Abstract
Common beans are a common staple food with valuable nutritional qualities, but their high contents in antinutritional factors (ANFs) can decrease the bioavailability of (i) fat-soluble micronutrients including carotenoids and (ii) minerals. Our objective was to select ANF-poor bean lines that would not interfere with carotenoid and mineral bioavailability. To achieve this objective, seeds of commercial and experimental Phaseolus vulgaris L. bean lines were produced for 2 years and the bean's content in ANFs (saponins, phytates, tannins, total polyphenols) was assessed. We then measured carotenoid bioaccessibility and mineral solubility (i.e. the fraction of carotenoid and mineral that transfer into the aqueous phase of the digesta and is therefore absorbable) from prepared beans using in vitro digestion. All beans contained at least 200 mg/100 g of saponins and 2.44 mg/100 g tannins. The low phytic acid (lpa) lines, lpa1 and lpa12 exhibited lower phytate levels (≈ - 80%, p = 0.007 and p = 0.02) than their control BAT-93. However, this decrease had no significant impact on mineral solubility. HP5/1 (lpa + phaseolin and lectin PHA-E free) bean line, induced an improvement in carotenoid bioaccessibility (i.e., + 38%, p = 0.02, and + 32%, p = 0.005, for phytofluene bioaccessibility in 2021 and 2022, respectively). We conclude that decrease in the phytate bean content should thus likely be associated to decreases in other ANFs such as tannins or polyphenols to lead to significant improvement of micronutrient bioaccessibility.

Abstract
Micro-arc oxidation (MAO) coatings containing 2.86 wt%, 5.83 wt% and 8.81 wt% Zn (Zn-2.86 wt%, Zn-5.83 wt% and Zn-8.81 wt%) were separately fabricated on Ti6Al4V alloys using EDTA-ZnNa2 electrolytes. In vitro antibacterial examination exhibits that the antibacterial rates of Zn-2.86 wt%, Zn-5.83 wt% and Zn-8.81 wt% against Staphylococcus aureus (S. aureus) are 76.0 %, 100.0 % and 99.2 %, respectively. Reactive oxygen species (ROS) level of MAO samples is significantly higher than that of the untreated Ti6Al4V. Zn-containing coatings especially Zn-5.83 wt% induces the strongest oxidative stress on S. aureus due to relatively high released Zn2+ concentration. Moreover, qPCR analysis shows that MAO samples inhibit the icaADBC transcription and result in the down-regulation of PIA production, thereby mitigating biofilm formation. After immersion in simulated body fluid (SBF) for 3, 8 and 14 d, the antibacterial rate of Zn-5.83 wt% is 84.7 %, 63.2 % and 12.5 % respectively, and ROS level of MAO samples is also significantly higher than that of the untreated Ti6Al4V even after 14 d of immersion, suggesting that the antibacterial performance of MAO samples can last a relatively long immersion period and exhibit large application potential in orthopedic clinic.

Abstract
Composite collagen gels with hyaluronic acid are developed tissue-engineered structures for filling and regeneration of defects in various organs and tissues. For the first time, phytic acid was used to increase the stability and improve the mechanical properties of collagen gels with hyaluronic acid. Phytic acid is a promising cross-linker for collagen hydrogels and is a plant-derived antioxidant found in rich sources of beans, grains, and oilseeds. Phytic acid has several benefits due to its antioxidant, anticancer, and antitumor properties. In this work, studies were carried out on the kinetics of the self-assembly of collagen molecules in the presence of phytic and hyaluronic acids. It was shown that both of these acids do not lead to collagen self-assembly. Scanning electron microscopy showed that in the presence of phytic and hyaluronic acids, the collagen fibrils had a native structure, and the FTIR method confirmed the chemical cross-links between the collagen fibrils. DSC and rheological studies demonstrated that adding the phytic acid improved the stability and modulus of elasticity of the collagen gel. The presence of hyaluronic acid in the collagen gel slightly reduced the effect of phytic acid. The presence of phytic acid in the collagen gel improved the stability of the scaffold, but, after 1 week of cultivation, slightly reduced the viability of mesenchymal stromal cells cultured in the gel. The collagen type I gel with hyaluronic and phytic acids can be used to replace tissue defects, especially after the removal of cancerous tumors.

Abstract
Humans are constantly facing multiple health challenges from both communicable and non-communicable diseases that significantly affect their health. Additionally, drug resistance or failure has made the situation even worse and poses serious challenges for researchers to develop new drugs. Hence, to address these problems, there is an urgent need to discover and develop timely and long-term-based therapeutic treatments from different sources. One such approach is harnessing the potential of plant secondary metabolites. Plants have been utilized for therapeutic purposes in addition to being used for nutritional benefits. In the last two decades, plant-based drug developments have been one of the effective means of treating human diseases owing to their multiple functions. More recently, anti-nutritional factors (ANFs) have emerged as one of the important targets for novel plant-based drug development due to their multifaceted and potential pharmacological properties. However, their anti-nutritional properties have been the major setback for their limited success in the pharmacological sector. In this review, we provide an overview of ANFs and their beneficial roles in preventing human diseases with multiple case studies. We also highlight the recent developments and applications of ANFs in the food industry, agriculture, and pharmaceutics with future perspectives. Furthermore, we evaluate meta-analyses on ANFs from the last 30 years in relation to their function in human health benefits. This review is an endeavor to reevaluate the merit of these natural compounds and explore their potential for both human and animal health.

