Abstract
Several events in an animal's life are considered stressful. Among them, the most studied and significant are transportation, weaning, and adaptation to climate change. Moreover, other events, such as the separation from the dam, moving from the original farm to another, management practices, such as regrouping with other animals, and new hierarchical conditions, represent routine conditions in the bovine's life, which can influence the animal's homeostasis. The purpose of this study is to evaluate the changes in blood parameters of 45 calves introduced into a new environment from their original farms. Blood samples were collected upon arrival at a genetic center (T1), 7 (T2), 30 (T3), and 120 (T4) days after arrival. Blood count, protein electrophoresis, clinical chemistry, and innate immunity parameters were performed on the samples. Significant alterations in some clinical chemistry parameters were related to liver function in the serum protein and the values of IL-6 and TNF-α; the main cytokines mediating the stress response emerged from the results. The evidence indicates the mild response to adaptation stress by calves raised in close association with people after their introduction into a new environment.

Abstract
Horses with a low level of tameness are at higher risk for transport-related disease and injury; hence, European regulations for the protection of animals during transport (EC 1/2005) are stricter for unhandled (unbroken) horses. However, the regulation does not provide adequate tools for unhandled horse identification. The Broken/Unbroken Test (BUT) was developed and validated to easily identify whether a horse is broken (handled) or not. As a further validation step, the aim of this study was to assess whether there is any correspondence between the BUT classification and the behavioral response of the horse. A total of 100 healthy Italian Heavy Draft horses were video recorded when assessed with the BUT. In total, 90 videos (48 handled and 42 unhandled horses) matched the inclusion criteria and were assessed. The behavior of each horse was evaluated by three observers blinded as to the horses' experience with a focal animal continuous recording method. Behaviors were classified in four categories: stress, avoidance, displacement, and aggression. A Mann–Whitney test was used to identify differences in behavioral patterns between horses classified as handled or unhandled with the BUT. Unhandled horses showed not only a significantly longer time to be approached by the handler but also more avoidance and flight reactions (p < 0.001). Unhandled horses showed significantly longer displacement behaviors, such as sniffing (p < 0.001). These findings further validate the BUT classification and confirm that horses classified as unhandled are more prone to show avoidance and flight reactions when approached by humans. For this reason, the adoption of the BUT could be helpful to minimize humans' horse-related injuries and, if applied regularly before loading, to contribute to safeguard the welfare of horses during transport.

Abstract
The aim of this study was to evaluate the relationship between temperament in Nellore bulls with carcass and meat quality traits. In total, 1,400 bulls were studied, and temperament was assessed using two measurements: movement score (MOV) and flight speed test (FS). Both MOV and FS were measured at two time points, with background (MOVb and FSb) temperament measured at yearling age, ~550 d after birth, and the preslaughter (MOVps and FSps) temperament measured at the end of the feedlot period. The change of temperament resulting in an increase or decrease in reactivity was also used to measure meat quality. The traits used to define carcass and meat quality included carcass bruises (BRU), hot carcass weight (HCW, kg), ribeye area (REA, cm2), backfat thickness (BFT, cm), marbling score (MS), meat pH after thawing (pH), presence or absence of dark cutters, color parameters of luminosity (L*), redness (a*) and yellowness (b*), cooking loss (CL, %), and Warner-Bratzler shear force (WBSF, kg). A principal component (PC) analysis was initially applied to the carcass and meat quality traits, followed by logistic regression models and linear mixed models to evaluate the effects of temperament on carcass and meat quality. The risks of carcass bruises and dark cutters did not differ as a function of any temperament trait (P > 0.05). In turn, animals classified as high MOVb (reactive) had lower PC3 values (P = 0.05), CL (P = 0.02), and tended to have lower MS (P = 0.08). In addition, animals classified as high FSb (faster and reactive cattle) produced carcasses with smaller REA (P < 0.01), higher meat pH (P < 0.01), lower color gradients (L*, P = 0.04; b*, P < 0.01), and lower PC1 and PC4 scores (P < 0.01) when compared with the low FSb class. For preslaughter temperament, high MOVps was related to lower color a* (P = 0.04), whereas high FSps was related to lower HCW, MS, and PC2 (P < 0.01) than the calmer ones (low FSps). The reduction in MOV was related to more tender meat, and the reduction in FS to heavier carcass and brighter meat. We conclude that excitable temperament in Nellore cattle may have negative effects in some of the carcass and meat quality attributes assessed, mainly those related to muscle deposition on carcass and color gradients. Measurement of temperament before the cattle entered the feedlot was a better predictor of carcass and meat quality traits, compared with temperament assessment at the end of the feeding period.

