Abstract
Since 2022, European specifications for organic pig farming have evolved to distribute 100 % organic feed and to reinforce the link to the soil with feed resources that should primarily be obtained from the farm or the same region. Feeding strategy acts as a lever to improve various quality dimensions of organic (as well as conventional) pork, including intrinsic dimensions (carcass composition, nutritional, organoleptic, technological, sanitary qualities) and extrinsic dimensions related to animal farming (image). Diet may also influence the risk of undesirable odours or flavours that may be found in pork from non-castrated male pigs. This study aimed at evaluating the effects of a specific feeding strategy on several quality dimensions of organic meat from non-castrated male pigs. The experiment was conducted with 77 organic non-castrated male pigs (Piétrain NN × Large White) reared according to organic specifications and distributed in two batches. Within litters, male littermates were allocated at around 33 kg of live weight to either a Control group which received a Control feed (C) corresponding to the organic specifications or in a Bio+ group which received an organic test feed based mainly on French raw materials and which contained more fibres (faba bean and access to forages) and omega-3 fatty acids (linseed, camelina). All pigs were reared in the same building on deep straw bedding (1.3 m2/pig) with free outdoor access (1.0 m2/pig) using one pen per experimental group. Pigs were fed ad libitum until slaughter at about 125 kg live weight. Average daily gain, carcass weight and lean meat content did not differ significantly between C and Bio+ pigs. Compared to C, Bio+ pigs had higher (P < 0.05) ultimate pH in the loin (Longissimus muscle) and ham (Gluteus medius, and Semimembranosus) muscles, associated with a lower Longissimus muscle glycolytic potential (P < 0.001). Loin and ham meat from Bio+ vs. C pigs was lighter (P < 0.05) and had a more intense red colour (P < 0.10). The Bio+ strategy led to a lower Longissimus muscle n-6:n-3 fatty acid ratio (P < 0.001), indicating an improvement in pork nutritional value. Backfat skatole concentration was lower in Bio+ than in C pigs whereas backfat androstenone was higher in Bio+ than in C pigs (P < 0.05). Altogether, we demonstrated that the Bio+ strategy had positive impacts on several qualities of organic pork from non-castrated male pigs.

Abstract
With increasing efforts to ban surgical castration, it is important to find ways to mask the level of boar taint in meat. The aim of this study was to test the possibility of masking boar taint or skatole levels by adding dried Origanum vulgare or Allium sativum and to evaluate consumer sensory preferences towards the skatole concentration in different carcass parts (longissimus lumborum; semimembranosus; neck chop and subcutaneous fat) and the masking strategy (addition of Allium sativum or Origanum vulgare). In the first experiment, the effect of the masking strategy was evaluated at three different skatole concentrations (0.069, 0.269 and 0.463 µg/g). The results showed that the samples with low and medium skatole levels were significantly different between the control group and the groups treated with Origanum vulgare or Allium sativum. In both cases, the addition of Allium sativum and Origanum vulgare had a positive effect on the parameters of abnormal odour and pleasantness of odour (p < 0.05). According to the results of the second experiment, meat samples from leaner parts, such as the neck chop semimembranosus and longissimus lumborum, not treated with Allium sativum and Origanum vulgare for masking, were significantly (p < 0.05) worse in terms of the occurrence of boar taint or abnormal odour than the masked samples. No significant differences were found between the two masking methods.

Abstract
Boar taint is an unpleasant odour and flavour released during heat treatment of pork from uncastrated male pigs. The two main compounds responsible for boar taint are androstenone and skatole. Androstenone is a steroid hormone formed in the testis during sexual maturity. Skatole is a product of microbial degradation of the amino acid tryptophan in the hindgut of pigs. Both of these compounds are lipophilic, which means that they can be deposited in adipose tissue. Several studies have reported heritability estimates for their deposition from medium (skatole) to high magnitudes (androstenone). In addition to efforts to influence boar taint through genetic selection, much attention has also been paid to reducing its incidence using various feeding strategies. From this point of view, research has focused especially on the reduction in skatole content by supplementation of feed additives into the nutrition of entire male pigs. Promising results have been achieved using hydrolysable tannins in the diet. To date, most studies have investigated the effects of tannins on the production and accumulation of skatole in adipose tissue, intestinal microbiota, growth rate, carcasses and pork quality. Thus, the objective of this study was, in addition to determining the effects of tannins on androstenone and skatole accumulation, to assess the effects of tannins on the sensory traits of meat from entire males. The experiment was performed on 80 young boars-progeny of several hybrid sire lines. Animals were randomly assigned to one control and four experimental groups (each numbering 16). The control group (T0) received a standard diet without any tannin supplementation. Experimental groups were supplemented with 1% (T1), 2% (T2), 3% (T3) or 4% (T4) SCWE (sweet chestnut wood extract) rich in hydrolysable tannins (Farmatan). Pigs received this supplement for 40 days prior to slaughter. Subsequently, the pigs were slaughtered, and sensory analysis was applied to evaluate the odour, flavour, tenderness and juiciness of the pork. The results showed a significant effect of tannins on skatole accumulation in adipose tissue (p = 0.052-0.055). The odour and flavour of the pork were not affected by tannins. However, juiciness and tenderness were reduced by higher tannin supplementation (T3-T4) compared to the controls (p < 0.05), but these results were sex-dependent (in favour of men compared to women). Generally, women rated tenderness and juiciness worse than men regardless of the type of diet.