Abstract
This thorough study analyses the amounts of 43 minerals and trace elements in non-traditional wheat grains, flakes, and undigested flake portions using ICP-MS and establishes declines in their respective contents after the flake production. It also identifies appropriate dietary intakes, in vitro digestibility values, retention factors, and metal pollution indexes. The element contents in wheat flakes are lower than in wheat grains after the hydrothermal treatment process, and their declines are: Na (48-72%), Ce (47-72%), Sr (43-55%), Tl (33-43%), Ti (32-41%), U (31-44%), Ho (29-69%), Cr (26-64%), Zr (26-58%), Ag (25-52%), and Ca (25-46%). The flakes significantly contributed to the recommended dietary intake or adequate intake of particular elements for men of all categories as follows: Mn (143%) > Mo > Cu > Mg ≥ Cr > Fe (16%); for women: Mn (up to 183%) > Mo > Cu > Cr ≥ Mg > Fe (7-16%); for pregnant women aged 19-30: Mn (165%) > Mo > Cu > Mg > Cr (25%); and finally, for lactating women: Mn (127%) > Mo > Cu > Mg > Cr (17%). The contributions to the provisional tolerable weekly or monthly intakes of all toxic elements were established as being within the official limits. The daily intakes for non-essential elements were also calculated. The retention factors were calculated to assess the element concentrations in the undigested part using the digestibility values (87.4-90.5%). The highest retention factors were obtained for V (63-92%), Y (57-96%), Ce (43-76%), Pb (34-58%), Tl (32-70%), Ta (31-66%), and Ge (30-49%). K, Mg, P, Zn, Ba, Bi, Ga, Sb, Cu, Ni, and As appear to be released easily from flake matrices during digestion. The metal pollution index has been confirmed as being lower for non-traditional wheat flakes when compared with grains. Importantly, 15-25% of the metal pollution index assessed for native flakes remains in the undigested flake portion after in vitro digestion.

Abstract
Kapok fiber (KF), with the characteristics of a natural hollow structure, light weight, and low density, can be used as acoustic and thermal insulation, buoyancy, adsorption, filling, and composite material. The flame-retardant treatment can expand the functionality and application of KF. In this work, the phosphorylation of KF using phytic acid (PA) in the presence of urea at a high temperature was used to enhance its flame retardancy. The phosphorylation reaction conditions were discussed, and the surface topography, thermal degradation, heat release, and combustion properties of phosphorylated KF were studied. The Fourier transform infrared spectroscopy and 31P solid-state nuclear magnetic resonance spectroscopy analyses confirmed the grafting of PA on cellulose by the formation of phosphate ester bonds. Due to the covalent binding of PA, phosphorylated KF exhibited good washing durability. The surface topography, Raman spectroscopy, thermogravimetric (TG), and microcalorimetry analyses revealed the excellent charring ability of phosphorylated KF. In the TG test in nitrogen, the char residue increased to 42.6% of phosphorylated KF from 8.3% of raw KF at 700 °C. In the vertical combustion, raw KF sheet was almost completely burned out within 30 s, while phosphorylated KF was very difficult to catch fire. In the microcalorimetry analysis, the heat release capacity and total heat release of phosphorylated KF decreased to 67 J/g∙K and 3.9 kJ/g, respectively from 237 J/g∙K and 18.1 kJ/g of raw KF. This work suggests that phosphorylated KF is an excellent flame-retardant material.

Abstract
A study was made to expedite ion chromatography method using IonPac analytical column and self-regenerating anion suppressor for phytic acid determination in groundnut seeds and compared with a widely adopted spectrophotometric method based on enzymatic hydrolysis. The Ion Chromatography method equipped with AG11 guard and AS11 analytical columns in isocratic mode using 65 mM NaOH mobile phase at 1 mL min-1 flow rate showed a sharp peak for phytic acid with a retention time of 2.42 ± 0.2 min. The peak area was plotted v/s concentration showed linearity with an R2 value of 0.997, detection limit of 0.028 mg L-1 and recovery of 98% as against R2 value of 0.988 and detection limit of 0.065 mg L-1 in the spectrophotometric method. The study demonstrates that Ion Chromatography method was more accurate with a better detection limit than spectrophotometry. Also, this method provides robust handling with lesser reagent requirements due to combined eluent generation and self-regenerating suppression. Abstract
We outline the fabrication of a highly sensitive biosensor for phytic acid (PA) determination using the extract of rice sprout and SBA@DABCO nanoparticles. The nanoparticles were first added to the surface of small paper disks. After drying, the extract of rice sprout in phosphate buffered saline was immobilized on the paper disks. FT-IR spectroscopy, XRD, and SEM were employed for the characterization of the nanoparticles. The assembly process of the modified paper disks on top of graphite screen-printed electrodes was investigated by cyclic voltammetry and electrochemical impedance spectroscopy. PA measurements were performed by differential pulse voltammetry (DPV) with a small amount of sample (7 μL) for analysis. The cooperation of the rice sprout extract and the nanostructure of this biosensor led to the selective and sensitive electrochemical determination of PA. The limit of detection (S/N = 3) and linear dynamic range for PA determination by DPV were obtained at 0.04 μM and 0.1-10.0 μM, respectively. The biosensor showed excellent sensitivity for the determination of PA in real samples such as biscuits and wheat flour.

