Application of machine learning algorithms to predict dead on arrival of broiler chickens raised without antibiotic program

Understanding the factors of dead-on-arrival (DOA) incidents during pre-slaughter handling is crucial for informed decision-making, improving broiler welfare, and optimizing farm profitability. In this study, 3 different machine learning (ML) algorithms - least absolute shrinkage and selection operator (LASSO), classification tree (CT), and random forest (RF) - were used together with 4 sampling techniques to optimize imbalanced data. The dataset comes from 22,115 broiler truckloads from a large producer in Thailand (2021-2022) and includes 14 independent variables covering the rearing, catching, and transportation stages. The study focuses on DOA% in the range of 0.10 to 1.20%, with a threshold for high DOA% above 0.3%, and records DOA% per truckload during pre-slaughter ante-mortem inspection. With a high DOA rate of 25.2%, the imbalanced dataset prompts the implementation of 4 methods to tune the imbalance parameters: random over sampling (ROS), random under sampling (RUS), both sampling (BOTH), and synthetic sampling or random over sampling example (ROSE). The aim is to improve the performance of the prediction model in classifying and predicting high DOA%. The comparative analysis of the different error metrics shows that RF outperforms the other models in a balanced dataset. In particular, RUS shows a significant improvement in prediction performance across all models compared to the original unbalanced dataset. The identification of the 4 most important variables for predicting high DOA percentages - mortality and culling rate, rearing stocking density, season, and mean body weight - emphasizes their importance for broiler production. This study provides valuable insights into the prediction of DOA status using an ML approach and contributes to the development of more effective strategies to mitigate high DOA percentages in commercial broiler production.

Mortality risk on farm and during transport: a comparison of 2 broiler hybrids with different growth rates

Mortality in broilers is often associated with poor health and welfare and has a complex and multifactorial etiology. Recent studies under experimental conditions indicated that genetic selection for fast growth is an important risk factor for mortality in broiler chickens. However, the knowledge on broiler mortality in general, and in slower growing broilers in particular, under commercial conditions is still limited. This retrospective cohort study aimed to describe mortality risk on farm and during transport in 2 broiler hybrids with different growth rates, Ross 308, and Hubbard JA787, and to estimate the association between hybrid and mortality at different stages of the production cycle. The study sample consisted of 64,651,804 broilers from 4,228 flocks and 139 farms slaughtered from January 1st, 2015, to June 22nd, 2021. Analysis of on-farm mortality was restricted to broiler flocks slaughtered in the period July 2017 to July 2018 due to changes known to affect FWM. The effect of hybrid on mortality during 3 different production stages (first week mortality (FWM), mortality after the first week (MAFW), and mortality during transport (DOA)), was assessed using mixed effect negative binomial regression models. Descriptively, there were notable differences in mortality at all stages of the production cycle, with higher mean mortalities in Ross 308 (1.40% FWM, 3.05% MAFW, and 0.063% DOA) than in Hubbard JA787 (0.76% FWM, 1.49% MAFW, and 0.015% DOA). In the analysis, the largest estimated difference was found for dead on arrival under cold conditions, where mortality was almost 5 times higher in Ross 308 compared to Hubbard JA 787 (IRR: 4.70, 95% CI: 3.74-5.90). The estimated difference in FWM between hybrids was highest during autumn, with an estimated risk approximately 1.6 times higher in Ross than in Hubbard (IRR: 1.56, 95% CI: 1.30-1.86). For MAFW, the estimated risk was approximately 2 times higher in Ross than in Hubbard (IRR: 2.13 95% CI: 1.82-2.49). The findings in this study emphasize the need for more knowledge on causes of mortality in broilers including effects of genetic factors as basis for preventive measures.

Heat stress and poultry production: a comprehensive review

The impact of global warming on poultry production has gained significant attention over the years. However, our current knowledge and understanding of the mechanisms through which heat stress (HS) resulting from global warming affects the welfare, behavior, immune response, production performance, and even transgenerational effects in poultry are still incomplete. Further research is needed to delve deeper into these mechanisms to gain a comprehensive understanding. Numerous studies have investigated various biomarkers of stress in poultry, aiming to identify reliable markers that can accurately assess the physiological status and well-being of birds. However, there is a significant amount of variation and inconsistency in the results reported across different studies. This inconsistency highlights the need for more standardized methods and assays and a clearer understanding of the factors that influence these biomarkers in poultry. This review article specifically focuses on 3 main aspects: 1) the neuroendocrine and behavioral responses of poultry to HS, 2) the biomarkers of HS and 3) the impact of HS on poultry production that have been studied in poultry. By examining the neuroendocrine and behavioral changes exhibited by poultry under HS, we aim to gain insights into the physiological impact of elevated temperatures in poultry.

Preslaughter handling factors affecting dead on arrival, condemnations, and bruising in broiler chickens raised without an antibiotic program

In Thailand, knowledge about the factors affecting broiler losses during the preslaughter process is very limited, especially for broilers raised without an antibiotic program. The objective of this study was to determine the preslaughter factors that influence the incidence of dead on arrival (DOA), condemnations, and bruising in broilers raised without antibiotics. Data from 13,581 truckloads of broilers raised without an antibiotic program in 95 contract farms of one of Thailand's largest broiler producers in 2021 were analyzed using a generalized linear mixed model that accounted for farm as a random effect. Results showed that the following risk factors were associated with the occurrence of DOA, condemnations, and bruising: season, time of transport, sex, age at slaughter, mortality and culling rate, and weight per crate. While mean body weight affected the incidence of condemnations and bruising, transport time and lairage time affected DOA and bruising. Feed withdrawal time affected DOA and condemnations. Rearing stocking density only affected condemnation rate. Reducing or eliminating the effects of these risk factors could reduce production losses due to DOA, condemnations, and bruising, thereby improving animal welfare and producer profitability. Reducing weight per crate could reduce DOA, condemnations, and bruising. Reducing lairage time could reduce DOA and bruising, while reducing feed withdrawal time could reduce DOA and condemnations. Raising broilers at a younger age with a lower slaughter weight could prevent the occurrence of DOA, condemnations, and bruising.

