Meat and fat quality of unweaned lambs as affected by slaughter weight and breed

Impact of Agro-Byproduct Supplementation on Carcass Traits and Meat Quality of Hair Sheep and Wool × Hair Crossbreds Grazing on Fescue Pasture

The effects of breed type (purebred or crossbred) and supplementation of agro-byproducts on the growth, carcass characteristics, and meat quality of landrace hair (Barbados Blackbelly; BB and St. Croix; SX) lambs was evaluated. Thirty-six 7.5-month-old purebred hair (BB and SX; body weight = 24.1 ± 4.26 kg) and terminal sire (Dorset; DO) crossbred lambs (DO × BB and DO × SX; body weight = 31.4 ± 3.50 kg) rotationally grazed predominantly on Jesup tall fescue pasture during spring with or without agro-byproduct supplementation (soyhull or corn gluten feed at 2% of BW). Following a 77d grazing period, the lambs were harvested, and their carcass characteristics and meat composition were evaluated. Both supplementation and crossbreeding significantly increased their carcass weight and primal cuts, whereas only supplementation increased (p < 0.01) the dressing percentage, and crossbreeding increased the shear force (p < 0.01). Regardless of breed type, supplementing agro-byproducts improved the lipid oxidation stability and texture properties of the fresh lamb, whereas the pasture-only lambs had healthier fatty acid profiles compared with the supplemented lambs. The results indicate that both terminal sire crossbreeding and byproduct supplementation can be used to affect the carcass characteristics and meat composition of landrace hair sheep lambs.

Carcass Characteristics and Meat Quality of Karacabey Merino lambs Reared under Triticale and Oat Pastures Compared with Stall-Fed Lambs

Fifty-eight Karacabey Merino lambs were used to study the effects of feeding system (triticale pasture, oat pasture, or stall-fed), birth type (single or multiple), gender (male or female), and birth year (2016 or 2017) on various carcass and meat quality characteristics. Stall lambs had higher conformation (CS) and fatness (FS) scores, and higher meat L* and h* values than the two pasture groups, possibly due to higher fat content, while oat pasture lambs had the most tender meat. Single-born lambs had higher CS, FS, and Longissimus thoracis muscle section area, while females had higher subcutaneous and non-carcass fat deposits than their counterparts. Both single-born lambs and 2016-born lambs had higher meat a* and C* values than their counterparts. In conclusion, a pasture-based feeding system is more suitable for Karacabey Merino lambs than a stall feeding system, if lean meat and/or meat products are preferred. However, it should not be ignored that stall-fed lambs showed a better fattening performance in terms of conformation and fatness, during the same period.

Nutritional Quality of Meat from Barren Merino Ewes in Comparison to Meat from Traditional Lambs

In Spain, lamb consumption has decreased over the last few years. To increase farmers' income, we studied the nutritional quality of the barren ewes' meat in comparison to traditional lambs' meat with 10 barren ewes, 10 male lambs, and 10 female lambs from the Merino breed. We measured the subcutaneous fat, muscle color, and carcass tissue composition, as well as proximal composition, mineral, tocopherol, retinol, lutein, and cholesterol contents, and the TPA texture profile, fatty acid profile, and lipid oxidation of the meat. There was no effect of the animal type (males, females, and ewes) on the pH, and the differences in the subcutaneous fat color, lipid oxidation, and texture were irrelevant from a practical point of view. The tissue composition in the three groups of animals reflected a high percentage of saleable meat, with no penalty incurred for intensive fattening in any of the groups. The ewes' meat presented a higher percentage of moisture, collagen, ash, calcium, iron, α-tocopherol, and retinol than the lambs' meat. In addition, it had higher content of DHA and CLA and lower values for the ratio n6/n3, which is beneficial for health, although it also contained more fat, saturated fatty acids, and cholesterol than the lambs' meat.

