Abstract
The concerns of food safety are rising in developing countries such as South Africa as a result of heavy metal contamination of culinary herbs and spices. Spices and herbs are used for therapeutic purposes as well as flavoring and coloring food. Heavy metals in spices represent significant health risks due to their high toxicity in high quantities. A total of 20 spices samples were purchased from different registered shops, for heavy metals analysis. The samples were prepared, digested, and analyzed with an inductively coupled plasma mass spectrometer (ICP-MS). To ensure the method's accuracy, Polish Certified Reference Mixed Polish Herbs (INCT-MPH-2) from the Food and Drugs Control Center, Poland, was analyzed. The concentrations of Fe (32.22 ± 1.22-131.1 ± 3.26 mg/kg), As (ND to 0.12 ± 0.04 mg/kg), Cr (0.08 ± 0.01-3.2 ± 0.09 mg/kg), Pb (N.D - 0.21 ± 0.02 mg/kg) and Cd (ND to 0.14 ± 0.08 mg/kg) mg/kg were measured. The results revealed that the concentrations of Cr in all spice samples tested were much higher than the Maximum permissible limit (MPL) values. All spices in this study had THQ and HI values less than one, indicating that consumers will experience no potential health hazards from consuming specific metals through spices. However, continual scrutiny should be maintained.

Abstract
Tea is the most frequently consumed beverage worldwide and is obtained from the leaves Camellia sinensis. The traditional way of tea consumption through brewing is gradually being replaced by the consumption of bottled and hand-shaken tea. Despite the different ways of tea consumption, trace elements accumulation and contamination of tea leaves have caused concerns. However, limited studies have reported trace element concentrations in different types of tea in bottled or hand-shaken tea and their health risks. This study aimed to determine the level of trace elements (V, Cr, Co, As, Cd, Pb, Mn, and Zn) in green tea, black tea, and Oolong tea in two varieties of products (bottled and hand-shaken tea). The health risks associated with tea consumption in various age subgroups among Taiwan's general population were also estimated. A Monte Carlo simulation was applied to estimate the distribution of daily trace elements intake through bottled and hand-shaken tea consumption. As to the non-carcinogenic risks, the Monte Carlo simulation showed that hand-shaken green tea had a higher percentage of hazard index (HI) >1 (1.08%~6.05%) among all age groups. As to carcinogenic risks, the Monte Carlo simulation showed that the risks of As exposure from bottled Oolong tea and hand-shaken black, green, and Oolong teas in the 90th percentile in >18 to ≤65 and >65-year-old groups were higher than 10-6. The current study findings provided some information about trace elements of both bottled and hand-shaken tea and human health risks in the general population of Taiwan.

Abstract
Over the last decade, the consumption of tea and herbal tea has gained more and more popularity across the globe, but the potential presence of chemical contaminants (e.g. pesticides, trace elements, synthetic drugs) may raise health concerns. This study analysed selected teas available in Belgian retail stores and performed a risk assessment for these samples. No chemical adulteration could be detected in dry tea material. More than 38% of the dry leaves samples contained at least one pesticide exceeding the maximal residue level (MRL) set by the EU. However, further risk assessment, based on the values of pesticide residues and the toxic trace elements encountered in the brew, demonstrate that the consumption of these teas will not give rise to health concerns. Nonetheless, attention should be given to the leaching potential of nickel from teas and the presence of arsenic in brews from algae containing teas.

Abstract
The objective of this study was to determine uranium (U) and other metal(loid) concentrations (As, Cd, Cs, Pb, Mo, Se, Th, and V) in eight species of plants that are commonly used for medicinal purposes on Diné (Navajo) lands in northwestern New Mexico. The study setting was a prime target for U mining, where more than 500 unreclaimed abandoned U mines and structures remain. The plants were located within 3.2 km of abandoned U mines and structures. Plant biota samples (N = 32) and corresponding soil sources were collected. The samples were analyzed using Inductively Coupled Plasma−Mass Spectrometry. In general, the study findings showed that metal(loid)s were concentrated greatest in soil > root > aboveground plant parts, respectively. Several medicinal plant samples were found to exceed the World Health Organization Raw Medicinal Plant Permissible Level for As and Cd; however, using the calculated human intake data, Reference Dietary Intakes, Recommended Dietary Allowances, and tolerable Upper Limits, the levels were not exceeded for those with established food intake or ingestion guidelines. There does not appear to be a dietary food rise of metal(loid) ingestion based solely on the eight medicinal plants examined. Food intake recommendations informed by research are needed for those who may be more sensitive to metal(loid) exposure. Further research is needed to identify research gaps and continued surveillance and monitoring are recommended for mining-impacted communities.

