Abstract
The current study was undertaken to evaluate short-term and long-term effects of pathogen reduction interventions on food safety. This was accomplished using a model that predicts risk of salmonellosis from whole chickens produced by different scenarios. Interventions investigated were a 50% pathogen reduction before retail (PR), a 50% pathogen reduction at serving by consumer education (CE), and a 75% pathogen reduction by PR + CE. Long-term effects were simulated by reducing consumer resistance by an amount equal to reductions in pathogen exposure caused by interventions in the short-term. In the short-term, risk of salmonellosis was reduced (p < 0.05) from 0.42 to 0.21, 0.23, and 0.13 cases per 100,000 consumers by PR, CE, and PR + CE, respectively. However, in the long-term, risk of salmonellosis was increased (p < 0.05) from 0.42 to 1.03, 1.08, and 2.20 cases per 100,000 consumers by PR, CE, and PR + CE, respectively. These results indicated that food safety benefits of pathogen reduction interventions reversed with time because of a decrease in consumer resistance to salmonellosis.

Abstract
Poultry have been identified as one of the major sources of salmonellosis, with estimates ranging from 10 to 22% of total cases. Despite several advances in the industry and new performance standards, the incidence of salmonellosis in the population has not declined over the last 15 years. Salmonella is pervasive in a wide variety of foods, and thus, estimating its burden resulting from specific food categories has been challenging and plagued with uncertainty due to critical data gaps. The objective of this study was to conduct a year-long market survey (1,322 samples) to help bridge the data gaps on the contamination rates and levels of Salmonella on raw poultry by product type (i.e., breast, thighs, drums, wings, and split breast) and production method (conventional versus organic). The isolates recovered were serotyped and tested for antibiotic sensitivities. A PCR method was utilized for initial screening of samples after an overnight enrichment in tryptic soy broth. Three-tube most-probable-number (MPN) assays and anti-Salmonella immunomagnetic separation methods were utilized to determine the levels of Salmonella and aid with the recovery of Salmonella species, respectively. Eleven percent of the samples were positive for Salmonella. Significant differences in percent positive rates by product type included up to a 4-fold difference in percent positive rates between establishments, ranging from 7 to 31%. Of the samples positive for Salmonella species, 94% had <30 MPN/100 g. Production methods identified as organic or as not using antibiotics had significantly higher rates of recovery of Salmonella. On the other hand, all of the Salmonella isolates that were resistant to two or more antibiotics originated from conventional processing establishments where antibiotics were utilized. In addition, a significant proportion of isolates from conventionally processed products were serotypes clinically relevant to humans.

Abstract
BACKGROUND Evaluating the influence of climate variability on enteric disease incidence may improve our ability to predict how climate change may affect these diseases. OBJECTIVES To examine the associations between regional climate variability and enteric disease incidence in New Zealand. METHODS Associations between monthly climate and enteric diseases (campylobacteriosis, salmonellosis, cryptosporidiosis, giardiasis) were investigated using Seasonal Auto Regressive Integrated Moving Average (SARIMA) models. RESULTS No climatic factors were significantly associated with campylobacteriosis and giardiasis, with similar predictive power for univariate and multivariate models. Cryptosporidiosis was positively associated with average temperature of the previous month (β = 0.130, SE = 0.060, p <0.01) and inversely related to the Southern Oscillation Index (SOI) two months previously (β = -0.008, SE = 0.004, p <0.05). By contrast, salmonellosis was positively associated with temperature (β = 0.110, SE = 0.020, p<0.001) of the current month and SOI of the current (β = 0.005, SE = 0.002, p<0.050) and previous month (β = 0.005, SE = 0.002, p<0.05). Forecasting accuracy of the multivariate models for cryptosporidiosis and salmonellosis were significantly higher. CONCLUSIONS Although spatial heterogeneity in the observed patterns could not be assessed, these results suggest that temporally lagged relationships between climate variables and national communicable disease incidence data can contribute to disease prediction models and early warning systems.

