Abstract
Hydrophilic and hydrophobic modified nanomicelles might be more conducive to passage of the gastrointestinal barrier than walnut peptide (WP). In this study, a novel double modified starch polymer, SB-CST-DCA, was synthesized by grafting sulfabetaine (SB) and deoxycholic acid (DCA) onto corn starch (CST) molecules through etherification and esterification. The modification mechanism was discussed to determine its chemical structure, morphological properties, and thermal stability. Peptide-loaded nanomicelles (SB-CST-DCA-WP) were prepared using WP as the core material. The encapsulation efficiency and peptide loading amount reached 76.90 ± 1.52% and 18.27 ± 0.53%, respectively, with good stability and pH-responsive release behavior observed to effectively control WP release and enhance its antioxidant activity. The composite exhibited safety, non-toxicity, and good blood compatibility at concentrations below 125 μg/mL. Duodenum was identified as the main absorption site with an absorption ratio of 41.16 ± 0.36%.

Abstract
Successful oral insulin administration can considerably enhance the quality of life (QOL) of diabetes patients who must frequently take insulin injections. However, Oral insulin administration is seriously hampered by gastrointestinal enzymes, wide pH range, mucus and mucosal layers, which limit insulin oral bioavailability to ≤2 %. Herein, we developed a simple, inexpensive and safe dual β-cyclodextrin/dialdehyde glucan-coated keratin nanoparticle (β-CD-K-IN-DG). The resulted β-CD-K-IN-DG not only gave the ultra-high insulin loading (encapsulation efficiency (98.52 %)), but also protected insulin from acid and enzymatic degradation. This β-CD-K-IN-DG had a notable hypoglycemic effect, there was almost 80 % insulin release after 4 h of incubation under hyperglycemic conditions. Ex vivo results confirmed that β-CD-K-IN-DG possessed high mucus-penetration ability. Transepithelial transport and uptake mechanism studies revealed that bypass transport pathway and endocytosis promoted β-CD-K-IN-DG entered intestinal epithelial cells, thus increased the bioavailability of insulin (12.27 %). The improved stability of insulin during in vivo transport implied that β-CD-K-IN-DG might be a potential tool for the effective oral insulin administration.

Abstract
Characterizing the structural changes of cell-targeting delivery carriers in gastrointestinal tract (GIT) is crucial for understanding their effectiveness in cell targeting and transport. Herein, RGD peptide-grafted carboxymethyl starch (CMS) and cationic quaternary ammonium starch (QAS) were utilized to fabricate quintet-layered nanocapsules loaded with ovalbumin (OVA). The aim was to improve delivery and transportation efficiency, specifically targeting M cells. The research analyzed the impact of pH and enzyme variations in GIT on the structure of nanocapsules, interactions between carriers and the release behavior of OVA. Results showed that the size of nanocapsules increased from 229.2 to 479.8 nm and the zeta potential decreased from -1.08 to -33.33 mV during oral delivery. This was evident in TEM images, showing a more relaxed core-shell structure. Isothermal titration calorimetry and molecular dynamic simulation indicated that pH changes primarily affected the electrostatic interaction between carriers. Increasing pH led to reduced affinity constants, and around 84.42 % of OVA was successfully delivered to M cells. Moreover, the transport efficiency of nanocapsules to M cells was five times greater than that of Caco-2 cells. This suggests the feasibility of developing a nanocapsules delivery system capable of adapting to pH changes in GIT by regulating electrostatic interactions between carriers.

Abstract
Nanotechnology plays an important role in biological research, especially in the development of delivery systems with lower toxicity and greater efficiency. These include not only metallic nanoparticles, but also biopolymeric nanoparticles. Biopolymeric nanoparticles (BPNs) are mainly developed for their provision of several advantages, such as biocompatibility, biodegradability, and minimal toxicity, in addition to the general advantages of nanoparticles. Therefore, given that biopolymers are biodegradable, natural, and environmentally friendly, they have attracted great attention due to their multiple applications in biomedicine, such as drug delivery, antibacterial activity, etc. This review on biopolymeric nanoparticles highlights their various synthesis methods, such as the ionic gelation method, nanoprecipitation method, and microemulsion method. In addition, the review also covers the applications of biodegradable polymeric nanoparticles in different areas-especially in the pharmaceutical, biomedical, and agricultural domains. In conclusion, the present review highlights recent advances in the synthesis and applications of biopolymeric nanoparticles and presents both fundamental and applied aspects that can be used for further development in the field of biopolymeric nanoparticles.

