Abstract
Vitex negundo has strong antioxidant activity, but its primary antioxidant components are not clear. In this study, the antioxidant components were screened by offline two-dimensional liquid chromatography coupled with electrochemical detection (2D-LC-ECD) and subsequently assessed using liquid chromatography-tandem mass spectrometry (LC-MS/MS) identification, radical scavenging capacity, and molecular docking. Various fractions were isolated from Vitex negundo leaves, and 39 antioxidant components were screened and identified. All of the fractions containing the antioxidant components exhibited certain antioxidant activity. Correlation analysis revealed a strong correlation between the response of LC-ECD and the in vitro antioxidant activity of the fractions. Molecular docking demonstrated that components with high response to LC-ECD exhibited robust interaction with antioxidant-related target proteins. The main antioxidant components of Vitex negundo leaves were isoorientin, chlorogenic acid, agnuside, cynaroside, and scutellarin. The 2D-LC-ECD combined with LC-MS/MS was rapid and effective in screening the antioxidant components in Vitex negundo leaves and could also provide technical support for the discovery of antioxidant components with different polarities and contents in other medicinal and edible plants.

Abstract
Native to South America, tamarillo (Solanum betaceum Cav.) is a small tree cultivated as a fruit crop in several regions of the world. Known for its sweet and sour taste, tamarillo fruits are very nutritious due to the presence of health-beneficial components such as fiber, vitamins, and antioxidants. Despite its nutritional value, tamarillo remains poorly known in global markets. The present work aims to study the antioxidant activity of four genotypes of tamarillo. Several chemical assays were performed to assess the antioxidant components and antioxidant activity of aqueous ethanolic extracts from each genotype. Overall, the Mealhada genotype (a red cultivar) showed the most interesting results, displaying the highest amount of total phenolic, flavonoids, and anthocyanin contents, as well as higher antioxidant activity. To evaluate the composition of the extract, Fourier-transform infrared spectroscopy (FTIR) was used to characterize important components in aqueous ethanolic extracts of the fruits, having revealed the presence of high amounts of phenols (the main compounds responsible for antioxidant activity), as well as triterpenoids and polysaccharides. The present results highlight the potential nutraceutical importance of tamarillo fruits.

Abstract
There is increasing interest in research of secondary metabolites from Physalis peruviana (Cape gooseberry) because of their potential bioactivities. In this study, the profile of compounds found in fruits and husks from Costa Rica was determined through ultra-performance liquid chromatography coupled with high-resolution mass spectrometry using a quadrupole time-of-flight analyzer (UPLC-ESI-QTOF MS) on extracts (n = 10) obtained through pressurized liquid extraction (PLE) conditions. In total, 66 different compounds were identified, comprising 34 withanolides, 23 sucrose ester derivatives and 9 flavonoids. UPLC-DAD analysis was performed to determine the β-carotene in fruits and to quantify the flavonoids in all 10 samples, with the results showing higher contents in samples from the Dota region (58.6−60.1 μg/g of dry material versus 1.6−2.8 mg/g of dry material). The Folin−Ciocalteau total polyphenolic content (FC) and antioxidant activity using the DPPH method showed better results for the husk extracts, with the ones from the Dota region holding the best values (4.3−5.1 mg GAE/g of dry material versus IC50 = 1.6−2.3 mg of dry material/mL). In addition, a significant negative correlation was found between the RU, FC and DPPH values (r = −0.902, p < 0.05), aligning with previous reports on the role of polyphenols in antioxidant activity. Principal correlation analysis (PCoA) and hierarchical clustering (HC) analysis were performed on HRMS results, and they indicated that the D1 and D2 fruit samples from the Dota region were clustered with husks related to a higher presence of the analyzed metabolites. In turn, principal component analysis (PCA) performed on the flavonoid content and antioxidant activity yielded results indicating that the D1 and D2 husks and fruit samples from the Dota region stood out significantly, showing the highest antioxidant activity. In summation, our findings suggest that P. peruviana husks and fruits from Costa Rica constitute a substrate of interest for further studies on their potential health benefits.

