Abstract
In this study, the impact of acetylation on physicochemical, digestive behavior and fermentation characteristics of Cyperus esculentus polysaccharides (CEP) was investigated. Results indicated that the acetylation led the molecules to be more likely aggregated, followed by a higher crystallinity, a lower apparent viscosity and a higher ratio of G" to G' (tan δ). Importantly, the acetylated polysaccharides (ACEP) had a lower digestibility, but its molecular weight was lower than that of original polysaccharides (CEP) following a simulated saliva-gastrointestinal digestion. Gut microbiota fermentation indicated that both polysaccharides generated outstanding short-chain fatty acids (SCFAs), in which the acetylated polysaccharides had a faster fermentation kinetics than the original one, followed by a quicker reduction of pH and a more accumulation of SCFAs, particularly butyrate. Fermentation of both polysaccharides promoted Akkermansia, followed by a reduced richness of Klebsiella. Importantly, the current study revealed that the fermentation of acetylated polysaccharides enriched Parabacteroides, while fermentation of original ones promoted Bifidobacterium, for indicating their individual fermentation characteristics and gut environmental benefits.

Abstract
Alginate, a polyuronic biopolymer composed of mannuronic and guluronic acid units, contain hydroxyl and carboxyl groups as targeting modification sites to obtain structures with new and/or improved biological properties. The copper-catalyzed azide-alkyne cycloaddition (CuAAC) is a versatile click reaction for polymer functionalization, but it typically requires a "pre-click" modification to introduce azide or alkyne groups. Here, we described a straightforward chemical path to selectively modify alginate carboxyl groups producing versatile azido derivatives through N-acylation using 3-azydopropylamine. The resulting azide-functionalized polysaccharides underwent click chemistry to yield amino derivatives, confirmed by NMR and FTIR analyses. The 1H NMR spectrum reveals a characteristic triazole group signal at 8.15 ppm. The absence of the azide FTIR band for all amino derivatives, previously observed for the N-acylation products, indicated reaction success. Antibacterial and antioxidant assessments revealed that the initial polysaccharide lacks E. coli inhibition, while the click chemistry-derived amine products exhibit growth inhibition at 5.0 mg/mL. Lower molecular weight derivatives demonstrate superior DPPH scavenging ability, particularly amino-derivatives (24-33 % at 1.2 mg/mL). This innovative chemical pathway offers a promising strategy for developing polysaccharide structures with enhanced properties, demonstrating potential applications in various fields.

Abstract
Traditional Chinese medicines are tremendous sources of polysaccharides, which are of great interest in the human welfare system as natural medicines, food, and cosmetics. This review aims to highlight the recent trends in extraction (conventional and non-conventional), purification and analytic techniques of traditional Chinese medicine polysaccharides (TCMPs), and the chemical structure, biological activities (anti-tumor, hypoglycemic, antioxidant, intestinal flora regulation, immunomodulatory, anti-inflammatory, anti-aging, hypolipidemic, hepatoprotective, and other activities), and the underlying mechanisms of polysaccharides extracted from 76 diverse traditional Chinese medicines were compared and discussed. With this wide coverage, a total of 164 scientific articles were searched from the database including Google Scholar, PubMed, Web of Science, and China Knowledge Network. This comprehensive survey from previous reports indicates that TCMPs are non-toxic, highly biocompatible, and good biodegradability. Besides, this review highlights that TCMPs may be excellent functional factors and effective therapeutic drugs. Finally, the current problems and future research advances of TCMPs are also introduced. New valuable insights for the future researches regarding TCMPs are also proposed in the fields of therapeutic agents and functional foods.

Abstract
Plantago asiatica L. (PAL), a traditional herb, has been used in East Asia for thousands of years. In recent years, polysaccharides extracted from PAL have garnered increased attention due to their outstanding pharmacological and biological properties. Previous research has established that PAL-derived polysaccharides exhibit antioxidant, anti-inflammatory, antidiabetic, antitumor, antimicrobial, immune-regulatory, intestinal health-promoting, antiviral, and other effects. Nevertheless, a comprehensive summary of the research related to Plantago asiatica L. polysaccharides (PALP) has not been reported to date. In this paper, we review the methods for isolation and purification, physiochemical properties, structural features, and biological activities of PALP. To provide a foundation for research and application in the fields of medicine and food, this review also outlines the future development prospects of plantain polysaccharides.