Abstract
Although tea can be beneficial for our health, consuming excess trace elements in tea can be harmful. In this study, the carcinogenic and noncarcinogenic health risk for trace elements in tea influenced by the country of origin, tea type, and infusion process was assessed. Tea (Camellia sinensis) purchased from China, India, and the USA, including black and green tea, were analyzed for essential micronutrients (Cu, Se, and Zn) and nonessential trace elements (Ag, As, Ba, Cd, Cr, and Pb) in leaves and three types of infusions. The results showed that country of origin, tea type, and infusion process had a significant influence on the trace element contents in tea leaves and infusions, also on health risk. Country of origin had a significant influence on Ba, Cr, Pb, and Zn contents in tea leaves and on As, Ba, Cd, Cr, Pb, and Zn contents in tea infusions. Black tea had significantly higher (p < 0.05) Cr and Cu content in tea leaves than green tea, but only Cr content was significantly higher (p < 0.05) than that of green tea in tea infusion. The trace element contents were the highest in the first infusion and decreased as the number of infusion steps increased. The results showed that the consumption of tea infusion was not likely to cause noncarcinogenic risk. However, the carcinogenic risk for As was of concern. Our results indicate that avoiding drinking the first infusion can help to reduce both carcinogenic and noncarcinogenic health risks for trace elements.

Abstract
The presented study was aimed at the determination of the level of contamination with heavy metals (Cd, Pb, As, and Hg) in 240 samples of plant materials, i.e., herbal raw materials, spices, tea, and coffee. Moreover, a probabilistic risk assessment (noncarcinogenic and carcinogenic risks) was estimated by models including target hazard quotient (THQ) and cancer risk (CR). The samples were subjected to microwave mineralisation with the use of HNO3 (65%), while the determination of the content of the elements was performed with the use of inductively coupled plasma mass spectrometer (ICP–MS) and a mercury analyser. The element which was characterised by the highest level of accumulation in the analysed samples was lead (from 0.010 to 5.680 mg/kg). Among the heavy metals under analysis, the lowest concentration was noted in the case of mercury (from 0.005 to 0.030 mg/kg). A notably higher level of contamination with heavy metals was noted in the analysed samples of herbs and spices (0.005–5.680 mg/kg), compared to samples of tea and coffee (0.005–0.791 mg/kg). According to the guidelines of the World Health Organisation (WHO) concerning the limits of contamination of samples of herbal raw materials with heavy metals, lead levels exceeding the limits were only noted in 24 samples of herbs (18%). In all of the analysed samples of spices, tea, and coffee, no instances of exceeded limits were noted for any of the analysed heavy metals. The values of TTHQmax (in relation to the consumption of the analysed products) were as follows: up to 4.23 × 10−2 for spices, up to 2.51 × 10−1 for herbs, up to 4.03 × 10−2 for China tea, and up to 1.25 × 10−1 for roasted coffee beans. As the value of THQ ≤1, there is no probability of the appearance of undesirable effects related to the consumption of the analysed group of raw materials and products of plant origin. The CR value for As (max. value) was 1.29 × 10−5, which is lower than the maximum acceptable level of 1 × 10−4 suggested by United States Environmental Protection Agency (USEPA).