Abstract
The complexation of carboxymethyl short-chain amylose (CSA) and hydroxypropyl trimethyl ammonium chloride chitosan (HACC) and the stability of CSA/HACC nanocomplex were investigated. Resonance light scattering (RLS), turbidity, nanoparticle size and zeta potential analyses revealed that the complex coacervation occurred between CSA and HACC. The mass ratio and pH markedly influenced the complexation behavior; CSA with a higher degree of substitution (DS0.2) altered the complexation at a lower mass ratio and pH, increasing the turbidity and RLS intensity. The results of particle size and zeta potential analyses indicated that CSA/HACC complexes possessed the good pH and ionic strength stability. In addition to electrostatic interactions, hydrogen bonding and hydrophobic effects were also determined to be involved in the complexation process using thermal titration calorimetry (ITC). Additionally, the process was spontaneous, and CSA with a higher DS showed stronger complexation ability. These results may enable the understanding of polysaccharide complex behaviors.

Abstract
Acetylated acid-ethanol hydrolyzed (AHS) and acetylated debranched starch (ADS) were investigated as prospective nanocarriers. Both acid-ethanol hydrolysis and debranching decreased the molecular weight and viscosity of starch. Acid-ethanol hydrolyzed starch remained the original microstructure, which was confirmed by results of scanning electron microscopy. New absorption peaks in FTIR spectra of starch confirmed the occurrence of acetylation. The substitution degree (DS) of ADS could reach up to 1.18, while that of AHS could be improved by increasing the ethanol concentration. The developed nanoparticles showed uniform spherical structure and the size of that approximated 180-260 nm. The critical micelle concentration was 0.049 mg/mL, and the shift in fluorescence spectra confirmed the interaction between starch and curcumin. These results indicate show that high DS of AHS and ADS could be used as a potential carrier for curcumin delivery.

Abstract
This work chemically modified short linear glucan (SLG) by introducing a surface carboxymethyl group to obtain carboxymethylated SLG (CMSLG), then prepared CMSLG-based ternary nanocomplex particles based on electrostatic interactions with sodium-caseinate (NaCas) and pectin. These nanocomplex particles are homogeneous, generally exhibiting sizes of <200 nm with spherical shape and negative surface charge. In addition, the results showed the increase in both the mass ratio of CMSLG and NaCas and the synthesis temperature can improve the colloidal stability of nanocomplex particles when they are exposed to simulated gastrointestinal fluids containing digestive enzymes. Moreover, nanocomplex particles have an exceptional capability to encapsulate curcumin, and this encapsulation efficiency increased as the mass ratios of CMSLG and NaCas were increased. The study also investigated the antioxidant activity and in vitro release properties of curcumin encapsulated by nanocomplex particles and found that CMSLG/NaCas/pectin had improved higher ABTS radical scavenging capacity and allowed for the controlled, sustained release of curcumin in simulated gastrointestinal fluid within 6 hours. Thus, this study provides new insights into the design of a CMSLG-based ternary nanocomplex and its use as a potential oral delivery system for lipophilic bioactive compounds. PRACTICAL APPLICATION: Curcumin, as a sort of natural polyphenolic compound, has many physiologic functions such as anti-oxidation, anticancer, and prevention of Alzheimer's disease. However, the application of the curcumin has been limited by its poor water solubility and unstable physicochemical property. To solve this problem, the nanotechnology has been used to prepare the nano-delivery carriers for curcumin. This work prepared a ternary nanoparticle based on the carboxymethyl short linear glucan, sodium-caseinate, and pectin. The ternary nanoparticle can achieve a higher encapsulation efficiency for curcumin. In addition, the ternary nanoparticle can enhance the ABTS radical scavenging capacity and provided control and sustained release of curcumin in the simulated gastrointestinal fluid.

