Abstract
The aim of this study was to infer the effects of heat stress (HS) of dams during late gestation on direct and maternal genetic parameters for traits related to milk production and milk quality parameters (90,558 records) in Italian Brown Swiss cattle (12,072 cows in 617 herds). Daily average temperature-humidity indices (THI) during the last 56 d of pregnancy were calculated, using the climate data from the nearest public weather station for each herd. Heat load effects were considered as the average across the entire periods considering a thermoneutrality condition for data below the THI 60. For parameter estimation a random regression model using the second-order Legendre polynomial regression coefficient for THI considering both animal and maternal effect for heat load. Direct heritability increased sharply from THI 60 to 65, then decreased gradually up to THI ∼72, and sharply thereafter. Maternal heritability showed a different trend, with values close to 0 up until to THI 65 and slightly increasing toward extreme THI values. The study suggests a lower threshold of THI 60 for the onset of HS. Higher heritability values indicate greater selective efficiency in the THI range of 65 to 70, even if a higher standard deviation value have been detected. The effects of high THI during intrauterine life varied among traits with different heritability levels. Genetic correlations for milk, fat, and protein content at 60 THI with increasing value of environmental variable, remained constant (∼0.90) until THI >75, where they slightly decreased (∼0.85). Fat and protein yields, as well as milk and energy-corrected milk, showed correlations dropping to 0.80 around THI 67 to 68 and stabilizing between 0.75 and 0.85 at extreme THI values. Maternal component correlations dropped close to zero, with negative values for protein content at THI 65 to 70. Antagonism between direct and maternal components was stronger for intermediate THI values but less divergent for extremes. Genotype by environment interaction was observed, indicating the selection of resilient animals would be theoretically possible. In the future, the application of climate variables in selection schemes first should take into account the dimensions of the genetic correlations to be able to decide between the simple inclusion of the environmental effect in the statistical models, rather than a real parallel genetic evaluation.

Abstract
In the last decades, western Countries increased their interest in innovative products like donkey milk and other activities carried out with donkeys (onotherapy, onotourism). Donkey milk is considered a high-added-value food and is very similar to human breast milk. It is also used as an ingredient in cosmetics. The growing public interest suggests the need for a pilot study on the sustainability of donkey milk production, according to Life Cycle Assessment (LCA) criteria. Milk was used as the Declared Functional Unit (DFU) and two different models were described, a Real Scenario Model (RSM, i.e. a farm with its declared milk yield), and an Increased Milk Production Model (IMPM, i.e., the same farm with theoretically increased milk yield). Allocation was applied both in RSM and IMPM; thus, different values of impact categories, i.e., Global Warming Potential (GWP, kg CO2 equivalents), Acidification Potential (ACP, g SO2 equivalents) and Eutrophication Potential (EUP, g PO43-) were observed. GWP improved after mass allocation and showed the lowest equivalents in IMPM, compared to economic and reference allocation criterion (P < 0.05). In RSM, allocations affected GWP in a different way: the smaller size of the DFU resulted in the largest estimation of CO2 equivalents (P < 0.05) for reference allocation, whereas the mass allocation estimates were lower than with economic allocation (P < 0.05). ACP and EUP followed the same trends. No differences were found in IMPM results across the three allocation methods used. Moreover, mass allocation values recorded in RSM did not significantly differ from IMPM. ACP and EUP of RSM improved after economic allocation, although they were less sustainable (P < 0.05) than all IMPM values and RSM equivalents after mass allocation (P < 0.05). As expected, the theoretical model with increased milk yield improved the sustainability of the system. Both scenarios were affected by allocation criteria. In RSM, the economic and mass allocations described a representative scenario where donkey meat contributed to subtracting equivalents from milk (the main product). The present paper is a pilot study estimating for the first time the environmental impact of donkey milk production, with the aim to stimulate further research.

Abstract
The aim of the present study was to evaluate the effects of marine microalgae (Dunaliella salina) as a food additive on biogas (BG), methane (CH4), carbon monoxide (CO), and hydrogen sulfide (H2S) production kinetics, as well as in in vitro rumen fermentation and the CH4 conversion efficiency of different genotypes of maize (Zea mays L.) and states of forage. The treatments were characterized by the forage of five maize genotypes (Amarillo, Montesa, Olotillo, Tampiqueño, and Tuxpeño), two states of forage (fresh and ensiled), and the addition of 3% (on DM basis) of microalgae (with and without). The parameters (b = asymptotic production, c = production rate, and Lag = delay phase before gas production) of the production of BG, CH4, CO, and H2S showed an effect (p < 0.05) of the genotype, the state of the forage, the addition of the microalgae, or some of its interactions, except for the time in the CO delay phase (p > 0.05). Moreover, the addition of microalgae decreased (p < 0.05) the production of BG, CH4, and H2S in most of the genotypes and stages of the forage, but the production of CO increased (p < 0.05). In the case of fermentation characteristics, the microalgae increased (p < 0.05) the pH, DMD, SCFA, and ME in most genotypes and forage states. With the addition of the microalgae, the fresh forage from Olotillo obtained the highest pH (p < 0.05), and the ensiled from Amarillo, the highest (p < 0.05) DMD, SCFA, and ME. However, the ensiled forage produced more (p < 0.05) CH4 per unit of SFCA, ME, and OM, and the microalgae increased it (p < 0.05) even more, and the fresh forage from Amarillo presented the highest (p < 0.05) quantity of CH4 per unit of product. In conclusion, the D. salina microalga showed a potential to reduce the production of BG, CH4, and H2S in maize forage, but its effect depended on the chemical composition of the genotype and the state of the forage. Despite the above, the energy value of the forage (fresh and ensiled) improved, the DMD increased, and in some cases, SCFA and ME also increased, all without compromising CH4 conversion efficiency.

Abstract
Studies have shown a wide variety of parasites that infect horses, causing major gastrointestinal damage that can lead to death, and although the main method of control has been synthetic anthelmintics, there are parasites that have developed resistance to these drugs. For generations, plants have been used throughout the world as a cure or treatment for countless diseases and their symptoms, as is the case of Moringa oleifera, a plant native to the western region. In all its organs, mainly in leaves, M. oleifera presents a diversity of bioactive compounds, including flavonoids, tannins, phenolic acids, saponins, and vitamins, which provide antioxidant power to the plant. The compounds with the greatest antiparasitic activity are tannins and saponins, and they affect both the larvae and the oocytes of various equine gastrointestinal parasites. Therefore, M. oleifera is a promising source for the natural control of gastrointestinal parasites in horses.