Abstract
Mutations into codons Aspartate-87 (62%) and Serine-83 (38%) in QRDR of gyrA were identified in 105 Salmonella strains resistant to nalidixic acid (94 epidemic and 11 of poultry origin). The results show a high incidence of mutations associated to quinolone resistance but suggest association with others mechanisms of resistance.

Abstract
Consumption of Salmonella-contaminated foods, such as poultry and fresh eggs, is known to be one of the main causes of salmonellosis. Conventional PCR methods, including real-time PCR for rapid detection of Salmonella, in general require skilled technicians and costly instruments. A recently developed novel convective PCR, insulated isothermal PCR (iiPCR), is carried out in polycarbonate capillary tubes. In this study, we designed TaqMan probes and PCR primers based on the yrfH gene encoding a heat shock protein for the iiPCR detection of Salmonella in chicken meat samples. The TaqMan probe was labeled with 6-carboxyfluorescein and 6-carboxytetramethylrhodamine at the 5' and 3' ends, respectively. The PCR amplicon was 133 bp. A typical run of this iiPCR assay was completed within 1 h. Specific PCR products were obtained for 148 strains representing 49 serotypes of Salmonella tested. Under the same conditions, false-positive results were not obtained for 98 non-Salmonella strains tested, including strains of Enterobacteriaceae closely related to Salmonella. For chicken meat samples, with a 5-h enrichment step Salmonella at as low as 10⁰ CFU/g of poultry meat could be detected. Because the amplification signals from the probes are detectable at 520 nm, identification of the PCR products by gel electrophoresis is not required. Compared with conventional PCR, the iiPCR system requires less expertise and provides an economical, reliable, and rapid tool for result interpretation. Detection results can be obtained within 8 h, including the enrichment and DNA extraction steps.

Abstract
Abstract Food Business Operators (FBO) are responsible for the safety of the food they produce and in Ireland those under the regulatory control of the Department of Agriculture, Food and Marine are required to provide summary data on microbiological tests undertaken as part of their food safety controls. These data are provided to the National Reference Laboratory through the 25 private laboratories undertaking the testing. Results Over the five-year period Salmonella sp. was isolated from 0.7% of the 254,000 raw meat or raw meat products tested with the annual prevalence ranging from 0.5 to 1.1%. Poultry meats were consistently more contaminated than other meats with higher recovery rates in turkey (3.3%), duck (3.3%), and chicken (2.5%) compared with meats of porcine (1.6%), ovine (0.2%) and bovine origin (0.1%). Salmonella sp. was also isolated from 58 (0.06%) of the 96,115 cooked or partially cooked meat and meat products tested during the reporting period with the annual percentage positive samples ranging from 0.01 to 0.16%. A total of 50 different serotypes were recovered from raw meats over this period with the greatest diversity found in poultry samples (n = 36). Four serotypes, Kentucky, Typhimurium, Agona and Derby accounted for over 70% of all isolates detected on FBO testing over the period 2005 to 2009. Conclusions Capturing microbiological data generated by Food Business Operators allows the regulatory sector access to a substantial amount of valuable data with the minimum financial outlay.

Abstract
SUMMARYThis study describes the epidemiology of human salmonellosis in New Zealand using notified, hospitalized and fatal cases over a 12-year period (1997–2008). The average annual incidence for notifications was 42·8/100 000 population and 3·6/100 000 population for hospitalizations. Incidence was about twice as high in summer as in winter. Rural areas had higher rates than urban areas (rate ratio 1·23, 95% confidence interval 1·22–1·24 for notifications) and a distinct spring peak. Incidence was highest in the 0–4 years age group (154·2 notifications/100 000 and 11·3 hospitalizations/100 000). Hospitalizations showed higher rates for Māori and Pacific Island populations compared to Europeans, and those living in more deprived areas, whereas notifications showed the reverse, implying that notifications are influenced by health-seeking behaviours.SalmonellaTyphimurium was the dominant serotype followed byS. Enteritidis. For a developed country, salmonellosis rates in New Zealand have remained consistently high suggesting more work is needed to investigate, control and prevent this disease.

