Abstract
Emerging evidence has confirmed the role of emerging nonthermal stressors (e.g., electromagnetic fields, ultrasonication, plasma) in accumulating bioactive metabolites in plant-based food. However, the signal decoding mechanisms behind NonTt-driven phytochemical production remain unclear, hindering postharvest bioactive component intensification. This study aims to summarize the association between signaling molecules and bioactive secondary metabolite production under nonthermal conditions, demonstrating the feasibility of enhancing phytochemical accumulation through signaling molecule crosstalk manipulation. Nonthermal elicitors were found to be capable of inducing stress metabolisms and activating various signaling molecules, similar to conventional abiotic stress. A simplified pathway model for nonthermally induced γ-aminobutyric acid accumulation was proposed with reactive oxygen species and calcium signaling being versatile pathways responsive to nonthermal elicitors. Manipulating signal molecules/pathways under nonthermal conditions can intensify phytochemical biosynthesis. Further research is needed to integrate signaling molecule responses and metabolic network shifts in nonthermally stressed plant-based matrices, balancing quality modifications and intensification of food functionality potential.

Abstract
Ginger (Zingiber officinale Roscoe) is a popular culinary herb used in the Eastern culture. The essential cultivar of the Zingiber genus is rich in antioxidants and is crucial in the fight against oxidative stress-related diseases. The antioxidant properties of dried ginger were evaluated and compared for their efficacy from different drying processes (sun-, oven-, vacuum- and freeze-drying) and using three extraction solvents: hot water, aqueous ethanol (80%, v/v) and ethanol. The drying process demonstrated a positive effect on the antioxidant activities of ginger. A significant difference (p < 0.05) was observed in the extracting ability of each solvent. Sun-dried ginger extracted with ethanol performed better than the fresh ginger extract in the form of increased yield (3.04-fold), TFC values (12.25-fold), reducing power (FRAP) (15.35-fold), total antioxidant activity (TAA) (6.82-fold) and inhibition of ABTS•+ radical cation (3.51-fold) and DPPH• radical (95%). Meanwhile, freeze-dried aqueous ginger extracts demonstrated significantly higher TPC (1.66-fold), TFC (3.71-fold), FRAP (3.26-fold), TAA (2.97-fold), ABTS•+ scavenging activity (1.48-fold) and DPPH• radical inhibition (77%), compared to fresh ginger extracts. In addition, it was found that ethanol was significantly superior to aqueous ethanol in phenolic content recovery, despite the lower yield. Furthermore, ethanol ginger extracts exhibited higher antioxidant activity than aqueous ethanol extracts. On the other hand, hot water was the least potent solvent for extraction. In summary, there was an excellent correlation between TPC, TFC and antioxidant activity. Sun-drying is the most desirable method for preserving and enhancing ginger quality due to its cost effectiveness and bioactive compound efficacy.

Abstract
Biosynthesis of phytochemicals in leaves of Brassica can be initiated by abiotic factors. The aim of the study was to investigate elicitor treatments to add value to waste of cabbage. A leaf waste fraction from industrial trimming of head cabbage was exposed to UV radiation (250–400 nm, 59 and 99 kJ∙m−2, respectively), photosynthetic active radiation (PAR, 400–700 nm, 497 kJ∙m−2), and ultrasound in water bath (35 kHz, at 15, 30 and 61 kJ∙l−1 water), in order to improve nutraceutical concentration. UV was more effective than PAR to increase the level of flavonols (2 to 3-fold higher) and hydroxycinnamate monosaccharides (1 to 10-fold higher). PAR was three times as effective as UV to increase anthocyanins. Interaction of PAR + UV increased antioxidant activity (30%), the content of five phenolics (1.4 to 10-fold higher), and hydroxycinnamic monosaccharides (compared with PAR or UV alone). Indoles were reduced (40–52%) by UV, but the other glucosinolates (GLS) were unaffected. Ultrasound did not influence any parameters. The results are important for white cabbage by-products by demonstrating that UV + PAR can be successfully used as an effectual tool to increase important phenolics and antioxidant activity of waste fraction leaves without an adverse effect on the main GLS.