Abstract
The use of feed additives with antioxidant and immune response modulatory activity could be a useful strategy in suckling calves to reduce morbidity and mortality. This strategy is based on several feed additives tested for these purposes. The aim of the paper is the examination of a commercial feed additive for adult cows for use in calves, with and without nucleotide supplementation. Seventy-five Holstein Friesian male calves were divided in 3 groups, with each calf randomly assigned to a group according to birth order. All calves received 2 L of pooled colostrum within 2 h of birth. The commercial feed supplement group was orally administered with 5 g/head of Decosel (dried brewer's yeast lysate (Saccharomyces cerevisiae), brewer's yeast walls (Saccharomyces cerevisiae), diatoms, spirulina, barley flour, calcium carbonate; Agroteam srl, Torrimpietra, Italy) and the nucleotides + commercial feed supplement group was orally administered with 5 g/head of an additive containing 2.5 g of Decosel and 2.5 g of nucleotides once daily from birth to 25 d. The control group was orally administered 20 mL of fresh water/head once daily. Calves that received the supplement and the nucleotides showed lower rates of protein and metabolizable energy conversion, with longer villi and greater crypt depth in duodenum. Moreover, the commercial feed supplement alone increased antioxidant capacity [2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) and ferric-reducing antioxidant power] in plasma some activity of antioxidant liver enzymes, and peripheral blood mononuclear cell viability after in vitro concanavalin A and H2O2 stimuli. Dietary supplementation with a commercial feed supplement containing yeast products (yeast cell walls and hydrolyzed yeast) and microalgae enhanced the redox balance and gut morphology in calves, allowing calves to improve their immune response, increasing resistance to stress. Moreover, these beneficial effects were strongly potentiated when dietary nucleotides were added to the supplement.

Abstract
Due to its geographical position and a highly variable orography, Italy is characterized by several climatic areas and thus, by many different dairy cow farming systems. Brown Swiss cattle, in this context, are a very appreciated genetic resource for their adaptability and low metabolic requirement. The significant heterogeneity in farming systems may consist of genotype by environment (G × E) interactions with neglected changes in animals' rank position. The objective of this study was to investigate G × E for heat tolerance in Brown Swiss cattle for several production traits (milk, fat, and protein yield in kilograms; fat, protein, and cheese yield in percentage) and 2 derivate traits (fat-corrected milk and energy-corrected milk). We used the daily maximum temperature-humidity index (THI) range, calculated according to weather stations' data from 2008 to 2018 in Italy, and 202,776 test-day records from 23,396 Brown Swiss cows from 639 herds. Two different methodologies were applied to estimate the effect of the environmental variable (THI) on genetic parameters: (1) the reaction norm model, which uses a continuous random covariate to estimate the animal additive effect, and (2) the multitrait model, which splits each production pattern as a distinct and correlated trait according to the first (a thermal comfort condition), third (a moderate heat stress condition), and fifth (a severe heat stress condition) mean THI value quintile. The results from the reaction norm model showed a descending trend of the additive genetic effect until THI reached the value of 80. Then we recorded an increase with high extreme THI values (THI 90). Permanent environmental variance at increasing THI values revealed an opposite trend: The plot of heritability and the ratio of animal permanent environmental variance to phenotypic variance showed that when the environmental condition worsens, the additive genetic and permanent environmental component for production traits play a growing role. The negative additive genetic correlation between slope and linear random coefficient indicates no linear relationship between the production traits or under heat stress conditions, except for milk yield and protein yield. In tridimensional wireframe plots, the extreme margin decreases until a minimum of ∼0.90 of genetic correlation in the ECM trait, showing that the magnitude of G × E interaction is greater than the other traits. Genetic correlation values in Brown Swiss suggest the possibility of moderate changes in animals' estimated breeding value in heat stress conditions. Results indicated a moderate G × E interaction but significant variability in sire response related to their production level.

Abstract
The Yucca genus encompasses about 50 species native to North America. Species within the Yucca genus have been used in traditional medicine to treat pathologies related to inflammation. Despite its historical use and the popular notion of its antioxidant and anti-inflammatory properties, there is a limited amount of research on this genus. To better understand these properties, this work aimed to analyze phytochemical composition through documentary research. This will provide a better understanding of the molecules and the mechanisms of action that confer such antioxidant and anti-inflammatory properties. About 92 phytochemicals present within the genus have reported antioxidant or anti-inflammatory effects. It has been suggested that the antioxidant and anti-inflammatory properties are mainly generated through its free radical scavenging activity, the inhibition of arachidonic acid metabolism, the decrease in TNF-α (Tumor necrosis factor-α), IL-6 (Interleukin-6), iNOS (Inducible nitric oxide synthase), and IL-1β (Interleukin 1β) concentration, the increase of GPx (Glutathione peroxidase), CAT (Catalase), and SOD (Superoxide dismutase) concentration, and the inhibition of the MAPK (Mitogen-Activated Protein Kinase), and NF-κB (Nuclear factor kappa B), and the activation of the Nrf2 (Nuclear factor erythroid 2–related factor) signaling pathway. These studies provide evidence of its use in traditional medicine against pathologies related to inflammation. However, more models and studies are needed to properly understand the activity of most plants within the genus, its potency, and the feasibility of its use to help manage or treat chronic inflammation.

Abstract
The objective of this experiment was to evaluate the impact of maize co-ensiling with increasing percentages of MOL forage on the kinetics of biogas, methane (CH4), carbon monoxide (CO) and hydrogen sulfide (H2S) production, as well as the characteristics of ruminal fermentation and CH4 conversion efficiency, using steers (STI) and sheep (SHI) as inoculum sources. With the STI, the inclusion of MOL reduced (linear: p ≤ 0.0199; quadratic: p ≤ 0.0267) biogas production (mL g-1 DM incubated and degraded), CH4 (mL g-1 DM degraded), CO (mL g-1 DM degraded), and H2S (mL g-1 DM incubated and degraded), without affecting (p > 0.05) the parameters (b = asymptotic gas, c = rate of gas production and Lag = initial delay time before gas production) of CH4 and H2S, and the proportion and production of CH4 per kg of dry matter (DM). In addition, with this inoculum, pH, and dry matter degradation (DMD) increased (linear: p ≤ 0.0060), and although short-chain fatty acids (SCFA) and metabolizable energy (ME) decreased (linear: p < 0.0001; quadratic: p ≤ 0.0015), this did not affect (p > 0.05) the CH4 conversion efficiency. Meanwhile, with the SHI, the inclusion of MOL only decreased (linear: p ≤ 0.0206; quadratic: p ≤ 0.0003) biogas per dry matter (DM) degraded and increased (linear: p ≤ 0.0293; quadratic: p ≤ 0.0325) biogas per DM incubated, as well as the production (mL g-1 DM incubated and degraded and g-1 kg DM) and proportion of CH4, and CO per DM incubated and degraded. In addition, it did not impact (p > 0.05) on the CH4 and H2S parameters, and in the H2S by DM incubated and degraded, and although it increased (linear: p ≤ 0.0292; quadratic: p ≤ 0.0325) the DMD, SCFA, and ME, it was inefficient (quadratic: p ≤ 0.0041) in CH4 conversion. It is concluded that regardless of the percentage of MOL, the STI presented the highest values in the production of biogas, CH4, H2S, DMD, SCFA, and ME, and the lowest pH, so it turned out to be the most efficient in CH4 conversion, while with the SHI only the highest production of CO and pH was obtained, and the lowest DMD, SCFA, and ME, so it was less efficient compared to STI.

