Abstract
In this study, oregano essential oil (OEO)-loaded soluble soybean polysaccharide (SSPS) -nisin nanoparticles (ONSNPs) were formulated through electrostatic attraction-driven and hydrophobic interactions utilizing SSPS, nisin, and OEO as raw materials. ONSNPs were integrated into polyvinyl alcohol (PVA) and soybean protein isolate (SPI) matrices to create composite pads (PS-ONSNPs) by physically cross-linked using a simple freeze-thaw cycling process. The effects of ONSNPs content on the structure and physicochemical properties were evaluated. The results revealed that strong intermolecular interactions between ONSNPs and the PS matrices affected the crystallinity, microstructure, and thermal stability of the pads. Upon incorporating 5 % to 15 % ONSNPs, the structure of composite pads became denser, and the mechanical properties and water resistance were enhanced. Concurrently, the PS-ONSNPs pads facilitated the protection and controlled release of OEO. Furthermore, ONSNPs significantly improved the antioxidant activity of the pads and effectively inhibited the growth of Staphylococcus aureus and Escherichia coli. The prepared PS-ONSNPs 15 % pad was applied to storage experiments of fresh pork, which could extend the shelf life of meat to 10-12 days under 4 °C storage conditions. Therefore, the composite pad devised in this research holds promise as a viable option for intelligent active packaging of fresh meat.

Abstract
Nanocellulose has been favored as one of the most promising sustainable nanomaterials, due to its competitive advantages and superior performances such as hydrophilicity, renewability, biodegradability, biocompatibility, tunable surface features, excellent mechanical strength, and high specific surface area. Based on the above properties of nanocellulose and the advantages of hydrogels such as high water absorption, adsorption, porosity and structural adjustability, nanocellulose based hydrogels integrating the benefits of both have attracted extensive attention as promising materials in various fields. In this review, the main fabrication strategies of nanocellulose based hydrogels are initially discussed in terms of different crosslinking methods. Then, the typical properties of nanocellulose based hydrogels are comprehensively summarized, including porous structure, swelling ability, adsorption, mechanical, self-healing, smart response performances. Especially, relying on these properties, the general application of nanocellulose based hydrogels in food field is also discussed, mainly including food packaging, food detection, nutrient embedding delivery, 3D food printing, and enzyme immobilization. Finally, the safety of nanocellulose based hydrogel is summarized, and the current challenges and future perspectives of nanocellulose based hydrogels are put forward.

Abstract
Biopolymer hydrogels have a broad range of applications as soft materials in a variety of commercial products, including foods, cosmetics, agrochemicals, personal care products, pharmaceuticals, and biomedical products. They consist of a network of entangled or crosslinked biopolymer molecules that traps relatively large quantities of water and provides semi-solid properties, like viscoelasticity or plasticity. Composite biopolymer hydrogels contain inclusions (fillers) to enhance their functional properties, including solid particles, liquid droplets, gas bubbles, nanofibers, or biological cells. These fillers vary in their composition, size, shape, rheology, and surface properties, which influences their impact on the rheological properties of the biopolymer hydrogels. In this article, the various types of biopolymers used to fabricate composite hydrogels are reviewed, with an emphasis on edible proteins and polysaccharides from sustainable sources, such as plants, algae, or microbial fermentation. The different kinds of gelling mechanism exhibited by these biopolymers are then discussed, including heat-, cold-, ion-, pH-, enzyme-, and pressure-set mechanisms. The different ways that biopolymer molecules can organize themselves in single and mixed biopolymer hydrogels are then highlighted, including polymeric, particulate, interpenetrating, phase-separated, and co-gelling systems. The impacts of incorporating fillers on the rheological properties of composite biopolymer hydrogels are then discussed, including mathematical models that have been developed to describe these effects. Finally, potential applications of composite biopolymer hydrogels are presented, including as delivery systems, packaging materials, artificial tissues, wound healing materials, meat analogs, filters, and adsorbents. The information provided in this article is intended to stimulate further research into the development and application of composite biopolymer hydrogels.

Abstract
This study explored the preparation of a novel composite hydrogel based on deep eutectic solvent (DES) with lysine (Lys) and its application in pressure sensing and Fe3+ adsorption. DES was synthesized from acrylamide (AM) and urea (U) as hydrogen bond donors (HBD) with choline chloride (ChCl) as hydrogen bond acceptor (HBA), and Lys was used as a functional filler, and Lys/P(AM-U-ChCl) composite hydrogels were successfully prepared by frontal polymerization (FP) method. The structure of the hydrogels was characterized in depth using Fourier transform infrared spectroscopy (FTIR) and scanning electron microscopy (SEM). The effects of Lys content on the mechanical properties, pH-responsive behavior, pressure-sensitive properties, and Fe3+ adsorption capacity of the hydrogels were further analyzed. It was found that the introduction of Lys significantly improved the compressive and pressure-sensitive properties of the hydrogels. The composite hydrogels exhibited excellent swelling equilibrium rates at different pH values. The capacitance change of the hydrogel with 0.5 wt% Lys at 200 g pressure was 2.12-fold higher than that of the hydrogel without Lys addition, and the adsorption efficiency of the hydrogel for Fe3+ was greatly enhanced. This study provides a new idea for the functionalized design of composite hydrogels and demonstrates their great application prospects in high-performance pressure sensors and heavy metal ion adsorption.

