Abstract
Globe artichoke (Cynara cardunculus var. scolymus L.) is widely cultivated in the Mediterranean area and Italy is one of the largest producers. A great issue is represented by its high amount of by-product, mainly consisting of external bracts and stems, but also of residual leaves, stalks, roots, and seeds. Artichoke by-products are rich in nutrients (carbohydrates and proteins) and bioactive compounds (polyphenols and terpenes) and represent potential ingredients for foodstuffs, functional foods, and food supplements, due to their functional and biological properties. In fact, artichoke by-products' components exhibit many beneficial effects, such as dyspeptic, prebiotic, antioxidant, anti-inflammatory, antiglycative, antimicrobial, anticarcinogenic, and hypolipidemic properties. Therefore, they can be considered potential food ingredients useful in reducing the risk of developing metabolic and age-related disorders. This work summarizes the economic and environmental impact of the recovery and valorization of artichoke by-products, focusing on rheological, physical, and biological properties of the different components present in each by-product and their different food applications.

Abstract
Heat sterilization of dairy products can promote the formation of advanced glycation end products (AGEs), protein oxidation products (POPs) and α-dicarbonyl compounds, which have a significant influence on health due to the close association of these products with diabetes complications. In this study, eight oat phenolic acids were first analyzed for their inhibitory effect against AGEs formation. Due to their strong inhibitory effects and structural differences, caffeic acid (CA) and gallic acid (GA) were further selected to assess their anti-glycosylation mechanisms using spectroscopy, chromatography and molecular docking. CA/GA reduced the production of total AGEs and POPs in various bovine milk simulation models and protected whey proteins from structural modifications, oxidation, and cross-linking. Comparative analyses showed a structure-effect relationship between CA/GA and AGEs inhibition. Oat phenolic acids against AGEs and POPs might be related to the unique bonding of key amino acid residues in whey proteins, the inhibitory role of early fructosamine and the trapping of reactive α-dicarbonyl groups to form adducts. In conclusion, oat phenolic acids might present a promising dietary strategy to alleviate AGEs production and glycation of proteins in dairy products upon storage.

Abstract
Rice husk is a good source of polyphenols, but it has not been efficiently utilized in food applications yet. Therefore, the aim of this work is to investigate, by in vitro assays, the polyphenolic extract (RHE) capacity of this waste to counteract the protein glycation at different stages of the reaction, correlating this activity with the antiradical properties. A microwave-assisted extraction using hydro-alcoholic solvents was applied to recover husk polyphenols. Extraction parameters were optimized by the design of the experiment. The extract with the highest polyphenolic recovery was obtained at 500 W and 90 °C, using 1:35 g of dry material/mL solvent, 80% ethanol, and a 5 min extraction time. Results highlight the ability of RHE to inhibit the formation of fructosamine in the early stage of glycation with a dose-dependent activity. Furthermore, in the middle stage of the reaction, the highest RHE tested concentration (2.5 mg/mL) almost completely inhibit the monitored advanced glycation end products (AGEs), as well as showing a good trapping ability against α-dicarbonyl intermediates. A strong positive correlation with antioxidant activity is also found. The obtained results are supported by the presence of ten polyphenols detected by RP-HPLC-DAD-ESI-MSn, mainly hydroxycinnamic acids and flavonoids, already reported in the literature as antiglycative and antioxidant agents.

Abstract
Agroforestry wastes are industrial byproducts available locally such as eucalyptus sawdust (EUC) and sugarcane bagasse (SCB). These byproducts can be used as lignocellulosic raw materials to produce high-value products. This study is a techno-economic analysis of four potential scenarios to produce polyhydroxybutyrate (PHB) and levulinic acid (LA) from hemicellulosic sugars by a fermentative pathway in a biomass waste biorefinery. Mass and energy balances were developed, and technical and economic assessments were carried out to obtain gas, char, and tar from residual solids from autohydrolysis treatment. It was determined that microbial culture could be an attractive option for added-value product production. More than 1500 t/year of PHB and 2600 t/year of LA could be obtained by the proposed pathways. Microbial and enzymatic conversion of LA from sugars could significantly improve energy consumption on the conversion strategy. The products from solid residual valorization (char and tar) are the most important for economic performance. Finally, a variation in specific variables could mean substantial improvements in the final indicators of the processes, reaching a higher NPV than USD 17 million.

