Abstract
INTRODUCTION Juglans regia Linn. and Carya illinoinensis (Wangenh.) K. Koch are nut-producing plant species of the Juglandaceae family. Bioactive compounds like naphthoquinones, tetralones, and diarylheptanoids are dominant in these species. OBJECTIVE The study aimed to develop and validate a fast and sensitive analytical method by ultrahigh-performance liquid chromatography diode array detection mass spectrometry (UHPLC-DAD-MS) for quantification and identification of bioactive compounds in fruit pericarps and leaves of J. regia and C. illinoinensis collected from two different states of north India. METHODOLOGY The dried pericarps of J. regia and C. illinoinensis (500 mg) were extracted with ethyl acetate-methanol (50:50 v/v, 20 mL, 50°C, 30 min) by ultrasonication and analysed by ultrahigh-performance liquid chromatography diode array detection quadrupole time-of-flight tandem mass spectrometry (UHPLC-DAD-QTOF-MS/MS) for qualitative and quantitative examination of phytoconstituents. The method was validated according to International Council for Harmonisation of Technical Requirements for Pharmaceuticals for Human use (ICH) guidelines for linearity, precision, accuracy, limit of detection (LOD), and limit of quantification (LOQ). RESULTS Here, we report the quantification of dihydrophaseic acid (1), 4,5-dihydroxytetralone (2), 4,8-dihydroxytetralone (3), 5,8-dihydroxy-3-methoxytetralone (4), and juglanin A (5) in the pericarps and leaves of J. regia and C. illinoinensis. Furthermore, using the hyphenated analytical method, a total of 62 compounds were tentatively characterised in different samples. The principal component analysis (PCA) showed diversity between the analysed sample's composition. Also, the study evaluated the variation of bioactive compounds among different parts of J. regia and C. illinoinensis collected from different regions of northern India by UHPLC-DAD-QTOF-MS/MS. CONCLUSION The developed method is simple, rapid, and selective for the identification and characterisation of bioactive molecules.

Abstract
INTRODUCTION Numerous species of the Euphorbiaceae family, including Euphorbia maculata, Euphorbia humifusa, and Acalypha australis, have been used to manage bleeding disorders. However, few investigations have demonstrated their hemostatic potential, and their procoagulant compounds remain elusive. OBJECTIVE This study aimed to determine the most active procoagulant extracts from the three species' crude extract (CE) and fractions in order to screen out the active compounds and to analyze their possible mechanisms of action. METHODS An integrative approach, comprising prothrombin time and activated partial thromboplastin time evaluations and urokinase-type plasminogen activator (uPA) inhibitory assessment, followed by bio-affinity ultrafiltration paired with UPLC/QTOF-MS targeting uPA and docking simulations, was used. RESULTS The extracts with highest procoagulant activity were the CE for both E. maculata (EMCE) and E. humifusa (EHCE) and the n-butanol fraction (NB) for A. australis (AANB). The most promising ligands, namely, isoquercetin, orientin, rutin, and brevifolin carboxylic acid, were selected from these lead extracts. All of these compounds exhibited pronounced specific binding values to the uPA target and showed tight intercalation with the crucial side chains forming the uPA active pocket, which may explain their mode of action. The activity validation substantiated their hemostatic effectivity in inhibiting uPA as they had better inhibition constant (Ki) values than the reference drug tranexamic acid. CONCLUSION Collectively, the integrative strategy applied to these three species allowed the elucidation of the mechanisms underlying their therapeutic effects on bleeding disorders, resulting in the fast detection of four potential hemostatic compounds and their mode of action.

Abstract
The purpose of this study was to investigate the differences between the phenolics compositions of bilberry and blueberry liqueurs, to determine whether these are comparable. Both bilberry and blueberry liqueurs have the same name on the market, however they differ in phenolic composition and content. A total of 43 compounds were identified, 36 in the bilberry liqueur, and 21 in the blueberry liqueur. High performance liquid chromatography coupled with mass spectrometry (HPLC-MS) was used to identify and quantify these compounds, where they were fragmented to the MS4 fragments. Anthocyanins were the major phenolics group detected in the bilberry liqueurs, but only the second most abundant phenolics group in the blueberry liqueurs. The most abundant phenolics group in the blueberry liqueurs was hydroxycinnamic acids. The lowest content of individual phenolic compounds was for blueberry liqueur made from whole fruit. This study will provide valuable data to consumers in their choice of a more expensive bilberry liqueur or a cheaper blueberry liqueur.

Abstract
Glansreginin A has been reported to be an indicator of the quality of walnuts (Juglans spp.). However, bioactive properties of glansreginin A have not been adequately explored. In the present study, we quantified concentrations of glansreginin A in black walnuts (Juglans nigra) using high performance liquid chromatography-tandem mass spectrometry (HPLC-MS/MS) and performed an array of in vitro bioassays to characterize biological activities (e.g., antibacterial, antioxidant, anticancer capacities) of this compound. Results from HPLC-MS/MS analysis indicated that glansreginin A was presented in all 12 black cultivars examined and its contents were variable among black walnut cultivars, ranged from 6.8 mg/kg (Jackson) to 47.0 mg/kg (Hay). Glansreginin A possessed moderate antibacterial activities against Gram-positive pathogens (Staphylococcus aureus and Bacillus anthracis). This compound exhibited no antioxidant activities, did not induce the activity of antioxidant response element signaling pathways, and exerted no antiproliferative effects on tumorigenic alveolar epithelial cells and non-tumorigenic lung fibroblast cells.

