Saturated and hydrogenated fats in food in relation to health

Brazilian Front-of-Package Labeling: A Product Compliance Analysis 12 Months after Implementation of Regulations

This study investigated the presence of front-of-package labeling on food products in major retailers in Brazil after its implementation in 2022. Carried out from May to October 2023, we analyzed 2145 products of brands present in five Brazilian states. A total of 541 products presented front-of-package warnings. The categories varied in their adherence to front-of-package labeling, highlighting a prevalence of combined warnings, such as high in added sugar and high in saturated fat on sweet biscuits and chocolates. Sausages showed a high prevalence of high in sodium and high in saturated fat warnings. Beverages stood out as high in added sugar, while fats, dairy products, frozen preparations, seasonings, and sauces presented diversity in the warnings. Other products, such as panettone, showed a high presence of alerts. The study demonstrated the widespread presence of front-of-package labeling on ultra-processed products highly consumed by the Brazilian population. Considering the alarming presence of these foods in the Brazilian diet, it is concluded that front-of-package nutrition labeling is crucial to inform and raise awareness among consumers, allowing healthier choices and potentially contributing to a reduction in chronic diseases and the costs associated with treatment in the health system.

Fried pork loin batter quality with the addition of various dietary fibers

The effect of the addition of dietary fiber extracted from wheat, bamboo, and oat on the quality of fried pork loin batter was investigated. Quality evaluation included proximate composition, pH, color, viscosity, coating and frying yield, electronic nose, and sensory evaluation. Regarding proximate composition of fried batter and fried pork loin, the water content of the dietary fiber treatments was significantly higher than that of the control (p < 0.05), whereas fat content was significantly lower than that of the control (p < 0.05). The lightness of non-fried batter with dietary fiber treatments was significantly higher than that of the control (p < 0.05), whereas the yellowness was significantly lower than that of the control (p < 0.05). The lightness, redness, and yellowness of fried pork loin with dietary fiber treatment were significantly lower than those of the control (p < 0.05). The viscosity and coating and frying yield of dietary fiber treatments were significantly higher than those of the control (p < 0.05). The volatile compounds of dietary fiber treatments were decreased “tallowy” flavor and increased “buttery” and “milky” flavor. The principal components of bamboo and oat fiber treatments were clearly distinguishable from those of the control; however, similar principal components as those of the control were obtained with wheat fiber treatment. Regarding sensory evaluation, the color, texture, and overall acceptability of wheat and oat fiber treatments were significantly higher than those of the control (p < 0.05), and the flavor of the wheat fiber treatment was significantly higher than that of the control (p < 0.05). These results show that wheat and oat fibers are suitable for fried pork loin batter and improve its quality.

The Quality Improvement of Emulsion-type Pork Sausages Formulated by Substituting Pork Back fat with Rice Bran Oil

The effects of pork back fat (PBF) substitution with various concentrations of rice bran oil (RBO) (50%, 45%, 40% and 35%) on the physicochemical characteristics and sensory attributes of emulsion-type pork sausages were studied. The modified pork sausages were compared with control sausages produced using PBF only. The sausages with RBO had significantly lower (p<0.05) moisture content than the control sausages. Sausages made from PBF substituted with 40% RBO showed the lowest cooking loss. Substitution of PBF with RBO had no significant effect on the emulsion stability of pork sausages. All sausages with RBO showed significantly lower (p<0.05) hardness values than control sausages. Sausages with RBO also had significantly higher values (p<0.05) of unsaturated fatty acid and polyunsaturated to saturated fatty acid contents than the controls. RBO substitution had no effect on the flavor intensity of sausages, but it improved the tenderness and produced a softer texture.

