Abstract
Mosquito borne diseases are impeding to human health due to their uncontrolled proliferation. Various commercial insecticides currently used become ineffective due to the resistance acquired by mosquitoes. It is necessary and a priority to combat mosquito population. Plant-based products are gaining interest over the past few decades due to their environment friendliness and their effectiveness in controlling mosquitoes along with their lack of toxicity. Essential oil nanoemulsions are found to be highly effective when compared to their bulk counterparts. Due to their nano size, they can effectively interact and yield 100 % mortality with the mosquito larvae and encounter with minimal concentrations. This is the main advantage of the nano-sized particles due to which they find application in various disciplines and have also received the attention of researchers globally. There are various components present in essential oils that have been analysed using GC-MS. These findings reflect the challenge to mosquitoes to gain resistance against each component and therefore it requires time. Commercially used repellants are synthesised using materials like DEET are not advisable for topical application on human skin and essential oil nanoemulsions could be an ideal non toxic candidate that can be used against mosquito adults and larvae. However, there are other synthesis, optimisation parameters, and toxicity towards non-target organisms that have to be taken into account when essential oil nanoemulsions are considered for commercial applications. Here we review the strategies used by the nanoemulsions against the mosquito population. Apart from the positive effects, their minor drawbacks also have to be scrutinised in the future.

Abstract
The present work aimed to develop, characterize, and evaluate the antibacterial and antibiofilm activity of two nanoemulsions (NEs) containing 500 µg/mL of curcumin from Curcuma longa (CUR). These NEs, produced with heating, contain olive oil (5%) and the surfactants tween 80 (5%) and span 80 (2.5%), water q.s. 100 mL, and were stable for 120 days. NE-2-CUR presented Ø of 165.40 ± 2.56 nm, PDI of 0.254, ζ of - 33.20 ± 1.35 mV, pH of 6.49, and Entrapment Drug Efficiency (EE) of 99%. The NE-4-CUR showed a Ø of 105.70 ± 4.13 nm, PDI of 0.459, ζ of - 32.10 ± 1.45 mV, pH of 6.40 and EE of 99.29%. Structural characterization was performed using DRX and FTIR, thermal characterization using DSC and TG, and morphological characterization using SEM, suggesting that there is no significant change in the CUR present in the NEs and that they remain stable. The MIC was performed by the broth microdilution method for nine gram-positive and gram-negative bacteria, as well as Klebsiella pneumoniae clinical isolates resistant to antibiotics and biofilm and efflux pump producers. The NEs mostly showed a bacteriostatic profile. The MIC varied between 125 and 250 µg/mL. The most sensitive bacteria were Staphylococcus aureus and Enterococcus faecalis, for which NE-2-CUR showed a MIC of 125 µg/mL. The NEs and ceftazidime (CAZ) interaction was also evaluated against the K. pneumoniae resistant clinical isolates using the Checkerboard method. NE-2-CUR and NE-4-CUR showed a synergistic or additive profile; there was a reduction in CAZ MICs between 256 times (K26-A2) and 2 times (K29-A2). Furthermore, the NEs inhibited these isolates biofilms formation. The NEs showed a MBIC ranging from 15.625 to 250 µg/mL. Thus, the NEs showed physicochemical characteristics suitable for future clinical trials, enhancing the CAZ antibacterial and antibiofilm activity, thus becoming a promising strategy for the treatment of bacterial infections caused by multidrug-resistant K. pneumoniae. Abstract
Liquid-liquid emulsions are used in a variety of industry sectors, including personal care, home care, food, and nutrition. The development of compact and modular systems and devices for creating emulsions with desired droplet size distribution (DSD) is becoming increasingly important. In this work, we have shown use of vortex-based cavitation devices for producing emulsions at nominal flow rate of 1 LPM and 20 LPM. We present new experimental results providing quantitative information on influence of multiple passes through the vortex based hydrodynamic cavitation (HC) device, type of oil and device scale on the breakage process and resulting DSDs. Multiple pass experiments were performed for generating oil-in-water emulsions containing 5 and 15% of oil. Rapeseed oil (RO) and tetrachloroethylene (TCE) were used as oil phases with densities of 915 and 1620 kg/m3, respectively. The effect of pressure drop across the HC device in the range of 50-250 kPa on DSD was examined. The HC device was shown to exhibit significant higher efficiency compared to alternative emulsion making devices (i.e., homogenizers, venturi, and orifice-based HC devices), and the Sauter mean drop size was found to reduce from 66 μm to less than 2 μm after about 50 passes in all the device scales. The DSD of the RO-water system showed a bimodal nature, whereas monomodal DSD was found for TCE-water system. Preliminary simulations using the computational fluid dynamics-population balance model (CFD-PBM) models developed in the previous work indicated the inadequacy of developed models to capture the influence of cavitation on DSDs. By carrying out Hinze scale analysis of bimodal DSD, we for the first time showed the existence of two different mechanisms (one based on conventional turbulent shear and the other based on collapsing cavities) of droplet breakage in HC devices. The order of magnitude of turbulence energy dissipation rates generated due to collapsing cavity estimated using Hinze scale analysis showed good agreement with the values reported from cavity dynamics models. The presented experimental results and analysis will be useful for researchers and engineers interested in developing computational models and compact devices for producing emulsions of the desired DSD.