Abstract
Bioaccessibility of trace elements (Li, Be, Ti, Ga, Cu, Ag, Hg, Cd, Cs, Pt, Tl, Pb, As, Cr, Co, Ni, V, Se, Sn and Sb) and major elements (Rb, Ba, Al, Fe, Zn, Si, Ca, Mg, Mn, Mo, Sr, P and K) in tea infusions has been assessed using an in vitro dialyzability protocol. Gastric simulation (using pepsin solution) and intestinal simulation (using pancreatin and bile salts) were used to perform the in vitro digestion. ICP-MS, ICP-OES and FAES were used for elements determination in digested tea leaves, their infusions and the dialyzate fractions from tea infusions. Microwaves assisted acid digestion was used for the total element determination in tea leaves, while tea infusions were prepared by brewing tea leaves for 5 min in boiling water. The LODs for elements determined in tea leaves were in the range of 0.11-656 ng g-1 and 0.02-145.6 μg g-1 for trace and major elements, respectively. For elements' determination in tea infusions, the LODs were ranged between 0.23 and 399.9 ng L-1 for trace elements and 0.2-1248 μg L-1 for major elements. The LODs for the elements in the dialyzable fraction varied from 0.018 to 142 μg L-1. The accuracy of the total element determination was evaluated using certified reference materials (Tea Leaves INCT-TL-1 and Rye Grass). The analytical recoveries were also assessed for analyzed elements in digested tea leaves (95-114%) and their infusions (92-115%), showing good recoveries. Among the studied elements, K was the most abundant element in tea leaves and tea infusions in almost all samples, followed by Ca, Mg, and P. Zn, Cs, and K showed the highest dialyzability percentages up to 84%, 76%, and 54%, respectively, followed by Si and Ca and K that show moderate to high dialyzability percentages. The accuracy of the dialysis process was evaluated using a mass-balance study.

Abstract
Tea (Camellia sinensis L.) is the most popular beverage in the world after water. Due to acidophilic nature of tea plant, it has inherent tendency to uptake metals/metalloids including the toxic ones from the soil which is of great concern worldwide. In this study, level of chromium (Cr) and arsenic (As) were assessed in four hundred ninety-seven (497) black tea samples collected from six tea growing regions of Assam and North Bengal, India. The average concentration of Cr and As in the tested black tea samples was 10.33 and 0.11 μg g-1, respectively. Since tea is consumed as a beverage, transfer of Cr and As from black tea to its hot water extract (also known as tea infusion) was also accessed. The amount of Cr and As determined in the tea infusion was much less (< 0.20 to 1.38 μg g-1 for Cr and < 3.60 to 34.79 μg kg-1 for As) than those in the black teas with the transfer rate up to 5.96% and 8.53%, respectively. The present study showed that values of hazard quotient were well below one suggesting that intake of Cr and As from consumption of five cups of tea equivalent to 10 g black tea would not impose any health hazard.

Abstract
This study reports on the harvesting, ingestion, and contamination of American Indian tea Thelesperma megapotamicum grown on the Navajo Reservation in New Mexico. Uranium (U) and co-metal(loid)s (As, Cd, Cs, Mo, Pb, Se, Th, and V) have contaminated local soil and plants. Tea plants were gathered for analysis near U mining impacted areas. The study collected samples of wild tea plants (n = 14), roots (n = 14), and soil (n = 12) that were analyzed with inductively coupled plasma mass spectrometry. Tea harvesting activities, behavior, and ingestion information were collected via questionnaires. Harvesting took place in community fields and near roadways. Results indicate edible foliage concentration levels for Cd exceeded the World Health Organization (WHO) raw medicinal plant permissible level guidelines. Tea samples collected near high traffic areas had significantly greater Cd and Mo concentrations than those collected near low traffic areas (p < 0.001). Tea sample metal(loid) concentration levels ranged from 0.019-7.916 mg/kg. When compared to established food guidelines including the WHO provisional tolerable weekly intake (PTWI), reference dietary intake, recommended dietary allowance, and the tolerable upper limit (UL), Cd exceeded the WHO guidelines but none exceeded the PTWI nor the UL. These findings warrant improved standardization and establishment of universal guidelines for metal(loid) intake in food.