An Increase in the Omega-6/Omega-3 Fatty Acid Ratio Increases the Risk for Obesity

In the past three decades, total fat and saturated fat intake as a percentage of total calories has continuously decreased in Western diets, while the intake of omega-6 fatty acid increased and the omega-3 fatty acid decreased, resulting in a large increase in the omega-6/omega-3 ratio from 1:1 during evolution to 20:1 today or even higher. This change in the composition of fatty acids parallels a significant increase in the prevalence of overweight and obesity. Experimental studies have suggested that omega-6 and omega-3 fatty acids elicit divergent effects on body fat gain through mechanisms of adipogenesis, browning of adipose tissue, lipid homeostasis, brain-gut-adipose tissue axis, and most importantly systemic inflammation. Prospective studies clearly show an increase in the risk of obesity as the level of omega-6 fatty acids and the omega-6/omega-3 ratio increase in red blood cell (RBC) membrane phospholipids, whereas high omega-3 RBC membrane phospholipids decrease the risk of obesity. Recent studies in humans show that in addition to absolute amounts of omega-6 and omega-3 fatty acid intake, the omega-6/omega-3 ratio plays an important role in increasing the development of obesity via both AA eicosanoid metabolites and hyperactivity of the cannabinoid system, which can be reversed with increased intake of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). A balanced omega-6/omega-3 ratio is important for health and in the prevention and management of obesity.

Nature and nurture in atherosclerosis: The roles of acylcarnitine and cell membrane-fatty acid intermediates

Macrophages recycle components of dead cells, including cell membranes. When quantities of lipids from cell membranes of dead cells exceed processing capacity, phospholipid and cholesterol debris accumulate as atheromas. Plasma lipid profiles, particularly HDL and LDL cholesterol, are important tools to monitor atherosclerosis risk. Membrane lipids are exported, as triglycerides or phospholipids, or as cholesterol or cholesterol esters, via lipoproteins for disposal, for re-use in cell membranes, or for fat storage. Alternative assays evaluate other aspects of lipid pathology. A key process underlying atherosclerosis is backup of macrophage fatty acid catabolism. This can be quantified by accumulation of acylcarnitine intermediates in extracellular fluid, a direct assay of adequacy of β-oxidation to deal with membrane fatty acid recycling. Further, membranes of somatic cells, such as red blood cells (RBC), incorporate fatty acids that reflect dietary intake. Changes in RBC lipid composition occur within days of ingesting modified fats. Since diets with high saturated fat content or artificial trans-fatty acids promote atherosclerosis, RBC lipid content shifts occur with atherosclerosis, and can show cellular adaptation to pathologically stiff membranes by increased long-chain doubly unsaturated fatty acid production. Additional metabolic changes with atherosclerosis of potential utility include inflammatory cytokine production, modified macrophage signaling pathways, and altered lipid-handling enzymes. Even after atherosclerotic lesions appear, approaches to minimize macrophage overload by reducing rate of fat metabolism are promising. These include preventive measures, and drugs including statins and the newer PCSK9 inhibitors. New cell-based biochemical and cytokine assays provide data to prevent or monitor atherosclerosis progression.

Meat fats in nutrition

This article reviews the fat content and fatty acid composition of meats in the human diet and discusses nutritional facts related to meat, meat products and other meat-containing foods as sources of dietary fats. Meat is an increasingly important source of high-value animal protein worldwide. Meat fat comprises mostly monounsaturated and saturated fatty acids, with oleic (C18:1), palmitic (C16:0), and stearic acid (C18:0) being the most ubiquitous. Meat and meat products are considerable sources of cholesterol in the diet. In most industrialized countries, a high meat intake contributes to a higher than recommended total and saturated fat and cholesterol intake. Another concern is that meat may replace sources of other important nutrients in the diet. Therefore, the advice to consumers is to prefer lean meats and low-fat meat products and use meat in moderation only.

