Abstract
Cow's milk, an excellent source of fat, protein, amino acids, vitamins and minerals, is currently one of the most consumed products worldwide. Contaminations originating from diverse sources, such as biological, chemical, and physical, cause dairy product quality problems and thus dairy-related disorders, raising public health issues. For this reason, legal authorities have deemed it necessary to classify certain contaminations in commercial milk and keep them within particular limitations; therefore, it is urgent to develop next-generation detection systems that can accurately identify just the contaminants of concern to human health. This review presents a detailed investigation of biosensors based on graphene and its derivatives, which offer superior sensitivity and selectivity, by classifying the contaminants under the headings biological, chemical, and physical, in cow's milk according to their sources. We reviewed the current status of graphene-based biosensor (GBs) technology for milk or dairy analysis, highlighting its strengths and weaknesses with the help of comparative studies, tables, and charts, and we put forward a novel perspective to handle future challenges.

Abstract
Graphene has become an attractive material in the field of electrochemical detection owing to its unique electrical properties. Although the simple stacking structures of two-dimensional (2D) graphene sheets can provide excellent detection properties, a macroscopic three-dimensional (3D) structure needs to be constructed to enhance its functional properties. Graphene with a 3D structure has elegant functions, unlike graphene with a 2D structure. These properties include a large specific surface area, easy loading of nanomaterials with electrocatalytic and redox functions, and so on. Herein, we outline the preparation methods (self-assembly, chemical vapor deposition, templates, and 3D printing) for 3D graphene structures for obtaining excellent detection performance and applications in detecting biological molecules, bacteria, and cells. Furthermore, this review focuses on the improvement of the detection performance and enhancement of the applicability of graphene-based electrochemical sensors. We hope that this article will provide a reference for the future development of electrochemical sensors based on 3D graphene composites.

Abstract
Ensuring food safety is a critical concern for the development and well-being of humanity, as foodborne illnesses caused by foodborne bacteria have increasingly become a major public health concern worldwide. Traditional food safety monitoring systems are expensive and time-consuming, relying heavily on specialized equipment and operations. Therefore, there is an urgent need to develop low-cost, user-friendly and highly sensitive biosensors for detecting foodborne bacteria. In recent years, the combination of nanomaterials with optical biosensors has provided a prospective future platform for the detection of foodborne bacteria. By harnessing the unique properties of nanomaterials, such as their high surface area-to-volume ratio and exceptional sensitivity, in tandem with the precision of optical biosensing techniques, a new prospect has opened up for the rapid and accurate identification of potential bacterial contaminants in food. This review focuses on recent advances and new trends of nanomaterial-based biosensors for the detection of foodborne pathogens, which mainly include noble metal nanoparticles (NMPs), metal organic frameworks (MOFs), graphene nanomaterials, quantum dot (QD) nanomaterials, upconversion fluorescent nanomaterials (UCNPs) and carbon dots (CDs). Additionally, we summarized the research progress of color indicators, nanozymes, natural enzyme vectors and fluorescent dye biosensors, focusing on the advantages and disadvantages of nanomaterial-based biosensors and their development prospects. This review provides an outlook on future technological directions and potential applications to help identify the most promising areas of development in this field.

Abstract
In recent years, the high prevalence of Salmonella has emerged as a serious threat to public safety, prompting attempts to utilize accurate, rapid, and direct methods to ensure food safety. In this study, a multifunctional platform featuring dual-mode detection channels (colorimetric-fluorescence) combined with polymer chain reaction (PCR) was proposed for the sensitive and rapid detection of Salmonella. Additionally, the colorimetric measurements were achieved by color changes induced by methylene blue (MB) insertion into the double-stranded DNA, and the fluorescence measurements were performed by internal filter effect (IFE)-induced fluorescence quenching of upconversion nanoparticles (UCNPs) by MB. The results showed that the IFE and PCR amplification processes improved the sensitivity of the sensor towards Salmonella detection, with a limit of detection (LOD) of 21.8 CFU/mL. Moreover, this colorimetric-fluorescence dual-mode PCR biosensor was applied to determine Salmonella in food samples, such as chicken, egg, and fish, which produced satisfactory results. Overall, the present study results demonstrate the potential for combining PCR amplification with IFE to develop an efficient and reliable dual-mode analysis platform to safeguard food security.