Abstract
Major structural changes in livestock production in developed countries, particularly intensive confinement production and increases in herd and flock sizes, have raised several societal concerns about the future directions and implications of livestock food production, including the safety of meat products. This review of the major parasitic and bacterial foodborne pathogens associated with pork production indicates that pork safety in the United States has improved demonstrably over recent decades. Most notably, changes in swine production methods have been associated with virtual elimination of risk of the foodborne parasites Taenia solium, Trichinella spiralis, and Toxoplasma gondii from pigs reared on modern intensive farms. This represents a substantial public health achievement that has gone largely unheralded. Regulatory changes have led to demonstrably lower prevalence of Salmonella on pork carcasses, but control of bacterial foodborne pathogens on farms remains a significant challenge. Available evidence does not support the hypothesis that intensive pork production has increased risk for the major bacterial foodborne pathogens that are common commensals of the pig (Salmonella, Campylobacter, Listeria, and Yersinia enterocolitica), or that pigs produced in alternative systems are at reduced risk of colonization with these organisms. However, pigs raised in outdoor systems inherently confront higher risks of exposure to foodborne parasites, particularly T. gondii.

Abstract
Concerns about foodborne salmonellosis have led many countries to introduce microbiological criteria for certain food products. If such criteria are not well-grounded in science, they could be an unjustified obstacle to trade. Raw poultry products are an important part of the global food market. Import and export ambiguities and regulatory confusion resulting from different Salmonella requirements were the impetus for convening an international group of scientific experts from 16 countries to discuss the scientific and technical issues that affect the setting of a microbiological criterion for Salmonella contamination of raw chicken. A particular concern for the group was the use of criteria implying a zero tolerance for Salmonella and suggesting complete absence of the pathogen. The notion can be interpreted differently by various stakeholders and was considered inappropriate because there is neither an effective means of eliminating Salmonella from raw poultry nor any practical method for verifying its absence. Therefore, it may be more useful at present to set food safety metrics that involve reductions in hazard levels. Such terms as "zero tolerance" or "absence of a microbe" in relation to raw poultry should be avoided unless defined and explained by international agreement. Risk assessment provides a more meaningful approach than a zero tolerance philosophy, and new metrics, such as performance objectives that are linked to human health outcomes, should be utilized throughout the food chain to help define risk and identify ways to reduce adverse effects on public health.

Abstract
The immunomagnetic separation (IMS) is a technique that has been used to increase sensitivity and specificity and to decrease the time required for detection of Salmonella in foods through different methodologies. In this work we report on the development of a method for detection of Salmonella in chicken cuts using in house antibody-sensitized microspheres associated to conventional plating in selective agar (IMS-plating). First, protein A-coated microspheres were sensitized with polyclonal antibodies against lipopolysacharide and flagella from salmonellae and used to standardize a procedure for capturing Salmonella Enteritidis from pure cultures and detection in selective agar. Subsequently, samples of chicken meat experimentally contaminated with S. Enteritidis were analyzed immediately after contamination and after 24h of refrigeration using three enrichment protocols. The detection limit of the IMS-plating procedure after standardization with pure culture was about 2x10 CFU/mL. The protocol using non-selective enrichment for 6-8h, selective enrichment for 16-18h and a post-enrichment for 4h gave the best results of S. Enteritidis detection by IMS-plating in experimentally contaminated meat. IMS-plating using this protocol was compared to the standard culture method for salmonellae detection in naturally contaminated chicken cuts and yielded 100% sensitivity and 94% specificity. The method developed using in house prepared magnetic microespheres for IMS and plating in selective agar was able to diminish by at least one day the time required for detection of Salmonella in chicken products by the conventional culture method.

Abstract
Statutory microbiological test results were collected from British meat plants over a 4-year period from June 2002 to May 2006. A total of 49,074 carcass test results from 19,409 cattle, 14,706 sheep, and 14,959 pig swabs and 95,179 environmental test results from surface swabs were obtained. These test results were donated by 94 slaughterhouses, which process about two thirds of the British national annual throughput of cattle, sheep, and pig carcasses. The data were collectively analyzed to determine any historical trends for numbers of total aerobes and Enterobacteriaceae. Significant reductions were observed in the numbers of indicator organisms on carcasses for all three species between 2002 and 2006. Reductions were also observed for numbers of aerobes on environmental and food contact surfaces. There were seasonal differences in bacterial numbers isolated from carcasses. Cattle and sheep carcasses had significantly higher numbers of total aerobes and Enterobacteriaceae in late summer and early autumn, whereas numbers of total aerobes on pig carcasses were higher in winter. Bacterial numbers on environmental surfaces were not influenced by the month that the swab samples were collected. Possible reasons for the observed reductions in bacterial numbers on carcasses and surfaces and the implications for carcass testing for process control purposes are discussed.