Abstract
Titanium and titanium alloy implants are essential for bone tissue regeneration engineering. The current trend is toward the manufacture of implants from materials that mimic the structure, composition and elasticity of bones. Titanium and titanium alloy implants, the most common materials for implants, can be used as a bone conduction material but cannot promote osteogenesis. In clinical practice, there is a high demand for implant surfaces that stimulate bone formation and accelerate bone binding, thus shortening the implantation-to-loading time and enhancing implantation success. To avoid stress shielding, the elastic modulus of porous titanium and titanium alloy implants must match that of bone. Micro-arc oxidation technology has been utilized to increase the surface activity and build a somewhat hard coating on porous titanium and titanium alloy implants. More recently, a growing number of researchers have combined micro-arc oxidation with hydrothermal, ultrasonic, and laser treatments, coatings that inhibit bacterial growth, and acid etching with sand blasting methods to improve bonding to bone. This paper summarizes the reaction at the interface between bone and implant material, the porous design principle of scaffold material, MAO technology and the combination of MAO with other technologies in the field of porous titanium and titanium alloys to encourage their application in the development of medical implants.

Abstract
Some bioactive compounds found in pulses (phytates, saponins, tannins) display antinutritional properties and interfere with fat-soluble vitamin bioavailability (i.e., bioaccessibility and intestinal uptake). As canned chickpeas are consumed widely, our aim was to optimize the chickpea canning process and assess whether this optimization influences fat-soluble vitamin bioavailability. Different conditions during soaking and blanching were studied, as was a step involving prior germination. Proteins, lipids, fibers, vitamin E, lutein, 5-methyl-tetrahydro-folate, magnesium, iron, phytates, saponins and tannins were quantified. Bioaccessibility and intestinal uptake of vitamin D and K were assessed using in vitro digestion and Caco-2 cells, respectively. Significant reductions of phytate, saponin and tannin contents (-16 to -44%), but also of folate content (up to -97%) were observed under optimized canning conditions compared with the control. However, bioaccessibility and cellular uptake of vitamin D and K remained unaffected after in vitro digestion of test meals containing control or optimized canned chickpeas.

Abstract
RATIONALE Phytic acid (PA) is both a naturally occurring nutrient and a widely used food additive for conferring antioxidant properties to food. PA can be found in baby foods and it is essential to monitor PA content due to its anti-nutritional properties when present in excess. Current methods for determining PA content are unsatisfactory because interference from inositol phosphates and inorganic phosphates complicates PA quantification. METHODS Baby foods were extracted using aqueous HCl, and the extractant was subjected to derivatization with (trimethylsilyl)diazomethane after de-metalation using a cation exchange resin. The PA derivative was quantified using liquid chromatography-mass spectrometry (LC/MS/MS) with a multi-response monitoring mode (m/z 829 to 451). RESULTS The linearity of the developed analytical method ranged from 10 to 1000 ng/mL for PA with R2 > 0.999. Reasonable reproducibility was obtained with an intraday relative standard deviation (RSD; N = 5) of 4.5% and an interday RSD (N = 5) of 5.7% at a concentration of 10 ng/mL. The developed method was successfully applied to determine PA content in various baby foods, with PA recovery between 90.6% and 119.8%. CONCLUSIONS A robust and sensitive method for the determination of PA in baby foods has been developed by methyl esterification with (trimethylsilyl)diazomethane and using LC/MS/MS analysis. The established method showed good anti-interference and precision, and it has been applied for the determination of PA in various baby foods.

Abstract
Most of the health benefits derived from cereals are attributed to their bioactive compounds. This study evaluated the levels of the bioactive compounds, and the antioxidant and starch-hydrolyzing enzymes inhibitory properties of six pipeline Striga-resistant yellow-orange maize hybrids (coded AS1828-1, 4, 6, 8, 9, 11) in vitro. The maize hybrids were grown at the International Institute of Tropical Agriculture (IITA), Nigeria. The bioactive compounds (total phenolics, tannins, flavonoids, and phytate) levels, antioxidant (DPPH• and ABTS•+ scavenging capacity and reducing power) and starch-hydrolyzing enzymes (α-amylase and α-glucosidase) inhibitory activities of the maize hybrids were determined by spectrophotometry. At the same time, carotenoids were quantified using a reverse-phase HPLC system. The ranges of the bioactive compounds were: 11.25-14.14 mg GAE/g (total phenolics), 3.62-4.67 mg QE/g (total flavonoids), 3.63-6.29 mg/g (tannins), 3.66-4.31% (phytate), 8.92-12.11 µg/g (total xanthophylls), 2.42-2.89 µg/g (total β-carotene), and 3.17-3.77 µg/g (total provitamin A carotenoids). Extracts of the maize hybrids scavenged DPPH• (SC50: 9.07-26.35 mg/mL) and ABTS•+ (2.65-7.68 TEAC mmol/g), reduced Fe3+ to Fe2+ (0.25 ± 0.64-0.43 ± 0.01 mg GAE/g), and inhibited α-amylase and α-glucosidase, with IC50 ranges of 26.28-52.55 mg/mL and 47.72-63.98 mg/mL, respectively. Among the six clones of the maize hybrids, AS1828-9 had the highest (p < 0.05) levels of tannins and phytate and the strongest antioxidant and starch-hydrolyzing enzymes inhibitory activities. Significant correlations were observed between total phenolics and the following: ABTS•+ (p < 0.01, r = 0.757), DPPH• SC50 (p < 0.01, r = -0.867), reducing power (p < 0.05, r = 0.633), α-amylase IC50 (p < 0.01, r = -0.836) and α-glucosidase IC50 (p < 0.05, r = -0.582). Hence, the Striga-resistant yellow-orange maize hybrids (especially AS1828-9) may be beneficial for alleviating oxidative stress and postprandial hyperglycemia.