Abstract
Submicron droplets are ubiquitous in nature and widely applied in fields such as biomedical diagnosis and therapy, oil recovery and energy conversion, among others. The submicron droplets are kinetically stable, their submicron size endows them with good mobility in highly constricted pathways, and the high surface-to-volume ratio allows effective loading of chemical components at the interface and good heat transfer performance. Conventional generation technology of submicron droplets in bulk involves high energy input, or relies on chemical energy released from the system. Microfluidic methods are widely used to generate highly monodispersed micron-sized or bigger droplets, while downsizing to the order of 100 nm was thought to be challenging because of sophisticated nanofabrication. In this review, we summarize the microfluidic methods that are promising for the generation of submicron droplets, with an emphasize on the device fabrication, operational condition, and resultant droplet size. Microfluidics offer a relatively energy-efficient and versatile tool for the generation of highly monodisperse submicron droplets.

Abstract
Muscle foods are regarded as nutritionally dense foods while they are prone to spoilage by action of microorganism and oxidation. Recently, the consumer's preference is mostly toward minimally processed foods as well as preserved with natural preservatives. However, natural extract directly to the food matrix has several drawbacks. Hence development and applications of nanoemulsion has gained importance for the preservation of muscle foods to meet consumer requirements with enhanced food safety. Nanoemulsion utilizes natural extracts at much lower concentration with higher preservative abilities over original components. Nanoemulsions offer protection to the active component from degradation and ensure longer bioavailability. Novel techniques used for formulation of nanoemulsion provide stability to the emulsion with desirable qualities to improve their impacts. The application of nanoemulsion is known to enhance the preservative action of nanoemulsions by improving the microbial safety and oxidative stability in nanoform. This review provides recent updates on different methods used for formulation of nanoemulsions from different sources. Besides, successful application of nanoemulsion derived using natural agents for muscle food preservation and shelf life extension are reviewed. Thus, the application of nanoemulsion to extend shelf life and maintain quality is suggested for muscle foods.

Abstract
Mung bean (Vigna radiata) flour serves as an excellent biopolymer and a potential material for producing antioxidant and antimicrobial phyto-films. In addition to mung bean flour, this study also combined the longkong (Aglaia dookkoo Griff.) pericarp extract (LPE, 1.5%) and ultrasonication process (0 (C1), 2 (T1), 4 (T2), 6 (T3), 8 (T4), and 10 (T5) min, sonicated at 25 kHz, 100% amplitude) in film emulsion production to improve the antioxidant and antimicrobial efficiency in the phyto-films. This study showed that sonication increased the phyto-films’ color into more lightness and yellowness, and the intensity of the color changes was in accordance with the increased sonication time. Alternatively, the thickness, water vapor permeability, and solubility of the films were adversely affected by extended sonication. In addition, elongation at break and tensile strength increased while the Young modulus decreased in the phyto-films with the extended sonication. Furthermore, the droplet size and polydispersity index of the phyto-films decreased with extended sonication. Conversely, the zeta potential of the film tended to increase with the treatments. Furthermore, phytochemicals such as total phenolic content and total flavonoid contents, and the radical scavenging ability of phyto-films against the DPPH radical, ABTS radical, superoxide radical, hydroxyl radical, and ferrous chelating activity, were significantly higher, and they were steadily increased in the films with the extended sonication time. Furthermore, the phyto-films showed a significant control against Gram (-) pathogens, followed by Gram (+) pathogens. A higher inhibitory effect was noted against L. monocytogens, followed by S. aureus and B. subtilis. Similarly, the phyto-films also significantly inhibited the Gram (-) pathogens, and significant control was noted against C. jejuni, followed by E. coli and P. aeruginosa. Regardless of the mung bean flour, this study found that longkong pericarp extract and the sonication process could also effectively be used in the film emulsions to enhance the efficiency of the antioxidant and antimicrobial properties of phyto-films.

