Abstract
This study aimed to investigate the impact of feeding patterns on the production performance, lipo-nutritional quality, and gut microbiota of Sunit sheep. A total of 24 sheep were assigned to two groups: confinement feeding (CF) and pasture feeding (PF) groups. After 90 days, the CF group exhibited significantly increased average daily gain, carcass weight, backfat thickness, and intramuscular fat content of the sheep, whereas the PF group showed significantly increased pH24h and decreased L∗ value and cooking loss of the longissimus lumborum (LL) muscle (P < 0.05). In the PF group, the contents of linoleic, α-linolenic, and docosahexaenoic acids were considerably higher and the n-6/n-3 polyunsaturated fatty acid ratio was significantly lower (P < 0.05). Furthermore, the triglyceride, cholesterol, and nonesterified fatty acid levels in the serum of the CF group significantly increased, whereas the enzyme contents of fatty acid synthase (FASN) and hormone-sensitive lipase (HSL) in the LL muscle of the PF group were markedly elevated (P < 0.05). The PF group also showed altered expression of lipid metabolism-related genes, including upregulated FASN, HSL, fatty acid binding protein 4 (FABP4), and peroxisome proliferator-activated receptor γ coactivator 1α (PGC-1α) (P < 0.05). Meanwhile, differences were observed in the abundance of key bacteria and microbiota functions between the groups. Correlation analysis revealed that production performance and lipid metabolism may be related to the differential effects of bacteria. In conclusion, the transition in the feeding patterns of Sunit sheep caused changes in the gut microbial community and lipid metabolism level in the muscle as well as differences in fat deposition and meat quality.

Abstract
The article presents the results of scientific research on the production of lamb in the conditions of the Akmola region. The experiment was conducted on purebred Kazakh short-tailed rough-haired and cross-bred sheep obtained from industrial crossing of Kazakh short-tailed rough-haired queens with sheep- producers of the hampshire breed. Further, the article presents the results of feeding and fattening, as well as the morphological composition of the carcass of sheep of the Kazakh coarse-haired sheep breed of different ages. The object of the study for feeding and fattening were three groups of experimental sheep of the above-mentioned breed, where compound feed was included in the diet of the I experimental group in the form of top dressing, in the II experimental group, grain waste was also used for top dressing, and the control group was kept in the feed without top dressing. Based on the study of the feeding of experimental sheep, it was found that the absolute increase during the feeding period in experimental sheep who received fertilization in the form of compound feed is higher than in their peers, respectively, by 0.2 and 1.49 kg. In terms of morphological and varietal composition, in particular, the number of cuts of grade 1, there was also an advantage of experimental sheep that received fertilization in the form of compound feed compared to their peers, respectively, by 2.3-8.3%. In general, the results of a study on the growth, development and slaughter qualities of experimental sheep, i.e. purebred Kazakh short-tailed rough-haired and crossbred, obtained from crossing with sheep producers of the precocious breed "hampshire" showed that from the moment of birth to 2 and 4 months. For example, crossbred sheep were slightly superior to purebred peers in terms of the studied indicators. In particular, the results of feeding sheep of the Kazakh coarse-haired broad-tailed breed from 4 to 6 months, depending on the top dressing.

Abstract
Fifty-eight Karacabey Merino lambs were used to study the effects of feeding system (triticale pasture, oat pasture, or stall-fed), birth type (single or multiple), gender (male or female), and birth year (2016 or 2017) on various carcass and meat quality characteristics. Stall lambs had higher conformation (CS) and fatness (FS) scores, and higher meat L* and h* values than the two pasture groups, possibly due to higher fat content, while oat pasture lambs had the most tender meat. Single-born lambs had higher CS, FS, and Longissimus thoracis muscle section area, while females had higher subcutaneous and non-carcass fat deposits than their counterparts. Both single-born lambs and 2016-born lambs had higher meat a* and C* values than their counterparts. In conclusion, a pasture-based feeding system is more suitable for Karacabey Merino lambs than a stall feeding system, if lean meat and/or meat products are preferred. However, it should not be ignored that stall-fed lambs showed a better fattening performance in terms of conformation and fatness, during the same period.

Abstract
Sheep and goats can efficiently convert low quality forage into high-quality meat which contains specific nutrients and quality traits. Carcass traits and quality attributes of sheep and goat meat depend upon several factors and one of most effective strategies amongst these is feeding regimens. In this review, the major aspects of feeding regimens affecting growth rate, carcass traits and quality attributes of sheep and goat meat are thoroughly discussed, with a particular focus on physical-chemical composition, flavor profile, and fatty acid (FA) profile. Grazing lambs and kids receiving concentrate or under stall-feeding systems had greater average daily gain and carcass yield compared with animals reared on pasture only. However, growth rate was higher in lambs/kids grazing on pastures of improved quality. Moreover, the meat of grazing lambs receiving concentrate had more intense flavor, intramuscular fat (IMF) content, and unhealthy FA composition, but comparable color, tenderness, juiciness, and protein content compared to that of lambs grazed on grass only. In contrast, meat of concentrate-fed lambs had more intense color, greater tenderness and juiciness, IMF and protein contents, and lower flavor linked to meat. Additionally, the meat of kids grazed on concentrate supplementation had higher color coordinates, tenderness, IMF content and unhealthy FA composition, whereas juiciness and flavor protein content were similar. In contrast, kids with concentrate supplementation had superior color coordinates, juiciness, IMF content and unhealthy FA composition, but lower tenderness and flavor intensity compared to pasture-grazed kids. Thus, indoor-finished or supplemented grazing sheep/goats had higher growth rate and carcass quality, higher IMF content and unhealthy FA composition compared to animals grazed on grass only. Finally, supplementation with concentrate increased flavor intensity in lamb meat, and improved color and tenderness in kid meat, whereas indoor-fed sheep/goats had improved color and juiciness as well as reduced flavor compared to pasture-grazed animals.