Effects of external ambient temperature at loading, journey duration and flock characteristics on the dead-on-arrival rate in broiler chickens transported to slaughter in Great Britain

Broiler mortality during transport and lairage, prior to slaughter, has negative welfare and economic implications. Knowledge of the factors affecting the dead-on-arrival (DOA) rate can help identify risk-mitigating strategies. The objectives of this study were to determine the DOA rate in broiler chickens transported to slaughter in Great Britain and associated risk factors. Requested data for all loads of broilers transported to slaughter by 5 large British commercial companies on 57 randomly-selected dates in 2019 were obtained and combined with weather data extracted from the Met Office MIDAS Open database. The DOA rate was described overall and per load using summary descriptive statistics. Mixed-effects Poisson regression was used to evaluate considered flock-, journey- and weather-related risk factors. Results were reported as incidence rate ratios (IRR) and 95% confidence intervals (CI). On the selected dates, 25,476 loads transported 146,219,189 broilers to slaughter. The overall mean DOA rate was 0.08%. The median DOA rate per load was 0.06% (interquartile range 0.03-0.09%; range 0.00-17.39%). Multiple risk factors were identified including loading temperature and catch method. At relative humidity ≤80%, the DOA rate was 16.89 (95% CI 15.25-18.70, P < 0.001) times higher for loads loaded in external ambient temperatures >30.0°C compared to those loaded in temperatures between 10.1°C and 15.0°C. When relative humidity was >80%, there was a 43% increase in DOA rate for loads loaded in temperatures below freezing compared to those loaded in temperatures between 10.1°C and 15.0°C (IRR 1.43, 95% CI 1.35-1.52, P < 0.001). The DOA rate was 32% higher for loads caught mechanically compared to those caught manually (IRR 1.32, 95% CI 1.23-1.42, P < 0.001). The overall DOA rate was lower than that previously reported in Great Britain and for other European countries. Most identified risk factors had a marginal effect, however, loading temperatures >30°C substantially increased DOA rate. Internal thermal environmental conditions were not evaluated. Avoidance of loading during periods of hot weather would improve the welfare of, and reduce economic losses in, broiler chickens.

Welfare of broilers on farm

This Scientific Opinion considers the welfare of domestic fowl (Gallus gallus) related to the production of meat (broilers) and includes the keeping of day-old chicks, broiler breeders, and broiler chickens. Currently used husbandry systems in the EU are described. Overall, 19 highly relevant welfare consequences (WCs) were identified based on severity, duration and frequency of occurrence: 'bone lesions', 'cold stress', 'gastro-enteric disorders', 'group stress', 'handling stress', 'heat stress', 'isolation stress', 'inability to perform comfort behaviour', 'inability to perform exploratory or foraging behaviour', 'inability to avoid unwanted sexual behaviour', 'locomotory disorders', 'prolonged hunger', 'prolonged thirst', 'predation stress', 'restriction of movement', 'resting problems', 'sensory under- and overstimulation', 'soft tissue and integument damage' and 'umbilical disorders'. These WCs and their animal-based measures (ABMs) that can identify them are described in detail. A variety of hazards related to the different husbandry systems were identified as well as ABMs for assessing the different WCs. Measures to prevent or correct the hazards and/or mitigate each of the WCs are listed. Recommendations are provided on quantitative or qualitative criteria to answer specific questions on the welfare of broilers and related to genetic selection, temperature, feed and water restriction, use of cages, light, air quality and mutilations in breeders such as beak trimming, de-toeing and comb dubbing. In addition, minimal requirements (e.g. stocking density, group size, nests, provision of litter, perches and platforms, drinkers and feeders, of covered veranda and outdoor range) for an enclosure for keeping broiler chickens (fast-growing, slower-growing and broiler breeders) are recommended. Finally, 'total mortality', 'wounds', 'carcass condemnation' and 'footpad dermatitis' are proposed as indicators for monitoring at slaughter the welfare of broilers on-farm.

Quantitative analysis of knowledge, attitude and practice of workers in chicken slaughter slabs toward food safety and hygiene in Ouagadougou, Burkina Faso

Introduction

In low- and middle-income countries, chicken serves as a cheap source of protein and an income source for many households. It is particularly important in the capital, Ouagadougou, Burkina Faso, where chicken is regularly consumed. However, hygiene standards are very low, posing a significant public health risk.

Methods

To better understand the food safety situation, we conducted a cross-sectional survey of the hygienic practices of 155 randomly selected chicken slaughter outlets and carcass shops with a semi-structured questionnaire.

Results and discussion

Of the outlets visited, 59% are not licensed, and 63% are not regularly inspected, operating in the dominant, largely unregulated informal sector. More than 80% of the chickens are sourced from village production systems, but around 6% of the birds die during transport. The monetary loss due to chicken death during transportation is around four million USD annually. Market hygiene is poor; 86% of the holding pens have no hard floor and are not washed regularly. Almost all (92%) chickens are slaughtered on bare earth floors; bleeding, plucking, and evisceration are done on a wooden table that is rarely washed. On average, the same scalding water is used for 33 birds, seven scalded at a time. Most respondents (49%) thought that plucking and evisceration were the major cause of contamination of carcasses with foodborne pathogens. Most operators only washed their hands and knives with tap water at the beginning of the slaughtering process. Some shops use refrigerators and freezers to store carcasses before selling. However, they store carcasses with other foods like fish, beef and vegetables, facilitating further cross-contamination. There were rats (26%), cats (39%) and dogs (30%) present at outlets, roaming for food, especially roadside outlets. Training schemes on hygienic food handling practices were favoured by outlets as an approach to improve matters; however, improvements in food safety will be limited without significant upgrades in infrastructure and facilities. Slaughter slabs need a standard house with stable energy, adequate airflow, clean water, toilets, detergents and freezers. Also, they need equipment like knives, tables and dishes made of high-quality, easy-to-clean materials.