Oral exposure to butter, but not fat replacers elevates postprandial triacylglycerol concentration in humans

Oral exposure to dietary fat augments the postprandial triacylglycerol (TAG) concentration. We investigated the TAG response after oral exposure to butter and selected fat replacers. At 2200 h, 17 healthy adults consumed 80 g of almonds and fasted until 0700 h. Safflower oil (50 g in 1-g capsules) was then consumed. Oral stimulation was provided periodically for 2 h as potatoes, potatoes containing butter or one of three fat replacers or no oral stimulation in random order at weekly intervals. Blood was collected at stipulated intervals for 8 h. Oral exposure to butter led to a significantly longer postprandial TAG elevation than the other treatments. The results could not be explained by differential stimulus ingestion, palatability or perceived fat content. There was no significant treatment effect on concentrations of serum oleic acid, apolipoprotein (apo)B-48 or apoB-100, suggesting any oral exposure influence on release of dietary lipid stored in the lacteals or chylomicron and VLDL particle number contributed little to the postprandial TAG rise. In summary, oral exposure to butter elicited a greater postprandial TAG elevation than the tested fat replacers, possibly due to reduced TAG clearance.

Occurrence and biochemical characteristics of natural bioactive substances in bovine milk lipids

Bovine milk lipids (BML) contain a number of bioactive substances with positive as well as negative properties, mainly in the class of fatty acids. Besides trans fatty acids (TFA), conjugated linoleic acids (CLA) are of particular interest. Apart from ruminant meat products the main source of CLA in food are BML. Although TFA as well as saturated fatty acids (12:0-16:0) are thought to be positively correlated with atherosclerosis and coronary heart disease, CLA are considered antiatherogenic. Further, CLA are reported to reduce adipose fat and to have anticarcinogenic properties. The varying CLA and TFA contents of lipids from milk and dairy products are positively correlated with one another. However, TFA are also negatively correlated with 12:0-16:0 in BML. Anticarcinogenic effects are also ascribed to butyric acid as well as to some phospholipids and ether lipids present in BML. Moreover, the essential fatty acids 18:2n-6 and 18:3n-3 are found in BML which are involved in a variety of biochemical processes and thus have numerous functions in human metabolism. Contents of the individual bioactive components of BML are summarised taking into account also seasonal variations. The total content of bioactive substances in BML is approximately 75 % but their overall impact on human health considering benefits and drawbacks is difficult to assess.

Metabolic effects of omega-3 fatty acids

Some metabolic effects of dietary marine oils, or of dietary eicosapentaenoic or docosahexaenoic acid are reviewed. It is pointed out that docosahexaenoic acid appears more effective as regards induction of peroxisomal beta-oxidation. Similarly, docosahexaenoic appears more powerful in terms of suppression of hepatic delta9-desaturase activity and mRNA-levels. The potential inhibitory effect of polyunsaturated fatty acids, particularly docosahexaenoic acid, on mitochondrial beta-oxidation is discussed. Experiments with rats suggesting that the hypolipidaemic response of eicosapentaenoic acid is more marked when the fatty acid was given to fed rats, as compared to fasted rats, are discussed.

Impact of processing on formation of trans fatty acids

Trans fatty acids are formed during hydrogenation which is done to improve the functionality and oxidative stability of oils. Several process conditions affect the content of trans fatty acids in hydrogenated oil. There is conflicting evidence as to whether intake of trans fatty acids, in foods such as margarine, affects the types and levels of cholesterol produced in the blood. Epidemiological studies have shown associated increases in total cholesterol and low density lipoproteins, as well as decreased levels of high density lipo-proteins in the blood. It is unknown whether these effects are related directly to trans fatty acids or to the decrease of unsaturated fatty acids in the diet. This chapter will cover the recent nutritional status of trans fatty acids and the effect of processing on the levels of trans fatty acids in foods.