Abstract
The continuing development of heavy industry worldwide has led to an exponential increase in the amount of wastewater discharged from factories and entering the natural world in the form of rivers and air. As the top of the food chain in the natural world, toxic ions penetrate the human body through the skin, nose, and a few milligrams of toxic ions can often cause irreversible damage to the human body, so ion detection and adsorption is related to the health and safety of human beings. Hydrogel is a hydrophilic three-dimensional reticulated polymer material that first synthesized by Wichterle and Lim in 1960, which is rich in porous structure and has a variety of active adsorption sites as a new type of adsorbent and can be used to detect ions through the introduction of photonic crystals, DNA, fluorescent probe, and other materials. This review describes several synthetic and natural hydrogels for the adsorption and detection of ions and discusses the mechanism of ion adsorption by hydrogels, and provide a perspective for the future development.

Abstract
In recent years, many researchers have focused on designing hydrogels with specific functional groups that exhibit high affinity for various contaminants, such as heavy metals, organic pollutants, pathogens, or nutrients, or environmental parameters. Novel approaches, including cross-linking strategies and the use of nanomaterials, have been employed to enhance the structural integrity and performance of the desired hydrogels. The evolution of these hydrogels is further highlighted, with an emphasis on fine-tuning features, including water absorption capacity, environmental pollutant/factor sensing and selectivity, and recyclability. Furthermore, this review investigates the emerging topic of stimuli-responsive smart hydrogels, underscoring their potential in both sorption and detection of water pollutants. By critically assessing a wide range of studies, this review not only synthesizes existing knowledge, but also identifies advantages and limitations, and describes future research directions in the field of chemically engineered hydrogels for water purification and monitoring with a low environmental impact as an important resource for chemists and multidisciplinary researchers, leading to improvements in sustainable water management technology.

Abstract
Hydrogels are widely used as excellent drug carriers in the field of biomedicine. However, their application in medicine is limited by their poor mechanical properties and softness. To improve the mechanical properties of hydrogels, a novel triple-network amphiphilic hydrogel with three overlapping crosslinking methods using a one-pot free-radical polymerization was synthesized in this study. Temperature-sensitive and pH-sensitive monomers were incorporated into the hydrogel to confer stimulus responsiveness, making the hydrogel stimuli-responsive. The successful synthesis of the hydrogel was confirmed using techniques, such as proton nuclear magnetic resonance spectroscopy (1H NMR), Fourier-transform infrared spectroscopy (FT-IR), and X-ray diffraction (XRD). In order to compare and analyze the properties of physically crosslinked hydrogels, physically-chemically double-crosslinked hydrogels, and physically-chemically clicked triple-crosslinked hydrogels, various tests were conducted on the gels' morphology, swelling behavior, thermal stability, mechanical properties, and drug loading capacity. The results indicate that the triple-crosslinked hydrogel maintains low swelling, high mechanical strength, and good thermal stability while not significantly compromising its drug delivery capability.

Abstract
Biodegradable and sustainable food packaging (FP) materials have gained immense global importance to reduce plastic pollution and environmental impact. Therefore, this review focused on the recent advances in biopolymers based on cellulose derivatives for FP applications. Cellulose, an abundant and renewable biopolymer, and its various derivatives, namely cellulose acetate, cellulose sulphate, nanocellulose, carboxymethyl cellulose, and methylcellulose, are explored as promising substitutes for conventional plastic in FP. These reviews focused on the production, modification processes, and properties of cellulose derivatives and highlighted their potential for their application in FP. Finally, we reviewed the effects of incorporating cellulose derivatives into film in various aspects of packaging properties, including barrier, mechanical, thermal, preservation aspects, antimicrobial, and antioxidant properties. Overall, the findings suggest that cellulose derivatives have the potential to replace conventional plastics in food packaging applications. This can contribute to reducing plastic pollution and lessening the environmental impact of food packaging materials. The review likely provides insights into the current state of research and development in this field and underscores the significance of sustainable food packaging solutions.

Abstract
Tissue development is mediated by a combination of mechanical and biological signals. Currently, there are many reports on biological signals regulating repair. However, insufficient attention is paid to the process of mechanical regulation, especially the active mechanical regulation in vivo, which has not been realized. Herein, a novel dynamically regulated repair system for both in vitro and in vivo applications is developed, which utilizes magnetic nanoparticles as non-contact actuators to activate hydrogels. The magnetic hydrogel can be periodically activated and deformed to different amplitudes by a dynamic magnetic system. An in vitro skin model is used to explore the impact of different dynamic stimuli on cellular mechano-transduction signal activation and cell differentiation. Specifically, the effect of mechanical stimulation on the phenotypic transition of fibroblasts to myofibroblasts is investigated. Furthermore, in vivo results verify that dynamic massage can simulate and enhance the traction effect in skin defects, thereby accelerating the wound healing process by promoting re-epithelialization and mediating dermal contraction.

