Abstract
OBJECTIVE The objectives of the present study were to evaluate the effects of once-a-day milk feeding on growth performance and routine behavior of preweaning dairy calves. METHODS At 22nd day of age, twenty-four Holstein calves were randomly assigned to one of two treatment groups (n = 12/treatment) based on milk feeding frequency (MF): i) 3 L of milk feeding two times a day; ii) 6 L of milk feeding once a day. The milk feeding amount was reduced to half for all calves between 56 and 60 days of age and weaning was done at 60 days of age. To determine the increase in weight and structural measurements, each calf was weighed and measured at 3 weeks of age and then at weaning. The daily behavioral activity of each calf was assessed from the 22nd day of age till weaning (60th day of age) through Nederlandsche Apparatenfabriek (NEDAP) software providing real-time data through a logger fitted on the calf's foot. RESULTS There was no interaction (p≥0.17) between MF and sex of the calves for routine behavioral parameters, body weight and structural measurements. Similarly, there was no effect of MF on routine behavioral parameters, body weight and structural measurements. However, the sex of the calves affected body weight gain in calves. Male calves had 27% greater total body weight and average daily gain than female calves. There was no effect of the sex of the calves on behavioral measurements. Collectively, in the current study, no negative effects of a once-a-day milk feeding regimen were found on routine behavioral and growth parameters of preweaning calves in group housing. CONCLUSION Once-a-day milk feeding can be safely adopted in preweaning calves from 22nd day of age.

Abstract
This Scientific Opinion addresses a European Commission request on the welfare of calves as part of the Farm to Fork strategy. EFSA was asked to provide a description of common husbandry systems and related welfare consequences, as well as measures to prevent or mitigate the hazards leading to them. In addition, recommendations on three specific issues were requested: welfare of calves reared for white veal (space, group housing, requirements of iron and fibre); risk of limited cow–calf contact; and animal‐based measures (ABMs) to monitor on‐farm welfare in slaughterhouses. The methodology developed by EFSA to address similar requests was followed. Fifteen highly relevant welfare consequences were identified, with respiratory disorders, inability to perform exploratory or foraging behaviour, gastroenteric disorders and group stress being the most frequent across husbandry systems. Recommendations to improve the welfare of calves include increasing space allowance, keeping calves in stable groups from an early age, ensuring good colostrum management and increasing the amounts of milk fed to dairy calves. In addition, calves should be provided with deformable lying surfaces, water via an open surface and long‐cut roughage in racks. Regarding specific recommendations for veal systems, calves should be kept in small groups (2–7 animals) within the first week of life, provided with ~ 20 m2/calf and fed on average 1 kg neutral detergent fibre (NDF) per day, preferably using long‐cut hay. Recommendations on cow–calf contact include keeping the calf with the dam for a minimum of 1 day post‐partum. Longer contact should progressively be implemented, but research is needed to guide this implementation in practice. The ABMs body condition, carcass condemnations, abomasal lesions, lung lesions, carcass colour and bursa swelling may be collected in slaughterhouses to monitor on‐farm welfare but should be complemented with behavioural ABMs collected on farm.