Abstract
In this study, Ti-6Al-4V alloy samples were processed by micro-arc oxidation (MAO) in phytic acid (H12Phy) electrolytes with the addition of different concentrations of EDTA-MgNa2 (Na2MgY) and potassium hydroxide (KOH). The surface characterization and cytocompatibility of MAO-treated samples were evaluated systematically. H12Phy is a necessary agent for MAO coating formation, and the addition of Na2MgY and KOH into the electrolytes increases the surface roughness, micropore size and Mg contents in the coatings. The MAO coatings are primarily composed of anatase, rutile, MgO and Mg3(PO4)2. Magnesium (Mg) ions in the electrolytes enter into MAO coatings by diffusion and electromigration. The MAO coatings containing 2.97 at% Mg show excellent cell viability, adhesion, proliferation, alkaline phosphatase activity, extracellular matrix (ECM) mineralization and collagen secretion, but the cytocompatibility of the MAO coatings containing 6.82 at% Mg was the worst due to the excessively high Mg content. Our results revealed that MAO coatings with proper Mg contents improve the cytocompatibility of the Ti-6Al-4V alloys and have large potential in orthopedic applications.

Abstract
Due to its excellent biocompatibility and anti-inflammatory activity, amniotic membrane (AM) has attracted much attention from scholars. However, its clinical application in vascular reconstruction was limited for poor processability, rapid biodegradation, and insufficient hemocompatibility. A naturally extracted substance with good cytocompatibility, phytic acid (PA), which can quickly form strong and stable hydrogen bonds on the tissue surface, was used to crosslink decellularized AM (DAM) to prepare a novel vascular replacement material. The results showed that PA-fixed AM had excellent mechanical strength and resistance to enzymatic degradation as well as appropriate surface hydrophilicity. Among all samples, 2% PA-fixed specimen showed excellent human umbilical vein endothelial cells (HUVECs)-cytocompatibility and hemocompatibility. It could also stimulate the secretion of vascular endothelial growth factor and endothelin-1 from seeded HUVECs, indicating that PA might promote neovascularization after implantation of PA-fixed specimens. Also, 2% PA-fixed specimen could inhibit the secretion of tumor necrosis factor-αfrom co-cultured macrophages, thus might reduce the inflammatory response after sample implantation. Finally, the results ofex vivoblood test andin vivoexperiments confirmed our deduction that PA might promote neovascularization after implantation. All the results indicated that prepared PA-fixed DAM could be considered as a promising small-diameter vascular replacement material.

Abstract
The functionalization of microcrystalline cellulose (MCC) is an important strategy for broadening its application fields. In the present work, MCC was functionalized by phosphorylation reaction with phytic acid (PA) for enhanced flame retardancy. The conditions of phosphorylation reaction including PA concentration, MCC/PA weight ratio and temperature were discussed, and the thermal degradation, heat release and char-forming properties of the resulting PA modified MCC were studied by thermogravimetric analysis and pyrolysis combustion flow calorimetry. The PA modified MCC, which was prepared at 90 °C, 50%PA and 1:3 weight ratio of MCC to PA, exhibited early thermal dehydration with rapid char formation as well as low heat release capability. This work suggests a novel strategy for the phosphorylation of cellulose using PA and reveals that the PA phosphorylated MCC can act as a promising flame retardant material.

Abstract
Background:
Biofortification has been proposed as an intervention towards alleviation
of micronutrient deficiency in the population of developing countries. However, the presence of anti-
nutritional factor phytic acid in staple cereals chelates divalent cations and decreases their bioavailability
for monogastric animals. Thus, the use of phytase enzyme for hydrolysing phytate-P and
enhancing the amount of free divalent cations is of great importance.
Methods :
In this study, two phytases i.e. APF1 phytase from fungal source and commercial wheat
phytase were supplemented with flours of biofortified wheat genotypes and their impact on food
quality parameters was accessed. Since commercial wheat phytase is costly, it was used as known
phytase to compare the application of APF1 phytase. The phytic acid content was reduced in the
range of 70 to 84% with APF1 phytase and 79 to 89% with the wheat phytase as compared to untreated
samples, respectively. In contrast to phytate, the dialyzability of important micronutrients
Fe and Zn enhanced in the range of 21.9 to 48% and 39.5 to 96% with APF1 phytase and, 6.10 to
30% and 23.2 to 81% with wheat phytase, over untreated samples, respectively.
Results and Discussion:
A decrease in tannin content was observed in the range of 8 to 23% and 7
to 23% after treatment with APF1 and wheat phytase, respectively. The phytase treatment has resulted
in increased soluble protein content and inorganic phosphate content to different level over
untreated samples.
Conclusion:
The study revealed that APF1 phytase was comparatively more effective for enhanced
nutritional quality of wheat flour through phytase supplementation for its food based applications.

