Abstract
Vanillin is a commonly used synthetic flavoring agent in daily life. However, excessive intake of vanillin may pose risks to human health. Therefore, there is an urgent need for rapid and sensitive detection methods for vanillin. In this study, we developed a fluorescent sensor based on Cd-MOF for the sensitive and selective recognition of vanillin. The presence of vanillin leads to significant fluorescence quenching of Cd-MOF due to competitive absorption and photoinduced electron transfer (PET). The limit of detection was determined to be 39.6 nM, which is the lowest-among the reported fluorescent probes. The sensor was successfully applied for the detection of vanillin in real samples such as powdered milk and milk, with a recovery rate ranging from 96.88 % to 104.83 %. Furthermore, by immobilizing the Cd-MOF probe into a polyvinyl alcohol (PVA) film, we achieved a portable and visual detection composite materials for vanillin.

Abstract
Arginine has been widely applied in the food industry as coloring agents, flavoring agents, and nutritional fortifiers. It is also one of the major components of feed additives. Currently, methods for the highly selective detection of arginine remain absent. For accurate and sensitive detection of L-arginine, a novel ratiometric fluorescence assay based on Ru@UiO-66-NH2 was developed and demonstrated in this study. Under optimized detection conditions, the limit of detection (LOD) of this assay for L-arginine was 2.32 μM, which is superior to most assays reported to date. Meanwhile, Ru@UiO-66-NH2 showed good stability within 30 days, demonstrating the wide applicability of the proposed assay. The spike-and-recovery rates of the proposed assay for L-arginine in real samples (e.g., tea, grape juice, and serum) were 84.27-113.09%. Overall, the proposed assay showed high sensitivity, good reproducibility, and excellent stability in the detection of L-arginine in both buffer and real samples.

Abstract
Revealing the interaction modes between nanoscale metal-organic frameworks (NMOFs) and food matrix is crucial for functional release but it still remains largely unknown to date. This study specifically focused on the milk protein adsorption mechanism of NMOFs using UiO66/UiO66-NH2 and β-lactoglobulin (β-LG) as models. UiO66 and UiO66-NH2 quenched the fluorescence of β-LG via static mechanism. Due to the enhanced electrostatic forces caused by NH2, UiO66-NH2-β-LG (2.83 × 105 mol·L-1) exhibited higher binding constant than UiO66-β-LG (2.61 × 105 mol·L-1), while UiO66 with higher hydrophobicity adsorbed more β-LG. The defects of UiO influenced the binding sites on the β-LG, and the higher the defect degree, the higher the binding energy. For the stability of the system, the H-bonding between UiO66 and SER30/PRO38, and the hydrophobic interaction between UiO66-NH2 and LYS101 played important roles. Furthermore, the secondary structure content of β-LG changed after interacting with both UiO, resulting in reduced density of β-LG.

Abstract
A novel fluorescence sensor based on a porphyrinic zirconium-based metal-organic framework, L-cysteine-modified PCN-222 (L-Cys/PCN-222), was developed to selectively recognize histidine enantiomers and sensitively detect Hg2+. The dual-functional sensor was successfully prepared via the solvent-assisted ligand incorporation method and characterized using X-ray diffraction (XRD), scanning electron microscopy (SEM), 1H nuclear magnetic resonance (1H NMR) spectroscopy, Fourier transform infrared (FT-IR) spectroscopy, circular dichroism (CD), X-ray photoelectron spectroscopy (XPS), and nitrogen adsorption-desorption analyses. L-Cys/PCN-222 not only showed a higher quenching response for L-histidine than that for D-histidine with a fast fluorescent response rate of <40 s but also exhibited low detection limits for L- and D-histidine (2.48 μmol L-1 and 3.85 μmol L-1, respectively). Moreover, L-Cys/PCN-222 was employed as a fluorescent and visual sensor for the highly sensitive detection of Hg2+ in the linear range of 10-500 μmol L-1, and the detection limit was calculated to be 2.79 μmol L-1 in surface water. The specific and selective recognition of chiral compounds and metal ions by our probe make it suitable for real field applications.