Abstract
In order to maintain the original taste, flavors, and appearance, fresh foods usually do not go through complex processing prior to sale; this makes them prone to deterioration due to external factors. Light-emitting diodes (LEDs) have many unique advantages over traditional preservation technologies leading to their increasing application in the food industry. This paper reviews the luminescence principles of LED, the advantages of LED compared with traditional lighting equipment, and its possible preservation mechanism, and then critically summarizes the beneficial effects of LED irradiation on the ripening and aging process of various fruits and vegetables (climacteric and non-climacteric). The activity changes of many enzymes closely related to crop development and quality maintenance, and the variation of flavor components caused by LED irradiation are discussed. LED illumination with a specific spectrum also has the important effect of maintaining the original color and flavor of meat, seafood, and dairy products. For microorganisms attached to the surface of animal-derived food, both 400-460 nm LED irradiation based on photodynamic inactivation principle and UV-LED irradiation based on ultraviolet sterilization principle have high bactericidal efficacy. Although there is still a lack of useful standards for matching optimal LED irradiation dose with wavelength, perhaps in the near future, the improved LED irradiation system will be applied extensively in the food industry.

Abstract
The biosynthesis of polyphenolic compounds in cabbage waste, outer green leaves of white head cabbage (Brassica oleracea L. var. capitata subvar. alba), was stimulated by postharvest irradiation with UVB lamps or sunlight. Both treatments boosted the content of kaempferol and quercetin glycosides, especially in the basal leaf zone, as determined by the HPLC analysis of leaf extracts and by a non-destructive optical sensor. The destructive analysis of samples irradiated by the sun for 6 days at the end of October 2015 in Skierniewice (Poland) showed an increase of leaf flavonols by 82% with respect to controls. The treatment by a broadband UVB fluorescent lamp, with irradiance of 0.38 W m-2 in the 290-315 nm range (and 0.59 W m-2 in the UVA region) for 12 h per day at 17 °C along with a white light of about 20 μmol m-2 s-1, produced a flavonols increase of 58% with respect to controls. The kinetics of flavonols accumulation in response to the photochemical treatments was monitored with the FLAV non-destructive index. The initial FLAV rate under the sun was proportional to the daily radiation doses with a better correlation for the sun global irradiance (R2 = 0.973), followed by the UVA (R2 = 0.965) and UVB (R2 = 0.899) irradiance. The sunlight turned out to be more efficient than the UVB lamp in increasing the flavonols level of waste leaves, because of a significant role played by UVA and visible solar radiation in the regulation of the flavonoid accumulation in cabbage. The FLAV index increase induced on the adaxial leaf side was accompanied by a lower but still significant FLAV increase on the unirradiated abaxial side, likely due to a systemic signaling by mean of the long-distance movement of macromolecules. Our present investigation provides useful data for the optimization of postharvest photochemical protocols of cabbage waste valorization. It can represent a novel and alternative tool of vegetable waste management for the recovery of beneficial phytochemicals.

Abstract
Sauerkraut juice has not gained much scientific attention to date. Therefore, this study aimed to track changes in glucosinolates (GLS) during fermentation of white cabbage and the formation of corresponding breakdown products in sauerkraut and sauerkraut juice separately and to evaluate their stability during prolonged storage of the final products. The results obtained indicate that both sauerkraut and sauerkraut juice are a good source of bioactive compounds: ascorbigen and isothiocyanates. The stability of individual compounds during storage varied, and the absolute content of phytochemicals depended on the content of native GLS in the raw material and its bacterial composition. The dominant compound was ascorbigen, stable in acidic pH in both sauerkraut and sauerkraut juice, even after prolonged storage. Sauerkraut juice was also found as a rich source of bioactive isothiocyanates. One 250 mL glass of sauerkraut juice (after two weeks) can deliver approx. 75 μmol of bioactive ascorbien and isothiocyanates, hence it can be considered as functional food, delivering beneficial health effects.

Abstract
Sauerkraut is the most important fermented vegetable obtained in Europe. It is produced traditionally by spontaneous fermentation of cabbage. The aim of this study was to determine biodiversity of yeasts present during fermentation of eight varieties of cabbages (Ambrosia, Avak, Cabton, Galaxy, Jaguar, Kamienna Głowa, Manama and Ramco), as well as characterize obtained yeast isolates. WL Nutrient Agar with Chloramphenicol was used to enumerate yeast. Isolates were differentiated using RAPD-PCR and identified by sequencing of the 5.8S-ITS rRNA gene region. The volatiles production was analyzed using SPME-GC-TOFMS. Our research confirmed that during sauerkraut fermentation there is an active growth of the yeasts, which begins in the first phases. The maximal number of yeast cells from 1.82 to 4.46 log CFU g−1 occurred after 24 h of fermentation, then decrease in yeast counts was found in all samples. Among the isolates dominated the cultures Debaryomyces hansenii, Clavispora lusitaniae and Rhodotorula mucilaginosa. All isolates could grow at NaCl concentrations higher than 5%, were relatively resistant to low pH and the presence of lactic acid, and most of them were characterized by killer toxins activity. The highest concentration of volatiles (mainly esters and alcohols) were produced by Pichia fermentans and D. hansenii strains.