Abstract
The rising global demand for animal protein is leading to intensification of livestock production systems. At the same time, societal concerns about sustainability and animal welfare in intensive systems is increasing. This review examines the risks to welfare for beef cattle within commercial feedlots in Australia. Several aspects of the feedlot environment have the potential to compromise the physical and psychological welfare of cattle if not properly monitored and managed. These include, but are not limited to, animal factors such as the influence of genetics, temperament and prior health, as well as management factors such as diet, pen design, resource provision, pregnancy management, and stock-person attitudes and skills. While current industry and producer initiatives exist to address some of these issues, continuous improvements in welfare requires accurate, reliable and repeatable measures to allow quantification of current and future welfare states. Existing measures of welfare are explored as well as proxy indicators that may signal the presence of improved or reduced welfare. Finally, potential future measures of welfare that are currently under development are discussed and recommendations for future research are made.

Abstract
The purpose of this study was to compare meat quality and sensory characteristics of steaks from longissimus dorsi of steers with different temperaments. Calves (n = 49; 314kg) were processed and scored for temperament according to Beef Improvement Federation Guidelines and divided into three groups: Docile (D), Restless (R) and Nervous-Flighty (NF). Steers were housed with access to pasture then transferred to a research feedlot until harvest and processed with carcass data recorded. Striploins were wet-aged for 14 d before, frozen and were then cut into 2.54 cm steaks, and individually vacuum packed. Instrumental color was measured on thawed and tray overwrapped steaks on d 0, 1, 2, 3, 5, and 7 of simulated retail display. The CIE L*, a*, and b* color values were collected and oxymyoglobin, hue angle and saturation index values were calculated. A 7-member trained sensory panel evaluated steak samples for myofibrillar tenderness, connective tissue amount, overall tenderness, juiciness, and beef flavor intensity. The NF group had reduced (P < 0.05) hot carcass weight compared to the other groups. The D and R groups were lighter (L*; P < 0.05), and R group yellower (b*; P < 0.05) and greater (P < 0.05) in hue angle than the other groups. No difference (P > 0.05) between groups for redness (a*), saturation index, and oxymyoglobin ratio were observed. Display time affected color with d 0 being redder (a*; P < 0.05), yellower (b*; P < 0.05), greater (P < 0.05) saturation index, and greater (P < 0.05) oxymyoglobin ratio than d 7. Steaks from D and R groups were more tender (P < 0.05) in myofibrillar tenderness, had less (P < 0.05) perceived connective tissue, were overall more tender (P < 0.05), and more (P < 0.05) juicy than steaks from the NF group. There was no difference (P > 0.05) in off-flavor between the temperament groups. Temperament had minimal effect on carcass characteristics except hot carcass weight. Sensory panelists detected differences between temperament groups.

Abstract
This study aimed to assess preslaughter factors responsible for the occurrence of bruises to front, rib, loin, hip, and round sites of cattle carcasses. Data from the slaughter of 148 loads of cattle were assessed, totaling 4,611 carcasses. Evaluated bruising factor variables were animal gender, journey distance (km), vehicle type (m²), journey time (hours), load density (kg/m2 ), handling and facilities conditions (optimal, acceptable, and unacceptable), and unloading waiting time (min). Gender had the strongest influence on carcass bruising, being the first variable to enter in the majority of models related to the carcass sites. Female carcasses displayed higher bruising in all sites. Densities above 401 kg/m² caused more bruising. With the exception of the loin, unacceptable, and acceptable conditions assigned to farm facilities and handling resulted in higher average bruising. Articulated vehicles with a greater load capacity were more likely to cause bruising. The effects of variables causing bruises act differently in the various carcass sites. In this sense, the results of this study suggested possible management practices for specific problems during the preslaughter period to minimize losses by bruising to different carcass sites.

