The general mechanism of water sorption on foodstuffs – Importance of the multitemperature fitting of data and the hierarchy of models

Moisture Sorption Isotherms of Polydextrose and Its Gelling Efficiency in Inhibiting the Retrogradation of Rice Starch

As an anti-staling agent in bread, the desorption isotherm of polydextrose has not been studied due to a very long equilibrium time. The adsorption and desorption isotherms of five Chinese polydextrose products were measured in the range of 0.1-0.9 aw and 20-35 °C by a dynamic moisture sorption analyzer. The results show that the shape of adsorption and desorption isotherms was similar to that of amorphous lactose. In the range of 0.1-0.8 aw, the hysteresis between desorption and adsorption of polydextrose was significant. The sorption isotherms of polydextrose can be fitted by seven commonly used models, and our developed seven-parameter polynomial, the adsorption equations of generalized D'Arcy and Watt (GDW) and Ferro-Fontan, and desorption equations of polynomial and Peleg, performed well in the range of 0.1-0.9 aw. The hysteresis curves of polydextrose at four temperatures quickly decreased with aw increase at aw ˂ 0.5, andthereafter slowly decreased when aw ≥ 0.5. The polynomial fitting hysteresis curves of polydextrose were divided into three regions: ˂0.2, 0.2-0.7, and 0.71-0.9 aw. The addition of 0-10% polydextrose to rice starch decreased the surface adsorption and bulk absorption during the adsorption and desorption of rice starch, while it increased the water adsorption value at aw ≥ 0.7 due to polydextrose dissolution. DSC analysis showed that polydextrose as a gelling agent inhibited the retrogradation of rice starch, which could be used to maintain the quality of cooked rice.

Kinetics of Pectin Biopolymer Facial Erosion Characterized by Fluorescent Tracer Microfluidics

Pectin is a plant-derived heteropolysaccharide that has been implicated in drug development, tissue engineering, and visceral organ repair. Pectin demonstrates remarkable biostability in a variety of physiologic environments but is biodegradable in water. To understand the dynamics of pectin biodegradation in basic environments, we developed a microfluidics system that facilitated the quantitative comparison of pectin films exposed to facial erosion. Pectin biodegradation was assessed using fluorescein tracer embedded in pectin, trypan blue quenching of released fluorescence, and highly sensitive microfluorimetry. The microfluidic perfusate, delivered through 6 um-pore synthetic membrane interface, demonstrated nonlinear erosion of the pectin film; 75% of tracer was released in 28 h. The microfluidics system was used to identify potential modifiers of pectin erosion. The polyphenolic compound tannic acid, loaded into citrus pectin films, demonstrated a dose-dependent decrease in pectin erosion. Tannic acid had no detectable impact on the physical properties of citrus pectin including adhesivity and cohesion. In contrast, tannic acid weakened the burst strength and cohesion of pectins derived from soy bean and potato sources. We conclude that facial erosion may explain the biostability of citrus pectin on visceral organ surfaces as well as provide a useful method for identifying modifiers of citrus pectin biodegradation.

Effect of Lignin Removal on the Hygroscopicity of PMMA/Wood Composites

Wood delignification can provide a wood-based template with sufficient pore volume for polymer/wood composites. At the same time, delignification is conducive to the penetration of polymer into the wood cell wall, which is of great significance to improve the function and performance of composites. However, lignin is the main chemical component in wood. The removal of lignin will inevitably lead to the change of the wood’s physical properties, including the hygroscopicity of the wood. In this study, prepolymerized methyl methacrylate (MMA) impregnated delignified wood (DW) was used to obtain polymerized methyl methacrylate/delignified wood (PMMA/DW) composites with different lignin removal. The effect of lignin removal on the hygroscopicity of the composites is discussed. The results of nitrogen adsorption showed that the DW could adsorb more nitrogen than the original wood, and the amount of nitrogen adsorption gradually increased with the improvement of the processing degree. After filling with PMMA, the adsorption amount of nitrogen was greatly reduced. The results of the BET analysis showed that delignification promoted the distribution of PMMA in the pores of the wood cell wall. When lignin was almost completely removed, all mesopores in the cell wall were filled with PMMA. The results of the moisture absorption analysis isotherm curve showed that the moisture absorption content of the wood was positively correlated with the amount of lignin removed, and the moisture absorption content of the PMMA/DW composite was negatively correlated with the amount of lignin removed. The hygroscopic data were further analyzed using the Hailwood–Horrobin model. The results showed that the mole number of adsorbable or hydratable sites of the DW increased with the increase of lignin removal, and the situation of the PMMA/DW composites was just the opposite. In addition, after delignification, the dissolved water content and hydrated water content of the DW increased, and the increase was related to the delignification strength. The increase of dissolved water content indicates that the removal of lignin promotes the production of more volume in the cell wall, which provides space for the adsorption of multilayer water. After MMA in situ polymerization, the hydration and dissolved water content of the PMMA/DW decreased significantly, and the dissolved water content decreased even more significantly. The fitting curves of the H-H model and GDW model for the experimental data points of the differently treated samples were similar. The removal of lignin led to the increase of the w value, indicating that the ratio of water molecules adsorbed in the first layer of DW to the second layer increased, and the removal of lignin resulted in the enhancement of wood hygroscopicity; the opposite was true for the PMMA/DW.