Abstract
Tomato fruits contain much organic acids and γ-aminobutyric acid (GABA) during ripening which are beneficial to human health. The effects of 4 kJ/m2 UV-C treatment on the contents of organic acids and GABA, and the expression of related genes in tomato fruits during storage at 13 °C were investigated. The results showed that UV-C treatment significantly increased the organic acids and total soluble protein contents, whereas decreased the free amino acids and glutamate contents. Besides, UV-C treatment enhanced GAD activity while reduced GABA-T activity, which resulted in accumulation of GABA. Moreover, the genes involved in the biosynthesis of organic acids and GABA were up-regulated, including CS, PEPC1, PEPC2, mMDH, cMDH, GAD1, GAD2, and GAD3, while GABA-T1 and GABA-T3 which involved in GABA degradation were obviously decreased by UV-C treatment. These results indicated that UV-C treatment might be an effective approach to accumulate organic acids and GABA during tomato fruits ripening.

Abstract
Ocimum basilicum (basil) leaves are rich in polyphenols, conferring them a high antioxidant activity. The application of UV-B can be used to maintain the post-harvest nutraceutical quality of basil leaves. We aimed to investigate the effects of pre-harvest UV-B application on polyphenolic and pigment contents, antioxidant capacity, and the visual quality of basil stored leaves. We also evaluated the applicability of the non-invasive Dualex® for monitoring the accumulation of leaf epidermal phenolics (Flav Index). After exposing plants to white light (control) and to supplemental UV-B radiation for 4 d, the leaves were harvested and stored for 7d (TS7). The UV-B leaves showed both a higher phenolic content and antioxidant capacity than the controls at TS7. In addition, the correlations between the Flav Index and phenolic content demonstrated that Dualex® can reliably assess the content of epidermal phenolics, thus confirming its promising utilization as a non-destructive method for monitoring the phytochemical quality of O. basilicum leaves. In conclusion, a pre-harvesting UV-B application may be a tool for enhancing the content of polyphenols and the antioxidant potential of basil stored leaves without detrimental effects on their visual quality. These results are important considering the nutraceutical value of this plant and its wide commercial distribution.

Abstract
Ultraviolet-B (UV-B; 280-315 nm) radiation induces the biosynthesis of secondary plant metabolites such as flavonoids. Flavonoids could also be enhanced by blue (420-490 nm) or green (490-585 nm) light. Flavonoids act as antioxidants and shielding components in the plant's response to UV-B exposure. They are shown to quench singlet oxygen and to be reactive to hydroxyl radical. The aim was to determine whether treatment with blue or green light can alter flavonoid profiles after pre-exposure to UV-B and whether they cause corresponding biological effects in Brassicaceae sprouts. Based on their different flavonoid profiles, three vegetables from the Brassicaceae were selected. Sprouts were treated with five subsequent doses (equals 5 days) of moderate UV-B (0.23 kJ m-2 day-1 UV-BBE), which was followed with two subsequent (equals 2 days) doses of either blue (99 μmol m-2 s-1) or green (119 μmol m-2 s-1) light. In sprouts of kale, kohlrabi, and rocket salad, flavonoid glycosides were identified by HPLC-DAD-ESI-MSn. Both Brassica oleracea species, kale and kohlrabi, showed mainly acylated quercetin and kaempferol glycosides. In contrast, in rocket salad, the main flavonol glycosides were quercetin glycosides. Blue light treatment after the UV-B treatment showed that quercetin and kaempferol glycosides were increased in the B. oleracea species kale and kohlrabi while-contrary to this-in rocket salad, there were only quercetin glycosides increased. Blue light treatment in general stabilized the enhanced concentrations of flavonoid glycosides while green treatment did not have this effect. Blue light treatment following the UV-B exposure resulted in a trend of increased singlet oxygen scavenging for kale and rocket. The hydroxyl radical scavenging capacity was independent from the light quality except for kale where an exposure with UV-B followed by a blue light treatment led to a higher hydroxyl radical scavenging capacity. These results underline the importance of different light qualities for the biosynthesis of reactive oxygen species that intercept secondary plant metabolites, but also show a pronounced species-dependent reaction, which is of special interest for growers.

