Dynamic interfacial tension of surfactant solutions

Surface activity of Lupinus angustifolius (blue lupine) seed extracts

Surface tension (γeq) of the seed extracts of four lupine cultivars showed values in the range 44.9-46.4 mN/m. The surface compression elasticity (E') of the adsorbed layers and foaming capacity (FC) also showed similar values (E' ∼ 30 mN/m, FC ∼ 100%). The effect of defatting prior to extraction at pH 8.5 depends on the solvent employed - hexane and dichloromethane improved the subsequent protein extraction yield, while ethanol reduced it. The effect of defatting on surface tension could be positive (for hexane and ethanol) or negative (for dichloromethane). Generally, defatting improved the surface compression rheological and foaming parameters. On the other hand, fractionation of the extracts obtained at pH 8.5 from hexane-defatted seeds did not improve significantly the surface activity parameters. Some improvement with respect to the unfractionated extracts was observed only for the extracts of undefatted seeds. γeq, E', E" and FC isotherms confirm the surfactant-like behavior of the lupine seed extracts.

Adsorption study on the formation of interfacial layers based on birch glucuronoxylans

Glucuronoxylans (GX), particularly crude fractions obtained by pressurized hot water extraction of birch wood, act as potent emulsifiers and stabilizers against physical separation and lipid oxidation. Herein, we studied the adsorption of GX on hydrophobic interfaces to correlate their multicomponent character towards the formation of interfacial layers in emulsions. Dynamic interfacial tension (DIFT) and quartz crystal microgravimetry with dissipation monitoring (QCM-D) were applied to various GX fractions and the results compared with those from cellulose-based emulsifiers. The roles of residual lignin and polysaccharides are discussed considering the formation of interfacial layers during emulsification. The DIFT of the different GXs reached quasi-equilibrium faster as the lignin concentration increased, implying a correlation between the rate of adsorption and the residual lignin content. The effect of NaCl addition was more pronounced in polysaccharide-rich fractions, indicating that the polysaccharide fraction modulated the effect of ionic strength. QCM-D showed that despite the fast adsorption exhibited by the lignin-rich GX extract in the DIFT curves, the adsorbed materials were lightweight, suggesting that the polysaccharide fraction built the bulk of the interfacial layer. These results provide a foundation towards understanding the role of GX in interfacial stabilization beyond traditional plant-based counterparts.

Studying surfactant mass transport through dynamic interfacial tension measurements: A review of the models, experiments, and the contribution of microfluidics

Surfactant mass transport towards an interface plays a critical role during formation of emulsions, foams and in industrial processes where two immiscible phases coexist. The understanding of these mechanisms as experimentally observed by dynamic interfacial tension measurements, is crucial. In this review, theoretical models describing both equilibrated systems and surfactant kinetics are covered. Experimental results from the literature are analysed based on the nature of surfactants and the tensiometry methods used. The innovative microfluidic techniques that have become available to study both diffusion and adsorption mechanisms during surfactant mass transport are discussed and compared with classical methods. This review focuses on surfactant transport during formation of droplets or bubbles; stabilisation of dispersed systems is not discussed here.

Salting-out effect-mediated size-control of protein nanoparticles towards controllable microstructures for sustained release of eugenol

Size and monodispersity of solid particles are essential to their structuring behaviors at biphasic interfaces. However, delicate control over biomolecular nanoparticle sizes is challenging. In this study, we prepared monodisperse rice protein (RP) nanoparticles by neutralizing RP solutions (pH 12.0) using combined treatments of cationic exchange resins (CERs) and HCl. CERs absorbed Na+ by releasing H+ without producing salt during neutralization. By compromising the usages of CERs and HCl when preparing RPs, the generation of NaCl can be delicately tailored, leading to controllable nanoparticle sizes from 20 nm to 30 nm. By mixing these nanoparticles with eugenol in an aqueous solution, the nanoparticles accommodated eugenol in their cores due to inward diffusion. Furthermore, such eugenol-contained nanoparticles with different sizes demonstrated tunable releases of eugenol due to size-dependent capillary forces, which can be harnessed for suppression of microbial growth on fruit with prolonged effective eugenol concentration.

Dynamic Interfacial Tension Measurement for the Kinetic Study of Eu(III) Extraction in the NaNO3/Tributyl Phosphate System Based on an Increase in Interfacial Tension

We demonstrated for the first time that interfacial tension measurements can be used to evaluate the kinetics of the solvent extraction of metal ions. The Eu(III) extraction mechanism in the nitrate ion/tributyl phosphate (TBP) system was investigated on the basis of dynamic interfacial tension. Interestingly, the interfacial tension of the TBP droplet (γ) increased with Eu(III) extraction. This behavior can be explained by the electrocapillary effect. The time dependence of γ was kinetically analyzed, and we demonstrated that the rate-determining process was the interfacial reaction of Eu(III). Furthermore, the dependence of the mass transfer rate constant upon the concentration of the nitrate ions revealed that two nitrate ions were involved in the interfacial reaction during Eu(III) extraction. However, no change in the rate constant upon TBP concentration was observed, because the change in the TBP concentration did not affect the electrocapillary effect. We determined the forward and backward reaction rates to be k1 = (1.5 ± 0.7) × 10-6 m M-2 s-1 and k-MT = (6.9 ± 3.9) × 10-7 m s-1. Therefore, for the first time, we demonstrated that dynamic interfacial tension, which is involved in the electrocapillary effect, can be used to elucidate the kinetics of Eu(III) extraction. We expect that this study will attract the attention of researchers in several fields, including physical and analytical chemistry.