Hygroscopic Properties of Three Cassava (Manihot esculenta Crantz) Starch Products: Application of BET and GAB Models

This study aimed to compare hygroscopicity properties of three cassava (Manihot esculenta Crantz) products: native starch powder (NS), fermented starch powder (FS), and starch granulate (SG). The analyzed properties were compared based on the statistical evaluation of differences in the course of sorption isotherms and the identification and comparison of parameters in two theoretical models of sorption. Empirical data were generated by means of the static-desiccator method. Measurements were made using AquaLab apparatus. The size, shape, and number of tapioca particles were characterized using a Morphology automatic particle analyzer. The study demonstrated that in-depth exploration of empirical data describing hygroscopicity of samples with the use of mathematical tools allows evaluating their physical parameters. The results obtained were analyzed in terms of correlations between physical and physicochemical properties determining utility traits of cassava starch. The NS and SS featured significantly higher hygroscopicity than SG, as evidenced by the values of all parameters analyzed in this study. The study results provided new information related to the management of the production process, safety, and stability of these products.

Chemical Composition and Related Properties of Lime (Tilia cordata Mill.) Bark and Wood as Affected by Tree Growth Conditions

Tilia cordata Mill. is a favourite tree used in urban spaces. For this reason, it is important to know its sensitivity to environmental stress, which is particularly burdensome for vegetation in urban spaces. The aim of the study was to investigate the properties necessary to control the growth of these trees and their subsequent use, i.e., chemical properties (percentage contents of cellulose, holocellulose, lignin, pentosans and substances soluble in NaOH and EtOH) as well as the chemical elements (K, Na, Mg, Ca and Fe, Zn, Cu, Pb, Cd, B, Ni, Cr, Al, As and Hg) and selected hygroscopic properties (hysteresis and sorption isotherms). Trees of Tilia cordata Mill. growing in environments exposed to environmental stress of varying severity were examined. Regardless of the growth conditions, in terms of its chemical composition, bark differs significantly from wood, showing twice the contents of soluble substances in NaOH and lignin and half the content of polysaccharides. Growth conditions clearly affect the range of selected chemical components in bark, e.g., substances soluble in ethanol, cellulose, or lignin. The main inorganic elements in bark and wood are Na, K, Ca, Mg and Zn. In bark, a relationship was found between the content of most chemical elements and differing environmental growth conditions. It was shown that environmental stress influenced the hygroscopic properties of wood and bark, which are a consequence of the percentage of chemical components.

Optical and Mechanical Properties of Self-Repairing Pectin Biopolymers

Pectin’s unique physicochemical properties have been linked to a variety of reparative and regenerative processes in nature. To investigate the effect of water on pectin repair, we used a 5 mm stainless-steel uniaxial load to fracture glass phase pectin films. The fractured gel phase films were placed on a 1.5–1.8 mm thick layer of water and incubated for 8 h at room temperature and ambient humidity. There was no immersion or agitation. The repaired pectin film was subsequently assessed for its optical and mechanical properties. Light microscopy demonstrated repair of the detectable fracture area and restoration of the films’ optical properties. The burst strength of the repaired film declined to 55% of the original film. However, its resilience was restored to 87% of the original film. Finally, a comparison of the initial and post-repair fracture patterns demonstrated no recurrent fissures in the repaired glass phase films. The water-induced repair of the pectin film was superior to the optical and mechanical properties of the repaired films composed of nanocellulose fibers, sodium hyaluronate, and oxidized cellulose. We conclude that the unique physicochemical properties of pectin facilitate the water-induced self-repair of fractured pectin films.

