Abstract
Food represents the major risk factor for exposure to mercury in most human populations. Therefore, passage through the gastrointestinal tract plays a fundamental role in its entry into the organism. Despite the intense research carried out on the toxicity of Hg, the effects at the intestinal level have received increased attention only recently. In this review we first provide a critical appraisal of the recent advances on the toxic effects of Hg at the intestinal epithelium. Next, dietary strategies aimed to diminish Hg bioavailability or modulate the epithelial and microbiota responses will be revised. Food components and additives, including probiotics, will be considered. Finally, limitations of current approaches to tackle this problem and future lines of research will be discussed.

Abstract
Various materials have been developed for environmental remediation of mercury ion pollution. Among these materials, covalent organic frameworks (COFs) can efficiently adsorb Hg(II) from water. Herein, two thiol-modified COFs (COF-S-SH and COF-OH-SH) were prepared, through the reaction between 2,5-divinylterephthalaldehyde and 1,3,5-tris-(4-aminophenyl)benzene, followed by post-synthetic modification using bis(2-mercaptoethyl) sulfide and dithiothreitol, respectively. The modified COFs showed excellent Hg(II) adsorption abilities with maximum adsorption capacities of 586.3 and 535.5 mg g-1 for COF-S-SH and COF-OH-SH, respectively. The prepared materials showed excellent selective absorbability for Hg(II) against multiple cationic metals in water. Unexpectedly, the experimental data showed that both co-existing toxic anionic diclofenac sodium (DCF) and Hg(II) performed positive effect for capturing another pollutant by these two modified COFs. Thus, a synergistic adsorption mechanism between Hg(II) and DCF on COFs was proposed. Moreover, density functional theory calculations revealed that synergistic adsorption occurred between Hg(II) and DCF, which resulted in a significant reduction in the adsorption system's energy. This work highlights a new direction for application of COFs to simultaneous removal of heavy metals and co-existing organic pollutants from water.

Abstract
A convenient sensor is developed for electrochemical assay of Hg2+ in dairy product using the optimal Cu2+-based metal-organic frameworks (Cu-MOFs) as signal reporting. Benefiting from specific recognition between Hg2+ and thymine (T)-rich DNA strands, the interferences of milk matrices are effectively eliminated, thereby greatly improving the accuracy of test results. Moreover, the suitable Cu-MOFs offer an efficient carrier for probe design, and the contained Cu2+ ions could be directly detected to output electrochemical signal of Hg2+ presence without labor- or time-intensive operations. Compared with previous methods, this sensor substantially simplifies the process of electrochemical measurement and facilitates highly sensitive, selective and rapid analysis of Hg2+ with detection limit of 4.8 fM, offering a valuable means for monitoring dairy product contamination with Hg2+.

Abstract
Human exposure to mercury (Hg) and methylmercury (MeHg) through the ingestion of seafood raises human health-related concerns. In contrast, green tea has health benefits and its consumption potentially reduces bioaccessibility of dietary Hg. The present study aimed to assess the effect of green tea in total mercury (THg) and MeHg bioaccessibility in raw and cooked marine fish species commonly having high Hg levels. Preliminary results demonstrated that significantly higher reductions of bioaccessible THg were attained after the co-ingestion of green tea infusion (1 cup or more) in the oral and intestinal phases. Overall, the present findings clearly show that the co-ingestion of green tea along with seafood grilling strongly reduces THg and MeHg bioaccessibility in all fish species and consequently diminishes the probability of exceeding MeHg provisional tolerable weekly intakes through the consumption of these species with high Hg levels. Such results point out the need to better understand the beneficial/preventive role of green tea infusions and other food processing techniques in bioaccessibility reduction of other chemical contaminants present in food products. Such information is certainly useful to help consumers to wisely select their food, and to enable food safety authorities to integrate such information in risk assessment.