Abstract
This study investigated the effects of three feeding systems, indoor feeding (CONT), indoor feeding with time-restricted grazing artificial pasture (4 h/day, G4H), and indoor feeding with an eight-hour daily grazing artificial pasture (G8H), on the growth performance, serum metabolites, ruminal fermentation, and fecal microbiota composition of lambs. Average daily gain showed a tendency (p = 0.081) to be higher for the G4H group compared with the CONT group. Moreover, feeding systems did not have a significant effect on most of the serum biochemical indicators in lambs. Concentrations of serum glutathione peroxidase and immunoglobulins (IgA, gG, and IgM) were significantly lower (p < 0.01) in the CONT group. Additionally, a tendency towards higher levels of volatile fatty acids, acetate, and butyrate was found in animals of the G4H group compared to the CONT group. Furthermore, fecal microbiota composition was altered in G4H and G8H groups, resulting in the increased relative abundance of Firmicutes and Ruminococcaceae UCG-005, as well as the decreased relative abundance of Ruminobacter compared with the CONT group. Overall, these results suggest that indoor feeding with restricted grazing time does not significantly affect fattening performance or rumen fermentation but enhances antioxidation and immune function activity and also alters fecal microbiota composition.

Abstract
Growth rate, carcass attributes, and meat quality traits of small ruminants (i.e., sheep and goats) depend on various factors, among which the feeding system is one of the most important factors. However, how feeding systems affect these parameters differ between sheep and goats. Therefore, this review aimed to evaluate the differences in how different feeding systems affect the growth performance, carcass characteristics, and meat quality of sheep and goats. It also explored the effects of a new finishing strategy-time-limited grazing with supplements on these traits. Compared with stalled feeding, finishing lambs/kids on pasture-only feed reduced the average daily gain (ADG) and carcass yield, while supplemented-grazing lambs/kids had near-equivalent or higher ADG and carcass attributes. Pasture-grazing increased the meat flavor intensity and healthy fatty acid content (HFAC) of lamb/kid meat. Supplemental grazing lambs had comparable or superior meat sensory attributes and increased meat protein and HFAC compared to stall-fed ones. In contrast, supplemental grazing only improved the meat color of kids but had little effect on other meat qualities. Moreover, time-limited grazing with supplemental concentrates increased the carcass yield and meat quality in lamb meat. Overall, the effects of different feeding systems on growth performance and carcass traits were comparable between sheep and goats but differed in terms of the meat quality.

Abstract
Sixty-four male New Zealand White rabbits, 4 weeks old, were used to study the effects of feed restriction (FR) on growth performance, carcass traits, and some blood parameters. Rabbits were randomly allotted to 4 equal groups. The first group was fed ad libitum (control group). The second, third, and fourth groups were restricted from 4 to 8 (R4-8), 8 to 12 (R8-12), and 4 to 12 (R4-12) weeks of age, respectively. Restricted groups were fed 85% of the control. Means of live body weights (LBW), average daily gain weights (ADGW), relative growth rate (RGR) were calculated. Carcass traits and blood parameters were measured. Results showed that, FR reduced LBW, ADGW and RGR in R4-8 and R4-12 groups. However, FR did not impair the previous traits in R8-12 group. Carcass weight was not impaired in R8-12 group. However, FR reduced kidney fat in all restricted groups. Feed restriction reduced hemoglobin, red blood cell (RBC) and platelet levels in R4-8 and/or R4-12 groups. However, RBC and platelet levels were not altered in R8-12 group. Conclusively, FR impaired growth performance, carcass weight and blood parameters in R4-8 and R4-12 groups, however, the previous traits were not impaired in R8-12 group.

Abstract
The aim of this study was to evaluate the effect of rosemary (Rosmarinus officinalis) residues (RR) as dietary supplement in association with linseed (Linumusitatissimum) on digestive aspects and body weight (BW) gain in fat-tailed Barbarine ewes. To achieve this, 24 cull ewes (BW: 33 ± 2.7 kg) were divided into four groups receiving a basal diet composed of 500 g of straw for two groups (S) and 300 g of straw in addition to 200 g of RR for two other groups (R). All animals received 750 g of concentrate; the usual concentrate (UC) was offered for one S (S-UC) and one R group (R-UC); the linseed concentrate (LC) was also offered for one S (S-LC) and one R group (R-LC). The fattening and digestibility trials lasted 90 days. The dry matter (DM) intake and digestibility were similar across the groups. However, the crude protein (CP) intake and digestibility and the neutral detergent fiber intake were significantly affected by the treatments (P > 0.05). The nitrogen intake (NI), the fecal, and retained nitrogen were significantly affected by the regimen (P < 0.05); however, the urinary nitrogen was unchanged. The nitrogen balance was positive for all groups averaging 60% of the NI. The ruminal pH, ammonia nitrogen, and protozoa concentration were not affected by the RR intake and linseed supply; however, the control time affected significantly these parameters. Final BW, the average daily gain, the muscle, and fat contents were neither affected by the basal diet nor by the concentrate type (P > 0.05). In conclusion, the RR intake in association with linseed did not alter the animal's performances by improving their productive characteristics and consequently, the commercial value of this sheep's category.

