305 and m/z 153), quercetin (m/z 463), etc., as well. The ascorbic acid content was found to be highest in blue-flowered plant seeds (18.10 mg/100 g). Analysis of antioxidant activity displayed the superiority of immature seeds over mature seeds. The research shows that these seeds are rich in nutrients and bioactives, which may have use in the food and pharmaceutical industries.

Abstract
This study aimed to evaluate the impact of Basella rubra fruit extract (BR-FE) on cryopreserved ram sperm's motility, velocity, and membrane integrity. Thirty ejaculates collected from 3 fertile rams (10 from each) were diluted with semen dilution extender (SDE) in a ratio (1:2) and centrifuged to remove 50% supernatant. The remaining sample was mixed with semen cryopreservation extender (SCE) in 1:4 ratio. Then 1.2 mL of SCE diluted sample was divided in four aliquots (0.3 mL each) that were further extended with [(1) control group (0.7 mL of SCE), (2) BR-FE-0.6% group (0.7 mL of SCE supplemented with 0.6% BR-FE), (3) BR-FE-0.8% group (0.7 mL of SCE supplemented with 0.8% BR-FE), and (4) BR-FE-1.6% group (0.7 mL SCE supplemented with 1.6% BR-FE)]. All extended samples were cooled gradually from 25°C to 4°C in half an hour. The 0.1 mL sample from all aliquots was analyzed for precryopreservation sperm parameters and the remaining sample was loaded in 0.5 mL plastic semen straws, cooled gradually to -20°C, and then dipped in liquid nitrogen. After 24 hours of cryopreservation, the straws were thawed for postcryopreservation sperm evaluations. The results (analysis of variance based) showed significantly enhanced percentage of post-thaw sperm membrane integrity, progressive motility, and velocity in BR-FE-0.6% group at both pre- and postcryopreservation stages as compared with all other groups. However, analysis of covariance revealed concentration-dependent cryoprotective effect of BR-FE with maximum percentage of sperm membrane integrity in the 1.6% group. According to these results, BR-FE supplementation adds enormous sperm protective potential to ram sperm cryopreservation medium.

Abstract
Identification of betacyanins in Basella alba L. and Basella alba L. var. ‘Rubra’ fruits was performed by low- and high-resolution mass spectrometry (LRMS and HRMS) as well as 1H, 13C and two-dimensional NMR which revealed hitherto completely not known betacyanin classes in the plant kingdom. Especially, the presence of unique nitrogenous acyl moieties in the structures of the pigments was ascertained by the HRMS Orbitrap detection. Except for detected polar betacyanin glycosylated derivatives, presence of a series of previously not reported pigments such as malonylated betanidin 6-O-β-glusosides with their acyl migration isomers along with the evidence of the 3′′-hydroxy-butyrylated betacyanins is reported. The first complete NMR data were obtained for novel and principal acylated gomphrenins with hydroxycinnamic acids: 6′-O-E-caffeoyl-gomphrenin (malabarin), 6′-O-E-sinapoyl-gomphrenin (gandolin), 6′-O-E-4-coumaroyl-gomphrenin (globosin) and 6′-O-E-feruloyl-gomphrenin (basellin).

Abstract
BACKGROUND Like other natural pigments, betalains have a stability problem. Copigmentation can be explored to address this issue. In this study, black carrot anthocyanins were used for the first time as copigment with betalains so that copigmented betalains with enhanced stability could be developed to withstand deteriorative processing and storage conditions. RESULTS Increase in hyperchromic and bathochromic shift with subsequent increase in black carrot anthocyanin extract (0.250 g L-1 ) addition from 0.2 to 1.0 mL L-1 was observed in native betalain pigments from 0.28 to 1.90 and 538 nm to 564 nm, respectively. For maximum recorded bathochromic shift, 0.8 mL L-1 addition of copigment was optimized. Copigmented betalain pigment showed better stability in comparison with native pigment, when exposed to light, temperature more than 60 °C and ≥1.0 g L-1 NaCl. At constant incubation time (3 h), copigmented betalains degraded up to 20.79-41.43% whereas the non-copigmented counterpart degraded up to 83.49-86.86% at 60, 75 and 90 °C, respectively. Lower rate constant (k) and enhanced activation energy (Ea ) showed higher thermostability of copigmented betalains. With constant light exposure, the half-life value of betalains was 145.2 h, which increased approximately twofold (274.08 h) after copigmentation. The t1/2 of betalain pigment at 10%, 15% and 18% salt addition was 81.12, 75.36 and 83.52 h, which increased to 186.96, 226.56 and 152.88 h after copigmentation. CONCLUSION These findings support that black carrot anthocyanin is a potential and compatible copigment for water-soluble betalain pigment that enhances stability of betalains under extreme processing conditions. © 2022 Society of Chemical Industry.