Functional Adhesion of Pectin Biopolymers to the Lung Visceral Pleura

Pleural injuries and the associated "air leak" are the most common complications after pulmonary surgery. Air leaks are the primary reason for prolonged chest tube use and increased hospital length of stay. Pectin, a plant-derived heteropolysaccharide, has been shown to be an air-tight sealant of pulmonary air leaks. Here, we investigate the morphologic and mechanical properties of pectin adhesion to the visceral pleural surface of the lung. After the application of high-methoxyl citrus pectin films to the murine lung, we used scanning electron microscopy to demonstrate intimate binding to the lung surface. To quantitatively assess pectin adhesion to the pleural surface, we used a custom adhesion test with force, distance, and time recordings. These assays demonstrated that pectin-glycocalyceal tensile adhesive strength was greater than nanocellulose fiber films or pressure-sensitive adhesives (p < 0.001). Simultaneous videomicroscopy recordings demonstrated that pectin-glycocalyceal adhesion was also stronger than the submesothelial connective tissue as avulsed surface remnants were visualized on the separated pectin films. Finally, pleural abrasion and hyaluronidase enzyme digestion confirmed that pectin binding was dependent on the pleural glycocalyx (p < 0.001). The results indicate that high methoxyl citrus pectin is a promising sealant for the treatment of pleural lung injuries.

Pectin biopolymer mechanics and microstructure associated with polysaccharide phase transitions

Polysaccharide polymers like pectin can demonstrate striking and reversible changes in their physical properties depending upon relatively small changes in water content. Recent interest in using pectin polysaccharides as mesothelial sealants suggests that water content, rather than nonphysiologic changes in temperature, may be a practical approach to optimize the physical properties of the pectin biopolymers. Here, we used humidified environments to manipulate the water content of dispersed solution of pectins with a high degree of methyl esterification (high-methoxyl pectin; HMP). The gel phase transition was identified by a nonlinear increase in compression resistance at a water content of 50% (w/w). The gel phase was associated with a punched-out fracture pattern and scanning electron microscopy (SEM) images that revealed a cribiform (Swiss cheese-like) pectin microstructure. The glass phase transition was identified by a marked increase in resilience and stiffness. The glass phase was associated with a star-burst fracture pattern and SEM images that demonstrated a homogeneous pectin microstructure. In contrast, the burst strength of the pectin films was largely independent of water content over a range from 5 to 30% (w/w). These observations indicate the potential to use water content in the selective regulation of the physical properties of HMP biopolymers.

Moisture sorption properties and glass transition temperature of a non-conventional exudate gum (Prosopis alba) from northeast Argentine

Water-solid interactions were explored in purified and freeze-dried Prosopis alba exudate gum as approach to get a deeper insight of structural and functional aspects of this novel biomaterial. Particularly, the study of water-binding properties combined with glass transition temperatures allowed obtaining interesting theoretical data for practical applications. The Guggenheim-Anderson-de Boer (GAB) and Generalized D'Arcy and Watt (GDW) models were applied to describe the sorption behavior and thermodynamic properties of the studied gum. The study of the relationship between relative humidity, water content and thermal transitions allowed to characterize the material in terms of water plasticizing susceptibility as well as define the suitable storage conditions that guarantee the quality, safety and physical stability of P. alba gum. Obtained results contribute to the characterization of a non-conventional exudate gum with great potential for its use in different food industry applications.

Analysis of pectin biopolymer phase states using acoustic emissions

Acoustic emissions are stress or elastic waves produced by a material under external load. Since acoustic emissions are generated from within and transmitted through the substance, the acoustic signature provides insights into the physical and mechanical properties of the material. In this report, we used a constant velocity probe with force and acoustic emission monitoring to investigate the properties of glass phase and gel phase pectin films. In the gel phase films, a constant velocity uniaxial load produced periodic premonitory acoustic emissions with coincident force variations (saw-tooth pattern). SEM images of the gel phase microarchitecture indicated the presence of slip planes. In contrast, the glass phase films demonstrated early acoustic emissions, but effectively no force or acoustic evidence of periodic or premonitory emissions. Microstructural imaging of the glass phase films indicated the presence of early microcracks as well as dense polymerization of the pectin (without evidence of slip planes). We conclude that the water content in the pectin films contributes to not only the physical properties of the films, but also the stick-slip motion observed with constant uniaxial load. Further, acoustic emissions provide a sensitive and practical measure of this mechanical behavior.