Abstract
This study was conducted to investigate the carcass traits, meat quality, and volatile compounds of growing lambs under different restricted grazing time and indoor supplementary feeding systems. Fifty 3-month-old male Tan lambs (with similar body weight) were divided into five groups randomly according to grazing time 12 h/d (G12), 8 h/d(G8), 4 h/d(G4), 2 h/d (G2), and 0 h (G0, indoor supplementary feeding). Animals were slaughtered at the end of the experiment, and the longissimus thoracis (LT) samples were collected for further analysis. The results indicated that indoor supplementary feeding improved the percentages of carcass fat and non-carcass fat of pre-slaughter weight (PSW) and decreased the cooking loss of lamb meat. Grazing for 8 h/d or 2 h/d enhanced PSW, carcass, and meat percentages of PSW. Lambs grazing for 2 h/d with supplement and indoor supplementary feeding lambs had a higher level of intramuscular fat and lightness (L*) value and lower cooking loss in the LT muscle, but higher yellowness (b*) and fat content were found in indoor supplementary feeding lambs. More categories of volatile compounds were identified in meat from grazing lambs than from indoor supplementary feeding lambs, but lower content of aldehydes and total volatile flavor compounds was detected in grazing lambs. Overall, the results demonstrated that the feeding system is a main factor that affects lamb meat quality, and proper grazing time can improve the quantity and quality of lamb meat and provide meat with different flavors to the consumers.

Abstract
In this study, meat quality traits and fatty acid compositions of Hair Goat and Saanen × Hair Goat (G1) crossbred kids fattened
under intensive, semi-intensive and extensive conditions were determined. For meat quality traits, differences in pH24h,
pH45min, drip loss, water holding capacity, cooking loss and Warner–Bratzler peak shear force values of the experimental groups were
not found to be significant. According to colour measurements at the 0th and 45th minute, the extensive fattening group of Hair Goat kids had greater
lightness (L∗) values and the intensive fattening group of Hair Goat kids had greater redness (a∗) values. For intensive, semi-intensive
and extensive fattening groups of Hair Goat kids, total saturated fatty acid contents of longissimus dorsi (LD) muscle samples were
respectively measured as 19.28 %, 23.75 % and 23.35 %. Total monounsaturated fatty acid contents were respectively measured as 67.30 %,
66.22 % and 65.72 %. Total polyunsaturated fatty acid contents were respectively measured as 5.46 %, 3.06 % and 3.16 % and conjugate
linoleic acid contents were respectively measured as 0.48 %, 0.55 % and 0.65 %. For intensive, semi-intensive and extensive fattening
groups of Saanen × Hair Goat (G1) kids, total saturated fatty acid contents of LD muscle samples
were respectively measured as 21.01 %; 21.98 %, 19.10 %; total monounsaturated fatty acid contents were respectively measured as
64.04 %, 64.33 %, 52.44 %. Total polyunsaturated fatty acid contents were respectively measured as 3.53 %, 4.89 % and 4.84 %
and conjugate linoleic acid contents were respectively measured as 0.52 %, 0.58 % and 0.73 %. It was concluded that the extensive fattening
group had greater conjugated linoleic acid contents than the other fattening groups.

Abstract
Two hundred eight sheep, belonging to two main breeds of eastern Morocco, “Beni-Guil” and “Ouled-Djellal,” were investigated for carcass traits and meat quality. The objective of this study is to determine the effects of breed and age at slaughter on carcass traits and meat quality. The animals were slaughtered at three age classes: milk teeth, animals with two adult teeth, and adult animals. Dressing percentage, carcass measurements, compactness indices, carcass shrinkage parameter, conformation scores, fatness state, fat consistency, fat and meat colour, and pH were measured 24 hours postmortem. The results showed that the dressing percentage, carcass measurements, and compactness indices increased with slaughter age (p < 0.001). Furthermore, the effect of breed was higher for Ouled-Djellal breed of carcass characteristics (p < 0.01). However, no significant effect was observed for carcass shrinkage parameter. The longissimus lumborum muscle was used to determine the meat colour, which ranged from 23.89 to 21.96, while the ultimate pH ranged from 5.70 to 5.82. These results were influenced by age at slaughter (p < 0.05) but not influenced by breed. Breed and age at slaughter had a significant influence on carcass traits (p < 0.001). The present study provided a new insight into the effect of breed and age at slaughter on carcass and meat traits of both “Beni-Guil-PGI” and Ouled-Djellal sheep breeds.