Abstract
Eighteen dairy Damascus goats weighing 38-45 kg live body weight and aged 3-4 years were divided into three groups according to their body weight, with six goats in each group. Yellow corn grain in their concentrate feed mixture was replaced with mango seeds (MS) at levels of 0% MS in group 1 (G1, control), 20% MS in group 2 (G2), and 40% MS in group 3 (G3). The digestibility coefficients of the organic matter, dry matter, crude fiber, crude protein, ether extract, nitrogen-free extract, and total digestible nutrients increased (P < 0.05) upon feeding MS to G2 and G3. The amounts of dry matter, total digestible nutrients, and digestible crude protein required per 1 kg 3.5% fat-corrected milk (FCM) were lower (P < 0.05) in G2 and G3 vs. G1. Actual milk and 3.5% FCM yield increased (P < 0.05) with the increasing MS dietary level. G2 and G3 had the highest significant (P < 0.05) total solids, total protein, non-protein nitrogen, casein, ash, fat, solids not fat, lactose, and calcium contents compared with G1. Replacing yellow corn grain with MS in G2 and G3 significantly (P < 0.05) decreased the cholesterol concentration and AST activity. Feeding MS increased the concentrations of caprioc, caprylic, capric, stearic, oleic, elaidic, and linoleic acids and decreased the concentrations of butyric, laueic, tridecanoic, myristic, myristoleic, pentadecanoic, heptadecanoic, cis-10-Heptadecanoic, cis-11-eicosenoic, linolenic, arachidonic, and lignoseric acids in the milk fat. The results show that the replacement of corn grain with MS improved the digestibility, milk yield, feed conversion, and economic efficiency, with no adverse effects on the performance of Damascus goats.

Abstract
This review examines the available data regarding the positive effects of microencapsulated essential oils (EOs) on the nutrition, metabolism, and possibly the methane emission of horses. A literature review was conducted on the effect of microencapsulated (EOs) on the health of horses. The information comprises articles published in recent years in indexed journals. The results indicate that mixtures of microencapsulated EOs may be beneficial to equine health due to their antimicrobial and antioxidant activity, as well as their effects on enteric methane production, nutrient absorption, and immune system enhancement. Moreover, encapsulation stabilizes substances such as EOs in small doses, primarily by combining them with other ingredients.

Abstract
Meat processing represents an inevitable part of meat and meat products preparation for human consumption. Both thermal and non-thermal processing techniques, both commercial and domestic, are able to induce chemical and muscle's proteins modification which can have implication on oxidative and sensory meat characteristics. Consumers' necessity for minimally processed foods has paved a successful way to unprecedented exploration into various novel non-thermal food processing techniques. Processing of meat can have serious implications on its nutritional profile and digestibility of meat proteins in the digestive system. A plethora of food processing techniques can potentially induce alterations in the protein structure, palatability, bioavailability and digestibility via various phenomena predominantly denaturation and Maillard reaction. Apart from these, sensory attributes such as color, crispness, hardness, and total acceptance get adversely affected during various thermal treatments in meat. A major incentive in the adoption of non-thermal food processing is its energy efficiency. Considering this, several non-thermal processing techniques have been developed for evading the effects of conventional thermal treatments on food materials with respect to Maillard reactions, color changes, and off-flavor development. Few significant non-thermal processing techniques, such as microwave heating, comminution, and enzyme addition can positively affect protein digestibility as well as enhance the value of the final product. Furthermore, ultrasound, irradiation, high-pressure processing, and pulsed electric fields are other pivotal non-thermal food processing technologies in meat and meat-related products. The present review examines how different thermal and non-thermal processing techniques, such as sous-vide, microwave, stewing, roasting, boiling, frying, grilling, and steam cooking, affect meat proteins, chemical composition, oxidation, and sensory profile.

Abstract
Introduction This study investigated the effects of using sun-dried Azolla (Azolla pinnata) meal (SDAM) protein to replace sunflower meal protein in the diets of Zaraibi goats dams on nutrient digestibility, milk yield, composition, and economics. Method A total of 15 Zaraibi goats (32.23 ± 0.2 kg) were randomly divided into three equal groups, R1, R2, and R3 which were fed based on average milk production. The basal ration was a concentrated feed mixture containing 0, 10, and 20% SDAM which replaced 0, 25, and 50% of sunflower meal protein in the respective groups. Results Nutrient digestibility and feeding values were improved with R3 goats, which had the highest level of azolla (20%) R3 versus R2 and R1 goats. The total volatile fatty acid (TVFA) concentration in the in-rumen liquor was elevated by increasing the level of azolla up to 20% in R3 goats. The results revealed significantly higher (P<0.05) mean milk yield in the SDAM groups in comparison to R1 (1184, 1131 and 1034 respectively). The beneficial effects of the tested groups were observed in milk composition, milk fat, milk protein, and non- fats solids. Whereas the milk fat yield was higher in the SDAM group in comparison with the control group (40.84, 37.20, and 33.92). Ration inclusion of SDAM improved economic feed efficiency (relative feed cost and relative daily profit) and had a significant effect on the yield of milk constituents. In general, using up to a level of 20% SDAM in place of sunflower meal for feeding lactating Zaraibi goats improved milk production, milk fat yield, and cost-benefit ratio. Discussion This study recommended that, inclusion of sun-dried azolla meal up to 20%, as an unconventional feed for Zaraibi dairy goats and offspring, improved milk production and economically feed efficiency.

Abstract
Tannins are polyphenols characterized by different molecular weights that plants are able to synthetize during their secondary metabolism. Macromolecules (proteins, structural carbohydrates and starch) can link tannins and their digestion can decrease. Tannins can be classified into two groups: hydrolysable tannins and condensed tannins. Tannins are polyphenols, which can directly or indirectly affect intake and digestion. Their ability to bind molecules and form complexes depends on the structure of polyphenols and on the macromolecule involved. Tannins have long been known to be an "anti-nutritional agent" in monogastric and poultry animals. Using good tannins' proper application protocols helped the researchers observe positive effects on the intestinal microbial ecosystem, gut health, and animal production. Plant tannins are used as an alternative to in-feed antibiotics, and many factors have been described by researchers which contribute to the variability in their efficiencies. The objective of this study was to review the literature about tannins, their effects and use in ruminant nutrition.

Abstract
Fruit pomace addition to lucerne silage could rapidly reduce silage pH creating an acidic environment and thus maybe preventing spoilage. However, the purpose of this study was to investigate the effect of different rates of inclusion of citrus lemon by-products on lucerne. In this study, the following five different treatments were prepared: L0 (control) with 100% lucerne; L25 (75% lucerne with 25% lemon pomace); L50 (50% lucerne with 50% lemon pomace); L75 (25% lucerne with 75% lemon pomace); and L100 (100% lemon pomace). After ensiling, the chemical composition, nutritive value, stability, in vitro apparent digestibility, and gas production of silage were determined. The dry matter (DM) content was higher for lemon pomace substitution equal to or exceeded 50% (P < 0.01). Crude protein, on the contrary, decreased (P < 0.01) over the same percentage of substitution. The L100 and L75 treatments showed higher DM apparent disappearance rate and lower (P < 0.05) crude protein and neutral detergent fiber apparent degradation rate vs. L0. Lemon pomace could be used at high inclusion level in lucerne silage, allowing the preservation of this by-product all the year, improving some chemical silage characteristics, and reducing proteolytic processes that usually happen on lucerne silage. Moreover, the in vitro apparent digestibility and gas production results showed that a partial substitution of lucerne with lemon pomace is able to improve silage digestibility.

