Abstract
The structural and functional properties of whey-quercetin and whey hydrolysate-quercetin conjugates synthesized using alkaline and free radical-mediated methods (AM and FRM) coupled with sonication were studied. FTIR showed new peaks at 3000-3500 cm-1 (N-H stretching regions) and the 1000-1100 cm-1 region with the conjugates. Conjugation increased the random coils and α-helix content while decreasing the β-sheets and turns. It also increased the particle size and surface hydrophobicity which was significantly (p < 0.05) higher in AM than FRM conjugates. AM conjugates had higher radical scavenging activity but lower quercetin content than FRM conjugates. Overall, the functional properties of whey-quercetin conjugates were better than whey hydrolysate-quercetin conjugates. However, hydrolysate conjugates had significantly higher denaturation temperatures irrespective of the method of production. Sonication improved the radical scavenging activity and quercetin content of FRM conjugates while it decreased both for AM conjugates. This study suggested that whey-quercetin conjugates generally had better quality than whey hydrolysate conjugates and sonication tended to further improve these properties. This study highlights the potential for using camel whey or whey hydrolysate-quercetin conjugates to enhance the functional properties of food products in the food industry.

Abstract
Fenugreek (Trigonella foenum-graecum L.) is a multi-use annual forage legume crop that is widely used in food products such as syrup, bitter run, curries, stew, and flavoring. In the present study, morphological traits, proximate composition (moisture, crude fibre, protein, fat, carbohydrate, and energy value), total phenol and total flavonoid contents, and antioxidant properties of 31 Iranian agro-ecotypic populations of the plant was investigated. Among the leaf and seed samples studied, the seeds exhibited the high ash (3.94 ± 0.12%), fat (7.94 ± 0.78%), crude fibre (10.3 ± 0.25%), protein (35.41 ± 1.86%), and carbohydrate (50.5 ± 1.90%) content. In general, more energy value (kcal/100 g) was also obtained from the seed (318.88 ± 1.78-350.44 ± 1.27) than leaf samples (45.50 ± 1.32-89.28 ± 0.85). Antioxidant activity and power of leaf samples were ranged from 67.95 ± 0.05‒157.52 ± 0.20 μg/ml and from 45.17 ± 0.01‒361.92 ± 0.78 μmol Fe+2 per g dry weigh, respectively. Positive linear correlations between antioxidant activity and total phenolic compounds were observed. A significant correlation between proximate composition (dependent variable) and some morphological features (independent variable) was observed. Considerable variability in the studied traits among the plant samples can be interestingly used in further food and production systems.

Abstract
Fenugreek seeds (Trigonella foenum‐graecum L.), one kind of traditional Chinese medicine, are reported to be of great potential as a new alternative in terms of their bioactive components. In our present study, an ultrasonic‐assisted method was applied in the extraction of antioxidative components from fenugreek seeds. Four factors: ethanol concentration, liquid–solid ratio, sonication time, and sonication power were selected and multiple responses were studied using the response surface methodology (RSM). The effects of factors along with the correlation between all responses (flavonoids content, 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) assay, OH− assay) were studied. The regression model indicated that all four factors are of significant effect on all responses. The model predicted that the ethanol concentration of 72%, solvent‐to‐material ratio of 35 ml/g, ultrasonic time of 41 min, and 500 W of power would provide a flavonoid yield of 9.10 mg/g, DPPH clearance of 80.33%, and OH− clearance of 24.28%, respectively. The confirmation test showed the closeness of the predicted results with those of experimental values. And AB‐8 resin was successfully used to purify the fenuellus hulusi seed extract, and the flavonoid concentration of 78.14% was obtained. Six flavonoids (Swertisin, Puerarin apioside, Jasminoside B, Astragalin, Apigenin‐7‐O‐beta‐D‐glucoside, and Apiin) were successfully identified by the liquid chromatography–mass spectrometry (LC–MS) analysis.