Abstract
The objective was to evaluate the use of wet brewery residue (WBR) silage additives on carcass characteristics and sheep meat quality. Thirty-two Santa Inês male sheep uncastrated with initial body weight of 22.61 ± 7.2 kg were allocated to a completely randomized design with four treatments: (1) WBR silage without additive (WBRS), (2) WBR silage with milled corn (WBRS + MC), (3) WBR silage with wheat bran (WBRS + WB), and (4) WBR silage with cassava flour (WBRS + CF) and eight replicates. WBRS + WB resulted in lower cold carcass weight than WBRS + CF; however, this reduction was not sufficient to alter the carcass commercial yield or loin-eye area. The leg cut of animals fed WBRS + WB showed less value than those animals fed with WBRS + CS. The meat lightness of WBRS was higher that of WBRS + MC, WBRS + WB, and WBRS + CF. The cooking loss for WBRS + WB was less than those animals fed with WBRS + CS. However, meat protein, meat cholesterol, and shear force were similar among treatments (17.69%, 42.46 mg/100 g of meat, and 2.48 kgf/cm2, respectively). The use of additives in wet brewery residue silage does not improve carcass characteristics or the quality of sheep meat, and it is therefore recommended to use WBR silage without additives.

Abstract
Our hypothesis suggests an improvement in carcass and meat quality of pasture-finished animals by introducing concentrate feed into diets. This study aimed to evaluate the effect of different levels of protein-energy supplementation on carcass and meat characteristics of Texel lambs raised on Brachiaria pastures, and compare the results with those obtained from confined animals. Thirty 2-month-old intact lambs were divided into five treatments: pasture with mineral supplementation, pasture containing daily supplies of 0.8, 1.6, and 2.4% BW protein-energy supplementation, and confinement (reference treatment). All animals were slaughtered 104 days after the beginning of the experiment. Lambs submitted to 1.6% and 2.4% BW supplementation presented similar characteristics to animals kept in confinement and were superior to animals treated with 0 or 0.8% of BW supplementation levels (p < .05). Increases of subcutaneous fat thickness were verified for 0.0, 0.8, 1.6, 2.4% BW, and confinement treatments, being respectively of 0.25, 0.74, 1.61, 1.69, and 1.98. Conversely, treatments had no influence on meat physical-chemical characteristics, being all considered moderately soft, juicy (tender), and with mild tastes and odors. Lambs raised on Brachiaria pastures have high-quality meat, but more protein-energy supplementation is needed to be an alternative for the feedlots for young animals.

Abstract
Simple Summary Yerba mate (Ilex paraguariensis) is a plant widely used for human consumption in Latin America, with important health benefits for people. However, limited knowledge on its effects on animal health and nutrition are available. In this study, we evaluated the inclusion of yerba mate extract at levels up to 4% of the dry matter in the diets of growing lambs and its effects on blood parameters, animal performance, body metrics and carcass traits. Yerba mate extract up to 2% of inclusion had positive effects on feed intake and animal performance; however, greater inclusion rates had negative effects on feed intake and animal performance. Supplementation of yerba mate extract up to 2% also increased white blood cells and globulins, which have been closely related to a better immune response in animals. Abstract This study aimed to evaluate levels of yerba mate (Ilex paraguariensis) extract (YME), as a feed additive in the diets of growing lambs on serum biochemical parameters and hematological indices, animal performance, body metrics and carcass traits. Thirty-six entire (nine per treatment), male growing lambs, weighing 23.8 ± 3.7 kg, were fed the experimental diets which were treatments consisting of increasing levels of YME (0, 1, 2, and 4% inclusion on a dry matter [DM] basis) during an experimental period of 53 days. The experiment was carried out in a randomized block design, which initial body weight was used as blocking factor and the results were analyzed by orthogonal contrasts (linear, quadratic, and cubic). Yerba mate extract did not change the general health status of the animals; however, inclusions of up to 2% of the extract increased globulins (p = 0.05) and white blood cell count, as segmented neutrophils (p = 0.02) and lymphocytes (p = 0.04). Additionally, inclusion of up to 2% YME increased dry matter intake, final weight gain, total and daily gain (p < 0.05), also tended to increase ribeye area and reduce fat thickness (p < 0.10); however, YME above 2% of inclusion reduced animal productive parameters (p < 0.05). In conclusion, levels up to 2% of YME were beneficial to the health and productive parameters of growing lambs.

Abstract
The objective of this study was to evaluate the effect of replacing cereals and protein concentrates in a high-cereal concentrate (control) for light lambs with corn distiller's dried grains with solubles (DDGS; 18%), dried citrus pulp (DCP; 18%), and exhausted olive cake (EOC; 8%) in a byproduct (BYP) concentrate on growth performance, digestibility, ruminal fermentation, and plasma metabolites. Two homogeneous groups of Lacaune lambs (13.8 kg ± 0.25 kg) were fed one of each concentrates and barley straw ad libitum until reaching about 26 kg body weight. There were no differences between groups on feed intake, average daily gain, or feed conversion ratio, but the control diet had greater (p < 0.001) dry matter digestibility. Diet had no effect on post-mortem ruminal pH and total volatile fatty acid concentrations and profile, but NH3-N concentrations were lower (p = 0.003) for the BYP-fed group compared with the control one. However, plasma concentrations of amino acids, total proteins, urea, and hepatic enzymes were not affected by the diet. In conclusion, 44% of feed ingredients in the concentrate for light lambs can be replaced with a mixture of corn DDGS, DCP, and EOC without negatively affecting growing performance and animal health.