Abstract
Zirconium-based metal-organic frameworks, namely Zr-based MOF, was employed as adsorbent material in the miniaturized solid phase extraction of organic mercury compounds in food prior to capillary electrophoresis-diode array detector analysis. The synthesized adsorbent was characterized by different spectroscopic techniques. Parameters influencing the extraction and complexation of methylmercury chloride, ethylmercury chloride and phenylmercury chloride such as type of eluent solvent, type and amount of adsorbent were investigated. In addition, linear ranges contained 2.00-300.00 ng mL-1 for MeHg+, 5.00-500.00 ng mL-1 for EtHg+ and PhHg+, and the established method presented good linearity (R2 ≥ 0.998). Under the optimized experimental conditions, the ranges of detection limit and quantitation limit were 0.022-0.067 ng mL-1 and 0.073-0.220 ng mL-1, respectively. The relative standard deviations of intra- and inter-day analysis were less than 3.2 and 3.1%, respectively. Trueness of the present method was successfully accomplished by means of the recovery assays (81.4-98.5%) in the blank samples with two concentration levels. The repeatability %RSD of the method was lower than 2.7%. Overall, the developed approach proved to have the latent capability to be utilized in routine analysis of organic mercury compounds in fish and Dendrobium officinale.

Abstract
A reagentless and single-step electrochemical aptasensor with separation-free fashion and rapid response is developed for the Hg2+ assay in dairy products. Herein, the sensing strategy is established on Hg2+-induced structural transition of the methylene-blue-tagged single-stranded DNA (ssDNA) from a flexible manner to rigid hairpin-shaped double-stranded DNA (dsDNA), generating an improved peak current for the Hg2+ assay with a detection limit of 0.62 fM. Importantly, the best signal-to-noise ratio value can be obtained by exploiting Au flowers as sensing material and the optimal ssDNA concentration. The proposed sensor also exhibits high selectivity as a result of the specific thymine-Hg2+-thymine (T-Hg2+-T) coordination chemistry and can be applied to detect Hg2+ in dairy products. With the use of the electric "signal-on" switch, the electrochemical aptasensor has the advantages of simplicity, ease of operation, and high sensitivity and specificity, offering a promising method to assess the safety of dairy products polluted with Hg2+.

Abstract
Chemical contaminants that are present in food pose a health problem and their levels are controlled by national and international food safety organizations. Despite increasing regulation, foods that exceed legal limits reach the market. In Europe, the number of notifications of chemical contamination due to pesticide residues, mycotoxins and metals is particularly high. Moreover, in many parts of the world, drinking water contains high levels of chemical contaminants owing to geogenic or anthropogenic causes. Elimination of chemical contaminants from water and especially from food is quite complex. Drastic treatments are usually required, which can modify the food matrix or involve changes in the forms of cultivation and production of the food products. These modifications often make these treatments unfeasible. In recent years, efforts have been made to develop strategies based on the use of components of natural origin to reduce the quantity of contaminants in foods and drinking water, and to reduce the quantity that reaches the bloodstream after ingestion, and thus, their toxicity. This review provides a summary of the existing literature on strategies based on the use of lactic acid bacteria or yeasts belonging to the genus Saccharomyces that are employed in food industry or for dietary purposes.

A vinethene-based fluorescent probe has been developed for the sensitive and selective detection of Hg2+ with a low detection limit, a red emission and a large Stokes shift. The probe has been successfully applied to detect Hg2+ in aqueous solutions, living cells and organisms.

Abstract
Mercury in foods, in inorganic form [Hg(II)] or as methylmercury (CH3Hg), can have adverse effects. Its elimination from foods is not technologically viable. To reduce human exposure, possible alternatives might be based on reducing its intestinal absorption. This study evaluates the ability of 23 dietary components to reduce the amount of mercury that is absorbed and reaches the bloodstream (bioavailability). We determined their effect on uptake of mercury in Caco-2 cells, a model of intestinal epithelium, exposed to Hg(II) and CH3Hg standards and to swordfish bioaccessible fractions. Cysteine, homocysteine, glutathione, quercetin, albumin and tannic reduce bioavailability of both mercury species. Fe(II), lipoic acid, pectin, epigallocatechin and thiamine are also effective for Hg(II). Some of these strategies also reduce Hg bioavailability in swordfish (glutathione, cysteine, homocysteine). Moreover, extracts and supplements rich in these compounds are also effective. This knowledge may help to define dietary strategies to reduce in vivo mercury bioavailability.