The effect of water shower spray on stress physiology and mortality in broiler chickens subjected to road transportation under the hot and humid tropical condition

This study was performed to investigate the effect of water shower spray on rectal temperature (RT), serum levels of corticosterone (CORT), heat shock protein (HSP) 70 and creatine kinase (CK) in broiler chickens road transported at different times of the day. A total of 320 male broiler chickens (35 days of age) were crated and subjected to either water shower spray (WS) for 10 min or no water shower (control). The WS and control broilers were then loaded into an open truck and transported either from 0900 to 1100 h (29.0 °C and 89.0% RH) (AM) or 1900 h to 2100 h (26.0 °C and 94.0% RH) (PM) with an average speed of 80 km/h. The CORT of AM birds were significantly reduced by WS, but the treatment had negligible influence on the PM group. Transportation during AM significantly elevated RT, CORT and HSP70 compared to the PM group. Water shower spraying of birds before transit significantly reduced RT and HSP70 compared to controls. Neither water shower treatment nor transportation time had a significant on CK and mortality rate of broilers. In conclusion, water shower spray is beneficial to alleviate the physiological stress response in road-transported broilers under the hot and humid tropical environment.

Transmission of antimicrobial resistance (AMR) during animal transport

The transmission of antimicrobial resistance (AMR) between food-producing animals (poultry, cattle and pigs) during short journeys (< 8 h) and long journeys (> 8 h) directed to other farms or to the slaughterhouse lairage (directly or with intermediate stops at assembly centres or control posts, mainly transported by road) was assessed. Among the identified risk factors contributing to the probability of transmission of antimicrobial-resistant bacteria (ARB) and antimicrobial resistance genes (ARGs), the ones considered more important are the resistance status (presence of ARB/ARGs) of the animals pre-transport, increased faecal shedding, hygiene of the areas and vehicles, exposure to other animals carrying and/or shedding ARB/ARGs (especially between animals of different AMR loads and/or ARB/ARG types), exposure to contaminated lairage areas and duration of transport. There are nevertheless no data whereby differences between journeys shorter or longer than 8 h can be assessed. Strategies that would reduce the probability of AMR transmission, for all animal categories include minimising the duration of transport, proper cleaning and disinfection, appropriate transport planning, organising the transport in relation to AMR criteria (transport logistics), improving animal health and welfare and/or biosecurity immediately prior to and during transport, ensuring the thermal comfort of the animals and animal segregation. Most of the aforementioned measures have similar validity if applied at lairage, assembly centres and control posts. Data gaps relating to the risk factors and the effectiveness of mitigation measures have been identified, with consequent research needs in both the short and longer term listed. Quantification of the impact of animal transportation compared to the contribution of other stages of the food-production chain, and the interplay of duration with all risk factors on the transmission of ARB/ARGs during transport and journey breaks, were identified as urgent research needs.

A model for increasing the business activity of personal subsidiary farms based on small-scale poultry meat production

The basis of this article is the study of such a form of farming in rural areas as personal subsidiary farms (PSF). The importance of private farming is actualized both in matters of a social nature in rural areas and issues of sustainable development of entire sectors of the economy. The article clarifies the main socio-economic functions of individual subsidiary farms. The basics of motivation and goal setting for entrepreneurship are considered. And in this regard, a model is given for increasing the business activity of personal subsidiary farms based on small-scale poultry meat production. The model is described both from the point of view of the mechanisms of interaction of participants and from the organisation's point of view. The financial mechanisms of this model and its features are also given. Many economists consider PSF the most massive, and economically stable; one might even say the surviving producer of agricultural products sustainably. This phenomenon lies in the economic nature of PSF. In these conditions, personal subsidiary farms are additional for those who are engaged in hired work. For the majority, this is about 3 million people who are considered "self-employed", the only source of income. Of particular interest is the financial model of this project, which was developed by the project's authors and tested for three years. This model allows you to reduce the price of finished products and keep it 15% below the market. The project showed that personal subsidiary farms without special conditions could not transform massively into individual entrepreneurs or peasant farms. To do this, the state needs to organize prototypes of such operators on the ground, which will begin to perform all intermediary functions to improve the business environment of each rural locality.

Welfare of domestic birds and rabbits transported in containers

This opinion, produced upon a request from the European Commission, focuses on transport of domestic birds and rabbits in containers (e.g. any crate, box, receptacle or other rigid structure used for the transport of animals, but not the means of transport itself). It describes and assesses current transport practices in the EU, based on data from literature, Member States and expert opinion. The species and categories of domestic birds assessed were mainly chickens for meat (broilers), end-of-lay hens and day-old chicks. They included to a lesser extent pullets, turkeys, ducks, geese, quails and game birds, due to limited scientific evidence. The opinion focuses on road transport to slaughterhouses or to production sites. For day-old chicks, air transport is also addressed. The relevant stages of transport considered are preparation, loading, journey, arrival and uncrating. Welfare consequences associated with current transport practices were identified for each stage. For loading and uncrating, the highly relevant welfare consequences identified are handling stress, injuries, restriction of movement and sensory overstimulation. For the journey and arrival, injuries, restriction of movement, sensory overstimulation, motion stress, heat stress, cold stress, prolonged hunger and prolonged thirst are identified as highly relevant. For each welfare consequence, animal-based measures (ABMs) and hazards were identified and assessed, and both preventive and corrective or mitigative measures proposed. Recommendations on quantitative criteria to prevent or mitigate welfare consequences are provided for microclimatic conditions, space allowances and journey times for all categories of animals, where scientific evidence and expert opinion support such outcomes.