Abstract
An oyster peptide (OPs)-loaded composite nanogel based on carboxymethyl cellulose and carboxymethyl chitosan (CMC@CMCS@OPs) was prepared, and the characterization, absorption and transport mechanism were further investigated. CMC@CMCS@OPs, a dense spherical microstructure with a diameter of ∼64 nm, which enhanced the thermal and digestive stabilities of individual OPs and improved its retention rate of hypoglycemic activity in vitro. The swelling response and in-vitro release profiles showed that CMC@CMCS@OPs could help OPs achieve targeted and controlled release in the intestine. In addition, CMC@CMCS@OPs had no cytotoxicity on Caco-2 cells, and its apparent permeability coefficients increased 4.70-7.45 times compared with OPs, with the absorption rate increased by 129.38 %. Moreover, the transcytosis of CMC@CMCS@OPs nanogel occurred primarily through the macropinocytosis pathway, endocytosis pathway and intestinal efflux transporter-mediated efflux. Altogether, these results suggested that CMC@CMCS@OPs nanogel could be as an effective OPs delivery device for enhancing its stability and absorption.

Abstract
As the most abundant and renewable natural resource, cellulose has attracted significant attention and research interest for the production of hydrogels (HGs). To address environmental issues and emerging demands, the benefits of naturally produced HGs include excellent mechanical properties and superior biocompatibility. HGs are three-dimensional networks created by chemical or physical cross-linking of linear or branched hydrophilic polymers and have high capacity for absorption of water and biological fluids. Although widely used in the food and biomedical fields, most HGs are not biodegradable. Nanocellulose hydrogels (NC-HGs) have been extensively applied in the food industry for detection of freshness, chemical additives, and substitutes, as well as the biomedical field for use as bioengineering scaffolds and drug delivery systems owing to structural interchangeability and stimuli-responsive properties. In this review article, the sources, structures, and preparation methods of NC-HGs are described, applications in the food and biomedical industries are summarized, and current limitations and future trends are discussed.

Abstract
Human defense against infection remains a global topic. In addition to developing novel anti-infection drugs, therapeutic drug delivery strategies are also crucial to achieving a higher efficacy and lower toxicity of these drugs for treatment. The application of hydrogels has been proven to be an effective localized drug delivery approach to treating infections without generating significant systemic adverse effects. The recent emerging dynamic hydrogels further show power as injectable formulations, giving new tools for clinical treatments. In this review, we delve into the potential applications of dynamic hydrogels in antibacterial and antiviral treatments and elaborate on their molecular designs and practical implementations. By outlining the chemical designs underlying these hydrogels, we discuss how the choice of dynamic chemical bonds affects their stimulus responsiveness, self-healing capabilities, and mechanical properties. Afterwards, we focus on how to endow dynamic hydrogels with anti-infection properties. By comparing different drug-loading methods, we highlight the advantages of dynamic chemical bonds in achieving sustained and controlled drug release. Moreover, we also include the design principles and uses of hydrogels that possess inherent anti-infective properties. Furthermore, we explore the design principles and applications of hydrogels with inherent anti-infective properties. Finally, we briefly summarize the current challenges faced by dynamic hydrogels and present a forward-looking vision for their future development. Through this review, we expect to draw more attention to these therapeutic strategies among scientists working with chemistry, materials, as well as pharmaceutics.

Abstract
Responsive hydrogels have received much attention for improving the detection performance of electrochemical sensors because of their special responsiveness. However, current responsive hydrogels generally suffer from long response times, ranging from tens of minutes to several hours. This situation severely limits the detection performance and practical application of electrochemical sensors. Here, an electrochemical sensing platform was constructed by employing dual-responsive polyacrylamide/zinc finger peptide/Fe-MOF hydrogel (PZFH) as the silent layer, sodium alginate-Ni2+-graphene oxide hydrogel as the signal layer. GOx@ZIF-8, as the immunoprobe, catalyzed glucose to H2O2 and gluconic acid, resulting in the cleavage of immunoprobe as the pH decreased and subsequent release of Zn2+ ions. During the process of Fe-MOF converting from Fe3+ to Fe2+, free radicals were generated and used to destroy the structure of the PZFH. Cysteine and histidine in the zinc finger peptide can specifically bind to Zn2+ to create many pores in PZFH, exposing the signal layer. These synergistic effects rapidly decreased the impedance of PZFH and increased the electrochemical signal of Ni2+. The electrochemical sensing platform was used to detect pro-gastrin-releasing peptide with response times as short as 7 min of PZFH, a wide linear range from 100 ng mL-1 to 100 fg mL-1, and an ultra-low limit of detection of 14.24 fg mL-1 (S/N = 3). This strategy will provide a paradigm for designing electrochemical sensors.