Abstract
Biostimulants have different effects on plants. The aim of this paper is to determine responses of the 'Alsószentiváni 117' walnut cultivar on foliar applications of different biostimulants (Wuxal Ascofol, Kondisol, Alga K Plus). The nut traits (nut length, nut diameter, nut weight, kernel weight) and some phenolic compounds of the kernel were measured and detected. In 2020, during warmer early spring weather conditions under pistillate flowering receptivity, chlorogenic acid and quercetin content of kernels treated with Kondisol were higher than in control. All biostimulants influenced positive effects on catechin and rutin content, as well as treatments made with Wuxal Ascofol and Kondisol increased the juglon content of the kernel. In 2021, when the spring weather was typical for that period, only the Kondisol treatments had increasing effects on the catechin and chlorogenic acid content, than the control. The rutin and quercetin concentrations reached the highest value in this trial by Alga K Plus applications. The juglon content decreased in this year compared to the control. The pirocathecin, cinnamic acid, and gallic acid (except Wuxal Ascofol treatment in 2021) content decreased in all treatments in both observed years. Responses of woody fruit species on biostimulants applications depend on the weather conditions. Biostimulants had positive effects on the nut size characteristics in both observed years.

Abstract
Due to the lack of studies on chestnut metabolites, this study was conducted to identify and quantify the major phenolic constituents in chestnuts. Data were compared with the three most commonly grown interspecific hybrids of C. sativa and C. crenata ('Bouche de Betizac', 'Marsol', and 'Maraval') and three "native" accessions of C. sativa. High-performance liquid chromatography coupled with mass spectrometry was used to identify and quantify these compounds. Four dicarboxylic acid derivatives, five hydroxybenzoic acids, nine hydroxycinnamic acids, and three flavanols were identified and quantified, most of them for the first time. Hydroxybenzoic acids were the major phenolic compounds in all chestnut cultivars/accessions, followed by flavanols, dicarboxylic acid derivatives, and hydroxycinnamic acids. Of all the compounds studied, the (epi)catechin dimer was the most abundant in chestnut. The assumption that cultivars from commercial hybrids have a better and different metabolic profile than "native" accessions was refuted.

Abstract
The focus of this experiment was to compare the color and metabolic profile of apple juice from the red-fleshed cultivar 'Baya Marisa' with the white-fleshed cultivar 'Golden Delicious'. The changes in the phenolic compounds, organic acids, and sugar content during high-temperature short-time pasteurization and after one year of storage under different storage conditions were analyzed. A total of 26 individual phenolic compounds were identified and quantified. The total analyzed phenolics content (TAPC) decreased after pasteurization of the juices of both cultivars. The TAPC of fresh 'Baya Marisa' juice after pasteurization increased or remained the same compared to one-year stored 'Baya Marisa' juice, depending on the storage method. The sucrose content of the apple juice of both cultivars remained the same after pasteurization; interestingly, it decreased significantly after one year of storage, while the fructose and glucose content remained the same after pasteurization and increased significantly after one year of storage for both cultivars.

Abstract
Recently, plant protein as a necessary nutrient source for human beings, a common ingredient of traditional processed food, and an important element of new functional food has gained prominence due to the increasing demand for healthy food. Walnut protein (WP) is obtained from walnut kernels and walnut oil-pressing waste and has better nutritional, functional, and essential amino acids in comparison with other vegetable and grain proteins. WP can be conveniently obtained by various extraction techniques, including alkali-soluble acid precipitation, salting-out, and ultrasonic-assisted extraction, among others. The functional properties of WP can be modified for desired purposes by using some novel methods, including free radical oxidation, enzymatic modification, high hydrostatic pressure, etc. Moreover, walnut peptides play an important biological role both in vitro and in vivo. The main activities of the walnut peptides are antihypertensive, antioxidant, learning improvement, and anticancer, among others. Furthermore, WP could be applied in the development of functional foods or dietary supplements, such as delivery systems and food additives, among others. This review summarizes recent knowledge on the nutritional, functional, and bioactive peptide aspects of WP and possible future products, providing a theoretical reference for the utilization and development of oil crop waste.

