Abstract
Podolian cattle is an autochthonous breed well adapted to the harsh semi-arid environments of the Southern Italy regions; the extensive rearing system used for these indigenous animals is based on grazing on spontaneous pastures, such as grasslands or wood pastures These grazing systems respect animal welfare and enrich animal products with characteristics closely related to the feeding system and the farming environment. The aim of the present study was to characterize the nutritional value of a forage crop and a wood-pasture and to evaluate the effects of grazing by Podolian young bulls on the performances and meat quality in relation to the age at slaughter (14 or 18 months) and to the ageing time of meat (3, 9 or 14 days). The metabolizable energy and the gas production were greater in April and June for both pasture systems. Young bulls raised on the grassland showed greater slaughter weights (p < 0.05) as compared to those fed on the woodland system, at both the slaughtering ages. The Warner Bratzler Shear (WBS) force values for raw and cooked meat were not influenced by the pasture system but they significantly (p < 0.01) decreased in relation to the ageing time in all the groups. Ageing markedly (p < 0.05) increased the malondialdehyde (MDA) concentration from 3 to 14 days of storage, regardless of the pasture system and the slaughtering age. The n-6/n-3 polyunsaturated fatty acid ratio of meat was markedly lower in grassland animals, regardless of the age of slaughter. In conclusion, 18 months old grassland beef showed better performances and yield of meat cuts. Ageing for 9 days positively affected meat WBS without increasing MDA concentration.

Abstract
In the last decades, western Countries increased their interest in innovative products like donkey milk and other activities carried out with donkeys (onotherapy, onotourism). Donkey milk is considered a high-added-value food and is very similar to human breast milk. It is also used as an ingredient in cosmetics. The growing public interest suggests the need for a pilot study on the sustainability of donkey milk production, according to Life Cycle Assessment (LCA) criteria. Milk was used as the Declared Functional Unit (DFU) and two different models were described, a Real Scenario Model (RSM, i.e. a farm with its declared milk yield), and an Increased Milk Production Model (IMPM, i.e., the same farm with theoretically increased milk yield). Allocation was applied both in RSM and IMPM; thus, different values of impact categories, i.e., Global Warming Potential (GWP, kg CO2 equivalents), Acidification Potential (ACP, g SO2 equivalents) and Eutrophication Potential (EUP, g PO43-) were observed. GWP improved after mass allocation and showed the lowest equivalents in IMPM, compared to economic and reference allocation criterion (P < 0.05). In RSM, allocations affected GWP in a different way: the smaller size of the DFU resulted in the largest estimation of CO2 equivalents (P < 0.05) for reference allocation, whereas the mass allocation estimates were lower than with economic allocation (P < 0.05). ACP and EUP followed the same trends. No differences were found in IMPM results across the three allocation methods used. Moreover, mass allocation values recorded in RSM did not significantly differ from IMPM. ACP and EUP of RSM improved after economic allocation, although they were less sustainable (P < 0.05) than all IMPM values and RSM equivalents after mass allocation (P < 0.05). As expected, the theoretical model with increased milk yield improved the sustainability of the system. Both scenarios were affected by allocation criteria. In RSM, the economic and mass allocations described a representative scenario where donkey meat contributed to subtracting equivalents from milk (the main product). The present paper is a pilot study estimating for the first time the environmental impact of donkey milk production, with the aim to stimulate further research.

Abstract
Local and typical agri-food products (TAP) are receiving increasing interest from consumers, since they are perceived as genuine, healthy and tasty because they are produced under environmentally friendly farming systems. This has aroused a renewed interest among breeders from the inner regions of Italy and Greece toward autochthonous animal populations, such as Greek Katerini and Italian Podolian cattle. Twenty animals were used, divided into two homogeneous groups of ten subjects per each genotype. Animals were fed only on natural pasture and were slaughtered at 18 months of age. Meat from the Katerini young bulls showed a lower a* value, higher moisture and was leaner, and its fat was richer in n-3 fatty acids and had a better n-6/n-3 ratio. Meat from Podolian young bulls was more tender and showed a higher redness value and a significantly greater MUFA concentration. This preliminary study provides a contribution to the local actors and relevant authorities to develop a conservation program for the endangered Katerini breed based on the nutritional and sensorial characterization of its products.

Abstract
Pasture-based milk presents several advantages over milk from intensive industrial farming in terms of human health, the environment, animal welfare, and social aspects. This highlights the need for reliable methods to differentiate milk according to its origin on the market. Here, we explored whether miRNA profiles could serve as a marker of milk production systems. We compared levels of previously described miRNAs in milk from four production systems (altogether 112 milk samples): grazing, zero grazing, grass silage or corn silage. Total RNA was extracted from the fat phase, and miRNAs levels were quantified by real-time quantitative PCR. The levels of the miRNAs bta-miR-155 and bta-miR-103 were higher in the grazing system than in corn silage farms. The levels of bta-miR-532, bta-miR-103 and bta-miR-7863 showed differences between different farm managements. The miRNAs bta-miR-155 and bta-miR-103 were predicted to participate in common functions related to fat metabolism and fatty acid elongation. All four differentially expressed miRNAs were predicted to participate in transport, cell differentiation, and metabolism. These results suggest that the dairy production system influences the levels of some miRNAs in milk fat, and that bta-miR-155 and bta-miR-103 may be potential biomarkers to identify milk from pasture-managed systems.

