Abstract
The aim of this investigation was to prepare two solid mixtures containing a soluble polymorph of (+)-catechin and mucic (MUC) or tartaric (TAR) acids as new leavening agents. The solid mixtures were based on a polymorph of (+)-catechin, characterized through Powder X-ray Diffraction (PXRD) analysis and assayed in in vitro antioxidant and solubility assays. The dough samples were studied by dynamic rheological tests, while muffins were studied through Headspace Solid-Phase Microextraction (HS-SPME)/ Gas Chromatography-Mass Spectrometry (GC-MS) analysis to identify volatile compounds, in vitro tests to evaluate antioxidant properties, and sensory analyses. TAR powder showed a solubility in water almost one order of magnitude increased with respect to commercial (+)-catechin (40.0 against 4.6 mg mL-1) and increased antioxidant performances. In particular, TAR showed total phenolic content (TPC) and total antioxidant capacity (TAC) values of 0.0298 ± 0.021 and 0.0081 ± 0.0009 meq CT/g, while MUC showed better results in terms of 2,2-diphenyl-1-picrylhydrazyl) acid (DPPH) and 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid (ABTS), 0.518 ± 0.015 and 0.112 ± 0.010mg/mL, respectively. MS analysis identified different compounds derived from the lipid oxidation process. Muffins obtained using both powders showed interesting outcomes regarding dough process and appreciable appearance/olfactory/taste/texture profiles. Muffins obtained from TAR-based mixture showed also a total phenolic content of 0.00175 meq CT/g muffin, and almost two times improved TAC and scavenger activity against DPPH radical. The formulated powders could be used as suitable health-promoting ingredients in the food industry.

Abstract
Hydration states of many self-assemblies directly relate to their structures and functions. Here, we use Raman multivariate curve resolution (Raman-MCR) assisted by differential scanning calorimetry and nuclear magnetic resonance to explore the hydration properties of aggregates formed by three cationic ammonium surfactants, trimethylene-1,3-bis(dodecyldimethylammonium bromide) (12-3-12(Br)2), didodecyldimethylammonium bromide (DDAB), and dodecyltrimethylammonium bromide (DTAB). For 12-3-12(Br)2, the transitions from spherical to rodlike and wormlike micelles lead to about 20% and 60% dehydration and gradually weaken water tetrahedral order and H-bond in hydration shells for both headgroup and hydrophobic chain. As to DDAB, unilamellar vesicles contain two kinds of hydration water species, but multicompartment vesicles exhibit decreased water order and weaker H-bond. DTAB only forms spherical micelles and its hydration structure is similar to that of the 12-3-12(Br)2 spherical micelles. This work provides a basis to explore the hydration states of complex biological self-assemblies.

Abstract
In order to obtain new functional soft systems for use as templating agents for the construction of functional mesostructured materials, the dynamic ordered soft systems formed by a hydrophilic ionic iridium(III) complex (IrPa) embedded into two different concentration F127-water mixtures have been investigated. To this aim, combined spectral and time-resolved photophysical techniques and rheological methods have been employed. The position of the chromophore inside the micellar, cubic and hexagonal phases of the F127 polymeric neutral surfactant in water was effectively determined. The hydrophilic character of the iridium(III) complex chosen allowed preferential functionalization of the F127 corona in the micellar and cubic phases.

Abstract
Cationic liposomes have been extensively studied from the experimental and theoretical standpoints, motivated both by their fundamental interest and by potential applications in drug delivery and gene therapy. However, a detailed understanding of the nature of interactions within mixed bilayers containing cationic gemini surfactants is still lacking. This work focuses on the structural and dynamic properties of DODAB membranes in the presence of dicationic gemini surfactants. A thermodynamic characterization of the phase transitions in the mixed systems has been carried out by differential scanning calorimetry, while insight into the molecular interactions in the bilayer has been provided by molecular dynamics. For this purpose, variations in the gemini spacer and tail length, as well as in the respective molar fraction, have been included in both experimental and simulation studies. The results indicate that the influence of cationic gemini surfactants upon the thermotropic behavior and degree of order of DODAB structures is controlled by a complex interplay between charge density, conformation and hydrophobic effects, for which a detailed rationale is provided.

