Abstract
Cold smoking enhances the appeal of fish products, offering consumers a smooth texture and a delicate smoky flavor. This study aims to explore variations in the volatile profile from different exposure times during cold smoking processing (light, moderate, and full-cure) in tune samples. An innovative untargeted analytical approach, headspace solid-phase microextraction combined with gas chromatography and a hybrid quadrupole-orbitrap mass analyzer, was employed to identify 86 volatiles associated with the cold smoking process. Most of these compounds, including phenols, furan derivates, aldehydes, cyclic ketones, and different aromatic species, were found to contribute to the smoke odor. The development of a QuEChERS-based extraction and clean-up method facilitated the quantification of 25 relevant smoky markers across all smoking degrees, revealing significant concentration differences after 15 h of smoking. This research sheds light on the dynamics of cold smoking impact and its on the flavor profile and safety quality of processed fish products.

Abstract
Grape and grape derived products contain many bioactive phenolics which have a variety of impacts on health. Following oral ingestion, the phenolic compounds and their metabolites may be detectable in human urine. However, developing a reliable method for the analysis of phenolic compounds in urine is challenging. In this work, we developed and validated a new high-throughput, sensitive and reproducible analytical method for the simultaneous analysis of 31 grape phenolic compounds and metabolites using Oasis PRiME HLB cleanup for sample preparation combined with ultra-performance liquid chromatography with triple quadrupole tandem mass spectrometry (UHPLC-QqQ-MS/MS). Using this new method, the accuracy achieved was 69.3 % ∼ 134.9 % (except for six compounds), and the recovery achieved was 52.4 % ∼ 134.7 % (except for two very polar compounds). For each of the 31 target analytes, the value of intra-day precision was less than 14.3 %. The value of inter-day precision was slightly higher than intra-day precision, with a range of 0.7 % ∼ 19.1 %. We report for the first time on the effect of gender and BMI on the accuracy and recovery of human urine samples, and results from analysis of variance (ANOVA), and principal component analysis (PCA) indicated there was no difference in the value of accuracy and recovery between different gender or BMI (>30) using our purposed cleanup and UHPLC-QqQ-MS/MS method. Overall, this newly developed method could serve as a powerful tool for analyzing grape phenolic compounds and metabolites in human urine samples.

Abstract
Neonicotinoids (NEOs) are the most widely used insecticides globally. They can contaminate or migrate into foodstuffs and exert severe neonic toxicity on humans. Therefore, lots of feasible analytical methods were developed to assure food safety. Nevertheless, there is a lack of evaluation that the impacts of food attributes on the accurate determination of NEOs. This review aims to provide a comprehensive overview of sample preparation methods regarding 6 categories of plant-derived foodstuffs. Currently, QuEChERS as the common strategy can effectively extract NEOs from plant-derived foodstuffs. Various enrichment technologies were developed for trace levels of NEOs in processed foodstuffs, and multifarious novel sorbents provided more possibility for removing complex matrices to lower matrix effects. Additionally, detection methods based on liquid chromatography were summarized and discussed in this review. Finally, some limitations were summarized and new directions were proposed for better advancement.

Abstract
This work describes a reliable, cheap, easy and fast method for analysis of nine bisphenols in mussel samples by gas chromatography-mass spectrometry after trimethylsilylation. The modified method consisted of miniaturized matrix solid phase dispersion (micro-MSPD) in a glass Pasteur pipette using Captiva EMR (enhanced matrix removal)-lipid as the sorbent. Good linearity was obtained in the work range (1-500 μg L-1) with a correlation coefficient (R2) ≥ 0.998. The method accuracy and precision were determined at two concentration levels. The results show recoveries ranging from 55 to 111%. The precision varied from 1.95 to 11.4% (RSD). The whole quantification limits were between 0.056 and 3.42 μg per kg dry weight. The analytical procedure was applied for the analyses of five mussel samples collected from Galician Rias. The major compound was BPA, and wild mussels from Rías de Ferrol, Vigo and A Coruña had the highest levels. The proposed method is suitable for the analysis of BPA and its analogues in mussel samples.

Abstract
Bamboo is a highly sustainable plant with a wide variety of leaves, yet little is known about its bioactive composition. Therefore, this study aims to characterize the phenolic profile and antioxidant capacity of 11 different varieties of bamboo leaves using liquid chromatography coupled with mass spectrometry. As a result, 81 phenolic compounds were tentatively identified, 29 of which were identified for the first time in the literature for bamboo leaves. The tentatively identified compounds fell into five classes (hydroxybenzoic and hydroxycinnamic acids, flavones, flavanones, and flavonols). The concentration of phenolic compounds ranged from 103 to 1291 mg/100 g. Among the provisionally identified compounds, there was a predominance of derivatives from the luteolin and apigenin group, with orientin and schaftoside being the majority in each group, respectively. The leaves also showed significant variation in antioxidant activity, highlighting the potential bioactive composition of bamboo leaves for future applications in the food industry.