Fatty Acid Indices and the Nutritional Properties of Karakul Sheep Meat

This study aimed to evaluate the fatty acid profile and health lipid indices of sheep meat (from 52 Karakul sheep from NE Romania). The effect of age at slaughter and the influence of muscle region were studied for nutritional parameters, especially the fatty acids from lipid fractions. Based on the fatty acid profiles and lipid contents, the sanogenic indices were determined for two sheep muscle groups. Thus, two different muscle regions from lamb and adult sheep were analysed from both genders, the Longissimus dorsi and Triceps brachii, to argue the advantages of each category and the rationalization, in terms of meat consumption, regarding their impact on human health. Sheep meat has many components with beneficial effects on human health. Apart from the fact that it is an important source of nutrients due to its high content of proteins, lipids, and minerals, it is also a product that can provide fundamental bioactive compounds for maintaining metabolic functions. The qualitative indices assessment revealed that lambs have meat with high PUFA content on Longissimus dorsi muscles (approx. 25% of total fatty acids), 0.68 for PUFA/SFA, with highest values for n-3 (approx. 8%) and n-6 (approx. 14%). Appropriate values can also be observed in Triceps brachii muscles from adult sheep. The sanogenic indices also presented good values for Longissimus dorsi from lambs and Triceps brachii from adult sheep (polyunsaturation index = 7.2-10.2; atherogenic index = 0.56-0.67; thrombogenic index = 0.78-0.96; hypocholesterolemic/hypercholesterolemic index = 2.4-2.7 (for Longissimus dorsi)).

Fatty acid profile and sensory properties of lamb meat from males of five indigenous breeds

Abstract. The objective of this study was to determine meat quality characteristics, fatty acid profiles, and sensory characteristics of 50 single-birth male lambs from five breeds: Artlı (n=10), Çepni (n=10), Hemşin (n=10), Karayaka (n=10), and Of (n=10). At the beginning of the experiment, the average age and weight of the lambs were 120 ± 5 d and 30.7 ± 0.68 kg respectively. After 60 d of intensive fattening, the average live weight before slaughter was 40.96 kg ± 0.76 kg. All evaluations were performed on samples from the longissimus thoracis et lumborum (LTL) muscle. There was no difference between breeds in terms of the pH values of the hot carcasses, whereas the cold carcass pH values were higher (P<0.001) in Hemşin animals than in the other breeds. Meat chemical properties (such as organic matter; dry matter; and fat, measured as the ether extract), physical properties (such as cooking loss; drip loss; and water-holding capacity, WHC), and instrumental values (such as colour, L* and b* values, chewiness, hardness, and resilience) were significantly affected by breed differences. Additionally, the differences between breeds were found to be significant in terms of the fatty acid composition and the evaluation of organoleptic properties, such as sensory characteristics, flavour, and juiciness of cooked (boiled or roasted) meat. The results show that lamb meat's physical, chemical, and sensory properties vary by breed. The differences found in the composition and presence of meat fatty acids between and within breeds can be used as a source of variation for future genetic improvement strategies.

Physicochemical characteristics of lamb meat fed with cottonseed associated with calcium lignosulphonate

The physicochemical characteristics of the meat from lambs fed diets containing whole or disintegrated cottonseed, associated or not with calcium lignosulfonate (LignoCaSO3), were evaluated. Thirty non-castrated Dorper x Santa Inês lambs, with an average of 24.9 ± 3.6 kg and four months of age were confined for 60 days in collective stalls and distributed in a completely randomized design with six replications. After slaughter, by means of contrasts, the averages of the parameters of the semimembranous and semitendinosus muscles were analyzed. The cottonseed increased cooking loss and ash, and reduced muscle weight, water holding capacity and red intensity. The disintegration of the cottonseed reduced the shear force in diets without LignoCaSO3, increased the protein and the loss by cooking and reduced the pH in the diets with the additive. The luminosity values increased with the disintegration of the cottonseed in diets with and without LignoCaSO3. The addition of LignoCaSO3 increased the weight of the muscle, protein, ash, pH, shear strength and the intensity of red. Moisture, lipids and yellow intensity were not influenced by the diets. Even changing the physical-chemical characteristics, the cottonseed with or without LignoCaSO3 does not change the quality of the meat

Carcass and Meat Quality of Lambs from Thin-Tailed and Fat-Tailed Breeds at Five Different Slaughter Weights