Abstract
The objective of this study was to investigate the effect of diets containing different levels of dried tuber of Jerusalem artichoke, Helianthus tuberosus, on skatole levels in backfat and on the CYP2E1 mRNA expression in the liver of commercial crossbred pigs. A total of 23 uncastrated male pigs from 10 litters of a commercial crossbred population of Large White × (Landrace × Large White), were used in this study. Boars were randomly divided into four different dietary treatment groups – a control group (K1; 5 boars; without supplementation of Jerusalem artichoke) and three experimental groups (6 boars each) that were fed with the diet containing different levels of dried Jerusalem artichoke (K2 – 4.1%; K3 – 8.2%; K4 – 12.2%) for 14 days before slaughter. Significant effects of diet on skatole levels were observed between the control group and the experimental groups (P = 0.0078). The lowest level of skatole was in the K3 group with 8.2% of Jerusalem artichoke. As for CYP2E1, a negative correlation was observed between the levels of skatole and CYP2E1 mRNA expression. Significant effect (P = 0.0055) was found in all experimental groups compared to the K1 group, and most pronounced in the K2 and K3 groups. The supplementation with Jerusalem artichoke resulted in lower level of skatole and higher CYP2E1 mRNA expression. The results suggest that affecting the expression of CYP2E1 by feed supplements could be an option to effectively reduce the levels of skatole in adipose tissue of entire male pigs.

Abstract
The slaughtering of entire males increases the probability of incidence of tainted pork due to the presence two main compounds-androstenone and skatole. If a surgical castration of young entire male pigs is stopped in the EU countries, fattening of boars is likely to become one of the most commonly used systems in pig farming. Since skatole production and accumulation in fat tissue can be controlled by dietary approaches, several studies have investigated various feed additives to reduce this compound of boar taint. Ones of the most promising is tannins. The aim of this study was to determine the effect of different dietary tannin level supplementation on carcass, pork quality, chemical, amino and fatty acid composition. as well as perception of boar taint and accumulation of skatole and androstenone in adipose tissue. Eighty entire males were randomly distributed to control (T0) and four experimental groups. Control pigs received standard feed mixture (16.8% CP, 13.9 MJ ME) without any tannin supplementation. Experimental pigs received the same diet with administration of 1% (T1), 2% (T2), 3% (T3) and 4% (T4)-sweet chestnut extract rich in hydrolysable tannins for 40 days (from average live weight of 80 kg until slaughter at average weight 122.28 kg ± 5.63 kg). Dietary tannins supplementation did not show any significant effect on chemical composition, cholesterol content, and amino acid composition of muscle as well as fatty acid composition and androstenone accumulation in adipose tissue. A slight or small effect was observed on carcass and meat quality, respectively. Pigs in groups T4 and/or T3-T4 had higher electrical conductivity in semimembranosus muscle and cooking loss value compared to T1, T2 or T0, T1, and T2 groups (p < 0.05). Tannins in the pig's diet greatly affected fatty acid profile in meat of entire males. The highest tannin levels (4%) increased concentrations of lauric, myristic, vaccenic, linoleic, total PUFA, and n-6 PUFA in muscle compared to the control. Similar results were found in group T3 except for vaccenic, linoleic, and total PUFA. On the contrary, concentrations of heptadecanoic and oleic acids in groups T3 and T4 were lower than those in T1 and T2 groups. Perception of boar taint using "hot iron" method (insertion a hot iron tip of soldering iron into adipose tissue) tended to decrease in T2 group compared with control. Skatole accumulation in fat tissue was reduced in groups T2-T4 at significance level (p = 0.052-0.055) compared to the control pigs. In summary, tannins supplementation had no effect on chemical and amino acid composition as well as fatty acid profile in adipose tissue, and only slight on carcass value. However, 4% concentration of tannins significantly increased content of some fatty acids compared to control group.

