Abstract
Fleshy fruit ripening is a unique biological process that involves dramatic changes in a diverse array of cellular metabolisms. The regulation of these metabolisms is essentially mediated by cellular signal transduction of internal (e.g., hormones) and external cues (i.e., environmental stimuli). Mitogen-activated protein kinase (MAPK) signaling pathways play crucial roles in a diverse array of biological processes, such as plant growth, development and biotic/abiotic responses. Accumulating evidence suggests that MAPK signaling pathways are also implicated in fruit ripening and quality formation. However, while MAPK signaling has been extensively reviewed in Arabidopsis and some crop plants, the comprehensive picture of how MAPK signaling regulates fruit ripening and quality formation remains unclear. In this review, we summarize and discuss research in this area. We first summarize recent studies on the expression patterns of related kinase members in relation to fruit development and ripening and then summarize and discuss the crucial evidence of the involvement of MAPK signaling in fruit ripening and quality formation. Finally, we propose several perspectives, highlighting the research matters and questions that should be afforded particular attention in future studies.

Abstract
The demand for organic table grapes is increasing worldwide. However, comprehensive information of quality parameters and phytochemical compounds in organically grown fruit remain unclear. Furthermore, table grapes are perishable and postharvest quality retention and waste prevention is very important. In this study we have compared the differences between organic and non-organic table grapes in terms of phytochemical compounds and quality parameters as well as the changes in the expression levels of pathogen related and lytic genes during storage. Organic fruit showed higher levels of phenolics, flavonoids, caffeic acid, hydrogen peroxide, protein content, antioxidant and anti-stress enzymes and total antioxidant activities at harvest and during storage. Although, the expression levels of polygalactronases, pectin methyl esterase, chitinase and glucanase genes was lower in organically grown table grapes at harvest, but the expression of all these genes was significantly increased during cold storage. After 60 days of cold storage the expression levels of pectin methyl esterase, chitinase and glucanase genes was significantly higher than the conventionally grown grape berries in organic ones. The highest expression of polygalacturonase was recorded in organic samples after 30 days of storage. There was no significant difference between the two types of table grapes for decay extension and tissue deterioration rate. The results of this study indicate that due to higher levels of phytochemicals and antioxidant compounds the organic table grapes have a higher nutritional quality. Furthermore, the increase in PR and pectolytic genes expression levels is enough for decreasing the fruit susceptibility to decay pathogens and enhancing the postharvest life of organic grapes.

Abstract
'Docteur Jules Guyot' pears were immersed in acibenzolar-S-methyl (ASM) and 0.01 mol L-1 ethyl glycol tetra acetic acid (EGTA) to investigate the changes of Ca2+ receptor proteins and phenylpropanoid pathway. Results showed that ASM treatment increased the activities of phenylalanine ammonia-lyase (PAL), cinnamate-4-hydroxylase (C4H), 4-coumarate coenzyme A ligase (4CL), polyphenol oxidase (PPO), and cinnamyl alcohol dehydrogenase (CAD) in the exocarp of pears, whereas EGTA pre-treatment inhibited the activities of these enzymes. ASM treatment also enhanced the transcription of PcPAL, PcC4H, Pc4CL, PcC3H, PcCOMT, PcCCoAOMT, PcCCR, PcPOD, PcCDPK1, PcCDPK2, PcCDPK5, PcCDPK11, PcCDPK13, PcCBL1, PcCBL9, PcCIPK14, and PcCML27 in pears. EGTA + ASM treatments inhibited the transcription of PcPAL, PcC4H, Pc4CL, PcC3H, PcCCR, PcF5H, PcCAD, PcCDPK11, PcCDPK26, PcCDPK32, PcCBL1, PcCIPK14, PcCIPK23, and PcCaM in the fruit. All these results indicated that ASM induced the gene expressions of Ca2+ receptor proteins, the key enzyme activities and gene expressions in phenylpropanoid pathway; Ca2+ mediated phenylpropane metabolism in pears after ASM treatment.

Acibenzolar-S-methyl activates mitogen-activated protein kinase cascade to mediate chlorophyll and carotenoid metabolisms in the exocarp of Docteur Jules Guyot pears. JOURNAL OF THE SCIENCE OF FOOD AND AGRICULTURE 2022; 102:4435-4445. Abstract
BACKGROUND Acibenzolar-S-methyl (ASM), a well-known plant activator, has been used to protect fruit and vegetable from fungal invasion and maintain quality. However, little is known about the molecular mechanism of ASM in regulating chlorophyll and carotenoid metabolisms. Therefore, Docteur Jules Guyot pears were used as the materials to study the changes of hydrogen peroxide (H2 O2 ) production, mitogen-activated protein kinase (MAPK) cascade, transcription factors, chlorophyll, and carotenoid metabolisms after ASM and PD98059 (a MAPK cascade blocker) treatments. RESULTS ASM increased NADPH oxidase (NOX) and superoxide dismutase (SOD) activities, and H2 O2 content, promoted PcMAPKKK1, PcMAPKK3, and PcMAPK6 expressions, and down-regulated PcMYC2, PcPIF1, PcPIF3, and PcPIF4 expressions in exocarp of pears. ASM also delayed the decrease of chlorophyll a and b contents, and inhibited the accumulation of β-carotene, lycopene and lutein, PcNYC1, PcHCAR, PcPPH, PcSGR1/2, PcPAO, PcPSY, PcLCYB, PcCRTZ2, PcCCS1 expressions, and promoted PcLCYE expression. PD98059 + ASM treatments depressed SOD and NOX activities and H2 O2 content, inhibited PcMAPKKK1, PcMAPKK3, PcMAPK6, PcPIF1, and PcPIF3 expressions, and promoted PcMYC2 and PcPIF4 expressions in exocarp of pears. Additionally, PD98059 + ASM accelerated PcNYC1, PcHCAR, PcPPH, PcSGR1/2, PcPAO, PcPSY, PcCYB, PcCRTZ2, and PcCCS1 expressions, thereby reducing chlorophyll a and b contents, and promoting β-carotene, lycopene and lutein contents. CONCLUSIONS Postharvest ASM treatment promoted the production of H2 O2 to activate the MAPK cascade, then phosphorylated/dephosphorylated transcription factors expression, and delayed chlorophyll decomposition and carotenoid synthesis in pears. © 2022 Society of Chemical Industry.