Abstract
Lemon essential oil (LEO) is a kind of citrus essential oil with antioxidant, anti-inflammatory, and antimicrobial activities, but low water solubility and biological instability hinder its industrial application. In this study, LEO was nanoemulsified to solve these problems. The preparation procedure of lemon essential oil nanoemulsions (LEO-NEs) was optimized, and the physicochemical characterization and antioxidant activities were explored. Single-factor experiments (SFEs) and response surface methodology (RSM) were conducted for the effects on the mean droplet size of LEO-NEs. Five factors of SFE which may influence the droplet size were identified: HLB value, concentration of essential oil, concentration of surfactant, ultrasonic power, and ultrasonic time. On the basis of the SFE, the RSM approach was used to optimize the preparation procedure to obtain LEO-NEs with the smallest droplet size. LEO-NEs exhibited good antioxidant activity when the HLB value was 13, content of surfactant was 0.157 g/mL, ultrasonic time was 23.50 min, and ultrasonic power was 761.65 W. In conclusion, these results can provide a good theoretical basis for the industrial application of lemon essential oil.

Abstract
The fragmentation rate function connects the fundamental drop breakup process with the resulting drop size distribution and is central to understanding or modeling emulsification processes. There is a large interest in being able to reliably measure it from an emulsification experiment, both for generating data for validating theoretical fragmentation rate function suggestions and as a tool for studying emulsification processes. Consequently, several methods have been suggested for measuring fragmentation rates based on emulsion experiments. Typically, each study suggests a new method that is rarely used again. The lack of an agreement on a standard method has become a substantial challenge. This contribution critically and systematically analyses four influential suggestions of how to measure fragmentation rate in terms of validity, reliability, and sensitivity to method assumptions. The back-calculation method is identified as the most promising—high reliability and low sensitivity to assumption—whereas performing a non-linear regression on a parameterized model (as commonly suggested) is unsuitable due to its high sensitivity. The simplistic zero-order method is identified as an interesting supplemental tool that could be used for qualitative comparisons but not for quantification.

Abstract
Emulsion gels have a wide range of applications. We report on a facile and versatile method to produce stable emulsion gels with tunable rheological properties. Gel formation is triggered by subjecting a mixture containing aqueous colloidal particle (CP) suspensions and water-immiscible liquids to intense turbulence, generated by low frequency (20 kHz) ultrasound or high-pressure homogenization. Through systematic investigations, requisite gel formation criteria are established with respect to both formulation and processing, including ratio/type of liquid pairs, CP properties, and turbulence conditions. Based on the emulsion microstructure and rheological properties, inter-droplet bridging and CP void-filling are proposed as universal stabilization mechanisms. These mechanisms are further linked to droplet-size scaling and sphere close-packing theory, distinctive from existing gel-conferring models. The study thereby provides the foundation for advancing the production of emulsion gels that can be tailored to a wide range of current and emerging applications in the formulation and processing of food, cosmetics or pharmaceutical gels, and in material science.

Abstract
A promising strategy to formulate poorly water-soluble active pharmaceutical ingredients (APIs) is the application of these substances in solid lipid nanoparticles. These drug carrier systems are commonly prepared by high-pressure homogenization above the melting temperature of the utilized lipid. While being very useful for large-scale production this method is quite resource-consuming and does not allow simultaneous processing of multiple samples, e.g. for screening purposes. For this reason, an alternative manufacturing process, dual centrifugation, is introduced to prepare solid lipid nanoparticles. The ingredients of the dispersions were directly weighed into 2 mL vessels at room temperature without the need to prepare a pre-mix emulsion. Due to an additional rotation of the samples in the heated centrifuge as well as the addition of grinding media an intensive stressing of the samples was achieved. The emulsification process was finished within 10 min with sample temperatures of up to 90 °C being obtained. Dependent on the process set-up like grinding media size, filling ratio or process temperature and the composition of the lipid formulation, the achieved particles sizes were below 200 nm and had a narrow, monomodal size distribution.