Adsorption Properties and Wettability of Ethoxy- and Propoxy- Derivatives of 2-Ethylhexanol as Sterically Specific Surfactant Structures

2-ethylhexanol, an oxo alcohol competitively priced on the global market, has not been explored intensively as a raw material for surfactants, due to its weak hydrophobic character. However, its sequenced propoxylation and ethoxylation yield an innovative amphiphilic structure, which exhibits unique interfacial activity. The paper presents the differences in the fractional composition of innovative surfactants derived from 2-EH alcohol prepared using alkali and dimetalcyanide catalysts, as well as examples of excellent adsorption and interfacial properties of the latter. The adsorption behavior of the synthesized compounds was explored using equilibrium surface tension (the du Noüy ring method), dynamic surface tension (the maximum gas bubble pressure method) and static/dynamic contact angle (the sessile drop method). The results from the adsorption tests conducted at the air/aqueous surfactant solution interface underwent comprehensive qualitative and quantitative analyses. Moreover, based on the experimentally obtained dynamic surface tension isotherms and the developed algorithm, the diffusion coefficients for these preparations were estimated, and it was shown that the diffusivity of these surfactants is higher compared to the commercial formulations. The study's outcomes in the testing of wettability indicate that new synthesized nonionic and anionic surfactants constitute an interesting group of amphiphiles with a wide application potential as effective wetting agents, especially in relation to the polymer surface. It should therefore be emphasized that the innovative surfactants described in this article, derived from 2-EH alcohol and prepared using dimetalcyanide catalysts, can successfully compete with conventional preparations such as ABS (Dodecylbenzenesulfonic Acid) or AES (Alcohol Ethoxysulphate) acid salts.

Diffusion of surfactant from a micellar solution to a bare interface. 1. Absorbing boundary

We analyze dynamic adsorption of surfactant from a micellar solution to a rapidly created surface that acts as an absorbing boundary for surfactant monomers (single molecules), along which the monomer concentration vanishes, with no direct micelle adsorption. This somewhat idealized situation is analyzed as a prototype for situations in which strong suppression of monomer concentration accelerates micelle dissociation, and will be used as a starting point for analysis of more realistic boundary conditions in subsequent work. We present scaling arguments and approximate models for particular time and parameter regimes and compare the resulting predictions to numerical simulations of the reaction-diffusion equations for a polydisperse system containing surfactant monomers and clusters of arbitrary aggregation number. The model considered here exhibits an initial period of rapid shrinkage and ultimate dissociation of micelles within a narrow region near the interface. This opens a micelle-free region near the interface after some time τ_e, the width of which increases as t^1/2 at times t≫τ_e. In systems that exhibit disparate fast and slow bulk relaxation times τ₁ and τ₂ in response to small perturbations, τ_e is usually comparable to or greater than τ₁ but much less than τ₂. Such systems exhibit a wide intermediate time regime τ_e<t<τ₂ in which the remaining micellar region reaches a state of partial local equilibrium, followed by a final stage t≫τ₂ in which full local equilibrium is established.

Effect of Oil-Soluble/Water-Soluble Surfactants on the Stability of Water-in-Oil Systems, an Atomic Force Microscopy Study

The stabilization mechanism of water-in-oil (W/O) emulsions has been studied by measuring the interactions between two water droplets in n-tetradecane using atomic force microscopy. The effects of water-soluble surfactants (SDS/CTAB/Tween 80), an oil-soluble surfactant (Span 20), and the coexistence of the water and oil-soluble surfactants on the stability of water droplets in oil were investigated separately. It is found that the addition of oil-soluble surfactants (Span 20) prevents the coalescence of water droplets in oil. To discuss the role of an oil-soluble surfactant, we analyzed the force curve by applying the theoretical model. The results demonstrate that the oil-soluble surfactant (Span 20) stabilizes dispersed droplets by adsorbing onto the interface and forming a relatively tighter layer with the increase in surfactant concentration, which hinders film rupture. This behavior of the surfactant could also be properly characterized by steric hindrance. A further step was taken by introducing another water-soluble surfactant. It is found that the addition of either SDS or CTAB into the water phase is futile in inducing droplet coalescence in the presence of Span 20. In contrast, Tween 80 was found to be effective in destabilizing water droplets, which could be due to the competitive adsorption between Tween 80 and Span 20 at the interface. By characterizing the interfacial adsorption of Tween 80 and Span 20 with a theoretical adsorption isotherm model, the result indicates that interface replacement would result in a loose adsorption layer that is insufficient to hinder droplet coalescence. Our study provides an intriguing understanding of the role of surfactants in the stabilization and destabilization of water-in-oil emulsions.