Abstract
Milk has a high nutritional value. However, milk is easily contaminated in the production, processing, and storage processes, which harms consumers' health. Therefore, the harmful substances' detection in milk is important. Metal-organic frameworks (MOFs) have proven high potential in food safety detection due to their unique porous structure, large effective surface area, large porosity, and structural tunability. This article systematically describes the detection mechanism of fluorescence, electrochemical, colorimetric, and enzyme-linked immunosorbent assay based on MOFs. The progress of the application of MOFs in the detection of antibiotics, harmful microorganisms and their toxins, harmful ions, and other harmful substances in milk in recent years is reviewed. The structural tunability of MOFs enables them to be functionalized, giving the ability to be applied to different detection methods or substances. Therefore, MOFs can be used as an advantageous sensing material for detecting harmful substances in the complex environment of milk.

Abstract
As an important trace element in the human body, the concentration of Cu2+ has an important impact on the environment and human health, and its quantitative determination is of great significance in the fields of environmental protection and food safety. Here, a ratiometric fluorescent probe based on Tb(III)-functionalized UiO-66-type MOFs has been synthesized via a facile post-synthetic modification method by employing mixed linkers containing terephthalic acid and 2,6-pyridinedicarboxylic acid for Cu2+ detection. The blue fluorescence intensity at 440 nm from the ligands of MOFs does not change much with increasing Cu2+ concentrations and can be used as a reference signal, while the green fluorescence of Tb3+ can be rapidly and selectively quenched, causing fluorescence intensity at 547 nm to decrease. The probe can be used as a ratiometric sensor for Cu2+ detection with a good linear response and low detection limit. The use of the probe for the determination of Cu2+ in real water samples and drinks shows good practicality. This method for Cu2+ detection is simple, specific and visualized to meet the needs of environmental monitoring and food analysis and provides a new strategy for the construction of new copper ion fluorescent sensors to analyze complex samples.

Abstract
In this research, a simple, label-free, and ultra-sensitive fluorescent platform based on a metal-organic framework (MOF) has been developed to detect melamine in milk powder. This fluorescence sensor was fabricated from sensitized terbium (Tb)@NH2-MIL-253 (Al) MOF using a hydrothermal method that involved combining the green emission of Tb (λem = 545 nm) with the blue emission of NH2-MIL-253(Al) MOF (λem = 430 nm) under a single excitation wavelength (λex = 335 nm). The fluorescence sensor was then used under optimized conditions (pH = 9.0; sensor concentration = 30 mg/L; response time = 30 s) to quantify melamine in milk powder. The accuracy, sensitivity, and reproducibility of this sensor were established compared to the high-performance liquid chromatography (HPLC) method. The linear range and lower limit of detection (LLOD, computed with 3σ/S) of the sensor were between 40-396.45 nM (equal to 25 µg/kg-0.25 mg/kg) and 40 nM (equal to 25 µg/kg), respectively, which is much less than the maximum residual level (MRL) for the detection of melamine in infant formula (1 mg/kg) and other foods/feeds (2.5 mg/kg). Additionally, the results had good agreement with the HPLC outcomes, suggesting that the NH2-MIL-253(Al) MOF sensing probe has great precision and repeatability. To conclude, the new fluorescence sensor developed in this study can accurately and sensitively detect melamine in food samples, which may be useful for screening for adulteration of milk powders and other foods.

Abstract
Melamine selective acrylate citric acid (ACA) based polymeric membrane sensor was prepared by radical polymerization method and the sensor was characterized. The sensor showed a selective fluorescent response to melamine (λex/λem = 388/425 nm). The sensor response is linear in the concentration range of 3.96 × 10-9 to 7.93 × 10-8 mol L-1, the optimum pH value is 6.0 and response time is less than 1 min. Limit of detection (LOD) and limit of quantification (LOQ) were calculated as 2.32 × 10-10 mol L-1 and as 7.74 × 10-10 mol L-1, respectively. The sensor showed great selectivity towards melamine in the presence of a large number of molecules and ions. The performance of sensor was also confirmed by determining of melamine in milk powder sample and the results were compared with HPLC results and acceptable results were obtained. As a conclusion, the results revealed that the proposed sensor is an interesting alternative for melamine determination.