Abstract
The benefits of pasture-based systems on the fatty acid composition of sheep meat appear to be achievable despite variability in the quality of the pastures. Lambs fed high levels of temperate pastures have an excess of N-ammonia derived from protein degradation. Furthermore, animal performance is highly variable depending on the quality of the pasture at the time of grazing, and high animal performance in these systems appears to be linked to the use of high-quality pastures with high availability, and is possibly added to by the inclusion of concentrates that allow increasing energy intake and a better use of the N in the pasture. The combination of high-quality pastures and total mixed ration offers a good alternative to the inclusion of concentrates in the diet, improving the use of N, and avoiding acidosis problems. However, information to determine the effect of a number of nutritional strategies on meat quality, and the minimum level of pasture intake necessary to achieve the benefits of pastoral systems is still lacking.

Abstract
Fifty-two male Kivircik lambs were used to investigate the influences of finish weight (LOW: 25–26 kg, MEDIUM: 30–31 kg and HIGH: 35–36 kg) and production system (CON: concentrate-based system, PAS: pasture-based system) on carcass and meat quality characteristics. CON lambs (n=27) were weaned at 76 d of age and then finished on concentrate feed and alfalfa hay until slaughter. PAS lambs (n=25) grazed on native pasture in the day-time and sucked their dams until slaughter. CON group grew 30% faster during the experimental period; therefore significantly fewer days were required to reach the target weight. CON lambs had higher cold carcass weight, cold dressing percentage, and produced fattier carcasses compared with those of PAS system. PAS lambs had lower meat lightness values than CON ones. CON system produced more tender meat than PAS system in terms of shear force and sensory evaluation results. Intramuscular fat of the PAS lambs had higher percentage of ∑PUFA and ∑n-3 PUFA, and lower n-6/n-3 ratio than that of CON ones. Finish weight had no influence on dressing percentage and carcass fatness. Meat of HIGH lambs had lower L* value than other groups. Panellists gave lower scores to meat of MEDIUM lambs for tenderness when compared with other groups. In conclusion, CON system might be considered to obtain higher carcass dressing, lighter meat colour and more tender meat, while PAS system had an advantage of lower n-6/n-3 ratio and of higher ∑n-3 PUFA percentage. PAS lambs had lower fatness level than CON ones. Therefore, if priority is given to fatty acid composition and carcass with lower fat, PAS system might be considered. Finish weight of 35–36 kg might be preferred to increase lamb production, without any adverse effect on carcass and meat quality in both of the production systems.

Abstract
BACKGROUND The interest for grazing systems and the use of condensed tannins (CTs) as sources of natural antioxidants in animal diets has been increasing in recent years. The objective was to study the animal performance and carcass quality of the lambs according to the feeding strategy during lactation (indoors, grazing alfalfa, grazing sainfoin) and the inclusion of quebracho as a source of CTs (50 g kg-1 ) in the fattening concentrate. RESULTS The feeding strategy during lactation only had effects on carcass quality. Indoor lambs had a greater dressing percentage and deposition of kidney fat than sainfoin and alfalfa lambs. The kidney fat of sainfoin- and alfalfa-fed lambs had a greater yellowness, chroma and carotenoid content than the fat of indoor-fed lambs (P < 0.05), whereas the subcutaneous fat colour was not affected by the feeding during lactation. The use of fat colour to trace the feeding strategy was assessed and found insufficiently accurate to implement its use. The inclusion of 50 g kg-1 quebracho in the concentrate fed during the fattening period increased lamb weight gains and feed intake but had little effect on the carcass characteristics. CONCLUSIONS The feeding strategies during lactation had an effect on the carcass characteristics, highlighting the importance of the dam's diet during this period. The inclusion of quebracho in the lamb's concentrate had minor effects. © 2018 Society of Chemical Industry.

Abstract
The cull ewes represent an important part of sheep flock. However, this category of animal is often submitted to under nutrition leading to poor BW and skeletal carcasses. Their rehabilitation using a high energy diet can be an alternative to improve their body condition. The objective of this experiment was to study the BW gain and carcass characteristics of Barbarine cull ewes using rosemary (Rosmarinus officinalis L.) distillation residues (RR) and extruded linseed. For this, 28 ewes above 6 years old and 33±0.5 kg of BW were divided into four groups: CCC was fed 500 g of barley-straw with concentrate, RCC received 300 g of straw and 200 g of RR as basal diet with concentrate; whereas two other groups received the experimental concentrate, containing 10% of linseed, with 500 g of straw for CLC and 300 g of straw plus 200 g of RR for RLC group. At the end of experiment (90 days), all animals were slaughtered. For all ewes, the daily concentrate intake averaged 700 g; the average daily gain was 131 g and the slaughter BW 43.4 kg without significant difference between groups. Neither basal diet nor concentrate type did affect the carcass' weight, yield and composition. In addition, the organ's proportions were similar for all groups. The RR intake slightly improved muscle's protein content (P=0.03) and tended to decrease initial pH (P=0.06) and to increase meat redness (P=0.06), whereas linseed concentrate had no effect on meat color and its chemical composition. The subcutaneous fat color and firmness score relived a good quality trade for carcasses from all diets, in spite of higher yellowness and lower firmness recorded for linseed diet (P<0.05), which were moderately improved by rosemary combination with linseed. To conclude, the Barbarine cull ewes could gain up to 120 g/day in BW. The used diets permitted this BW gain without undesirable effects on carcass characteristics and meat quality. However, the study of meat fatty acid profile and antioxidant status should continue.