Abstract
Chlorogenic acids are hydroxycinnamic derivatives widespread in food or food by-products, known for their antioxidant effects and ability to interfere with the formation of advanced glycation end products (AGEs). AGEs are potential glycotoxins involved in age-related disorders, such as diabetes, cardiovascular diseases, and neurological disorders. The ability of chlorogenic acids to inhibit AGE formation under physiological conditions needs further investigation other than the in vitro assays. Therefore, in this study, the capacity of 5-caffeoylquinic acid (5-CQA) to effectively trap methylglyoxal (MGO), an AGE precursor compound also present in daily consumed food, was investigated by evaluating 5-CQA and MGO metabolic fate when subjected to digestion. Two different in vitro digestion approaches (static based on the Infogest protocol and dynamic based on a novel millifluidic gastrointestinal model) were set up and the samples collected at different steps of the static and dynamic processes were analyzed by a validated RP-HPLC-DAD method. The obtained results indicated that the gastrointestinal process strongly affected the 5-CQA capacity to trap MGO and its resulting antiglycation activity. Therefore, preliminary investigation using advanced in vitro tests, particularly dynamic approaches, should always be performed to predict the effect of the digestion process on the potential bioactives present in food, food by-products, or plant extracts.

Abstract
An ecofriendly approach was developed for preparing copper-doped carbon dots (CDs) with superior photocatalysis using chromium-copper-arsenic (CCA)-treated wood waste as a precursor. Original wood (W-CDs), CCA-treated wood (C-CDs), and bioremediation CCA wood (Y-CDs) were used as the precursors. The chemical composition and structural, morphological, and optical properties, as well as the photocatalytic ability of the synthesized CDs varied with wood type. The C-CDs and W-CDs had similar characteristics: quasispherical in shape and with a diameter of 2 to 4.5 nm. However, the Y-CDs particles were irregular and stacked together, with a size of 1.5-3 nm. The presence of nitrogen prevented the formation of an aromatic structure for those CDs fabricated from bioremediation CCA wood. The three synthesized CDs showed a broad absorption peak at 260 nm and a weak absorption peak at 320 nm. Proof of the model study for the fabrication of luminescent CDs from CCA wood waste for bioimaging was provided. The degradation rate of CD photocatalytic MB was 97.8% for 30 min. Copper doping gives the CDs electron acceptor properties, improving their photocatalytic efficiency. This study provides novel ways to prepare nanomaterials from decommissioned wood as a nontoxic and low-cost alternative to fluorescent dots.

Abstract
The antiglycation effect of elderberries by methylglyoxal (MGO) trapping was studied. Cyanidin-3-glucoside and cyanidin-3-sambubioside were almost totally reacted with MGO. Quercetin-3-glucoside and quercetin-3-rutinoside trap MGO in less extent. Cyanidin-3,5-diglucoside and cyanidin-5-glucoside-3-sambubioside did not react. Elderberries phenols trap MGO decreasing the induced MGO cytotoxicity in HepG2 cells.
The accumulation of advanced glycation end-products (AGEs) in the body is implicated in numerous diseases, being methylglyoxal (MGO) one of the main precursors. One of the strategies to reduce AGEs accumulation might be acting in an early stage of glycation by trapping MGO. Thus, this work aimed to evaluate, for the first time, the potential of elderberries polyphenols to trap MGO, access the formation of MGO adducts, and evaluate the cytoprotection effect in HepG2 and Caco-2 cells. The results demonstrated that monoglycosylated anthocyanins (cyanidin-3-glucoside and cyanidin-3-sambubioside) are very efficient in trapping MGO, forming mono- and di-adducts. Quercetin-3-glucoside and quercetin-3-rutinoside reacted slowly, while diglycosylated anthocyanins did not react. The trapping of MGO by elderberry monoglycosylated anthocyanins significantly decreased the MGO cytotoxicity in HepG2 cells (∼70 % of cell viability), while the effect in Caco-2 cells was lower (∼50 %). Thus, elderberry phenolics present antiglycation potential by trapping MGO.