Abstract
Horses reared for meat production are generally fed a diet rich in starch with the aim of maximizing production performances. This study evaluated the effects of two feeding management systems on horse welfare by analysing the relative time spent engaged in different behavioural activities. Nineteen Bardigiano horses aged 14.3 ± 0.7 months were randomly assigned to one of two group pens: one group was fed high amounts of starch-rich concentrates (HCG; n = 10), the other was fed a fibre-based diet (HFG; n = 9). Behavioural activities performed by each horse were video-recorded over a 96-h period. A scan sampling process (n = 144 scans/horse/day; total n of scans sampled = 10,368) was used, and the scans were analysed according to a specific ethogram. The mean frequency (%/24 h) spent exhibiting each behavioural activity was calculated to obtain the time budget. After checking for normality (Shapiro–Wilk test), Student’s t tests (normally distributed data) and Mann–Whitney tests (not normally distributed data) were used to compare the time budgets of the two groups of horses (HCG vs. HFG). Principal Component Analysis (PCA) was applied to identify the components explaining the variability in behavioural activities between the two groups. K-means cluster analysis subsequently confirmed the PCA results. The behavioural activities associated with feeding horses a fibre-based diet correlated with better horse welfare compared with feeding horses a starch-based diet. Feeding horses a fibre-based diet resulted advantageous from both the welfare and economic perspective; it allowed horses to spend more time expressing feeding behaviours and reduced energy expenditure in the form of excitable, or “fizzy”, behaviours.

Abstract
Sub-fertility represents a frequent challenge in canine reproduction. The use of micronutrients and/or additives was investigated as an approach to improve sperm quality, which are the main constraints on reproduction in canine species. Although some information is available about the effect of daily supplementation with substances presenting antioxidant/antioxidative activity on semen quality, this study aimed to observe the effect of a polyphenolic mix of substances derived from hydroxylation of Pinus taeda lignin (PTHL). For the trial, 40 male dogs were involved, 20 received PTHL for 90 days and 20 were left untreated, serving as a control group. Every 30 days, blood and semen samples were collected and analyzed. The biochemical profile of both groups was not affected by treatment and time (p > 0.05). Differently, dogs that received PTHL showed higher blood superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPx) activity (p < 0.01). Moreover, the dietary addition of PTHL can significantly increase the semen volume, concentration, and spermatozoa motility (p < 0.01) in healthy dogs. PTHL supplementation represents a good way to enhance the semen quality of dogs and improve the antioxidant status of animals.

Abstract
The equid udder has a lower storage capacity than the ruminant udder. Milking frequency is one of the most important factors affecting milk yield. Foals can be partly artificially suckled during lactation. Mechanical milking has been used in equids but our understanding of machine milking remains poor. Automated milking systems for equids represent a great challenge for the future.
Equid milk is arousing increasing interest in consumers and researchers because of its similarity in composition to human milk. The low and different protein content makes equid milk it suitable for children with cow milk protein allergy. Both horse and milk production, in many farms, still follow a characteristic and traditional method of separating the foal from the mother to allow milking procedures. This separation lasts at least 2 to 3 h before milking, a time in which the foal remains fasting. This operation is repeated several times a day, as the equid udder has little collection capacity, and milking frequency is one of the most important parameters to increase milk production; it must be emptied often. New partial artificially suckling techniques have been developed that allow the foal to be separated from its mother for many hours without starving. Furthermore, mechanical milking has been introduced in equid milk production, although in-depth knowledge is lacking on milking parameters and how these aspects affect milk production and udder health. Moreover, in some farms, new milking parlors for Equidae have been developed, ensuring that stress is minimized and production and animal welfare are ensured. It is important to develop and apply technologies for equid milk production, evaluating potential effects on welfare, health, and milk production. This represents the broadest perspective and the greatest challenge because of the need to understand management best practices, thinking to the possibility to introduce as soon as possible automatic milking systems that could ensure a good milking frequency.

Abstract
Simple Summary Horse and donkey meat are a good source of nutrients and minerals. However, equine meat in many countries is still unpopular due to its toughness, although it has been demonstrated that an appropriate aging time improves the tenderness in different horse muscles. The present paper investigates the effect of aging time on nutritional properties in different muscles of horse and donkey meat. This information could represent an opportunity to valorize equine animal biodiversity and could be useful for the equine meat industry. The results highlight that horse and donkey meat, being particularly rich in PUFA and EAA, could represent healthy alternatives to traditionally consumed red meat. Aging time did not affect the nutritional profile of horse meat, whereas in donkey meat, a decrease of PUFA was observed after an aging time of 14 days. Abstract The aim of this study was to evaluate the effect of 14-day vacuum aging on the nutritional composition of donkey and horse meat. Longissimus Dorsi (LD), Semimebranosus (SM), and Rectus Femoris (RF), Semitendinosus (ST) muscles were sampled from each left carcass of 12 donkeys and 12 horses, respectively. Each muscle was divided into three sections, vacuum packaged, and stored at 2 °C for different aging times (1, 6, and 14 days). Fatty acids, amino acids, and cholesterol content were determined. SM exhibited higher levels of polyunsaturated fatty acids (PUFA) both in donkey and horse, whereas LD evidenced higher saturated (SFA) and monounsaturated (MUFA) fatty acids and lower cholesterol content in horse after 1, 6, and 14 days of storage. An aging effect was found only in donkey meat with higher saturated fatty acids and lower PUFA content at the end of the aging period. The highest value of essential amino acids has been displayed in SM an LD muscles from horse and donkey, respectively. Our results highlighted that equine meat, due to an excellent nutritional profile, represents a healthy alternative to traditionally consumed red meat. A different aging method could be used in donkey meat to preserve the high PUFA content.

Abstract
The present study investigated the effects of different grape pomace storage techniques on the effectiveness as feed on in vitro ruminant digestion efficiency. Grape pomace from an autochthonous red grape variety (cv Nero di Troia) was used as fresh (GP) or ensiled, both without additives (SIL) and with the addition of a bacterial strain, Lactiplantibacillus plantarum 5BG (SIL+). All the different storage treatments were subject to chemical and microbiological evaluation, as well as in vitro digestibility, and gas production. Microbiological data revealed the good quality of grape pomace and silages due to the lactic acid bacteria populations and low presence, or absence, of undesirable microorganisms. The addition of L. plantarum 5BG influenced the chemical characteristics of the silage (SIL+). Ensiling technique deeply changed the polyphenolic composition, reducing anthocyanins, flavonols, and flavanols (condensed tannins precursors), particularly when L. plantarum 5BG was added. Antioxidant capacity was reduced by ensiling, in correlation with the polyphenolic content decrease. The oxygen radical absorbance capacity (ORAC) value of SIL+ was the lowest (P < 0.01) and its total phenol content was lower than SIL (P < 0.01). No statistical differences were observed between GP, SIL, and SIL+ on the antioxidant capacity by TEAC assay (P > 0.05). Ensiling did not affect the grape pomace nutrient profile, except for the reduction in NFC content. Apparent in vitro digestibility showed how ensiling increased dry matter (DM), organic matter (OM), neutral detergent fiber (NDF), crude protein (CP), ether extract (EE), and non-fiber carbohydrates (NFC) disappearance (P < 0.01), particularly with the L. plantarum 5BG inoculation. Moreover, SIL+ showed the lowest propionic acid (P < 0.05) and the highest methane (P < 0.01), butyric acid (P < 0.01), and nitrogen (P < 0.05) in vitro production. Ensiling GP resulted in a better in vitro digestibility, particularly if L. plantarum 5BG strain is added, probably due to the reduction of flavanols and their lower microbial activity inhibition.