Abstract
The interactions between bovine serum albumin and cationic gemini surfactants were investigated as a function of concentration, under different pH conditions. The investigation deals with dielectric relaxation, dynamic light scattering, zeta-potential, circular dichroism, and UV spectroscopy. The interactive behavior of the anionic form is quite different from the cationic species. It indicates that protein-surfactant interactions are mostly electrostatic in nature and depend on the state of charge of bovine serum albumin. The results indicate the presence of both hydrophobic and electrostatic contributions in the interactions of gemini with bovine serum albumin. Comparison of dynamic light scattering, dielectric relaxation, electrophoretic mobility, and optical circular dichroism allows drawing some preliminary hypotheses on the different contributions to surfactant binding and supports former studies on the formation of complexes between the bovine serum albumin and the above species.

Abstract
Aqueous mixtures containing a homopolymer, poly(vinylpyrrolidone) (PVP), or a hydrophobically modified graft copolymer, HM-pullulan, (PULAU9, where 9 stands for the nominal substitution degree), and different Gemini surfactants have been investigated at 25.0 degrees C. A wide variety of experimental conditions were addressed by changing the amount of polymer and of surfactant. The Gemini surfactants were synthesized, purified, and characterized by routine methods. They differ from each other in polar head groups (two sulfonate-, two quaternary ammonium-, or two arginine-based groups), in alkyl chain length (11 or 12 carbon atoms), and in the distance between the polar head groups. The spacers consist of 2, 3, and 6 methylene units or 3 oxyethylene units. Surface activity and solution calorimetry measurements yield some physicochemical features inherent to micelle formation and polymer-surfactant interactions. The data are supported by ionic conductivity, detecting the critical thresholds and quantifying the modifications in binding associated with critical association (CAC) and micelle formation (CMC*). The Gibbs energy of transfer from the micelles to a polymer-binding site, DeltaGtrans, was evaluated from the CAC/CMC* ratios versus the amount of added polymer. A similar procedure determined the enthalpy of transfer, DeltaHtrans. DeltaGtrans decreases with added polymer, whereas DeltaHtrans becomes more negative on increasing the amount of polymer in the medium. According to the selected data presented here, cationic Geminis do not interact with PVP, while significant interactions have been observed in other surfactants. In mixtures with PULAU9, the interaction is significant for all Geminis. This effect is due to interactions between the surfactants and the hydrophobic alkyl groups on the main polymer chain. The pendent groups facing away from the polysaccharide chain act as binding sites for aggregates onto such polymers.

Abstract
The sodium salt of N,N'-hexane-bis (1-dodecen-1-ylsuccinamic acid) is an anionic dimeric (gemini) surfactant. A flooding penetration scan of this surfactant in water demonstrates a sequence of lyotropic phases at room temperature (20 degrees C). Preparation of surfactant-water mixtures has resulted in a phase diagram which shows that the same sequence of phases exists up to 100 degrees C. These phases are tentatively assigned to the sequence: micellar to normal hexagonal (H1) to cubic (V1) to lamellar (Lalpha). The interfacial tension at the n-heptane/water interface has been determined in the presence of this surfactant. The surfactant head group area at the interface is large (2.8+/-0.3 nm2 at 298 K) and the interfacial tension above the critical micelle concentration is low (7 mN m(-1)), but considerably higher than the ultra-low values that have been reported for cationic dimeric surfactants at various hydrocarbon-water interfaces.

Abstract
The lyotropic phase behavior for the neat cationic gemini surfactants alkanediyl-alpha,omega-bis(alkyldimethylammonium bromide), designated here as m-s-m, has been investigated previously in several works, but the thermotropic behavior has not been well characterized. Only for 15-s-15 and 14-s-12 have thermotropic liquid crystals (Lc) been reported. In this work, for the first time and in contrast to previous reports, we observe thermotropic Lc formation for m-2-m geminis with m = 12, 14, 16, and 18, by means of polarizing microscopy and differential scanning calorimetry (DSC). Furthermore, we investigate mixtures of m-2-m and SDS, m-2-m Br2.2SDS, which exhibit crystal-to-crystal phase transitions at lower temperature and, at high temperature, smectic Lc phases. The transition temperatures and enthalpies for Lc phases, obtained by DSC, present clear trends upon increase of the chain lengths. Combining Langmuir film experiments, possible lamellar arrangements for the different phases are tentatively discussed.