Abstract
Sulfur treatment for the pesticidal and antibacterial processing of food products has been criticized since it impairs the quality of treated products. The inspection of sulfur-treated products is thus required to achieve the regulation of sulfur treatment. Sulfite assay is currently available for the inspection, but it bears the disadvantages of inaccurate results and complex experimental procedures. Here we report a new chemical marker, namely tryptophan sulfonate, that can be used for the accurate and efficient inspection of sulfur-treated foods. First, the marker was discovered in sulfur-fumigated ginger, yam, and ginseng by untargeted metabolomics. The marker identity was then elucidated using chromatographic separation, nuclear magnetic resonance analysis and chemical synthesis. Finally, to demonstrate its applicability in the inspection, a tryptophan sulfonate assay was developed to test 50 commercial food samples, and the results indicated that it performed better than the sulfite assay in terms of both accuracy and efficiency.

Abstract
The release of endocrine-disrupting chemicals (EDCs) into the aquatic environment, specifically the oceans, is increasing, leading to adverse effects on the marine ecosystem. Using optimized QuEChERS extraction methods, the study created the first contamination profiles of 44 EDCs, including organic ultraviolet compounds, pharmaceutically active compounds, hormones, and phthalate esters, in 114 fish muscle samples from five species collected along the Vietnamese coast. The study found that largehead hairtail exhibited the highest total EDCs at 208.3 ng g-1 lipid weight (lw), while Indian catfish displayed the lowest concentration at 105.5 ng g-1 lw. Besides, the study observed notable variations in the total EDCs across distinct fish species. This study hypothesized that the marine economic characteristics of each research location have a significant role in shaping the pollution profile of EDCs found in fish specimens taken from the corresponding area. As a result, a notable disparity in the composition of organic ultraviolet compounds has been observed among the three regions of North, Central, and South Vietnam (Mann-Whitney U test, p < 0.05). Despite these findings, EDC-contaminated fish did not pose any health risks to Vietnam's coastal population.

Abstract
Parabens have emerged as the primary preservative of choice in numerous consumer goods, prompting growing apprehension regarding their potential for human exposure. The study employed the optimized QuEChERs sample extraction method and the UHPLC-Q-Orbitrap HRMS system to generate the initial contamination profiles of seven parabens and their four metabolites in a total of 114 fish samples found along the coastline of Vietnam. The findings of the study indicated that methylparaben was the predominant substance detected, exhibiting the highest concentration in the largehead hairtail (Trichiurus lepturus) species at 32.8 ng g-1 dry weight (dw). Additionally, the metabolites with the highest detectable concentrations in the largehead hairtail were found to be 4-HB and 3,4-DHB, with levels of 8822.0 ng g-1 dw and 3490.8 ng g-1 dw, respectively. Besides, the study reveals notable variations in paraben concentrations across three distinct regions in Vietnam, namely the Central, North, and South (Mann-Whitney U test, p < 0.05). The trophic magnification factors (TMF) for methylparaben, ethylparaben, ethyl protocatechuate, and 4-hydroxybenzoic acid exhibited values exceeding 1, indicating substantial biomagnification of these substances within the marine food web of Vietnam. Additionally, noteworthy positive associations have been observed between methylparaben and ethylparaben, as well as their respective metabolites. Based on the findings of the study, it can be concluded that there is no direct impact of seafood consumption on human health in Vietnam.

Abstract
Dairy products can be contaminated by parabens and phenolic compounds from a vast variety of sources, such as packaging and manufacturing processes, or livestock through feed and environmental water. A two-step continuous solid-phase extraction (SPE) and purification methodology was developed here for the determination of both types of compounds. In the first step, a sample extract is passed in sequence through an EMR-lipid sorbent and an Oasis PRiME HBL sorbent to remove fat and preconcentrate the analytes for subsequent detection and quantification by UHPLC-MS/MS. This method enabled the determination of 28 parabens and phenolic contaminant with excellent recovery (91-105%) thanks to the SPE sorbent combination used. The proposed method was validated through the determination of the target compounds, and was found to provide low detection limits (1-20 ng/kg) with only slight matrix effects (0-10%). It was used to analyse 32 different samples of dairy products with different packaging materials. Bisphenol A and bisphenol Z were the two phenolic compounds quantified in the largest number of samples, at concentrations over the range of 24-580 ng/kg, which did not exceed the limit set by European regulations. On the other hand, ethylparaben was the paraben found at the highest levels (33-470 ng/kg).