Abstract
Many milk-fed dairy calves are not provided forage. In these settings, calves often perform abnormal repetitive behaviors (ARBs), including tongue rolling and nonnutritive oral manipulation (NNOM), which, based on their form, seem similar to movements used when processing feed. Feeding hay, typically presented as a short chop (≤5 cm) in a bucket, reduces ARBs. Our objective was to evaluate whether altering the presentation method of long hay (∼19 cm), by providing it in a bucket or a novel polyvinyl chloride (PVC) pipe feeder, could reduce ARBs. Holstein heifer calves were housed individually on sand and fed ad libitum starter grain and limited milk replacer (5.7-8.4 L/d step-up) via a bottle (Control, n = 9) or given access to mountaingrass hay in a bucket (Bucket, n = 9) or in a PVC pipe feeder (Pipe, n = 9). The 56 × 10.2 cm (length × diameter) PVC pipe feeder had 4 openings that were 6.35 cm wide, which required the calf to insert her tongue into the pipe and curl her tongue to extract hay. Treatments were applied from birth through 50 d of age, when step-down weaning began and TMR was provided to all calves. Calves were fully weaned at d 60. At wk 4 and 6, oral behaviors (eating, ruminating, drinking water, sucking milk, self-grooming, NNOM, tongue rolling, tongue flicking, and panting) were recorded by direct observation for 24 h using 1-0 sampling during 5-s intervals. Feeding long hay, regardless of presentation method, increased overall DMI, grain intake, and ADG compared with Control calves. Hay provision also increased rumination (25 vs. 15% of 24-h observations in Control) and eating time (5.5 vs. 2% in Control). Abnormal behaviors were seen in all calves. Hay provision reduced some of these, including NNOM (5 vs. 9% in Control). There was no difference in NNOM between calves fed hay in a pipe or bucket, even though Bucket calves consumed more hay (178 vs. 129 g/d in wk 6) and tended to spend more observations eating hay than Pipe calves (4.5 vs. 3%). Hay provision did not affect other behaviors: drinking water (0.5%), grooming (3%), or tongue flicking (3%). We also found evidence of other abnormal oral behaviors that have received less attention. Calves showed signs of polydipsia, and displayed excessive grooming, the latter indicated by overall duration, number of bouts per day, and duration of individual bouts (up to 25 min). Tongue rolling was expressed at low levels (up to 0.4% of intervals) but by 85% of calves. Feeding hay, both in a bucket and using novel methods, was not enough to counteract the welfare challenges associated with individual housing and limited ability to suck milk (<1% of time). Provision of long hay, regardless of presentation method, promotes rumination, improves performance (higher grain intake and ADG) and reduces at least some, but not all, of the considerable abnormal oral behaviors these calves performed.

Abstract
Heat stress (HS), immune challenges (IC) and pecking behavior are some of the many stressors poultry can experience in commercial settings that may affect bird welfare and meat quality after harvest. The first objective was to determine if HS or IC turkeys displayed greater negative effects on meat quality, and the second objective was to determine if the frequency of non-aggressive pecking behaviors among the birds was related to meat quality. Ninety-two, commercial male, beak-trimmed turkeys were used with a total of 15 rooms and 4–7 birds per room. Each treatment was applied for 1 week prior to harvest: the Control (CON) group had no stressors added, the HS group ambient temperature was approximately 29 °C for 120 min, and the IC group involved inoculating birds with a live vaccine for hemorrhagic enteritis virus. Birds were recorded and scored to quantify pecking behavior. Once harvested, carcasses were evaluated for feather retention force, pH, color, proximate analysis, fatty acid composition, shear force, and drip loss. Stress treatment resulted in HS breasts having the lowest protein content, and IC breasts having the lowest CIE L* values and the greatest shear force values. Pecking behavior had no impact on any meat quality attributes.