Abstract
Transit vibration is a potential risk that may cause fruit deterioration. Regulating energy metabolism is recognized for attenuating fruit abiotic/abiotic stresses. To explore the role of energy metabolism in the response of fruit to vibration stress, this research investigated the effects of exogenous treatment with adenosine triphosphate (ATP) and 2,4-dinitrophenol (DNP) on fruit after simulated vibration stress. The results demonstrated that DNP treatment induced significant energy depletion, which exacerbated the adverse physiological responses induced by vibration stress. In contrast, ATP regulated higher fruit energy levels and significantly alleviated fruit quality deterioration. This is achieved by supplying direct energy substances, maintaining higher energy charges, inhibiting ethylene biosynthesis, elevating the antioxidant system, and suppressing cell oxidative damage. The results demonstrated the positive role of fruit energy metabolism response to vibration stress. Ensuring sufficient energy level may be a promising strategy for controlling vibration-induced adverse physiological responses and a potential method to maintain fruit quality.

MAPK5 and MAPK10 overexpression influences strawberry fruit ripening, antioxidant capacity and resistance to Botrytis cinerea. PLANTA 2021; 255:19. Abstract
FaMAPK5 and FaMAPK10 genes were involved in ABA-mediated strawberry fruit ripening and could enhance the antioxidant capacity by increasing non-enzymatic components and enzymatic antioxidants. Mitogen-activated protein kinases (MAPKs) are the key proteins involved in plant stress response by activating an antioxidant defense system, which cooperates with plant hormones. However, the involvement of MAPKs in the regulation of strawberry fruit ripening and resistance is unclear. In this study, two genes, FaMAPK5 and FaMAPK10, were isolated, and their expression pattern and function analysis were conducted. The results showed FaMAPK5 and FaMAPK10 were expressed in all tested tissue/organ types and reached the highest expression level at the white stage during strawberry fruit development and ripening. Transient overexpression of FaMAPK5 and FaMAPK10 increased the fruit anthocyanin, abscisic acid (ABA), total sugar, and glucose contents. ABA and especially hydrogen peroxide (H2O2) treatment induced the production of large amounts of H2O2 and noticeably increased the expression levels of FaMAPK5 and FaMAPK10 in strawberry fruit, while the reduced glutathione (GSH) had the opposite effect. The level of total phenol and activities of superoxide dismutase (SOD), catalase (CAT) and peroxidase (POD) significantly increased in FaMAPK5 overexpression fruit, and increased activities of SOD and CAT were observed in FaMAPK10 overexpression fruit. In addition, Botrytis cinerea treatment showed that overexpression of FaMAPK5 conferred retarded disease symptom development and enhanced fruit disease resistance. Our research revealed that FaMAPK5 and FaMAPK10 might participate in ABA-mediated H2O2 signaling in regulating strawberry fruit ripening and resistance.

Abstract
In this study, 'Golden Delicious' apples were dipped with γ-aminobutyric acid (GABA) solution to investigate the changes of quality parameters, ethylene anabolism, polyamine metabolism and GABA shunt. Results showed that GABA distinctly suppressed respiratory rate, reduced titratable acidity, maintained higher soluble solid content and pericarp firmness of apples. Compared to the control, GABA also repressed the activities and gene expressions of polyamine oxidase (PAO) and diamine oxidase (DAO), enhanced MdMT, MdMS, MdSAMS, MdSAMDC, MdSPDS, MdODC, MdADC, and MdACL5 expressions, and accelerated the accumulation of putrescine, spermidine, and spermine in the exocarp of apples. Moreover, GABA decreased ethylene release, MdACS and MdACO gene expressions in the exocarp. In addition, exogenous GABA activated MdGAD, MdGDH, MdGS expressions and inhibited MdGABA-T and MdSSADH expressions in the GABA shunt, therefore increased endogenous GABA, pyruvic acid and glutamate contents in the exocarp. These findings suggest that exogenous GABA regulates ethylene anabolism, polyamine metabolism and GABA shunt to maintain fruit quality of 'Golden Delicious' apples.