Abstract
The ban on piglet castration without anaesthesia poses a challenge for the meat industry since alternatives ensuring the production of flawless pork have to be established. The aim of this study was to evaluate the effects of biochar on skatole and indole concentration in faeces and plasma on a small scale in finishing boars to prove whether biochar was suitable for use in commercial pork production. Moreover, it was investigated whether biochar affects faecal properties or the performance. For a four-week trial period, 54 boars (bodyweight 97.2 ± 6.88 kg) were divided into three groups. The control (BC0) received no dietary biochar, one group received a diet containing 4% coated biochar (corresponding to 2% pure biochar) for the final two experimental weeks (BC2), and another group for the entire four weeks (BC4), respectively, prior to slaughter. Skatole and indole concentrations were measured in faeces and plasma at the beginning, in the middle and at the end of the trial. Mean skatole concentrations did not differ between groups, but in BC2 faecal skatole was significantly decreased at day 26, whereas in BC4 initial and final faecal skatole levels did not differ. At day 15 and 26, the faecal dry matter content was significantly higher in pigs fed the biochar diet (p < 0.05).

Abstract
Simple Summary Due to the negative public opinion and welfare issues related to surgical castration, gradual introduction of alternatives like entire males and immunocastrates is taking place. Despite several economical and welfare advantages that the alternatives offer, numerous issues (i.e., boar taint, meat quality alterations), as well as their interactions with rearing and breeding (genetic) factors remain unanswered. Therefore, the focus of this study was to investigate the possibility of using different commercial sire lines in three male sex categories (entire males, immunocastrates, surgical castrates) and to compare their carcass traits, meat quality and boar taint compounds. A significant effect of terminal sire line and/or male category together with their interaction was observed for most of the investigated carcass and meat quality traits. The observed interaction should be taken into consideration when deciding on the production of a specific male category. Abstract The aim of the research was to investigate the influence of terminal sire line (TSL) and male category (MC) on carcass and meat quality of commercial fatteners. The study was performed on 180 pigs originating from three terminal sire lines: A (Pietrain × Large White), B (pure Pietrain), and C (Pietrain × Duroc × Large White), being assigned to three groups according to MC: immunocastrates (IC, n = 60), surgical castrates (SC, n = 60) and entire males (EM, n = 60). TSL affected most of the carcass and meat quality traits, together with the androstenone concentration. At the same time, MC had a significant effect on fat thickness, ham circumference, drip loss, cooking loss and androstenone and skatole concentrations. A significant interaction effect was observed for carcass length and ham circumference, as well as for most of the measured meat quality traits (except cooking loss, CIE L*, CIE b*, and Warner Bratzler Shear Force (WBSF)). Among the three investigated sire lines, immunocastration was shown to be most beneficial for fatteners sired by the TSL C. However, if deciding to raise EM, fatteners from the TSL B are recommended in terms of carcass and meat quality, although strategies for avoiding boar taint in their carcasses must be taken into consideration.