Abstract
This study is a bibliometric analysis and literature review on the use of oleogels (OGs), hydrogels (HGs) and hybrid gels (HYGs) in chocolate, compounds and spreads with the aim of reducing the saturated fat in these products. The articles were selected by analyzing titles, keywords and abstracts in the Web of Science (WoS), Scopus and Google Scholar databases. Supplementary documents were obtained from government sources, including patent registrations. The theoretical and practical aspects were critically analyzed, highlighting the main points of agreement and disagreement between the authors. The results revealed a lack of regulations and official guidelines that widely allow the use of OGs, HGs and HYGs in chocolate confectionery products. The type and characteristics of raw materials affect the properties of products. Replacing cocoa butter (CB) with OGs, HGs or HYGs also affects texture, melting point and behavior, and nutritional aspects. These substitutions can result in products with better sensory acceptance and health benefits, such as reducing saturated fat and promoting cardiovascular health. However, it is important to find the ideal combination and proportions of components to obtain the desired properties in the final products.

Abstract
In recent years, hydrogels derived from natural polymers have gained considerable attention. However, lack of mechanical strength and poor stability has become major lacuna of such systems. Scientists have attempted to resolve this problem by introducing chemical cross-linkers or synthetic modifications of natural polymers. In contrast, biological cross-linkers may be more beneficial due to their cytocompatibility and non-immunogenicity. As a biogelator, amino acids (AA) may be lucrative, yet they remain untapped till date. Present study, for the first time, reports exploitation of ʟ-Lysine, ʟ-Arginine, ʟ-Aspartic acid, and ʟ-Glutamic acid as biogelator to fabricate novel gellan gum (GG) hydrogels through green chemistry. Furthermore, as a first instance, molecular docking was applied to gain insight into the interaction between GG and AA. As predicted through docking, physical cross-linking of these hydrogels accounted for their thermo-reversibility. Moreover, to assess the suitability of prepared hydrogel for its intended use, systematic characterization studies were performed via FTIR, Raman spectroscopy, XRD, FE-SEM, and TGA. Additionally, rheological behavior of hydrogels was investigated using variety of parameters. Interestingly, GG-AA hydrogels exhibited around 99 % antibacterial activity against multidrug-resistant bacteria. According to the findings of this study, these novel hydrogels may have immense potential in the food and biomedical sectors.

Abstract
The development and synthesis of hydrogels for chemical and biosensing are of great value. Hydrogels can be tailored to its own physical structure, chemical properties, biocompatibility, and sensitivity to external stimuli when being used in a specific environment. Herein, hydrogels and their applications in chemical and biosensing are mainly covered. In particular, it is focused on the manner in which hydrogels serve as sensing materials to a specific analyte. Different types of responsive hydrogels are hence introduced and summarized. Researchers can modify different chemical groups on the skeleton of the hydrogels, which make them as good chemical and biosensing materials. Hydrogels have great application potential for chemical and biosensing in the biomedical field and some emerging fields, such as wearable devices.

Abstract
Food safety has increasingly become a human health issue that concerns all countries in the world. Some substances in food that can pose a significant threat to human health include, but are not limited to, pesticides, biotoxins, antibiotics, pathogenic bacteria, food quality indicators, heavy metals, and illegal additives. The traditional methods of food contaminant detection have practical limitations or analytical defects, restricting their on-site application. Hydrogels with the merits of a large surface area, highly porous structure, good shape-adaptability, excellent biocompatibility, and mechanical stability have been widely studied in the field of food safety sensing. The classification, response mechanism, and recent application of hydrogel-based biosensors in food safety are reviewed in this paper. Furthermore, the challenges and future trends of hydrogel biosensors are also discussed.

Abstract
Drug synergy has made significant strides in clinical applications in recent decades. However, achieving a platform that enables "single administration, multi-stage release" by emulating the natural physiological processes of the human body poses a formidable challenge in the field of molecular pharmaceutics. Hydrogels, as the novel generation of drug delivery systems, have gained widespread utilization in drug platforms owing to their exceptional biocompatibility and modifiability. Sequential drug delivery hydrogels (SDDHs), which amalgamate the advantages of hydrogel and sequential release platforms, offer a promising solution for effectively navigating the intricate human environment and accomplishing drug sequential release. Inspired by architectural design, this review establishes connections between three pivotal factors in SDDHs construction, namely mechanisms, carrier spatial structure, and stimuli-responsiveness, and three aspects of architectural design, specifically building materials, house structures, and intelligent interactive furniture, aiming at providing insights into recent developments in SDDHs. Furthermore, the dual-drug collocation and cutting-edge hydrogel preparation technologies as well as the prevailing challenges in the field were elucidated.