Abstract
Phytic acid, the principal storage form of phosphorus in wheat, plays both beneficial and antinutrient functions for human being, and its analytical method still needs further development. In this work, we have developed a new method for the determination of phytic acid in wheat products based on derivatization with (trimethylsilyl)diazomethane in combination with liquid chromatography-mass spectrometry analysis. Methyl esterification greatly decreased the polarity and the acidity of phytic acid, and thus the corresponding derivative can be easily analyzed by liquid chromatography-mass spectrometry under common conditions. Furthermore, treatment with cation exchange resin removed the polyvalent metal ions in the solutions, and thus derivatization of phytic acid can be achieved efficiently and completely. The standard curve for phytic acid has been well established in the linear range of 0.5-100 ng/mL with squared correlation coefficient more than 0.999 and the quantification limit of 0.25 ng/mL. The phytic acid content varies greatly in different wheat products, ranging from 153.5 to 17299.0 μg/g.

Abstract
Phytic acid (PA) is the primary phosphorus reserve in cereals and legumes which serves the biosynthesis needs of growing tissues during germination. It is generally considered to be an anti-nutritional factor found in grains because it can bind to minerals, proteins, and starch, limiting their bioavailability. However, this same mineral binding property can also confer a number of health benefits such as reducing the risk of certain cancers, supporting heart health, and managing renal stones. In addition, the ability of PA to bind minerals allows it to be used in certain food quality applications such as stabilizing the green color of vegetables, preventing lipid peroxidation, and reducing enzymatic browning in fruits/vegetables. These beneficial properties create a potential for added-value applications in the utilization of PA in many new areas. Many possible processing techniques for the preparation of raw materials in the food industry can be used to reduce the concentration of PA in foods to mitigate its anti-nutritional effects. In turn, the recovered PA by-products could be available for novel uses. In this review, a general overview of the beneficial and anti-nutritional effects of PA will be discussed and then dephytinization methods will be explained.

Abstract
Bioactive compounds in foods are responsible for their biological activities, but biotic and abiotic factors may influence their levels. This study evaluated the impact of three genotypes (designated 4, 5, and 7), maturity stages (20, 27, and 34 days after pollination) and processing methods (hydrothermal and dry-heating) on the bioactive constituents (carotenoids, phytate, tannins, vitamin C) and 2,2-diphenyl-2-picrylhydrazyl radical (DPPH*) scavenging activity of fresh orange maize hybrids. Freshly harvested maize cobs of each genotype were subjected to hydrothermal processing at 100°C and dry-heating with husks and without husks. Carotenoids (lutein, zeaxanthin, β-cryptoxanthin, α-carotene, and total β-carotene) contents of fresh and processed samples were analyzed using HPLC; other bioactive constituents and DPPH* scavenging ability were determined using spectrophotometric methods. Genotype had a significant effect on the levels of carotenoids (p < 0.001) and vitamin C (p < 0.05), while genotype (p < 0.001), and processing methods (p < 0.001) had significant effects on DPPH* SC50. Maturity stages, processing methods and their interaction also had significant effects (p < 0.001) on the levels of all the bioactive constituents. A positive moderate to strong correlation was observed between (p < 0.001) α-carotene and the following: lutein (r = 0.57), β-cryptoxanthin (r = 0.69), total β-carotene (r = 0.62). However, the relationship between α-carotene and zeaxanthin was positive but weak (r = 0.39). A positive moderate correlation (p < 0.001) was observed between lutein and the following: β-cryptoxanthin (r = 0.57), total β-carotene (r = 0.58), and zeaxanthin (r = 0.52). A positive strong correlation (p < 0.001) was observed between β-cryptoxanthin and each of total β-carotene (r = 0.92) and zeaxanthin (r = 0.63); total β-carotene and zeaxanthin (r = 0.65); while the association between vitamin C and DPPH* SC50 was negative and weak (r = −0.38). Generally, genotype 4 and harvesting at 34 days after pollination had the best combination of bioactive constituents and DPPH* scavenging ability.

Abstract
Understanding the bioactive constituents and physicochemical components in cereals can provide insights into their potential health benefits and food applications. This study evaluated some bioactive constituents, carbohydrate profiles and pasting properties of 16 Striga-resistant hybrids, with yellow-orange kernel color and semi-flint to flint kernel texture, grown in two replications at two field locations in Nigeria. Carotenoids were quantified using HPLC, while other analyses were carried out using standard laboratory methods. The ranges of major carotenoids (μg/g) across the two locations varied from 2.6 to 9.6 for lutein, from 2.1 to 9.7 for zeaxanthin, from 0.8 to 2.9 for β-cryptoxanthin, from 1.4 to 4.1 for β-carotene; with total xanthophylls and provitamin A carotenoids (pVAC) ranging from 5.4 to 17.1 and 1.4 to 4.1 μg/g, respectively. Tannins content ranged from 2.1 to 7.3 mg/g, while phytate ranged from 0.4 to 7.1%. Starch, free sugar, amylose and amylopectin ranged from 40.1 to 88.9%, 1.09 to 6.5%, 15.0 to 34.1%, and 65.9 to 85.0%, respectively. Peak and final viscosities ranged from 57.8 to 114.9 and 120.3 to 261.6 Rapid Visco Units (RVU), respectively. Total xanthophylls, β-carotene, tannins, phytate, sugar, amylose and amylopectin levels, as well as peak and final viscosities, varied significantly (p < 0.05) across the hybrids. Amylose was significantly correlated (p < 0.05) with total xanthophylls, β-carotene, pVAC, phytate and pasting temperature (r = 0.3, 0.3, 0.4, 0.3, 0.3, respectively), but starch significantly correlated with tannins (r = 0.3). Hence, the Striga-resistant yellow-orange maize hybrids have a good combination of bioactive constituents, carbohydrate profile and pasting properties, which are partly influenced by hybrid.