Abstract
Fruit juices have been emerging as excellent vehicles for development of probiotic products due to their nutritional properties and presence of bioactive compounds. This work evaluated the growth and viability of Limosilactobacillus fermentum ATCC 23271 and Lacticaseibacillus rhamnosus ATCC 9595 in bacuri juice (Platonia insignis Mart., Clusiaceae). Both strains were able to grow in bacuri juice, without any supplementation. Viability was kept after 28 days of storage; however, growth was significantly higher for L. rhamnosus ATCC 9595 (7.40 ± 0.04 Log CFU/mL). Following this, the effects of bacterial inoculum and pulp concentration on growth and lactic acid production by L. rhamnosus ATCC 9595 were investigated using a central composite rotational design. The inoculum concentration was the main factor for obtaining the most favorable relation between growth and organic acid production (G/pH ratio). Among the tested conditions, those used in assay 6 allowed the best G/pH ratio (2.13) and higher lactic acid production (4.14 g/L). In these conditions, L. rhamnosus ATCC 9595 grown in bacuri juice showed the same resistance towards acidification or addition of lysozyme than when cultivated in MRS. Finally, the anti-infective effects of fermented and non-fermented juices were analyzed using Tenebrio molitor larvae infected by enteroaggregative Escherichia coli 042. The pre-treatment with supernatants of both fermented and non-fermented juices significantly increased the survival of E. coli-infected larvae. However, only the L. rhamnosus-fermented juice had protective effects when inoculated 2 h after infection. Collectively, the results obtained in this research allowed the basis for the development of a non-dairy probiotic product from bacuri juice.

Abstract
In this study, 11 apple cultivars were characterized by their total phenolic content (TPC) and total flavonoid content (TFC) and antioxidant, reducing, and chelating capacity by 2,2-diphenyl-1-picrylhydrazyl (DPPH) test, cyclic voltammetry (CV), and ferric reducing antioxidant power (FRAP) assays; and ferrous ion chelating capacity. The phenolic compounds in flesh and peel were determined by liquid chromatography coupled to mass spectrometry and diode array detector (HPLC-DAD-MS/MS) and their electroactivity by CV. The results showed higher TPC, TFC, and antioxidant capacity by DPPH test in the peels of all apple cultivars as compared to the respective flesh. The peel extracts also showed two-fold higher FRAP values as compared to the flesh extracts. The reducing capacity of the peel and flesh determined by CV measurements confirmed the results achieved by spectrophotometric methods of evaluating antioxidant capacity. There was no significant difference in chelating capacity in the peel and flesh. The HPLC-DAD-MS/MS analysis showed the presence of 11 phenolic compounds in the peel and flesh which varied in antioxidant, reducing, and chelating activity. The order of the phenolic compound content in flesh and peel in Quinte cultivar, which showed the highest antioxidant capacity, was as follows: epicatechin > chlorogenic acid > quercetin 3-arabinoside > quercetin 3-glucoside > cyanidin 3-galactoside > quercetin 3-rhamnoside > catechin > phloridzin > rutin > phloretin = quercetin. CV results were highly correlated with those obtained by spectrophotometry and HPLC-DAD-MS/MS, providing evidence to support the use of cyclic voltammetry as a rapid method to determine the phenolic profile and reducing the power of apple flesh and peel. The association between antioxidant assays and phenolic compound content showed that the highest contribution to the antioxidant capacity of apple peel and flesh was provided by catechin, epicatechin, and cyadinin-3-galactoside, while phloretin, phloridzin, and chlorogenic acid were the main contributors to chelating activity. Results from this study clearly indicate that removing the peel from apples may induce a significant loss of antioxidants.