Abstract
Many industrially relevant emulsification devices are of the high-energy type, where drop deformation and subsequent breakup, take place due to intense turbulent fluid–drop interactions. This includes high-pressure homogenizers as well as rotor-stator mixers (also known as high-shear mixers) of various designs. The stress acting on a drop in a turbulent flow field varies over time, occasionally reaching values far exceeding its time-averaged value, but only during limited stretches of time, after which it decreases down to low values again. This it is one factor separating turbulent from laminar emulsification. This contribution reviews attempts to take this intermittently time-varying stress into account in models predicting the characteristic drop diameter resulting from emulsification experiments, focusing on industrially applicable emulsification devices. Two main frameworks are discussed: the Kolmogorov–Hinze framework and the oscillatory resonance framework. Modelling suggestions are critically discussed and compared, with the intention to answer how critical it is to correctly capture this time-varying stress in emulsification modelling. The review is concluded by a list of suggestions for future investigations.

Abstract
Quaternary derivatives of 1,4-diazabicyclo[2.2.2]octane (DABCO) and of quinuclidine surfactants were used to develop oil-in-water nanoemulsions with the purpose of selecting the best long-term stable nanoemulsion for the ocular administration of triamcinolone acetonide (TA). The combination of the best physicochemical properties (i.e., mean droplet size, polydispersity index, zeta potential, osmolality, viscoelastic properties, surface tension) was considered, together with the cell viability assays in ARPE-19 and HMC3 cell lines. Surfactants with cationic properties have been used to tailor the nanoemulsions’ surface for site-specific delivery of drugs to the ocular structure for the delivery of TA. They are tailored for the eye because they have cationic properties that interact with the anionic surface of the eye.

Abstract
Nanoemulsions are considered as the most promising solution to improve the delivery of ophthalmic drugs. The design of ophthalmic nanoemulsions requires an extensive understanding of pharmaceutical as well as technological aspects related to the selection of excipients and formulation processes. This Review aims at providing the readers with a comprehensive summary of possible compositions of nanoemulsions, methods for their formulation (both laboratory and industrial), and differences between technological approaches, along with an extensive outline of the research methods enabling the confirmation of in vitro properties, pharmaceutical performance, and biological activity of the obtained product. The composition of the formulation has a major influence on the properties of the final product obtained with low-energy emulsification methods. Increasing interest in high-energy emulsification methods is a consequence of their scalability important from the industrial perspective. Considering the high-energy emulsification methods, both the composition and conditions of the process (e.g., device power level, pressure, temperature, homogenization time, or number of cycles) are important for the properties and stability of nanoemulsions. It is advisible to determine the effect of each parameter on the quality of the product to establish the optimal process parameters' range which, in turn, results in a more reproducible and efficient production.

Abstract
Oral drug products have become indispensable in modern medicine because of their exceptional patient compliance. However, poor bioavailability of ubiquitous low-water-soluble active pharmaceutical ingredients (APIs) and lack of efficient oral drug formulations remain as significant challenges. Nanocrystalline formulations are an attractive route to increase API solubility, but typically require abrasive mechanical milling and several processing steps to create an oral dosage form. Using the dual amphiphilic and thermoresponsive properties of methylcellulose (MC), a new thermogelling nanoemulsion and a facile thermal dripping method are developed for efficient formulation of composite particles with the MC matrix embedded with precisely controlled API nanocrystals. Moreover, a fast and tunable release performance is achieved with the combination of a fast-eroding MC matrix and fast-dissolving API nanocrystals. Using the versatile thermal processing approach, the thermogelling nanoemulsion is easily formulated into a wide variety of dosage forms (nanoparticle suspension, drug tablet, and oral thin film) in a manner that avoids nanomilling. Overall, the proposed thermogelling nanoemulsion platform not only broadens the applications of thermoresponsive nanoemulsions but also shows great promise for more efficient formulation of oral drug products with high quality and tunable fast release.