Abstract
Wheat bran consumption is associated with several health benefits, but its incorporation into food products remains low because of sensory and technofunctional issues. Besides, its full beneficial potential is probably not achieved because of its recalcitrant nature and inaccessible structure. Particle size reduction can affect both technofunctional and nutrition-related properties. Therefore, in this study, wet milling and cryogenic milling, two techniques that showed potential for extreme particle size reduction, were used. The effect of the milling techniques, performed on laboratory and large scale, was evaluated on the structure and physicochemical properties of wheat bran. With a median particle size (d50) of 6 µm, the smallest particle size was achieved with cryogenic milling on a laboratory scale. Cryogenic milling on a large scale and wet milling on laboratory and large scale resulted in a particle size reduction to a d50 of 28-38 µm. In the milled samples, the wheat bran structure was broken down, and almost all cells were opened. Wet milling on laboratory and large scale resulted in bran with a more porous structure, a larger surface area and a higher capacity for binding water compared to cryogenic milling on a large scale. The extensive particle size reduction by cryogenic milling on a laboratory scale resulted in wheat bran with the highest surface area and strong water retention capacity. Endogenous enzyme activity and mechanical breakdown during the different milling procedures resulted in different extents of breakdown of starch, sucrose, β-glucan, arabinoxylan and phytate. Therefore, the diverse impact of the milling techniques on the physicochemical properties of wheat bran could be used to target different technofunctional and health-related properties.

Abstract
Breeding low phytate crops is the most viable solution to tackle mineral deficiencies. The objective of the present study was to develop high yielding, low phytate (lpa) basmati rice cultivars. Three homozygous lpa mutants, Lpa5, Lpa9, and Lpa59, were developed through induced mutations (gamma rays 60Co) and identified by colorimetric and High Performance Liquid Chromatography (HPLC) analysis. These mutants showed 54%-63% reduction in phytic acid but had poor germination and yield. To improve these traits, hybridization and back cross breeding involving Lpa5, Lpa59, and parent cultivar Super Basmati were performed and F2:3, F3:4, BC1F2:3, and BC1F3:4 generations were developed and screened to target the objective. Within the F2:3, homozygous (226), heterozygous (65), and wild type (46) lpa recombinants were identified. Within the homozygous lpa category, four recombinants (Lpa5, Lpa6, Lpa7, and Lpa30) showed improved germination. Within the F3:4 generation, 86 homozygous lpa recombinants were identified. Further selection, on the basis of better plant type and the low phytate trait resulted in the selection of 38 recombinants. Grain quality and cooking characteristics of these selected recombinants were comparable as compared to parent cultivar. Within the BC1F2:3 generations, two homozygous Lpa recombinant lines, Lpa141, and Lpa205, were selected out of 220. Screening of the BC1F3:4 generation for the desirable agronomic and low phytate trait also resulted in the selection of two homozygous lines. Finally, seven recombinants i.e. Lpa12-3, Lpa111-1, Lpa141, Lpa56-3, Lpa53-4, Lpa99-2, and Lpa205-4 out of 42 homozygous low phytate lines were selected on the basis of yield improvement (4%-18%) as compared to parent cultivar. Association analysis suggested that further selection based on primary branches per plant, panicle length and productive tillers per plant would further improve the paddy yield. For molecular characterization of the Lpa trait, previously reported Lpa1-CAPS and Lpa1-InDel and functional molecular markers were applied. Results indicated the absence of the Z9B-Lpa allele and XS-Lpa mutation in the OsMRP5 gene in tested mutants, possibly suggesting that there may be new mutations or novel alleles in tested mutants that need to be identified and then fine mapped for subsequent utilization. To our knowledge, this is the first report of low phytic acid rice mutant development and their improved germination and yield through backcross breeding in basmati rice.

Abstract
Consumption of wheat bran (WB) has been associated with improved gastrointestinal health and a reduced risk for colorectal cancer, cardiovascular diseases and metabolic disorders. These benefits are likely mediated by a combination of mechanisms, including colonic fermentation of the WB fiber, fecal bulking and the prevention of oxidative damage due to its antioxidant capacities. The relative importance of those mechanisms is not known and may differ for each health effect. WB has been modified by reducing particle size, heat treatment or modifying tissue composition to improve its technological properties and facilitate bread making processes. However, the impact of those modifications on human health has not been fully elucidated. Some modifications reinforce whereas others attenuate the health effects of coarse WB. This review summarizes available WB modifications, the mechanisms by which WB induces health benefits, the impact of WB modifications thereon and the available evidence for these effects from in vitro and in vivo studies.

Abstract
Pulses display nutritional benefits and are recommended in sustainable diets. Indeed, they are rich in proteins and fibers, and can contain variable amounts of micronutrients. However, pulses also contain bioactive compounds such as phytates, saponins, or polyphenols/tannins that can exhibit ambivalent nutritional properties depending on their amount in the diet. We characterized the nutritional composition and bioactive compound content of five types of prepared pulses frequently consumed in France (kidney beans, white beans, chickpeas, brown and green lentils, flageolets), and specifically compared the effects of household cooking vs. canning on the composition of pulses that can be consumed one way or the other. The contents in macro-, micronutrients, and bioactive compounds highly varied from one pulse to another (i.e., 6.9 to 9.7 g/100 g of cooked product for proteins, 4.6 to 818.9 µg/100 g for lutein or 15.0 to 284.3 mg/100 g for polyphenols). The preparation method was a key factor governing pulse final nutritional composition in hydrophilic compounds, depending on pulse species. Canning led to a greater decrease in proteins, total dietary fibers, magnesium or phytate contents compared to household cooking (i.e., −30%, −44%, −33% and −38%, p < 0.05, respectively, in kidney beans). As canned pulses are easy to use for consumers, additional research is needed to improve their transformation process to further optimize their nutritional quality.

