Abstract
β-lactoglobulin (β-Lg) is a major food allergen, there is an urgent need to develop a rapid method for detecting β-Lg in order to avoid contact or ingestion by allergic patients. Peptide aptamers have high affinity, specificity, and stability, and have broad prospects in the field of rapid detection. Using β-Lg as the target, this study screened 11 peptides (P1-11) from a phage display library. Using molecular docking technology to predict binding energy and binding mode of proteins and peptides. Select the peptides with the best binding ability to β-Lg (P5, P7, P8) through ELISA. Combining them with whey protein, casein, and bovine serum protein, it was found that P7 has the best specificity for β-Lg, with an inhibition rate of 87.99%. Verified by molecular dynamics that P7 binds well with β-Lg. Therefore, this peptide can be used for the recognition of β-Lg, becoming a new recognition element for detecting β-Lg.

Abstract
Cow's milk allergy (CMA) is considered one of the most prevalent food allergies and a public health concern. Modern medical research shows that the effective way to prevent allergic reactions is to prevent allergic patients from consuming allergenic substances. Therefore, the development of rapid and accurate detection technology for milk allergens detection and early warning is critical to safeguarding those with a cow milk allergy. As the oligonucleotide sequences with high specificity and selectivity, aptamers frequently assemble with transduction elements forming multifarious aptasensors for quantitative detection owing to their high-affinity binding to the target. Current aptasensors in the field of cow's milk allergen detection in recent years are explored in this review. This review takes a look back at a few common assays, including ELISA and PCR, before presenting a clear overview of the aptamer and threshold doses. It delves into a detailed discussion of the current aptamer-based detection techniques and related theories for milk allergen identification. Last but not least, we conclude with a discussion and outlook of the advancements made in allergen detection with aptamers. We sincerely hope that there will be more extensive applications for aptasensors in the future contributing to reducing the possibility of patients suffering from adverse reactions.

Abstract
There is a growing interest in the use of flexible substrates for label-free and in situ Surface-enhanced Raman Spectroscopy (SERS) applications. In this study, a flexible SERS substrate was prepared using self-assembled Au/Ti3C2 nanocomposites deposited on a cellulose (CS) paper. The Au/Ti3C2 nanocomposites uniformly wrapped around the cellulose fibers to provide a three-dimensional plasma SERS platform. The limit of detection (LOD) of CS/Au/Ti3C2 was as low as 10-9 M for 4-mercaptobenzoic acid(4-MBA) and crystal violet (CV), demonstrating good SERS sensitivity. CS/Au/Ti3C2 was used for in situ SERS detection of thiram on apple surfaces by simple swabbing, and a limit of detection of 0.05 ppm of thiram was achieved. The results showed that CS/Au/Ti3C2 is a flexible SERS substrate that can be used for the detection of thiram on apple surfaces. These results demonstrate that CS/Au/Ti3C2 can be used for the non-destructive, rapid and sensitive detection of pesticides on fruit surfaces.

Abstract
Beta-lactoglobulin (β-Lg), a prominent milk protein, is a major contributor to milk allergies. The quantitative assessment of β-Lg is a valuable method for assessing the allergenic potential of dairy products. In this study, a specific aptamer, β-Lg-01, with an affinity constant (KD) of 28.6 nM for β-Lg was screened through seven rounds of magnetic bead SELEX (MB-SELEX). A novel bio-layer interferometry (BLI)-based aptasensor was developed, which had a limit of detection (LOD) of 0.3 ng mL-1, a linear range of 1.5 ng mL-1-15 μg mL-1, and a recovery rate of 102-116% among the milk samples. This aptasensor provides a potential tool for the detection and risk assessment of β-Lg within 10 min.