Abstract
Simple Summary Acclimation protocols for cattle are expected to have benefits for animal handling and production, but the rate at which cattle acclimate has not yet been studied. The current study describes a novel method for assessing the acclimation rate of cattle at a group level during yard weaning. A standardised measure of acclimation rate in cattle will allow further research to be undertaken to identify management practices and selection tools which enhance the capacity of cattle to acclimate to new environments. Abstract The speed with which animals acclimate to a new environment could be an important measure of ability to cope with management induced stress. This study developed a measure of acclimation rate in a group of 50 Bos taurus heifers during yard weaning over nine days. We recorded the time and order in which heifers moved through a novel funnel structure into a feeding yard daily. We hypothesised that addition of an obstacle at the entrance would increase the time it took heifers to move through the funnel, but that they would acclimate to the obstacle over a three-day period. The change in latency to move through could then be used as a measure of acclimation rate. We hypothesised that individuals which acclimated to obstacles at a faster rate might display favourable temperament as assessed by flight time. All heifers took longer to move through the funnel after a novel object was introduced, then latency decreased over the following two days while the object was present. This indicates the protocol could be useful for measuring acclimation rate at a group level. Individual acclimation rate variables, measured as change in times and orders of heifers between test days, did not appear to have any consistent relationships with flight time or weight change during or post-weaning (p > 0.05). We concluded that the protocol was inappropriate for assessing acclimation rate at an individual level, due to social effects while testing heifers as a group. Heifers which were consistently one of the first 20 to move through the funnel had a significantly greater average weight 5 and 10 months post-weaning (345 ± 9 kg and 518 ± 10 kg respectively) than heifers which were consistently one of the last 20 through the funnel (311 ± 8 kg and 484 ± 8 kg respectively; p < 0.001). This may indicate order of movement through the funnel was related to feeding motivation or another aspect of temperament not reflected by flight time.

Abstract
Our aims were to assess the effects of handling frequency on temperament evolution in cattle kept under rotational stocking method (RSM), as well as to compare the temperament of animals maintained under rotational versus alternate stocking (ASM) methods. We evaluated 4256 males raised on pasture from four private properties (Farms 1–4), for a total of 9628 observations. The study was divided into two complementary approaches. In the first one, monthly visits were conducted at 35-day intervals to assess the cattle temperament (n = 1979) raised on grazing system using RSM, while, in the second approach, we evaluated the temperament of cattle (n = 3600) kept under two different stocking methods, namely, (1) RSM (n = 2007), characterised by a high frequency of animal handling and a 4-day grazing period, and (2) ASM (n = 1593), characterised by a low frequency of handling and a 20-day grazing period. Composite reactivity score (RS), and flight speed (FS) were considered as temperament indicators. Reductions of RS and FS means were observed during successive assessments under RSM. Significant effects of stocking method on FS (P < 0.05) and RS (P < 0.01) were found, with lower FS and RS means for animals under RSM than for those under ASM. In conclusion, the frequent handling in the rotational stocking method favoured the improvement of cattle temperament over time, with lower levels of reactivity among cattle raised under this stocking method than with animals raised under the alternate stocking method.

Abstract
Cattle injuries can occur during transportation due to vehicle design, transport conditions, and loading or unloading procedures and lead to carcass bruising and economic loss due to decreased carcass value. The objectives of this study were to determine whether a relationship exists between trauma incurred during unloading and prevalence of carcass bruising in finished beef cattle at commercial slaughter facilities and determine related risk factors which contribute to both trauma and carcass bruising. Breed (classified as either Holstein cattle or beef breeds), sex, distance traveled, and trailer type (“fat/feeder combination” vs. “fat” trailer) were considered risk factors which may contribute to traumatic event prevalence. When carcass bruise prevalence within each lot was used as the dependent variable, breed, sex, distance traveled, traumatic event prevalence, ribeye area, fat thickness, yield grade, and average carcass weight were considered potential risk factors. Carcass bruises were categorized by location and size, according to the Harvest Audit Program Carcass Bruise Scoring System. Traumatic events were observed while cattle exited trailers onto the unloading docks, and were categorized by location on the animal. Average traumatic event prevalence per lot was 20.4% (± 1.11%). Average carcass bruise prevalence by lot was 68.2% (± 1.15%). There was an interaction between breed and trailer type when multiple linear regression was used to explore variables contributing to traumatic events observed at unloading (P ≤ 0.05). Traumatic events were not associated with prevalence of carcass bruising, while average carcass weight and breed were associated with carcass bruising prevalence. Carcass bruising was more prevalent in Holstein cattle than in cattle which were predominantly beef breeds (P ≤ 0.01). Average carcass weight was negatively associated with carcass bruise prevalence (P ≤ 0.05). The association between traumatic events at unloading and carcass bruising is not significant when multiple variables are considered, indicating that bruising may occur at numerous other points prior to and during the transportation process, including loading and transport, and that other variables can contribute to carcass bruise prevalence. These areas should be explored to determine all potential causes of bruising in beef carcasses, and to help implement prevention practices.

