Abstract
The impact of Capsicum chinense concentration and salt varieties on cholesterol oxides, physicochemical properties, microbial profiles and organoleptic attributes of Kilishi, a sundried beef jerky, was assessed. Kilishi (KL) was prepared from sundried strips of Biceps femoris and marinated with either 2 % Sodium chloride (NaCl) + 7 % fresh Capsicum chinense (CC) (KL-1), 1 % NaCl + 1 % Potassium chloride (KCl) + 7 % CC (KL-2), 1 % NaCl + 1 % Potassium citrate (C6H5K3O7) + 7 % CC (KL-3), 1 % NaCl + 14 % CC (KL-4), 1 % KCl + 14 % CC (KL-5) or 1 % C6H5K3O7 + 14 % CC (KL-6), and stored at 29 ± 1 °C for 90 d. The partial or total replacement of NaCl lowered (P < 0.05) the Na content in KL. The KL samples treated with 14 % CC had lower (P < 0.05) 25-hydroxy cholesterol, cholesta-3,5-dien-7-one, carbonyl, pH, malondialdehyde, and lightness and greater (P < 0.05) redness and Lactobacillus counts than those treated with 7 % CC. The chemical composition, sensory scores and water activity were unaffected by the additives. The taste, flavor, and overall acceptance scores of KL decreased (P < 0.05) after 30 days of storage. The substitution of KCl and C6H5K3O7 for NaCl and the increase in CC concentration from 7 to 14 % lowered the Na content and selected cholesterol oxides, respectively, without impairing the organoleptic traits of Kilishi.

Abstract
BACKGROUND The high polyunsaturated fatty acids content of rabbit meat predisposes it to oxidative deterioration, which often results in reduced product quality and shelf life. This fact highlights the need to improve the antioxidant status of rabbit meat. This study investigated the effects of dietary supplementation of Allium cepa skin (ACS) on growth, carcass, intramuscular fat, muscle fatty acids, cholesterol content, meat quality, antioxidant status, and sensory attributes of hind leg muscle of rabbits. Sixty-three, 28-day-old, male New Zealand rabbits (654 ± 25 g) were randomly allocated into 21 pens of three rabbits. The pens were randomly assigned to one of three dietary treatments - ACS-0: basal diet (BD) only; ACS-25: BD + 25 g kg-1 ACS; and ACS-50: BD + 50 g kg-1 ACS - for 56 days and then euthanized. RESULTS Dietary ACS did not affect growth performance and retail cuts of rabbits. Muscle cholesterol was lower (P < 0.05) in ACS-supplemented rabbits than in controls. Dietary ACS lowered (P < 0.05) dissectible fat, intramuscular fat content, C14:0, C16:0, C18:0, C18:2n-6, and C20:4n-6 levels and enhanced (P < 0.05) C18:3n-3, C20:5n-3, C22:6n-3, and C22:5n-3 concentration. Dietary ACS increased muscle catalase activity in rabbits. Sensory qualities, malondialdehyde and carbonyl contents, and physicochemical attributes of hind leg muscle of rabbits after chill storage were not influenced by dietary ACS supplementation. CONCLUSION Supplementation with 50 g kg-1 ACS reduced intramuscular fat and cholesterol content and improved muscle n-3 fatty acids without impairing the physicochemical and sensory properties of rabbit meat. © 2021 Society of Chemical Industry.

Abstract
The influence of dietary inclusion of Plukenetia conophora seed (PCS) on growth, carcass, muscle antioxidant enzymes, fatty acids, meat quality, and sensory attributes of Longissimus thoracis et lumburum muscle in rabbits was examined. Seventy-two, 28 d old male New Zealand rabbits (750 ± 20 g) were randomly allotted to diets containing either no PCS (PCS-0), 2.5% PCS (PCS-2.5) or 5% PCS (PCS-5) for eight weeks, and euthanized. PCS-5 rabbits had higher (P < 0.05) body and carcass weights than the PCS-0 rabbits. Dietary PCS improved feed efficiency in rabbits. Muscle antioxidant enzymes activities and total phenols were higher while muscle cholesterol was lower (P < 0.05) in supplemented meat than the PCS-0 meat. The concentration of C22:6n-3, C20:5n-3 and C18:3n-3 was higher (P < 0.05) in the supplemented meat than the PCS-0 meat. Sensory attributes, carbonyl, and TBARS values and physicochemical properties of meat did not differ among diets. Supplementation of PCS-5 enhances muscle n-3 fatty acids without impairing the sensory properties, and oxidative stability of rabbit meat.

Abstract
The available literature lacks information on the metabolic processes taking place in emu muscles after the cessation of circulation. Hence, this study was undertaken to examine the physicochemical characteristics (pH, drip loss, WHC, TBARS, L*, a*, b*) with concomitant changes in protein expression patterns (SDS-PAGE) of femoral muscle (M. iliotibialis lateralis) that occur post mortem and during the first days (0 h, 24 h, 48 h) of its maturation in 1- and 3-year-old emus. Our results indicated that the interaction between emus age and storage time had significant impact on meat pH and all color indicators. Furthermore, we detected 24 differentially expressed protein bands, representing 22 different gene products. ClueGO pathways analysis revealed that these proteins were mainly involved in glycolysis/gluconeogenesis pathway, pyruvate metabolism and pyrophosphate hydrolysis-driven proton transmembrane transporter activity. Based on the results obtained it can be assumed that early post-mortem metabolism of emu muscle is predominantly based on the glycolysis as reflected by the relative abundance alterations of the glycogenolytic and glycolytic enzymes. Moreover, the energy supplies provided by ATP and other high-energy substances degradation is higher in the group of older emus. Our findings also highlighted the complexity of the molecular mechanisms underlying the conversion of muscle to meat.

Abstract
Goat meat is considered healthy because it has fewer calories and fat than meat from other traditional meat species. It is also rich in branched chain fatty acids that have health advantages when consumed. We studied the effects of maternal milk and milk replacers fed to suckling kids of four breeds on the straight and branched fatty acid compositions of their muscle. In addition, the proximal and fatty acid compositions of colostrum and milk were studied. Goat colostrum had more protein and fat and less lactose than milk. Goat milk is an important source of healthy fatty acids such as C18:1 c9 and C18:2 n–6. Suckling kid meat was also an important source of C18:1c9. Dairy goat breeds had higher percentages of trans monounsaturated fatty acids (MUFAs) and most of the C18:1 isomers but lower amounts of total MUFAs than meat breeds. However, these dairy kids had meat with a lower percentage of conjugated linoleic acid (CLA) than meat kids. The meat of kids fed natural milk had higher amounts of CLA and branched chain fatty acids (BCFAs) and lower amounts of n–6 fatty acids than kids fed milk replacers. Both milk and meat are a source of linoleic, α-linolenic, docosahexaenoic, eicosapentaenoic and arachidonic fatty acids, which are essential fatty acids and healthy long-chain fatty acids.