Abstract
The usage of boron-doped diamond (BDD) material has found to be very attractive in modern electroanalytical methods and received massive consideration as perspective electrochemical sensor due to its outstanding (electro)chemical properties. These generally known facilities include large potential window, low background currents, ability to withstand extreme potentials and strong tendency to resist fouling compared to conventional carbon-based electrodes. As evidence of superiority of this material, couple of reviews describing the overview of various applications of BDD electrodes in the field of analytical and material chemistry has been reported in scientific literature during last decade. However, herein proposed review predominantly focuses on the most recent developments (from 2009 to 2020) dealing with the application of BDD as an advanced and environmental-friendly sensor platform in food analysis. The main method characteristics of analysis of various organic food components with different chemical properties, including additives, flavor and aroma components, phenolic compounds, flavonoids and pesticides in food matrices are described in more details. The importance of BDD surface termination, presence of sp2 content and boron doping level on electrochemical sensing is discussed. Apart from this, a special attention is paid to the evaluation of main analytical characteristics of the BDD electrochemical sensor in single- and multi-analyte detection mode in food analysis. The recent achievements in the utilizing of BDD electrodes in amperometric detection coupled to flow injection analysis, batch injection analysis, and high-performance liquid chromatography are also commented. Moreover, actual trends in sample preparation techniques prior to electrochemical sensing in food analysis are referred.

Abstract
The aim of this research was to develop and characterize an innovative nectar formulation of Physalis peruviana fruits from the Argentinean Northern Andean region with optimized proportions of pulp and sucrose that maximizes the antioxidant activity and with good sensorial acceptance, using the response surface methodology as optimization strategy. Physicochemical characteristics (total soluble solids, titratable acidity and pH), antioxidant activity (measured as the free radical scavenging activity against DPPH·) and sensorial attributes (color, acidity, sweetness, texture, aroma and overall acceptance) were evaluated in a series of nectar formulations. A significant correlation between overall acceptance and antioxidant activity contributed to achieve the objective outlined. The mathematical modelling defined a nectar with 65% fruit juice and pulp and 8% sucrose; this nectar presented absence of indicator microorganisms (aerobic mesophilic microorganisms, molds and yeasts, Salmonella spp., total coliforms, and Staphylococcus aureus coagulase positive) despite having no added preservatives. β-carotene and vitamin C contents (1.13 ± 0.02 and 16.56 ± 0.52 mg/100 mL respectively) and antioxidant activity towards DPPH· (EC50: 2.43 ± 0.07 mg/mL), ABTS·+ (3.48 ± 0.07 μmol Trolox/mL) and FRAP (10.16 ± 0.10 μmol Trolox/mL), make this nectar a functional food with potential for the food industry.

Abstract
Natural phenolic compounds are abundant in the vegetable kingdom, occurring mainly as secondary metabolites in a wide variety of chemical structures. Around 10,000 different plant phenolic derivatives have been isolated and identified. This review provides an exhaustive overview concerning the electron transfer reactions in natural polyphenols, from the point of view of their in vitro antioxidant and/or pro-oxidant mode of action, as well as their identification in highly complex matrixes, for example, fruits, vegetables, wine, food supplements, relevant for food quality control, nutrition, and health research. The accurate assessment of polyphenols' redox behavior is essential, and the application of the electrochemical methods in routine quality control of natural products and foods, where the polyphenols antioxidant activity needs to be quantified in vitro, is of the utmost importance. The phenol moiety oxidation pathways and the effect of substituents and experimental conditions on their electrochemical behavior will be reviewed. The fundamental principles concerning the redox behavior of natural polyphenols, specifically flavonoids and other benzopyran derivatives, phenolic acids and ester derivatives, quinones, lignins, tannins, lignans, essential oils, stilbenes, curcuminoids, and chalcones, will be described. The final sections will focus on the electroanalysis of phenolic antioxidants in natural products and the electroanalytical evaluation of in vitro total antioxidant capacity.

Abstract
The antioxidant properties of different plant extracts are usually claimed and used by food, medicine and cosmetic industry due to their health promoting capacities. In this study the presence of antioxidant compounds and the total antioxidant capacity of water-soluble extracts, prepared using two extraction methods and a variety of solvents, have been determined and a rapid screening method has been developed. Plant extracts characterisation, composition and antioxidant properties were confirmed by FTIR and Raman spectroscopies. Voltammetry, amperometry and electrochemical impedance were used to highlight the total antioxidant capacity of each extract using an electrochemical gold nanozyme-sensor based on the enzyme-like catalytic activity of gold nanoparticles. Both anodic area of cyclic voltammograms (10.31 μA V) and electrochemical index (153) calculated using differential potential voltammetry show the total content of antioxidant compounds, allowing to discriminate between different extracts. Amperometric total antioxidant capacity measurements were associated with those from classical chemiluminescence and good correlation has been found (Pearson's correlation coefficient of 0.958).