In lamb production, deciding the optimal slaughter weight (SW) has great importance on product quality. The aim of the study was to determine the optimum SW for lambs from a thin-tailed breed (Kivircik) and a fat-tailed breed (Kangal Akkaraman) in order to get high-quality meat and carcass. Kivircik (n=60) and Kangal Akkaraman (n=59) lambs were allotted to five SW groups (20, 28, 36, 44 and 52 kg). In Kivircik lambs, backfat thickness and fatness score gradually increased in parallel with the increase in SW, while the increase in the tail fat and kidney knob and channel fat (KKCF) proportions were observed by up to 36 kg. In Kangal Akkaraman lambs, evident increases in fatness parameters, except tail fat proportion, were observed when the SW increased from 44 kg to 52 kg. Meat pH, Warner Bratzler shear force (WBSF) and cooking loss values were not influenced by SW in lambs of both breeds. As SW increased in Kivircik lambs, there was a significant decrease in meat lightness and an increase in yellowness. In Kangal Akkaraman breed, lambs slaughtered at 20 kg and 28 kg had higher L* values, and lower a* and C* values than those of other SW groups. In Kivircik lambs, the total PUFA proportion and the ΣPUFA/ ΣSFA ratio were lower in SW-44 and SW-52 groups than those of SW-20 and SW-28 groups. Decreases of these parameters were in SW-52 group in Kangal Akkaraman lambs. In meat samples of both breeds, SW-52 groups had a lower Σn-3 proportion and a higher Σn-6 / Σn-3 ratio than other SW groups. In Kivircik lambs, the panellists evaluated the meat of SW-20 and SW-28 groups as tender compared to those in SW-44 and SW-52 groups. In Kangal Akkaraman breed, flavour intensity in the meat of SW-52 lambs was higher than those of SW-20 and SW-28 groups. Results of the study indicate that slaughtering of lambs at 20 kg and 28 kg in both breeds provided better meat quality but caused lower carcass weight. Therefore, slaughtering Kivircik and Kangal Akkaraman lambs at 20 kg and 28 kg live weight might be recommended especially to farmers, who aim to obtain high-quality lamb meat. In this case, it should not be ignored that the amount of meat produced will be less. On the other hand, slaughtering lambs at about 44 kg weight could be recommended to farmers, who aimed to obtain as much quality lamb carcasses as possible without any negative influence on meat quality.

Lamb Meat Quality and Carcass Evaluation of Five Autochthonous Sheep Breeds: Towards Biodiversity Protection

The biodiversity protection represents a challenge of the agenda ONU 2030 for Sustainable Development Goals (SDG). Autochthonous sheep breeds, including Altamurana, Bagnolese, Gentile di Puglia, Laticauda and Leccese, reared in continental Southern Italy, are strongly affected by extinction risk; thus, it is urgent to find new solutions to valorise their products and obtain sustainable and smart food from local farms. The objective of the present study was to assess the lamb carcass commercial quality, chemical and fatty acid composition of Altamurana, Bagnolese, Gentile di Puglia, Laticauda and Leccese autochtonous sheep breeds. Data on EU Mediterranean classification showed that the carcasses from both Bagnolese and Laticauda breeds were classified in the heaviest category C. Moreover, breed can influence the meat fatty acids profile, which is resulted rich in conjugated linoleic acid with good nutritional properties; thus, lambs’ meat from autochthonous sheep breeds can be considered interesting for human consumption. The present study can help to protect the biodiversity of livestock heritage of Southern Italy and open a new field for the valorisation and promotion of their derived products.

Abstract

In the present study, the evaluation of the carcasses and meat quality, in terms of chemical composition and fatty acid profile, of lambs from five autochthonous sheep breeds (Altamurana, Bagnolese, Gentile di Puglia, Laticauda, and Leccese) reared in continental Southern Italy, were studied. All the carcasses were evaluated according to the EU Mediterranean classification system for carcasses weighing less than 13 kg. Meat chemical composition and fatty acids profile were assessed on both loin and leg commercial cuts. Fatty acid composition of loin resulted in differences among breeds, displaying lower values of saturated fatty acid in Altamurana, Bagnolese, and Leccese breeds and the highest content of polyunsaturated fatty acid in the Altamurana breed. Principal component analysis grouped lamb according to fatty acid content and to conjugated linoleic acid (CLA), omega n-3 and n-6 fatty acids; thus, Altamurana, Bagnolese, and Leccese breeds are characterized by the highest values of CLA content. Our data demonstrated that lamb meat from autochthonous breed has good carcass quality and the content of CLA, n-3, and n-6 was valuable for human consumption; therefore, the valorisation of local meat quality can help to avoid the extinction of the autochthonous breed offering to the market and consumer’s high nutritive products.

Effect of Age and Breed on Carcass and Meat Quality Characteristics of Beni-Guil and Ouled-Djellal Sheep Breeds

Two hundred eight sheep, belonging to two main breeds of eastern Morocco, “Beni-Guil” and “Ouled-Djellal,” were investigated for carcass traits and meat quality. The objective of this study is to determine the effects of breed and age at slaughter on carcass traits and meat quality. The animals were slaughtered at three age classes: milk teeth, animals with two adult teeth, and adult animals. Dressing percentage, carcass measurements, compactness indices, carcass shrinkage parameter, conformation scores, fatness state, fat consistency, fat and meat colour, and pH were measured 24 hours postmortem. The results showed that the dressing percentage, carcass measurements, and compactness indices increased with slaughter age (p < 0.001). Furthermore, the effect of breed was higher for Ouled-Djellal breed of carcass characteristics (p < 0.01). However, no significant effect was observed for carcass shrinkage parameter. The longissimus lumborum muscle was used to determine the meat colour, which ranged from 23.89 to 21.96, while the ultimate pH ranged from 5.70 to 5.82. These results were influenced by age at slaughter (p < 0.05) but not influenced by breed. Breed and age at slaughter had a significant influence on carcass traits (p < 0.001). The present study provided a new insight into the effect of breed and age at slaughter on carcass and meat traits of both “Beni-Guil-PGI” and Ouled-Djellal sheep breeds.