Abstract
In the current study, linear dextrin (LD) was prepared using waxy potato starch debranched with pullulanase, which has attracted immense interest in the food, pharmaceutical, and cosmetic industries as a versatile ingredient. Various LDs were separated on the basis of their differential solubility in aqueous/ethanol solutions of different volumetric ratios. Three LD products—LD Fabrications with 40% ethanol (F-40); LD Fabrications with 50% ethanol (F-50); and LD Fabrications with 60%, 70%, and 80% ethanol (F-M)—were obtained with an average degree of polymerization (DP) values of 31.44, 21.84, and 16.10, respectively. The results of Fourier transform infrared spectroscopy (FT-IR) analysis revealed that the reaction mainly involved hydrogen bonding and a hydrophobic interaction between LD and insulin in the process of inclusion complex formation. X-ray diffraction (XRD) results indicated that insulin was encapsulated in LD. The results of circular dichroism (CD) showed that the changes in the secondary structure of insulin were negligible during the release from the inclusion complexes. The order of encapsulation capacity is as follows: the complex composed of F-M and insulin (F-M-INS) > the complex composed of LD and insulin (LD-INS) > the complex composed of F-50 and insulin (F-50-INS) > and the complex composed of F-40 and insulin (F-40-INS). F-M-INS inclusion complexes showed a better effect on reducing the release of insulin in gastric juice and promoting the release of insulin in intestinal juice and blood plasma than LD-INS.

Abstract
Pullulanase debranching and subsequent hydroxypropylation were applied to prepare a series of dual-modified starches (Hydroxypropylated debranched starch, HPDS) with different degrees of hydroxypropyl substitution. Their structural and physicochemical properties varied with the degree of hydroxypropyl substitution, and all HPDS exhibited the ability to self-assemble into well-shaped nanospheres (100-150 nm, PDI < 0.2). These HPDS nanospheres were attempted to encapsulate curcumin with the aim of improving the bioavailability, solubility and stability of curcumin. Their structural characteristics, thermal stability, iodine staining, morphology, safety, encapsulation efficiency, in vitro gastrointestinal release behavior, and anti-inflammatory activity were evaluated. The results showed that curcumin could be effectively encapsulated into the HPDS nanospheres, and the encapsulation efficiency, water solubility and physical stability were positively correlated with the degree of hydroxypropyl substitution. After encapsulation, the water solubility and physical stability of curcumin could be increased up to 226-fold and 6-fold, respectively. The HPDS nanospheres also exhibited good safety (including hemolysis and cytotoxicity) and sustainable release of curcumin. Evaluation of anti-inflammatory activity showed that the activity of curcumin-encapsulated HPDS was enhanced by 170% compared to unencapsulated curcumin. These suggest that HPDS nanospheres encapsulation may be a more suitable option for the development of functional foods containing bioactive compounds.

Abstract
Polysaccharides are well accepted biomaterials that have attracted considerable attention. Compared with other materials under research, polysaccharides show unique advantages: they are available in nature and are normally easily acquired, those acquired from nature show favorable immunogenicity, and are biodegradable and bioavailable. The bioactivity and possible applications are based on their chemical structure; however, naturally acquired polysaccharides sometimes have unwanted flaws that limit further applications. For this reason, carefully summarizing the possible modifications of polysaccharides to improve them is crucial. Structural modifications can not only provide polysaccharides with additional functional groups but also change their physicochemical properties. This review based on the structure-property relation summarizes the common chemical modifications of polysaccharides, the related bioactivity changes, possible functionalization methods, and major possible biomedical applications based on modified polysaccharides.

Abstract
Noninvasive and precise diagnosis of hepatic fibrosis is very important for the preventive therapeutic regimen of hepatic cirrhosis and cancer. In this study, we fabricated T1 contrast Mn-porphyrin (MnTPPS4 )/retinoic acid-chitosan ionic-complex nanoparticles (MRC NPs). The functional properties of MRC NPs were evaluated via transmission electron microscopy (TEM) imaging, release study, cytotoxicity assay, hepatocyte-specific uptake assay, and magnetic resonance (MR) imaging study. TEM images confirmed the typical structure of an ionic-complex NPs with around 100-200 nm of diameter. MnTPPS4 is released from MRC NPs for up to 24 hr in controlled pattern which implies that more reliable and convenient hepatic MR imaging is possible using of MRC NPs in clinical practice. Hepatocytes uptake assay proved retinoic acid-specific targeting of MRC NPs. The same results were observed in animal pharmacokinetic studies. In vitro MR phantom study, MRC NPs showed an increased T1 relaxivity (r1 = 6.772 mM-1 s-1 ) in comparison with 3.242 mM-1 s-1 of MnTPPS4 . The result was confirmed again in vivo MR imaging studies. Taken together, MRC NPs displayed a potential for noninvasive diagnostic T1 MR imaging of hepatic fibrosis with improved target specificity and prolonged MR imaging time window.