Abstract
This study was conducted to assess the effects of fermented total mixed ration (FTMR) on the growth performance, carcass and meat quality traits of Hanwoo steers. The present study evidenced that the FTMR had a strong effect on dry matter intake, body weight, daily gain, slaughter weight and carcass characteristics compared with control animals. The results showed that the dry matter intake (7.17 ± 0.13 kg), average body weight (615.20 ± 112.82 kg), and daily gain (0.56 ± 0.16 kg) were greater in animals receiving FTMR than in control animals (P < 0.05). The meat quality characteristics indicated that cooking loss and the pH values did not vary between control and FTMR treated animals; however, animals in the treated groups (FTMR) had higher meat quality grades, carcass weight (396.13 ± 18.35), fat thickness (13.25 ± 1.75), marbling score (5.63 ± 0.56), meat color (40.06 ± 1.23), crude fat (18.39 ± 1.32) and sensory characteristics (flavor 5.03 ± 0.17; tenderness 4.42 ± 0.33; juiciness 5.10 ± 0.16). Nevertheless, the shear force values decreased significantly in FTMR-treated animals compared with control group steers. Overall, FTMR may not only improve the growth performance, biochemical metabolites, and fatty and acetic acid profiles of steers, but may also enhance the carcass and meat quality characteristics of Hanwoo steers. Regarding economics, our research findings suggest that FTMR-based feeds may enhance Hanwoo steer meat quality at a low cost.

Abstract. Thirty-six Kivircik male lambs were used to determine the effects of rearing season (winter rearing – WR; spring–summer rearing – SSR; and autumn rearing – AR) on carcass and meat quality characteristics. Average daily gain in the period 0–134 days, final weight, cold carcass weight and real dressing percentage were higher in WR lambs than lambs from SSR and AR groups. Furthermore, SSR and AR lambs did not show significant differences for these traits (P > 0.05). WR lambs had the highest values in terms of back fat thickness, subjective carcass fatness score and fat percentage in pelvic limb, which gives information about the carcass fatness. Final meat pH, expressed juice and meat lightness 1 h after cutting were higher for SSR lambs than for WR and AR lambs. SSR lambs had the lowest scores in terms of flavour intensity, flavour quality and overall acceptability in the sensory evaluation panel. In conclusion, WR lambs yielded better carcass quality than SSR and AR lambs. When the rearing season is to be decided, the higher carcass quality of WR lambs and the lesser appreciation of meat of SSR lambs by consumers should be considered.

Abstract
This review aims to summarize the relevant published information about the effects of extensive feeding systems on the carcass and meat quality characteristics of lambs. Lambs finished in a feedlot or with supplementation under extensive systems exhibit faster growth rates, achieve target weights quicker, and produce heavier carcass weights when compared to grazing lambs. However, the literature also shows that finishing lambs on high-quality pasture can produce satisfactory growth rates without compromising carcass and meat quality traits. Lately, the consumer demand for products perceived as "healthy" and that are produced where animal welfare is optimal under systems which do not impact negatively on the environment, has heightened the interest in lamb production under extensive systems. Lambs raised on pasture can meet many of these specifications. Also, lambs fed higher quality green pasture can produce meat with greater amounts of health-claimable omega-3 fatty acids such as eicosapentaenoic acid plus docosahexaenoic acid than feeding systems based on feedlot pellets, grain, or dry pasture/straw. It is apparent that in some previous published research, the number of animals allocated for each treatment, and the lack of replicates, makes it difficult to formulate a correct understanding of the effect of forages on lamb carcass and meat quality. Future research should concentrate on the effect of legume, improved pasture, and specialized forage finishing systems on growth rate, carcass traits, and nutritional value of meat using well-designed experiments with an adequate number of lambs and appropriate paddock replicates per treatment.

Abstract. In this study, we aimed to determine the slaughter-carcass characteristics, meat quality, and fatty acid composition in lambs raised under intensive and extensive conditions. The animal material consisted of 30 Norduz male lambs, with an average age of 171 days. The lambs were divided into two groups: concentrate-fed lambs (CO) and pasture-fed lambs (PS). The results showed that the CO lambs had heavier carcasses (p< 0.001), a higher dressing percentage (p< 0.001), and higher intramuscular fat (p< 0.01) than the PS lambs. It was determined that the longissimus thoracis muscle of the CO lambs had a lower ultimate pH and higher L* and water-holding capacity than the PS lambs. In this study, intramuscular fat (longissimus thoracis, semimembranosus, triceps brachii), subcutaneous and tail fat samples were used to evaluate the effect of feeding system on fatty acid composition. The polyunsaturated fatty acid to saturated fatty acid ratio (PUFA ∕ SFA) of intramuscular fat was found to be significantly higher in the CO group than in the PS lambs, while similar subcutaneous and tail fat results were found in both groups. Moreover, the PS lambs had a lower n6 ∕ n3 ratio and higher percentage of omega-3 than the CO lambs in all tissues studied (p< 0.05). Overall, the CO lambs have heavier and fattier carcasses with better meat quality traits than the PS lambs. However, the effects of feeding system have varying results based on the fatty acid composition of different types of fat deposits.