Social responsibility in reducing food losses and waste in the Slovak Republic: the role of policies – the responsibility of all

The study aimed to point out the calls of the European Commission to the social responsibility of the solution of food losses and waste, to evaluate the current state of the researched issues in the Slovak Republic, to point out the trends, and propose measures to improve the situation of the food losses and waste on the poultry meat market in the Slovak Republic. The scientific hypotheses were established. A questionnaire survey was used to obtain primary data. The research object was households and agricultural enterprises of broiler chicken farming (poultry farms) in the Slovak Republic. Data from questionnaires completed by households and poultry farms were examined and processed by the sorting method. Cumulative totals, intervals, and percentage ranges were calculated in each response class. The obtained data for individual objects of research were processed by sorting using Microsoft Word tables – Excel, Office 2016. The chi-square test (χ2 test) with a contingency table according to the procedure of Social Science Statistics was chosen for hypothesis testing. The SAS program was used for statistical evaluation of the results and answers of the respondents from the questionnaires.  The research shows that food losses in Slovak households were up to 40% and on poultry farms at 6.8%. Mould and rot were the most common causes of food degradation.  Mortality during breed has been recorded as a cause of food waste in poultry farms. A statistically significant difference (p ≤0.001) was found in the quantity of food losses between gross household income per family member and month. Statistically, no significant difference (p ˃0.05) was found between the numbers of family members. The proposals were recommended to improve the solution of reducing food losses and food waste in households and poultry farms. Based on the application of a practical approach of households and poultry farms to reduce food losses and support innovative solutions, it is possible to achieve gentle practices in ensuring the security of nutrition, food production, social and economic sustainability as well as environmental protection in the Slovak Republic.

Effects of Season, Plumage Colour, and Transport Distance on Body Weight Loss, Dead-on-Arrival, and Reject Rate in Commercial End-of-Lay Hens

Simple Summary

The transport conditions of end-of-lay hens to slaughterhouses are essential for their welfare. In this study, the effect of season, plumage colour, and transport distance on body weight loss, dead-on-arrival rates, and reject rates was examined. Transport-related data of 31.6 million end-of-lay hens over a two-year period from one slaughter plant in Turkey were analysed. Hens transported in the winter and spring seasons had a greater body weight loss and reject rates. Brown-feathered hens had a higher death rate, while white-feathered hens had a higher body weight loss and reject rate. Hens transported longer distances for slaughter had increased body weight loss, death rates, and reject rates. These results indicate that more care should be taken when transporting end-of-lay hens in cold weather and over longer transport distances. We suggest the transport should be reduced to a certain distance, and improved conditions ought to be provided to mitigate losses.

Abstract

Transport conditions of end-of-lay hens are important for their welfare. This study investigated the effects of season, plumage colour, and transportation distance on the welfare of end-of-lay hens. Retrospective data from 31,667,274 end-of-lay hens transported to a poultry slaughterhouse in Turkey were analysed. The mean body weight loss, dead-on-arrival (DOA) rate, and reject rate were 3.723%, 1.397%, and 0.616%, respectively. The effects of season, plumage colour, and transport distance on the evaluated parameters were all statistically significant (p < 0.001). The highest body weight loss was found in winter, while the lowest body weight loss was found in autumn. The average DOA rate was highest in spring and lowest in autumn. The highest average reject rate was found in spring (0.630%). Body weight loss, DOA rates, and reject rates were also significantly different among white and brown hens (p < 0.001; p < 0.001; p = 0.016, respectively). The highest body weight loss and reject rates were found in white plumage hens, while the highest DOA rate was found in brown plumage hens. The body weight loss and DOA rate were positively correlated with transportation distance (p < 0.001). The results of this study indicate that more preventive measures should be taken during the transport of end-of-lay hens, especially in cold seasons such as winter, and over longer transport distances, in regard to the welfare of these animals. Additionally, the transport of these animals should be lessened to a certain distance.

Influence of pre-slaughter fasting time on weight loss, meat quality and carcass contamination in broilers

Objective

An experiment was conducted to determine the appropriate fasting time prior to slaughter for broilers in floor-feed and scatter-feed mode.

Methods

On 21 d since hatching, 120 Arbor Acres broilers were divided into floor-feed and scatter-feed groups, chicks from each group were further assigned to feed withdrawal treatments for 0, 4, 6, 8, and 10 h. Some resultant indicators such as carcass contamination, body weight loss, meat quality of 54-day-old broilers were measured.

Results

It appears that longer feed withdrawal increased weight loss, lightness, drop loss of meat but reduced pH. A significant higher weight loss and lightness for both floor-feed and scatter-feed chicks coincided after 6 to 10 h feed withdrawal (p<0.05). pH for breast muscle at 45 min postmortem reduced when chicks of scatter-feed were fasted 6 and 10 h, while the reduction of floor-feed group occurred only in 10 h (p<0.05). A noticeable effect of feed withdrawal on drop loss occurred after 10 h fasting in scatter-feed of which drop loss were significantly higher than that for other groups including control (p<0.05). The change of contamination propensity revealed that 6 to 10 h fasting significantly reduced the likelihood of carcass contamination under both floor-feed and scatter-feed (p<0.05). Net weights of intestinal contents for gizzard were significantly reduced after feed deprived for 10 h in floor-feed and 6 and 10 h in scatter-feed (p<0.05). The decrease for whole intestine occurred after floor-feed broilers have been without feed for more than 4 h, scatter-feed broilers for more than 8 h (p<0.05).