Abstract
Malabar spinach (Basella alba), amaranth (Amaranthus tricolor), and sweet potato (Ipomoea batatas) are leafy vegetables found in Southwest China. The variation of chlorophyll, carotenoids, ascorbic acid, total flavonoids, phenolic compounds, and antioxidant capacity was studied in the leaves and stems of the three vegetables. The content of main health-promoting compounds and the antioxidant capacity in the leaves were higher than that in the stems, indicating that the leaves of the three vegetables possess greater nutritional value. The trend of total flavonoids in all three vegetables was similar to the trend of antioxidant capacity, suggesting that the total flavonoids may be the major antioxidants wihin these vegetables. Eight individual phenolic compounds were detected in three different vegetables. The most abundant levels of individual phenolic compounds in the leaves and stems of malabar spinach, amaranth, and sweet potato were 6'-O-feruloyl-d-sucrose (9.04 and 2.03 mg g-1 DW), hydroxyferulic acid (10.14 and 0.73 mg g-1 DW), and isorhamnetin-7-O-glucoside (34.93 and 6.76 mg g-1 DW), respectively. Sweet potato exhibited a higher total and individual phenolic compound content compared to malabar spinach and amaranth. Overall, the results demonstrate that the three leafy vegetables possess high nutritional value, and could be used not only for consumption but also in various other fields, including medicine and chemistry.

Abstract
The aim of this study was to compare peeled and unpeeled dehydrated apple slices of the red-fleshed ‘Baya Marisa’ and the white-fleshed ‘Golden Delicious’, to analyze the difference in the content of sugars, organic acids, and phenolic compounds during the heat process of dehydration, and to compare it with our previous study on fresh apples of the same cultivar. The purpose of these study was to see how many primary and secondary metabolites are lost in the dehydration process to better understand what is ingested by consumers in terms of nutritional value. A total of 30 phenolic compounds were identified and quantified, some of them for the first time. The total analyzed phenolic content (TAPC) of the unpeeled dehydrated apple slices was 1.7 times higher in ‘Golden Delicious’ than in ‘Baya Marisa’. The unpeeled dehydrated apple slices of ‘Golden Delicious’ had higher total hydroxycinnamic acid (2.7×) and dihydrochalcone (1.2×) content. The peeled dehydrated apple slices of ‘Baya Marisa’ had higher total dihydrochalcone (2.2×) and total flavanol (2.2×) content compared to ‘Golden Delicious’. The content of citric and malic acids was higher in the unpeeled and peeled dehydrated apple slices of ‘Baya Marisa’, compared to ‘Golden Delicious’. The content of ascorbic acid was higher in the unpeeled (1.6×) and peeled (1.8×) dried apple slices of ‘Baya Marisa’. The content of fructose and glucose was 1.4 times higher in the unpeeled dried apple slices of ‘Golden Delicious’.

Abstract
In this study, the impact of 60Co-γ ray irradiation treatment on the content of active chemicals and their functions in Citri Sarcodactylis Fructus (CSF) was assessed. Scanning electron microscopy, Fourier transform infrared spectroscopy, and γ-ray diffraction revealed physical structure changes in CSF powder. According to the findings, the content of total flavonoids in the ethanol extract of CSF increased by 9.5%-21.62%, 7-hydroxycoumarin, hesperidin, 5,7-dimethoxycoumarin, and 5-methoxypsoralen increased by 5.31%-51.8%, 10.07%-99.81%, 6.6%-62.29%, and 3.03%-300%, respectively, when the irradiation dosage was raised, and the antibacterial, anti-inflammatory, antioxidant, and anticancer properties were all raised considerably. These results imply that the principal components and activity changes are proportional to the irradiation dosage. At present, the findings of this study serve as a reference for the use of irradiation technology in assisting extraction and enhancing the effects of functional foods.

Abstract
The aim of this study was to assess the biological potential of the polyphenolic fraction isolated from J. regia leaves, collected in the Subcarpathian region (Poland). The phenolic profile was determined using the UPLC-PDA-MS/MS method. Biological activity was determined by evaluating the antioxidant, anticancer, antibacterial, and antifungal effects. Prior to this study, the purified polyphenolic fraction was not been tested in this regard. A total of 40 phenolic compounds (104.28 mg/g dw) were identified, with quercetin 3-O-glucoside and quercetin pentosides dominating. The preparation was characterized by a high ability to chelate iron ions and capture O2•- and OH• radicals (reaching IC50 values of 388.61, 67.78 and 193.29 µg/mL, respectively). As for the anticancer activity, among the six tested cell lines, the preparation reduced the viability of the DLD-1, Caco-2, and MCF-7 lines the most, while in the antibacterial activity, among the seven tested strains, the highest susceptibility has been demonstrated against K. pneumoniae, S. pyogenes, and S. aureus. Depending on the needs, such a preparation can be widely used in the design of functional food and/or the cosmetics industry.