Abstract
More than 500 unreclaimed mines and associated waste sites exist on the Navajo Nation reservation as a result of uranium (U) mining from the 1940s through the 1980s. For this study, the impact of U-mine waste on a common, locally grown crop food was examined. The goal of this site-specific study was to determine metal(loid) concentration levels of arsenic (As), cadmium (Cd), cesium (Cs), molybdenum (Mo), lead (Pb), thorium (Th), U, vanadium (V) and selenium (Se) in Cucurbita pepo Linnaeus (squash), irrigation water, and soil using inductively coupled plasma-mass spectrometry. The concentrations of metal(loid)s were greatest in roots > leaves > edible fruit (p < 0.05), respectively. There were significant differences between metal(loid)s in squash crop plot usage (<5 years versus >30 years) for V (p = 0.001), As (p < 0.001), U (p = 0.002), Cs (p = 0.012), Th (p = 0.040), Mo (p = 0.047), and Cd (p = 0.042). Lead and Cd crop irrigation water concentrations exceeded the United States Environmental Protection Agency (USEPA) Maximum Contaminant Levels for drinking water for those metals. Edible squash concentration levels were 0.116 mg/kg of As, 0.248 mg/kg of Pb, 0.020 mg/kg of Cd, and 0.006 mg/kg of U. Calculated human ingestion of edible squash did not exceed Provisional Tolerable Weekly Intake or Tolerable Upper Limit levels from intake based solely on squash consumption. There does not appear to be a food-ingestion risk from metal(loid)s solely from consumption of squash. Safer access and emphasis on consuming regulated water was highlighted. Food intake recommendations were provided. Continued monitoring, surveillance, and further research are recommended.

Abstract
In this study twelve trace elements were investigated in herbal tea commercialized in Brazil. Boldo, Chamomile, Mate and Peppermint tea samples were acquired in Brazil local markets and both herbs and their infusions were evaluated. Trace elements were classified in two groups: poorly (Al, As, Ba, Cd, Cr, Fe, Pb and Se) and moderately (Cu, Mn, Ni and Zn) extractable. This patterned showed that even levels above threshold established by Brazilian and MERCOSUR regulations were observed in herbal tea (Cd and Pb in 89% and 78% of mate and peppermint tea samples, respectively), their infusions did not presented toxic levels. The estimative of exposure and dietary intake revealed important values for a daily consumption of a single cup of herbal infusion and an unique composition was also verified for herbal tea samples: although age and origin was unavailable, multivariate analysis classified the samples in four distinct groups.

Abstract
Arsenic in traditional Chinese medicines (TCMs) has caused public concerns about its health risk in recent years due to the high toxicity of arsenic and widespread use of those medicines throughout the world. However, in previous studies the arsenic toxicity was usually overestimated by considering the total arsenic concentration only. This work investigated the total concentration, speciation and bioaccessibility of arsenic in 84 commonly used traditional Chinese patent medicines (CPMs) and Chinese herbal medicines (CHMs) to evaluate arsenic's potential health risks to human. Arsenic was found in all the CPMs and 88% of CHMs at concentrations ranging from 0.033 to 91,000mgkg-1 and 0.012 to 6.6mgkg-1, respectively. The bioaccessibility of arsenic varied significantly and was in the range of 0.21%-90% in the CPMs and 15%-96% in the CHMs, with inorganic arsenic as the predominant species. The average daily intake dose (ADD) and hazard quotient (HQ) of arsenic in most of medicines were within the safe limits, while in certain medicines, they exceeded the safe threshold level. These excesses remind us that the potential health risk by consumption of several medicines may not be negligible and more control and monitoring of arsenic in medicines should be carried out.

Abstract
Teas and raw materials used as ingredients of herbal and fruit infusions (HFI) were analysed by means of ICP-MS for their content of aluminium, arsenic, cadmium, copper, lead and mercury in the dry product and in the infusion. Samples of tea (Camellia sinensis L. Kuntze) were selected to include different origins, types (black, green), leaf grades (whole leaf, broken, fannings, dust) and manufacturing techniques (orthodox, "crush, tear, curl"). The selected HFI raw materials (chamomile, elderberries, fennel, hibiscus, mate, peppermint, rooibos and rose hip) cover the most important matrices (flower, fruit, seed, herb, leaf) and reflect the economic significance of these HFI materials in trade. Infusions were prepared under standardised conditions representing typical household brewing. Transition rates for the investigated metals vary significantly but are mostly well below 100%. We propose default transition rates for metals to avoid overestimation of exposure levels from tea/HFI consumption.