Abstract
In this study, pulsed electric field (PEF-3 kV/cm; 5 kJ/kg) pretreatment was used to intensify the extractability of valuable intracellular compounds from artichoke by-products during a subsequent aqueous extraction (solid-liquid ratio = 1:10 g/mL, T = 20 °C; t = 120 min). Total phenolic content (TPC), antioxidant activity (DPPH, ABTS) and HPLC-PDA analysis of the artichoke extract (AE) and the biological effects on human cell lines were determined. Chlorogenic acid was found to be the most abundant phenolic compound (53% of the TPC) in the AE. The extract showed good antioxidant properties in a concentration-dependent manner. The potential biological effects of AE were investigated using THP-1 macrophages stimulated by lipopolysaccharides (LPS) as an in vitro model system of oxidative stress. Reduced reactive oxygen species production upon treatment with AE was found. Moreover, AE was able to reduce the secretion of the pro-inflammatory mediators Interleukin-6 and Monocyte Chemoattractant Protein-1 in LPS-stimulated macrophages, as determined by qRT-PCR and ELISA assays. These results highlighted the anti-inflammatory and antioxidant properties of the extracts from PEF-treated artichoke by-products, corroborating their potential application as a source of functional ingredients obtained through a feasible and sustainable process.

Abstract
There is an increasing need for new options to treat diabetes mellitus at its early stage and natural remedies have been recently reassessed as potential candidates owing to their low-cost and effectiveness. Genus Morus plants contain many active compounds with hypoglycaemic, hypolipidemic, and antioxidant effects. Current research on mulberry chemical composition and bioactivity has been generally carried out only on Asian cultivation, where this plant has been traditionally used in the form of leaf infusion for decades. In this work, twelve Italian mulberry cultivars were fully characterised to fill this gap of knowledge, since a strong correlation among composition, genetics and growing area was proven. Antiglycative and hypoglycaemic effects of leaf extracts were evaluated using different in vitro models. The results indicate that the inhibitory effect on carbohydrate digestive enzymes was likely mediated by 1-deoxynojirimycin, kaempferol, quercetin, and chlorogenic acid, acting in a synergistic way. Besides, the combined antiglycative and carbonyl trapping capacities, tested here for the first time, may help in preventing long-term complications related to AGEs in diabetic patients.

The Food for Feed Concept: Redefining the Use of Hotel Food Residues in Broiler Diets. SUSTAINABILITY 2022. Abstract
The large quantities of food waste that are generated every year have raised management concerns. Animal diets might be a feasible strategy for utilizing food waste and partially replacing commercially available feedstuffs. The present study examined the potential use of food waste originating from hotels for broiler chickens’ diets. Two hundred and forty (240) one-day-old broilers were allocated into four treatment groups, namely, control (C), non-meat treatment (NM), non-sterilized treatment (NS) and sterilized treatment (S), each with 5 replicate pens of 12 broilers. The experimental period lasted 42 days. Several parameters were recorded throughout the experiment, such as the initial and final body weight, the feed conversion ratio (FCR), the traits, some biochemical and hematological parameters, the weight of internal organs and selected breast meat quality indices. The results showed no major differences in health parameters and the carcass quality traits. There was also no difference in growth rate between the three groups (C, NS, S), but broilers fed the NM diet (without meat remnants) had a significantly lower growth rate by 11.4% compared to the control. Food waste residues can be an alternative feedstuff for broiler chickens and can maintain performance at acceptable levels.

Abstract
Cardoon (Cynara cardunculus L.) is a Mediterranean plant and member of the Asteraceae family that includes three botanical taxa, the wild perennial cardoon (C. cardunculus L. var. sylvestris (Lamk) Fiori), globe artichoke (C. cardunculus L. var. scolymus L. Fiori), and domesticated cardoon (C. cardunculus L. var. altilis DC.). Cardoon has been widely used in the Mediterranean diet and folk medicine since ancient times. Today, cardoon is recognized as a plant with great industrial potential and is considered as a functional food, with important nutritional value, being an interesting source of bioactive compounds, such as phenolics, minerals, inulin, fiber, and sesquiterpene lactones. These bioactive compounds have been vastly described in the literature, exhibiting a wide range of beneficial effects, such as antimicrobial, anti-inflammatory, anticancer, antioxidant, lipid-lowering, cytotoxic, antidiabetic, antihemorrhoidal, cardiotonic, and choleretic activity. In this review, an overview of the cardoon nutritional and phytochemical composition, as well as its biological potential, is provided, highlighting the main therapeutic effects of the different parts of the cardoon plant on metabolic disorders, specifically associated with hepatoprotective, hypolipidemic, and antidiabetic activity.