Abstract
The use of additives with preservative effects is a common practice in the food industry. Although their use is regulated, natural alternatives have gained more attention among researchers and professionals in the food industry in order to supply processed foods with a clean label. Fruits are essential components in a healthy diet and have also been associated with improved health status and a lower risk of developing diseases. This review aims to provide an overview of the main bioactive compounds (polyphenols, betalain, and terpenes) naturally found in fruits, their antioxidant and antimicrobial activity in vitro, and their preservative effect in different foods. Many extracts obtained from the skin (apple, grape, jabuticaba, orange, and pomegranate, for instance), pulp (such as red pitaya), and seeds (guarana, grape, and jabuticaba) of fruits are of great value due to the presence of multiple compounds (punicalagin, catechin, gallic acid, limonene, β-pinene, or γ-terpinene, for instance). In terms of antioxidant activity, some fruits that stand out are date, jabuticaba, grape, and olive, which interact with different radicals and show different mechanisms of action in vitro. Antimicrobial activity is observed for natural extracts and essential oils (especially from citrus fruits) that limit the growth of many microorganisms (Bacillus subtilis, Escherichia coli, Penicillium digitatum, and Pseodomonas aeruginosa, for instance). Studies in foods have revealed that the use of extracts or essential oils as free or encapsulated forms or incorporated into films and coatings can inhibit microbial growth, slow oxidative reactions, reduce the accumulation of degradative products, and also preserve sensory attributes, especially with films and coatings. Future studies could focus on the advances of extracts and essential oils to align their use with the development of healthier foods (especially for meat products) and explore the inhibition of spoilage microorganisms in dairy products, for instance.

Abstract
Ellagitannins (ETs) are a large group of bioactive compounds found in plant-source foods, such as pomegranates, berries, and nuts. The consumption of ETs has often been associated with positive effects on many pathologies, including cardiovascular diseases, neurodegenerative syndromes, and cancer. Although multiple biological activities (antioxidant, anti-inflammatory, chemopreventive) have been discussed for ETs, their limited bioavailability prevents reaching significant concentrations in systemic circulation. Instead, urolithins, ET gut microbiota-derived metabolites, are better absorbed and could be the bioactive molecules responsible for the antioxidant and anti-inflammatory activities or anti-tumor cell progression. In this review, we examined the dietary sources, metabolism, and bioavailability of ETs, and analyzed the last recent findings on ETs, ellagic acid, and urolithins, their intestinal and brain activities, the potential mechanisms of action, and the connection between the ET microbiota metabolism and the consequences detected on the gut-brain axis. The current in vitro, in vivo, and clinical studies indicate that ET-rich foods, individual gut microbiomes, or urolithin types could modulate signaling pathways and promote beneficial health effects. A better understanding of the role of these metabolites in disease pathogenesis may assist in the prevention or treatment of pathologies targeting the gut-brain axis.

Abstract
This study focused on the interaction of walnut protein with phenolic extracts of walnut pellicle (PEWP) under alkaline condition, leading to enhancement of protein solubility under neutral condition. First, the change of PEWP under alkaline condition was determined by RP-HPLC and mass spectrometry, and the results showed that most ellagitannins in PEWP could be retained under alkaline condition within 3 h. Interaction between PEWP and walnut protein under pH-shifting condition resulted in the remarkable increase of protein solubility (above 90%) at neutral pH. The results from SDS-PAGE and SEC showed that the improved solubility lied in the formation of large and soluble protein aggregates due to the covalent interaction among walnut protein and polyphenols. A significant change in tertiary structure of protein-phenolic complex was witnessed by fluorescence spectrum and near-UV circular dichroism. Meanwhile, walnut protein-polyphenol interaction led to a slight increase in β-turn while a slight decrease in β-sheet. Combined with amino acid composition, it could be illustrated that the covalent bonding for walnut protein with polyphenol mainly occurred at Lysine residues.

Abstract
Husk powder was prepared from seven varieties of walnut fruit and their hulling rate, chemical compounds, and total phenolic contents were evaluated. The apolar and polar extracts were prepared, respectively, from hexane and a hydroethanolic solvent, while qualitative and semi-quantitative analyses were performed by GC/MS and UHPLC-PDA-HRMS/MS. The antioxidant, antimicrobial, and antitumor properties of green walnut husk were also evaluated. The total content of phenolic compounds varied between the varieties, ranging from 35.2 ± 0.9 to 58.0 ± 0.0 mg/g gallic acid equivalent of dry husk weight (dw). The apolar extract was found to contain alkanes, tocopherols, sterols, and fatty acids, including oleic, linoleic, and linolenic, while the polar extract showed the presence of phenolics including salicylate glucuronide, taxifolin, catechin, and quercetin isomers. The antioxidant power obtained by the PAOT (total antioxidant power) method for the husk powders ranged from 256.5 ± 5.9 to 746.8 ± 6.9 score/g dw, and seemed consistent with the total phenolic content and the results obtained by the classic antioxidant test with DPPH. The walnut husk also showed an antibacterial effect against Gram-negative and Gram-positive bacteria and cytotoxic potential against HepG2. Among the selected varieties, the green Saman had the highest antioxidant properties, while the Saman with a brown color had the lowest.