Abstract
In this work, a high-performance molecularly imprinted polymer (MIP) sensor for the determination of β-lactoglobulin (β-LG) was fabricated by using trypsin as a template removal reagent. Gold nanoparticles (Au NPs) and reduced graphene oxide (rGO) designed for electrode modification accelerate the heterogeneous electron transfer rate to enhance the sensitivity of the prepared sensor. With enzymatic hydrolysis, β-LG templates were effectively digested into short peptides without damage to the MIP so that the imprinted cavities of the MIP were preserved with a complete spatial structure exhibiting high selectivity. Based on the optimization of the protein removal time and pH, the prepared MIP electrochemical sensor could recognize β-LG in the range of 4-100 ng/mL with a low detection limit (3.58 ng/mL). The sensor also expressed excellent selectivity and was successfully applied to real sample detection. The results demonstrate that the proposed MIP electrochemical sensor may be a promising candidate for camel milk adulteration detection.

Abstract
Surface-enhanced Raman spectroscopy (SERS), well acknowledged as a fingerprinting and sensitive analytical technique, has exerted high applicational value in a broad range of fields including biomedicine, environmental protection, food safety among the others. In the endless pursuit of ever-sensitive, robust, and comprehensive sensing and imaging, advancements keep emerging in the whole pipeline of SERS, from the design of SERS substrates and reporter molecules, synthetic route planning, instrument refinement, to data preprocessing and analysis methods. Artificial intelligence (AI), which is created to imitate and eventually exceed human behaviors, has exhibited its power in learning high-level representations and recognizing complicated patterns with exceptional automaticity. Therefore, facing up with the intertwining influential factors and explosive data size, AI has been increasingly leveraged in all the above-mentioned aspects in SERS, presenting elite efficiency in accelerating systematic optimization and deepening understanding about the fundamental physics and spectral data, which far transcends human labors and conventional computations. In this review, the recent progresses in SERS are summarized through the integration of AI, and new insights of the challenges and perspectives are provided in aim to better gear SERS toward the fast track.

Abstract
The colorimetric signal readout method is widely used in visualized analyses for its advantages, including visualization of test results, simple and fast operations, low detection cost and fast response time. Gold nanoparticles (Au NPs), which not only exhibit enzyme-like activity but also have the advantages of tunable localized surface plasmon resonance (LSPR), high stability, good biocompatibility and easily modified properties, provide excellent platforms for the construction of colorimetric sensors. They are widely used in environmental monitoring, biomedicine, the food industry and other fields. This review focuses on the chromogenic mechanisms of colorimetric sensors based on Au NPs adopting two different sensing strategies and summarizes significant advances in Au NP-based colorimetric sensing with enzyme-like activity and tunable LSPR characteristics. In addition, the sensing strategies based on the LSPR properties of Au NPs are classified into four modulation methods: aggregation, surface modification, deposition and etching, and the current status of visual detection of various analytes is discussed. Finally, the review further discusses the limitations of current Au NP-based detection strategies and the promising prospects of Au NPs as colorimetric sensors, guiding the design of novel colorimetric sensors.

Abstract
Globally, food safety and security are receiving a lot of attention to ensure a steady supply of nutrient-rich and safe food. Nanotechnology is used in a wide range of technical processes, including the development of new materials and the enhancement of food safety and security. Nanomaterials are used to improve the protective effects of food and help detect microbial contamination, hazardous chemicals, and pesticides. Nanosensors are used to detect pathogens and allergens in food. Food processing is enhanced further by nanocapsulation, which allows for the delivery of bioactive compounds, increases food bioavailability, and extends food shelf life. Various forms of nanomaterials have been developed to improve food safety and enhance agricultural productivity, including nanometals, nanorods, nanofilms, nanotubes, nanofibers, nanolayers, and nanosheets. Such materials are used for developing nanofertilizers, nanopesticides, and nanomaterials to induce plant growth, genome modification, and transgene expression in plants. Nanomaterials have antimicrobial properties, promote plants' innate immunity, and act as delivery agents for active ingredients. Nanocomposites offer good acid-resistance capabilities, effective recyclability, significant thermostability, and enhanced storage stability. Nanomaterials have been extensively used for the targeted delivery and release of genes and proteins into plant cells. In this review article, we discuss the role of nanotechnology in food safety and security. Furthermore, we include a partial literature survey on the use of nanotechnology in food packaging, food safety, food preservation using smart nanocarriers, the detection of food-borne pathogens and allergens using nanosensors, and crop growth and yield improvement; however, extensive research on nanotechnology is warranted.