Abstract
This paper theorizes the existence of a constant optimum ultrasound process time for any size-reduction operation, independent of process parameters, and dependent on product parameters. We test the concept using the case of ‘ultrasonic preparation of oil-in-water nanoemulsions’ as model system. The system parameters during ultrasonication of a hempseed oil nanoemulsion was evaluated by a response surface methodology, comprising lecithin and poloxamer-188 as surfactants. Results revealed that the particle size and emulsion stability was affected significantly (p < 0.05) by all product parameters (content of hempseed oil-oil phase, lecithin and polaxamer-surfactants); but was not significantly (p > 0.05) affected by process parameter (‘ultrasonication process time’). Next, other process parameters (emulsion volume and ultrasonic amplitude) were tested using kinetic experiments. Magnitude of particle size reduction decreased with increasing ‘ultrasonication process time’ according to a first order relationship, until a minimum particle size was reached; beyond which ultrasonication no longer resulted in detectable decrease in particle size. It was found that the optimal ultrasonication process time (defined as time taken to achieve 99% of the ‘maximum possible size reduction’) was 10 min, and was roughly constant regardless of the process parameters (sample volume and ultrasonic amplitude). Finally, the existence of this constant optimal ultrasonication process time was proven for another emulsion system (olive oil and tween 80). Based on the results of these case studies, it could be theorized that a constant optimum ultrasonication process time exists for the ultrasonication-based size-reduction processes, dependent only on product parameters.

Abstract
In recent years, several studies have shown that the use of solid lipid nanoparticles (SLN) as a colloidal drug delivery system was more advantageous than lipid emulsions, liposomes and polymeric nanoparticles. SLNs have numerous advantages of different nanosystems and rule out many of their drawbacks. Despite the numerous advantages of SLNs, translation from the preclinical formulation to the industrial scale-up is limited. In order to provide a reproducible and reliable method of producing nanoparticles, and thus, obtain an industrial scale-up, several methods of synthesis of nanoparticles by microfluidic have been developed. Microfluidic technique allows a good control and a continuous online synthesis of nanosystems compared to synthesis in bulk, leading to a narrow size distribution, high batch-to-batch reproducibility, as well as to the industrial scale-up feasibility. This work described the optimization process to produce SLNs by microfluidics. The SLNs produced by microfluidics were characterized by complementary optical and morphological techniques and compared with those produced by bulk method. SLNs were loaded with paclitaxel and sorafenib, used as model drugs. The anti-cancer efficiency of the SLNs formulation was estimated with 2D and 3D tumour models of two different cell lines, and the cellular uptake was also studied with fluorescence-assisted measurements.

Abstract
Biocompatible nanoemulsions and nanoemulsion-based hydrogels were formulated for the encapsulation and delivery of vitamin D3 and curcumin. The aforementioned systems were structurally studied applying dynamic light scattering (DLS), electron paramagnetic resonance (EPR) spectroscopy and viscometry. In vitro studies were conducted using Franz diffusion cells to investigate the release of the bioactive compounds from the nanocarriers. The cytotoxicity of the nanoemulsions was investigated using the thiazolyl blue tetrazolium bromide (MTT) cell proliferation assay and RPMI 2650 nasal epithelial cells as in vitro model. DLS measurements showed that vitamin D3 and curcumin addition in the dispersed phase of the nanoemulsions caused an increase in the size of the oil droplets from 78.6 ± 0.2 nm to 83.6 ± 0.3 nm and from 78.6 ± 0.2 nm to 165.6 ± 1.0 nm, respectively. Loaded nanoemulsions, in both cases, were stable for 60 days of storage at 25 °C. EPR spectroscopy revealed participation of vitamin D3 and curcumin in the surfactants monolayer. In vitro release rates of both lipophilic compounds from the nanoemulsions were comparable to the corresponding ones from the nanoemulsion-based hydrogels. The developed o/w nanoemulsions did not exhibit cytotoxic effect up to the concentration threshold of 1 mg/mL in the cell culture medium.

Abstract
Citrus is a genus belonging to the Rutaceae family and includes important crops like orange, lemons, pummelos, grapefruits, limes, etc. Citrus essential oils (CEOs) consist of some major biologically active compounds like α-/β-pinene, sabinene, β-myrcene, d-limonene, linalool, α-humulene, and α-terpineol belonging to the monoterpenes, monoterpene aldehyde/alcohol, and sesquiterpenes group, respectively. These compounds possess several health beneficial properties like antioxidant, anti-inflammatory, anticancer, etc., in addition to antimicrobial properties, which have immense potential for food applications. Therefore, this review focused on the extraction, purification, and detection methods of CEOs along with their applications for food safety, packaging, and preservation. Further, the concerns of optimum dose and safe limits, their interaction effects with various food matrices and packaging materials, and possible allergic reactions associated with the use of CEOs in food applications were briefly discussed, which needs to be addressed in future research along with efficient, affordable, and "green" extraction methods to ensure CEOs as an ecofriendly, cost-effective, and natural alternative to synthetic chemical preservatives.