Abstract
The molecular diffusion of phenolics inside walnut pellicle fiber particles under solid-liquid extraction enhanced by ultrasound (US), orbital agitation (OA), impeller agitation (IA), and the combined microwave and impeller agitation (MW-IA) were explored. Numerical modeling considering the temperature-dependent diffusivity revealed that the internal diffusivity of phenolics was the highest under MW-IA and the lowest under OA. At 35 °C, IA (126.246 mg/g, t = 10 min) was more effective to strengthen the phenolic diffusivity than the US-39W (95.538 mg/g, t = 10 min). Due to the simultaneous enhancement of internal diffusivity and external dissolution, the MW-IA extraction reached equilibrium within 16 min, reaching the highest yield among all the treatments (176.944 mg/g). The extraction was then divided into the increasing and falling driving force periods. The comparison of phenolic diffusivity among MW-IA and IA roughly indicated that the proportion of non-thermal effect of microwave at 315 W was 889% higher than 189 W at the extraction equilibrium. Moreover, some soluble polyphenols, i.e. quercitrin and syringic acid, could be adsorbed by the cell wall after equilibrium. The correlations between any two soluble phenolics varied with the phenolic type, deducing that soluble phenolics may interact with each other either positively or negatively. Besides, the mining of phenolic data also indicated that intensive impeller agitation is a good substitution for ultrasonication to extract phenolics effectively.

Abstract
Purple flowering stalks and green flowering stalks of Brassica campestris are widely cultivated in the middle and upper reaches of the Yangtze River. Here, concentrations of the main health-promoting compounds and antioxidant capacity levels were characterized in different parts (leaves, peel, flesh, and inflorescences) of purple and green flowering stalks. There were significant differences in the concentrations of health-promoting compounds between the two variants; the concentrations of pigments, especially anthocyanidins, and gluconapin, were significantly higher in purple flowering stalks than in green flowering stalks, and the progoitrin content was significantly higher in green flowering stalks than in purple flowering stalks. The leaves were judged to be the most nutritional edible part because they had the highest concentrations of pigments, ascorbic acid, proanthocyanidins, flavonoids, and total phenolics. Antioxidant capacity was also highest in the leaves, and it was positively correlated with the concentration of health-promoting compounds. Purple flowering stalks and green flowering stalks were found to be rich in health-promoting compounds, especially glucosinolates. Overall, our findings indicate that consumption of the leaves and peel would provide the most health benefits. Some suggestions are provided regarding the processing and utilization of these edible components.

Abstract
Analysis of mixture via chromatographic-spectroscopic and analogous experiments is a common task in analytical chemistry. A 2D/nD asynchronous spectrum is effective in retrieving spectra of pure substances even if different components cannot be separated. However, noise in the 2D/nD asynchronous spectrum becomes a bottleneck in the analysis. Finding a suitable sequence of the 1D spectra used in constructing the 2D/nD asynchronous spectrum is helpful to improve the signal-to-noise level. A 2D/nD asynchronous spectrum is often produced via a large number of 1D spectra. The resultant colossal number of the possible sequences makes stochastic search the only possible way to find a suitable sequence. Random changing (RC) and random swapping (RS) are two ways to obtain a new sequence. We found that the possibility of finding a better sequence via an RS is significantly higher than that via an RC in the advanced stage of stochastic searching. This is the reason why the performance of RS is superior to that of RC in two model systems where 2D asynchronous spectra are used. We applied the RS approach on the analysis of water/isopropanol mixtures, and satisfactory sequences are acquired with affordable computational cost. Thus, the RS approach brings about an opportunity increase the signal-to-noise level of a 2D asynchronous spectrum in the analysis of the bilinear data from complex mixed samples.

Abstract
Simple Summary Very little is known about how biostimulants such as amino acids affect the enzymatic activity of peppers. The three crucial enzymes for the synthesis and degradation of capsaicinoids were studied in a 72 h time course. The activity of the two crucial enzymes for the synthesis of capsaicinoids increased in the first hour after foliar application and then gradually decreased to the baseline activity. Placenta exhibited higher enzyme activity and capsaicinoid content. Since capsaicinoids are widely consumed by humans, the use of various natural substances called biostimulants could improve the overall quality of peppers, which would mean high-yield and high-quality fruits. Abstract Biostimulants are widely used in agriculture because they can improve fruit quality and quantity. Less is known about how biostimulants act over time in plants, in our case peppers, and how they affect the enzyme activity of important enzymes for capsaicinoid synthesis. The biostimulatory effects of amino acids on the activities of phenylalanine ammonia lyase (PAL), capsaicin synthase (CS), and peroxidase (POX) were investigated in the pericarp and placenta of the chili pepper Capsicum baccatum L. cv. “Bishop Crown” over 72 h of application. The PAL and CS activities significantly increased in the placenta after 1 h of biostimulant application, with significant increases of 130% and 16%, respectively. The POX activity remained unchanged over the full 72 h in the placenta but significantly increased after 48 h in the pericarp (+53%). Total capsaicinoids increased in the first hour of biostimulant application, by 4.30 g/kg FW in the placenta (19%) and by 0.94 g/kg FW in the pericarp (+56%). Biostimulant application also increased total and individual capsaicinoids after 48 h in the chili placenta and pericarp. With improved methods for enzymatic determination, we gained new insights into the responses of chilies to biostimulant amino acids.