Abstract
Dairy calves often perform abnormal repetitive behaviors (ARBs) including tongue rolling and nonnutritive oral manipulation (NNOM) when opportunities to perform feeding behaviors are restricted. Many US dairy farms limit access to milk, a well-studied risk factor for ARBs. However, farms also commonly do not feed forage to young calves, and the motor patterns of oral ARBs resemble those necessary for acquiring and chewing solid feed. Our objective was to assess how access to hay from birth influenced time engaged in normal and abnormal oral behaviors across 24 h. Holstein heifer calves were housed individually on sand bedding and fed ad libitum water and grain (control, n = 11) or given additional access to hay (hay, n = 11) from birth. Calves were fed 5.7 to 8.4 L/d (step-up) of milk replacer via a teat. At the start of step-down weaning (50 ± 1 d), all calves were given access to a total mixed ration. Feed and water intake were measured daily. Oral behaviors (eating, ruminating, sucking milk, drinking water, panting, grooming, tongue flicking, tongue rolling, and NNOM) were recorded by direct observation at wk 2, 4, 6, and 8 using 1-0 sampling at 1-min intervals for 24 h. Grain, hay, and water intake increased over time in the preweaning period. One polydipsic calf regularly consumed >10 L of water/d. During weaning, hay calves tended to consume increasingly more total mixed ration, significantly more water, and less grain than control calves. Access to hay led to more observations spent eating solid feed (7% vs. 5%, mean percentage of intervals) and ruminating (24% vs. 16%) during the preweaning period compared with calves fed only grain, though control calves appeared to ruminate in absence of forage to re-chew. Rumination occurred, to a large extent, overnight. Hay calves also spent less time self-grooming (12% vs. 14%), tongue flicking (14% vs. 18%), and performing NNOM (17% vs. 21%) than control calves. Although NNOM peaked around milk feedings, all 3 behaviors were performed throughout the day. Tongue rolling was rare across treatments, as was panting, which occurred most frequently around 1400 h. There were no behavioral differences during weaning (wk 8). Overall, we found that hay provision affected most oral behaviors that calves perform; it promoted natural feeding behaviors and reduced abnormal ones, suggesting hay should be provided. We also found that calves performed other behaviors, including polydipsia, repetitive grooming, and apparent sham rumination, that may suggest a degree of abnormality in these behaviors that has not been previously identified. These results highlight the importance of considering all oral behaviors to better understand calf welfare.

Abstract
Simple Summary Antimicrobial use in humans and animals leads to the selection of resistant bacteria, a serious threat to human and animal health, as such bacteria can lead to treatment failure and death. With the “outdoor veal calf” concept, a novel calf fattening system was developed that allows for reducing antimicrobial use by 80% through improvements in management and housing, such as health check before purchase, short transport, vaccination, quarantine in individual hutches, and fattening in small groups in a roofed, straw-bedded paddock with a group hutch for shelter. In that system, veal calves spend their entire lives outdoors in the fresh air. In our study, we wanted to make sure that the observed reduction in antimicrobial treatments was not achieved at the cost of animal welfare, i.e., that sick animals were not left without treatment in order to obtain better figures for treatment reduction. Our results show that calves in the “outdoor veal calf” system had fewer signs of respiratory and digestive diseases than control calves and that their lungs had fewer lesions of pneumonia than controls after slaughter. Thus, not only was antimicrobial use drastically reduced, but calf health was really improved in the new “outdoor veal calf” system. Abstract The “outdoor veal calf” system was developed to encounter the demand for a veal fattening system that allows for reducing antimicrobial use without impairing animal welfare. Management improvements including direct purchase, short transportation, vaccination, three-week quarantine in individual hutches, and open-air housing in small groups in a roofed, straw-bedded paddock with a group hutch were implemented in a prospective intervention study (1905 calves, 19 intervention and 19 control farms, over one year): antimicrobial use was five times lower in "outdoor veal" farms compared to control farms (p < 0.001), but it was crucial to ensure that antimicrobial treatment reduction was not associated with decreased animal welfare, i.e., that sick animals were not left untreated. Welfare was assessed monthly on the farms, and organs of 339 calves were examined after slaughter. Cough and nasal discharge were observed significantly (p ≤ 0.05) less often in intervention than in control farms, mortality (3.1% vs. 6.3%, p = 0.020) and lung lesion prevalence (26% vs. 46%, p < 0.001) were lower; no group difference was seen in abomasal lesion prevalence (65% vs. 72%). Thus, besides reduced antimicrobial use, calf health and welfare were improved in "outdoor veal calf" farms in comparison to traditional operations.