Conclusion

On the premise that poultry product properties and welfare were not significantly damaged, proper fasting time could reduce carcass contamination. Current data implied that 6 h fasting was recommendable for both floor and scatter feed pre-slaughter broilers.

Climate change and heat stress: Impact on production, reproduction and growth performance of poultry and its mitigation using genetic strategies

Heat stress is an important environmental determinant which adversely affects the performance of poultry worldwide. The present communication reviews the impact of heat stress on production, reproduction and growth performance of poultry, and its alleviation using genetic strategies. The adverse effects of high environmental temperature on poultry include decrease in growth rate, body weight, egg production, egg weight, egg quality, meat quality, semen quality, fertility and hatchability, which cause vast financial losses to the poultry industry. High ambient temperature has an antagonistic effect on performance traits of the poultry. Thus, selection of birds for high performance has increased their susceptibility to heat stress. Additionally, heat burden during transportation of birds from one place to another leads to reduced meat quality, increased mortality and welfare issues. Molecular markers are being explored nowadays to recognize the potential candidate genes related to production, reproduction and growth traits for selecting poultry birds to enhance thermo-tolerance and resistance against diseases. In conclusion, there is a critical need of formulating selection strategies based on genetic markers and exploring more genes in addition to HSP25, 70, 90, H1, RB1CC, BAG3, PDK, ID1, Na, F, dw and K responsible for thermoregulation, to improve the overall performance of poultry along with their ability to tolerate heat stress conditions.

The welfare impacts of mechanical and manual broiler catching and of circumstances at loading under field conditions

Loading of broilers for transport to the processing plant poses a notable injury risk for broilers. Therefore, the poultry industry has developed mechanical methods as alternatives to manual loading methods. Our objective in the present study was to compare manual loading (MAN) of broilers with the mechanical loading (MECH). We assessed the injuries of broilers of 12 MAN and 12 MECH flocks on-farm before and immediately after loading, documented the numbers of broilers dead on arrival reported by the processing plant, and assessed the circumstances at loading. A smaller number of broilers with a hematoma (≥0.5 cm in diameter) on the wing were observed after MAN compared with MECH using the examined harvester (MAN vs. MECH odds ratio: 0.16; 95% confidence interval: 0.10, 0.28). The number of broilers with severe wing injuries did not differ between the loading methods. The number of broilers dead on arrival was greater in mechanically loaded flocks (MAN vs. MECH odds ratio: 0.26; 95% confidence interval: 0.10, 0.68), but lower than in comparable studies. We observed a lower average stocking rate than targeted in the drawers of MECH containers, most likely because the used harvester can adapt to short-term changes in weight and adjust the stocking rate during the loading process. A longer total loading duration in MAN was associated with an increase of wing hematomas, and the involvement of more working people per 10,000 broilers during MAN was associated with a lower occurrence of hematomas. The total loading duration in MECH had no notable influence on the occurrence of injuries. Physical conditions of the involved personnel might play a larger role in MAN than in MECH. The harvester that was examined should be further developed to reduce the occurrence of hematomas. Our results indicate that the choice of loading method alone does not determine the injury risk, and multiple factors are associated with broiler welfare during loading. It is important that the chosen method is performed under the most adequate conditions.

Impact of pre-slaughter factors on welfare of broilers

Pre-slaughter factors adversely affecting bird welfare were studied at the slaughterhouse. The incidence of dead on arrival (DoA), bruises and dehydration was investigated in 64 different mixed-sex batches of broilers coming from 64 different farms rearing fast-growing genotypes (Ross or Cobb). The effects of catching team, method of catching, time of day for catching and transport, density per cage, transport duration, transport distance, lairage duration and water withdrawal were considered. The average DoA was 0.29%, ranging from 0.02% to 1.89% per batch. DoA rate has a higher probability of increase with the increase in transport distance (t=2.142; P=0.037; estimate=0.009) and with catching the birds after midnight (t=-2.931; P=0.005; estimate=0.022). Longer transport durations for birds caught after midnight as well as longer lairage durations for birds caught after midnight are associated with the increase of DoA rate.

Bruises were observed in 3.37% of birds, ranging from 0.43% to 8.29% per batch. Bruises occurred mostly on wings (3.06%), followed by legs (0.19%) and breast (0.12%). A higher percentage of bruises occurred in batches with more birds per transport crate (t=2.185; P=0.029; estimate=0.001). Dehydrated carcasses were observed in 22 out of 64 batches, accounting for 2.68% of condemnations. Signs of dehydration on carcasses were more frequently observed in batches subjected to longer withdrawal durations. Short transport distances, catching the birds before midnight and doing the transport by night are crucial in decreasing the DoA rate. Catching and crating processes seem to be responsible for the increase of percentage of bruises. Pre-slaughter operations should be adequate planned namely, transport and lairage durations, catching period and crating procedure in view to reduce negative effects on animal welfare.

