Abstract
Bacteriocins is the name given to products of the secondary metabolism of many bacterial genera that must display antimicrobial activity. Although there are several bacteriocins described today, it has not been possible to reach a consensus on the method of classification for these biomolecules. In addition, many of them are not yet authorized for therapeutic use against multi-drug-resistant microorganisms due to possible toxic effects. However, recent research has achieved considerable progress in the understanding, classification, and elucidation of their mechanisms of action against microorganisms, which are of medical and biotechnological interest. Therefore, in more current times, protocols are already being conducted for their optimal use, in the hopes of solving multiple health and food conservation problems. This review aims to synthetize the information available nowadays regarding bacteriocins, and their classification, while also providing an insight into the future possibilities of their usage for both the pharmaceutical, food, and biotechnological industry.

Abstract
The goal of this inquiry was to analyze the impact of incorporating Enterococcus faecium and Streptococcus thermophilus using a novel premix-spray method on the following aspects: growth rate, digestive enzyme activity, antioxidant levels, gut microbiome composition, and the morphological characteristics of the duodenum, jejunum, and ileum in broiler chickens. Furthermore, this study explored the potential benefits of duo strains of probiotics (DSP) in reducing flatulence, regulating stool microbial population, and improving diarrhea symptoms. A total of 360 one-day-old mixed-sex Plymouth Rock chicks (IW: 51 ± 33 g) were randomly divided into two treatment groups. Each treatment group was further divided into 9 replicated cages, with 20 chicks housed in each cage. The control group (CG) received a basal diet composed of a soy-corn mixture, whereas the experimental group was provided with DSP (CON + 0.5 % probiotic). The results showed that the increase in the body weight of broilers at the end of the fourth week in the control group and the treatment group was 1.576 versus 1.847 kg, respectively. Throughout the 30-day trial period, the DSP diet significantly improved the specific growth rate (SGR), survival rate (SR), and body weight gain (BWG) while decreasing the feed conversion ratio (FCR) (P < 0.05). The DSP diet also enhanced the Enzymatic digestion (protease, amylase, lipase, and trypsin) and antioxidant potential (SOD, MDA, and catalase) of the broilers compared to those in the CG. The results revealed significant enhancements in the tissue morphology of the duodenum and jejunum following the combined treatment for a duration of 4 weeks. The DSP treatments significantly increased microvillus height in the duodenum and jejunum but had no notable effects in the ileum. Incorporating 0.5 % DSP in poultry feed improved the relative abundance of Ruminococcaceae and Faecalibacteriumin, leading to better management of diarrhea and reduced presence of E. coli compared to the control diet. Additionally, including probiotics in the basal diet reduced H2S, CO2, NH3, and CH4 levels. Overall, the study suggests that the new spray-drying approach with these strains has potential for supplementing probiotics in poultry feed processing, and including DSP in broiler chicken diets has beneficial effects.

Abstract
European sea bass production has increased in recent decades. This increase is associated with an annually rising demand for sea bass, which encourages the aquaculture industries to increase their production to meet that demand. However, this intensification has repercussions on the animals, causing stress that is usually accompanied by dysbiosis, low feed-conversion rates, and immunodepression, among other factors. Therefore, the appearance of pathogenic diseases is common in these industries after immunodepression. Seeking to enhance animal welfare, researchers have focused on alternative approaches such as probiotic application. The use of probiotics in European sea bass production is presented as an ecological, safe, and viable alternative in addition to enhancing different host parameters such as growth performance, feed utilization, immunity, disease resistance, and fish survival against different pathogens through inclusion in fish diets through vectors and/or in water columns. Accordingly, the aim of this review is to present recent research findings on the application of probiotics in European sea bass aquaculture and their effect on growth performance, microbial diversity, enzyme production, immunity, disease resistance, and survival in order to help future research.