Abstract
Physiologically based pharmacokinetic (PBPK) models for chemicals in food animals are a useful tool in estimating chemical tissue residues and withdrawal intervals. Physiological parameters such as organ weights and blood flows are an important component of a PBPK model. The objective of this study was to compile PBPK‐related physiological parameter data in food animals, including cattle and swine. Comprehensive literature searches were performed in PubMed, Google Scholar, ScienceDirect, and ProQuest. Relevant literature was reviewed and tables of relevant parameters such as relative organ weights (% of body weight) and relative blood flows (% of cardiac output) were compiled for different production classes of cattle and swine. The mean and standard deviation of each parameter were calculated to characterize their variability and uncertainty and to allow investigators to conduct population PBPK analysis via Monte Carlo simulations. Regression equations using weight or age were created for parameters having sufficient data. These compiled data provide a comprehensive physiological parameter database for developing PBPK models of chemicals in cattle and swine to support animal‐derived food safety assessment. This work also provides a basis to compile data in other food animal species, including goats, sheep, chickens, and turkeys.

Abstract
Housing systems and environmental features can influence beef cattle welfare. To date, little information has been synthesized on this topic. The aim of this scoping review was to examine the relationship between housing and welfare status, so that beef cattle producers and animal scientists can make informed decisions regarding how their housing choices could impact beef cattle welfare. Housing features were categorized by floor type, space allowance and shade availability, as well as the inclusion of enrichment devices or ventilation features. Evaluation of space allowances across feedlot environments determined behavioral and production benefits when cattle were housed between 2.5 m2 to 3.0 m2 per animal. Over 19 different flooring types were investigated and across flooring types; straw flooring was viewed most favorably from a behavioral, production and hygiene standpoint. Veal calves experience enhanced welfare (e.g., improved behavioral, physiological, and performance metrics) when group housed. There is evidence that the implementation of progressive housing modifications (e.g., shade, environmental enrichment) could promote the behavioral welfare of feedlot cattle. This review presents the advantages and disadvantages of specific housing features on the welfare of beef cattle.

Abstract
The objective of this prospective single cohort study was to determine the effect of health status at arrival on growth in milk-fed veal calves. Upon arrival at the veal facility, calves were evaluated using a standardized health scoring system and weighed, and the supplier of the calf was recorded. The calves were followed until slaughter, when the hot carcass weight (HCW) was reported. To calculate average daily gain (ADG), the HCW was transformed into an estimated live weight, weight at arrival was subtracted, and this value was divided by the number of days on feed. A mixed linear regression model was created to evaluate the association of health status on arrival with the ADG throughout the production period. A total of 4,825 calves were evaluated at arrival; however, due to inconsistent HCW data from one slaughter plant, and 357 calves dying during the production period, 2,283 calves were used for analysis. In the final model, 7 variables were significantly associated with ADG. Housing location within the farm, method of calf procurement (drover or auction-derived calves versus direct delivery from local farms) and having a higher body weight at arrival were associated with a higher ADG. The season of arrival (summer or fall compared with winter) and being dehydrated at arrival were associated with a lower ADG. Days on feed was also significant in the multivariable model and had a quadratic relationship with ADG. The associations identified suggest that there may be value in scoring dehydration and body weight at arrival to a veal facility.

Abstract
BACKGROUND Compared with weaned calves, nursed calves benefit from access to milk as nutrient-dense feed and mentoring by their dams. Both may be decisive for growth under difficult conditions such as grazing on alpine pastures, where experience could play an essential role. These factors were investigated separately by comparing nursed calves with calves weaned at 3 months of age and grazing with or without a mentor cow (n = 8 calves). RESULTS Weaned calves with mentor cows spent less time lying and walked more than nursed calves. Irrespective of whether they had a mentor cow or not, the weaned calves grew slower than the nursed calves (357, 428 and 1324 g day-1 respectively). This also adversely affected slaughter weight, dressing percentage, conformation and fat cover at slaughter. In general, mentoring had no effect. Meat quality did not differ whether weaned calves were mentored or not. Nursed calves were superior in intramuscular fat content, tenderness and water-holding capacity. CONCLUSION The availability of milk appeared to be much more important to the calves under demanding grazing conditions than did mentoring. The differences in growth rate were accompanied by unexpectedly large differences in meat quality, showing that early weaning was not suitable for this system.© 2016 Society of Chemical Industry.