The Effect of Calcium on the Cohesive Strength and Flexural Properties of Low-Methoxyl Pectin Biopolymers

Abstract: Pectin binds the mesothelial glycocalyx of visceral organs, suggesting its potential role as a mesothelial sealant. To assess the mechanical properties of pectin films, we compared pectin films with a less than 50% degree of methyl esterification (low-methoxyl pectin, LMP) to films with greater than 50% methyl esterification (high-methoxyl pectin, HMP). LMP and HMP polymers were prepared by step-wise dissolution and high-shear mixing. Both LMP and HMP films demonstrated a comparable clear appearance. Fracture mechanics demonstrated that the LMP films had a lower burst strength than HMP films at a variety of calcium concentrations and hydration states. The water content also influenced the extensibility of the LMP films with increased extensibility (probe distance) with an increasing water content. Similar to the burst strength, the extensibility of the LMP films was less than that of HMP films. Flexural properties, demonstrated with the 3-point bend test, showed that the force required to displace the LMP films increased with an increased calcium concentration (p < 0.01). Toughness, here reflecting deformability (ductility), was variable, but increased with an increased calcium concentration. Similarly, titrations of calcium concentrations demonstrated LMP films with a decreased cohesive strength and increased stiffness. We conclude that LMP films, particularly with the addition of calcium up to 10 mM concentrations, demonstrate lower strength and toughness than comparable HMP films. These physical properties suggest that HMP has superior physical properties to LMP for selected biomedical applications.

Physicochemical and hydration properties of different cereal and legume gluten-free powders

BACKGROUND

The wetting and hydration stage is the key step in manufacture process of several cereal-based products. Knowledge of hydration properties of gluten-free ingredients can contribute to improve the quality of gluten-free products. The objective of the present work was to investigate hydration properties for a large variety of gluten-free ingredients. Powders of tow gluten-free cereals (rice and maize) and powders of tow legumes (chickpea and faba bean) in comparison with durum wheat semolina. The hydration properties were evaluated at 25°C by vapor and liquid water addition.

RESULTS

Legume powders had the highest sorption capacity and stronger interaction with vapor water. Rice showed the highest vapor water diffusion at all RH intervals. Water holding capacity, swelling kinetics, and immersion enthalpy in liquid water were higher for legume and maize powders.

CONCLUSION

Gluten-free cereal powders show hydration properties different from those of legumes. Different combinations of these gluten-free materials can be made to approach the properties of wheat powders.

Influence of activated carbon porosity and surface oxygen functionalities' presence on adsorption of acetonitrile as a simple polar volatile organic compound

Based on series of porous carbon models, systematic Monte Carlo studies on the adsorption of acetonitrile (as a simple representative of polar volatile organic compounds) were performed. The influence of porosity and chemical composition of the carbon surface on CH3CN adsorption was studied and it was shown that both the factors influenced the adsorption mechanism. A decrease in the pore size and the introduction of oxygen surface groups led to a rise in adsorption energy and to an increase in the filling of accessible volume in the low-pressure part of the isotherm. However, from a practical point of view, it is easier to increase the adsorption by introducing polar groups on the carbon surface than by modifying the porosity.

Water adsorption on carbons--critical review of the most popular analytical approaches

The purpose of the current study is to present the state of art in the field of analytical description of water sorption on carbons. We discuss the most important and promising models proposed recently (for example by Mahle; Talu and Meunier; and Malakhov and Volkov) as well as some older theoretical models inspired by the pioneering ideas proposed in the papers of Dubinin, Serpinsky, Barton, D'Arcy, Watt, Do and Do and others. The applicability, advantages, and defects of all these analytical formulas are pointed out and some new approaches in this field are presented. The special attention is paid to the finite adsorption space and the possible involvement of partial chemisorption, i.e. the existence of various types of the hydrophilic centres. Since the calculation of isosteric enthalpy from an adsorption equation, and the comparison of theoretical enthalpy plot with the values measured calorimetrically, is the fundamental condition for the verification of the correctness of an adsorption model, for all considered models we show the corresponding adsorption enthalpy equations. The validity of all mentioned above models is verified for the data measured for five water-activated carbon systems. Finally, a summary of obtained results and some perspectives and suggestions for the description of experimental data are presented. From the analysis of experimental data it is seen that developed recently- the heterogeneous Do and Do model is probably the most successful for the simultaneous description of water adsorption and enthalpy of adsorption results.