Abstract
Green synthesis of high-quality reduced graphene oxide (rGO) from agro-industrial waste resources remains attractive owing to its outstanding environmental benefits. The remarkable properties of rGO include excellent morphology, uniform particle size, good optical properties, high conductivity, nontoxicity, and extraordinary chemical stability. Traditional methods for the synthesis of rGO nanomaterials involve several chemical reactions including oxidation, carbonization, toxic solvent, and pyrolysis which produce harmful byproducts. Green preparation of rGO is an emerging area of research in graphene technology which is cost-effective and sustainable in the procedure. Owing to the uniform particle rGO particle size, these smart nanomaterials have wide applicability, including in metal ions and pollutant sensing and adsorption, photocatalysis, optoelectrical devices, medical diagnosis, and drug delivery. Here we review the physicochemical properties of rGO, the biowaste sources and green methods of rGO synthesis, and the diverse applications of rGO, including in water purification and the biomedical fields. With this review, covering more than 200 research articles published on rGO in the last eight years ending in 2022, we aim to provide a quick guide for researchers seeking up-to-date information on the properties, production, and applicability of rGO, with special attention to rGO applications in water purification and the biomedical fields.

Abstract
Bacterial contamination is a public health concern worldwide causing enormous social and economic losses. For early diagnosis and adequate management to prevent or treat pathogen-related illnesses, extensive effort has been put into the development of pathogenic bacterial detection systems. Colorimetric sensing systems have attracted increasing attention due to their simple and single-site operation, rapid signal readout with the naked eye, ability to operate without external instruments, portability, compact design, and low cost. In this article, recent trends and advances in colorimetric systems for the detection and monitoring of bacterial contamination are reviewed. This article focuses on pathogen detection strategies and technologies based on reaction factors that affect the color change for visual readout. Reactions used in each strategy are introduced by dividing them into the following five categories: external pH change-induced pH indicator reactions, intracellular enzyme-catalyzed chromogenic reactions, enzyme-like nanoparticle (NP)-catalyzed substrate reactions, NP aggregation-based reactions, and NP accumulation-based reactions. Some recently developed colorimetric systems are introduced, and their challenges and strategies to improve the sensing performance are discussed.

Abstract
Fluorescent probes have been used widely in bioimaging, including biological substance detection, cell imaging, in vivo biochemical reaction process tracking, and disease biomarker monitoring, and have gradually occupied an indispensable position. Compared with traditional biological imaging technologies, such as positron emission tomography (PET) and nuclear magnetic resonance imaging (MRI), the attractive advantages of fluorescent probes, such as real-time imaging, in-depth visualization, and less damage to biological samples, have made them increasingly popular. Among them, ultraviolet-visible (UV-vis) fluorescent probes still occupy the mainstream in the field of fluorescent probes due to the advantages of available structure, simple synthesis, strong versatility, and wide application. In recent years, fluorescent probes have become an indispensable tool for bioimaging and have greatly promoted the development of diagnostics. In this review, we focus on the structure, design strategies, advantages, representative probes and latest discoveries in application fields of UV-visible fluorescent probes developed in the past 3-5 years based on several fluorophores. We look forward to future development trends of fluorescent probes from the perspective of bioimaging and diagnostics. This comprehensive review may facilitate the development of more powerful fluorescent sensors for broad and exciting applications in the future.