Abstract
Research on the design, fabrication, and application of double network (DN) hydrogels, assembled from pairs of polymers, has grown recently due to their unique structural, physicochemical, and functional properties. DN hydrogels can be designed to exhibit a broader range of functional attributes than single network (SN) ones, which extends their applications in various fields. There has been strong interest in the development of biopolymer DN hydrogels because of their environmental, sustainability, and safety benefits. However, there is limited knowledge on the formation and application of these novel materials. This article reviews the principles underlying the design and fabrication of hydrogels using different crosslinking approaches, including covalent and/or non-covalent bonding, and the formation mechanisms, network structures, and functional attributes of different DN hydrogels. The impact of polymer composition, structural organization, and bonding on the mechanical and functional properties of DN hydrogels is reviewed. Potential applications of these hydrogels are highlighted, including in tissue engineering, biomedicines, and foods. The functional attributes of DN hydrogels can be tailored to each of these applications by careful selection of the biopolymers and crosslinking mechanisms used to assemble them. Finally, areas where further research are needed to overcome the current limitations of DN hydrogels are highlighted.

Abstract
Colloidal delivery systems are widely used in the food industry to enhance the dispersibility, stability, efficacy, or bioavailability. However, when exposed to the high temperature, delivery systems are often prone to degradation, which limits its application in thermal processing. In this paper, the effects of thermal processing on the performance of traditional protein-based or starch-based delivery systems are firstly described, including the molecular structure changes of proteins, starches or lipids, and the degradation of embedded substances. These effects are unfavorable to the application of the delivery system in thermal processing. Then, strategies of improving the heat resistance of food grade colloid delivery system and their use in frying, baking and cooking food are mainly introduced. The heat resistance of the delivery system can be improved by a variety of strategies, including the development of new heat-resistant materials, the addition of heat-resistant coatings to the surface of delivery systems, the cross-linking of proteins or starches using cross-linking agents, the design of particle structures, the use of physical means such as ultrasound, or the optimization of the ingredient formula. These strategies will help to expand the application of heat-resistant delivery systems so that they can be used in real thermal processing.

Abstract
Sustainable food packaging is a necessary element to ensure the success of a food system, the accomplishment of which is weighed in terms of quality retention and ensured products safety. Irrespective of the raised environmental concerns regarding petroleum-based packaging materials, a sustainable analysis and a lab to land assessment should be a priority to eliminate similar fates of new material. Functionalized bio-based hydrogels are one of the smartest packaging inventions that are expected to revolutionize the food packaging industry. Although in this review, the focus relies on recent developments in the sustainable bio-based hydrogel packaging materials, natural biopolymers such as proteins and polysaccharides from which hydrogels could be obtained, the challenges encountered in hydrogel-based packaging materials and the future prospects of hydrogel-based food packaging materials are also discussed. Moreover, the need for 'Life Cycle Assessment' (LCA), stress on certifications and a sustainable waste management system is also suggested which can bring both food and packaging into the same recycling bins.

Abstract
DNA hydrogels have gained significant attention in recent years as one of the most promising functional polymer materials. To broaden their applications, it is critical to develop efficient methods for the preparation of bulk-scale DNA hydrogels with adjustable mechanical properties. Herein, we introduce a straightforward and efficient molecular design approach to producing physically pure DNA hydrogel and controlling its mechanical properties by adjusting the degree of hydrogen bonding in ultralong single-stranded DNA (ssDNA) precursors, which were generated using a dual rolling circle amplification (RCA)-based strategy. The effect of hydrogen bonding degree on the performance of DNA hydrogels was thoroughly investigated by analyzing the preparation process, morphology, rheology, microstructure, and entrapment efficiency of the hydrogels for Au nanoparticles (AuNPs)-BSA. Our results demonstrate that DNA hydrogels can be formed at 25 °C with simple vortex mixing in less than 10 s. The experimental results also indicate that a higher degree of hydrogen bonding in the precursor DNA resulted in stronger internal interaction forces, a more complex internal network of the hydrogel, a denser hydrogel, improved mechanical properties, and enhanced entrapment efficiency. This study intuitively demonstrates the effect of hydrogen bonding on the preparation and properties of DNA hydrogels. The method and results presented in this study are of great significance for improving the synthesis efficiency and economy of DNA hydrogels, enhancing and adjusting the overall quality and performance of the hydrogel, and expanding the application field of DNA hydrogels.

Abstract
The presence of calcareous concretions on the surface of marine archaeological ceramics is a frequently observed phenomenon. It is necessary to remove these materials when the deposits obscure the feature of ceramics. Unfortunately, calcareous concretions provide distinctive documentation of the burning history of ceramics. The interaction of acid solution or detachment of the deposit layers in physical ways leads to the loss of archeological information. To prevent the loss of archeological information and to achieve precise and gentle concretion removal, responsive hydrogel cleaning systems have been developed. The hydrogels synthesized are composed of networks of poly(vinyl acetate)/sodium alginate that exhibit desirable water retention properties, are responsive to Ca2+ ions, and do not leave any residues after undergoing cleaning treatment. Four distinct compositions were selected. The study of water retention properties involved quantifying the weight changes. The composition was obtained from Fourier transform infrared spectra. The microstructure was obtained from scanning electron microscopy. The mechanical properties were obtained from rheological measurements. To demonstrate both the efficiency and working mechanism of the selected hydrogels, a representative study of mocked samples is presented first. After selecting the most appropriate hydrogel composite, a cleaning process was implemented on the marine archaeological ceramics. This article demonstrates the advantages of stimuli-responsive hydrogels in controlling the release of acid solution release, thereby surpassing the limitations of traditional cleaning methods.