Abstract
The aim of this study was to determine whether applying good practices of handling during the pre-weaning period have long-term effects on behavioral and physiological indicators, health status, and average daily gain (ADG) of crossbred Bos taurus × Bos indicus heifer calves. During the pre-weaning period, 98 crossbred of Holstein × Gir heifer calves were allotted into three treatments: (1) good practices of handling + brushing (GPB; n = 25), (2) good practices of handling (GP; n = 25), and (3) control (n = 48). Every 2 months, four evaluation periods (EV1 to EV4) were conducted to record data. Behavioral indicators comprised time to drive (TD), flight speed (FS), flight distance (FD), and composite reactivity score (CRS). Physiological indicators of acute stress during handling comprised respiratory and heart rates. Health status comprised data regarding occurrence of most common diseases (i.e., pneumonia and anaplasmosis). Collected data were analyzed by using a linear mixed model for repeated measures, Tukey's test, and chi-squared procedures. Treatment influenced (P < 0.05) TD, FS, and FD but not CRS (P = 0.78). From EV1 to EV3, the control calves had the lowest TD. The GPB group had lower FS than the control but did not differ from GP. The GPB group had lower FD means than the other two groups in EV2, EV3, and EV4. No differences (P > 0.05) due to treatment were observed on heart and respiratory rates, ADG, or occurrence of pneumonia and anaplasmosis. It was concluded that adoption of good practices of handling during pre-weaning period may lead to long-term positive effects.

Abstract
This study characterized physiological responses to repeated transportation (TRANS) of gestating cows of differing temperaments. Cows were classified as Calm (C; = 10), Intermediate (I; = 28), or Temperamental (T; = 10). Based on artificial insemination date and pregnancy confirmation, cows were TRANS for 2 h on d 60 (TRANS1), 80 (TRANS2), 100 (TRANS3), 120 (TRANS4), and 140 (TRANS5) ± 5 d of gestation. Indwelling vaginal temperature (VT) monitoring devices were inserted 24 h before each TRANS with VT recorded from 2 h before TRANS and averaged into 5-min intervals through 30 min after TRANS. Serum samples were collected before loading and on unloading from the trailer to determine concentrations of cortisol, glucose, and nonesterified fatty acids (NEFA). Data were analyzed by repeated measures analysis in SAS. Serum cortisol concentrations were affected by temperament ( < 0.001), with T cows having the greater concentrations of cortisol before each TRANS event. All cows (100%) regardless of temperament exhibited elevations in cortisol following each TRANS event. Peak VT was greater ( < 0.001) at TRANS1 relative to all other TRANS events regardless of cow temperament. During TRANS, the T cows tended ( < 0.09) to have greater peak VT (39.86 ± 0.15°C) compared to C (39.41 ± 0.16°C) and I cows (39.55 ± 0.08°C). Area under the VT curve decreased ( = 0.002) from TRANS1 through TRANS5. Pre-TRANS serum glucose concentration at TRANS1 was greater ( < 0.03) for T (68.13 ± 4.31mg/dL) compared to I (53.42 ± 2.78 mg/dL) and C cows (52.76 ± 4.60 mg/dL). The C and I cows had greater changes in NEFA concentration between pre- and post-transport, and T cows showed the least change ( < 0.001). Cow VT and serum glucose concentration decreased in all temperaments ( < 0.01) with repeated TRANS; however, serum NEFA concentration post-TRANS did not vary ( > 0.10) with repeated TRANS events. Serum glucose concentrations were affected ( < 0.02) by a TRANS event by temperament interaction with T cows taking more TRANS events to decrease their change in glucose concentration compared to C and I cows. These results demonstrate that temperament influences physiological responses to stress in gestating Brahman cows. Although repeated transport in our study is confounded with day of gestation, seasonal changes, and learning from repeated handling and transport, repeated transport is a useful model of repeated stress in studying the effects of temperament.

Abstract
Animal temperament can be defined as a response to environmental or social stimuli. There are a number of temperament traits in cattle that contribute to their welfare, including their response to handling or milking, response to challenge such as human approach or intervention at calving, and response to conspecifics. In a number of these areas, the genetic basis of the trait has been studied. Heritabilities have been estimated and in some cases quantitative trait loci (QTL) have been identified. The variation is sometimes considerable and moderate heritabilities have been found for the major handling temperament traits, making them amenable to selection. Studies have also investigated the correlations between temperament and other traits, such as productivity and meat quality. Despite this, there are relatively few examples of temperament traits being used in selection programmes. Most often, animals are screened for aggression or excessive fear during handling or milking, with extreme animals being culled, or EBVs for temperament are estimated, but these traits are not commonly included routinely in selection indices, despite there being economic, welfare and human safety drivers for their. There may be a number of constraints and barriers. For some traits and breeds, there may be difficulties in collecting behavioral data on sufficiently large populations of animals to estimate genetic parameters. Most selection indices require estimates of economic values, and it is often difficult to assign an economic value to a temperament trait. The effects of selection primarily for productivity traits on temperament and welfare are discussed. Future opportunities include automated data collection methods and the wider use of genomic information in selection.