Abstract
Simple Summary The elimination of boar taint by a method other than surgical castration without anaesthesia is currently one of the main topics in pig research. Boar taint occurs in meat from some entire male pigs and is undesirable for sensitive consumers. Boar taint is mainly caused by skatole. Skatole is produced by the breakdown of proteins by intestinal bacteria and can be stored in meat and reduce its sensory quality (taste and odour). Boar taint can be reduced by a diet high in easily fermentable saccharides, such as Jerusalem artichoke (Helianthus tuberosus L.). These saccharides change the bacterial colonisation in the intestines and thus reduce the production of skatole. The aim of this study was to evaluate the effects of different levels of Jerusalem artichoke on performance, carcass composition and skatole and indole levels in adipose tissue and on microbiota in faecal samples. In the present study, Jerusalem artichoke had no negative effect on the growth performance or carcass value in male pigs. Moreover, Jerusalem artichoke led to decreased skatole levels in the adipose tissue, probably due to the decreased level of proteolytic bacteria, which cause a higher rate of skatole production in the gastrointestinal tract. It seems that a dietary concentration of 8.1% of Jerusalem artichoke fed 13 days before slaughter is a sufficient dose for decreasing the skatole levels to those of castrated males, and this approach could be an alternative to the surgical castration of male pigs. Abstract Jerusalem artichoke contains inulin polysaccharide, which has prebiotic effects and influences the microbiota of the digestive tract. The addition of Jerusalem artichoke in boar diets may decrease the content of skatole and indole, which are the main constituents of boar taint, and may also negatively affect the taste and odor. The objective of this study was to evaluate the effects of different levels of Helianthus tuberosus L. (H. tuberosus) in feed mixtures on performance, carcass composition, the levels of microbiota in faecal samples, and the concentrations of skatole and indole in adipose tissue. The study was performed with 47 crossbred entire male pigs of the Large White sire × (Large White dame × Landrace) genotype fed a basal diet with 0%, 4.1%, 8.1% or 12.2% H. tuberosus for 13 days before slaughter. Significant differences in daily weight gain and daily feed intake were found (p = 0.045), with the values being lower in the group with the highest level of H. tuberosus. In addition, increasing levels of H. tuberosus decreased the concentration of skatole in the adipose tissue (p = 0.003). The highest level of H. tuberosus decreased the level of Escherichia coli (p ≤ 0.001) in the faeces. The enterococcal count increased (p = 0.029) in groups with a diet that included 4.1% and 8.1% H. tuberosus. There was also a significant correlation between the concentration of H. tuberosus and the concentration of E. coli (p < 0.001; −0.64) and the skatole levels in the adipose tissue (p = 0.001; –0.46). Moreover, there was also a positive correlation between the concentration of E. coli and the skatole levels in the adipose tissue (p = 0.023; 0.33). In conclusion, feeding pigs with H. tuberosus leads to decreased levels of skatole in the adipose tissue. According to the results of our study, a diet with 8.1% H. tuberosus is sufficient for decreasing skatole levels, which could be due to the decreased levels of pathogenic bacteria in the intestines.

Abstract
The aim of the study was to evaluate the influence of inulin supply to high-fat diet rich in saturated fatty acids (SFA) on pork quality and profile of sarcoplasmic protein in drip loss. At 50 days of age, twenty cross-bred pigs (gilts) were randomly allotted to four groups: the control (C) group fed a standard diet, and three experimental (D1, D2 and D3) groups fed a high-fat diet rich in SFA. Moreover, pigs from the groups D2 and D3 consumed an extra inulin supply (7% of daily feed intake) from 85 to 120 days of age (for 5 weeks) and from 50 to 120 days of age (for 10 weeks) respectively. The addition of inulin to the diet reduced meaty odour and flavour significantly, improved tenderness and overall sensory quality of pork and additionally influenced ultimate pH, L* colour parameter, lactate level and protein content in meat. The diets also affected the profile of sarcoplasmic proteins. Significant effects were observed for the following enzymes-PK/PGI (pyruvate kinase/phosphoglucose isomerase) and ALD (aldolase), which are related to the intensity of post-mortem glycolysis. Presented data indicate that long-term inulin supply to high-fat diet has a positive effect on technological and sensory quality as well as protein profile of pork.

Abstract
Olsenella scatoligenes is the only skatole-producing bacterium isolated from the pig gut. Skatole, produced from microbial degradation of l-tryptophan, is the main contributor to boar taint, an off-odor and off-flavor taint, released upon heating meat from some entire male pigs. An appropriate method for quantifying O. scatoligenes would help investigating the relationship between O. scatoligenes abundance and skatole concentration
in the pig gut. Thus, the present study aimed at developing a TaqMan-MGB probe-based, species-specific qPCR assay for rapid quantification of O. scatoligenes. The use of a MGB probe allowed discriminating O. scatoligenes from other closely related species. Moreover, the assay allowed quantifying down to three target gene copies per PCR reaction using genomic DNA-constructed standards, or 1.5 × 103 cells/g digesta, using O. scatoligenes-spiked digesta samples as reference standards. The developed assay was applied to assess the impact of dietary chicory roots on O. scatoligenes in the hindgut of pigs. Olsenella scatoligenes made up < 0.01% of the microbial population in the pig hindgut. Interestingly, the highest number of O. scatoligenes was found in young entire male pigs fed high levels of chicory roots. This indicates that the known effect of chicory roots for reducing skatole production is not by inhibiting the growth of this skatole-producing bacterium in the pig hindgut. Accordingly, the abundance of O. scatoligenes in the hindgut does not seem to be an appropriate indicator of boar taint. The present study is the first to describe a TaqMan-MGB probe qPCR assay for detection and quantification of O. scatoligenes in pigs.