Abstract
In our previous study, we have established Russula pseudocyanoxantha as a unique species, playing a crucial role in indigenous diets through ages. The research also brought attention to bioactive potential of polysaccharide fraction extracted from the unexplored food using hot water. However, residue of the conventional process still contains therapeutic biopolymers that could further be utilized for pharmacological purposes instead of being discarded. Therefore, the current study aims to valorize the solid remnants, contributing to a deeper understanding of the novel taxon. Subsequently, the leftover was treated with cold alkali, leading to the preparation of a high-yield fraction (RP-CAP). Chemical characterization through FT-IR, GC-MS, HPTLC, and spectroscopy demonstrated presence of several monomers in the carbohydrate backbone, predominantly composed of β-glucan. Furthermore, GPC chromatogram indicated presence of a homogeneous polymer with molecular weight of ~ 129.28 kDa. Subsequently, potent antioxidant activity was noted in terms of radical scavenging (O2·-, OH·, DPPH· and ABTS·+), chelating ability, reducing power and total antioxidant activity where EC50 values ranged from 472-3600 μg/mL. Strong immune-boosting effect was also evident, as the biopolymers stimulated murine macrophage cell proliferation, phagocytic activity, pseudopod formation, and NO as well as ROS synthesis particularly at the concentration of 100 μg/mL. In-depth analysis through RT-PCR revealed that the fraction stimulated synthesis of several inflammatory mediators, elucidating the mode of action through TLR/ NF-κB pathway. Therefore, the findings collectively suggest that RP-CAP possesses great potential to serve as a healthimproving component in functional food and pharmaceutical sectors.

Abstract
Halenia elliptica D. Don (H. elliptica), which is also known as "heijicao" and "luanehuamao" in China, is recognised as a valuable Tibetan medicinal plant with polysaccharides as the main active ingredient. However, studies on the polysaccharides isolated from H. elliptica are few. A polysaccharide (HEPN-1) with a molecular weight of 10.80 kDa was mainly composed of Gal, Ara, Man, Glc, Rha and Fuc in a molar ratio of 25.56:24.52:4.58:3.37:2.62:1.00. Structural analysis showed that HEPN-1 had a backbone mainly consisting of 4-β-Galp, 3,6-β-Galp and 3,4,6-β-Galp and branched chains that contained two arabinan (R1 and R2) and two heteropolysaccharide (R3 and R4) side chains. The branching degree of HEPN-1 was 0.52. Within the range of doses (75-300 μg/mL), HEPN-1 increased the enzyme activity of SOD, CAT and GSH-Px and decreased the MDA level in H2O2-induced RAW 264.7 cells in a dose-dependent manner. After 6 weeks of intragastric administration, 300 mg/kg HEPN-1 considerably improved the learning and memory deficits in mice and the antioxidant enzyme system. Moreover, the MDA formation in D-gal-induced aging mice was inhibited, possibly partly via the activation of the PI3K/Akt and Nrf2/HO-1 signalling pathways. Therefore, HEPN-1 could serve as a potential natural antioxidant to prevent aging.

Abstract
This research was designed to characterize the structure of Cyperus esculentus polysaccharide (CEP) and its acetylated one (ACEP), and then investigated the effects of acetylation on the changes in physicochemical properties, thermal stability, antioxidant and immunomodulatory activities. Results showed that CEP and ACEP were heteropolysaccharides consisting of glucose, mannose, arabinose and xylose. The main chain of CEP included α-1,4-Glcp residues with the branching points at the O-6 position of the α-1,6-Manp residues. Acetyl groups were substituted at the O-2 and O-6 positions of some glucose residues. Meanwhile, the acetylation remarkably improved the polysaccharides thermal stability, and the ACEP exhibited a greater antioxidant activity. Furthermore, CEP and ACEP were proved to protect RAW 264.7 cells against LPS-induced inflammation by improving cellular morphology and decreasing reactive oxygen species secretion. This study may highlight a new approach for developing a high value-added ingredient from C. esculentus for functional food industry.