Abstract
We assessed the effects of inclusion of chickpea from 24 to 21%, as feed basis, in diets for organically reared bulls. Sixteen young bulls (270 ± 6.4 days of age; 246 ± 0.13 kg in weight) belonging to a native Italian breed (Maremmana) were randomly assigned to two dietary treatments. The control diets were based on mixed grass hay, maize meal, and barley meal. In the experimental diets, barley was equally substituted by locally produced chickpea. Animals were weighed every 2 weeks until the prefixed slaughtering weight (630 kg). Plasma metabolites were measured at the 1st, 7th, and 14th month of the experiment. Chemical composition, colour, shear force, and water holding capacity of meat were assessed on Longissimus thoracis et lumborum 7 days after slaughter. The chickpea-fed animals showed a significantly greater average daily gain (1064 vs. 1168 kg/day), a shorter growing phase (364 vs. 335 days), and a better carcass conformation. Plasma metabolites and meat quality were not influenced by the treatments. The better growth performance and carcass quality of the chickpea fed bulls resulted in a higher economic profit for the chickpea-based diets. Results suggest that chickpea may allow sustainable performance improvement of native breeds within their traditional farming systems.

Abstract
Housing systems and environmental features can influence beef cattle welfare. To date, little information has been synthesized on this topic. The aim of this scoping review was to examine the relationship between housing and welfare status, so that beef cattle producers and animal scientists can make informed decisions regarding how their housing choices could impact beef cattle welfare. Housing features were categorized by floor type, space allowance and shade availability, as well as the inclusion of enrichment devices or ventilation features. Evaluation of space allowances across feedlot environments determined behavioral and production benefits when cattle were housed between 2.5 m2 to 3.0 m2 per animal. Over 19 different flooring types were investigated and across flooring types; straw flooring was viewed most favorably from a behavioral, production and hygiene standpoint. Veal calves experience enhanced welfare (e.g., improved behavioral, physiological, and performance metrics) when group housed. There is evidence that the implementation of progressive housing modifications (e.g., shade, environmental enrichment) could promote the behavioral welfare of feedlot cattle. This review presents the advantages and disadvantages of specific housing features on the welfare of beef cattle.

Abstract
Simple Summary In European organic dairy farms, the use of grazing appears to be a controversial topic. The laws that regulate the sector do not indicate in an incontrovertible way the obligation to provide grazing; accordingly, organic farmers sometimes allow dairy cows access to only an open air fenced area rather than to a grazing pasture. This work confirms the validity and benefits of grazing, compared to access to an outdoor space, in terms of the behaviour and milk production of dairy cows. Abstract This study compared the effects of a short daily grazing time with those of permanent free-stall housing on the behaviour, oxidative status, immune response, and milk production of organically reared cows. During a 63-day period, two homogeneous groups of eight lactating Brown cows were allocated to either housing (H) in a free-stall building for 24 h/day. Feeding was based on a total mixed ration or grazing (G) on barley grass for 5 h/day, and housing in a free-stall structure with feeding was based on the same total mixed ration offered to the H group. With regard to behaviour, H cows spent more time idling, walking, drinking, and self-grooming, whereas G cows showed a greater intent to eat and interact socially. Moreover, G cows exhibited slightly higher reactive oxygen metabolites and similar biological antioxidant potential concentrations than the H group, which indicates that short grazing resulted in an almost negligible increase in oxidative stress and an unchanged antioxidant capacity. Skin tests, performed by injecting phytohemoagglutinin intradermally, indicated that G cows had thicker skin than H cows at the end of the trial, an index of a better cell-mediated immune response. Grazing did not affect milk yield but improved milk quality in terms of an increase in fat and a reduction in urea content, somatic cell count, and total microbial count. Milk from G cows was richer in saturated fatty acids, likely because of the contribution of palmitic acid present in the grazed barley grass, and also showed higher contents of some healthy fatty acids, such as rumenic acid and α-linolenic acid, and a lower omega-6/omega-3 ratio. These results show that including a short grazing time in the diets of organic dairy cows does not have negative consequences for milk production and contributes to improved milk quality as well as to a more efficient immune response in the cows.