Abstract
Due to the unique and excellent biological, physical, and chemical properties of peptide hydrogels, their application in the biomedical field is extremely wide. The applications of peptide hydrogels are closely related to their unique responsiveness and excellent properties. However, its defects in mechanical properties, stability, and toxicity limit its application in the food field. In this review, we focus on the fabrication methods of peptide hydrogels through the physical, chemical, and biological stimulations. In addition, the functional design of peptide hydrogels by the incorporation with materials is discussed. Meanwhile, the excellent properties of peptide hydrogels such as the stimulus responsiveness, biocompatibility, antimicrobial properties, rheology, and stability are reviewed. Finally, the application of peptide hydrogel in the food field is summarized and prospected.

Abstract
In this study, double cross-linked acrylic acid/bagasse cellulose (AA/BC) porous hydrogels were first prepared using cold plasma (CP) technology instead of chemical initiators. The structure and properties of porous hydrogels, as well as the controlled release and bacteriostatic application as functional carriers, were investigated. Results showed that a novel double cross-linked hydrogel had been successfully synthesized by utilizing •OH and H+ produced during plasma discharge. The acrylic acid (AA) monomers were successfully grafted onto the main chains of bagasse cellulose (BC), forming a porous three-dimensional network structure. The AA/BC porous hydrogels showed excellent swelling levels and intelligent responses. The release of citral in hydrogel inclusion compounds embedded with citral was controlled by adjusting the pH, and the slow release period was about 2 days. The inclusion compounds presented strong bacteriostatic effects against Escherichia coli and Staphylococcus aureus, extending the shelf life of fruits for about 4 days. Therefore, it can be concluded that CP technology is considered to be an efficient and environmental-friendly initiation technology for preparing hydrogels. The potential application of hydrogel inclusion compounds in the food field is expanded.

Abstract
The pH-sensitive hydrogel consisting of carboxymethylated konjac glucomannan (CMKGM) and sodium trimetaphosphate (STMP) was prepared for a potential intestinal targeted delivery system. Both the CMKGM and the CMKGM hydrogel were characterized by FT-IR spectra, X-ray diffraction (XRD), and thermogravimetric analysis (TGA). The Congo red and atomic force microscope (AFM) results showed a coil-to-helix transition of CMKGM in alkaline conditions with the degree of substitution (DS) increased from 0.20 to 0.49. Rheological measurements indicated that the DS and the STMP content collectively influence the mechanical stiffness and swelling properties of the obtained hydrogels. In addition, the swelling behavior of the hydrogels revealed that they were sensitive to pH value changes and were following a Korsmeyer-Peppas gastrointestinal release behavior, indicating that the release was controlled by non-Fickian diffusion. Furthermore, all the results suggested that the prepared pH-sensitive hydrogel may serve as a potential biomaterial for the intestine-targeted delivery system.

Abstract
The complexation of polyelectrolytes with other oppositely charged structures gives rise to a great variety of functional materials with potential applications in a wide spectrum of technological fields. Depending on the assembly conditions, polyelectrolyte complexes can acquire different macroscopic configurations such as dense precipitates, nanosized colloids and liquid coacervates. In the past 50 years, much progress has been achieved to understand the principles behind the phase separation induced by the interaction of two oppositely charged polyelectrolytes in aqueous solutions, especially for symmetric systems (systems in which both polyions have similar molecular weight and concentration). However, in recent years, the complexation of polyelectrolytes with alternative building blocks such as small charged molecules (multivalent inorganic species, oligopeptides, and oligoamines, among others) has gained attention in different areas. In this review, we discuss the physicochemical characteristics of the complexes formed by polyelectrolytes and multivalent small molecules, putting a special emphasis on their similarities with the well-known polycation-polyanion complexes. In addition, we analyze the potential of these complexes to act as versatile functional platforms in various technological fields, such as biomedicine and advanced materials engineering.

Abstract
Smart stimuli-responsive materials can respond to different signals (pH, temperature, light, electricity, etc.), and they have become a hot research topic for drug delivery. As a polysaccharide polymer with excellent biocompatibility, chitosan can be obtained from diverse natural sources. Chitosan hydrogels with different stimuli-response capabilities are widely applied in the drug delivery field. This review highlights and discusses the research progress on chitosan hydrogels concerning their stimuli-responsive capabilities. The feature of various stimuli-responsive kinds of hydrogels is outlined, and their potential use of drug delivery is summarized. Furthermore, the questions and future development chances of stimuli-responsive chitosan hydrogels are analyzed by comparing the current published literature, and the directions for the intelligent development of chitosan hydrogels are discussed.