Abstract
In order to better understand the influences of extraction techniques on the yield, characteristics, and bioactivities of polysaccharide conjugates, hot reflux extraction (HRE), ultrasonic-assisted extraction (UAE), microwave-assisted extraction (MAE), complex enzymolysis extraction (CEE), ultra-high pressure extraction (UPE), ultrasonic complex enzymes extraction (UEE) were used to extract sweet potato stems leaves polysaccharide conjugates (SPSPCs), and their physicochemical characteristics, functional properties, antioxidant and hypoglycemic activities were compared. Results showed that compared with HRE conjugate (HR-SPSPC), the yield, content of uronic acid (UAC), total phenol (TPC), total flavonoid (TFC) and sulfate group (SGC), water solubility (WS), percentage of glucuronic acid (GlcA), galacuronic acid (GalA) and galactose (Gal), antioxidant and hypoglycemia activities of UEE polysaccharide conjugates (UE-SPSPC) significant increased, while its molecular weight (Mw), degree of esterification (DE), content of protein (PC) and percentage of glucose (Glc) declined, but monosaccharides and amino acid types, and glycosyl linkages were not much different. Indeed, UE-SPSPC possessed the highest antioxidant activities and hypolipidemic activities among six SPSPCs, which might be due to the high UAC, TPC, TFC, SGC, GlcA, GalA and WS, low Mw, DE and Glc of UE-SPSPC. The results reveal that UEE is an effective extraction and modification technology of polysaccharide conjugates.

Abstract
Thermally processed peanuts are ideal plant models for studying the relationship between allergenicity and antioxidant capacity of protein-rich foods, besides lipids, carbohydrates and phytochemicals. Peanut is highly praised in the human diet; however, it is rich in allergens (>75% of total proteins). One-third of peanut allergens belong to the products of genes responsible for the defence of plants against stress conditions. The proximate composition of major peanut macromolecules and polyphenols is reviewed, focusing on the identity and relative abundance of all peanut proteins derived from recent proteomic studies. The importance of thermal processing, gastrointestinal digestion (performed by INFOGEST protocol) and their influence on allergenicity and antioxidant properties of protein-rich plant food matrices is elaborated. Antioxidant properties of bioactive peptides from nuts were also considered. Moreover, there are no studies dealing simultaneously with the antioxidant and allergenic properties of protein- and polyphenol-rich foods, considering all the molecules that can significantly contribute to the antioxidant capacity during and after gastrointestinal digestion. In summary, proteins and carbohydrates are underappreciated sources of antioxidant power released during the gastrointestinal digestion of protein-rich plant foods, and it is crucial to decipher their antioxidant contribution in addition to polyphenols and vitamins before and after gastrointestinal digestion.

Abstract
Biopolysaccharides extracted from plants are mainly photosynthetic byproducts found in leaves, pods, stems, fruits, grains, seeds, corms, rhizomes, roots, bark exudates, and other plant parts. Recently, these plant-derived biopolysaccharides have received a great deal of attention as pharmaceutical excipients in a range of different dosage forms because of several key advantages, such as widespread accessibility from nature as plant-based sources are readily available, sustainable production, availability of easy and cost-effective extraction methodologies, aqueous solubility, swelling capability in the aqueous medium, non-toxicity, biodegradability, etc. The current review presents a comprehensive overview of the uses of plant-derived biopolysaccharides as effective pharmaceutical excipients in the formulations of different kinds of dosage forms, for example gels, pastes, films, emulsions, suspensions, capsules, tablets, nanoparticles, microparticles, beads, buccal formulations, transdermal formulations, ocular formulations, nasal formulations, etc.