Abstract
Compared to other food categories, fruits and vegetables are the most wasted. This leads to the squandering of economic, social, and environmental resources. The reallocation of fruit and vegetable waste (FVW) into animal feed contributes to the sustainability of livestock production, reducing the impact of feed production for land use. In this study, the fruit and vegetable waste from the General Wholesale Market of Milan was considered. FVW samples were collected for one year and were analysed for safety parameters and nutritional, vitamin, and mineral composition. Data showed that dry matter (DM) was on average 10.82 ± 1.21% and neutral detergent fibre (NDF) was on average 22.43 ± 4.52% DM. The presence of soluble sugars (30.51 ± 7.61% DM, on average) was also detected. However, the high moisture content of this waste makes it easily perishable, with detrimental effects on quality, storage, and transportation. A strategy was therefore proposed to reduce the water content of FVW by pressing. Overall, the results highlighted the significant nutritional value of FVW from the wholesale market and the need to develop appropriate technologies to maintain the food chain line safe.

Abstract
The agri-food sector produces a huge amount of agri-food wastes and by-products, with a consequent great impact on environmental, economic, social, and health aspects. The reuse and recycling of by-products represents a very important issue: for this reason, the development of innovative recovery and extraction methodologies must be mandatory. In this context of a circular economy, the study of green extraction techniques also becomes a priority in substitution of traditional extraction approaches. This review is focused on the recovery of chlorogenic acids from agri-food wastes, as these compounds have an important impact on human health, exhibiting several different and important healthy properties. Novel extraction methodologies, namely microwave and ultrasound-assisted extractions, supercritical fluid extraction, and pressurized-liquid extraction, are discussed here, in comparison with conventional techniques. The great potentialities of these new innovative green and sustainable approaches are pointed out. Further investigations and optimization are mandatory before their application in industrial processes.

Abstract
The integral valorization of artichoke bracts generated during industrial canning of artichoke was assessed. The extraction of bioactive compounds was addressed with pressurized hot water under subcritical conditions. The performance of this stage on the extraction of phenolics with antioxidant properties and the saccharidic fraction using conventional and microwave heating was compared. The microwave assisted process was more efficient than the conventional one regarding extraction yields of total solubles, and glucose and fructose oligomers and phenolics, because lower operational temperatures and shorter times were needed. Degradation of fructose oligomers was observed at temperatures higher than 160 °C, whereas the maximal phenolic content occurred at 220 °C. Both the extracts and the residual solids, obtained at conditions leading to maximum phenolics yields, were evaluated for the production of starch-based hydrogels, supplemented with Paulownia leaves' aqueous extracts.

Abstract
Artichoke floral stems (AFS) food waste by-products were examined for their phytochemical constituents and their in vitro and in vivo biological activities. Although that the highest total phenol content and total flavonoid content were found in ethyl acetate extract, methanol extract possessed the strongest DPPH and ABTS radical scavenging activity, and showed the highest reducing ferric antioxidant power (FRAP). The anti-acetylcholinesterase activity was higher in butanol extract, whereas the ethyl acetate extract had the highest inhibitory effect on heat-induced protein denaturation. In alloxan-induced diabetic mice, the AFS methanol extract (AFSE) rich in caffeoylquinic acids and flavones reduced blood glucose, alanine aminotransferase (ALT), aspartate aminotransferase (AST), alkaline phosphatase, creatinine, and improved liver, and renal antioxidative status. Administration of AFSE to diabetic mice reduced total cholesterol, triglycerides, LDL-cholesterol, and the atherogenic index of plasma (AIP) suggesting its hypolipidemic action. Overall, AFS could be considered as attractive source of health-promoting ingredients.