Abstract
The aim of this study was to estimate genetic associations between temperament and performance traits. Temperament was evaluated in yearling male and female Nellore cattle, using four traits: temperament score (TS), for assessing animals' reactions in a corral pen (n = 25,691); movement score (MOV), for animals' movements recorded inside the crush; crush score (CS), for animal's general reactivity inside the crush; and flight speed (FS), for the speed (in m/s) at which the animals exited the crush (n = 11,697, for the last three methods); for all the temperament traits, lower scores indicate animals with calmer temperament. Performance traits were visual scores for conformation (C), finishing precocity (P) and muscling (M) evaluated at yearlings, and average daily gain (ADG) was estimated from weaning to yearling. Bayesian inference using Gibbs sampling was applied to estimate (co)variance components and genetic and phenotypic parameters. Heritability estimates for the temperament traits ranged from 0.07 (CS) to 0.28 (FS). Genetic correlations of the temperament traits with ADG and C, P and M were negative and ranged from -0.02 to -0.31. Phenotypic correlations were negative and consistently lower than the genetic, ranging from -0.08 to -0.02. It was concluded that the temperament traits assessed had favourable genetic correlation estimates with the performance traits studied. However, indirect responses in temperament when selecting for higher ADG and visual scoring system of C, P and M, will be low.

Abstract
The objective of the study was to determine the effects of animal related factors on bruising in slaughter cattle, creatine kinase (CK) and beef quality. Three hundred and twenty one cattle from three breeds (108 Bonsmara, 130 Beefmaster and 83 Brahman) were used in this study. The animals were grouped as follows: Group 1 (16 months old), Group 2 (18 months old) and Group 3 (24 months old). At exsanguinations, blood samples for CK determination were collected using disposable vacutainer tubes. Muscularis longissimus thoracis et lumborum (LTL) was collected 24 h after slaughter to determine the colour (L*, a*, and b*) and ultimate pH (pHu) of beef. Breed, sex and age had significant effects (p<0.05) on bruising score, CK levels and beef quality. Bonsmara breed had the highest (80%) bruising score percentage, CK (705.3±80.57 U/L) and pHu (6.3±0.05) values while the Bonsmara had the highest L* (24.8±0.78) a* (17.5±0.53) and b* (12.8±0.53) values. Higher CK levels were also observed in winter compared to summer, spring and autumn respectively. Therefore, animal factors (sex, breed and animal age at slaughter) contribute to the development of bruises and have an effect on the levels of CK and meat quality. It was also concluded that there is no significant relationship between meat parameters (L,* a*, and b*) and CK levels.

Abstract
Temperament in cattle is defined as the fear-related behavioral responses when exposed to human handling. Our group evaluates cattle temperament using 1) chute score on a 1 to 5 scale that increases according to excitable behavior during restraint in a squeeze chute, 2) exit velocity (speed of an animal exiting the squeeze chute), 3) exit score (dividing cattle according to exit velocity into quintiles using a 1 to 5 scale where 1=cattle in the slowest quintile and 5=cattle in the fastest quintile), and 4) temperament score (average of chute and exit scores). Subsequently, cattle are assigned a temperament type of adequate temperament (ADQ; temperament score≤3) or excitable temperament (EXC; temperament score>3). To assess the impacts of temperament on various beef production systems, our group associated these evaluation criteria with productive, reproductive, and health characteristics of Bos taurus and Bos indicus-influenced cattle. As expected, EXC cattle had greater plasma cortisol vs. ADQ cattle during handling, independent of breed type (B. indicus×B. taurus, P<0.01; B. taurus, P<0.01; B. indicus, P=0.04) or age (cows, P<0.01; heifers or steers, P<0.01). In regards to reproduction, EXC females had reduced annual pregnancy rates vs. ADQ cohorts across breed types (B. taurus, P=0.03; B. indicus, P=0.05). Moreover, B. taurus EXC cows also had decreased calving rate (P=0.04), weaning rate (P=0.09), and kilograms of calf weaned/cow exposed to breeding (P=0.08) vs. ADQ cohorts. In regards to feedlot cattle, B. indicus EXC steers had reduced ADG (P=0.02) and G:F (P=0.03) during a 109-d finishing period compared with ADQ cohorts. Bos taurus EXC cattle had reduced weaning BW (P=0.04), greater acute-phase protein response on feedlot entry (P≤0.05), impaired feedlot receiving ADG (P=0.05), and reduced carcass weight (P=0.07) vs. ADQ cohorts. Acclimating B. indicus×B. taurus or B. taurus heifers to human handling improved temperament (P≤0.02), reduced plasma cortisol (P<0.01), and hastened puberty attainment (P≤0.02). However, no benefits were observed when mature cows or feeder cattle were acclimated to human handling. In conclusion, temperament impacts productive, reproductive, and health characteristics of beef cattle independent of breed type. Hence, strategies to improve herd temperament are imperative for optimal production efficiency of beef operations based on B. taurus and B. indicus-influenced cattle.