Stain removal performance of moisture-wicking fabric during home laundry

Moisture-wicking clothes are widely used in various sports or athletic activities due to their function of moisture absorption and perspiration. In this study, the washing and decontamination of moisture-wicking fabrics, especially the performance and decontamination effect of moisture-wicking fabrics after washing were investigated. The results showed that the physical morphology of moisture-wicking fabric is very different from that of an ordinary polyester fabric. The cross-section of the moisture-wicking fabric is hexagonal, and this fabric has good hydrophilicity. After the degreasing & thermosetting process, the air permeability of the moisture-wicking fabric is increased from 1013 mm/s to 2911 mm/s. However, the air permeability is decreased after one washing, but it has little effect during the subsequent washing cycles. Moreover, the degreasing & thermosetting process also improve the stains removal index. If the moisture-wicking fabric was washed before the preparation of stained fabric, the stain removal index of carbon black soil and sebum stains is increased. Although most of the aggregated particles on the surface of the fibers are removed after washing, a small amount of sebum still remains in the spaces between the fibers. These results indicate that most of the carbon black in the stained area is removed after washing, while oil components are hardly removed from the moisture-wicking fabric during home laundry. Compared to other surfactants, C18 fatty acid methyl ester ethoxylates and nonionic surfactants with long carbon chains can effectively reduce the surface tension of water and improve the wettability of water-wicking fabric, so that water molecules can diffuse well between fibers and stains, the binding force between stains and fabric is weakened, and the decontamination of the fabric is improved.

Microscopic theory of adsorption kinetics

Adsorption is the accumulation of a solute at an interface that is formed between a solution and an additional gas, liquid, or solid phase. The macroscopic theory of adsorption dates back more than a century and is now well-established. Yet, despite recent advancements, a detailed and self-contained theory of single-particle adsorption is still lacking. Here, we bridge this gap by developing a microscopic theory of adsorption kinetics, from which the macroscopic properties follow directly. One of our central achievements is the derivation of the microscopic version of the seminal Ward-Tordai relation, which connects the surface and subsurface adsorbate concentrations via a universal equation that holds for arbitrary adsorption dynamics. Furthermore, we present a microscopic interpretation of the Ward-Tordai relation that, in turn, allows us to generalize it to arbitrary dimension, geometry, and initial conditions. The power of our approach is showcased on a set of hitherto unsolved adsorption problems to which we present exact analytical solutions. The framework developed herein sheds fresh light on the fundamentals of adsorption kinetics, which opens new research avenues in surface science with applications to artificial and biological sensing and to the design of nano-scale devices.

Review of the role of surfactant dynamics in drop microfluidics

Surfactants are employed in microfluidic systems not just for drop stabilisation, but also to study local phenomena in industrial processes. On the scale of a single drop, these include foaming, emulsification and stability of foams and emulsions using statistically significant ensembles of bubbles or drops respectively. In addition, surfactants are often a part of a formulation in microfluidic drop reactors. In all these applications, surfactant dynamics play a crucial role and need to be accounted for. In this review, the effect of surfactant dynamics is considered on the level of standard microfluidic operations: drop formation, movement in channels and coalescence, but also on a more general level, considering the mechanisms controlling surfactant adsorption on time- and length-scales characteristic of microfluidics. Some examples of relevant calculations are provided. The advantages and challenges of the use of microfluidics to measure dynamic interfacial tension at short time-scales are discussed.

A Psychrophilic GelMA: Breaking Technical and Immunological Barriers for Multimaterial High-Resolution 3D Bioprinting

The increasing demand for tissue replacement has encouraged scientists worldwide to focus on developing new biofabrication technologies. Multimaterials/cells printed with stringent resolutions are necessary to address the high complexity of tissues. Advanced inkjet 3D printing can use multimaterials and attain high resolution and complexity of printed structures. However, a decisive yet limiting aspect of translational 3D bioprinting is selecting the befitting material to be used as bioink; there is a complete lack of cytoactive bioinks with adequate rheological, mechanical, and reactive properties. This work strives to achieve the right balance between resolution and cell support through methacrylamide functionalization of a psychrophilic gelatin and new fluorosurfactants used to engineer a photo-cross-linkable and immunoevasive bioink. The syntonized parameters following optimal formulation conditions allow proficient printability in a PolyJet 3D printer comparable in resolution to a commercial synthetic ink (∼150 μm). The bioink formulation achieved the desired viability (∼80%) and proliferation of co-printed cells while demonstrating in vivo immune tolerance of printed structures. The practical usage of existing high-resolution 3D printing systems using a novel bioink is shown here, allowing 3D bioprinted structures with potentially unprecedented complexity.