Abstract
The aim of the present study was to investigate how individual phenolic compounds and phenolic groups in walnut husk gratings (e.g., naphthoquinones, flavanols, flavonols, hydroxycinnamic acids) are oxidized over time, with a particular focus on the juglone synthase pathway. Walnut husk gratings were prepared and left under 'degradation' conditions (exposure to the air, room temperature) at increasing times. Following methanol extraction of these husk gratings, the HPLC profile of methanolic extract of husk gratings exhibited twenty-six compounds over time, then hydrojuglone glucoside, α-hydrojuglone, and juglone were detailed by HPLC-mass spectrometry. Initially (0-20 min), the content of hydrojuglone glucoside in the husk gratings decreased by 40.4%, while the content of α-hydrojuglone increased by 20.0%, and then decreased. After an initial delay (0-20 min), juglone increased by 47.9% from 20 to 40 min, and then decreased. This initially confirmed that hydrojuglone glucoside and α-hydrojuglone could be considered as precursors of juglone. Different phenolic groups showed different degradation processes, although they all reached their highest content after 40 min. This might arise from degradation of the phenols, increased free phenols, or activation of the plant defense mechanism due to damage to the tissue, similar to the effects of stress or a pathogen attack. Although it has been reported that the phenolic compounds decrease when food is processed or damaged, they showed increases, which were not indefinite, but time dependent. As phenolic compounds are considered highly beneficial to human health, increases upon processing indicate the need for further investigations into healthier food preparation processes. This is the first study on the degradation pathways of juglone, using a mass spectrometer, in which we suggest that hydrojuglone glucoside and α-hydrojuglone are indeed the precursors of juglone. However, it is possible that there are other degradation pathways of hydrojuglone glucoside, since less juglone is synthesized than expected.

Abstract
Tree nuts are important economic crops and are consumed as healthy snacks worldwide. In recent years, the increasing needs for more efficient and effective postharvest processing technologies have been driven by the growing production, higher quality standards, stricter food safety requirements, development of new harvesting methods, and demand to achieve energy saving and carbon neutralization. Among all, the technologies related to drying, disinfection, and disinfestation and downstream processes, such as blanching, kernel peeling, and roasting, are the most important processes influencing the quality and safety of the products. These processes make up the largest contribution to the energy consumptions and environmental impacts stemming from tree nut production. Although many studies have been conducted to improve the processing efficiency and sustainability, and preserve the product quality and safety, information from these studies is fragmented and a centralized review highlighting the important technology advancements of postharvest processing of tree nuts would benefit the industry. In this comprehensive review, almonds, walnuts, and pistachios are selected as the representative crops of tree nuts. Current statuses, recent advances, and ongoing challenges in the scientific research as well as in the industrial processing practices of these tree nuts are summarized. Some new perspectives and applications of tree nut processing waste and by-products (such as the hulls and shells) are also discussed. In addition, future trends and research needs are highlighted. The material presented here will help both stakeholders and scientists to better understand postharvest tree nut processing and provide technological recommendations to improve the efficiency and sustainability, product quality and safety, and competitiveness of the industry.

Abstract
Walnuts have high oil content in their kernels, and they have attracted considerable attention in the food, beverage, nutrient, and health fields because of their delicious taste and potential health benefits. Fatty acid profiles of kernels vary depending on walnuts species, ontogenic variations, and planting environments. To determine the key indicators that can be used to distinguish different walnuts using chemometric analyses, the fatty acid compositions and contents of 72 walnut samples were measured and evaluated. Three fatty acids, oleic acid (21.66%), linoleic acid (56.40%), and linolenic acid (10.50%), were the most common fatty acid components in the kernels. Palmitic acid and linolenic acid in kernels were found to be indicators to rank the walnuts into five levels. Three groups were identified based on of several chemometrics. Oleic acid in kernels was typical fatty acid that could be used to distinguish three walnut groups based on the results of discriminant analysis, while oleic acid and linoleic acid were key differential fatty acids on the discrimination of each group based on the result of orthogonal partial least squares discriminant analysis. This study provides information on how to classify walnuts from different geographical locations based on kernel fatty acid profiling and provides an approach to identify possible adulterations in walnuts on the markets. Moreover, the results are potentially relevant to quality assessments of walnuts.

Abstract
Lilium is cherished for its health-promoting properties in China. The bulbs of Lilium are rich in phenolic compounds, which are associated with antioxidant capacity. However, no systematic evaluation on phenolic compositions and antioxidant capacities for the edible Lilium native to China has been conducted. Herein, bulbs of 56 wild populations and three cultivars were collected. Their edible characteristics, antioxidant capacities, and pigments have been investigated and analyzed. The results showed that phenolic compounds contributed to the major colors (red, yellow and white) in Lilium bulbs. The seven phenolic pigment monomers responsible for the color of bulbs-cyanidin-3-O-rutinoside, isoquercitrin, regaloside B, regaloside C, regaloside H, regaloside A and regaloside D-were identified by the combination of HPLC-MS and NMR analysis. The population Lilium regale E. H. Wilson (Maoxian County, Sichuan Province) had the highest antioxidant capacity. According to the quantification results, Lilium bulbs with darker and redder colors possessed larger biomass, better nutrient compositions, significantly higher bioactive constituents, and higher antioxidant capacities than the three currently consumed cultivars of edible lily bulbs. Overall, these findings suggest that the mountainous area of southwest China could be the fourth source of edible lilies with the bulb-colored Lilium species.