Abstract
Familiarity with handling and routine procedures reduces the stress experienced by pregnant ewes and nanny goats and newborn lambs, kids and calves during experimentation. The factors that need to be considered when taming and training pregnant ewes and goats include: the behavioural and physiological effects of daily handling for six to eight weeks; the impact of the progesterone/oestrogen status of ewes on their responses to taming and training; the attainment of physiological stability after surgery; and comparison of tamed and trained ewes with non-handled ewes. The factors that need to be considered for newborn lambs, kids and calves include: beneficial effects of the experimenter being part of the birth environment of lambs, kids and calves; the impact of handling on lamb responses to feeding and painful procedures; and remote sampling effects on physiological responses. The relative value of taming and training for the humane management of animals and for producing meaningful results is assessed with reference to absence of the confounding effects of stress, and, conversely, the possible confounding effects of taming and training, on the animals' responses.

Abstract
Research into the genetics of whole herd profitability has been a focus of the Beef Cooperative Research Centre for Beef Genetic Technologies over the past decade and it has been identified that measures of male reproduction may offer a potential indirect means of selecting for improved female reproduction. This paper describes the experimental design and provides a descriptive analysis of an array of male traits in Brahman and Tropical Composite genotypes managed under the medium to high stress, semi-extensive to extensive production systems of northern Australia. A total of 1639 Brahman and 2424 Tropical Composite bulls with known pedigrees, bred and raised in northern Australia, were evaluated for a comprehensive range of productive and reproductive traits. These included blood hormonal traits (luteinising hormone, inhibin and insulin-like growth factor-I); growth and carcass traits (liveweight, body condition score, ultrasound scanned 12–13th rib fat, rump P8 fat, eye muscle area and hip height); adaptation traits (flight time and rectal temperature); and a bull breeding soundness evaluation (leg and hoof conformation, sheath score, length of everted prepuce, penile anatomy, scrotal circumference, semen mass activity, sperm motility and sperm morphology). Large phenotypic variation was evident for most traits, with complete overlap between genotypes, indicating that there is likely to be a significant opportunity to improve bull fertility traits through management and bull selection.

Abstract
Studies of bruises, as detected on carcasses at the slaughterhouse, may provide useful information about the traumatic situations the animals endure during the pre-slaughter period. In this paper, we review scientific data on the prevalence, risk factors and estimation of the age of bruises in beef cattle. Risk factors such as animal characteristics, transport conditions, stocking density, livestock auction and handling of the animals are discussed. Investigation of the age of bruises could provide information on when in the meat chain bruises occur and, could help to pinpoint where preventive measures should be taken, from the stage of collecting the animals on the farm until slaughter. We review the methods available to assess the age of the bruises; data on human forensic research are also included. The feasibility to identify traumatic episodes during the pre-slaughter period, in order to improve animal welfare is discussed.

The objective of this study was to determine the most important predictive parameters based on those measurements and evaluate the relationship between the techniques. Flight time and distance were correlated with exit VS (r=−0.51, and 0.41, P<0.05; n=56), but were not related to restraint VS. Data from strain-gauge and accelerometer sensors were used to generate parameters such as peak response and area under the curve that were correlated with all three VS. Regression models using VS as the dependent variable and a combination of 2 to 5 parameters from the strain-gauge and accelerometer tests as independent variables predicted temperament with values of 29 to 65 or 41 to 57%, respectively. When all techniques, excluding VS, were used as independent variables, model accuracy increased to 72, 81 and 77% for restraint, exit and the sum of all VS, respectively. These findings suggest the objective measures of temperament assessed in this study could be used to identify highly reactive animals.