Interfacial Dilational Rheology of Molecular Films in DC Electric Fields

We present a novel technique to measure the interfacial dilational rheology of a molecular film adsorbed at a water-oil interface in a direct-current (dc) electric field. A film of a highly polar subfraction of asphaltenes was allowed to adsorb at a water drop interface, surrounded by an organic phase and subjected to a dc electric field. The measurements involved calculations of the dynamic interfacial tension (IFT), while the drop was sinusoidally oscillated, using our in-house axisymmetric drop shape analysis (ADSA) algorithm adapted for electric fields. The amplitude of the IFT waveform over equilibrium IFT and the phase difference from the applied area oscillations were used in the estimation of surface moduli. The asphaltene films were found to become more elastic on increasing bulk concentrations and electric field strengths. However, the effect was not monotonous and observed to be governed by combinations of these parameters. The Lucassen-van den Tempel (LVDT) model was used to further elucidate the experimentally obtained interfacial dilational moduli.

A broad perspective to particle-laden fluid interfaces systems: from chemically homogeneous particles to active colloids

Particles adsorbed to fluid interfaces are ubiquitous in industry, nature or life. The wide range of properties arising from the assembly of particles at fluid interface has stimulated an intense research activity on shed light to the most fundamental physico-chemical aspects of these systems. These include the mechanisms driving the equilibration of the interfacial layers, trapping energy, specific inter-particle interactions and the response of the particle-laden interface to mechanical perturbations and flows. The understanding of the physico-chemistry of particle-laden interfaces becomes essential for taking advantage of the particle capacity to stabilize interfaces for the preparation of different dispersed systems (emulsions, foams or colloidosomes) and the fabrication of new reconfigurable interface-dominated devices. This review presents a detailed overview of the physico-chemical aspects that determine the behavior of particles trapped at fluid interfaces. This has been combined with some examples of real and potential applications of these systems in technological and industrial fields. It is expected that this information can provide a general perspective of the topic that can be exploited for researchers and technologist non-specialized in the study of particle-laden interfaces, or for experienced researcher seeking new questions to solve.

Volatile Aroma Surfactants: The Evaluation of the Adsorption-Evaporation Behavior under Dynamic and Equilibrium Conditions

Multicomponent heterogeneous systems containing volatile amphiphiles are relevant to the fields ranging from drug delivery to atmospheric science. Research presented here discloses the individual interfacial activity and adsorption-evaporation behavior of amphiphilic aroma molecules at the liquid-vapor interface. The surface tension of solutions of nonmicellar volatile surfactants linalool and benzyl acetate, fragrances as such, was compared with that of the conventional surfactant sodium dodecyl sulfate (SDS) under equilibrium as well as under no instantaneous equilibrium, including a fast-adsorbing regime. In open systems, the increase in the surface tension on a time scale of ∼10 min is evaluated using a phenomenological model. The derived characteristic mass transfer constant is shown to be specific to both the desorption mechanism and the chemistry of the volatile amphiphile. Fast-adsorbing behavior disclosed here, as well as the synergetic effect in the mixtures with conventional micellar surfactants, justifies the advantages of volatile amphiphiles as cosurfactants in dynamic interfacial processes. The demonstrated approach to derive specific material parameters of fragrance molecules can be used for an application-targeted selection of volatile cosurfactants, e.g., in emulsification and foaming, inkjet printing, microfluidics, spraying, and coating technologies.

Tensiometry as a Simple Analytical Method for Quantification of Solubility and Release of Aroma Molecules in Aqueous Media

Dynamic tensiometry is shown to be a high-potential analytical tool in assessing physico-chemical characteristics of fragrance molecules, such as solubility limit, volatility as well as much rarely assessed interfacial activity of these amphiphilic molecules. Surface tension of aqueous solutions of selected essential oils has been measured as a function of time and fragrance concentration using maximum bubble pressure method. The effect of the temperature and saline solution on the rate of dissolution in water was assessed. Dynamic surface tension turned to be sensitive to the composition of fragrances, as demonstrated on examples of natural and synthetic mixtures. Furthermore, presented work reveals the possibility of maximum bubble pressure tensiometry method to quantify the amount of fragrance compositions in flavored salts, including the artificially aged carrier samples. Suggested here analytical approach can be used for the detection of the purity of essential oils, for the optimization of compositions and of the manufacturing processes of fragrances-containing products, as well as for the assessment of the release/evaporation of fragrances from carrier systems.

pH-Dependent Interfacial Tension and Dilatational Modulus Synergism of Oil-Soluble Fatty Acid and Water-Soluble Cationic Surfactants at the Oil/Water Interface