Abstract
The reuse of byproducts from agricultural and food industries represents the key factor in a circular economy, whose interest has grown in the last two decades. Thus, the extraction of bioactives from agro-industrial byproducts is a potential source of valuable molecules. The aim of this work was to investigate the in vitro capacity of byproducts from a new Italian corn variety, named Moradyn, to inhibit the accumulation of advanced glycation end products (AGEs) involved in several chronic age-related disorders. In addition, the hypoglycemic effect of Moradyn was tested by in vitro enzymatic systems. A Moradyn phytocomplex and its purified anthocyanin fraction were able to inhibit fructosamine formation and exhibited antiglycative properties when tested using BSA-sugars and BSA-methylglyoxal assays. These properties could be attributed to the polyphenols, mainly anthocyanins and flavonols, detected by RP-HPLC-DAD-ESI-MSn. Finally, a Moradyn phytocomplex was submitted to a simulated in vitro digestion process to study its bioaccessibility. Moradyn could be considered as a promising food ingredient in the context of typical type 2 diabetes risk factors and the study will continue in the optimization of the ideal formulation to preserve its bioactivities from digestion.

Abstract
Globe artichoke is an intriguing source of indigestible sugar polymers such as inulin-type fructans. In this study, the effect of ultrasound in combination with ethanol precipitation to enhance the extraction of long chain fructans from artichoke wastes has been evaluated. The inulin-type fructans content both from bracts and stems was measured using an enzymatic fructanase-based assay, while its average degree of polymerization (DP) was determined by HPLC-RID analysis. Results show that this method provides artichoke extracts with an inulin-type fructans content of 70% with an average DP between 32 and 42 both in bracts and in stems. The prebiotic effect of long chain inulins from artichoke extract wastes was demonstrated by its ability to support the growth of five Lactobacillus and four Bifidobacterium species, previously characterized as probiotics. Besides, we considered the possibility to industrialize the process developing a simpler method for the production of inulin-type fructans from the artichoke wastes so that the artichoke inulin preparation could be suitable for its use in synbiotic formulations in combination with different probiotics for further studies including in vivo trials.

Abstract
The production of silver nanoparticles (Ag-NPs) from bilberry waste (BW) and red currant waste (RCW) extracts was studied. Red fruit extracts were obtained by treating BW and RCW with aqueous ethanol (50% v/v) at 40 °C. The formation of nanoparticles was monitored spectrophotometrically by measuring the intensity of the surface plasmon resonance band (SPR) of silver. The effects of temperature (20–60 °C) and pH (8–12) on the reaction kinetics and on the properties of Ag-NPs were investigated. Characterization by XRD and dynamic light scattering (DLS) techniques showed that Ag-NPs were highly crystalline, with a face-centered cubic structure and a hydrodynamic diameter of 25–65 nm. The zeta potential was in the range of −35.6 to −20.5 mV. Nanoparticles obtained from BW were slightly smaller and more stable than those from RCW. A kinetic analysis by the initial-rate method showed that there was an optimum pH, around 11, for the production of Ag-NPs. Overall, the results obtained suggest that BW and RCW can be advantageously used as a source of reducing and stabilizing agents for the green synthesis of Ag-NPs.

Abstract
Brewers’ spent grain (BSG) is the most abundant by-product of the brewing process. BSG is currently disposed of or used as a supplement for animal feed, although it contains significant amounts of bioactive compounds of great interest to the pharmaceutical, cosmetic and food sectors. In this study we investigate the feasibility of using a simple solvent extraction procedure to recover phenolic antioxidants from BSG. Acetone–water and ethanol–water mixtures were used as extraction solvents. Phenolic extracts obtained by treatment of BSG with the two solvent systems were characterized in terms of total phenolics and antioxidant activity. For both systems, the extraction yield was maximum at 60% (v/v) organic solvent concentration. At all solvent compositions, mixtures containing acetone provided higher extraction yields. As suggested by the strong correlation between the antioxidant activity of BSG extracts and their phenolic content, the antioxidant capacity of the extracts can be mainly attributed to polyphenols. Overall, the obtained results strongly support the exploitation of BSG as a source of phenolic antioxidants and the possibility of recovering them by a mild and green extraction process.