Development of an optical immunoassay based on peroxidase-mimicking Prussian blue nanoparticles and a label-free electrochemical immunosensor for accurate and sensitive quantification of milk species adulteration. Abstract
In contrast to reported enzyme-based immunoassays, an enzyme-free immunoassay (optical and electrochemical) is presented here for the first time that can be used as point-of-need detection bioplatforms of bovine IgG as goat milk adulterant. In the first format, Prussian blue nanoparticles (PBNPs) were used as antibody catalytic labels in a competitive colorimetric microplate immunoassay. Absorbance measurement was performed photometrically at 450 nm. After in-depth optimization, excellent sensitivity was achieved (0.01% cow/goat volume ratio), which is 100 times lower than the limit allowed by the European legislation (EL) (1% v/v), thanks to the high catalytic activity of PBNPs compared with natural peroxidase. Moreover, the antibody-PBNPs bioconjugates showed excellent stability over 4 weeks (> 94% of the initial response) confirming the successful anchoring of the antibodies to the surface of the PBNPs. On the other hand, a label-free voltammetric immunoassay for the detection of bovine IgG was developed. The sensing principle was based on the hindrance of charge transfer between ferri-ferrocyanide redox couple and the screen-printed gold electrodes modified with bovine IgG antibody. Cyclic voltammetry (CV) and electrochemical impedance spectroscopy (EIS) were used to characterize the step-by-step modification of the electrode surface. Under optimal conditions, this single-step electrochemical analysis achieved a high sensitivity of 0.1% (cow/goat) when monitoring the ferrocyanide oxidation at + 0.092 V (vs. Ag/AgCl) using differential pulse voltammetry (DPV). The selectivity of the developed immunoassays was evaluated for different species of milk of similar composition, and both immunoassays exhibited a selective response only to bovine IgG. Unlike conventional immunoassays, the developed enzyme-free immunoassays have many attractive features for the detection of milk adulteration, whether they are used in quality control laboratories for routine milk analysis (optical immunoassay) or at on-site checkpoints (electrochemical immunoassay) using wireless electrochemical detectors. The sensors provide high sensitivity (≤ 0.1%), excellent precision (RSD < 6%), low cost (no enzyme is required) and ease of operation, including handling of milk samples.

Abstract
To develop a rapid detection method for nonprotein nitrogen adulterants, this experiment sets up a set of point-scan Raman hyperspectral imaging systems to qualitatively distinguish and quantitatively and positionally analyze samples spiked with a single nonprotein nitrogen adulterant and samples spiked with a mixture of nine nonprotein nitrogen adulterants at different concentrations (5 × 10-3 to 2.000%, w/w). The results showed that for samples spiked with single nonprotein nitrogen adulterants, the number of pixels corresponding to the adulterant in the region of interest increased linearly with an increase in the analyte concentration, the average coefficient of determination (R 2) was above 0.99, the minimum detection concentration of nonprotein nitrogen adulterants reached 0.010%, and the relative standard deviation (RSD) of the predicted concentration was less than 6%. For the sample spiked with a mixture of nine nonprotein nitrogen adulterants, the standard curve could be used to accurately predict the additive concentration when the additive concentration was greater than 1.200%. The detection method established in this study has good accuracy, high sensitivity, and strong stability. It provides a method for technical implementation of real-time and rapid detection of adulterants in milk powder at the port site and has good application and promotion prospects.

Abstract
Food safety has attracted attention worldwide, and how to detect various kinds of hazardous substances in an efficient way has always been a focus. Metal-Organic Frameworks (MOFs) are a class of hybrid porous materials formed by organic ligand and metal ions. Nanoscale MOFs (NMOFs) exhibit great potential in serving as fluorescence sensors for food safety due to their superior properties including high accuracy, great stability, fast response, etc. In this review, we focus on the recent development of NMOFs sensing for food safety. Several typical methods of NMOFs synthesis are presented. NMOFs-based fluorescence sensors for contaminants and adulterants, such as antibiotics, food additives, ions and mycotoxin etc. are summarized, and the sensing mechanisms are also presented. We explore these challenges in detail and provide suggestions about how they may be surmounted. This review could help the exploration of NMOFs sensors in food related work.