Abstract
Standard practice in the dairy industry is to separate the calf and dam immediately after birth and raise calves in individual pens during the milk-feeding period. In nature and in extensive beef systems, the young calf lives in a complex social environment. Social isolation during infancy has been associated with negative effects, including abnormal behavior and developmental problems, in a range of species. Here, we review empirical work on the social development of calves and the effects of social isolation in calves and other species; this evidence indicates that calves reared in isolation have deficient social skills, difficulties in coping with novel situations, as well as specific cognitive deficits. We also review the practices associated with group housing of dairy calves, and discuss problems and suggested solutions, especially related to cross-sucking, competition, aggression, and disease. The studies reviewed indicate that social housing improves solid feed intakes and calf weight gains before and after calves are weaned from milk to solid feed. Evidence regarding the effects of social housing on calf health is mixed, with some studies showing increased risk of disease and other studies showing no difference or even improved health outcomes for grouped calves. We conclude that there is strong and consistent evidence of behavioral and developmental harm associated with individual housing in dairy calves, that social housing improves intakes and weight gains, and that health risks associated with grouping can be mitigated with appropriate management.

Abstract
The objective of this study was to investigate the physico-chemical and sensory properties of loin (m. longissimus dorsi) and top round (m. semimembranosus) beef from 3-, 6-, 9-, and 12 mon-old Holstein calves. For both loin and top round muscles, the moisture contents were decreased, whereas the protein and fat contents were increased, as the slaughtering age increased. In terms of meat color, for both muscle types, CIE L* values were decreased, whereas CIE a* values and myoglobin content increased as the slaughtering age increased. pH values were significantly higher in the 3 mon-old group than in the other groups. The Warner-Bratzler shear force (WBSF) values were lowest for loin muscles from the 12 mon-old group; however, there was no significant difference for top round muscle among the 4 age groups. Cooking loss for both loin and top round muscles were significantly higher for the 3 mon-old group than for the other groups. The water holding capacity (WHC) of both muscles were highest for the 12 mon-old groups (p<0.05). In fatty acid composition of the 12 mon-old groups, loin muscles had significantly higher levels of C14:0, C16:1n7, C18:1n9, and mono-unsaturated fatty acids (MUFA), and top round muscles had significantly higher levels of C16:1n7, C18:1n7, C18:1n9, MUFA, MUFA/SFA. Loin muscle from the 3- and 12 mon-old groups had significantly higher scores for tenderness and overall likeness. Top round muscle from the 9- and 12 mon-old groups had significantly higher scores for overall likeness than those from the other age groups.

Abstract
BACKGROUND Farmers in dry mountain areas are changing their management strategies to improve livestock farming efficiency, by using different forages or different breeds. The effect of breed (Parda de Montaña vs. Pirenaica) and finishing diet (grazing on meadows vs. a total mixed ration (50% alfalfa, 40% maize grain, 10% straw)) on carcass characteristics and meat quality of steers was studied. RESULTS Parda de Montaña had a greater (P < 0.01) amount of intramuscular fat than Pirenaica. The finishing diet did not influence carcass fat color, but fatty acid composition was slightly affected. Finishing steers on a total mixed ration increased the percentage of fat of the 10th rib (P < 0.001). Supplementation with concentrates increased the diet energy concentration and also increased the dressing percentage. CONCLUSIONS Both breeds had similar carcass characteristics. Consumers preferred beef from the Pirenaica breed because of its greater tenderness. Consumers did not differentiate between beef from animals fed different finishing diets. However, consumers who like meat very much preferred meat aged in a cooler at 4 °C for 15 days rather than 8 days.