Abstract
The objective of this study was to determine the effect of soaking, boiling and frying on retention of micro-minerals as well as degradation of polyphenols and phytic acids. Soaking of the beans did not significantly (p > 0.05) decrease mineral, total polyphenol and phytic acid content of beans. While boiling of beans significantly (p < 0.05) decreased the concentration of total polyphenols and phytic acid but not the mineral content of the beans. Frying of boiled beans decreased the total polyphenol content but increased the concentration of phytic acids in beans. Data obtained in this study indicates that cooking of beans without discarding of soaking water and broth results into greater retention of minerals but frying may be detrimental to mineral bioavailability because it leads to increase in phytic acid content.

Abstract
In this paper, we developed a sensitive sensor for phytic acid (PA) and hydrogen peroxide (H2O2) detection based on glutathione-functionalized graphene quantum dots (GQDs@GSH). The fluorescence of GQDs@GSH was found to be effectively quenched by Fe3+ ions via photo-induced electron transfer (PET) process. Upon the addition of PA to GQDs@GSH/Fe3+ system, the fluorescence of GQDs@GSH was significantly restored due to the strong chelating and reducing ability of PA, Fe3+ ions could be reduced to Fe2+ ions by PA and formed PA/Fe2+ complex. Therefore, the "off-on" fluorescence method was constructed to detect PA by using GQDs@GSH/Fe3+ as a fluorescent probe. Furthermore, the method can be used for the detection of H2O2. H2O2 can destroy the chelate structure of PA/Fe2+, release Fe2+ ions and oxidize Fe2+ ions to produce Fe3+ ions, leading to the fluorescence quenching of GQDs@GSH again. Under optimal conditions, the fluorescence sensing platform showed good linear relationship between the relative fluorescence intensity I/I0 and the concentration of PA and H2O2 in the range of 0.05-3 μmol L-1 and 0.5-10 μmol L-1, respectively. The detection limits of PA and H2O2 were 14 nmol L-1 and 0.134 μmol L-1, respectively. Furthermore, the fluorescence assay method was also applied in real sample analysis and satisfactory results were obtained.

Abstract
The pursuit of sustainable functional materials requires the development of materials based on renewable resources and efficient fabrication methods. Here, we first fabricated chitosan-sodium phytate films via one-step-stripping and layer-by-layer-casting technologies. The proposed film-fabrication methods are general, facile, environmentally benign, cost-effective, and easy to scale up. The resultant one-step-stripped film was thin (9 ± 1 μm), soft, transparent, and strong, whereas the thickness of the layer-by-layer-cast film was 70 ± 3 μm. FTIR analysis of the films indicated the formation of interactions between the phosphoric groups in sodium phytate and the amino groups in chitosan. More importantly, the water-vapor-permeability values of the one-step-stripped and cast films were 4-5 orders of magnitude lower than chitosan films reported before. Layer-by-layer-cast films in particular exhibited high tensile strength (49.21 ± 1.12 MPa) and were more than three times stronger than other polyelectrolyte multilayer films. Both types of films remained stable in an acidic environment. Furthermore, the layer-by-layer-assembled films presented greater antimicrobial activity than the stripped films. The developed chitosan-sodium phytate films can enhance several biomedical and environmental applications, such as packaging, drug delivery, diagnostics, microfluidics, and biosensing.

Abstract
Chitosan nanoparticles have attracted considerable attention as a potential carrier for food and pharmaceutical applications. Herein, using natural sodium phytate as a gelation agent, we developed a new type of green and biocompatible chitosan nanoparticles. We discovered that the chitosan-sodium phytate nanoparticles exhibited potent antibacterial activities. The chitosan-sodium phytate nanoparticles prepared from low molecular weight (LMW, 140±7kDa) and medium molecular weight (MMW, 454±21kDa) chitosan were spherical. Under optimum conditions-with a ratio of LMW chitosan to sodium phytate of 24:1 and MMW chitosan to sodium phytate of 21:1-the sizes of the LMW and MMW chitosan nanoparticles were 20-80 and 80-100nm, respectively, as observed by transmission electron microscopy. The formation mechanism of chitosan nanoparticles occurred through both electrostatic interactions and hydrogen bonds. No cytotoxicity for normal liver cells was found in chitosan-sodium phytate nanoparticles measured by methyl thiazolyl tetrazolium assay. Furthermore, the antimicrobial assays indicated that the antimicrobial activity of the LMW chitosan nanoparticles was greater than that of MMW chitosan nanoparticles. The minimum inhibition concentration values and half inhibiting concentration of LMW chitosan-sodium phytate nanoparticles for Escherichia coli were 1.5 and 0.8mg/mL, respectively. In addition, the antimicrobial activity of chitosan nanoparticles against Gram-negative bacteria was better than that against Gram-positive bacteria. The newly developed chitosan-sodium phytate nanoparticles could be used as a potential antibacterial agent.