Abstract
Food safety has always been a major global challenge to human health and the effective detection of harmful substances in food can reduce the risk to human health. However, the food industry has been plagued by a lack of effective and sensitive safety monitoring methods due to the tension between the cost and effectiveness of monitoring. DNA-based hydrogels combine the advantages of biocompatibility, programmability, the molecular recognition of DNA molecules, and the hydrophilicity of hydrogels, making them a hotspot in the research field of new nanomaterials. The stimulus response property greatly broadens the function and application range of DNA hydrogel. In recent years, DNA hydrogels based on stimulus-responsive mechanisms have been widely applied in the field of biosensing for the detection of a variety of target substances, including various food contaminants. In this review, we describe the recent advances in the preparation of stimuli-responsive DNA hydrogels, highlighting the progress of its application in food safety detection. Finally, we also discuss the challenges and future application of stimulus-responsive DNA hydrogels.

Abstract
The objective of this review is to thoroughly investigate herbal nano gels as a promising drug delivery approach for the management of various chronic and acute disorders. Herbal nano gels are a novel and promising drug delivery technique, offering special benefits for better therapeutic efficacy. This review offers a comprehensive analysis of the herbal nano gels with a particular emphasis on their evaluation concerning conventional dosage forms, polymer selection criteria, drug release mechanisms, and applications. The comparison study demonstrates that herbal nano gels have different benefits over conventional dose forms. In the areas of oral administration for improved bioavailability and targeted delivery to the gastrointestinal tract, topical drug delivery for dermatological conditions, and targeted delivery strategies for the site-specific treatment of cancer, inflammatory diseases, and infections, they demonstrate encouraging results in transdermal drug delivery for systemic absorption. A promising platform for improved medication delivery and therapeutic effectiveness is provided by herbal nanogels. Understanding drug release mechanisms further contributes to the controlled and sustained delivery of herbal therapeutics. Some of the patents are discussed and the comparative analysis showcases their superiority over conventional dosage forms, and the polymer selection criteria ensure the design of efficient and optimized formulations. Herbal-based nano gels have become a potential approach for improving drug administration. They provide several advantages such as better stability, targeted delivery, and controlled release of therapeutic components. Herbal nano gels are a promising therapeutic approach with the ability to combat a wide range of conditions like cancer, wound healing and also improve patient compliance.

Abstract
Poly(N-isopropylacrylamide) (PNIPAAm) was introduced into a polyethylene terephthalate (PET) nonwoven fabric to develop novel support for polyamide (PA) thin-film composite (TFC) membranes without using a microporous support layer. First, temperature-responsive PNIPAAm hydrogel was prepared by reactive pore-filling to adjust the pore size of non-woven fabric, creating hydrophilic support. The developed PET-based support was then used to fabricate PA TFC membranes via interfacial polymerization. SEM–EDX and AFM results confirmed the successful fabrication of hydrogel-integrated non-woven fabric and PA TFC membranes. The newly developed PA TFC membrane demonstrated an average water permeability of 1 L/m2 h bar, and an NaCl rejection of 47.0% at a low operating pressure of 1 bar. The thermo-responsive property of the prepared membrane was studied by measuring the water contact angle (WCA) below and above the lower critical solution temperature (LCST) of the PNIPAAm hydrogel. Results proved the thermo-responsive behavior of the prepared hydrogel-filled PET-supported PA TFC membrane and the ability to tune the membrane flux by changing the operating temperature was confirmed. Overall, this study provides a novel method to fabricate TFC membranes and helps to better understand the influence of the support layer on the separation performance of TFC membranes.

Abstract
Milk proteins are excellent biomaterials for the modification and formulation of food structures as they have good nutritional value; are biodegradable and biocompatible; are regarded as safe for human consumption; possess valuable physical, chemical, and biological functionalities. Hydrogels are three-dimensional, cross-linked networks of polymers capable of absorbing large amounts of water and biological fluids without dissolving and have attained great attraction from researchers due to their small size and high efficiency. Gelation is the primary technique used to synthesize milk protein nanohydrogels, whereas the denaturation, aggregation, and gelation of proteins are of specific significance toward assembling novel nanostructures such as nanohydrogels with various possible applications. These are synthesized by either chemical cross-linking achieved through covalent bonds or physical cross-linking via noncovalent bonds. Milk-protein-based gelling systems can play a variety of functions such as in food nutrition and health, food engineering and processing, and food safety. Therefore, this review highlights the method to prepare milk protein nanohydrogel and its diverse applications in the food industry.