Abstract
Novel starch polymers (sulfobetaine-starch-deoxycholic acid) were first synthesized by grafting zwitterionic sulfobetaine and deoxycholic acid onto corn starch molecules. In order to explore the mechanism of modified starch, the chemical structure, morphological properties, thermal stability, and self-assembly performance of modified corn starch were determined. Preliminary structural characterization, using NMR, demonstrated that the glucose carbon C6 was the main etherification grafting site and C2 and C3 were the esterification grafting sites. This was confirmed using FT-IR to detect the presence of a new carbonyl signal around 1739 cm-1. XRD, SEM, and PLM micrographs showed structural losses in the starch granule. Thermogravimetric analysis showed an increase in thermal stability with etherification and esterification in nature. Self-assembly performance analysis demonstrated that the polymer formed more thermodynamically stable micelles under highly diluted conditions. This work will help expand the space for starch application.

Abstract
OBJECTIVES The main objective of the present study was to develop a nanoparticulate drug delivery system that can protect insulin against harsh conditions in the gastrointestinal (GI) tract. The effects of the following employed techniques, including lyophilisation, cross-linking and nanoencapsulation, on the physicochemical properties of the formulation were investigated. METHODS We herein developed a nanocarrier via ionotropic gelation by using positively charged chitosan and negatively charged Dz13Scr. The lyophilised nanoparticles with optimal concentrations of tripolyphosphate (cross-linking agent) and β-cyclodextrin (stabilising agent) were characterised by using physical and cellular assays. KEY FINDINGS The addition of cryoprotectants (1% sucrose) in lyophilisation improved the stability of nanoparticles, enhanced the encapsulation efficiency, and ameliorated the pre-mature release of insulin at acidic pH. The developed lyophilised nanoparticles did not display any cytotoxic effects in C2C12 and HT-29 cells. Glucose consumption assays showed that the bioactivity of entrapped insulin was maintained post-incubation in the enzymatic medium. CONCLUSIONS Freeze-drying with appropriate cryoprotectant could conserve the physiochemical properties of the nanoparticles. The bioactivity of the entrapped insulin was maintained. The prepared nanoparticles could facilitate the permeation of insulin across the GI cell line.

Abstract
The development of orally administered protein drugs is challenging due to their intrinsic unfavourable features, including large molecular size and poor chemical stability, both of which limit gastrointestinal (GI) absorption efficiency. Nanoparticles can overcome the GI barriers effectively and improve the oral bioavailability of proteins in the GI tract. They possess large surface area to volume ratio, and can facilitate the GI absorption of nanoparticles via the paracellular and transcellular routes. Nanoparticles can be prepared by various fabrication techniques that can encapsulate the fragile therapeutic proteins via hydrophobic bonding and electrostatic interaction. A desirable technique should involve minimal harsh conditions and encapsulate therapeutic proteins with preserved functionalities. The current review examines the characteristics of each preparation technique, and illustrates the examples of insulin-loaded nanoparticles that have been developed in each fabrication method. The following techniques, which include nanoprecipitation, hydrophobic conjugation, flash nanocomplexation, double emulsion, ionotropic gelation, and layer-by-layer adsorption, have been used to formulate ligand-modified nanoparticles for targeted delivery of insulin. Other techniques, including reduction, complex coacervation (polyelectrolyte complexation), hydrophobic ion pairing and emulsion solvent diffusion method, and sol-gel technology, were also discussed in the latter part of the review due to their extensive use in fabrication of insulin nanoparticles. This review also discusses the strategies that have been utilised during the formulation process to improve the stability and bioactivity of therapeutic proteins.

Abstract
Endoscopic submucosal dissection (ESD) is the standard treatment for early-stage gastric cancer, but the large post-operative ulcers caused by ESD often lead to serious side effects. Post-ESD mucosal repair materials provide a new option for the treatment of post-ESD ulcers. In this study, we developed a polyurethane/small intestinal submucosa (PU/SIS) hydrogel and investigated its efficacy for accelerating ESD-induced ulcer healing in a canine model. PU/SIS hydrogel possessed great biocompatibility and distinctive pH-sensitive swelling properties and protected GES-1 cells from acid attack through forming a dense film in acidic conditions in vitro. Besides, PU/SIS gels present a strong bio-adhesion to gastric tissues under acidic conditions, thus ensuring the retention time of PU/SIS gels in vivo. In a canine model, PU/SIS hydrogel was easily delivered via endoscopy and adhered to the ulcer sites. PU/SIS hydrogel accelerated gastric ulcer healing at an early stage with more epithelium regeneration and slight inflammation. Our findings reveal PU/SIS hydrogel is a promising and attractive candidate for ESD-induced ulcer repair.