Abstract
The present research evaluated the use of oil mixture emulsion hydrogels as animal fat replacers and their effect on the physicochemical, nutritional and sensory characteristics of pork burgers. Three different types of burgers were manufactured: control (samples elaborated with 100% pork fat), T1 and T2 (pork fat totally replaced by emulsion hydrogels of walnut or pistachio oil and algal oil, respectively). Fat replacement increased the moisture and ash contents and colour parameters (L* and b*) of pork burgers. Modified samples turned out to be firmer and chewier than those in the control group. The addition of oil emulsion hydrogels caused a significant decrease in fat and energy contents and the products obtained can be considered "reduced fat content". Moreover, the content of saturated fatty acids decreased, while mono- and polyunsaturated fatty acids increased, constituting an improvement in health indices. Sensory differences were found between the samples and T2 was the most preferred for flavour and overall. However, both modified burgers had good levels of acceptability. To conclude, the use of the proposed oil mixture emulsion hydrogels as pork backfat substitutes represents a promising strategy to obtain healthier pork burgers without negatively affecting technological or sensory properties.

Abstract
Climate change is impacting worldwide efficiency and welfare standards in livestock production systems. Considering the sensibility to heat stress reported for different milk production patterns in Italian Brown Swiss, this study aims to evaluate the effect of heat waves (HWs)of different lengths on some milk production traits (fat-corrected milk, energy-corrected milk, protein and fat yield, protein percentage, cheese production at 24 h, and cheese yield). A 10-year dataset (2009–2018), containing 202,776 test-day records from 23,296 Brown Swiss cows, was used. The dataset was merged both with the daily maximum temperature–humidity index (THI) recorded by weather stations and with the daily maximum THI threshold for each trait in Italian Brown Swiss cows. The study considered 4 different HWs according to their length: 2, 3, 4, and 5 consecutive days before the test-day over the weighted THI threshold. Milk production traits were determined as the difference in losses compared to those after only 1 day before the test-day over the weighted maximum THI. All traits showed to be affected by HWs. Particularly, protein percentage losses increased from −0.047% to −0.070% after 2 consecutive days over the daily THI threshold, reaching −0.10% to −0.14% after 5 days (p < 0.01), showing a worsening trend with the increasing length of HWs. First parity cows showed to be more sensitive to HWs than other parity classes, recording greater losses after shorter HWs, compared to multiparous cows, for protein yield and, consequently, for cheese production at 24 h. This suggests a less efficient metabolic response to heat stress and exposure time in primiparous, compared to multiparous cows, probably due to their incomplete growth process that overlaps milk production, making it more difficult for them to dissipate heat. Although actions to mitigate heat stress are always needed in livestock, this study points out that often time exposure to warm periods worsens milk production traits in Brown Swiss cows.

Abstract
The study investigates the changes in meat organoleptic characteristics and sarcoplasmic proteins of 3 horse muscles during aging. Longissimus lumborum (LL), semimembranosus (SM) and semitendinosus (ST) muscles, were removed from 12 Italian Heavy Draft Horse carcasses and aged for 1, 3, 6, 9 and 14 days. The lowest values of hardness and chewiness were found in LL muscle. During aging, a decrease of hardness was observed in ST muscle reaching the lowest value at 14 days. 2DE revealed a decrease of 15 sarcoplasmic protein spots in all muscles. Muscle-differences were found at 14 days. An increase of tropomyosin spots was found in LL muscle while, ST was characterized by a rise of superoxide dismutase, phosphoglucomutase-1 and two isoforms of myoglobin. Principal component analysis applied to color, texture parameters and spots volume differentiated the muscles into three different clusters. Data revealed that myofibrillar, glycolytic and mitochondrial proteins are potential muscle-biomarkers to monitor post-mortem processes and meat quality characteristics in horse meat.

Abstract
Horses reared for meat production are fed high amounts of cereal grains in comparison with horses raised for other purposes. Such feeding practice may lead to risk of poor welfare consequences. The aim of this study was to investigate the effects of two feeding practices on selected metabolic parameters and production aspects. Nineteen Bardigiano horses, 14.3 ± 0.7 months of age, were randomly assigned to two groups-one fed with high amounts of cereal grains (HCG; n = 9; 43% hay plus 57% cereal grain-based pelleted feed) vs. one fed with high amounts of fibre (HFG; n = 10; 70% hay plus 30% pelleted fibrous feed)-for 129 days. At slaught on abattoir, biological and tissue samples were collected to evaluate the microbiological contamination of mesenteric lymph nodes and liver; selected meat quality traits (chemical composition and fatty acid profile of the Longissimus thoracis et lumborum muscle); and the oxidative status of the horse. A linear mixed model was used: dietary treatment and sex were fixed effects and their interaction analysed on production and metabolic parameters as dependent variables. Results showed an increased intestinal permeability in the horses fed HCG compared to HFG, according to the significant increased total mesophilic aerobic bacteria counts in mesenteric lymph nodes (p = 0.04) and liver samples (p = 0.05). Horses in HCG showed increased muscle pH (p = 0.02), lighter muscle colour (L) (p = 0.01), increased intramuscular fat concentrations (p = 0.03), increased muscle glutathione peroxidase and superoxide dismutase activities (p = 0.01 and p = 0.03, respectively). Moreover, horses in HCG had lower muscle water holding capacity at interaction with sex (p = 0.03, lower in female), lower muscle protein content (p = 0.01), lower concentration of muscle PUFAs (p = 0.05) and lower plasma catalase activities (p = 0.05). Our results showed that feeding a high cereal grains diet can have global effects on horse physiology, and thus represents a threat for their welfare.

Abstract
Flavor is one of the main factors involved in consumer meat-purchasing decision and use of natural antioxidants in animal feeding had a great appeal for consumers. The aim of this trial is to evaluate the effect of Pinus taeda hydrolyzed lignin (PTHL) feed addition on oxidative stability, volatile compounds characteristics, and sensory attributes of 35 days dry-aged beef steaks. Forty steer six months old were randomly divided into a control group (CON; n = 20) and an experimental group (PTHL; n = 20). Both groups were fed ad libitum for 120 days with the same TMR and only the PTHL group received PTHL supplement. Samples of LT muscle were removed from carcasses and dry aged for 35 days at 2 °C, 82% of humidity, and 0.4 m/s of ventilation and then analyzed. Meat of CON group showed lower yellowness (p < 0.01) and higher TBARS (p < 0.01) values. Moreover, CON meat showed higher volatile aldehydes and lower sulfur compounds (p < 0.01), with higher unpleasant odor (p < 0.05) and meaty odor (p < 0.01) score revealed by sensory assessors. PTHL inclusion in beef diet delayed the oxidative mechanisms in 35 days dry-aged steaks, resulting in an improved colorimetric, volatolomic, and sensory profile.