Abstract
A method featuring matrix solid-phase dispersion combined with solid-phase microextraction coupled to gas chromatography-mass spectrometry was developed to determine parabens, musks, antimicrobials, UV filters, and an insect repellent in fish. Optimization and validation of the method was carried out on tilapia and salmon samples. Acceptable linearity (R2 > 0.97), precision (relative standard deviations < 13 %) and accuracy (recovery > 80 %) at two concentration levels for all analytes were obtained using both matrices. The limits of detection ranged from 0.01 to 1.01 μg g-1 (wet weight) for all analytes except for methyl paraben. The SPME Arrow format was applied to increase the sensitivity of the method, and yielded detection limits more than ten times lower than those achieved with traditional SPME. The miniaturized method can be applied to various fish species, regardless of their lipid content, and represents a useful tool for quality control and food safety purposes.

Abstract
In this study, a multi-residue analysis was developed for 32 compounds, including pesticides and metabolites, in five meat products using gas chromatography-tandem mass spectrometry (GC-MS/MS). The validation of the developed analytical method was also evaluated in accordance with Codex Alimentarius guidelines. Aminopropyl (NH2), C18, and florisil solid phase extraction (SPE) cartridges were used to evaluate and optimize the cleanup procedure of the tested samples prior to GC-MS/MS analysis. Based on the analytical performance, the C18 SPE cartridge was deemed to be the most suitable among the examined SPE cartridges. The optimized method demonstrated that 29 out of 32 tested compounds acquired good linearity (R2 ≥ 0.99), and 25 tested compounds displayed the method limit of quantification (MLOQ) ≤ 0.01 mg/kg. Out of the 32 tested compounds, only 21 compounds met the acceptable analytical criteria for the lard and tallow samples, compared to 27 compounds in the beef, pork, and chicken samples that falls within the acceptable standards for recovery (70–120%) and analytical precision (relative standard deviation RSD ≤ 20%). The average matrix effect was widely varied (20.1–64.8%) in the studied meat samples that were affected by either ion enhancement or suppression. In particular, in the lard sample, 13 compounds showed poor recovery and analytical precision due to ion suppression. Thus, the matrix effect (ME) was considered a critical factor during multi-residue pesticide analysis in different meat products. In conclusion, this developed analytical method can be used as a routine monitoring system for residual pesticide analysis in livestock products with acceptable analytical standards. Further meticulous analytical studies should be optimized and validated for multi-residue pesticide analysis in diversified meat products.

Abstract
Nanoencapsulation delivery systems have been used to enhance the absorption and bioefficacy of phytochemicals. With modified physical and chemical properties, nanoencapsulated phytochemicals differ from their free forms in digestion, absorption, and metabolism. These pharmacokinetic processes can be assessed using a combination of various in vitro/in vivo models and analytical strategies, but each approach has its limitations. The correlation between current models and physiological conditions and their feasibility for nanoencapsulation systems require further validation. More detailed studies are still needed to clarify how nanoencapsulation affects the phytochemical and host interaction. Future investigations must take extra caution in model selection and result interpretation.

Abstract
Due to the globalization of food production and distribution, the food chain has become increasingly complex, making it more difficult to evaluate unexpected food changes. Therefore, establishing sensitive, robust, and cost-effective analytical platforms to efficiently extract and analyze the food-chemicals in complex food matrices is essential, however, challenging. LC/MS-based metabolomics is the key to obtain a broad overview of human metabolism and understand novel food science. Various metabolomics approaches (e.g., targeted and/or untargeted) and sample preparation techniques in food analysis have their own advantages and limitations. Selecting an analytical platform that matches the characteristics of the analytes is important for food analysis. This review highlighted the recent trends and applications of metabolomics based on "foodomics" by LC-MS and provides the perspectives and insights into the methodology and various sample preparation techniques in food analysis.

Abstract
Pesticide extraction in rapeseed samples remains a great analytical challenge due to the complexity of the matrix, which contains proteins, fatty acids, high amounts of triglycerides and cellulosic fibers. An HPLC-MS/MS method was developed for the quantification of 179 pesticides in rapeseeds. The performances of the quick, easy, cheap, effective, rugged, and safe (QuEChERS) method were evaluated using different dispersive solid-phase extraction (d-SPE) sorbents containing common octadecylsilane silica/primary-secondary amine adsorbent (PSA/C18) and new commercialized d-SPE materials dedicated to fatty matrices (Z-Sep, Z-Sep+, and EMR-Lipid). The analytical performances of these different sorbents were compared according to the SANTE/12682/2019 document. The best results were obtained using EMR-Lipid in terms of pesticide average recoveries (103 and 70 of the 179 targeted pesticides exhibited recoveries within 70-120% and 30-70%, respectively, with low RSD values). Moreover, the limits of quantification (LOQ) range from 1.72 µg/kg to 6.39 µg/kg for 173 of the pesticides. Only the recovery for tralkoxydim at 10 μg/kg level was not satisfactory (29%). The matrix effect was evaluated and proved to be limited between -50% and 50% for 169 pesticides with this EMR-Lipid and freezing. GC-Orbitrap analyses confirmed the best efficiency of the EMR-Lipid sorbent for the purification of rapeseeds.