Packing plant differences in meat quality were investigated in grain-fed veal from three commercial packing plants and a university research facility. Postmortem chilling rates were investigated in three plants including facilities which encased carcass sides in a polyliner bag intended to reduce shrinkage during chilling. Packing plant differences (P ≤ 0.01) in chilling rates were not always accompanied by plant differences in sarcomere length for longissimus or semitendinosus muscles. Drip and cooking losses and shear force for longissimus varied (P≤0.04) across packing plant with lower (P≤0.02) values found in veal slaughtered at the university research facility vs. veal from commercial packing plants. A packing plant by postmortem ageing interaction (P<0.05) for shear force was due to differences in extent of postmortem tenderization with ageing across packing plants. While use of a polyliner to encase the carcass during chilling decreased (P<0.001) rate of chilling and carcass shrinkage, there was no effect (P>0.20) on drip loss, shear force, or cooking losses vs. carcasses chilled uncovered.

Abstract
Background Little is known on the effects of common calf diseases on mortality and carcass traits in the white veal industry (special-fed veal), a highly integrated production system, currently criticized for the intensive pro- and metaphylactic use of antimicrobials. The objective of the present study was to determine the impact of bovine respiratory disease (BRD), diarrhea, arthritis and otitis on the economically important parameters of mortality, hot carcass weight (HCW), carcass quality, fat cover and meat color. For this purpose, a prospective study on 3519 white veal calves, housed in 10 commercial herds, was conducted. Case definitions were based on clinical observation by the producers and written treatment records were used. Results Calves received oral antimicrobial group treatments in the milk during 25.2% of the production time on average. With an increasing percentage of the production cycle spent on oral antimicrobials, HCW reduced, whereas the odds for insufficient fat cover or an undesirable red meat color both decreased. Of the calves, 14.8%, 5.3%, 1.5% and 1.6% were individually diagnosed and treated for BRD, diarrhea, arthritis and otitis, respectively. Overall, 5.7% of the calves died and the mortality risk was higher in the first weeks after arrival. Calves that experienced one BRD episode showed a 8.2 kg reduction in HCW, a lower fat cover and an increased mortality risk (hazard ratio (HR) = 5.5), compared to calves which were not individually diagnosed and treated for BRD. With an increasing number of BRD episodes, these losses increased dramatically. Additionally, calves, which experienced multiple BRD episodes, were more likely to have poor carcass quality and an undesirable red meat color at slaughter. Arthritis increased the mortality risk (HR = 3.9), and reduced HCW only when associated with BRD. Otitis did only increase the mortality risk (HR = 7.0). Diarrhea severely increased the mortality risk (HR = 11.0), reduced HCW by 9.2 kg on average and decreased carcass quality. Conclusions Despite the massive use of group and individual treatments to alleviate the most prevalent health issues at the fattening period, the effects of BRD, diarrhea, otitis and arthritis on survival and performance are still considerable, especially in cases of chronic pneumonia with or without arthritis. Controlling calf health by effective preventive and therapeutic strategies and in particular the prevention of chronic BRD is key for the profitability of veal operations.