Liveweight and Sex Effects on Instrumental Meat Quality of Rubia de El Molar Autochthonous Ovine Breed

A total of 84% of the autochthonous livestock breeds in Spain are in danger of extinction. This decline is mainly produced because they are not very productive and the farmers have been oriented to the most productive breeds, neglecting the rest. There are many factors that push us to conserve autochthonous breeds with little census. These animals are very adapted to their environment, so they are the ones that best exploit the geographical characteristics of their area; besides, their products have a high quality and these breeds have very beneficial genetic components: they are a source of very useful and not sufficiently known gene variants that make them a genetic heritage of undoubted value. If they become extinct, we would be losing an irreplaceable genetic quality. Rubia de El Molar sheep, an autochthonous breed of Madrid, Spain, is currently in serious danger of disappearing. In this work, the meat quality of lambs from Rubia de El Molar breed was studied to test both weight and sex effects on meat quality, assessed by means of instrumental methods. This is the first work that studies the instrumental quality of Rubia de El Molar suckling lamb meat.

Abstract

The effects of sex and weight on instrumental meat quality characteristics of Rubia de El Molar autochthonous ovine breed were studied. Four weight groups (10, 15, 20 and 25 kg, each of the groups with seven males and seven females) were assessed. A decrease of longissimus thoracis muscle (LT) lightness from 43.39 for 10 kg lambs to 38.84 for 25 kg group was observed. LT redness and yellowness indices and chromaticity values increased as weight increased. The percentage of juice expelled increased from 11.52 (10 kg) to 17.15 (15 kg). The percentage of intramuscular fat in biceps femoris (BF) and supraespinatus (SE) muscles increased as weight increased. Warner–Bratzler shear force (WBSF) in raw meat and hardness in cooked meat increased as liveweight increased. However, a decrease in the amount of soluble collagen in quadriceps femoris (QF), biceps femoris (BF) and infraespinatus (IE) muscles was observed as weight increased. Sex effect was only observed for intramuscular fat content in QF and BF muscles (2.4% in males and 2.9 in females) and WBSF in raw meat (26.12 N for males and 21.25 N for females). Weight had a greater effect than sex on Rubia de El Molar meat quality characteristics.

Live Weight and Sex Effects on Sensory Quality of Rubia de El Molar Autochthonous Ovine Breed Meat

According to sensory characteristics, two weight groups of animals were detected: light carcasses (10 and 15 kg) and heavy carcasses (20 and 25 kg). Heavy carcasses’ meat was tougher, more elastic, and received lower pleasantness scores than light animals. Sex had a lower effect on meat sensory parameters than weight, and meat from male lambs showed higher flavour intensity and also higher pleasantness scores than female meat.

Abstract

Fifty-six Rubia de El Molar ovine breed lamb carcasses were divided into 8 groups (n = 7 per group) according to weight (10, 15, 20 and 25 kg) and sex (male and female) to study the effect of these factors on meat sensory characteristics, assessed by means of a trained panel. Heavier animals showed a more-springy meat and also received lower scores for pleasantness. Assessors gave lower scores for flavour and pleasantness in female meat. A high correlation was detected between hardness and springiness, number of chews, and pleasantness. Juiciness, greasiness, and flavour were also sensory variates highly correlated. Pleasantness was only correlated to hardness. Changes from 10 to 25 kg did not affect juiciness, greasiness, flavour, and number of chews. There are no significant differences in the sensory quality of lambs slaughtered at 10 and 15 kg live weight, and also between 20 and 25 kg groups. Heavy carcasses (20 and 25 kg) showed a more hard and springy meat than light carcasses (10 and 15 kg). Besides, the 10 and 15 kg animals group received higher scores for pleasantness. This work showed differences in suckling lambs’ meat sensory parameters between Rubia de El Molar and other ovine breeds.