Abstract
High arsenic exposures, prevalent through dietary and non-dietary sources in Bangladesh, present a major health risk to the public. A quantitative human health risk assessment is described as a result of arsenic exposure through food and water intake, tea intake, accidental soil ingestion, and chewing of betel quid, while people meet their desirable dietary intake requirements throughout their lifetime. In evaluating the contribution of each intake pathway to average daily arsenic intake, the results show that food and water intake combined, makes up approximately 98% of the daily arsenic intake with the balance contributed to by intake pathways such as tea consumption, soil ingestion, and quid consumption. Under an exposure scenario where arsenic concentration in water is at the WHO guideline (0.01 mg/L), food intake is the major arsenic intake pathway ranging from 67% to 80% of the average daily arsenic intake. However, the contribution from food drops to a range of 29% to 45% for an exposure scenario where arsenic in water is at the Bangladesh standard (0.05 mg/L). The lifetime excess risk of cancer occurrence from chronic arsenic exposure, considering a population of 160 million people, based on an exposure scenario with 85 million people at the WHO guideline value and 75 million people at the Bangladesh standard, and assuming that 35 million people are associated with a heavy activity level, is estimated as 1.15 million cases.

Abstract
Groundwater, the most important source of water for drinking, cooking, and irrigation in Bangladesh, is a significant contributor to the daily human intake of arsenic. Other arsenic intake pathways, established as relevant for Bangladeshi adults through this review, include consumption of contaminated edible plant parts and animal-origin food, inhalation of contaminated air, soil ingestion, betel quid chewing, and tobacco smoking. This review qualifies and quantifies these arsenic intake pathways through analysis of the range of arsenic levels observed in different food types, water, soil, and air in Bangladesh, and highlights the contributions of dietary intake variation and cooking method in influencing arsenic exposures. This study also highlights the potential of desirable dietary patterns and intakes in increasing arsenic exposure which is relevant to Bangladesh where nutritional deficiencies and lower-than-desirable dietary intakes continue to be a major concern.

Abstract
Fish and seafood are main contributors of arsenic (As) in the diet. The dominating arsenical is the organoarsenical arsenobetaine (AB), found particularly in finfish. Algae, blue mussels and other filter feeders contain less AB, but more arsenosugars and relatively more inorganic arsenic (iAs), whereas fatty fish contain more arsenolipids. Other compounds present in smaller amounts in seafood include trimethylarsine oxide (TMAO), trimethylarsoniopropionate (TMAP), dimethylarsenate (DMA), methylarsenate (MA) and sulfur-containing arsenicals. The toxic and carcinogenic arsenical iAs is biotransformed in humans and excreted in urine as the carcinogens dimethylarsinate (DMA) and methylarsonate (MA), producing reactive intermediates in the process. Less is known about the biotransformation of organoarsenicals, but new insight indicates that bioconversion of arsenosugars and arsenolipids in seafood results in urinary excretion of DMA, possibly also producing reactive trivalent arsenic intermediates. Recent findings also indicate that the pre-systematic metabolism by colon microbiota play an important role for human metabolism of arsenicals. Processing of seafood may also result in transformation of arsenicals.

Abstract
The objective of this study was to evaluate the relationship between environmental arsenic exposure and serum matrix metalloproteinase (MMP)-9, a biomarker associated with cardiovascular disease and cancer. In a cross-sectional study of residents of Arizona, USA (n=215) and Sonora, Mexico (n=163), drinking water was assayed for total arsenic, and daily drinking water arsenic intake was estimated. Urine was speciated for arsenic, and concentrations were adjusted for specific gravity. Serum was analyzed for MMP-9 using ELISA. Mixed model linear regression was used to assess the relation among drinking water arsenic concentration, drinking water arsenic intake, urinary arsenic sum of species (the sum of arsenite, arsenate, monomethylarsonic acid and dimethylarsinic acid), and MMP-9, controlling for autocorrelation within households. Drinking water arsenic concentration and intake were positively associated with MMP-9, both in crude analysis and after adjustment for gender, country/ethnicity, age, body mass index, current smoking, and diabetes. Urinary arsenic sum of species was positively associated with MMP-9 in multivariable analysis only. Using Akaike's Information Criterion, arsenic concentration in drinking water provided a better fitting model of MMP-9 than either urinary arsenic or drinking water arsenic intake. In conclusion, arsenic exposure evaluated using all three exposure metrics was positively associated with MMP-9.