Abstract
Fearful behavioral responses to handling (temperament) are undesirably associated with ADG and meat quality in infrequently handled Bos indicus cattle. It has never been assessed whether these relationships exist in calmer Bos taurus breeds in systems where handling is more frequent. Such systems predominate in some countries where beef production is a major agricultural activity. During fattening, 144 crossbred cattle from Limousin and Aberdeen Angus sires were assessed for temperament using 4 approaches: response to movement along a race (race score; 4 occasions), restraint in a crush (crush score; 4 occasions), flight speed from the crush (flight speed; 4 occasions), and isolation in a pen with a human (isolation score; 1 occasion in yr 1, 2 occasions in yr 2). Measurements of ADG were made between birth and slaughter and between 16 and 18 mo of age during fattening. Fattening occurred indoors on a complete mixed diet fed for ad libitum intake. Meat quality was measured by pH, color, and Volodkevitch shear force and by a sensory panel. The repeatability of temperament traits was 0.17 (race score), 0.35 (crush score), 0.51 (flight speed), and 0.36 (isolation score). The proportion of the total variance of temperament traits attributable to the sire and the social group was low (0.003 to 0.402). However, the sire did affect behavior in all tests apart from the crush score (ranging from P = 0.02 to P < 0.001). Correlations between behavior in the different tests (ranging from r = 0.21 to 0.54, and P = 0.02 to P < 0.001) apart from between-flight speed and isolation score indicate that fearful behavior was consistently shown across assessment methods. A calm response in the crush score test was associated with a greater ADG during fattening (P = 0.05), whereas a calm response during the isolation test was associated with a greater ADG in cold carcass weight (P = 0.02). Animals with a calm isolation score had less tender meat as judged by the sensory panel (P = 0.03), but no other effects were apparent between temperament and meat quality measures, although several tendencies (0.06 ≤ P ≤ 0.10) were found. Temperament did not appear to relate to meat quality in this study of frequently handled Bos taurus genotypes, which is in contrast to other studies using different beef production systems. Genetic correlations between temperament and meat quality under these conditions could, although not measured in this study, still exist in the absence of phenotypic correlations.

Abstract
A review of factors that may impact on the capacity of beef cattle females, grazing semi-extensive to extensive pastures in northern Australia, to conceive, maintain a pregnancy and wean a calf was conducted. Pregnancy and weaning rates have generally been used to measure the reproductive performance of herds. However, this review recognises that reproductive efficiency and the general measures associated with it more effectively describe the economic performance of beef cattle enterprises. More specifically, reproductive efficiency is influenced by (1) pregnancy rate which is influenced by (i) age at puberty; (ii) duration of post-partum anoestrus; (iii) fertilisation failure and (iv) embryo survival; while (2) weight by number of calves per breeding female retained for mating is influenced by (i) cow survival; (ii) foetal survival; and (iii) calf survival; and (3) overall lifetime calf weight weaned per mating. These measures of reproductive efficiency are discussed in depth. Further, a range of infectious and non-infectious factors, namely, environmental, physiological, breed and genetic factors and their impact on these stages of the reproductive cycle are investigated and implications for the northern Australian beef industry are discussed. Finally, conclusions and recommendations to minimise reproductive inefficiencies based on current knowledge are presented.

Abstract
Equal numbers of British, Continental crossbred, and Brahman crossbred calf-fed steers (n = 420) were used to examine the effects of ractopamine supplementation and biological type on behavior during routine handling. Steers were blocked by BW within type and allocated to pens, resulting in 2 pens (10 cattle per pen) representing each block x type subclass. Pens within each block x type subclass then were randomly assigned to ractopamine supplementation treatments (0 or 200 mg.steer(-1).d(-1)), which were administered during the final 28 d of the finishing period. At the time final BW were obtained (28 d after treatment initiation), a single, trained observer, blinded with respect to treatment designations, recorded subjective scores to characterize behavior of each animal. Scores included entry force score (degree of force required to load the animal into the chute); entry speed score (walk, trot, run); chute behavior score (calm, restless shifting, moderate struggling); and exit speed score (walk, trot, run). Ractopamine supplementation had no effect on entry force score, chute behavior score, or exit speed score; however, cattle supplemented with ractopamine entered the chute more rapidly than did control cattle. Biological cattle type was a significant source of variation in entry force score and exit speed score. Continental crossbreds required greater (P < 0.05) force to enter the squeeze chute than did Brahman crossbred or British steers. In addition, Continental crossbred and Brahman crossbred steers left the processing chute with the greatest speed, whereas British steers exited the processing chute most slowly. Biological cattle type did not affect scores for entry speed or behavior during restraint in the chute. No adverse effects of ractopamine supplementation on cattle behavior were observed in this study.