Abstract
Simple Summary Small ruminant farming can potentially adopt low-input strategies by using agro-industrial byproducts as alternative feeding sources. Byproducts are natural, and thus are preferred by consumers because most of them have antioxidant activity that may improve different aspects linked to meat quality and human health. For this reason, a red orange and lemon extract, (RLE) rich in anthocyanins, is tested as an oral additive on kids’ meat. No differences were recorded on animal performance, but on meat, RLE inclusion improves juiciness and reduces color deterioration. Moreover, RLE reduced cooking loss, and meat quality is positively influenced, due to both delaying lipid oxidation and a better fatty acid profile resulting in healthier meat for human consumption. Abstract This study evaluates the animal performance and meat characteristics of 60 Saanen suckling kids daily fed a red orange and lemon extract (RLE), rich in anthocyanins. In our methodology, after colostrum administration, animals are randomly assigned to two treatments: Treatment group (Group RLE; n = 30) that received RLE (90 mg/kg live body weight) as oral food additive, and a control group (Group CON; n = 30) that received a standard diet. Animals are slaughtered after 40 days. The RLE administration did not influence daily weight gain, carcass measurements, or incidences (expressed as a percentage) of different anatomical regions on the whole carcass weight. On the contrary, RLE supplementation significantly improved the oxidative profile of the meat seven days after slaughtering, as demonstrated by the reduced levels of thiobarbituric acid reactive substances (TBARS; p < 0.01) and hydroperoxides (p < 0.01) in Group RLE compared to Group CON. A significant influence of RLE administration is observed on day 7 for yellowness (p < 0.01). There are also lower saturated and higher monounsaturated and polyunsaturated fatty acids concentration in Group RLE meat (p < 0.01), which also shows lower atherogenic and thrombogenic indexes (p < 0.01) compared to Group CON. The study demonstrates that the supplementation of a diet with RLE rich in anthocyanins is effective to improve the meat quality.

Abstract
Simple Summary Aging in donkey meat was never investigated. It represents an important process, because it leads the muscle to become meat. There are many ways to age meat, and vacuum aging is one of these. The present paper characterised donkey meat Volatile Organic Compounds (VOCs) production during 14 vacuum aging days, its oxidative status and the consequent sensory evaluation. Lipid oxidative processes are delayed, but some protein oxidative processes happen, influencing VOCs production and sensory evaluation. Abstract This study aims to improve knowledge on donkey meat and the vacuum aging effect on the Volatile Organic Compounds (VOCs), oxidative profile and status and the sensory characteristics. Ten 18-month old Martina Franca donkeys’ male foals were involved in the trial. Longissimus thoracis (LT) muscle was extracted from each left half carcass, between the fourth and the ninth rib. Each muscle was divided into five sections, vacuum packaged, stored at 2 °C, and randomly assigned to one of the different aging time (1, 3, 6, 9, and 14 days of aging). Volatile compounds, oxidation parameters, and antioxidant enzymes were analysed, and a sensory test was performed. A nested one-way analysis of variance (ANOVA) was performed for aging time as an independent variable. Significance was set at p < 0.05. Aldehydes are the most produced VOCs, but no changes were observed during vacuum aging (p > 0.05). Nitrogen compounds increased during aging (p < 0.01). TBARs and hydroperoxides did not change during the storage, whereas the protein carbonyls increased (p < 0.05). Vacuum aging slowed down lipid oxidation and put in evidence the presence of protein oxidation and degradation, influencing the VOCs productions and sensory evaluation.

Abstract
Deer venison is increasingly valued as a natural meat. This study examines the three main sources of venison: farmed venison from New Zealand (NZ), the world's leading producer, and wild deer from Spain (SP), the second largest producer, which mainly supplies venison from traditional autumn-winter driven hunts (monteria), involving packs of dogs, and a smaller proportion culled through summer selective stalking. Meat from NZ contained more protein, lower shear force and lower n-6/n-3 ratio (P < 0.01). Spanish meat had a greater content of total, essential and non-essential amino acids (P < 0.01). Meat from deer culled in winter had lower intramuscular fat and saturated fatty acids (FA) but higher polyunsaturated FA (P < 0.01) and pH (P < 0.001) than meat from summer stalked deer. Therefore, venison presents differences by country of origin for composition, FA and texture that are likely to affect its health characteristics. Anomalies observed in meat between the winter driven hunt and non-stressful summer stalking may be attributed to the level of death stress in the case of variables such as pH. However, the effect on fat and mineral composition seems to be seasonal, depending respectively on wild diet or cyclic osteoporosis in males.

Abstract
The control of immune responses is particularly critical when an increase of oxidative stress occurs, causing an impairment of immune cell response and a condition of systemic inflammation, named oxinflammation. Nutritional strategies based on the use in the diet of phytochemicals extracted from plants, rich in antioxidants, could help restore the antioxidant/oxidant balance and obtain a modulation of immune response. Lignin represents a valuable resource of phenolic compounds, which are characterized by a corroborated antioxidant effect. To date, there are no studies reporting the effects of lignin in the diet on immune responses and oxidative stress in ruminants. The objective of the present experiment was the evaluation of the dietary inclusion of Pinus taeda hydrolyzed lignin on the ex vivo immune responses and oxidative stress biomarkers by peripheral blood mononuclear cells (PBMCs) isolated from beef steers. In order to test the effect during oxidative stress exposition, cells were treated with hydrogen peroxide (H2O2). The proliferation test and the viability assay were carried out on cells, whereas, on supernatants, the cytokine profile and the oxidative stress biomarkers were evaluated. The dietary inclusion with P. taeda hydrolyzed lignin resulted in cytoprotection after H2O2 exposition, increasing the number of viable monocytes and decreasing the reactive oxygen/nitrogen species production in supernatants. The cytokine profile indicated the modulatory role of hydrolyzed lignin on immune response, with a concomitant decrease of TNF-α and increase of IL-8 production, which are strictly connected with monocyte activation and antioxidant response pathway. These results demonstrated that hydrolyzed lignin may provide a modulation of oxidative stress and inflammatory response in PBMCs; thus, the P. taeda hydrolyzed lignin could be suggested as an innovative phytochemical in ruminant feed.

Abstract
The aim of this study was to evaluate the effect of post-mortem aging on tenderness development and proteolysis of myofibrillar proteins in 3 different horse muscles. Warner-Bratzler shear force decreased during aging in all muscles, showing the lowest values in longissimus lumborum (LL) in all sampling points. Myofibril fragmentation index significantly increased in LL and semimembranosus (SM) muscles throughout aging time whereas in semitendinosus (ST) it increased after 14 days of aging. Proteomics analysis revealed the major content of intact myofibrillar proteins with high molecular weight in ST muscle in the first phase of aging, while, after 14 days a higher accumulation of TnT-derived polypeptides and spots isoforms ascribed to MLC2 and MLC1 proteins were found. Data highlight that aging affects the meat tenderness and proteolysis with different intensities in each muscle and suggest that a more extensive post-mortem proteolysis occurred in ST muscle.

Abstract
Very little information about local breed goat milk is available, which is relevant for biodiversity preservation and local cheese production. This study aimed to evaluate the effect of breed and week of lactation on milk mineral profile of five Italian local breeds (Garganica, Girgentana, Jonica, Maltese and Mediterranean Red) and a cosmopolitan breed (Saanen). Sixty goats (10 per breed) from an experimental farm were enrolled in the study and sampled every 2 weeks for milk gross composition analysis. In addition, an individual milk sample was collected monthly from 42 goats (seven goats per breed) for mineral determination through inductively coupled plasma optical emission spectrometry. Data were analysed using a mixed linear model with repeated measures, including breed and week of lactation as fixed effects. Week of lactation affected mineral contents, except for B, being lower in early than late lactation, whereas, breed affected only P, Mg and Zn. Mediterranean Red and Jonica breeds' milk was richer in P than Maltese, and in Zn than Maltese, Girgentana and Saanen breeds. For Mg, only Saanen differed from Maltese. Such information might be useful for the valorisation of goat milk produced by autochthonous breeds.