Abstract
Wildlife Safari, a zoo located in Winston, Oregon, has fed donated carcass meat as a diet to carnivores for over 30 yr. Carcass meat is an alternative to commercially prepared meat. Donated meat arrives at Wildlife Safari as an entire animal. Cattle (Bos taurus), horse (Equus caballus), deer (Odocoileus hemionus), and elk (Cervus elaphus roosevelti) have been donated. Bacterial testing was performed on site with the use of Neogen Reveal immunosorbent assays. Testing focused on Salmonella spp., Listeria spp., and Escherichia coli 0157:H7. Twenty-five meat samples were randomly selected from 50 meat samples for the bacterial detection tests. Twenty-eight percent of the meat samples were positive for Salmonella spp. (n = 25). One sample was positive for Listeria spp. None of the meat samples were positive for Escherichia coli O157:H7 (n - 25). Thirty-two meat samples were analyzed off site for organic contaminants with the use of gas chromatography/mass spectrometry at Michigan State University's Diagnostic Center for Population and Animal Health. Specific organic contaminants tested for were barbiturates, phenylbutazone, flunixin meglumine, and xylazine. None of the meat samples were found to have evidence of these or any other common organic toxicants. As monitored, carcass meat appears to be a reasonably safe food source for carnivores.

Abstract
Additional guarantees (AGs) for Salmonella in imported defined animal-derived foods were agreed on for Finland when it was admitted to the European Community. The aim of this project was to evaluate the impact of these AGs on the prevalence of Salmonella in the Finnish beef supply and the adequacy of their scope. According to the quantitative Bayesian model, the efficacy of AGs was mainly dependent on the proportions of different beef categories imported and the true prevalence in the countries of origin. According to the model, AGs were able to reach their target in the referred year 1999 and kept the true Salmonella prevalence of beef imports below 1% with quantified uncertainty. The extension of AGs to all imported fresh beef would have reduced the Salmonella prevalence of beef imports from three- to fourfold, whereas expanding the implementation of AGs to all imports of fresh beef, beef preparations, and beef products would have resulted in a sixfold decrease. If current AGs targeting fresh beef intended to be sold as fresh or to be processed by the Finnish industry with processes not achieving 70 degrees C were not implemented, the 95% credible interval of Salmonella prevalence in the Finnish beef supply would be 0.2 to 1.3% (mean, 0.6%) instead of 0.1 to 1.2% (mean, 0.5%). However, if the prevalence in the exporting countries were to rise or the main import countries and/or magnitudes were to change, AGs would be of greater importance.

Abstract
Food animal producers have ethical obligations to reduce the risk of foodborne hazards in animals under their care. Contaminated feed is a recognized source of Salmonella infection of food animals and regulations to control Salmonella contamination of animal feed have existed in some countries for decades. The impact of reducing Salmonella contamination of animal feeds on the risk of human foodborne salmonellosis is difficult to assess, and is likely to vary among food animal industries. In the context of U.S. pork production, factors that may attenuate or negate the impact (on public health) of regulatory interventions to control Salmonella in commercial feed include widespread use of on-farm mixing of swine feed; incomplete decontamination of feed during processing; post-processing contamination of feed at feed mills or in transportation or on-farm storage; the multitude of nonfeed sources of Salmonella infection; an apparently high risk of post-farm infection in lairage; and post-harvest sources of contamination. A structured survey of the extent of Salmonella contamination of animal feed in the United States is necessary to enable more informed debate on the feasibility and likely efficacy of enforcing a Salmonella-negative standard for animal feeds to reduce the incidence of human salmonellosis.