Simulated transport of well- and poor-feathered brown-strain end-of-cycle hens and the impact on stress physiology, behavior, and meat quality

Transportation of poultry is stressful, especially for end-of-cycle hens (EOCH) experiencing metabolic stress. The aim of this study was to evaluate the effects of simulated transport on well- and poor-feathered brown-strain EOCH. The study (5 × 3 × 2 factorial arrangement) consisted of 5 temperature and relative humidity (RH) combinations applied directly at crate level (−10°C uncontrolled RH [−10], +21°C 30%RH [21/30], +21°C 80%RH [21/80], +30°C 30%RH [30/30], or +30°C 80%RH [30/80]), 3 durations (4, 8, or 12 h), and 2 feather covers (well [WF] or poor [PF]). Hens (n = 540) from 3 commercial farms were housed for a 3- to 5-d adaptation period, then feed was withdrawn before treatment exposure (crate density 54.5 kg/m²). Data collected included chamber conditions, feather condition score, behavior, blood physiology, core body temperature, mortality, and meat quality. Data were analyzed (randomized complete block design) using ANOVA; significance declared at P ≤ 0.05. Time spent performing thermoregulatory behaviors increased for hot (30/30 and 30/80) and cold (−10) treatments. Mortality only occurred in hens exposed to −10 and increased with longer duration. Cold exposure impacted meat quality, resulting in higher thigh pH and lower L∗ (lightness) and b∗ (yellowness). Prolonged exposure duration resulted in dehydration, indicated by blood physiology (hematocrit and hemoglobin) and live shrink. PF hens struggled with thermoregulation in −10, while WF hens struggled in 30/30 and 30/80. These results demonstrate that EOCH exposed at crate level to hot (+30) conditions experience thermal stress, while hens exposed to cold (−10) are unable to cope, compromising welfare and meat quality.

The value of a retrospective analysis of slaughter records for the welfare of broiler chickens

The effects of transport risk factors on deaths on arrival (DOAs; %) and carcass rejections (%) on broiler chickens transported to a slaughterhouse in Southern Spain were assessed using information routinely collected at the slaughterhouse. A total of 2,284 flocks and 10,198,663 broiler chickens, transported in 2,103 commercial transports from 217 different farms to a single slaughterhouse, were studied using the information of veterinary service and slaughter records. Studied risk factors were transport condition at arrival score (good/bad) and plumage condition score (good/bad) at arrival at the slaughterhouse, mixing loads (yes/no), transport duration (min), and season of the year (spring/summer/autumn/winter). Generalized linear mixed models were used to determine the effects of risk factors and their interactions on DOA and carcass rejections. The interactive nature of risk factors affecting both variables was revealed. Mixing loads interacted with transport duration (P < 0.0001), amplifying the negative consequences of long transports on DOA. Mixing loads also interacted with transport conditions at arrival (P = 0.0005), with the impact of bad transport conditions at arrival being particularly negative in the case of mixed loads. These facts raise questions about the suitability of mixing loads both from the animal welfare and economic standpoints. Transport duration interacted with season (P = 0.0003), with the detrimental effect of long distances on DOA being particularly evident during summer and winter, which highlights the need for alternative management measures when hot or cold temperatures are foreseen during transport. Long transports also increased carcass rejections (P < 0.0001). Mixing loads and bad plumage condition exacerbated the overall, detrimental effect of autumn transports on DOA (P = 0.0084 and P = 0.0009, respectively) with respect to summer transports. Similar results were obtained for the interactions between mixing loads and transport season (P = 0.0043) and transport conditions at arrival and transport season (P = 0.0014) on carcass rejections. Overall, results highlight the value of slaughter records to produce information useful to reduce the impact of transport risk factors, improve broiler chicken welfare, and improve slaughterhouse economic results.

Welfare of end-of-lay hens transported for slaughter: effects of ambient temperature, season, and transport distance on transport-related mortality

The transport of end-of-lay hens for slaughter presents a particular cause for concern in relation to hen welfare due to their less robust condition. During the period of 1 January 2010 to 31 December 2017, 17,436,074 end-of-lay hens transported for slaughter in 3,144 consignments were monitored, i.e., all hens transported from Czech farms to slaughterhouses in the Czech Republic in the monitored period. The overall mortality of hens during transport for slaughter was 0.516%. A significant (P < 0.05) impact of outside temperature and month of the year on transport-related mortality was found. Lower outside temperature was connected with the increased hen mortality and vice versa. Correspondingly, more deaths of end-of-lay hens occurred in the cold winter months of January (0.717%) and December (0.695%); on the contrary, the lowest death rates were recorded in August (0.364%). Differences were also found when comparing transport-related mortality rates according to the transport distance. The lowest mortality (0.338%) was found in hens transported for distances up to 50 km; longer distances were associated with increasing (P < 0.05) death rates, with the greatest losses (0.801%) recorded for distances from 201 to 300 km. These findings document the need for increased care for end-of-lay hens during their transport for slaughter in the winter at lower outside transport temperatures, in particular below 0°C (e.g., by adequate temperature regulation in the means of transport), and of hens transported over longer distances (if the transport distance cannot be reduced).

Effect of transportation distances, seasons and crate microclimate on broiler chicken production losses

The goal of this research was to evaluate the microclimate (temperature, relative humidity and ECI-enthalpy comfort index) of commercial loads of broiler chickens at different transport distances: Dist15 (15 km on average) and Dist90 (90 km on average) in the summer and winter seasons and their effects on the production parameters body weight difference (BWD), mortality (%) and bruising prevalence (%). Twelve broiler loads were monitored using dataloggers to record temperature and humidity, with a total of 24 target crates per load. The experiment followed a factorial design [2 seasons (rainy and dry) × 2 distances (Dist15 and Dist90)] with a randomized complete block arrangement, 3 sexes (all males, all females, or mixed shipments) and one shipment per combination. BWD had a heterogeneous distribution throughout the load, and this distribution was not significantly correlated with the mean ECI measured during transport at 12 positions along the load. In terms of comfort, summer is the most critical period for broiler transport. In the interaction between rainy season and Dist90, the highest ECI was scored in the lethal zone (where physiological mechanisms are not enough to control body temperature). Mortality during the rainy season was not significantly different between distances. However, during the dry season, mortality was twice as high as broilers that travelled for 15 km. The prevalence of bruising on carcasses was not affected by the interaction between season and distance. As we know, broiler chicken performance, during transport, can be also related to road conditions, being hard to evaluate the real impact of seasons and distances on animal welfare. Load microclimate can compromise broiler chicken welfare during transport and it does not necessary reflect significant losses pre and post-slaughter.