Abstract
Malnutrition is a major challenge worldwide associated with diets rich in cereals. Durum wheat is important source of calories and protein in developing countries. A modified scale-down method to quantify phytate was validated. 46 durum varieties were analyzed for Fe, Zn and phytate (bioavailability) content. Variation was detected for Phy:Fe (12.1–29.6) and Phy:Zn (16.9–23.6) molar ratios.
Diets very rich in cereals have been associated with micronutrient malnutrition, and the biofortification of them, has been proposed as one of the best approaches to alleviate the problem. Durum wheat is one of the main sources of calories and protein in many developing countries. In this study, 46 durum varieties grown under full and reduced irrigation, were analyzed for micronutrients and phytate content to determine the potential bioavailability of the micronutrients. The variation was 25.7–40.5 mg/kg for iron and of 24.8–48.8 mg/kg for zinc. For phytate determination (0.462–0.952 %), a modified methodology was validated in order to reduce testing costs while speeding up testing time. Variation was detected for phytate:iron and zinc molar ratios (12.1–29.6 and 16.9–23.6, respectively). The results could be useful to generate varieties with appropriate levels of phytate and micronutrients, which can lead to the development of varieties rich in micronutrients to overcome malnutrition.

Abstract
Phosphorus (P) is one of the most important nutrients for phytoremediation of arsenic (As)-contaminated soils. In this study, we demonstrated that As-hyperaccumulator Pteris vittata was efficient in acquiring P from insoluble phosphate rock (PR). When supplemented with PR as the sole P source in hydroponic systems, P. vittata accumulated 49% and 28% higher P in the roots and fronds than the -P treatment. In contrast, non-hyperaccumulator Pteris ensiformis was unable to solubilize P from PR. To gain insights into PR solubilization by plants, organic acids in plant root exudates were analyzed by HPLC. The results showed that phytic acid was the predominant (>90%) organic acid in P. vittata root exudates whereas only oxalic acid was detected in P. ensiformis. Moreover, P. vittata secreted more phytic acid in -P and PR treatments. Compared to oxalic acid, phytic acid was more effective in solubilizing PR, suggesting that phytic acid was critical for PR utilization. Besides, secretion of phytic acid by P. vittata was not inhibited by arsenate. Our data indicated that phytic acid played an important role in efficient use of insoluble PR by P. vittata, shedding light on using insoluble PR to enhance phytoremediation of As-contaminated soils.

Abstract
Arsenic hyperaccumulator Pteris vittata (PV) is efficient in taking up As and nutrients from As-contaminated soils. We evaluated the mechanisms used by PV to mobilize As and Fe by examining the impacts of As and root exudates on FeAsO4 solubilization, and As and Fe uptake in four plants: As-hyperaccumulators PV and Pteris multifida (PM), nonhyperaccumulator Pteris ensiformis (PE), and angiosperm plant tomato (Solanum lycopersicum). Phytate and oxalate were dominant in fern plants (>93%), which were 50-83, 15-42, and 0-32 mg kg(-1) phytate and 10-15, 7-26, and 4-12 mg kg(-1) oxalate for PV, PM, and PE respectively, with higher As inducing greater phytate exudation and no phytate being detected in tomato exudates. PV treated with phytate+FeAsO4 had higher As and Fe contents and larger biomass than phytate or FeAsO4 treatment, which were 340 vs 20 and 130 mg kg(-1) As in the fronds and 7900 vs 1600 and 4100 mg kg(-1) Fe in the roots. We hypothesized that As-induced phytate exudation helped PV to take up Fe and As from insoluble FeAsO4 and promoted PV growth. Our study suggests that phytate exudation may be special to fern plants, which may play an important role in enhancing As and nutrient uptake by plants, thereby increasing their efficiency in phytoremediation of As-contaminated soils.

Abstract
Inositol hexakisphosphate is known to be the phosphorous reserve in plants particularly in the seeds. Though it
has been known for its antinutrient properties for many years, recent research shed light to reveal it as a novel anticancer
agent. Hence the present study investigates the drug-likeness of phytic acid and its analogues through bioinformatics
methods. Two potential cancer drug targets such as mitogen activated kinase and inositol 1,4,5-triphosphate receptor are
included in the study. Out of 50 selected analogues of phytic acid, 42 structures interact well with the chosen drug targets.
The best interacting structures are 1-diphosinositol pentakisphosphate and 2,3,4,5,6-pentaphosphonooxycyclohexyl
dihydrogen phosphate. For both of these structures, the negative binding energy obtained was -49.5 KJ/mol; this affirms
the stability of the complex. ADME properties are also predicted to assess the drug-like properties of the compounds. The
structure activity relationship model is generated for 12 compounds with experimental IC50 values.

Abstract
In vitro gastrointestinal digestion of babassu mesocarp in the absence and presence of milk and lignin was performed to evaluate the bioaccessibility of Cu, Fe, and Zn. Extractions using NaOH solutions (pH 7 and 12) were carried out to evaluate the interactions of Cu(II), Fe(III), and Zn(II) with the extracted compounds and with the washed mesocarp. Studies using reference solutions showed a decrease in the free concentration of the elements in the presence of mesocarp. Phytate, a component present in the mesocarp, can be the main compound responsible for the elements' interactions with mesocarp. Lignin increases the elements' soluble fractions; however, the elements' concentrations in the dialyzed fractions, representing the bioaccessible portion, were very low. On the other hand, Cu, Fe, and Zn bioaccessibility in milk was not influenced by the mesocarp.