Abstract
The aim of this study was to investigate the effect of two kinds of given diets on growth, on some carcass characteristics and on the major meat nutrients of local Algerian sheep breed. The investigated sheep breed called "Hamra" is one of the most famous breeds in Algeria. Among one 106 animals, 40 lambs were selected according to their age, similar livestock characteristics and body weight. The samples were divided into two equal groups: control and experimental lambs according to their live weight; 24.63 ± 0.47 and 24.35 ± 0.64 kg, respectively. Both groups were fed with two varieties of concentrate diets: corn diet based for the first group of control lambs (n = 20) and corn substituted by barley (Variety Saïda 183) for the second experimental group lambs (n = 20). Both diets were supplemented with 200 g straw of barley/animal/ration. The chemical analysis of diets showed an elevated crude fibre content in the commercial concentrate. However, the experimental concentrate contained higher amounts of calcium. After 59 days of fattening, no significant difference was found among the two studied groups on the growth performance (p > 0.05), showing the same final body weight. In contrast, a significant difference was found (p ≤ 0.001) in relation to the cost of the given diet. This could affect the price of the produced meat. At 37.85 ± 0.78 kg live weight, 10 lambs fed with experimental concentrate were slaughtered. The dressing percentage was 46.65 %, with 2.49 % of carcass shrink. Furthermore, an interesting percentage of total muscle was obtained (63.73 %) with a good carcass conformation scoring 9.56. Compared to other breed sheep, Hamra carcass could be considered as the most valuable one economically.

Abstract
BACKGROUND Dietary fats can alter the deposition and distribution of body fats in ruminants. The deposition and distribution of body fat play a vital role in the quality of ruminant carcasses and are of great commercial value since they influence the profitability and consumer acceptability of ruminant meat. The current study examined the effects of dietary blend of 80 % canola oil and 20 % palm oil (BCPO) on carcass characteristics, meat yield and accretion of fatty acid (FA) in subcutaneous, omental, perirenal, and mesentery adipose depots and m. supraspinatus (SS) in goats. METHODS Twenty four Boer crossbred bucks (BW 20.54 ± 0.47 kg) were randomly assigned to diets containing on DM basis 0, 4 and 8 % BCPO, fed for 100 d and harvested. RESULTS Diet had no effect (P > 0.05) on slaughter weight, dressing percentage, carcass and non-carcass components, meat yield, color, moisture and carotenoid contents and weight of adipose tissues in goats. The proportion of C18:1n-9 and cis-9 trans-11 CLA in the omental, perirenal and SS was higher (P < 0.05) in goats fed 4 and 8 % BCPO compared with the control goats. Dietary BCPO reduced (P < 0.05) the proportion of C14:0 in the omental, perirenal and mesentery depots, C18:0 in the perirenal depot, C16:0 in the SS and C16:1n-7 in the SS, omental and perirenal tissues. Dietary BCPO enhanced the proportion of C18:1 trans-11 Vaccenic and C18:3n-3 in SS and C20:5n-3 in SS and mesentery depot. No significant changes were found in the FA composition of subcutaneous depot. CONCLUSIONS Results indicate that dietary BCPO can be utilized to alter the FA composition of adipose tissues without detrimental effects on carcass characteristics in goats. Nonetheless, dietary BCPO is not an effective repartitioning agent for body fats in goats.

Abstract
Fifty 3-month-old male Tan lambs (similar in body weight) were divided into 5 groups to investigate the effects of different restricted pasture grazing times and indoor supplementation on the productive performances and fatty acid composition of the intramuscular fat in growing lambs. The lambs grazed for different periods of time (12 h/d, 8 h/d, 4 h/d, 2 h/d, and 0 h) and received various amounts of supplementary feedings during the 120-day trial. Pasture dry matter intake (DMI), total DMI, average daily gains and the live body weights of the lambs were measured during the experiment. The animals were slaughtered at the end of the study, their carcass traits were measured, and their longissimus dorsi muscles were sampled to analyze the intramuscular fat (IMF) content and fatty acid profiles. The results indicated that the different durations of grazing and supplementary feedings affected the animal performances and the composition of fatty acids. Grazing for 8 h/d or 2 h/d with the corresponding supplementary concentrate resulted in lambs with higher body weights, carcass weights and IMF contents. Lambs with longer grazing times and less concentrate accumulated more healthy fatty acids such as conjugated linoleic acid and n-3 polyunsaturated fatty acid and had higher n-3/n-6 ratios. Overall, a grazing allowance of 8 h/d and the corresponding concentrate was recommended to maintain a high quantity and quality of lamb meat.

Abstract
The aim of this study was to determine the performance of lambs of a Segureña local breed for growth, carcass traits and tissue composition when raised either in an extensive or an intensive production system to produce carcasses of ~11 kg. In the extensive system lambs (n = 21) were raised on pasture with salt-tolerant forages (bermudagrass hybrid and ryegrass Westerwold) and were unweaned. In the intensive system lambs (n = 24) were weaned at 45 days and reared in stalls with concentrate feeding. Extensive lambs, especially twins, showed lower growth rates during the total growing period. Male extensive lambs had higher proportions of full digestive tract and stomachs and lower commercial dressing percentages. Extensive lambs had a lower percentage of valuable body parts such as liver and tenderloin. In addition they showed a higher percentage of head, shoulder and neck; and poorer conformation scores. Furthermore, their carcasses had a higher percentage of bone and a lower percentage of muscle. Nevertheless, other aspects should be taken into account, such as meat quality and meat production cost, animal welfare and taking advantage of high salinity soil and water to grow these forages. An alternative system in which grazing is supplemented with concentrates should be evaluated in future research.