Abstract
In the past two decades, microfluidics-based particle production is widely applied for multiple biological usages. Compared to conventional bulk methods, microfluidic-assisted particle production shows significant advantages, such as narrower particle size distribution, higher reproducibility, improved encapsulation efficiency, and enhanced scaling-up potency. Herein, an overview of the recent progress of the microfluidics technology for nano-, microparticles or droplet fabrication, and their biological applications is provided. For both nano-, microparticles/droplets, the previously established mechanisms behind particle production via microfluidics and some typical examples during the past five years are discussed. The emerging interdisciplinary technologies based on microfluidics that have produced microparticles or droplets for cellular analysis and artificial cells fabrication are summarized. The potential drawbacks and future perspectives are also briefly discussed.

Abstract
Unlike conventional emulsions, solid lipids are used to prepare solid lipid nanoparticles (SLNs) with crystalline structures and nanostructured lipid carriers (NLCs) with imperfect crystals or amorphous structures to encapsulate various bioactive compounds significant to food applications. The solid lipid matrix can stabilize particle structures and control release properties of the encapsulated compounds that may not be possible for emulsions with liquid droplets. In this review, common approaches of preparing SLNs and NLCs are first presented, followed by parameters used to study lipid particles, including dimensional, morphological, charge, thermal, and crystalline properties. The structures of SLNs and NLCs with respect to the release mechanisms of encapsulated compounds are discussed in the context of lipid and emulsifier chemistry and preparation conditions. Lastly, possible applications of SLNs and NLCs in food systems are discussed.

Abstract
BACKGROUND Perfluorocarbon-nanoemulsions (PFC-NE) made of PFC and phospholipids (PL) by homogenization are optimal for in vivo-19F labelling of monocytes and subsequently of inflamed tissues in magnetic resonance imaging (MRI). Necessary requirements for in vivo use of PFC-NE are sterility, suitable droplet sizes and the absence of immune activating liposomes, which are a typical byproduct of the homogenization process. METHODS AND RESULTS To meet these requirements, we developed an aseptic in-vial preparation technique for PFC-NE based on dual centrifugation (DC) by testing different PFC/phospholipid ratios as well as the application of additives. Two different PFC, perfluorooctylbromide (PFOB) and perfluoro-15-crown-5-ether (PFCE), were investigated. Particle sizes were assessed by dynamic light scattering and NE morphology by cryoTEM. DC homogenization was optimal when using an excess of PL (8.7 % (m/m) of utilized PFC, z-ave: 180 nm, pdi: 0.2). A purification approach by centrifugation was implemented to remove liposomes formed from the excess of PL during homogenization. The purification success was proven by phospholipid assay and PFC quantification via density and sound velocity measurements. CONCLUSION DC in combination with a short centrifugation is a fast and reliable way of small-scale aseptic PFC-NE production for 19F MRI passive-targeting experiments of monocytes and inflamed tissues.

Abstract
Nanotechnology, particularly nanoemulsions (NEs), have gained increasing interest from researchers throughout the years. The small-sized droplet with a high surface area makes NEs important in many industries. In this review article, the components, properties, formation, and applications are summarized. The advantages and disadvantages are also described in this article. The formation of the nanosized emulsion can be divided into two types: high and low energy methods. In high energy methods, high-pressure homogenization, microfluidization, and ultrasonic emulsification are described thoroughly. Spontaneous emulsification, phase inversion temperature (PIT), phase inversion composition (PIC), and the less known D-phase emulsification (DPE) methods are emphasized in low energy methods. The applications of NEs are described in three main areas which are food, cosmetics, and drug delivery.

