Abstract
Olive oil extraction has recently experienced a continuous increase due to its related beneficial properties. Consequently, large amounts of olive mill wastes (OMWs) derived from the trituration process are annually produced, causing serious environmental problems. The limited financial capabilities of olive mills make them usually unable to bear the high costs required for the disposal of their wastes. Alternatively, the valorization of OMWs within the framework of the so-called waste-to-resource concept and their recycling can represent a successful strategy for the implementation of circular economy model in the olive industry, which could have significant socioeconomic impacts on low-income Mediterranean countries. There is, however, no unique solution for OMWs valorization, due to the wide variety of the wastes' composition and their seasonal production. In this review, the potential of OMWs for being reused and the recent technological advances in the field of OMWs valorization are assessed. Special focus is given to the analysis of the advantages and limitations of each technology and to reporting the most significant issues that still limiting its industrial scale-up. The information collected in this review shows that OMW could be effectively exploited in several sectors, including energy production and agriculture. OMWs potential seems, however, undervalued, and the implementation of sustainable valorization strategies in large-scale remains challenging. More efforts and policy actions, through collective actions, encouraging subsidies, and establishing public-private collaborations, are still needed to reconcile research progress with industrial practices and encourage the large-scale implementation of the waste-to-resource concept in the olive sector.

Abstract
The increasing production of agro-industrial organic residues in modern society is extremely concerning. One of the most polluting procedures in the agricultural industry is the production of olive oil. This process creates a large amount of waste with high organic load and phytotoxic components. In this study, composting of two-phase olive pomace (OP), olive leaves (OL) and dewatered anaerobic sludge (DAS) from an olive mill wastewater anaerobic digestion process was conducted in a pilot-scale in-vessel high-rate continuous composter. Five different feed scenarios were studied with different OP/OL ratio in the feed material, while the effect of the addition of pine tree bark pieces (PB) and DAS was examined. The OP:OL 95:5 % w/w ratio exhibited the best results in terms of product quality, while OL proved capable of acting as a bulking agent for the better aeration of the material. The final product in the optimum feed ratio was free of Salmonella spp., was stable in terms of static respiratory index (lower than 0.5 g O2 kg-1 VS h-1) but contained elevated E. coli levels (3.5 × 104 CFU g-1 with a limit of 1 × 103 CFU g-1), which was the only EU proposed compost quality criteria not met. The addition of a more easily degradable material in the feed mixture is expected to lead to elevated composting temperature and amend the presence of pathogens.

Abstract
The wastes generated during the olive oil extraction process, even if presenting a negative impact for the environment, contain several bioactive compounds that have considerable health benefits. After suitable extraction and purification, these compounds can be used as food antioxidants or as active ingredients in nutraceutical and cosmetic products due to their interesting technological and pharmaceutical properties. The aim of this review, after presenting general applications of the different types of wastes generated from this industry, is to focus on the olive pomace produced by the two-phase system and to explore the challenging applications of the main individual compounds present in this waste. Hydroxytyrosol, tyrosol, oleuropein, oleuropein aglycone, and verbascoside are the most abundant bioactive compounds present in olive pomace. Besides their antioxidant activity, these compounds also demonstrated other biological properties such as antimicrobial, anticancer, or anti-inflammatory, thus being used in formulations to produce pharmaceutical and cosmetic products or in the fortification of food. Nevertheless, it is mandatory to involve both industries and researchers to create strategies to valorize these byproducts while maintaining environmental sustainability.

Abstract
Composting has become a preferable option to treat organic wastes to obtain a final stable sanitized product that can be used as an organic amendment. From home composting to big municipal waste treatment plants, composting is one of the few technologies that can be practically implemented at any scale. This review explores some of the essential issues in the field of composting/compost research: on one hand, the main parameters related to composting performance are compiled, with especial emphasis on the maturity and stability of compost; on the other hand, the main rules of applying compost on crops and other applications are explored in detail, including all the effects that compost can have on agricultural land. Especial attention is paid to aspects such as the improvement of the fertility of soils once compost is applied, the suppressor effect of compost and some negative experiences of massive compost application.

Abstract
Composting is the controlled conversion of degradable organic products and wastes into stable products with the aid of microorganisms. Composting is a long-used technology, though it has some shortcomings that have reduced its extensive usage and efficiency. The shortcomings include pathogen detection, low nutrient status, long duration of composting, long mineralization duration, and odor production. These challenges have publicized the use of chemical fertilizers produced through the Haber–Bosch process as an alternative to compost over time. Chemical fertilizers make nutrients readily available to plants, but their disadvantages outweigh their advantages. For example, chemical fertilizers contribute to greenhouse effects, environmental pollution, death of soil organisms and marine inhabitants, ozone layer depletion, and human diseases. These have resulted in farmers reverting to the application of composts as a means of restoring soil fertility. Composting is a fundamental process in agriculture and helps in the recycling of farm wastes. The long duration of composting is a challenge; this is due to the presence of materials that take a longer time to compost, especially during co-composting. This review discusses the proper management of wastes through composting, different composting methods, the factors affecting composting, long-duration composting, the mechanism behind it, the present trends in composting and prospects. The extraction of mono-fertilizers from compost, development of strips to test for the availability of heavy metals and pathogens as well as an odor-trapping technique can go a long way in enhancing composting techniques. The addition of activators to raw materials can help to improve the nutritional quality of compost. This review further recommends that degradable organic material in which composts slowly should be assessed for their ability to mineralize slowly, which could make them advantageous to perennial or biennial crops. Viricides, fungicides, anti-nematodes, and anti-bacterial of plant or organic sources could as well be added to improve compost quality. The enhancement of composting duration will also be useful.

Abstract
In agriculture, the wine sector is one of the industries most affected by the sustainability issue. It is responsible for about 0.3% of annual global greenhouse gas emissions from anthropogenic activities. Sustainability in vitiviniculture was firstly linked to vineyard management, where the use of fertilizers, pesticides and heavy metals is a major concern. More recently, the contribution of winemaking, from grape harvest to bottling, has also been considered. Several cellar processes could be improved for reducing the environmental impact of the whole chain, including microbe-driven transformations. This paper reviews the potential of microorganisms and interactions thereof as a natural, environmentally friendly tool to improve the sustainability aspects of winemaking, all along the production chain. The main phases identified as potentially interesting for exploiting microbial activities to lower inputs are: (i) pre-fermentative stages, (ii) alcoholic fermentation, (iii) stage between alcoholic and malolactic fermentation, (iv) malolactic fermentation, (v) stabilization and spoilage risk management, and (vi) by-products and wastewater treatment. The presence of proper yeast or bacterial strains, the management and timing of inoculation of starter cultures, and some appropriate technological modifications that favor selected microbial activities can lead to several positive effects, including (among other) energy savings, reduction of chemical additives such as sulfites, and reuse of certain residues.