Abstract
Hydrogels obtained from natural polymers have received widespread attention for their excellent biocompatible property, nontoxicity, easy gelation, and functionalization. Polysaccharides can regulate the gut microbiota and improve the intestinal microenvironment, thus exerting the healthy effect of intestinal immunity. In an active substance delivery system, the extent and speed of the substance reaching its target are highly dependent on the carrier. Thus, the smart active substance delivery systems are gradually increasing. The smart polysaccharide-hydrogels possess the ability in response to external stimuli through changing their volume phase and structure, which are applied in various fields. Natural polysaccharide-based hydrogels possess excellent characteristics of environmental friendliness, good biocompatibility, and abundant sources. According to the response type, natural polysaccharide-based hydrogels are usually divided into stimulus-responsive hydrogels, including internal response (pH, temperature, enzyme, redox) and external response (light, electricity, magnetism) hydrogels. The delivery system based on polysaccharides can exert their effects in the gastrointestinal tract. At the same time, polysaccharides may also take part in regulating the brain signals through the microbiota-gut-brain axis. Therefore, natural polysaccharide-hydrogels are considered as promising biomaterials, which can be designed as delivery systems for regulating the gut-brain axis. This article reviews the research advance of stimulus-responsive hydrogels, which focus on the types, response characteristics, and applications for polysaccharide-based smart hydrogels as delivery systems.

Hydrogels can absorb and/or retain components in the interstitial spaces due to the 3D cross-linked polymer network, and thus, these matrices can be used in different engineering applications. This study focuses on the physicochemical and textural properties, as well as bioactive compounds and their antioxidant activity stability of commercial hydrogels fortified with cryoconcentrated blueberry juice (CBJ) stored for 35 days. CBJ was added to commercial hydrogels (gelatin gel (GG), aerated gelatin gel (AGG), gummy (GM), and aerated gummy (AGM)). The samples showed a total polyphenol, anthocyanin, and flavonoid content ranging from 230 to 250 mg GAE/100 g, 3.5 to 3.9 mg C3G/100 g, and 120 to 136 mg CEQ/100 g, respectively, and GG and GM showed the lowest bioactive component degradation rate, while AGM presented the highest degradation. GG and GM samples could be stored for up to 21 days without significant changes, while the results indicated ≈15 days for the AGG and AGM samples. Thereby, CBJ offers enormous possibilities to be used as a functional ingredient due to the high nutritional values, and it allows enriching different hydrogel samples, and in turn, the structures of hydrogels protected components during in vitro digestion, enhancing the bioaccessibility after the digestion process.

Abstract
Biomaterials engineering and biotechnology have advanced significantly towards probiotic encapsulation with encouraging results in assuring sufficient bioactivity. However, some major challenges remain to be addressed, and these include maintaining stability in different compartments of the gastrointestinal tract (GIT), favoring adhesion only at the site of action, and increasing residence times. An alternative to addressing such challenges is to manufacture encapsulates with stimuli-responsive polymers, such that controlled release is achievable by incorporating moieties that respond to chemical and physical stimuli present along the GIT. This review highlights, therefore, such emerging delivery matrices going from a comprehensive description of addressable stimuli in each GIT compartment to novel synthesis and functionalization techniques to currently employed materials used for probiotic’s encapsulation and achieving multi-modal delivery and multi-stimuli responses. Next, we explored the routes for encapsulates design to enhance their performance in terms of degradation kinetics, adsorption, and mucus and gut microbiome interactions. Finally, we present the clinical perspectives of implementing novel probiotics and the challenges to assure scalability and cost-effectiveness, prerequisites for an eventual niche market penetration.

Abstract
Zein-based nanoparticles loaded with bioactive compounds have positive prospects in the food industry, but an important limiting factor for development is colloidal instability. Currently, extensive researches are focused on solving the instability of zein nanoparticles, but since the beginning of the studies, there has not been a summary of the factors affecting the stability of zein-based nanoparticles. In the present work, the factors were reviewed comprehensively from the perspective of carrier construction and application evaluation. The former mainly includes type, quantity, and characteristics of biopolymer, the mass ratio of biopolymer/bioactive compound to zein, blending sequence of biopolymer, and location of encapsulated bioactive compounds. The latter mainly includes pH, heating, ionic strength, storage, freeze-drying, and gastrointestinal digestion. The former is the prerequisite for the success of the latter. The challenge is that stability research is limited to the laboratory level, and it is difficult to ensure that the stability results are suitable for commercial food matrices due to their complexity. At the laboratory level, the future trends are the influence of external energy and the cross-complexity and uniformity of stability research. The review is expected to provide systematic understanding and guidance for the development of zein-based nanoparticles stability.

Abstract
Starch wastewater is a wide range of environmental issues with organic pollutants. A high efficiency and stability hydrogel-organic degradation system was designed via Bacillus Subtilis with Polyethylene glycol (PEG)-modified Polyvinyl alcohol (PVA)/Sodium alginate (SA) hydrogel microspheres. Bacillus subtilis was immobilized on the surface or inside of PEG-modified PVA/SA hydrogels microspheres via physical adsorption. Results showed PEG-modified PVA/SA microspheres had an effect of adsorption on Bacillus subtilis with enhancing bearing rate to 54.22% compared to the blank control group. The effect of microspheres on degradation was remarkable in simulation starch wastewater with a maximum COD removal rate of 93.35% and compared in reality starch wastewater with 90.02% under the optimal condition of pH = 6, 35℃, 20% dosage, 180 rpm. This novel biological method on starch wastewater enhanced tolerance of microorganisms and degradation effect, reflecting safety, effectiveness, and economy with great significance to environmental protection.