Evolutionary aspects of omega-3 fatty acids in the food supply

Information from archaeological findings and studies from modern day hunter-gatherers suggest that the Paleolithic diet is the diet we evolved on and for which our genetic profile was programmed. The Paleolithic diet is characterized by lower fat and lower saturated fat intake than Western diets; a balanced intake of omega-6 and omega-3 essential fatty acids; small amounts of trans fatty acids, contributing less than 2% of dietary energy; more green leafy vegetables and fruits providing higher levels of vitamin E and vitamin C and other antioxidants than today's diet and higher amounts of calcium and potassium but lower sodium intake. Studies on the traditional Greek diet (diet of Crete) indicate an omega-6/omega-3 ratio of about 1/1. The importance of a balanced ratio of omega-6:omega-3, a lower saturated fatty acid and lower total fat intake (30-33%), along with higher intakes of fruits and vegetables leading to increases in vitamin E and C, was tested in the Lyon Heart study. The Lyon study, based on a modified diet of Crete, confirmed the importance of omega-3 fatty acids from marine and terrestrial sources, and vitamin E and vitamin C, in the secondary prevention of coronary heart disease, and cancer mortality.

Opioid alkaloids and casomorphin peptides decrease the proliferation of prostatic cancer cell lines (LNCaP, PC3 and DU145) through a partial interaction with opioid receptors

Opioid agonists (ethylketocyclazocine, etorphine, [D-Ala2,D-Leu5]enkephalin (DADLE), [D-Ala2, N-Me-Phe4-Gly-ol]enkephalin (DAGO), [D-Ser2,Leu5]enkephalin-Thr6 (DSLET) and morphine were found to inhibit the proliferation of human prostate cancer cell lines (LNCaP, DU145, and PC3), in a dose-dependent manner. The 50% inhibitory concentrations (IC50) were in the picomolar range. In many cases, this effect was antagonized by the general opioid antagonist, diprenorphine, indicating the existence of specific opioid binding sites. Saturation binding experiments with selective ligands and effectors showed no opioid sites on the LNCaP cell line, kappa1 and mu sites on the PC3 cell line, and kappa1, kappa3 and mu sites on the DU145 cell line. In other cases, the opioid effect was not antagonized by diprenorphine, indicating that the action of opioids might be mediated through other membrane receptors. Furthermore, casomorphin peptides, issued from bovine alpha- (alpha-casein-90-95 and alpha-casein-90-96) and beta-caseins (beta-casomorphin and beta-casomorphin-1-5), and human alphaS1-casein (alphas -casomorphin and alphaS1-casomorphin amide) inhibited cell proliferation of human prostate cell lines, also by a mechanism partly involving opioid receptors. As opioid neurons can be found in the prostate gland, and casomorphin peptides might reach the gland through the general circulation, the above findings indicate a putative role of opioids in prostate cancer cell growth.

Endothelium, fibrinolysis, cardiac risk factors, and prostaglandins: a unified model of atherogenesis

A model of atherogenesis is described in which it is proposed that a state of relative impairment of intravascular fibrinolytic function is the primary defect which makes possible both the initiation and the continued progression of arterial plaques. The key mechanism by which impaired fibrinolysis is atherogenic centers on the unique disruptive effect which fibrin has on the contiguous endothelium of the vascular intimal surface. From this perspective, in areas of spontaneous endothelial injury, impaired fibrinolysis maintains and promotes the gradual enlargement of the area of injury by causing persistently increased intimal permeability and by allowing enhanced fibrin and platelet deposition. This hypothesis thus represents a modification of the response-to-injury hypothesis in which the emphasis has been shifted from the initial endothelial injury to a state of interference with the normal process of healing endothelial injuries. Consistent with this viewpoint, it is noted that all positive risk factors for vascular disease are associated with impairment of fibrinolytic function and, conversely, negative cardiac risk factors enhance fibrinolysis. It is further proposed that one or more prostaglandins, or closely related metabolites, represent the mediators of primary physiologic importance with regard to in vivo regulation of fibrinolysis. By this hypothesis, adequate dietary intake of essential fatty acids, as well as maintenance of unimpaired eicosanoid metabolism, become centrally important in both preventing and reversing arteriosclerosis. This two-tiered model can be used to organize and potentially explain the interrelationship between diverse and apparently divergent sets of epidemiological data which previous models have been unable to accommodate.