Abstract
Chilies are widely cultivated for their rich metabolic content, especially capsaicinoids. In our study, we determined individual sugars, organic acids, capsaicinoids, and total phenolic content in pericarp, placenta, and seeds of Capsicum annuum L., Capsicum chinense Jacq. and Capsicum baccatum L. by HPLC/MS. Dry weight varied in the cultivar 'Cayenne', with the first fruit having the lowest dry weight, with 4.14 g. The total sugar content and organic acid content did not vary among the fruits of all three cultivars. The cultivar 'Cayenne' showed differences in total phenolic and capsaicinoid content between fruits in the placenta, with the first fruit having the highest content of total phenolics (27.85 g GAE/kg DW) and total capsaicinoids (16.15 g/kg DW). Of the three cultivars studied, the cultivar 'Habanero Orange' showed the least variability among fruits in terms of metabolites. The content of dihydrocapsaicin, nordihydrocapsaicin, homocapsaicin, and homodihydrocapsaicin in the seeds of the second fruit was higher than that of the first fruit of the cultivar 'Bishop Crown'. The results of our study provided significant insight into the metabolomics of individual fruits of the same chili plant. We have thus increased our understanding of how certain metabolites are distributed between fruits at different levels of the same plant and different parts of the fruit. This could be further investigated when chilies are exposed to different environmental stresses.

Abstract
Walnut byproducts have been shown to exert functional properties, but the literature on their bioactive content is still scarce. Among walnut byproducts, walnut septum is a dry ligneous diaphragm tissue that divides the two halves of the kernel, exhibiting nutritional and medicinal properties. These functional properties are owing to its flavonoid content, and in order to explore the flavonoid fraction, an ultrasound-assisted (UAE) protocol was combined with solid phase extraction (SPE) and coupled to high-performance liquid chromatography with diode array detection (HPLC-DAD) for the determination of flavonoids in Greek walnut septa membranes belonging to Chandler, Vina, and Franquette varieties. The proposed UAE-SPE-HPLC-DAD method was validated and the relative standard deviations (RSD%) of the within-day and between-day assays were lower than 6.2 and 8.5, respectively, showing good precision, and high accuracy ranging from 90.8 (apigenin) to 97.5% (catechin) for within-day assay, and from 88.5 (myricetin) to 96.2% (catechin) for between-day assay. Overall, seven flavonoids were determined (catechin, rutin, myricetin, luteolin, quercetin, apigenin, and kaempferol) suggesting that the walnut septum is a rich source of bioactive constituents. The quantification results were further processed using ANOVA analysis to examine if there are statistically significant differences between the concentration of each flavonoid and the variety of the walnut septum.

Abstract
The present study was designed to identify and quantify the major phenolic compounds in different Juglans regia L. (common walnut) tissues (leaves, petioles, bark, roots, buds), to define the compositions and contents of phenolic compounds between these tissues. A total of 91 individual phenolic compounds were identified and quantified, which comprised 8 hydroxycinnamic acids, 28 hydroxybenzoic acids, 11 flavanols, 20 flavonols, 22 napthoquinones, and 2 coumarins. Naphthoquinones were the major phenolic group in leaves, petioles, bark, and buds, as >60% of those identified, while hydroxybenzoic acids were the major phenolic group in side roots, as ~50% of those identified. The highest content of phenolic compounds was in the J. regia main root, followed by side roots and buds, leaves, and 1-year-old bark; the lowest content was in petioles and 2-year-old bark. Leaves, roots, and buds of J. regia represent a valuable source of these agro-residues.

Abstract
The peptide WEKPPVSH from walnut protein hydrolyzate was used to evaluate the antioxidant and anti-inflammatory protective effect on lipopolysaccharide (LPS)-activated BV-2 microglia and its possible mechanism. The results indicated that WEKPPVSH significantly decreased nitric oxide (NO) and reactive oxygen species (ROS) generation in a dose-dependent manner, and significantly up-regulated superoxide dismutase and catalase activities (P < 0.01). Results of enzyme-linked immunosorbent assay (ELISA) showed that WEKPPVSH significantly mitigated the secretion of tumor necrosis factor-α (TNF-α), interleukin-1β (IL-1β) and interleukin-6 (IL-6) (P < 0.01). Immunofluorescence analysis exhibited that WEKPPVSH down-regulated p65 translocation to the cell nucleus. Western blotting showed that WEKPPVSH up-regulated the expression of nuclear factor erythroid 2-related factor (Nrf2) and heme oxygenase-1 (HO-1), and down-regulated the expression of inducible nitric oxide synthase (iNOS), cyclooxygenase-2 (COX-2), p-IκB/IκB, p-p65/p65 and p-p38/p38. In summary, WEKPPVSH might protect against oxidative stress and inflammation in LPS-stimulated BV-2 microglia by enhancing the Nrf2/HO-1 signaling pathway and blocking the nuclear factor-κB/p38 mitogen - activated protein kinase (NF-κB/p38 MAPK) signaling pathway. The results provided an experimental basis for the research and development of walnut peptide products.