Abstract
Diabetes mellitus is a chronic disease that is considered a worldwide epidemic, and its control is a constant challenge for health systems. Since insulin had its first successful use, scientists have researched to improve the desired effects and reduce side-effects. Over the years, the challenge has been to increase adherence to treatment and improve the quality of life for diabetics by developing an insulin delivery system. This systematic review (SR) analyses experimental articles from 1998 to 2018 related to the development of the chitosan/insulin delivery system (CIDS). Automated support: Start tool was used to perform part of these activities. The search terms “insulin”, “delivery or release system”, and “chitosan” were used to retrieve articles in PubMed, Science Direct, Engineering Village, and HubMed. A total of 55 articles were selected. The overview, phase, model, way of administration, and the efficiency of CIDS were analyzed. According to SR results, most of the articles were published from 2010 onwards, representing 72.7% of the selected papers, and research groups from China publicized 23.6% of the selected articles. According to the SR, 51% of the studies were carried out in vivo and 45% in vitro. Most of the systems were nanoparticle based (54.8%), and oral administration was proposed by 60.0% of the selected articles. Only 36.4% performed loaded capacity and encapsulation efficiency assays, and 24 h (16.4%), 12 h (12.7%), and 6 h (11.0%) were the most frequent insulin release times. Chitosan’s intrinsic characteristics, which include biodegradability, biocompatibility, adhesiveness, the ability to open epithelial tight junctions to allow an increase in the paracellular transport of macromolecular drugs, such as insulin, and the fact that it does not result in allergic reactions in the human body after implantation, injection, topical application or ingestion, have contributed to the increase in research of CIDS over the years. However, the number of studies is still limited and the use of an alternative form of insulin administration is not yet possible. Thus, more studies in this area, aiming for the development of an insulin delivery system that can promote more adherence to the treatment and patient comfort, are required.

Abstract
In this study, cyclodextrin metal-organic framework/chitosan (CD-MOF/CS) nanocapsules, which have a hydrophobic core and a hydrophilic shell, were fabricated as delivery systems for bioactive agents. The nanocapsules were prepared by electrostatic deposition of cationic chitosan onto the anionic CD-MOF core. The presence of the CS coating reduced the mean diameter and polydispersity index of the nanocapsules, which was attributed to their ability to inhibit particle aggregation. Moreover, the encapsulation efficiency of resveratrol within the nanocapsules increased appreciably after coating them with chitosan (from 66.5 to 91.3%). The chitosan coating was also shown to increase the antioxidant activity and photostability of the encapsulated resveratrol. Information about the binding interactions of the resveratrol with the nanocapsules was obtained using fluorescence spectroscopy, infrared spectroscopy, and thermal analysis. The new nanocapsules created in this study may have applications for the encapsulation, protection, and delivery of bioactive agents in food, supplement, and pharmaceutical applications.

Abstract
Therapeutic proteins are labile macromolecules that are prone to degradation during production, freeze-drying and storage. Recent studies showed that nanoparticles can enhance the stability and oral bioavailability of encapsulated proteins. Several conventional approaches (enzyme inhibitors, mucoadhesive polymers) and novel strategies (surface modification, ligand conjugation, flash nano-complexation, stimuli-responsive drug delivery systems) have been employed to improve the physiochemical properties of nanoparticles such as size, zeta potential, morphology, polydispersity index, drug release kinetics and cell-targeting capacity. However, clinical translation of protein-based nanoparticle is limited due to poor experimental design, protocol non-compliance and instrumentation set-up that do not reflect the physiological conditions, resulting in difficulties in mass production of nanoparticles and waste in research funding. In order to address the above concerns, we conducted a comprehensive review to examine the experimental designs and conditions for physical characterization of protein-based nanoparticles. Reliable and robust characterization is essential to verify the cellular interactions and therapeutic potential of protein-based nanoparticles. Importantly, there are a number of crucial factors, which include sample treatment, analytical method, dispersants, sampling grid, staining, quantification parameters, temperature, drug concentration and research materials, should be taken into careful consideration. Variations in research protocol and unreasonable conditions that are used in optimization of pharmaceutical formulations can have great impact in result interpretation. Last but not least, we reviewed all novel instrumentations and assays that are available to examine mucus diffusion capacity, stability and bioactivity of protein-based nanoparticles. These include circular dichroism, fourier transform infrared spectroscopy, X-ray diffractogram, UV spectroscopy, differential scanning calorimetry, fluorescence spectrum, Förster resonance energy transfer, NMR spectroscopy, Raman spectroscopy, cellular assays and animal models.