Abstract
Food safety issues are a worldwide concern. Pathogens, toxins, pesticides, veterinary drugs, heavy metals, and illegal additives are frequently reported to contaminate food and pose a serious threat to human health. Conventional detection methods have difficulties fulfilling the requirements for food development in a modern society. Therefore, novel rapid detection methods are urgently needed for on-site and rapid screening of massive food samples. Due to the extraordinary properties of nanozymes and aptamers, biosensors composed of both of them provide considerable advantages in analytical performances, including sensitivity, specificity, repeatability, and accuracy. They are considered a promising complementary detection method on top of conventional ones for the rapid and accurate detection of food contaminants. In recent years, we have witnessed a flourishing of analytical strategies based on aptamers and nanozymes for the detection of food contaminants, especially novel detection models based on the regulation by single-stranded DNA (ssDNA) of nanozyme activity. However, the applications of nanozyme-based aptasensors in food safety are seldom reviewed. Thus, this paper aims to provide a comprehensive review on nanozyme-based aptasensors in food safety, which are arranged according to the different interaction modes of ssDNA and nanozymes: aptasensors based on nanozyme activity either inhibited or enhanced by ssDNA, nanozymes as signal tags, and other methods. Before introducing the nanozyme-based aptasensors, the regulation by ssDNA of nanozyme activity via diverse factors is discussed systematically for precisely tailoring nanozyme activity in biosensors. Furthermore, current challenges are emphasized, and future perspectives are discussed.

Abstract
In this study, a fluorescent biosensor was developed for the sensitive detection of Salmonella typhimurium using a low-gradient magnetic field and deep learning via faster region-based convolutional neural networks (R-CNN) to recognize the fluorescent spots on the bacterial cells. First, magnetic nanobeads (MNBs) coated with capture antibodies were used to separate target bacteria from the sample background, resulting in the formation of magnetic bacteria. Then, fluorescein isothiocyanate fluorescent microspheres (FITC-FMs) modified with detection antibodies were used to label the magnetic bacteria, resulting in the formation of fluorescent bacteria. After the fluorescent bacteria were attracted against the bottom of an ELISA well using a low-gradient magnetic field, resulting in the conversion from a three-dimensional (spatial) distribution of the fluorescent bacteria to a two-dimensional (planar) distribution, the images of the fluorescent bacteria were finally collected using a high-resolution fluorescence microscope and processed using the faster R-CNN algorithm to calculate the number of the fluorescent spots for the determination of target bacteria. Under the optimal conditions, this biosensor was able to quantitatively detect Salmonella typhimurium from 6.9 × 101 to 1.1 × 103 CFU/mL within 2.5 h with the lower detection limit of 55 CFU/mL. The fluorescent biosensor has the potential to simultaneously detect multiple types of foodborne bacteria using MNBs coated with their capture antibodies and different fluorescent microspheres modified with their detection antibodies.

Abstract
In this paper, a novel and ultrasensitive lateral flow assay (LFA) based on aptamer-magnetic separation, and multifold Au nanoparticles (AuNPs) was developed for visual detecting Salmonella enterica ser. Typhimurium (S. Typhimurium). The method realized magnetic enrichment and signal transduction via magnetic separation and achieved signal amplification through hybridizing AuNPs-capture probes and AuNPs-amplification probes to form multifold AuNPs. Two different thiolated single-strand DNA (ssDNA) on the AuNPs-capture probe played different roles. One was combined with the AuNPs-amplification probe on the conjugate pad to achieve enhanced signals. The other was connected to transduction ssDNA1 released by aptamer-magnetic capture of S. Typhimurium, and captured by the T-line, forming a positive signal. This method had an excellent linear relationship ranging from 8.6 × 102 CFU/mL to 8.6 × 107 CFU/mL with the limit of detection (LOD) as low as 8.6 × 100 CFU/mL in pure culture. In actual samples, the visual LOD was 4.1 × 102 CFU/mL, which did not carry out nucleic acid amplification and pre-enrichment, increasing three orders of magnitudes than unenhanced assays with single-dose AuNPs and no magnetic separation. Furthermore, the system showed high specificity, having no reaction with other nontarget strains. This visual signal amplificated system would be a potential platform for ultrasensitive monitoring S. Typhimurium in milk samples.