Abstract
Physalis peruviana L. fruits have gained great interest in different producing countries because they are good source of nutrients and bioactive compounds. However, the nutritional characterization and bioactive properties of both cultivated and wild fruits of P. peruviana growing in Argentina have not been conducted so far. The results provided clear difference in physicochemical, nutritional and bioactive characteristics of cultivated and wild fruits of P. peruviana from Argentinean Northern Andean region. Cultivated fruits showed a higher content of K, Mg and Cu and bioactive compounds as vitamin C than wild fruits. Besides, cultivated fruits displayed a high antiradical activity towards ABTS●+ and FRAP. In addition, both cultivated and wild fruits exhibited a great antioxidant activity measured as the free radical scavenging activity against DPPH● (effective concentration that scavenged 50% of the radicals is 0.64 and 1.65 mg/mL, respectively). The findings point out that the nutritional properties and bioactive compounds (vitamin C and β-carotene) of cultivated and wild fruits were comparable to those from countries with a production tradition. Outstandingly, the antioxidant performance of fruits growing in Argentinean Northern Andean region is remarkable in comparison with those reported in other producing zones, which can be ascribed to suitable ecological conditions.

Abstract
Agro-industrial byproducts are considered good sources of macronutrients and phytochemicals. Fruit and vegetable residues (FVR), obtained after the production of an isotonic beverage, have previously been characterized containing 80% insoluble dietary fibers from total fibers (48.4%), 26% available carbohydrates, 9.5% proteins and 5% lipids. Nevertheless, fruit and vegetables provide phytochemicals which have been related to human health such as phenolic compounds. The loss of specific compounds over the production process is related to their partitioning between fruit and vegetables and byproducts. However, phenolic profile of FVR remains unknown. This work is focused on the evaluation of FVR as a natural source of these bioactive compounds. For this purpose, pressurized liquid extraction (PLE) has been proposed as extraction technique for recovering phenolic compounds from FVR. The experimental variables were temperature and percentage of solvent (ethanol and water). Phenolic compounds extracts were characterized by UPLC-ESI-Q-TOF-MS and a discussion about phenolic and macronutrient interactions was established. Globally, 88 compounds were tentatively identified: phenolic acids (28), flavonoids (32), and other polyphenols (28). The PLE conditions applied yielded different breaking matrix-analyte interactions leading to an increase in the number of compounds. The highest phenolic acids content was achieved with high temperature while lower temperatures were more efficient in extracting flavonoid. By establishing the phenolics profile in food byproducts such as FVR, it is possible to more effectively apply these byproducts as nutraceutical, food or pharmaceutical ingredients. PRACTICAL APPLICATION Flow diagram of bioactive compounds recovering from isotonic beverage byproduct is proposed using pressurized liquid extraction. The plant-bioactives mechanism relies on fruit and vegetable byproducts changes under different extraction conditions. The obtained extracts can most effectively be applied as nutraceuticals or as ingredients in food or pharmaceutical inputs.

Abstract
Resumo Alimentos ricos em polifenóis, considerados com alto poder antioxidante, principalmente da classe antocianinas, estão sendo cada vez mais utilizados na prevenção de doenças relacionadas à síndrome metabólica. Um fruto que se destaca por apresentar essa propriedade é o açaí ( Euterpe oleracea). O Brasil é o maior produtor da fruta e o mercado estrangeiro vem investindo na sua importação para utilização tanto na indústria alimentícia quanto farmacêutica. O objetivo do estudo foi realizar uma extensa revisão da literatura sobre as propriedades funcionais do açaí relacionadas à síndrome metabólica. A busca de dados foi realizada em bases, como Pubmed, Web of Science, Scielo e Science Direct. Assim, observou-se que Euterpe oleracea é um fruto rico em antocianinas, as quais atuam modulando o metabolismo lipídico para minimizar os danos no organismo causados pelo estresse oxidativo, desencadeado por doenças crônicas.