Abstract
Sixty male Small-tailed Han sheep (initial body weight: 42.5 ± 4.1 kg) were assigned randomly and averagely into four groups to evaluate effects of flavonoids extracted from Allium mongolicum Regel (AMR) on meat quality and composition of fatty acids related to flavor in longissimus dorsi muscle of lambs. Lambs of four groups were fed a basal control diet (C), and basal diet + three different amounts of flavonoids extracted from the AMR; those were 11 mg kg−1 (Flav 11), 22 mg kg−1 (Flav 22), or 33 mg kg−1 (Flav 33), respectively. Dressing percentage, loin eye area, cooking loss, and pressing loss were affected by treatments (P < 0.05). Percentage of intramuscular fat, the concentrations of eicosapentaenoic acid, C18:0, total saturated fatty acids, monounsaturated fatty acid, and 4-methyloctanoic acid in longissimus dorsi muscle were changed by treatments (P < 0.05). Addition of AMR to diet improved the meat quality and had favorable effects on fatty acid composition related to meat flavor in longissimus dorsi muscle.

A meta-analysis of nutrient intake, feed efficiency and performance in cattle grazing on tropical grasslands. Animal 2015; 9:973-82. Abstract
It is essential to quantify the potential of tropical grasslands to allow significant feed efficiency for grazing livestock in controlled conditions such as at pasture. We conducted a quantitative analysis of published studies reporting the experimental results of average daily gains (ADG) and diet characteristics obtained specifically under grazing conditions (17 publications and 41 experiments), which have been less studied compared with controlled conditions in stalls. The database was analyzed to determine the average and range of values obtained for ADG (g/kg BW), dry matter digestibility, intake (DMI) and digestible DMI (DDMI, g/kg BW) and feed conversion efficiencies (FCE), as well as to predict the response of these parameters to the main strategies investigated in the literature - that is, mainly the stocking rate (SR) and the concentrate intake (CI). The ADG reached 1.2 kg BW per day and was directly linked to DDMI (ADG=-1.63+0.42 DDMI -0.0084 DDMI2, n=90, r.m.s.e=0.584, R 2=0.93). The DDMI, which was representative of the nutrient input, was driven mainly by DMI rather than dry matter digestibility, whereas these two parameters did not correlate (r=0.068, P=0.56). The average global FCE (0.11 g ADG/g DDMI) showed a greater association with the metabolic FCE (0.17 g ADG/g DMI) than the digestive FCE (0.62). The CI (g DM/kg BW) increased ADG (ADG=2376+CI 56.1, n=16, r.m.s.e.=441, R 2=0.95). The SR expressed as kg BW/ha decreased the individual ADG by 1.19 g/kg BW per additional ton of BW/ha, whereas the global ADG calculated per ha increased by 0.57 per additional ton BW/ha. When the SR was expressed as kg BW/ton DM and per ha rather than as kg BW/ha, the impact on the individual ADG decreased by 0.18 or 0.86 g per additional ton BW/ha, depending on the initial BW of the cattle. These results provide a better view of the potential performance and feeding of cattle in tropical grasslands. The results provide an improved quantification of the relationships between diet and performance, as well as the overall quantitative impact of SR and supplementation.

Abstract
The purpose of the present study was to assess the effect of grazing on meat quality of young Podolian bulls by using 6 free-ranging (FR) and 6 confined (CON) animals slaughtered at 18 mo of age (Exp. 1). A second experiment (Exp. 2) was performed the subsequent year where the age at slaughter was 15 mo of age (6 animals/group). Quantitative descriptive sensory analysis, water-holding capacity (WHC; thawing, centrifugation, and cooking losses), and shear force (only in Exp. 2) were evaluated on LM, aged 8 d. Both experiments showed that CON animals produced beef with greater overall beef flavor (P < 0.01 and P < 0.05 in Exp. 1 and 2, respectively) and odor intensities (P < 0.10 and P < 0.05 in Exp. and 1 and 2, respectively) and increased malondialdehyde contents (P < 0.01 and P < 0.05 in Exp. 1 and 2, respectively). In Exp. 2 beef from FR bulls showed higher sensory tenderness as compared with CON bulls (P < 0.05) and a lower shear force (P < 0.05). In Exp. 1, beef obtained from FR bulls showed lower centrifugation and greater thawing losses compared with samples from bulls from group CON (P < 0.05) whereas rearing system did not affect any WHC variables in Exp. 2. The results obtained from the 2 experiments were generally consistent. The different results occasionally observed (e.g., sensory tenderness and WHC) is attributed to the different ages at slaughter used in the 2 experiments (18 and 15 mo). In particular, at an earlier age at slaughter (15 mo) the effect of FR on meat quality was beneficial on sensory tenderness and mechanical properties. Therefore, given the additional costs of maintaining the bulls for another 3 mo when slaughtered at 18 mo of age, a reduced age at slaughter of FR bulls may be suggested to avoid the decrement of herbage mass availability inducing the consumption of high amounts of concentrate.