Dual energy X-ray absorptiometry precisely and accurately predicts lamb carcass composition at abattoir chain speed across a range of phenotypic and genotypic variables

Dual energy X-ray absorptiometry (DEXA) is an imaging modality that has been used to predict the computed tomography (CT)-determined carcass composition of multiple species, including sheep and pigs, with minimal inaccuracies, using medical grade DEXA scanners. An online DEXA scanner in an Australian abattoir has shown that a high level of precision can be achieved when predicting lamb carcass composition in real time. This study investigated the accuracy of that same online DEXA when predicting fat and lean percentages as determined by CT over a wide range of phenotypic and genotypic variables across 454 lambs over 6 kill groups and contrasted these results against the current Australian industry standard of grade-rule (GR) measurements to grade carcasses. Lamb carcasses were DEXA scanned and then CT scanned to determine CT Fat % and CT Lean %. All phenotypic traits and genotypic information, including Australian Sheep Breeding Values, were recorded for each carcass. Residuals of the DEXA predicted CT Fat % and Lean %, and the actual CT Fat % and Lean % were calculated and tested against all phenotypic and genotypic variables. Excellent overall precision was recorded when predicting CT Fat % (R2 = 0.91, RMSE = 1.19%). Small biases present for sire breed, sire type, dam breed, hot carcass weight and c-site eye muscle area could be explained by a regression paradox; however, biases among kill group (-0.73% to 1.01% for CT Fat %, -1.48% to 0.76% for CT Lean %) and the Merino sire type (0.36% for CT Fat %, -0.73% for CT Lean %) could not be explained by this effect. Over the large range of phenotypic and genotypic variation, there was excellent precision when predicting CT Fat % and CT Lean % by an online DEXA, with only minor biases, showing superiority to the existing Australian standard of GR measurements.

Effect of Breed on Fatty Acid Composition of Meat and Subcutaneous Adipose Tissue of Light Lambs

The recognition of the role of food in the improvement and preservation of health is receiving more and more attention among consumers, especially in developed countries. Fats from red meats are considered quite unhealthy because of their high levels of cholesterol and saturated fatty acids. Healthier lipid profiles of red meats can be achieved by a proper feed composition of animals, but other factors, such as breed, sex, and live weight, are able to affect the nutritional properties of meats. This investigation aimed to evaluate the effect of breed (Bergamasca, Italian Merino, and Sopravissana) on the fatty acid composition of invisible (intramuscular) and visible (subcutaneous) fats of light lambs reared in Central Italy transhumant farms. They recently gained a Protected Geographical Indication label (European Union, Commission Implementing Regulation No. 475/2013), as ”Agnello del Centro Italia”. It is an income opportunity for local farms that passes through the nutritional valorization of lamb meat. The indices of nutritional quality of fats have showed that the meat of Italian Merino and Sopravissana lambs had better nutritional quality than the Bergamasca breed.

Abstract

Lamb meat is the main product of Central Italy transhumant farms, where lambs are traditionally reared with their mothers on pastures and are supplemented with concentrates and/or hay from day 20–30 until slaughter. However, few data are available on the fatty acid (FA) composition of unweaned lambs reared by extensive systems in Central Italy. The study aimed to evaluate the effect of breed (Bergamasca, Italian Merino, and Sopravissana) on the FA composition of intramuscular (longissimus lumborum, LL) and subcutaneous (SC) fats of light lambs. Statistical analysis showed that breed had effect only on some FAs in LL muscle fat (C18:0, C20:0, C14:1, C16:1, C17:1, C18:3 n-3, trans and conjugated linoleic acid isomers) and in SC adipose tissue (C21:0, C16:1, C18:1, C20:4 n-6, C20:5 n-3, C18:1 trans isomers). Gas chromatography data in combination with a chemometric approach could have some potential to discriminate among breeds. Indices of nutritional quality of the lipids suggested that the meat of Italian Merino and Sopravissana lambs might have better nutritional quality than Bergamasca; further studies, involving a greater number of animals, are needed to confirm these early results.

Effect of a Diet Supplemented with Malic Acid-Heat (MAH) Treated Sunflower on Carcass Characteristics, Meat Composition and Fatty Acids Profile in Growing Lambs

One of the main objectives of animal nutrition is to optimize the production of the animals in order to obtain good-quality products, but decreasing the environmental pollution caused by livestock production has also become a priority in the last years. Compared to other farm animals, ruminants have low N utilization efficiency that is mainly due to the inefficient use of nitrogen (N) in the rumen and a large portion of the ingested N is excreted causing environmental problems such as water and soil eutrophication. In this study we analyzed the influence of feeding sunflower seeds (SS) and meal (SM) subjected to a combined malic acid–heat treatment (MAH) on carcass characteristics and meat composition and fatty acid profile of growing lambs. The MAH treatment was applied to reduce ruminal degradation of SS and SM protein and therefore N losses. Compared to control-fed lambs, animals fed the treated SS and SM had increased dorsal fat thickness and yellowness and chromaticity of the Rectus abdominis muscle, which might be beneficial for consumers’ acceptance as they associate a bright meat color with meat freshness and quality. However, there were no differences between groups in meat chemical composition and fatty acid profile.