Abstract
Vegetables are essential protective diet ingredients that supply ample amounts of minerals, vitamins, carbohydrates, proteins, dietary fiber, and various nutraceutical compounds for protection against various disease conditions. Color is the most important quality parameter for the farmers to access the harvest maturity while for the consumer's reliable indices to define acceptability or rejection. The colored vegetables contain functional compounds like chlorophylls, carotenoids, betalains, anthocyanins, etc. well recognized for their antioxidant, antimicrobial, hypolipidemic, neuroprotective, antiaging, diuretic, and antidiabetic properties. Recently, there has been a shift in food consumption patterns from processed to semi-processed or fresh fruits and vegetables to ensure a healthy disease-free life. This shifted the focus of agriculture scientists and food processors from food security to nutrition security. This has resulted in recent improvements to existing crops like blue tomato, orange cauliflower, colored and/or black carrots, with improved color, and thus enriched bioactive compounds. Exhaustive laboratory trials though are required to document and establish their minimum effective concentrations, bioavailability, and specific health benefits. Efforts should also be directed to breed color-rich cultivars or to improve the existing varieties through conventional and molecular breeding approaches. The present review has been devoted to a better understanding of vegetable colors with specific health benefits and to provide in-hand information about the effect of specific pigment on body organs, the effect of processing on their bioavailability, and recent improvements in colors to ensure a healthy lifestyle.

Abstract
Betalains are violet-red, natural food grade pigments with health benefits; however, their stability limits its use in industrial food processing. This can be overcome by placing the betalains in lecithin nanoliposomes (NLs), which causes a 76% improvement of betalain colour and stability. Extended sonication time (8 min) lowered the zeta potential (-47.5 to -40.8), and particle size (74.23 to 55.35 nm). Zeta potential, particle size, and polydispersity index of Betalain NLs (BNLs) didn't change significantly during storage (40 days). Degradation in the colour of BNLs was observed only at 121 °C (20 min) while the native juice degraded at 100 °C (20 min). BNLs were incorporated in gummy candies (GuCa) to improve its colour stability. The betalain retention, colour, texture, antioxidant activity, and shelf-life of the GuCa during storage (5 °C, 28 days) demonstrated the efficacy of BNLs to be explored as a natural colourant for the food industry.

The purpose of this study was to determine the cytotoxic activity of Gendola leaf (Basella rubra Linn.) extracts and fractions, in inhibiting proliferation and inducing apoptosis of T47D breast cancer cells. The design of this study was experimental laboratory research using the in-vitro method. Cytotoxic and anti-proliferation tests on T47D cancer were using the MTT method, and the apoptosis test was using the flow cytometry method. Cytotoxic of extracts and fractions of n-hexane Gendola leaves were tested with a concentration series of 1000; 500; 250; 125; 62.5 μg/mL and doxorubicin was studied a series concentration of 0.5; 0.25; 0.125; 0.0625; 0.03125 μg/mL for 24 hours. Antiproliferation test used n-hexane fraction with a concentration series of 1IC50, ½IC50, ¼IC50, and ⅛IC50 with an incubation time of 24 and 48 hours. Apoptosis test utilized n-hexane fraction with a concentration series of 1IC50, ½IC50 with an incubation time of 24 hours. The results showed that the ethanol extract had IC50 424 μg/mL, n-hexane fraction 292 μg/mL. The n-hexane fraction had an anti-proliferation effect at a concentration of 1IC50 within 32 hours but was unable to induce T47D cell apoptosis. These results indicate that the n-hexane fraction of Gendola leaf has a cytotoxic effect, which can inhibit proliferation, that is unable to induce apoptosis but induce necrosis of T47D breast cancer cells.

Identification and characterization of bioactive phenolic constituents, anti-proliferative, and anti-angiogenic activity of stem extracts of Basella alba and rubra. Abstract
Basella is an important green leafy vegetable species of Chenopodiaceae family and is known for its medicinal properties. Hydroxy-benzoic acids, hydroxy-cinnamic acids and flavones groups were identified and characterized from the aqueous stem extracts of B. alba and B. rubra species. Higher values of phenolics as well as antioxidant activity were noted from B. alba species extracts. The evaluation of the cytoxicity of these extracts on A431 (epidermoid carcinoma), Hep G2 (hepatocellular carcinoma) and MG 63 (osteosarcoma) cells indicated anti-proliferative activity against all the cell lines. B. alba extract showed higher anti-proliferative activity (37.95-84.86%). Chick embryo chorioallantoic membrane (CAM) assay revealed inhibition of neo-vessels formation. Significant suppression was found with extracts of B. alba at 7 mg/ml compared to that of B. rubra. This is the first study to report the anti-angiogenic activity of Basella species. These studies indicate that Basella sps can be used as a source of natural antioxidants and can be of high significance in pharmaceutical and nutraceutical industries.