Abstract
This review aims to bring a more general view of the technological and biological challenges regarding production and use of probiotic bacteria in promoting human health. After a brief description of the current concepts, the challenges for the production at an industrial level are presented from the physiology of the central metabolism to the ability to face the main forms of stress in the industrial process. Once produced, these cells are processed to be commercialized in suspension or dried forms or added to food matrices. At this stage, the maintenance of cell viability and vitality is of paramount for the quality of the product. Powder products requires the development of strategies that ensure the integrity of components and cellular functions that allow complete recovery of cells at the time of consumption. Finally, once consumed, probiotic cells must face a very powerful set of physicochemical mechanisms within the body, which include enzymes, antibacterial molecules and sudden changes in pH. Understanding the action of these agents and the induction of cellular tolerance mechanisms is fundamental for the selection of increasingly efficient strains in order to survive from production to colonization of the intestinal tract and to promote the desired health benefits.

Colonization of Lactobacillus rhamnosus GG in Cirrhinus molitorella (Mud Carp) Fingerling: Evidence for Improving Disease Resistance and Growth Performance. Appl Microbiol 2022. Abstract
The use of probiotic bacteria can not only enhance the nutritional utilization of fish feeds to produce more biomass but can also provide a practically “safer” alternative to the fish farming industry to reduce the abuse of antibiotics and drugs. This study investigated the possibility of colonizing Lactobacillus rhamnosus strain GG (LGG) to the intestine of Cirrhinus molitorella (mud carp) fingerling. Colonization of LGG was observed in gut tissue after 14 days of administration with a diet supplemented with 1 × 108 CFU/mL LGG. Moreover, growth performance parameters of the LGG-supplemented diet group, including relative weight gain, feed conversion ratio and feed efficiency, were found about two-fold higher than the control group after 60 days. In addition, fish fed with an LGG-supplemented diet for 60 days showed substantial resistance against the infection of pathogenic bacterial Aeromonas hydrophila, with a relative survival rate of up to 57% compared to the control group. In summary, the results indicated that LGG as dietary supplement for mud carp fingerling can enhance nutrition utilization and better protect fish against the infection of Aeromonas hydrophila. The results provide an insight to the fish farming industry, encouraging a reduction in the use of antibiotics and drugs and the production of “safer” mud carp for the market at a manageable cost.

Abstract
Saccharomyces boulardii as the probiotic yeast was widely used in the pharmaceutical, feed and food industries. The influence of skim milk, gelatin, and carbohydrates on the heat resistance of S. boulardii is explored in the article. Response surface methodology was effectively applied to optimize the thermoprotectant composition for S. boulardii during spray-drying. The accelerated test is applied to evaluate its the subsequent storage stability. The results show that the thermoprotectants composition was comprehensively optimized such as: 15.12% skim milk, 1.81% gelatin, and 9.73% trehalose. The highest viability was 17.77%, which was basically the same as the predicted value of 18.21%. The inactivation rate constant of spray-dried powder was k-18 = 1.04 × 10-5 h-1, the quantity of viable cells stored at this temperature for 1 and 10 years was 8.25 × 108 CFU/g and 1.25 × 108 CFU/g, separately. This work provides a thermoprotectants formula for the S. boulardii during the spray drying process.

Abstract
The yeast Yarrowia lipolytica has been industrially adopted for docosahexaenoic acid and eicosapentaenoic acid production under good manufacturing practices over 2 decades. In recent years, it has claimed attention for novel biotechnological applications, such as a functional feed additive for animals. Studies have demonstrated that this yeast is safe and has probiotic and nutritional properties for mammals, birds, fish, crustaceans, and molluscs. Animals fed Y. lipolytica enhanced productive and immune parameters, as well as modulated microbiome, fatty acid composition, and biochemical profiles. Additionally, some Y. lipolytica-derived compounds have improved productive performance, immune status, and disease resistance in animals. Therefore, the aim of this review is to identify and discuss research advances on the potential use of this yeast for animals of economic interest. Challenges, opportunities, and trends were identified and envisioned in the near future for this industrially produced yeast. KEY POINTS: • Yarrowia lipolytica has probiotic and nutritional effects in animals. • Lipase2, EPA, and β-glucan from Y. lipolytica have health benefits for animals. • Y. lipolytica is envisioned in terrestrial and aquatic animal production systems.