Abstract
Fifty male Merino lambs (6 to 8 weeks, 14.1 kg; n=10 per group) were used to study the effect of feeding system: barley straw in long form and concentrate pellets in separate troughs (Control), ad libitum alfalfa supplemented with concentrate in separate troughs (Alfalfa) or including various levels of ground barley straw in concentrate pellets (B05, B15 and B25 for 50, 150 and 250 g barley straw/kg), on rumen characteristics, acid-base status, blood cell counts and lymphocyte stimulation. Alfalfa lambs had the heaviest digestive tract contents, highest rumen pH values, lowest volatile fatty acid concentration, highest papillae counts and best mucosa colour and the greatest blood pCO2 values, lowest sodium and chloride and highest potassium concentrations (P<0.05). Including ground barley straw in the concentrate pellet or providing straw in long form separately from the concentrate reduces rumen pH and darkens ruminal mucosa as compared with alfalfa-fed lambs, thus affecting acid-base status.

Abstract
The objective of this study was to investigate the effect of maintenance system as well as the effect of Se, Zn, and vitamin E supplementation of ram-lambs on the slaughter value and concentration of mineral elements in the loin muscle of lambs. The experiment was conducted on 72 Polish Merino ram-lambs divided into three groups: group C, indoor with no supplement, 19 lambs; S, indoor with supplement, 23 lambs; G, outdoor with no supplement, 30 lambs. From birth all the lambs were maintained indoor with their dams and then weaned at the age of 8 weeks. The rams from group C and S were placed in individual straw-bedded pens and fattened individually with concentrate mixture offered ad libitum until the age of 16 weeks. The lambs from group G were grazed every day from May to July (2 months). During the fattening period each lamb from the supplemented group S was administered per os 1 mL 0.1% Na2SeO4 (Se, 0.42 mg), 3 mL 10% ZnSO4 (Zn, 68 mg), and 1 mL premix protect vitamin E (0.1 g α-tocopherol, 5 mg lysine, 5 mg methionine) daily. A comparison of half carcasses across the groups has shown no difference between the control group and the one with supplements, while the weight of half carcasses in the grazing group was smaller in comparison with groups C and S (p<0.001). The meat content in the pelvic limb showed no differences across all groups under study. The pelvic limb of grazing lambs contained less fat compared to the control and supplemented groups (p<0.001). The concentrations of Se and Zn in the blood plasma of ram-lambs from the supplemented group were significantly higher than for the control and grazing lambs. Inorganic Se and Zn supplementation with vitamin E to the diet of lambs increased Se and Zn levels in loin muscle (p<0.001) to 0.46 μg/g and 32.9 μg/g in fresh tissue, respectively.

Abstract
The effect of different feeding levels (ad libitum, 25 and 50 % restriction) and genotypes (½ Boer × ½ nondescript breed goats, Canindé, and Moxotó) on carcass quantitative characteristics and non-carcass components (NCC) were evaluated. Forty-five intact male goats were distributed in a 3 × 3 factorial design with five replicates. There was no effect of genotype on carcass weights and yields and retail cuts weights and yields (P > 0.05). Compared to Moxotó, ½ Boer presented better carcass conformation and higher weights (P < 0.01) and yields of viscera from gastrointestinal tract (P < 0.05), and compared to the other genotypes (P < 0.01), ½ Boer presented larger carcass compactness. Carcass weights and yields, retail cuts weights and NCC, and soft tissues yields were higher (P < 0.01) in goats fed ad libitum. The two restriction levels did not differ (P > 0.05) for these variables. There were interactions of genotype and feeding level. At ad libitum feeding, ½ Boer had higher weights of breast and shank, leg, soft tissues, and gastrointestinal viscera compared to the Moxotó (P < 0.05). The crossing of nondescript breed goats with Boer may be a strategy for increasing the efficiency of goat meat production in the Brazilian semiarid. Moreover, in times of feed scarcity, farmers may use higher feed restriction levels to keep animals, since for most of the parameters evaluated, there were no differences between the restriction levels.

Abstract
A herd of polish lowland local sheep was divided into two equal groups: the first group was kept under an overhead shelter, and the second group was kept in a warm barn. The effect of maintenance on ewe’s reproductive performance, survival as well as the growth rate of lambs, and their carcasses quality was investigated. The lack of differences in fertility and prolificacy of ewes as well as in the survival and growth rate between the groups confirmed a good adaptation of Żelaźnieńska sheep to low temperature. Harsh environmental conditions did not cause a significant decrease of the body weight growth; however, they brought in an (insignificant) reduction of subcutaneous fat thickness and meatiness of the loin part of a lamb’s body. The fat content of carcasses obtained from lambs reared under the overhead shelter was significantly lower, with no differences of meat and bones contribution between the groups.

Abstract
This study was conducted to evaluate concentrate level (CL) and slaughter body weight (SW) effects on growth performances, carcass traits and meat quality of Barbarine lambs. Twenty-four weaned male lambs (23.1 kg), receiving an oat-hay based diet, were allotted into two groups. The LCL group received low concentrate level (300 g) and the HCL group received high concentrate level (600 g). Lambs were slaughtered at two prefixed weights (35 and 42 kg). For each group and each weight, six lambs were slaughtered. Lambs from HCL group had higher ADG, carcass yields, carcass compactness and subcutaneous fat thickness, and lower carcass meat proportion. CL increase did not affect meat pH, meat and fat color, chemical and fatty acid composition. Late slaughtering improved carcass yields and increased carcass adiposity.