Abstract
The positive perception of deer meat among consumers is growing. Consequently, further efforts are needed to control its meat quality. Specifically, the aim of this study was to search protein biomarkers in connection with tenderness and intramuscular fat (IMF) content of Iberian wild red deer (Cervus elaphus) meat. Twelve venison samples classified as tender, intermediate and tough meat, as well as with different IMF were studied, using quantitative proteomic by SWATH-MS combined with bioinformatic analyses. The study of muscle proteome showed significant differences among these three groups of meat samples, since five differentially abundant proteins (IVD, LAMB1, MYL3, SDHC and SDHA) and six (FABP4, IVD, LAMB1, MYL3, CRYZ and SERPINB6) were strongly correlated with tenderness and IMF, respectively. The proteomic approach provides protein biomarkers linked to venison meat quality and marked changes in proteins related to oxidoreductase complex in skeletal muscle. SIGNIFICANCE: Meat tenderness and IMF are major concerns in game meat. The proteomic approach demonstrated a strong correlation between proteins and these quality traits, despite the complexity of samples (wild animals hunted at different ages). Our results suggest that several proteins can be biomarkers and provide a molecular insight.

Abstract
BACKGROUND Beef is a highly nutritious and valuable food. In order to complete its nutritional information, this study determined the chemical and physicochemical parameters and fatty acid, amino acid and mineral contents in seven primal cuts from veal carcasses (shoulder clod (SC), inside round (IR), eye of round (ER), bottom round (BR), heel of round (HR), knuckle (KK) and tenderloin (TL)). RESULTS The intramuscular fat content was higher and the cholesterol content was lower in TL than in the other cuts. The colour parameters also varied in the different primal cuts. The L* and b* values were highest in ER. Cooking losses were significantly (P < 0.001) affected by the cut of meat ranging from 20.85% in HR to 29.01% in ER. Determination of the shear force values permitted us to establish more tender muscle (TL with shear force 16.45 N cm-2 ) and less tender muscle (IR with shear force 47.27 N cm-2 ). The nutritional indices and fatty acid profile indicated that HR is the healthiest cut. All cuts evaluated provide important levels of dietary amino acids, although the contents of both essential and non-essential amino acids were highest in HR. Finally, K, Zn and Fe were affected by the type of veal cut. CONCLUSIONS All primal cuts of veal provide important nutrients for human diets. The information of this research allows consumers to make healthful food choices, creating diets aimed at trying to correct deficiencies and providing objective data that differentiate between differently priced cuts of veal. © 2018 Society of Chemical Industry.

Abstract
BACKGROUND Deer-meat consumption is increasing in several countries based on claims that it is a healthy red meat. This study assessed the effect of slaughter age (low - 26 months and younger; medium - from 27 months to younger than 42 months; and high - 42 months and older) on carcass characteristics and meat physicochemical properties of 150 Iberian wild red deer. RESULTS Whole carcass yields of neck, backbone and flank increased (P < 0.001) with age, while yields of shoulder, tenderloin and leg decreased (P < 0.05) with age. The pH measured at 48 h post mortem at 9th rib level was not affected by age, while pH measured at 72 h post mortem at the longissimus thoracis et lumborum muscle decreased (P < 0.05) with age. Meat chemical composition was not affected by slaughter age, except for intramuscular fat (IMF), which increased (P < 0.05) with slaughter age. Finally, cooking loss and shear force were higher (P < 0.05) in meat from older deer. CONCLUSION Most characteristics of meat from wild red deer depend on age at slaughter. The greater IMF of meat from older animals may render it more palatable. However, meat shear force also increased with age. Additional studies testing palatability seem to be necessary to evaluate the effects of slaughter age on the sensorial quality of meat from Iberian wild red deer. © 2018 Society of Chemical Industry.

Abstract
BACKGROUND Cooked meat flavor arises through a combination of thermally generated aroma volatile and nonvolatile compounds in a matrix of muscle fiber, connective tissue, and fat. Ageing could affect meat odor, taste, and flavor by the development of odor compounds in the raw product. The aim of the work is to assess the ageing effect on the volatile compounds profile by solid-phase microextraction and gas chromatography-mass spectrometry analysis of foal meat vacuum packaged for storage at 4 °C for a period of 14 days. RESULTS Only pentane and 3,7-dimethylnonane were significantly affected by ageing time (P < 0.01). Octanal and nonanal presented an increasing trend with higher values at 14 ageing days compared with six ageing days (P < 0.01). CONCLUSIONS Ageing poorly affects the volatile compounds production of foal meat. Probably, 14 days is considered to be a short maturation time in vacuum packaging for foal meat. © 2018 Society of Chemical Industry.

Abstract
BACKGROUND This study assessed the effect of age (L, less than 27 months old; M, from 27 to 42 months old; H, 43 months and older) on the fatty acid profile, cholesterol content, amino acid composition and mineral content of 150 Iberian wild red deer meat samples. RESULTS Intramuscular fat content increased (P < 0.05) with age (0.05 vs 0.12 vs 0.34% for L, M and H groups respectively), while cholesterol content decreased (P < 0.05) as the slaughter age increased (52.78 vs 48.72 vs 45.34 mg per 100 g meat for L, M and H groups respectively). The slaughter age showed differences among groups for saturated fatty acids, with the highest content in older animals (30.41 vs 34.55 vs 38.21% for L, M and H groups respectively), whereas younger deer displayed the highest polyunsaturated fatty acid levels (50.05 vs 45.24 vs 37.55% for L, M and H groups respectively). The n-6/n-3 ratio was more favorable (P < 0.05) for young and medium ages compared with that for older animals. In contrast, amino acid profile and mineral content were only slightly affected by age. CONCLUSION As a general conclusion, wild red deer meat could be considered a good alternative to red meats for human consumption. © 2018 Society of Chemical Industry.

Abstract
Studies on goat milk have mainly focused on cosmopolitan breeds
and very limited information is available on local breeds, which is important
for biodiversity preservation and local cheese production. The aim of this
study was to evaluate the breed effect on milk yield, composition and somatic
cell score (SCS) of five local Italian goat breeds (Garganica, Girgentana,
Jonica, Maltese and Mediterranean Red) compared with a cosmopolitan
specialized dairy breed (Saanen). A total of 60 goats (10 per breed) from an
experimental farm were enrolled in the study. Milk yield, composition and SCS
were recorded and analyzed every 2 weeks during the entire lactation. Data
were analyzed using a mixed model with repeated measures. Saanen yielded
between 0.27 and 0.62 kg day-1 more milk than the local breeds. Among
local breeds, Maltese and Jonica were the most productive, with an average of
1.28 and 1.25 kg day-1, respectively, while Mediterranean Red,
Garganica and Girgentana produced ≤1 kg day-1. Saanen had the
highest SCS (6.81) and the lowest fat content (3.26 %). In relation to
protein, Garganica showed the greatest content (3.71 %), and Saanen had a similar content to other local breeds (3.42 %) except for Maltese, which
was lower (3.11 %). Saanen and Garganica had the lowest lactose
percentage (4.28 % and 4.26 %, respectively). All breeds followed a
similar pattern across lactation: SCS and fat and protein content peaked at
the end of the lactation, whereas lactose percentage was highest at the
beginning of the lactation. Differences between Saanen and the local breeds
for milk yield, composition and SCS were consistent across lactation. In
conclusion, local breeds produced less milk but with lower SCS and greater fat
and lactose content than the Saanen cosmopolitan breed, suggesting a better milk
quality.