Abstract
The experiment was conducted to investigate the in vitro effects of inulin and soya bean oligosaccharide (SBO) on the metabolism of L-tryptophan (L-try) to skatole production, and the intestinal microbiota in broilers. Treatments were as follows: caecal microbiota control (Cc), Cc + inulin, Cc + SBO, rectal microbiota control (Rc), Rc + inulin and Rc + SBO. Microbial suspensions were anaerobically incubated at 38°C for 24 hr. The results showed that concentrations of skatole and acetic acid were significantly lower in caecal microbiota fermentation broth (MFB) than those in rectal MFB (p < .05). Addition of inulin or SBO significantly decreased the concentrations of indole and skatole and rate of L-try degradation (p < .05). Inulin groups had lower indole than SBO groups (p < .05). PCR-DGGE analysis revealed that addition of inulin or SBO decreased the microbiota richness (p < .05), but no significant differences in Shannon index (p > .05). Four distinct bands were detected in inulin and SBO groups, which were related to two of Bacteroides, one of Firmicutes and Bifidobacteria. Six bands were detected only in control groups, which represented uncultured Rikenellaceae, Roseburia, Escherichia/Shigella dysenteriae, Bacteroides uniformis (T), Parabacteroides distasonis and Enterobacter aerogenes. Populations of Lactobacilli, Bifidobacteria and total bacteria in inulin groups were higher than those in control groups (p < .05). For SBO groups, only population of total bacteria increased (p < .05). However, there were no significant differences in Escherichia coli population among treatments (p > .05). These results suggest that reduced concentrations of skatole and indole in the presence of inulin and SBO may be caused by decrease in L-try degradation rate, which were caused by change in microbial ecosystem and pH value. Uncultured B. uniformis (T) and E. aerogenes may be responsible for degradation of L-try to skatole.

Abstract
One of the challenges in the production of entire male pigs is the occurrence of boar taint. We separately tested the effect of 3 management strategies to reduce boar taint on respectively 2, 3, and 6 Flemish pig farms: 1) adapted feeding strategies, 2) presence of gilts in the compartment, and 3) varying lairage duration at the slaughterhouse. A commercialized feed concept resulted in a significant reduction of olfactory boar taint prevalence when fed for 2 weeks (T2W) compared to control (T-CON) (P = 0.030). For T2W and when fed for 3 weeks (T3W), androstenone (AND) (P = 0.002 for T2W, P = 0.029 for T3W) and skatole (SKA) (P < 0.001 for T2W and T3W) were significantly reduced compared to T-CON. Olfactory boar taint prevalence was significantly reduced when feeding 5% dried chicory roots (FI5%) (P = 0.032), but not for 3% dried chicory roots (FI3%) (P = 0.958). SKA concentration was significantly lower when feeding FI5% (P < 0.001) and when feeding FI3% (P = 0.034). Rearing entire male pigs separately from gilts and increasing lairage duration from <1 h to >3 h did not significantly affect boar taint.

Abstract
This study investigated the effects of dietary supplementation with 4 types of oligosaccharides on the growth performance, concentrations of the major odor-causing compounds in excreta and cecal microflora of broilers. Three hundred 21-day-old Archer Abor broilers with an average initial live weight of 702.3 g were randomly divided into 5 dietary treatments: basal diet, basal diet + 5 g/kg of mannan-oligosaccharide (MOS), basal diet + 1.2 g/kg of inulin, basal diet + 1.5 g/kg of fructo-oligosaccharide (FOS), and basal diet +1.25 g/kg of soybean oligosaccharide (SBOS), respectively. Each diet was fed to 6 replicates of 10 birds from d 21 to 42, and body weight and feed intake were recorded. Fresh excreta were sampled from each replicate on d 40, 41, and 42 and stored at -20 °C until further analysis. On d 42, the ceca of killed birds were aseptically removed, and the cecal contents were collected into sterile containers and stored at -80 °C until further analysis. Results showed that feeding inulin, FOS, and SBOS diets resulted in an improvement in daily gain (P < 0.05). Broilers fed the SBOS diet showed lower feed:gain ratio (1.84g:g) than the other groups (P > 0.05). Broilers fed the FOS diet showed the lowest volatile basic nitrogen, pH value, and indole and skatole contents in excreta, and broilers fed the SBOS diet had higher total volatile fatty acids concentrations than control (P < 0.05). The cecal microbial community was measured using the PCR-DGGE, which indicated that the cecal microflora Shannon-wiener index and richness of SBOS-fed broilers were significantly higher than that of the control (P < 0.05). The lowest evenness was recorded in the FOS group, which was significantly lower than the other groups (P < 0.05) except the SBOS group. Based on the sequences of the corresponding 16S rDNA of the DGGE bands, in combination with the contents of the major odor-causing compounds in excreta, it is suggested that uncultured Lachnospiraceae bacterium and Bacteroides sp. were associated with the production of major odor-causing compounds in excreta.