An IoT Platform Towards the Enhancement of Poultry Production Chains

As a consequence of the projected world population growth, world meat consumption is expected to grow. Therefore, meat production needs to be improved, although it cannot be done at any cost. Maintaining the health and welfare status of animals at optimal levels has traditionally been a main concern of farmers, and more recently, consumers. In this article the Poultry Chain Management (PCM) platform is presented. It aims at collecting data across the different phases of the poultry production chain. The collection of this data not only contributes to determine the quality of each phase and the poultry production chain as a whole, but more importantly, to identify critical issues causing process inefficiencies and to support decision-making towards the holistic improvement of the production chain. Results showed that the information gathered can be exploited to make different suggestions to guarantee poultry welfare, and ultimately, improve the quality of the meat.

How Are Information Technologies Addressing Broiler Welfare? A Systematic Review Based on the Welfare Quality® Assessment

This systematic review aims to explore how information technologies (ITs) are currently used to monitor the welfare of broiler chickens. The question posed for the review was “which ITs are related to welfare and how do they monitor this for broilers?”. The Welfare Quality® (WQ) protocol for broiler assessment was utilized as a framework to analyse suitable articles. A total of 57 studies were reviewed wherein all principles of broiler welfare were addressed. The “good health” principle was the main criteria found to be addressed by ITs and IT-based studies (45.6% and 46.1%, respectively), whereas the least observed principle was “good feeding” (8.8%). This review also classified ITs and IT-based studies by their utilization (location, production system, variable measured, aspect of production, and experimental/practical use). The results show that the current focus of ITs is on problems with conventional production systems and that less attention has been given to free-range systems, slaughterhouses, and supply chain issues. Given the valuable results evidenced by the exploitation of ITs, their use in broiler production should continue to be encouraged with more attention given to farmer adoption strategies.

Modeling Method for Cost and Carbon Emission of Sheep Transportation Based on Path Optimization

Energy conservation, cost, and emission reduction are the research topics of most concern today. The aim of this paper is to reduce the cost and carbon emissions and improve the sustainable development of sheep transportation. Under the typical case of the “farmers–middlemen–slaughterhouses” (FMS) supply model, this paper comprehensively analyzed the factors, sources, and types of cost and carbon emissions in the process of sheep transportation, and a quantitative evaluation model was established. The genetic algorithm (GA) was proposed to search for the optimal path of sheep transportation, and then the model solving algorithm was designed based on the basic GA. The results of path optimization indicated that the optimal solution can be obtained effectively when the range of basic parameters of GA was set reasonably. The optimal solution is the optimal path and the shortest distance under the supply mode of FMS, and the route distance of the optimal path is 245.6 km less than that of random path. From the cost distribution, the fuel power cost of the vehicle, labor cost in transportation, and consumables cost account for a large proportion, while the operation and management cost of the vehicle and depreciation cost of the tires account for a small proportion. The total cost of the optimal path is 26.5% lower than that of the random path, and the total carbon emissions are 36.3% lower than that of random path. Path optimization can thus significantly reduce the cost of different types and significantly reduce the proportion of vehicle fuel power cost and consumables cost, but the degree of cost reduction of different types is different. The result of the optimal path is the key to be explored in this study, and it can be used as the best reference for sheep transportation. The quantitative evaluation model established in this paper can systematically measure the cost and carbon emissions generated in the sheep transportation, which can provide theoretical support for practical application.

Killing for purposes other than slaughter: poultry

Poultry of different ages may have to be killed on-farm for purposes other than slaughter (in which slaughtering is defined as being for human consumption) either individually or on a large scale (e.g. because unproductive, for disease control, etc.). The processes of on-farm killing that were assessed are handling and stunning and/or killing methods (including restraint). The latter were grouped into four categories: electrical methods, modified atmosphere, mechanical methods and lethal injection. In total, 29 hazards were identified and characterised, most of these regard stunning and/or killing. Staff were identified as origin for 26 hazards and 24 hazards were attributed to lack of appropriate skill sets needed to perform tasks or due to fatigue. Specific hazards were identified for day-old chicks killed via maceration. Corrective and preventive measures were assessed: measures to correct hazards were identified for 13 hazards, and management showed to have a crucial role in prevention. Eight welfare consequences, the birds can be exposed to during on-farm killing, were identified: not dead, consciousness, heat stress, cold stress, pain, fear, distress and respiratory distress. Welfare consequences and relevant animal-based measures were described. Outcome tables linking hazards, welfare consequences, animal-based measures, origins, preventive and corrective measures were developed for each process. Mitigation measures to minimise welfare consequences were also proposed.

Slaughter of animals: poultry

The killing of poultry for human consumption (slaughtering) can take place in a slaughterhouse or during on-farm slaughter. The processes of slaughtering that were assessed, from the arrival of birds in containers until their death, were grouped into three main phases: pre-stunning (including arrival, unloading of containers from the truck, lairage, handling/removing of birds from containers); stunning (including restraint); and bleeding (including bleeding following stunning and bleeding during slaughter without stunning). Stunning methods were grouped into three categories: electrical, controlled modified atmosphere and mechanical. In total, 35 hazards were identified and characterised, most of them related to stunning and bleeding. Staff were identified as the origin of 29 hazards, and 28 hazards were attributed to the lack of appropriate skill sets needed to perform tasks or to fatigue. Corrective and preventive measures were assessed: measures to correct hazards were identified for 11 hazards, with management shown to have a crucial role in prevention. Ten welfare consequences, the birds can be exposed to during slaughter, were identified: consciousness, heat stress, cold stress, prolonged thirst, prolonged hunger, restriction of movements, pain, fear, distress and respiratory distress. Welfare consequences and relevant animal-based measures were described. Outcome tables linking hazards, welfare consequences, animal-based measures, origins, and preventive and corrective measures were developed for each process. Mitigation measures to minimise welfare consequences were also proposed.