Abstract
Flaxseed mucilage and its derivatives have been extensively investigated over the last decade, mainly due to their inherent techno-functional (thickening, gelling, interface-stabilizing, and film-forming) properties that are relevant in the food industry. Hydrocolloids are used to modify food properties, such as for stabilization and emulsion, and are also used to control the microstructure of the food. Increasing research attention has been paid to the application of hydrocolloid materials in gel particles for encapsulation or texture control in food, pharmaceutical, cosmetic, and probiotic products. Thus, it is important to investigate the properties of hydrocolloids manufactured from various sources and explore their possible applications in the food industry. The applied nature of the study of plant mucus substances is associated with the ever-increasing demand for their use in the food, cosmetic, and pharmacological industries, determining the related research priorities, including the development of the most effective methods for the extraction of glycans and the search for highly productive raw materials for the production of polysaccharides. The aim of this work was to study varietal differences in the compositions of heteropolysaccharides in the mucus samples of oilseed and fiber flax varieties using a modern methodological approach for obtaining glycans based on the ultrasonic extraction of polysaccharides. The seeds of 10 flax varieties were studied, differing in their morphotype, place, and time of creation. The obtained results indicated significant differences in the quantitative and qualitative compositions of the heteropolysaccharides of flax seeds of various varieties. The contents of reducing sugars in the studied varieties ranged from 5.61 ± 0.01 to 18.81 ± 0.01 mg/g, indicating significant differences in the structural organization of glycans in different flax varieties. Additionally, the results obtained here allowed us to conclude that the range of reducing sugars for flax heteropolysaccharides is significantly less than this range for oilseed flax varieties. The obtained results of the study of the composition of flax seed heteropolysaccharides allowed us to consider them as selection trait and genetic markers.

Abstract
We extracted, purified, and characterized three neutral and three acidic polysaccharides from the roots, stems, and leaves of Aralia continentalis Kitigawa. The results of the analysis of monosaccharide composition indicated that the polysaccharides from the roots and stems were more similar to each other than they were to the polysaccharides from the leaves. The in vitro antioxidant results demonstrated that the acidic polysaccharides had stronger antioxidant activity than the neutral fractions. Therefore, we investigated the primary purified acidic polysaccharide fractions (WACP(R)-A-c, WACP(S)-A-c, and WACP(L)-A-d) by NMR and enzymatic analysis. The structural analytical results indicated that WACP(R)-A-c contained homogalacturonan (HG); WACP(S)-A-c contained HG and rhamnogalacturonan II (RG-II), and WACP(L)-A-d contained HG, RG-II, and rhamnogalacturonan I (RG-I) domains. Our findings offer insights into the screening of natural polysaccharide-based antioxidants and provide a theoretical basis for the application of A. continentalis.

Abstract
Dandelion, in China, has a long history as a medicinal and edible plant, and possesses high nutritional and medical value. The present study aimed to isolate a new polysaccharide (DLP-3) from dandelion leaves and to evaluate its antioxidant, antibacterial, and anticancer activities. The structure of DLP-3 was analyzed using HPLC, FT-IR, SEM, GC-MS, and NMR spectroscopy. DLP-3 mainly consisted of Man, Rha, GlcA, Glc, Gal, and Ara with molar ratios of 2.32, 0.87, 1.21, 3.84, 1.00, and 1.05, respectively, with a molecular weight of 43.2 kDa. The main linkages of DLP-3 contained (1→4)-α-d-Glc, (1→4,6)-α-d-Glc, (1→6)-α-d-Gal, (1→2)-α-d-Man, (1→4)-α-d-Man, β-l-Ara-(1→, and α-l-Rha-(1→. DLP-3 exhibited a smooth surface, purely flake-like structure, and a triple helix conformation. Moreover, DLP-3 presented obvious antioxidant and antibacterial activities in a concentration-dependent manner. DLP-3 showed significant anticancer activities by inhibiting tumor cell proliferation. These findings provide a theoretical basis for the application of DLP-3 as a natural functional active substance in functional foods.

Abstract
The fermentation medium of a newly identified Cordyceps cicadae S1 was optimized by response surface methodology, with the optimal medium containing sucrose (80 g/L), yeast powder (60 g/L), KH2PO4 (5 g/L), MgSO4·7H2O (1 g/L) and Na2SeO3 (0. 1 g/L). Under these conditions, the extracellular polysaccharide yield was 8.09 g/L. A novel selenium-enriched polysaccharide (PACI-1) was isolated from Cordyceps cicadae, purified and identified as a homofructose polysaccharide with a low average molecular weight of 9.95 × 103 Da. The fine structure of PACI-1 was analyzed using NMR, CD, and AFM. Additionally, the in vitro antioxidant results showed that the PACI-1 had stronger antioxidant capacity than natural polysaccharides. These results provided a candidate strain for producing selenium polysaccharide and a new polysaccharide from C. cicadae, which showed good antioxidant activity.