Abstract
Broiler chickens are frequently infected with Escherichia coli (E. coli) bacteria, which often leads to the emergence of many diseases and high economic losses. Hence, the current study was conducted to assess the relative efficacy of dietary rosemary and fenugreek, under E. coli infection in broilers and their ability to replace antimicrobials without any loss of productivity or negative influence on broiler health, via evaluation of growth performance, biochemical indices, immune response and histo-morphological changes. Eighty Cobb broilers were allotted to four equal groups (n = 20 chicks/group): control non-infected (CN), control infected (CI), rosemary infected (RI) and fenugreek infected (FI) groups. The RI and FI groups revealed a significant elevation in their body weight and body weight gain compared with the CI group. However, both groups showed a significant decline in serum aspartate and alanine aminotransferase activities, as well as uric acid and creatinine levels. A significant decrease in total antioxidant capacity, catalase and superoxide dismutase activities was noted among CI chicks. Moreover, distinctly higher activities were evident in both RI and FI groups. Assessment of immunomodulatory markers showed a significant increase in immunoglobulin G along with a significant decline in interleukin-6 level in both RI and FI groups, with the lowest IL-6 value within FI group. Histopathological evaluations focused on the deleterious effect associated with E. coli infection of broilers' liver, kidney, intestine, spleen, bursa of Fabricius and thymus. Partial histological improvement was noticed among RI group, and nearly normal tissues were recorded in FI group. Overall, the obtained findings suggest the ability of fenugreek to mitigate the adverse effects of E. coli infection on broiler performance and tissue profiles, by improving the general health status of the broiler chickens.

Abstract
From the recent market trend, there is a huge demand for the bioactive compounds from various food matrices that could be capable enough to combat the emerging health effects in day-to-day life. Fenugreek is a well-known spice from ancient times for its medicinal and health benefits. In the present study, two methods of green extraction microwave (MAE) and ultrasound (UAE) assisted were studied in regard of extraction of fenugreek diosgenin. In this study, solvent type (acetone, ethanol, hexane and petroleum ether), solvent concentration (40, 60, 80 and 100%) and treatment time (1.5, 3.0, 4.5 and 6.0 min and 30, 40, 50 and 60 min for MAE and UAE method respectively) was varied to observe the effect of these parameters over extract yield and diosgenin content. The results of this study revealed that treatment time, type of solvent and its concentration and method adopted for extraction of diosgenin has significant effect. In relation with better yield extract and diosgenin content, the yield of fenugreek seed extract was 7.83% with MAE and 21.48% with UAE of fenugreek seed powder at 80% ethanol concentration at 6 and 60 min respectively. The content of diosgenin was observed in fenugreek seed powder extract was 35.50 mg/100 g in MAE and 40.37 mg/100 g in UAE with 80% ethanol concentration at 6 and 60 min respectively. The overall range of yield of fenugreek extract was varied from 1.04% to 32.48% and diosgenin content was 15.82 mg/100 g to 40.37 mg/100 g of fenugreek seed powder including both extraction methods. This study revealed that UAE would impose better ways for preparing fenugreek extract and observing diosgenin content from fenugreek seeds.

Abstract
Fenugreek seeds have widespread relations with Ayurveda, Unani, and Arabic medicine. The seeds were useful for the treatment and prevention of different ailments. Fenugreek (Trigonella foenum-graecum) or methi is from the Leguminosae family and are primarily known for its anti-diabetic and hypocholesterolemic activities. The germinated fenugreek seeds were used in the treatment of E.coli infection in Germany and France. The important phytoconstituents responsible for such medicinal applications are saponins, polyunsaturated fatty acids, galactomannans, trigonelline, and 4-hydroxy isoleucine. Flavonoids, apigenin 6,8-di-C-glucoside, apigenin-6-C-glucosyl-8-C-galactoside, 6-Cgalactosyl- 8-C-arabinoside are the chief ingredients of fenugreek seeds; responsible for reducing blood glucose while given to diabetic rats, whereas important flavones are epigenin, luteolin and vitexin. The other major bioactive components in fenugreek seeds are polyphenols like rhaponticin and isovitexin. Fenugreek seeds contain phosphorus and are categorized into different classes such as inorganic phosphorus, phospholipids, phytates, phosphor-proteins, and nucleic acid. Germinated seeds profusely filled with amino acids with amino acids, proteins, ascorbic acid, sugars. Further, this review shares information about the recent therapeutic intervention not covered earlier; on in vivo and in vitro and some clinical applications against certain interesting ailments other than older applications. This review includes certain nano delivery systems of Fenugreek seeds and their medicinal application.