Changes in feed consumption and water intake among broiler chickens subjected to melatonin treatment during the hot-dry season

The experiment was conducted to evaluate changes in feed consumption and water intake among broiler chickens subjected to melatonin treatment during the hot-dry season. A total of 300 broiler chicks were selected and assigned into three groups, by simple random sampling, comprising 100 chicks each: group I was exposed to natural photoperiod of about 12-h light and 12-h darkness cycle (12D/12L), without melatonin supplementation; group II was kept under 24-h continuous lighting (CL), without melatonin supplementation; and group III was raised under 24-h CL and administered daily with melatonin orally at 0.5 mg/kg (CL + MEL). Live weight (LW), feed consumption, and water intake for each group were obtained at weekly intervals over a period of 8 weeks. On day 42 of age, the LW of 2420 ± 50 g/bird was obtained in group III administered with melatonin (CL + MEL), while LW values recorded in the 12D/12L and CL groups not administered with melatonin were 1470.00 ± 30.00 and 1907.00 ± 38.00 g/bird, respectively. The mean weight gain in CL + MEL (345.00 ± 21.01 g) was significantly (P < 0.05) higher than those of the 12D/12L (244.99 ± 18.67 g) and CL (307.48 ± 18.14 g) groups. Feed consumptions were significantly (P < 0.05) different in all the groups. Group II, raised on CL without melatonin supplementation, had the highest feed consumption value of 25.14 ± 0.51 g/bird from day 14, and attained the peak value of 206.77 ± 7.82 g/bird at day 56. The highest overall amount of water intake was recorded in the melatonin-treated group. In conclusion, melatonin administration to broiler chickens enhanced water intake but decreased feed consumption with increase in LW during the hot-dry season.

Risk factors for bruising and mortality of broilers during manual handling, module loading, transport, and lairage

Multiple factors can affect the risk of bruising and mortality of broilers during loading, transport, and lairage. The risk factors affecting the percentages of broilers in each load that were “dead-on-arrival” (DOA) or bruised were studied from records provided by a processing plant, by undertaking direct observations during on-farm loading and then carrying out multivariable analyses. Selected loads between 2014 and 2015 from seven producers were included in the study. The median DOA per load was 0.13% (Q1 = 0.06, Q3 = 0.25, n = 212), the median total duration from loading to unloading was 8.6 h, and the external temperature ranged from −22 to 22 °C. Although it was not possible to adequately characterise thermal conditions within each load, the analysis indicated that the main risk factors for increased mortality were in spring and winter, an increased duration between loading and end of lairage, and a period of feed withdrawal before loading longer than 6 h. The risk of mortality increased with the weight of the birds and with an increase in rearing mortality. No relationships were found between the manner in which the broilers were handled and the percentages of DOAs or bruised birds.

Survey on broiler pre-slaughter mortality in a commercial abattoir of central Italy

The pre-slaughter mortality was investigated on broilers, in the Mediterranean climate condition, considering the most significant risk factors as the journey length, waiting time, season and the space allowance in cages. At first, the pre-slaughter mortality was studied considering the totality of birds and then by examining in detail three broiler categories: large, medium and small size. The average dead on arrival (DOA) recorded on the totality of birds throughout the year was 0.38% and the values obtained in winter, spring, summer and autumn were 0.52, 0.48, 0.31 and 0.22%, respectively. The mortality rate observed during the year was 0.52, 0.47 and 0.31% for large, medium and small broilers, respectively. In all three groups, the maximum values of mortality were obtained in winter, whereas the minimum ones were recorded in autumn, spring and summer for large, medium, and small size birds, respectively. The increase of journey length could cause a higher mortality rate whereas the increase of the waiting time in the facilities at controlled environmental conditions did not seem to be a risk factor, but rather a mean to reduce the number of dead animals (all P < 0.05). It is concluded that the resistance to the hostile weather conditions, long journeys and extended waiting times was strongly related with the body weight of broilers; therefore, the planning of the slaughtering activity should consider this aspect, in order to avoid animal suffering and the economic loss.

Injury and mortality in broilers during handling and transport to slaughter

Multiple factors affect the risk of broiler injury and mortality during loading, transport, and lairage. These include the physical and pathophysiological condition of broilers before loading and the type of handling procedures used. The external environmental conditions have a major influence on the risk of mortality. Combinations of high stocking density, insufficient ventilation, and high temperature and humidity pose a risk of hyperthermia. Combinations of wet conditions, cold temperature, and air movement, increase the risk of hypothermia. However, protection from cold and wet conditions involves the use of side protection that restricts the trailer ventilation that can cause heat and moisture to build up in the load, increasing the risk of hyperthermia. Modular systems reduce the risk of injury and facilitate unloading into a lairage where temperature and ventilation can be controlled. The duration of loading, transport, and lairage increases the mortality risk. Deaths can occur during each stage and interactions between the duration of the preslaughter stages, the thermal environment, fasting, ill-health, and injury can reduce the physiological capacity of the birds to maintain homoeostasis resulting in exhaustion and death. Quality control and action on the identified risk factors should reduce injury and mortality during preslaughter handling and transport.