Abstract
A high-pressure liquid chromatographic method coupled to diode array detector (HPLC-DAD) was developed for the determination of phenolic compounds that could be used as markers in authentication studies of walnuts belonging to the Chandler variety, originating from Bulgaria, Greece, and France. An ultrasound-assisted extraction (UAE) protocol applied in the extraction of phenolic compounds was optimized. The method was validated and the relative standard deviations (RSD%) of the within-day, and between-day assays was lower than 6.3 and 11.1, respectively, showing adequate precision, and good accuracy ranging from 86.4 (sinapic acid) to 98.4% (caffeic acid) for within-day assay, and from 90.1 (gallocatechin gallate) to 100.6% (gallic acid) for between-day assay. Eighteen phenolic compounds were determined belonging to the classes of phenolic acids and flavonoids. The quantification results were further processed with chemometrics, and a robust partial least square-discriminant analysis (PLS-DA) model was developed for the classification of the samples according to their geographical origin, proposing markers that could be used for the control of walnuts authenticity and the detection of fraudulent incidents.

Abstract
Reversed phase-high-pressure liquid chromatographic methodologies equipped with UV detector (RP-HPLC-UV) were developed for the determination of phenolic compounds and tocopherols in almonds. Nineteen samples of Texas almonds originating from USA and Greece were analyzed and 7 phenolic acids, 7 flavonoids, and tocopherols (−α, −β + γ) were determined. The analytical methodologies were validated and presented excellent linearity (r2 > 0.99), high recoveries over the range between 83.1 (syringic acid) to 95.5% (ferulic acid) for within-day assay (n = 6), and between 90.2 (diosmin) to 103.4% (rosmarinic acid) for between-day assay (n = 3 × 3), for phenolic compounds, and between 95.1 and 100.4% for within-day assay (n = 6), and between 93.2–96.2% for between-day assay (n = 3 × 3) for tocopherols. The analytes were further quantified, and the results were analyzed by principal component analysis (PCA), and agglomerative hierarchical clustering (AHC) to investigate potential differences between the bioactive content of almonds and the geographical origin. A decision tree (DT) was developed for the prediction of the geographical origin of almonds proposing a characteristic marker with a concentration threshold, proving to be a promising and reliable tool for the guarantee of the authenticity of the almonds.

Abstract
The brown marmorated stink bug (BMSB; Halyomorpha halys Stal.) has become a significant pest in Slovenia, especially in apple, pear, peach, and cherry orchards. In our study, apple fruit of the apple cultivar ‘Red Pinova’ were evaluated for visual injury and sugar, organic acid, and phenolic contents. The chemical composition of the area around the puncture wound, the uninjured part of the infested apple, was compared to, as a control, only uninjured apples. There was a significant response of the apple around the puncture wound, resulting in an 11.9 g/kg FW higher total sugar content, a 1.4 g/kg FW lower total organic acid content, and an 11.9 g/kg FW higher total phenolic content compared with control apples. A strong phenolic response in the puncture wound area, with high flavanol and hydroxycinnamic acid contents, with increases of 118% and 237%, respectively, compared with control apples, was detected. The brown marmorated stink bug induces a strong phenolic response in the injured area of the apple. The results of this study illustrated how apple fruit responds to the BMSB injury, not only sensorily (visual injury, odor), but also chemically in the form of metabolic responses.

Abstract
The present study was designed to identify and quantify the major phenolic compounds (phenolics) in the inner and outer husks, buds and bark of the Persian walnut, Juglans regia L. A comparison across six different cultivars grown in Slovenia was also carried out: 'Fernor', 'Fernette', 'Franquette', 'Sava', 'Krka' and 'Rubina'. A total of 83 compounds were identified, which included 25 naphthoquinones, 15 hydroxycinnamic acids, 8 hydroxybenzoic acids, 13 flavanols, 2 flavones, 1 flavanone and 19 flavonols. For the first time, 38 phenolics in the husks, 57 phenolics in the buds and 29 phenolics in the bark were presented in J. regia within this study. Naphthoquinones were the major phenolics determined, approximately 75% of all analysed phenolics in the inner husk, 85% in the outer husk, 50% in buds and 80% in bark. The highest content of phenolics was found in the walnut buds, followed by the bark, the inner husk and the outer husk. On the basis of these high phenolic contents, walnut husks, buds and bark represented valuable by-products of the walnut tree. These data also show origin-related phenolic contents across the cultivars, and thus these phenolic profiles might serve to define the origins of different walnut cultivars.