Abstract

The objective of the study was to assess the effects of feeding sunflower meal (SM) and seeds (SS) protected against rumen degradation on carcass characteristics and composition and fatty acid (FA) profile of lamb meat. The protection of SM and SS was achieved by treating both feeds with malic acid at 150 °C for 2 h (MAH treatment) and in a previous study this treatment was shown to decrease ruminal degradability of protein of both feeds and fat degradability of SS. Two homogeneous groups of 12 lambs each were fed ad libitum high-cereal concentrates and cereal straw from 14 to 26 kg of body weight. The two concentrates differed only in the treatment SM and SS, which were included either untreated (control) or MAH treated. The MAH-fed lambs had greater thickness of dorsal fat (p = 0.016) and greater (p ≤ 0.016) values of the color parameters a* (redness) and C* (chromaticity) of the Rectus abdominis muscle. However, there were no differences in carcass measurements and in water-holding capacity, chemical composition, pH, color, or fatty acid of Longissimus muscle. In summary, the MAH treatment resulted in only subtle changes in meat composition and quality.

Meat Production from Dairy Breed Lambs Due to Slaughter Age and Feeding Plan Based on Wheat Bran

The sheep meat sector in southern Italy, based mainly on light milk-fed lambs, requires technical innovations to improve the production system, the product quality, and enhance the consumption of lamb meat. To fulfill these requirements, this investigation aimed to implement feeding strategies to reduce the cost and energy level of diets for dairy breed lambs slaughtered at an older age than the light lambs, applying a feed restriction at 75% and/or including an inexpensive and local byproduct, such as durum wheat bran (DWB), as a fiber source. The proposed feeding plans were suitable to increase the slaughter age of lambs up to 120 days and produce lean carcasses that, compared to those from 90-day-old lambs, were heavier and with improved meat quality in terms of major water retention and tenderness. The dietary inclusion of DWB limited the fat content and improved the health properties of lamb meat with regard to its antioxidant capacity and fatty acid profile, whereas it reduced lambs’ growth when associated with feed restriction.

Abstract

This experiment aimed to investigate the possibility to increase the carcass weight of dairy breed lambs and produce moderate-fat meat by applying inexpensive feeding strategies based on restriction and through the use of a fibrous byproduct such as the durum wheat bran (DWB). Sixty-five 45-day-old lambs of the Valle del Belice breed, divided into 6 groups, were fed alfalfa hay supplemented with concentrate feeds including DWB at 0% or 20% (DWB0, DWB20), supplied ad libitum (L) or restricted at 75% (R), and slaughtered at 90 or 120 days of age. The groups were as follows: DWB0-90L (n = 14), DWB20-90L (n = 14), DWB0-120R (n = 10), DWB20-120R (n = 9), DWB0-120L (n = 9), DWB20-120L (n = 9). The diet did not affect feed intake, growth or carcass weight of lambs fed ad libitum, whereas 120-day-old lambs fed DWB associated to restriction showed the lowest weight gain (105 vs. 170, 185 and 190 g/day in DWD20-120R, DWB0-120R, DWB0-120L and DWB20-120L; p = 0.04). The incidence of fat tissue in the hind leg increased (p < 0.0001) from 90L (5.82 and 5.45% with DWB0 and DWB20) to 120R (8.80 and 8.43% with DWB0 and DWB20) and 120L lambs (10.7 and 11.8% with DWB0 and DWB20). Older lambs’ meat, compared to that of 90L lambs, showed analogous levels of intramuscular fat, higher water retention, tenderness and lightness, and a more intense red colour. In meat from 120-day-old lambs, DWB intake tended to reduce the fat level (p = 0.009) and increased polyphenol content (1.10 vs. 1.62, and 1.02 vs. 1.65 g GAE/kg dry matter (DM) in 120R and 120L lambs; p = 0.02), antioxidant capacity (12.8 vs. 14.9, and 12.8 vs. 15.7 mmol trolox eq/kg DM in 120R and 120L lambs; p = 0.02), and the presence of n-3 polyunsaturated fatty acids (FA) (1.61 vs. 2.81, and 1.43 vs. 2.61 g/100 g FA in 120R and 120L lambs; p = 0.007), thereby improving the meat’s health properties. The panelists perceived the effects of DWB inclusion as well as the feeding level with triangle tests.