Abstract
Small ruminant lentiviruses (SRLVs) can drastically affect milk production in goat flocks and only an early detection can control and prevent their spread. Since SRLVs are responsible for persistent infections, antibody screening is the most valuable tool to identify infected animals. ELISA is recommended as the election test both for its sensitivity and for its ability to detect low antibody titers, thus identifying infected animals earlier than agar gel immunodiffusion (AGID). In the present study, an investigation was conducted to assess the SRLV seroprevalence in goat flocks in southern Italy and a transversal comparative study was carried out through the analysis of the possible risk factors influencing SRLV spread. A total of 4800 sera from 1060 flocks were analyzed and overall seroprevalences of 18,64% and 51,69% at animal and herd levels, respectively, were observed. Both the region and the herd production systems were able to affect seroprevalence, differently from the herd size, probably because the mean number of goats per herd is low and the semi-intensive management is similar regardless of the dimensional class of each herd. In particular, meat producing herds showed the higher seroprevalence, as a result of the poor sanitation and low animal monitoring in comparison to milk producing herds, where animals are managed twice daily and the relationship between dams and kids is checked to guarantee an adequate quantitative/qualitative milk yield. In the absence of vaccines or effective treatments, health preventive management and seroepidemiological investigations are the only successful approach to restrict SRLV spread as observed in countries were official/voluntary control programs are carried out.

Abstract
Background Diet supplementation with polyphenols is a novel strategy to improve meat quality in livestock, by preventing oxidative deterioration of lipids and protein. Polyphenols have beneficial effects on both human and animal health and can be obtained from several sources, such as olive mill wastewaters (OMWW). These are severe environmental pollutants and therefore may be recycled and utilized in other sectors. The aim of this study was to evaluate growth performance, meat characteristics, fatty acid composition, antioxidant status, different forms of myoglobin and malondialdehyde formation in kids who received a diet supplemented with polyphenols obtained from OMWW. Weaned goat kids (n = 18) were divided into two homogenous groups: control (C) group (n = 9) received a fattening standard diet while the other group (n = 9) received the same diet, supplemented with 3.2 mg/day of polyphenols powder extract (PE group). Average daily gain (ADG) was calculated 10 days apart throughout the study. After 78 days, the kids were slaughtered and pH and carcass yield were evaluated. Longissimus thoracis et lumborum muscle was collected and utilized for chemical analysis, meat quality evaluation and oxidative stability. Results No differences were recorded in ADG, carcass weight, pH and dressing between the two groups. Furthermore a similar meat proximate composition, texture and color was observed. Dietary polyphenols supplementation significantly (P < 0.01) decreased short chains (<C12:0) (2.93 + 0.50 and 0.35 + 0.40 g/100 g of fatty acids, for C and PE Group, respectively), and saturated (49.22 ± 2.39 and 39.51 ± 1.95 g/100 g, in C and PE Group, respectively) fatty acids. Furthermore, a higher (P < 0.05) proportion of monounsaturated (34.35 ± 2.84 and 42.22 ± 2.32 g/100 g, in C and PE Group, respectively) fatty acids was recorded. Malondialdehyde formation was significantly (P < 0.05) lower in PE compared to C Group (0.25 ± 0.005 and 0.15 ± 0.005, in C and PE Group, respectively). Conclusions Polyphenols dietary supplementation has positive effects on kid meat, improving fatty acid profile and reducing malondialdehyde contents. Furthermore the utilization of OMWW as the source of polyphenols may represent an innovative strategy to re-utilize agri-food industry wastes.

Abstract
The aim was to compare lambs at two different ages at slaughter (40 vs 100 days) and three breeds or crossbreeds including an Italian dairy breed (Comisana (Com)) and its crosses with the two meat breeds of Bergamasca (Ber × Com) and Suffolk (Suf × Com) with 20 male lambs per age per breed group. At both slaughter ages, crossbreeds were more productive, with higher liveweight (P = 0.02), carcass weight (P = 0.03) and dressing percentage (P = 0.04) than the Com group. Meat from the younger lambs showed lower C10:0, C14:0 and C22:0 (P < 0.05) and higher C18:1 (P < 0.01) concentrations, resulting in higher monounsaturated fatty acid (P < 0.01) and lower saturated fatty acid (P < 0.01) content. Moreover, their meat has lower redness (a*), yellowness (b*) and chroma (C*) values (P < 0.01). Crossbreeding dairy breed ewes with sires of high meat production breeds improves liveweight and carcass weight. Meat from younger lambs had lower intramuscular fat content and higher concentrations of polyunsaturated fatty acid.

Abstract
The ATP-sensitive K+-channels (KATP) are distributed in the tissues coupling metabolism with K+ ions efflux. KATP subunits are encoded by KCNJ8 (Kir6.1), KCNJ11 (Kir6.2), ABCC8 (SUR1), and ABCC9 (SUR2) genes, alternative RNA splicing give rise to SUR variants that confer distinct physiological properties on the channel. An high expression/activity of the sarco-KATP channel is observed in various rat fast-twitch muscles, characterized by elevated muscle strength, while a low expression/activity is observed in the slow-twitch muscles characterized by reduced strength and frailty. Down-regulation of the KATP subunits of fast-twitch fibers is found in conditions characterized by weakness and frailty. KCNJ11 gene knockout mice have reduced glycogen, lean phenotype, lower body fat, and weakness. KATP channel is also a sensor of muscle atrophy. The KCNJ11 gene is located on BTA15, close to a QTL for meat tenderness, it has also a role in glycogen storage, a key mechanism of the postmortem transformation of muscle into meat. The role of KCNJ11 gene in muscle function may underlie an effect of KCNJ11 genotypes on meat tenderness, as recently reported. The fiber phenotype and genotype are important in livestock production science. Quantitative traits including meat production and quality are influenced both by environment and genes. Molecular markers can play an important role in the genetic improvement of animals through breeding strategies. Many factors influence the muscle Warner-Bratzler shear force including breed, age, feeding, the biochemical, and functional parameters. The role of KCNJ11gene and related genes on muscle tenderness will be discussed in the present review.

Abstract
In recent years, there has been an increasing interest on donkey milk production, on its characteristics, and also on breeding techniques. Donkey milk is characterized by high economic value, although the productive level of jennies is poor. During the milking process, foals are usually separated from their dams, allowing the milk collection in the mammary gland of jennies before milking session. This takes 8 h per day of fastening period for lactating donkey foals. During this period, it could be possible to apply a partial artificial suckling system (artificial suckling during daytime and natural suckling during the night). The aim of the work is the evaluation of the effect of this innovative technique on in vivo performances and on meat production traits of Martina Franca donkey foals. Forty Martina Franca jennies with their foals were used for the trial. After colostrum assumption, 20 foals were partially artificially suckled (AS) during each day, and 20 foals were naturally suckled (NS). From 8.00 to 20.00, both groups were separated from their mothers in order to allow the milking procedures of the jennies. The AS group was in a stall equipped with an automatic calf-suckling machine. For each group, 10 foals were slaughtered at 12 months and 10 foals at 18 months. Artificial suckling system positively affected the growth rate of donkey foals, particularly in the first 6 months from birth, with higher weekly weight gain (P < 0.01), higher final live weight (P < 0.001), and carcass weight (P < 0.01), but no effects were observed on carcass dressing percentage (P > 0.05). Artificial suckling system permitted to extend the time of foal separation from their mothers increasing milk collection time per day, awarding fastening periods in foals.