Abstract
Allium roseum is one of the medicinal plants of the Liliaceae family, widely used in the food industry and traditional medicine. It is known for its various biological properties, such as its antioxidant, antiviral, antidiabetic, and anti-inflammatory activities. The present work aims to extract the polysaccharides from Allium roseum leaves and evaluate their antioxidant activities and hepatoprotective effects in vivo. Three polysaccharides from the leaves of Allium roseum were sequentially extracted in three media: water, chelating, and basic, respectively. They were characterized by size exclusion chromatography, gas chromatography mass spectrometry, FTIR-ATR, and NMR spectroscopy (1D and 2D). The different polysaccharides principally consist of glucose, galactose, mannose, rhamnose, xylose, and galacturonic acid. The antioxidant activity and hepatoprotective effect of the extracts against Cd-caused oxidative stress in liver mouse were tested. Cd treatment, during 24 h, enhanced significantly lipid peroxidation by a high production of malondyaldehyd (MDA) and superoxide dismutase (SOD) activity. In contrast, catalase activity (CAT) was decreased after the same period of exposure to the metal. The polysaccharides pre-treatment improved the antioxidant defense system to a great degree, mainly explained by the modulating levels of oxydative stress biomarkers (MDA, SOD, and CAT). This research clearly shows that Allium roseum polysaccharides, especially those extracted in aqueous medium, can be used as natural antioxidants with hepatoprotective properties.

Abstract
Foods incorporated with bioactive compounds, called nutraceuticals, can fight or prevent or alleviate diseases. The contribution of nutraceuticals or phytochemicals to non-invasive biomedical applications is increasing. Although there are many traditional methods for extracting bioactive compounds or secondary metabolites, these processes come with many disadvantages like lower yield, longer process time, high energy consumption, more usage of solvent, yielding low active principles with low efficacy against diseases, poor quality, poor mass transfer, higher extraction temperature, etc. However, nullifying all these disadvantages of a non-thermal technology, ultrasound has played a significant role in delivering them with higher yield and improved bio-efficacy. The physical and chemical effects of acoustic cavitation are the crux of the output. This review paper primarily discusses the ultrasound-assisted extraction (USAE) of bioactives in providing non-invasive prevention and cure to diseases and bodily dysfunctions in human and animal models. The outputs of non-invasive bioactive components in terms of yield and the clinical efficacy in either in vitro or in vitro conditions are discussed in detail. The non-invasive biomedical applications of USAE bioactives providing anticancer, antioxidant, cardiovascular health, antidiabetic, and antimicrobial benefits are analyzed in-depth and appraised. This review additionally highlights the improved performance of USAE compounds against conventionally extracted compounds. In addition, an exhaustive analysis is performed on the role and application of the food bioactives in vivo and in vitro systems, mainly for promoting these efficient USAE bioactives in non-invasive biomedical applications. Also, the review explores the recovery of bioactives from the less explored food sources like cactus pear fruit, ash gourd, sweet granadilla, basil, kokum, baobab, and the food processing industrial wastes like peel, pomace, propolis, wine residues, bran, etc., which is rare in literature.

Abstract
The frying process, a popular cooking technique, is widely used in the food industry around the world for the production of fried foods. Nevertheless, it is always accompanied by potential challenges including lipid peroxidation of vegetable oils. In this study, the influence of the coriander leaves essential oil (CLEO) on the oxidative stability of sunflower oil under frying conditions and the sensory attributes of fried food (Chinese Mahua) during the sensory evaluation were investigated. The results indicated that compared with the control, CLEO at 0.12 g/kg could obviously suppress the increases for the total polar compounds (TPC), thiobarbituric acid (TBA), color, conjugated dienes (CD), conjugated trienes (CT) and viscosity of sunflower oil, and prominently restrain the oxidization procedure of unsaturated fatty acid (UFA). Meanwhile, the decline in the sensory attributes for the Chinese Mahua was significantly inhibited. Furthermore, the study revealed the antioxidant effect of CLEO was mainly attributed to two compounds, carvacrol and limonene, which were separated by the bioassay-guided fractionation. Consequently, CLEO and the two compounds may be employed as potential natural antioxidants to improve the oxidation stability of sunflower oil under frying conditions.