Trans fatty acids: implications for health, analytical methods, incidence in edible fats and intake (a review)

Trans fatty acids (TFA) are supposed to be related to a variety of physiological effects. Numerous studies in this field are gathered and compared, which mainly deal with the influences on lipoprotein levels in plasma and their effects with regard to coronary heart diseases. Furthermore, the analytical accessibility of trans fatty acids by different methods is presented. Thus, the most reliable method for an exact quantitation of trans fatty acids in edible fats is the combination of Ag-TLC with GC. The contents of TFA, in particular trans-octadecenoic acids, in bovine and human milk fat, in partially hydrogenated vegetable fats and oils as well as in processed food from different countries, determined in numerous studies, are summarized. Especially results on the isomeric distribution of positional isomers of trans-octadecenoic acid may be of future interest, since negative metabolic activities might only originate from certain isomers. Finally, intake rates of TFA in several countries are presented. It can be concluded that there still is need for further nutritional studies and that the discussion about TFA should not neglect the comparison with the saturated fatty acids C12, C14 and C16.

Trans fatty acids: are the effects only marginal?

In the process of converting vegetable oils into solid fats, a process known as partial hydrogenation, some unsaturated bonds are converted to an unnatural trans position. In humans, trans fatty acids increase low-density lipoprotein cholesterol and decrease high-density lipoprotein cholesterol. In addition, positive associations between intake of trans fatty acids and coronary heart disease have been observed in epidemiological studies. The combined results of metabolic and epidemiological studies provide strong evidence that trans fatty acid intake is causally related to risk of coronary disease. Because the consumption of partially hydrogenated fats is almost universal in the United States, the number of deaths attributable to such fats is likely to be substantial. Federal regulations should require manufacturers to include trans fatty acid content in food labels and should aim to greatly reduce or eliminate the use of partially hydrogenated vegetable fats.

[Content of trans-fatty acids in food]

The fatty acid composition of the fat in 197 food samples has been analyzed by gas liquid chromatography. The use of a 30 m capillary column coated with CPSil88 permitted the separation of the cis and trans isomers. The trans fatty acid content of milk and milk products ranged from 1.9 to 7.9%. Meat samples from ruminants contained 2.0-10.6% trans fatty acids. In pork fat the amounts were less than 0.5%. Sausages and other meat products contained high levels of pork fat. Therefore these samples contained less than 1% trans fatty acids, with the exception of some pure beef products. The amounts of trans fatty acids in foods which may contain hydrogenated oils ranged from 0 to 34.9%. In food samples with high levels of trans fatty acids lower contents of saturated fatty acids were analyzed.

Plasma lipid physical properties in swine fed margarine or butter in relation to dietary magnesium intake

Plasma lipids obtained from swine which had been fed butter or margarine at two dietary magnesium (Mg) levels indicated that the level of dietary Mg was more significant to plasma total cholesterol (TC), low-density lipoprotein cholesterol (LDL-C) and high-density lipoprotein cholesterol (HDL-C) levels than was the presence of butter or margarine. At 270 mg Mg/kg, which is considered adequate for swine, there was a significant difference in the plasma TC between swine fed margarine and those fed butterfat (105 and 126 mg %, respectively). Plasma LDL-C was higher in swine fed butter than in those fed margarine (88 and 71 mg %, respectively). In swine fed an additional 247 mg Mg/kg, however, there was no significant difference in plasma TC between those fed margarine or butter. Although at 247 mg Mg/kg, however, there was no significant difference in plasma TC between those fed margarine or butter. Although at 247 mg Mg/kg plasma LDL-C was higher in swine fed margarine and HDL-C was higher in those fed butter, there were no significant differences in the order parameters of LDL and HDL. Studies in which the influences of dietary fats on plasma cholesterol were first noted were carried out on liquid diets deficient in Mg. Mg, a cofactor in the enzymes involved in desaturation of saturated fatty acids, is also necessary in desaturation of linoleic to arachidonic acid.