Abstract
Non-invasive means of insulin administration circumvent some of the inconveniences of injections. Oral administration in particular is convenient, pain-free, and allows favorable glucose homeostasis, but is subject to chemical instability, enzymatic degradation, and poor gastrointestinal absorption. Natural polymeric nanoparticles have emerged as a promising oral delivery system for peptide therapeutics due their safety, biocompatibility, and stability. In this study, self-assembled nanocomposites from chitosan (CS) and insulin-loaded, zein-carboxymethylated short-chain amylose (IN-Z-CSA) nanocomposites were synthesized to improve oral bioavailability of insulin. The optimized IN-Z-CSA/CS0.2% nanocomposites exhibited an average size of 311.32±6.98 nm, a low polydispersity index (0.227±0.01), a negative zeta potential (43.77±1.36 mV), an encapsulation efficiency of 89.6±0.9%, and a loading capacity of 6.8±0.4%. The IN-Z-CSA/CS0.2% nanocomposites were stable in storage conditions. The transepithelial permeability of the N-Z-CSA/CS0.2% nanocomposites was 12-fold higher than that of insulin. Cellular uptake studies revealed that the IN-Z-CSA/CS0.2% nanocomposites were internalized into Caco-2 cells by both endocytosis and a paracellular route. Additionally, in pharmacological studies, orally administered IN-Z-CSA/CS0.2% nanocomposites had a stronger hypoglycemic effect with a relative bioavailability of 15.19% compared with that of IN-Z-CSA1.0% nanocomposites. Furthermore, cell toxicity and in vivo tests revealed that the IN-Z-CSA/CS0.2% nanocomposites were biocompatible. Overall, these results indicate that the IN-Z-CSA/CS0.2% nanocomposites can improve oral bioavailability of insulin and are a promising delivery system for insulin or other peptide/protein drugs.

Abstract
Self-assembled nanoparticles using the biopolymers chitosan (CH) and chondroitin sulfate (CS) were developed to improve the biological activity of anthocyanin (ACN). The 86.32 ± 0.15% (w/w) of ACN was incorporated into ACN/CH/CS nanoparticles, with the particle size of 350.1 ± 0.99 nm in diameter (i.d.) and 42.55 ± 0.54 in zeta potential (mV). Morphological study and thermogravimetric analysis suggested that the ACN/CH/CS nanoparticles exhibited heterogeneous morphology and high thermal stability. Significant increases in apoptosis by 12.1% and 35.1% were observed with 0.05 mg/ml ACN and ACN/CH/CS nanoparticles in the HCT-116 cell line, indicating that the nanoparticle system led to significant increase in apoptosis (p < 0.05). Structural changes in mitochondria caused by ACN/CH/CS nanoparticles indicated that the nanoparticles had negative impacts on mitochondria. These results showed that nanoparticles could potentially be used as a carrier system to improve the efficacy of ACN.

Abstract
In this work, we use antisolvent precipitation to prepare zein/carboxymethylated short-chain amylose (CSA) complex nanoparticles for insulin encapsulation, showing that insulin-loaded zein/CSA complex nanoparticles are homogeneous, generally exhibiting sizes of <200 nm with a narrow distribution (polydispersity index < 0.100), spherical shape, and strong negative charge (-40 mV). Fourier transform infrared spectroscopy analysis reveals that the formation of the above nanoparticles is mainly driven by hydrophobic, hydrogen-bonding, and electrostatic interactions between CSA, insulin, and zein. In comparison to zein nanoparticles, zein/CSA complex nanoparticles feature much higher insulin encapsulation efficiency (45.8 versus 90.5%, respectively) and are essentially nontoxic to Caco-2 cells. Thus, this work provides new insights into the design of drug delivery systems and is expected to inspire their further development.