Abstract
The phenolics profile of two new kiwifruit cultivars, Zespri® SunGold and Zespri® Sweet Green, were characterized and quantified for the first time using cyclic voltammetry, an electrochemical method, combined with HPLC. Results from the cyclic voltammetry revealed high correlations with those obtained from the spectrophotometry and HPLC methods, providing evidence to support the application of cyclic voltammetry as a rapid method in determining the phenolic profile and reducing power of kiwifruit extracts. Catechol-containing phenolics were identified as the major phenolic sub-class in the skins while flavonoids and phenolic acids were abundant in flesh of the tested cultivars. Epicatechin was the predominant phenolic compound and contributor to antioxidant capacity in all samples. Results also showed that SunGold and Sweet Green (both flesh and skin) exhibited significantly higher phenolic contents and antioxidant activities comparing with the well-established commercial 'Hayward' cultivar, indicating their commercial value and potential applications in food and nutraceuticals.

Abstract
The Flammer syndrome (FS) describes the phenotype of people with a predisposition for an altered reaction of the blood vessels to stimuli like coldness or emotional stress. The question whether such people should be treated is often discussed. On the one hand, most of these subjects are healthy; on the other hand, FS seems to predispose to certain eye diseases such as normal tension glaucoma or retinitis pigmentosa or systemic diseases such as multiple sclerosis or tinnitus. A compromise between doing nothing and a drug treatment is the adaption of nutrition. But what do we mean by healthy food consumption for subjects with FS? The adaption of nutrition depends on the health condition. Whereas patients with e.g. a metabolic syndrome should reduce their calorie intake, this can be counterproductive for subjects with FS, as most subjects with FS have already a low body mass index (BMI) and the lower the BMI the stronger the FS symptoms. Accordingly, while fasting is healthy e.g. for subjects with metabolic syndrome, fasting can even dangerously aggravate the vascular dysregulation, as it has been nicely demonstrated by the loss of retinal vascular regulation during fasting. To give another example, while reducing salt intake is recommended for subjects with systemic hypertensions, such a salt restriction can aggravate systemic hypotension and thereby indirectly also the vascular regulation in subjects with FS. This clearly demonstrates that such a preventive adaption of nutrition needs to be personalized.

Abstract
Kaempferol-3-O-β-d-glucopyranoside (astragalin, AS), a major flavonoid that exists in various plants, exerts antioxidant, antitumor, anti-human immunodeficiency virus (HIV), and anti-inflammatory effects. However, the low water solubility of AS limits its use. In this study, we used cyclodextrin glucanotransferase (CGTase) with maltose (G2) as a donor molecule to enzymatically modify AS to improve its water solubility and physiochemical properties. We isolated the glycosylated astragalin (G1-AS) and identified the structure of G1-AS as kaempferol-3-O-β-d-glucopyranosyl-(1→4)-O-α-d-glucopyranoside, where one glucose residue was transferred to AS. G1-AS retained the antioxidative activity of the original AS compound; however, the solubility of G1-AS was 65-fold higher than that of AS. In addition, G1-AS showed enhanced anti-inflammatory effects and aldose reductase inhibitory activity compared to AS when applied to rat lenses.

Abstract
Red fruits are rich sources of antioxidant compounds with recognized health benefits. Since they are perishable, dried extracts emerge as more durable products and their quality control must include antioxidant capacity assays. In this study, the redox behavior of commercial dried products obtained from camu-camu, açai, acerola and cranberry red fruits was evaluated by electroanalytical approaches. The antioxidant potential was determined by 2,2-diphenyl-1-picrylhydrazyl free radical assay and the electrochemical index concept. The total phenol content was estimated by using a laccase based biosensor. A significant correlation was found between all methods and literature data. The voltammetric profile (cyclic, differential and square wave) obtained for each type of dried extract showed distinguishable features that were correlated with their main major markers, being also useful for identification purposes. The electrochemical methods were cheaper and more practical for evaluation of antioxidant properties and total phenol content in dried powders obtained from different red fruits.