While the concept of interfacial tension synergism in surfactant mixtures is well established, little attention has been paid to the possibility of synergistic effects on the interfacial rheology of mixed surfactant systems. Furthermore, interfacial tension synergism is most often investigated for mixtures of surfactants residing in a single phase. Here, we define dilatational modulus synergism and report a study of interfacial tension isotherms and complex dilatational moduli for a binary surfactant system with the two surfactants accessing the oil/water interface from opposite sides. Using an oil-soluble fatty acid surfactant (palmitic acid, PA) that may be ionized at the oil/water interface and a quaternary ammonium water-soluble cationic surfactant (tetradecyltrimethylammonium bromide, TTAB), the binary interfacial interaction was tuned by the aqueous phase pH. Interfacial tensions and dilatational moduli were measured by the pendant drop method for the binary surfactant system as well as the corresponding single-surfactant systems to identify synergistic effects. The possible occurrence of dilatational modulus synergism was probed from two perspectives: one for a fixed total surfactant concentration and the other for a fixed interfacial tension. The aqueous pH was found to have a controlling effect on both interfacial tension synergism and the dilatational modulus synergism. The conditions for interfacial tension synergism coincided with those for the storage modulus synergism: both tension and storage modulus synergisms were observed under all conditions tested at pH 7 where PA was mostly deprotonated, for both perspectives examined, but not for any conditions tested at pH 3 where PA is mostly protonated. The loss modulus synergism exhibited more complex behaviors, such as frequency and interfacial tension dependences, but again was only observed at pH 7. The tension and modulus synergism at pH 7 were attributed to the increased attraction between ionized PA and cationic TTAB and the formation of catanionic complexes at the oil/water interface.

Particle-laden fluid/fluid interfaces: physico-chemical foundations

Particle-laden fluid/fluid interfaces are ubiquitous in academia and industry, which has fostered extensive research efforts trying to disentangle the physico-chemical bases underlying the trapping of particles to fluid/fluid interfaces as well as the properties of the obtained layers. The understanding of such aspects is essential for exploiting the ability of particles on the stabilization of fluid/fluid interface for the fabrication of novel interface-dominated devices, ranging from traditional Pickering emulsions to more advanced reconfigurable devices. This review tries to provide a general perspective of the physico-chemical aspects associated with the stabilization of interfaces by colloidal particles, mainly chemical isotropic spherical colloids. Furthermore, some aspects related to the exploitation of particle-laden fluid/fluid interfaces on the stabilization of emulsions and foams will be also highlighted. It is expected that this review can be used for researchers and technologist as an initial approach to the study of particle-laden fluid layers.

Interfacial flow of a surfactant-laden interface under asymmetric shear flow

HYPOTHESIS

The shear stress of the axisymmetric flow field triggers a nonuniform distribution of the surfactants at the surface of a rising bubble, known as stagnant cap. The formation of the stagnant cap gives rise to Marangoni stresses that reduce the mobility of the interface, which in return reduces the rising velocity. However, the conditions in technological processes usually deviate from the linear rise of a single bubble in a quiescent unbounded liquid. Asymmetric shear can act on the bubble surface e.g. due to the vorticity in the surrounding flow, bubble-bubble interactions, or influence of the reactor wall. A different surfactant distribution at the interface is expected under asymmetric shear, which can change the hydrodynamic behavior of the interface drastically.

EXPERIMENTS

Here we conduct model experiments with a bubble or a drop at the tip of a capillary placed in a defined flow field. Thereby we investigate the influence of asymmetric shear forces on the interface in the presence of surfactants. Microscopic particle tracking velocimetry is employed to measure the velocity of the surfactant-laden interface for different degrees of asymmetry in the surrounding liquid flow.

FINDINGS

We show a direct experimental observation of the circulating flow at the interface under asymmetric shear, which prevents the formation of the typical stagnant cap. Additionally, we reveal that the interface remains mobile regardless of the surfactant concentration. Our results confirm that increasing the degree of asymmetry increases the shear forces and thus the interfacial velocity.

Interfacial and Emulsion Characteristics of Oil-Water Systems in the Presence of Polymeric Lignin Surfactant

It is hypothesized that polymeric lignin surfactants have different affinities for stabilizing oil-water emulsions and that the emulsifying performance of these surfactants is highly affected by their adsorption performance at the oil-water interface. To validate this hypothesis, the adsorption performance of sulfethylated lignin (SEKL) surfactant at different oil-water interfaces was examined by assessing the contact angle, dynamic interfacial tension, and surface loading (Γ). Moreover, the interfacial adsorption kinetics of SEKL was comprehensively assessed in different oil-water systems to reveal the mechanisms of the SEKL adsorption at the interface. Also, the impacts of SEKL concentration and ionic strength on the performance of SEKL as an effective emulsifier for the emulsions were assessed. Furthermore, the droplet size and instability index of the emulsions were systematically correlated with the adsorption performance of SEKL at the interface of oil and water. For the first time, by implementing a modified Ward Toradai diffusion model, two distinct early stages of the adsorption of SEKL at the oil interface were identified. Interestingly, the second stage was the determining stage of adsorption with the diffusion-controlled mechanism when polymers reconfigured at the oil-water interface. Salt screening facilitated the clustering of SEKL upon charge repulsion elimination, which removed the energy barrier in the first stage of adsorption (ΔE_p→0 = 0), but it introduced a steric barrier upon the reconfiguration of polymers at the oil interfaces in the second stage of adsorption. In addition to the kinetics of adsorption, satisfactory correlations were observed between surface pressure (Δγ = γ_∞ - γ₀), surface loading (Γ) of polymers, and contact angle at oil interfaces on one hand and the oil droplet size and emulsion stability on the other hand.