Abstract
Fungal and mycotoxin contamination of stored food items is of utmost concern throughout the world due to their hazardous effects on mammalian systems. Most of the synthetic chemicals used as preservatives have often been realised to be toxic to humans and also cause adverse environmental effects. In this respect, use of different plant products especially essential oils (EOs) and their bioactive compounds has been recognized as a green strategy and safer alternatives to grey synthetic chemicals in view of their long traditional use. The current nanoencapsulation technology has strengthened the prospective of EOs and their bioactive compounds in food preservation by enhancing their bioactivity and mitigating other problems regarding their large-scale application. Although, the antimicrobial potential of EOs and their bioactive compounds has been reviewed time to time by different food microbiologists, but very less is known about their mode of action. Based on these backgrounds, the present article provides an account on the antifungal and antimycotoxigenic mode of action of EOs as well as their bioactive compounds. In addition, the article also deals with the application of currently used nanoencapsulation approach to improve the stability and efficacy of EOs and their bioactive compounds against mycotoxigenic fungi causing deterioration of stored food items so as to recommend their large-scale application for safe preservation and enhancement of shelf life of food items during storage.

Abstract
The dynamics of droplet breakup during emulsification is a complicated process due to the interplay between multiple physico-chemical and hydrodynamic factors, especially in an energy-intensive ultrasound-assisted emulsification process. In this work, by mapping the physical processing parameters of ultrasound emulsification into a reduced domain that is governed by the power density and the initial average droplet diameter, a dimensionless parameter that resembles the dynamic breakup potential (η) was established via dimensional analysis. In addition to shedding important insights into the emulsification process, η further facilitates the establishment of a transient scaling relationship that is a function of the characteristic value (a) of the emulsion system. Experimental case study on a cellulose nanocrystals (CNC)-based olein-in-water emulsion system prepared via ultrasound cavitation confirmed the validity of the scaling relationship and sub-universal self-similarity was observed. Using the proposed model, good predictions of the transient of droplet size evolution were attained where the value of η, i.e. the proportionality constant, can be conveniently computed using data from a single time point. Application on other emulsion systems further suggested that the value of a possibly indicates the relative minimum size limit of a particular fluids-emulsifier system. Our approach is general, which encourages widespread adoption for emulsification related studies.

Abstract
The influence of carrier oil type (corn, fish, or flaxseed oil) on the production, stability, and simulated gastrointestinal behavior of vitamin-fortified nanoemulsions was studied. The nanoemulsions were formulated using pea protein as an emulsifier since there is increasing interest in substituting artificial and animal-based food ingredients with natural plant-based alternatives. Lipid digestion and vitamin D3 bioaccessibility were measured when the nanoemulsions were subjected to a three-stage in vitro gastrointestinal tract: oral, gastric, and small intestinal. The majority of all three lipids were digested within the first few minutes in the simulated small intestine, with the corn oil nanoemulsions being digested faster than the fish or flaxseed oils. Moreover, a greater fraction of triglycerides were digested by the end of the small intestine for the corn oil than for the fish and flaxseed oils. For the different carrier oils, vitamin bioaccessibility was ranked: corn oil > flaxseed oil ≈ fish oil. These results suggest that monounsaturated-rich oils (such as corn oil) are better for encapsulating and delivering vitamin D3 than polyunsaturated-rich ones (such as flaxseed or fish oil). The insights gained here may aid in the formulation of more efficacious vitamin-fortified foods and beverages from plant-derived ingredients.

Abstract
Nanoemulsion systems comprising n-heptane (oleic component), stabilized by the {gemini surfactant (14-6-14 GS) + polymer [partially hydrolyzed poly-acrylamide (PHPA)] + silica (SiO2) nanoparticle} shell and dispersed in aqueous phase, were synthesized by ultrasonication (high-energy method). Influence of ultrasonication time on nanoemulsion kinetics was investigated to predict the saturation droplet diameter. Morphological analysis by transmission electron cryomicroscopy imaging showed that oleic phase appears as uniformly dispersed spherical droplets in 14-6-14 GS-stabilized nanoemulsion, which on PHPA addition changes into a network structure consisting of larger oil droplets. 14-6-14 + PHPA + SiO2 nanoemulsion systems show more effective packing arrangement with irregular-shaped (nonspherical) droplets. Dynamic light scattering studies identified droplet size distribution profiles in the range 4.2-25.4 nm for the surfactant-stabilized nanoemulsion, 125.9-358.8 nm for the surfactant-polymer nanoemulsion, and 88.4-222.3 nm for the surfactant-polymer-nanoparticle-based nanoemulsion in optimal dosage(s). Statistical analyses were performed using normal, log-normal, and Cauchy-Lorentz distribution functions. A modified form of Hinze theory was employed to model droplet behavior in analyzed nanoemulsion systems. Zeta potential values of nanoemulsions were studied at different time intervals to determine kinetic stability as well as corroborate Hinze model findings. In summary, this article aims at investigating nanoemulsion droplet stability by thorough examination of electrostatic repulsive barrier and steric hindrance effects.