Abstract
Pathogenic fungi cause enormous losses to fruits, and ethylene (ET) is associated with disease development in fruit crops. In this study, ET production of several fungal pathogens was enhanced by light, probably through the free radicals produced by photochemical reactions. Real-time gas analysis showed a sharp increase in ET production when fungal cultures were moved from dark-to-light (DTL). Similarly, light accelerated ET production in the Botrytis cinerea-infected Arabidopsis thaliana plants even when pyrazinamide, the inhibitor for plant ET synthesis, was applied, suggesting that the fungus is responsible for ET production during host invasion. Furthermore, a sharp increase in ET production after DTL transition was observed in B. cinerea-infected tomatoes and grapes, but not in healthy or physically wounded fruits. Taken together, these findings indicate that the DTL-induced ET is specific to the plant materials with fungal infection, and thus represents a candidate marker for non-destructive disease diagnosis of harvested fruits.

Abstract
This work studied the influences of water blanching pretreatment (30 s), surface contacting ultrasound (492.3 and 1131.1 W/m2) assisted air drying, and their combination on drying kinetics and quality of white cabbage. Contacting sonication was performed by placing samples on an ultrasonic vibration plate, and the drying temperature was 60 °C. Through drying kinetic analysis and numerical simulation considering internal and external resistances and shrinkage, it was found that both blanching pretreatment and contacting sonication during drying intensified internal water diffusion and external water exchange to shorten cabbage drying time. Meanwhile, blanching pretreatment was more effective to enhance the drying process. The largest reduction of drying time (from 145 min to 24 min) was obtained when sequential blanching and contacting sonication at 1131.1 W/m2 were conducted. Dehydrated cabbages with blanching pretreatment were characterized by green color and high retention of vitamin C, while a severe loss of vitamin C was found in dried cabbages without blanching pretreatment. Moreover, although both blanching and contacting sonication shortened the drying time, the losses of phenolics, glucosinolates and resulting breakdown products were not alleviated. Contents of total phenolics, one glucosinolates (sinigrin) and one glucobrassicin breakdown product (indole-3-acetoritrile) in only air dried cabbages were significantly (p < 0.05) higher than that in samples dried by sequential blanching and contacting ultrasound-assisted drying. The changes of glucosinolate profile and resulting degradation products under different treatments were irregular, due to complex bioconversion pathways included.

Abstract
The study highlights the influence and signal transduction mechanism of postharvest UV-B on the production of Rg1 in Panax quinquefolius roots during the drying process. The results showed that postharvest UV-B irradiation induced generation of nitric oxide (NO), jasmonic acid (JA), and ginsenoside Rg1 of P. quinquefolius roots. The UV-B-induced increase of Rg1 was suppressed by NO-specific scavenger (cPTIO) and NOS inhibitors (PBITU), JA synthesis inhibitor (SHAM), and JA synthesis inhibitor (PrGall), indicating that NO and JA played essential parts in UV-B-induced Rg1. External NO inhibitors treatment inhibited UV-B-induced accumulation of NO and JA, which suggested that NO was located upstream of the JA signal pathway. NO-caused Rg1 was inhibited by SHAM and PrGall, implying JA participated in transmitting signal NO to Rg1 accumulation. In other words, NO mediated the postharvest UV-B-induced Rg1 accumulation by the JA-dependent pathway in P. quinquefolius roots during the drying process, which helps us understand the underlying mechanisms involved in UV-B-induced Rg1 production and provides information helpful for P. quinquefolius production.

Abstract
Variations in the phytochemical composition and antioxidant properties were studied in the wine of wampee leaves obtained at different stages of fermentation process. The highest concentrations of total phenolic and flavonoid contents were attained at Day 12 and Day 21 of fermentation, respectively. In addition, five phytochemical compounds including vanillic acid, p-coumaric acid, rutin, ferulic acid, and 7-hydroxycoumarin were identified and quantified by HPLC in fermented wampee products. The strongest antioxidant activity in wine was monitored on Day 12. Furthermore, total antioxidant activity was significantly correlated with vanillic acid, p-coumaric acid, ferulic acid, and 7-hydroxycoumarin compared with rutin. The obtained results suggested that 12-day fermentation could be an optimal process for excavation of applying wampee leaves into food and wine industries.