Interfacial Behaviour of Saponin Based Surfactant for Potential Application in Cleaning

Amphiphilic molecules reduce the surface tension of the aqueous medium and are widely used in industrial and domestic applications due to this property. Nowadays, amphiphilic molecules on a natural basis are in great demand to replace synthetic surfactants and thus contribute to the reduction of environmental problems. Approximately 60% of the material based on surfactants end up in seawater, which is dangerous for aquatic life. We are proposing a new type of material, which is a surfactant on a natural basis, biodegradable and an environmentally friendly alternative. Here we focus on tea saponin and study its properties such as surface tension, foaming, skin mildness, cleanability. Tea is naturally acidic, reduces the surface tension to 31.4 mN/m, has a greater foaming power, is ultra-mild to skin, and has excellent cleaning properties. The results show that tea has excellent surface activity, which is why tea can be used as a green substitute for synthetic surfactants.

Scaling Laws in the Dynamics of Collapse of Single Bubbles and 2D Foams

Avalanches of rupturing bubbles play an important role in the dynamics of collapse of macroscopic liquid foams. We hypothesized that the occurrence of cascades of rupturing bubbles in foams depends, at least in part, on the power released during the rupture of a bubble. In this paper, we present results on the dynamics of single bubble bursting obtained by analyzing the pressure wave (sound) emitted by the bubble when collapsing. We found that the released energy varies linearly with bubble size, the frequency of the emitted sound follows a power law with exponent 3/2 (compatible with the Helmholtz resonator model) and the duration of a rupturing event seems to be independent of bubble size. To correlate the dynamics of individual bubbles with the dynamics of foams, we studied the occurrence of avalanches on bubble rafts and found that the phenomenon appears to be a self-organized criticality (SOC) process. The distribution functions for the size of the avalanches are a power law with exponents between 2 and 3, depending on the surfactant concentration. The distribution of times between ruptures also follows a power law with exponents close to 1, independently of the surfactant concentration.

Effects of Hydrophobic Tail Length Variation on Surfactant-Mediated Protein Stabilization

Recently, protein therapeutics have gained significant attention as a result of their enhanced selectivity and diminished side effects compared to traditional small-molecule drugs. Despite their advantages, protein formulations typically suffer from stability issues because of aggregation and denaturation during production and storage, often resulting in detrimental immune responses. Surfactants can be used to stabilize and protect proteins in solution by preventing protein adsorption onto interfaces or by forming protective structures in solution. Herein, a detailed structure-activity relationship study is described, demonstrating the role that hydrophobic tail length plays in surfactant-mediated stabilization of the model therapeutic protein IgG. The FM1000 series, originating from a surfactant scaffold that allows for easy structure modulation, was synthesized by a simple 2-step procedure. First, phenylalanine was acylated with a variety of acyl chlorides of differing lengths to yield n-acyl phenylalanine, which was then coupled to Jeffamine M1000, a polyethylene glycol-based amine, to yield the final surfactant. With this FM1000 series, it was observed that the 14 carbon-long tail surfactant (14FM1000) was optimal at preventing IgG aggregation compared to surfactants with tails that were longer or shorter. Using a combination of dynamic surface tensiometry and quartz crystal microbalance with dissipation, it was hypothesized that 14FM1000 was able to prevent IgG adsorption, and therefore aggregation, by adsorbing appreciably onto surfaces quickly. 14FM1000 had the fastest rate of initial adsorption compared to the other surfactants studied. Short-tail surfactants were slow to and did not adsorb appreciably onto surfaces, allowing IgG adsorption. Although long-tail surfactants were also slow to adsorb, allowing IgG to adsorb and aggregate, their equilibrium adsorption was strong. Additionally, 14FM1000 was the most reversibly adsorbed surfactant, likely improving its ability to desorb and adsorb quickly to transient surfaces, therefore protecting the IgG at each new hydrophobic surface and preventing aggregation. By understanding the structure-activity relationship between surfactants and protein stabilization, we move toward more efficient design of future surfactants increasing the stability and utility of important protein therapeutics.