Abstract
Delivery systems able to coencapsulate both hydrophilic and hydrophobic species are of great interest in both fundamental research and industrial applications. Water-in-oil-in-water (w1/O/W2) emulsions are interesting systems for this purpose, but they suffer from limited stability. In this study, we propose an innovative approach to stabilize double emulsions by the synthesis of a silica membrane at the water/oil interface of the primary emulsion (i.e., inner w1/O emulsion). This approach allows the formulation of stable double emulsions through a two-step process, enabling high encapsulation efficiencies of model hydrophilic dyes encapsulated in the internal droplets. This approach also decreases the scale of the double droplets up to the nanoscale, which is not possible without silica stabilization. Different formulation and processing parameters were explored in order to optimize the methodology. Physicochemical characterization was performed by dynamic light scattering, encapsulation efficiency measurements, release profiles, and optical and transmission electron microscopies.

Abstract
The combined effect of viscosity ratio, interfacial tension, and disperse phase density on the process of droplet formation during emulsification was evaluated. For that aim, emulsification by ultrasonication of oil/water systems with viscosity ratios between 1 and 600, with and without surfactant was performed. The time evolution of the average droplet size was estimated by dynamic light scattering measurements. For viscosity ratios between 1 and 200 in the presence of surfactant, our results partly reproduce those of the intriguing U-type reported in the literature. Beyond that range, the droplet size decreases, as the viscosity ratio rises. For surfactant-free systems, the size is slightly affected by the increase in viscosity. This complex scenario is analyzed in terms of both the individual and intertwined roles of interfacial tension, viscosity, and density ratios: (1) if the interfacial tension dominates, the droplet rupturing process is independent of its internal properties, and inversely, (2) if the interfacial tension is low, the internal properties play a major role in the rupturing of the droplet. Finally, we identified a scenario in which the retarded addition of surfactant leads to emulsions with a stability similar to those with the surfactant added at the beginning, saving energy and time.

Abstract
Emulsions are suspensions of droplets ubiquitous in oil recovery from underground reservoirs. Oil is typically trapped in geological porous media where emulsions are either formed in situ or injected to elicit oil mobilization and thus enhance the amount of oil recovered. Here, we briefly review basic concepts on geometrical and wetting features of porous media, including thin film stability and fluids penetration modes, which are more relevant for oil recovery and oil-contaminated aquifers. Then, we focus on the description of emulsion flow in porous media spanning from the behaviour of single droplets to the collective flow of a suspension of droplets, including the effect of bulk and interfacial rheology, hydrodynamic and physico-chemical interactions. Finally, we describe the particular case of emulsions used in underground porous media for enhanced oil recovery, thereby discussing some perspectives of future work. Although focused on oil recovery related topics, most of the insights we provide are useful towards remediation of oil-contaminated aquifers and for a basic understanding of emulsion flow in any kind of porous media, such as biological tissues.

Abstract
Nanotechnology is a field of research that has been stressed as a very valuable approach for the prevention and treatment of different human health disorders. This has been stressed as a delivery system for the therapeutic fight against an array of pathophysiological situations. Actually, industry has applied this technology in the search for new oral delivery alternatives obtained upon the modification of the solubility properties of bioactive compounds. Significant works have been made in the last years for testing the input that nanomaterials and nanoparticles provide for an array of pathophysiological situations. In this frame, this review addresses general questions concerning the extent to which nanoparticles offer alternatives that improve therapeutic value, while avoid toxicity, by releasing bioactive compounds specifically to target tissues affected by specific chemical and pathophysiological settings. In this regard, to date, the contribution of nanoparticles to protect encapsulated bioactive compounds from degradation as a result of gastrointestinal digestion and cellular metabolism, to enable their release in a controlled manner, enhancing biodistribution of bioactive compounds, and to allow them to target those tissues affected by biological disturbances has been demonstrated.