Effects of corn supplementation on meat quality and fatty acid composition of Dorper lambs fed PKC-Urea treated rice straw

BACKGROUND

The increasing costs of feed has subsequently increased the costs of production of livestock, thereby decreasing the profit margin of this sector. The utilization of agro-industrial by-products has to some extent substitute some of the corn grains and soyabean meal, commonly used in animal feeds. In Malaysia, palm kernel cake (PKC) is a by-product of the oil palm industry and is frequently used to supply both crude protein (14-16% CP) and energy (11 MJ/kg) in ruminants. The energy and protein content are adequate for maintenance in the majority of ruminants. However, highly available energy supplementation is known to improve growth performance and protein deposition. This study was carried out to determine the effect on the quality of meat and fatty acid composition of the semitendinosus (ST), supraspinatus (SS), and longissimus lumborum (LL) muscles of Dorper lambs by including corn as an energy source in a basal diet of PKC urea-treated rice straw.

RESULTS

The results show that the LL muscle-drip loss was greater in animals supplemented with 5% corn compared to the other groups. Higher pH values of SS and LL muscles were observed in animals supplemented with 5 and 10% corn. Furthermore, the L* value of ST muscle was increased in lambs fed on 5% corn while, reduced in those fed on 0% corn, but the a* and b* values were not significantly different in the treatment groups. The fatty acid composition of the SS muscles showed that lambs fed on 10% corn had higher levels of sum PUFA n-3 compared to those fed on 0% corn. The concentration of C18:1trans11 and CLA c12 t10 in ST muscle from the lambs fed on supplemented diets were higher than those of the controls.

CONCLUSION

This study has concluded the supplementation of corn as a source of energy into a PKC urea-treated rice straw-based diet increased the PUFA concentrations of muscles as compared to control groups.

The polymorphisms of genes associated with the profile of fatty acids of sheep

ABSTRACT The present study aimed to evaluate the occurrence of polymorphisms in Diacylglycerol acyltransferase (DGTA-1 and 2), Fatty acid synthase (FASN), Stearoyl-CoA desaturase (SCD) genes and the Thioesterase domain of FASN (TE-FASN) gene that may be related to the lipid profile. In the experiment, a total of 84 sheep from different genetic groups were used. For the evaluation of the polymorphism of the genes, PCR-Single Strand Conformation Polymorphism (SSCP) technique and subsequent sequencing were used. In DGAT-2 gene, four genotypes were identified with the presence of 6 polymorphisms, with two (c.229T> C; c.255T> C) that resulted into the exchange of phenylalanine by leucine. In FASN gene, two genotypes were identified. In TE-FASN gene, three genotypes and 17 polymorphisms were identified. DGAT-1 and SCD genes did not reveal the occurrence of polymorphism. There was difference in relation to C14: 0, C18: 0 fatty acids and Δ9-desaturase C18 for DGAT-2 gene and of C18: 2ω6t for TE-FASN. There were differences among the genetic groups for C10: 0, C12: 0, C17: 0, C18: 2ω6t, C18: 3ω3, C20: 2, total of ω3, ω3/ω6 and atherogenicity index. There is occurrence of polymorphism of DGAT-2 and TE-FASN genes and these should be further studied in sheep since they revealed influence of the genotypes on the fatty acid profile.

The effects of rearing diet, sex and age on the fatty acid profile of Chios lambs

A total of 40 lambs of Chios breed were used to determine the effect of rearing system, sex and age on the fatty acid (FA) profile of M. semimembranosus proprius (SP), M. longissimus dorsii (LD) and M. triceps brachii (TB). The lambs were assigned into two groups balanced for bodyweight and sex. The first group (n = 20) underwent natural rearing (natural) and received only maternal milk until weaning. The second group (n = 20) weaned at birth and subjected to artificial suckling (artificial) with a commercial milk replacer. At 35 days of age, 10 animals from each group were weighed and slaughtered. The remaining lambs of both groups, after weaning were fed daily 100 g barley hay per animal and a commercial concentrate diet ad libitum up to 90 days of age, where they were also weighed and slaughtered. The results showed that the FA profile of lamb muscles was related with that of suckled milk (natural or artificial). Sex did not affect the FA profile, whereas the increase in the slaughtered age lead to changes in the FA profile of lamb muscles (SP, LD, TB). In conclusion, both rearing system and age change the FA profile of lamb muscles, but not in the same manner in all of them (SP, LD, TB).