Abstract
Methanol extracts from ultraviolet (UV) C-irradiated mulberry leaves (UVC-IML) exhibit stronger tyrosinase and α-glucosidase inhibitory activities than those from unirradiated mulberry leaves. Through a bioassay-guided fractionation and purification process, two oxyresveratrol derivatives, oxyresveratrol (ORT) and 4′-prenyloxyresveratrol (PORT), and six 2-arylbenzofuran derivatives [moracin B (MCB), moracin C (MCC), moracin M (MCM), moracin N (MCN), 6,5′-dimethoxymoracin M (DMMCM), and chalcomoracin (CMC)] were isolated from the methanol extract from UVC-IML. Their chemical structures were determined by UV, mass, and nuclear magnetic resonance spectrometry. ORT and PORT showed potent tyrosinase inhibitory activities with the half maximal inhibitory concentration (IC50) values of 0.57 and 0.90 μM, respectively, and CMC exhibited significant tyrosinase and α-glucosidase inhibitory activity with IC50 values of 5.61 and 6.00 μM, respectively. Levels of these eight compounds were increased significantly following irradiation compared with untreated mulberry leaves; ORTs increased approximately 4 fold and moracins increased 2~16 fold. These data suggest that UVC-IML may represent a promising source of nutraceuticals and cosmeceuticals for prevention of diabetes and skin aging.

Abstract
The brassicaceous herb, Isatis tinctoria, is an ancient medicinal plant whose rosette leaf extracts have anti-inflammatory and anti-allergic activity. Brassicaceae are known to accumulate a variety of phenylpropanoids in their rosette leaves acting as antioxidants and a UV-B shield, and these compounds often have pharmacological potential. Nevertheless, knowledge about the phenylpropanoid content of I. tinctoria leaves remains limited to the characterization of a number of flavonoids. In this research, we profiled the methanol extracts of I. tinctoria fresh leaf extracts by liquid chromatography - mass spectrometry (LC-MS) and focused on the phenylpropanoid derivatives. We report the structural characterization of 99 compounds including 18 flavonoids, 21 mono- or oligolignols, 2 benzenoids, and a wide spectrum of 58 hydroxycinnamic acid esters. Besides the sinapate esters of malate, glucose and gentiobiose, which are typical of brassicaceous plants, these conjugates comprised a large variety of glucaric acid esters that have not previously been reported in plants. Feeding with 13C6-glucaric acid showed that glucaric acid is an acyl acceptor of an as yet unknown acyltransferase activity in I. tinctoria rosette leaves. The large amount of hydroxycinnamic acid derivatives changes radically our view of the woad metabolite profile and potentially contributes to the pharmacological activity of I. tinctoria leaf extracts.

Sweet basil (Ocimum basilicum Linnaeus) is aromatic herb that has been utilized in traditional medicine. To improve the phytochemical constituents and pharmaceutical quality of sweet basil leaves, ultraviolet (UV)-B irradiation at different intensities (2.30, 3.60, and 4.80 W/m²) and durations (4, 6, 8, and 10-h) was applied at the post-harvest stage. Total flavonoid content (TFC) and total phenolic content (TPC) were measured using spectrophotometric method, and individual flavonoids and phenolic acids were identified using ultra-high performance liquid chromatography. As a key enzyme for the metabolism of flavonoids, chalcone synthase (CHS) activity, was measured using a CHS assay. Antioxidant activity and antiproliferative activity of extracts against a breast cancer cell line (MCF-7) were evaluated using 1,1-diphenyl-2-picrylhydrazyl (DPPH) assays and MTT (3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide) assays, respectively. UV-B irradiation at an intensity of 3.60 W/m² increased TFC approximately 0.85-fold and also increased quercetin (0.41-fold), catechin (0.85-fold), kaempferol (0.65-fold) rutin (0.68-fold) and luteolin (1.00-fold) content. The highest TPC and individual phenolic acid (gallic acid, cinnamic acid and ferulic acid) was observed in the 3.60 W/m² of UV-B treatment. Cinnamic acid and luteolin were not detected in the control plants, production being induced by UV-B irradiation. Production of these secondary metabolites was also significantly influenced by the duration of UV-B irradiation. Irradiation for 8-h led to higher TFC, TPC and individual flavonoids and phenolic acids than for the other durations (4, 8, and 10-h) except for cinnamic acid, which was detected at higher concentration when irradiated for 6-h. Irradiation for 10-h significantly decreased the secondary metabolite production in sweet basil leaves. CHS activity was induced by UV-B irradiation and highest activity was observed at 3.60 W/m² of UV-B irradiation. UV-B treated leaves presented the highest DPPH activity and antiproliferative activity with a half-maximal inhibitory concentration (IC50) value of 56.0 and 40.8 µg/mL, respectively, over that of the control plants (78.0 and 58.2 µg/mL, respectively). These observations suggest that post-harvest irradiation with UV-B can be considered a promising technique to improve the healthy-nutritional and pharmaceutical properties of sweet basil leaves.