Abstract
The study aimed at assessing the prevalence of poor rumen development, presence of rumen plaques, rumen papillae hyperkeratinization, and abomasal lesions in veal calves and to investigate risk factors for their occurrence at the farm level. Within a wide cross-sectional study, a sample of 170 veal farms representative of the European veal meat production systems was considered in the 3 major producing countries (99 in the Netherlands, 47 in France, and 24 in Italy). An average of 59 ± 10 (SD) rumens and abomasa belonging to calves from a single batch per farm were inspected at the abattoir by trained observers to assess the incidence of these gastrointestinal disorders. Potential risk factors for their occurrence related to farm management, housing, and to the feeding plan were obtained by a questionnaire submitted to the stockperson. Prevalence of poor rumen development (almost no papillae present), rumen plaques, and hyperkeratinization were 60.4, 31.4, and 6.1% of rumens, respectively, whereas abomasal lesions in the pyloric area were recorded in 74.1% of abomasa. Independent variables related to the feeding system confirmed to be the main risk factors for the occurrence of gastrointestinal disorders in veal calves. However, additional risk sources for each given problem were identified among housing and management variables. The provision of a low amount of solid feed (≤ 50kg of dry matter/head per cycle) was a relevant risk for rumen underdevelopment. Rumen wall alterations (plaques and hyperkeratinization) and abomasal lesions were instead associated with the administration of large quantities of solids (151-300 kg of dry matter/head per cycle) in calves receiving milk replacer during the entire fattening cycle. Among the types of solid feed, cereal grain acted as a preventive measure for low rumen development, whereas it was a risk factor for the occurrence of rumen plaques, papillae hyperkeratinization, and abomasal lesions. Some housing and management options adopted to improve veal calf welfare (i.e., higher space allowance and use of heating) were associated with lower risk for gastrointestinal disorders.

Abstract
The experiment was designed to evaluate the effects of housing system and short-term transportation on the pituitary and adrenal response and on blood progesterone concentrations of beef cattle. Since the use of steroid hormones in farm animals has been banned in the EU (Council Directive 96/22/EC), it seems important to study the possible modifications in serum progesterone concentrations induced by stress in cattle. Thirty-two, 6 months old male Piedmontese beef cattle (16 reared in a littered loose house, Group A, and 16 housed in a littered tying stall barn, Group B) were blood sampled at T1 (6 months old), T2 (12 months old), T3 (18 months old, before transportation to the slaughterhouse) and T4 (after transportation to the slaughterhouse) in order to measure hormonal concentrations and lymphocyte glucocorticoid (GR) and β-adrenergic (β-AR) receptor concentrations. Circulating hormone concentrations were measured using commercial radioimmunoassay kits, whereas lymphocyte receptor density was determined through binding assays. In beef cattle housed in tie stall barn a significant increase in serum cortisol concentration was observed at T3, whereas there was no effect of the housing system on blood progesterone concentrations. Short-term transportation caused a significant increase in blood cortisol and catecholamine concentrations in both groups, whereas lymphocyte GR and β-AR significantly decreased in Group A. Our data confirm the activation of the hypothalamic-pituitary-adrenal axis and the catecholaminergic system in short-term transportation and suggest that the stress-induced increase in circulating progesterone concentrations does not exceed the limit established by pending legislation.

Abstract
Illegal steroid administration to enhance growth performance in veal calves has long been, and still is, a serious issue facing regulatory agencies. Over the last years, stating undisputable markers of illegal treatment has become complex because of the endogenous origin of several anabolic steroids. Knowledge on the origin of an analyte is therefore of paramount importance. The present study shows the presence of steroid analytes in wooden crates used for housing veal calves. For this purpose, an analytical procedure using accelerated solvent extraction (ASE(R)), solid-phase extraction (SPE) and ultra-high performance liquid chromatography coupled to triple quadrupole mass spectrometry (U-HPLC-MS-MS) is developed for the characterisation of androstadienedione (ADD), boldenone (bBol), androstenedione (AED), beta-testosterone (bT), alpha-testosterone (aT), progesterone (P) and 17alpha-hydroxy-progesterone (OH-P) in wood samples. In samples of wooden crates used for housing veal calves, ADD, AED, aT and P could be identified. Using the standard addition approach concentrations of these analytes were determined ranging from 20 +/- 4 ppb to 32 +/- 4 ppb for ADD, from 19 +/- 5 ppb to 44 +/- 17 ppb for AED, from 11 +/- 6 ppb to 30 +/- 2 ppb for aT and from 14 +/- 1 ppb to 42 +/- 27 ppb for P, depending on the sample type. As exposure of veal calves to steroid hormones in their housing facilities might complicate decision-making on illegal hormone administration, inequitable slaughter of animals remains possible. Therefore, complete prohibition of wooden calf accommodation should be considered.