Effect of mechanically deboned poultry meat content on technological properties and sensory characteristics of lamb and mutton sausages

Objective

This study aimed to develop a value-added product concerning technological and sensory characteristics changes of the use of mechanically deboned poultry meat (MDPM) as meat replacer in lamb and mutton emulsion-type sausages (mortadella).

Methods

Sausages were produced with lamb and mutton and with different contents of MDPM. Six treatments, using lamb or mutton and 0%, 30%, and 60% of MDPM in relation to the meat batter, were produced and analyzed for pH, proximal composition, calcium and residual nitrite content, water activity, 2-thiobarbituric acid reactive substances (TBARS), instrumental color and texture profile. The sensory profile of the mortadella’s was also evaluated by acceptance test and check-all-that-applies (CATA) analysis.

Results

The MDPM addition increased (p<0.05) fat, residual nitrite and calcium content in the all sausage formulations, but mutton sausage had (p<0.05) higher fat and lower moisture content than lamb sausage. The pH, water activity, TBARS index and color was not affected by MDPM additions, while the mutton sausages were significantly redder (higher a*, C*, and lower h°) and darker (lower L*) than lamb sausages. Adding up to 60% of MDPM reduced (p<0.05) sausages hardness and chewiness. Overall, the meat replacement by MDPM increased the sausages acceptance, but the mutton sausage with 30% of MDPM replacer were the most preferred. Consumers related that pink color, glossy appearance, poultry meat-like taste, soft texture, juicy and greasy mouth feel to all sausages contain MDPM according to CATA analysis.

Conclusion

Mutton from culled ewes can be utilized for mortadella production with 30% replacement of lean mutton and fat by MDPM.

Effects of pre-slaughter diet/management system and fasting period on physiological indicators and meat quality traits of lambs

This study determined the effects of pre-slaughter diet/management system on blood and rumen parameters and meat-quality traits of Norduz lambs. Eighty lambs were divided into two groups according to diet (AH: alfalfa hay; BAH: alfalfa supplemented with 500 g/head barley) for 21 days. Following this period, lambs from each group were distributed among four groups according to pre-slaughter fasting period as 0, 12, 24 or 48 h. Cortisol concentrations were found to be significantly higher in the 24 h and 48 h groups when compared to the 0 h group (p<0.01). Diet and fasting period had limited effect on muscle glycogen content and ultimate pH·L*, WHC and moisture decreased in line with increases in the fasting period (p<0.01). In conclusion, carcass conformation and some meat quality traits were better in BAH lambs. Fasting had a negative effect on some meat quality parameters, with significant increases in some physiological stress indicators after fasting periods of 24 h or longer.

Chemical and physical characteristics of lamb meat related to crossbreeding of Romanov ewes with Suffolk and Charollais sires

The aim was to evaluate the effects of crossbreeding Romanov (RO) ewes with Suffolk (SF) and Charollais (CH) sires on the chemicophysical characteristics and FA profile of the Quadriceps femoris muscle (QFM) in lambs fattened under organic conditions. The experimental animals were male lamb twins of two different crossbreds; CH 50 RO 50 and SF 50 RO 50. Lambs were slaughtered at an average live weight of 31kg. CH 50 RO 50 displayed higher contents of dry matter and intramuscular fat of the QFM. A lower pH value of CH 50 RO 50 was reflected in an increase of WHC. Meat of SF 50 RO 50 lambs had more lightness (L*) and yellowness (b*). The CH 50 RO 50 genotype showed a significantly higher proportion of C18:3n-3cis and n-3 PUFA than the SF 50 RO 50 genotype. The genotype also affected the Δ(9)-desaturase (16) index.

Effect of the addition of calcium soap to ewes' diet on fatty acid composition of ewe milk and subcutaneous fat of suckling lambs reared on ewe milk

The aim of this work was to study the effect of the inclusion of calcium soap (CS) in ewes' diet on the fatty acid profile of suckling lambs. Sixty suckling lambs of three breeds (Castellana, Churra and Assaf) were divided into two equal groups. One group was fed with a diet composed of beetroot pulp, alfalfa, barley, corn, soy, cotton and 4% of CS, and the other with a control diet without CS. The fatty acid profiles of the ewe's milk samples collected on the day before slaughter and of the lamb subcutaneous fat collected from the back of the carcasses were analysed. The addition of calcium soap to the ewe's diet did not change the milk fatty acid profile but significantly increased SFA and decreased both the PUFA and MUFA levels of suckling lamb fat. PCA analysis revealed a good separation of the lamb samples according to the diet of the mothers, showing that diet is more important than breed in explaining sample variability.