Abstract
Flight time, an objective measure of temperament, was recorded in 3594 Brahman, Belmont Red, and Santa Gertrudis heifers and steers. Two subjective measures of temperament (crush score and flight speed score) were also available for over 2000 of these animals. Temperament measures were recorded post-weaning (average age 8 months) and again at the start of finishing (average age 19 months) on a subset of the animals. Nine meat quality traits were measured on these animals and included measures on 2 different muscles [M. longissimus thoracis et lumborum (LTL) and M. semitendinosus (ST)]. The heritability of flight time measured post-weaning and at the start of finishing was 0.30 and 0.34, respectively, with a repeatability of 0.46 across the measurement times. Heritabilities for scored temperament traits were 0.21, 0.19, and 0.15 for post-weaning flight speed score, post-weaning crush score, and start of finishing crush score, respectively. Genetic correlations across measurement times for flight time were 0.98 and 0.96 for crush score, indicating a strong underlying genetic basis of these temperament measures over time; however, the corresponding phenotypic correlations were lower (0.48 and 0.37, respectively). Longer flight times (i.e. better temperament) were genetically correlated with improved tenderness (i.e. lower shear force and higher tenderness scores), with genetic correlations of –0.42 and 0.33 between LTL shear force, and Meat Standards Australia (MSA) tenderness, respectively. Genetic correlations between post-weaning crush score and the same meat quality traits were 0.39 and –0.47, respectively. However, genetic and phenotypic correlations between measures of temperament and other meat quality traits were generally low, with the exception of crush scores with LTL Minolta a* value (–0.37 and –0.63 for post-weaning and start of finishing measurement time, respectively). Predicted correlated responses of –0.17 kg LTL shear force and 2.6 MSA tenderness points per generation were predicted based on the genetic parameter estimates and a recording regime of both flight time and crush scores. Selection based on the measures of temperament described in this study could be used to improve temperament itself and correlated improvements can also occur in meat tenderness and eating quality traits in tropically adapted breeds of cattle.

Abstract
AbstractHuman factors (attitudes, personality traits, self-esteem, job satisfaction) strongly determine our behaviour towards animals, animal production and animal welfare. Recent studies have emphasised positive human contacts as indicators of a stockperson's positive attitude towards animals and towards animal welfare in general. Stockmanship can be improved by careful selection of people and/or by training. However, little is known of the biological basis of the effect of stock handling procedures on the welfare of animals. The animal's perception of the stockperson (based both on emotional responses and cognitive aspects such as anticipation, recognition and categorisation), and the existence of sensitive periods in an animal's life, need to be explored in more depth, especially under farm conditions. We need to consider the complexity of human behaviour (eg husbandry practices, balance between positive and negative interactions, predictability, controllability) and its effect on animal welfare from the animal's point of view throughout its whole life. This paper identifies the importance of positive human contacts for both animals and stockpeople, and highlights the challenge to maintain such positive contacts despite the trend in modern agriculture to increase the number of animals per stockperson. This requires better knowledge of animal genetics, socialisation to humans during sensitive periods, and management of the social group. We emphasise the ethical importance of the human-animal relationship in the context of farm animal welfare and productivity.

AbstractThe relationship between social behaviour and skin injuries (caused by horns) of loose housed horned cows was investigated on 35 dairy farms. While the frequencies of two agonistic behaviour elements (push and chase away) were positively correlated with the occurrence of skin injuries, the frequencies of butting and horning were not. Butting appears to have an ambivalent motivation, in that its occurrence is correlated positively both with agonistic behaviour and with social licking. Horning showed a positive correlation with social licking only. Four groups of husbandry conditions that may be associated with the occurrence of social behaviour and of injuries were distinguished: i) herd management, with variables including problem solving management by the farmer, integration of new cows, and dealing with periparturient and oestrus cows; ii) human-animal relationship, with variables including ability to identify individual cows, frequency of brushing the cows, number of milkers, and frequency of personnel changes; iii) animal characteristics, with the variable of herd size; and iv) stable characteristics, with the variable of space per cow (m2). The relevance of the husbandry variables investigated here had been confirmed in a previous stepwise regression analysis (Menke 1996). The variables for herd management and human-animal relationship conditions correlated in a consistent way with the occurrence of agonistic behaviour and/or of injuries, while most of them also correlated in the opposite direction with the occurrence of social licking. Herd size correlated positively with agonistic behaviour, but negatively with social licking. Space per cow correlated negatively with agonistic behaviour and injuries. In more than 70 per cent of the herds investigated, the levels of agonistic behaviour and of skin injuries were low, implying that horned dairy cows can be kept with less risk than is often assumed. We argue that such risks strongly depend on management factors that can be improved.