Abstract
Surgical castration of male pigs will soon be abandoned, turning a major advantage of this practice, the elimination of boar taint, into the biggest challenge for pig industry when raising intact male pigs becomes common practice. To map the (economical) consequences in relation to boar-taint consumer acceptance, as well as offer a processing strategy for tainted carcasses to stockholders, the current study investigated not only back fat boar taint levels, but additionally generated information on the levels of boar taint compounds recovered after the production of commercially relevant meat products using UHPLC-HRMS laboratory analysis. Our results demonstrate that levels of androstenone, skatole and indole in back fat and meat products tend to correlate strongly, particularly in fatty meat products (generally r>0.80). Concentration values in the edible (lean) meat fraction were significantly lower compared to back fat and fat sampled from fresh or processed meat (p<0.05).

Abstract
In Europe the proportion of male pigs that are left ‘entire’ has been high for many years in the British Isles and Iberian Peninsula, and has recently increased in The Netherlands and to a lesser extent in Germany and France. Various European Union partners agreed in 2010 on a road map to abandon piglet castration by 1 January 2018. Despite significant commercial in-confidence research on instrumental methods for detecting boar-tainted carcasses at slaughter plants, nothing is currently being adopted at an industrial scale. A few abattoirs sort out the most heavily tainted carcasses, using human nose methods. However, there are major concerns with their accuracy, which is currently not documented in any publicly available technical report. The importance of androstenone and skatole for boar taint is still debated but a recent study (CAMPIG; G Backus, H Snoek, MA Oliver, M Font i Furnols, M Aluwé, F Tuyttens, M Bonneau, P Chevillon, MD Aaslyng, D Moerlein, L Meier-Dinkel, J Trautmann, J-E Haugen, unpubl. data) has established preliminary equations relating consumer dissatisfaction to androstenone and skatole levels. These equations still need further consolidation to integrate the impact of very high and very low androstenone levels on consumer acceptability. Reducing the incidence of boar taint at a production level and at the same time overcoming possible greater aggressive behaviour of entire male pigs are also critical for abandoning castration. Genetic selection is the most efficient way to reduce androstenone, but the selection of boar-taint-free genetic lines without any adverse consequence on the reproductive and growth performance will take time. Skatole levels can be efficiently reduced via feeding specific feedstuffs and good control of the animals’ environment. Provided that the incidence of boar taint can be reduced to an acceptable level and the residual tainted carcasses can be sorted out at a reasonable price by mutually recognised methods, the abandonment of castration will result in high benefits, up to one-billion euros for both the pork industry, via a drastic reduction of production costs, and society at large, through improved animal welfare and reduced impact on the environment.

Abstract
Skatole is a tryptophan (TRP) metabolite with fecal odor. Together with the testicular steroid androstenone it is regarded as a main determinant of boar taint, even if elevated concentrations of skatole occur occasionally in gilts and barrows. Skatole concentrations in adipose tissue result from a complex process, which includes the availability of TRP and the presence of specialized bacteria in the gut in need of TRP for energy production, as well as absorption, transport and accumulation of skatole in adipose tissue. Several steps of this process are influenced by diet and specific feed compounds. In the present paper the current knowledge about physiological mechanisms of skatole dynamics is summarized. Additionally mechanisms are discussed, by which effective feeding strategies and feed additives exert their influence in the prevention of high skatole concentrations in adipose pig tissue. It was concluded that the most effective measures are those which influence several steps of skatole formation. Despite the numerous studies carried out in the field of skatole physiology, interesting aspects still need clarification, such as the effect of adipose tissue turnover. Reliable control of skatole accretion in fat of boars is one of the main prerequisites for pork production with entire males.