Electrowetting based local sensing of liquid properties using relaxation dynamics of stretched liquid interface

HYPOTHESIS

Monitoring progression of biochemical processes is required for medical and industrial applications. Spatiotemporal changes in fluid properties can be measured to determine progress of biochemical processes like blood coagulation. Localised electrowetting-on-dielectric (EWOD) actuates a part of droplet contact line, allowing local measurement of fluid properties without inducing bulk fluid motion, which is unlike full droplet oscillation-based techniques.

EXPERIMENTS

In this work, narrow electrodes (50-450 μm) were used to actuate a portion of drop interface. Dynamics of interface actuation and relaxation was used to estimate the local visco-elastic properties of the droplet.

FINDINGS

For local interface motion, theory predicts a generic dispersion relation ω=cqⁿ. In agreement with theory, decay time was found to be proportional to viscosity and inversely proportional to surface tension. Interface displacement remained almost constant for different viscosities, but it decreased with increase in surface tension. Capability to measure spatiotemporal dynamics of chemical process was demonstrated for sugar dissolution in a droplet of water. For full droplet oscillation-based techniques, the induced bulk flows adversely affect the monitored process. Localised EWOD reduces bulk flows in the sample. So, this technique was applied to study blood coagulation dynamics, enlightening the future prospect of developing biomedical sensors.

An Analytical Model for Estimation of the Self-Diffusion Coefficient and Adsorption Kinetics of Surfactants Using Dynamic Interfacial Tension Measurements

We report a new analytical approach to model the transient diffusion and adsorption kinetics of a surfactant at a liquid/liquid interface using dynamic interfacial tension data. The developed model combined with the Frumkin/Langmuir isotherm is used to reproduce the experimental data of dynamic interfacial tension and predict the surfactant diffusion coefficient from a bulk solution to an interface and its adsorption kinetics. Experimental data of the dynamic interfacial tension of toluene and heptol solutions at various concentrations of asphaltenes (a natural surfactant) were employed to examine the ability of the developed model to regenerate the dynamic interfacial tension data. The model enabled us to estimate the apparent diffusion coefficient and adsorption kinetics of asphaltenes at different concentrations. The results showed that the diffusive migration of asphaltene toward an oil/water interface decreases at its higher concentrations and increases at higher concentrations of an aliphatic solvent such as n-heptane. Furthermore, the results reveal that the adsorption rate of asphaltenes at the interface increases at higher concentrations of surfactants and the aliphatic solvent. The developed analytical model finds applications in the prediction of the diffusion and adsorption kinetics of surfactants using dynamic interfacial tension data.

Size dependent droplet interfacial tension and surfactant transport in liquid-liquid systems, with applications in shipboard oily bilgewater emulsions

Many liquid-liquid emulsions, including shipboard oily bilgewater (oil-in-water) and water entrained in diesel fuels (water-in-oil), are chemically stabilized by surfactants and additives and require treatment to destabilize and separate. The interfacial tension (IFT) of surfactant-laden interfaces between the continuous and dispersed phase, as well as the size of the dispersed droplets, are significant factors in determining emulsion stability. In particular, the timescale associated with a dynamic change in IFT due to surfactant transport is indicative of how fast the emulsion will stabilize. In the present work, the dynamic IFT of droplets at micro-scale (∼80 μm) and milli-scale (∼2 mm) is measured with simulated bilgewater with soluble surfactant systems. It is found that the IFT of micro-scale droplets decays faster than that of the milli-scale droplets due to smaller diffusion boundary layer thickness. The change in IFT was also studied for water-soluble surfactants added into the dispersed phase and continuous phase for both milli- and micro-scaled droplets. The results show that the IFT of micro-scale droplets decreases to the equilibrium value faster when the surfactant is in outer phase than in the inner phase, while the IFT does not change significantly for the milli-scale droplets. The observations are explained by the change in diffusion limited to kinetic limited surfactant transport. Finally, the surfactant diffusivities, adsorption and desorption rate constants are calculated using Langmuir's equation. The results presented here provide insight into the fundamental mechanism of the surfactant transport and helps improve mitigation strategies of oil-water emulsions.

A Mathematical Model for the Release, Transport, and Retention of Per- and Polyfluoroalkyl Substances (PFAS) in the Vadose Zone

Per- and Polyfluoroalkyl Substances (PFAS) are emerging contaminants of critical concern. As surfactants, PFAS tend to accumulate at air-water interfaces and may stay in the vadose zone for long times before contaminating groundwater. Yet not well understood, the extent of retention in the vadose zone has critical implications for risk management and remediation strategies. We present the first mathematical model that accounts for surfactant-induced flow and solid-phase and air-water interfacial adsorption. We apply the model to simulate PFOS (a PFAS compound of primary concern) transport in the vadose zone at a model fire-training area site impacted by Aqueous Film-Forming Foam (AFFF). Air-water interfacial adsorption is shown to have a significant impact-amplified by the low water content due to gravity drainage-total retardation factors range from 233 to 1355 for the sand and 146 to 792 for the soil used in the study. The simulations illustrate it can take several decades or longer for PFOS to reach groundwater. Counterintuitively, the lower water content in the sand-due to stronger drainage and weaker capillary retention-leads to retardation factors greater than for the soil. Also, most PFOS is adsorbed at air-water interfaces with only 1-2% in the aqueous phase. The implications include 1) fine-texture materials could have lower retardation factors than sand due to higher retained water content, 2) soil PFAS concentrations are likely to be orders of magnitude higher than those in groundwater at source zones. Both implications are consistent with recent field observations at hundreds of AFFF-impacted sites.

