Non-starch polysaccharides in beer and brewing: A review of their occurrence and significance

It has become apparent that beer (both alcoholic and nonalcoholic) contains appreciable amounts of non-starch polysaccharides, a broad subgroup of dietary fiber. It is worth noting that the occurrence of non-starch polysaccharides in alcoholic beer does not imply this should be consumed as a source of nutrition. But the popularity of nonalcoholic beer is growing, and the lessons learnt from non-starch polysaccharides in brewing can be largely translated to nonalcoholic beer. For context, we briefly review the origins of dietary fiber, its importance within the human diet and the significance of water-soluble dietary fiber in beverages. We review the relationship between non-starch polysaccharides and brewing, giving focus to the techniques used to quantify non-starch polysaccharides in beer, how they affect the physicochemical properties of beer and their influence on the brewing process. The content of non-starch polysaccharides in both regular and low/nonalcoholic beer ranges between 0.5 - 4.0 g/L and are predominantly composed of arabinoxylans and β-glucans. The process of malting, wort production and filtration significantly affect the soluble non-starch polysaccharide content in the final beer. Beer viscosity and turbidity are strongly associated with the content of non-starch polysaccharides.

Mechanisms of Action of Nutritionally Rich Hibiscus sabdariffa's Therapeutic Uses in Major Common Chronic Diseases: A Literature Review

Hibiscus sabdariffa, this beverage has been used for millennia as both a delicious cultural beverage and an ancient medicinal therapy. In recent years, many studies have investigated the uses and mechanisms of action of Hibiscus sabdariffa to treat common chronic diseases. In this literature review, we place the spotlight on Hibiscus sabdariffa's medical effect on common chronic diseases, the flower commonly used to make hibiscus tea. The databases PubMed, MEDLINE, Clinical Key, and CINAHL were searched for studies related to Hibiscus sabdariffa's compounds, antioxidative and anti-inflammatory features, mechanism of action on common chronic diseases including hypertension, hyperlipidemia, obesity, diabetes, and Alzheimer's disease. Hibiscus sabdariffa antihypertensive potentials originate from the vasodilator activity, diuretic efficacy, functionality as an ACE inhibitor, adipocyte differentiation inhibitor, heart rate reduction ability, and anti-inflammatory mechanistic. The antihyperlipidemic effect is dose-dependent and stems from the antioxidative effect and the activation of AMPK through phosphorylation and the inhibition of regulatory adipogenic transcription factors PPAR-γ, C/EBP-α, and SREBP-1c, which altogether results in lipid-lowering effect. As an antihyperglycemic, Hibiscus sabdariffa serves as anti-insulin resistance by inhibition of the phosphorylation of IRS-1 beside a similar effect to gliptins. Finally, Hibiscus sabdariffa was proven to protect against neuroinflammation in microglial cell culture exposed to LPS by decreasing IL-1, IL-6, TNF-α expression, and the protective effect against glucotoxicity, improve memory function by inhibiting the formation of hyperphosphorylated tau proteins in the mouse brain. Regular consumption of hibiscus tea or extract is beneficial for a reduction in chronic disease risk and diagnosis. Functionality of Special Beer Processes and Potential Health Benefits

Consumers’ demand for functional fermented food that can fulfill nutritional needs and help maintain a balanced diet while also having a positive impact on one’s health status is increasing all over the world. Thus, healthy choices could include beverages with nutrients and bioactive compounds which can be used as an effective disease-prevention strategy. Regular beer has certain health benefits which inspire further research with the prospect of obtaining special functional beers with little or no alcohol content. As observed, the special beer market remains highly dynamic and is predicted to expand even further. Therefore, brewers need to keep up with the consumers’ interests and needs while designing special beers, namely nonalcoholic beers (NABs), low-alcohol beers (LABs), and craft beers (CBs). Thus, understanding the potential uses of bioactive compounds in special beer, the wide range of therapeutic effects, and the possible mechanisms of action is essential for developing healthier beverages. This review aimed to evaluate the nutritional features of special beers, and their proven or potential beneficial actions on one’s health status and in preventing certain diseases.

Non-Alcoholic and Craft Beer Production and Challenges

Beer is the most consumed alcoholic beverage in the world and the third most popular beverage after water and tea. Emerging health-oriented lifestyle trends, demographics, stricter legislation, religious prohibitions, and consumers’ preferences have led to a strong and steady growth of interest for non-alcoholic beers (NABs), low-alcohol beers (LABs), as well for craft beers (CBs). Conventional beer, as the worlds most consumed alcoholic beverage, recently gained more recognition also due to its potential functionality associated with the high content of phenolic antioxidants and low ethanol content. The increasing attention of consumers to health-issues linked to alcohol abuse urges breweries to expand the assortment of conventional beers through novel drinks concepts. The production of these beers employs several techniques that vary in performance, efficiency, and usability. Involved production technologies have been reviewed and evaluated in this paper in terms of efficiency and production costs, given the possibility that craft brewers might want to adapt them and finally introduce novel non-alcoholic drinks in the market.

The role of dietary fiber in the bioaccessibility and bioavailability of fruit and vegetable antioxidants

Antioxidants are abundant compounds primarily found in fresh fruits and vegetables, and evidence for their role in the prevention of degenerative diseases is continuously emerging. However, the bioaccessibility and bioavailability of each compound differs greatly, and the most abundant antioxidants in ingested fruit are not necessarily those leading to the highest concentrations of active metabolites in target tissues. Fruit antioxidants are commonly mixed with different macromolecules such as carbohydrates, lipids, and proteins to form a food matrix. In fruits and vegetables, carbohydrates are the major compounds found, mainly in free and conjugated forms. Dietary fiber, the indigestible cell wall component of plant material, is considered to play an important role in human diet and health. Most studies on antioxidant bioavailability are focused on foods and beverages from which antioxidants are easily released. There is evidence indicating that food microstructure affects the bioaccessibility and bioavailability of several nutrients, referring mostly to antioxidants. Nevertheless, the specific role of dietary fiber in the absorption of antioxidants has not been widely discussed. In this context, the purpose of the present review is to compile and analyze evidence relating to the association between dietary fiber and antioxidants, and the physical and chemical interactions that modulate their release from the chyme in the gastrointestinal tract.