Abstract
β-lactoglobulin (β-Lg) is a protein found in milk that can cause severe allergic reactions, including rash, vomiting, and diarrhea. Thus, it is crucial to develop a sensitive β-Lg detection method to protect people who are susceptible to allergies. Here, we introduce a novel and highly sensitive fluorescent aptamer biosensor for detecting β-Lg. First, a fluorescein-based dye (FAM)-labeled β-lactoglobulin aptamer (β-Lg aptamer) is adsorbed on the surface of tungsten disulfide (WS2) nanosheets via van der Waals forces, resulting in fluorescence quenching. When β-Lg is present, the β-Lg aptamer selectively binds to β-Lg, causing a conformational change in the β-Lg aptamer and releasing it from the surface of WS2 nanosheets, which restores the fluorescence signal. Simultaneously, DNase I in the system cleaves the aptamer bound to the target, producing a short oligonucleotide fragment and releasing β-Lg. The released β-Lg then binds to another β-Lg aptamer adsorbed on WS2, initiating the next round of cleavage, resulting in significant amplification of the fluorescence signal. This method has a linear detection range of 1-100 ng mL-1, and the limit of detection is 0.344 ng mL-1. Furthermore, this approach has been successfully used for detecting β-Lg in milk samples with satisfactory results, providing new opportunities for food analysis and quality control.

Abstract
Food contaminant is a significant issue because of the adverse effects on human health and economy. Traditional detection methods such as liquid chromatography-mass spectroscopy for detecting food contaminants are expensive and time-consuming, and require highly-trained personnel and complicated sample pretreatment. Raman spectroscopy is an advanced analytical technique in a manner of non-destructive, rapid, cost-effective, and ultrasensitive sensing various hazards in agri-foods. In this chapter, we summarized the principle of Raman spectroscopy and surface enhanced Raman spectroscopy, the methods to process Raman spectra, the recent applications of Raman/SERS (surface-enhanced Raman spectroscopy) in detecting chemical contaminants (e.g., pesticides, antibiotics, mycotoxins, heavy metals, and food adulterants) and microbiological hazards (e.g., Salmonella, Campylobacter, Shiga toxigenic E. coli, Listeria, and Staphylococcus aureus) in foods.

In recent years, growing food safety and quality concerns have emerged and created an urgent need for the development of rapid and reliable food control technologies. This study proposes a novel surface-enhanced Raman spectroscopy (SERS) substrate printing technology that utilizes commercial filter paper functionalized by silver nanoparticles. We modified the Automatic TLC Sampler using a two-dimensional (2D) printer. The modification allows for various sampling modes which can be applied to 2D printing. The shape and size of nano silver on the substrate were determined, and the substrate sensitivity, uniformity, and stability were evaluated. As demonstrated by the experimental outcomes, the proposed technology is highly sensitive and reproducible, that is, the limit of quantitation was 10-5 mg/kg, and the spot-to-spot and block-to-block Raman intensity variations were below 4.2%. We also successfully applied the technology to pears and apples for thiram recognition, yielding outstanding detectability down to 2.5 × 10-6 and 3.9 × 10-7 mg/mL (equal to 2.5 × 10-3 and 3.9 × 10-4 mg/kg), respectively. These were well below the maximum residue limit (7 mg/kg). More importantly, the linear relationships between thiram levels and the SERS intensity allow for sensitive monitoring of minute variations in agricultural insecticide residues. This proposed detection method can realize in situ detection with a strong signal fingerprint.