Adsorption Kinetics of a Cationic Surfactant Bearing a Two-Charged Head at the Air-Water Interface

We studied the dynamics of adsorption at the air-water interface of a cationic surfactant bearing two charges, Gemini 12-2-12, at concentrations below and above the critical micelle concentration (cmc). We used maximum bubble pressure and Wilhelmy plate techniques in order to access all time scales in the adsorption process. We found that the adsorption dynamics are controlled by diffusion at the initial stage of the adsorption process (milliseconds) and it is kinetically controlled by an electrostatic barrier (minute) approaching the equilibrium surfactant surface concentration. Between these two extremes, we found several relaxation phenomena, all following exponential decays with characteristic times spanning from one to hundreds of seconds. By means of time-resolved surface potential measurements, we show that these processes involve charge redistribution within the interfacial region. The surface tension data are analyzed and interpreted in the framework of the free energy approach.

Simulating PFAS transport influenced by rate-limited multi-process retention

The transport of per- and poly-fluoroalkyl substances (PFAS) in the vadose zone is complicated by the fact that multiple mass-transfer processes can contribute to their retention and retardation. In addition, PFAS transport at some sites can be further complicated by the presence of organic immiscible liquids (OIL). Mass-transfer processes are inherently rate limited and, therefore, have the potential to cause nonideal transport of PFAS. The objectives of this research were to: (1) develop a solute-transport model that explicitly accounts for multiple retention processes, including adsorption at air-water and OIL-water interfaces, adsorption by the solid phase, and diffusive mass-transfer between advective and nonadvective domains, and (2) apply the model to measured transport data to delineate which processes are rate limited and contribute to observed nonideal transport. Breakthrough curves for transport of two PFAS and one hydrocarbon surfactant in sand obtained from prior miscible-displacement experiments exhibited nonideal transport. The multiprocess model effectively simulated the measured transport data. The results of the analyses indicate that adsorption at the air-water and OIL-water interface can generally be treated as effectively instantaneous for transport in porous media. The rate limitations associated with solid-phase adsorption and diffusive mass transfer between advective and nonadvective domains were of greater significance.

Protein Adsorption at the Air-Water Interface by a Charge Sensing Interferometric Technique

Protein uptake at the interface of a millimeter-sized air bubble in water is investigated by a recently developed differential interferometric technique. The technique allows the study of capillary waves with amplitudes around 10^-9 m, excited at the surface of the bubble by an electric field of intensity on the order of 10 V/cm. When one studies the resonant modes of the bubble (radial and shape modes), it is possible to assess variations of interfacial properties and, in particular, of the net surface charge as a function of bulk protein concentration. Sensing the interfacial charge, the technique enables us to follow the absorption process in conditions of low concentrations, not easily assessable by other methods. We focus on bovine serum albumin (BSA) and lysozyme as representatives of typical globular proteins. To provide comprehensive insight into the novelty of the technique, we also investigated the equilibrium adsorption of sodium dodecyl sulfate (SDS) ionic surfactant for bulk concentrations at hundreds of times lower than the Critical Micelle Concentration (CMC). Results unveil how the absorption of charged molecules affects the amplitudes of the bubble resonant modes even before affecting the frequencies in a transition-like fashion. Different adsorption models are proposed and developed. They are validated against the experimental findings by comparing frequency and amplitude data. By measuring the charging rate of the bubble interface, we have followed the absorption kinetics of BSA and lysozyme recognizing a slow, energy barrier limited phenomena with characteristic times in agreement with data in the literature. The evaluation of the surface excess concentration (Γ) of BSA and SDS at equilibrium is obtained by monitoring charge uptake. At the investigated low bulk concentrations, reliable comparisons with literature data from equilibrium surface tension isotherm models are reported.

Colloids at Fluid Interfaces

Over the last two decades, understanding of the attachment of colloids to fluid interfaces has attracted the interest of researchers from different fields. This is explained by considering the ubiquity of colloidal and interfacial systems in nature and technology. However, to date, the control and tuning of the assembly of colloids at fluid interfaces remain a challenge. This review discusses some of the most fundamental aspects governing the organization of colloidal objects at fluid interfaces, paying special attention to spherical particles. This requires a description of different physicochemical aspects, from the driving force involved in the assembly to its thermodynamic description, and from the interactions involved in the assembly to the dynamics and rheological behavior of particle-laden interfaces.