Abstract
Reliable detection and quantification of antibiotic residues in food using surface-enhanced Raman spectroscopy remain challenging, since the intensities of SERS signals are vulnerable to matrix and experimental factors. In this work, a ratiometric SERS aptasensor using 6-Carboxyl-X-Rhodamine (ROX)-labeled aptamers and 4-mercaptobenzonitrile (4-MBN)-functionalized gold nanoparticles (Au NPs) as SERS probes was established for the reliable and rapid detection and quantification of enrofloxacin. In the presence of enrofloxacin, the conformational transform of aptamers took place, and the distance between ROX and Au NP increased, which resulted in a decrease in the SERS signal intensity of ROX. Meanwhile, the intensity of the SERS signal of 4-MBN was used as an internal standard. Reliable determination of enrofloxacin was realized using the ratio of the SERS signal intensities of ROX to 4-MBN. Under optimal conditions, the developed ratiometric SERS aptasensor provided a wide linear range from 5 nM to 1 µM, with a correlation coefficient (R2) of 0.98 and a limit of detection (LOD) of 0.12 nM (0.043 ppb). In addition, the developed ratiometric SERS aptasensor was successfully applied for the determination of enrofloxacin in fish and chicken meat, with recovery values of 93.6-112.0%. Therefore, the established ratiometric SERS aptasensor is sensitive, reliable, time-efficient, and has the potential to be applied in the on-site detection of enrofloxacin in complex matrices.

Abstract
Throughout the food supply chain, including production, storage, and distribution, food can be contaminated by harmful chemicals and microorganisms, resulting in a severe threat to human health. In recent years, the rapid advancement and development of nanotechnology proposed revolutionary solutions to solve several problems in scientific and industrial areas, including food monitoring. Nanotechnology can be incorporated into chemical and biological sensors to improve analytical performance, such as response time, sensitivity, selectivity, reliability, and accuracy. Based on the characteristics of the contaminants and the detection methods, nanotechnology can be applied in different ways in order to improve conventional techniques. Nanomaterials such as nanoparticles, nanorods, nanosheets, nanocomposites, nanotubes, and nanowires provide various functions for the immobilization and labeling of contaminants in electrochemical and optical detection. This review summarizes the recent advances in nanotechnology for detecting chemical and biological contaminations in the food supply chain.

Abstract
Nanourchins are multibranched nanoparticles with unique optical properties and surface spikes. Because of their unique properties, gold nanourchins have advantages over gold nanoparticles. The most used nanourchins are gold, tungsten, carbon, vanadium and sea urchins. The synthesis of various nanourchins and their clinical advancement are discussed in this review. ZFNs, TALENs and CRISPR/Cas9 are discussed to facilitate understanding of advancements in nanourchins. Nanourchins have been studied for Parkinson's disease, Alzheimer's disease and bioimaging. The synthesis of molybdenum diselenide nanourchins and their bioconjugations are also discussed. Nanourchins can be further explored to improve drug targeting and delivery. Researchers from several fields may contribute to the study of nanourchins as prospective nanocarriers with target specificity.

Abstract
Innovative application of surface-enhanced Raman scattering (SERS) for rapid and nondestructive analyses has been gaining increasing attention for food safety and quality. SERS is based on inelastic scattering enhancement from molecules located near nanostructured metallic surfaces and has many advantages, including ultrasensitive detection and simple protocols. Current SERS-based quality analysis contains composition and structural information that can be used to establish an electronic file of the food samples for subsequent reference and traceability. SERS is a promising technique for the detection of chemical, biological, and harmful metal contaminants, as well as for food poisoning, and allergen identification using label-free or label-based methods, based on metals and semiconductors as substrates. Recognition elements, including immunosensors, aptasensors, or molecularly imprinted polymers, can be linked to SERS tags to specifically identify targeted contaminants and perform authenticity analysis. Herein, we highlight recent studies on SERS-based quality and safety analysis for different foods categories spanning the whole food chain, ‘from farm to table’ and processing, genetically modified food, and novel foods. Moreover, SERS detection is a potential tool that ensures food safety in an easy, rapid, reliable, and nondestructive manner during the COVID-19 pandemic.
