Abstract
The present study aimed to find out the feasibility of increasing the meat quality of finishing gilts by increasing their slaughter weight (SW) to an extra-high (XH) level and also by using a low-lysine (lys) diet in XH-weight pig production. Twenty-four gilts and eights barrows were divided into four treatments (T) by gender, SW, and diet: T1 (barrow; 116-kg SW; Medium [Med]-lys [0.80%] diet), T2 (gilt; 116-kg SW; Med-lys), T3 (gilt; XH [150 kg] SW; Med-lys), and T4 (gilt; XH SW, Low-lys [0.60%]). Growth performance from 85 kg of body weight to SW was measured only for T3 and T4. All animals were slaughtered at their target SW, followed by physicochemical analyses and sensory evaluation on the Longissimus lumborum muscle (LL). Average daily gain did not differ between T3 and T4. Dressing percentage was greater for T3 vs. T2. Backfat thickness was greater for T1 vs. T2 and T3 vs. T2, not being different between T3 and T4. The LL pH was lower and Warner-Bratzler Shear force value was greater for T3 vs. T2. Other physicochemical measurements including the intramuscular fat content were not different or different narrowly if different at all (p < 0.05) between T3 and T2 or T4, but not between T1 and T2. The percentages of major fatty acids including 16:0, 18:0, 18:1, and 18:2 in LL, which did not differ between T2 and T3, differed between T3 and T4 apparently resulting from a difference in composition of the ingredients of the two diets. The sensory texture score was greater for T3 vs. T2 in fresh LL; in cooked LL, juiciness and umami scores were greater for T3 vs. T2, flavor score being less for T4 vs. T3. The gender effects on physicochemical and sensory pork quality were small, if any. Overall, the meat quality of finishing gilts could be improved by increasing the SW to the XH level, but not by using the Low-lys diet, suggesting that it will be feasible to produce XH-weight market gilts if the increased meat quality can make up for the expected decrease in production efficiency accompanying the increased SW.

Abstract
Currently, in pork auctions in Korea, only carcass weight and backfat thickness provide information on meat quantity, while the production volume of primal cuts and fat contents remains largely unknown. This study aims to predict the production of primal cuts in pigs and investigate how these carcass traits affect pricing. Using the VCS2000, the production of shoulder blade, loin, belly, shoulder picnic, and ham was measured for gilts (17,257 pigs) and barrows (16,365 pigs) of LYD (Landrace × Yorkshire × Duroc) pigs. Single and multiple regression analysis were conducted to analyze the relationship between the primal cuts and carcass weight. The study also examined the correlation between each primal cut, backfat thickness (1st thoracic vertebra backfat thickness, grading backfat thickness, and Multi-brached muscle middle backfat thickness), pork belly fat percentage, total fat yield, and auction price. A multiple regression analysis was conducted between the carcass traits that showed a high correlation and the auction price. After conducting a single regression analysis on the primal cuts of gilt and barrow, all coefficients of determination (R2) were 0.77 or higher. In the multiple regression analysis, the R2 value was 0.98 or higher. The correlation coefficient between the carcass weights and the auction price exceeded 0.70, while the correlation coefficients between the primal cuts and the auction prices were above 0.65. In terms of fat content, the backfat thickness of gilt exhibited a correlation coefficient of 0.70, and all other items had a correlation coefficient of 0.47 or higher. The correlation coefficients between the Forequarter, Middle, and Hindquarter and the auction price were 0.62 or higher. The R2 values of the multiple regression analysis between carcass traits and auction price were 0.5 or higher for gilts and 0.4 or higher for barrows. The regression equations between carcass weight and primal cuts derived in this study exhibited high determination coefficients, suggesting that they could serve as reliable means to predict primal cut production from pig carcasses. Elucidating the correlation between primal cuts, fat contents and auction prices can provide economic indicators for pork and assist in guiding the direction of pig farming.

Abstract
Forty LW × L pigs (20 boars and 20 gilts) (51.1 ± 0.41 kg) were allocated to a 2 × 2 × 2 factorial design with the respective factors being supplemental organic iron (Fe, 0 and 500 mg/kg), inulin (In, 0 and 50 g/kg) and sex (boars and gilts). After 5 weeks the animals were transported to an abattoir before slaughter and collection of samples. Serum iron was increased by supplemental Fe (28.4 v. 30.9 μmol/L, P = 0.05), although there was an interaction (P = 0.03) such that pigs fed diets with In had lower serum Fe concentrations than those without In (26.8 v. 32.3 μmol/L). Boars had lower (P < 0.01) haemoglobin (116 vs 125), haematocrit (36.7 v. 39.7%) and erythrocyte (6.6 v. 7.1 × 106/mL) concentrations than gilts. Dietary In increased liveweight gain (795 v. 869 g/d, P < 0.02) and carcass weight (62.9 v. 65.2 kg, P < 0.02). Dietary Fe or In supplementation did not improve muscle Longissimus thoracis et lumborum (LTL) total Fe concentration (P > 0.05). Muscle non-heme Fe concentration was higher in Fe-supplemented pigs (P < 0.04) and gilts (P < 0.05) than their counterparts. Muscle heme Fe concentration was greater (3.04 vs 2.51, P < 0.05) in boars than in gilts. The LTL marbling score was greater (P < 0.01) for In-supplemented pigs, and the response was more notable when Fe and In were fed together. These data show that dietary supplementation of Fe increased serum Fe and muscle non-heme Fe concentrations. Supplementation of In at 5% in the diet of finisher pigs improved liveweight gain and the marbling score of pork.

Abstract
The effects of different dietary n-6/n-3 polyunsaturated fatty acids (PUFA) ratios and gender on key carcass traits, as well as the nutritional and technological quality of lipids in medium-heavy pig tissues have been poorly studied. To investigate the subject, 24 Large White, barrows and gilts, evenly divided into two groups of 12, were fed from 80 kg of live-weight (LW) until slaughter at 150 kg LW, either a high (9.7:1) (HPR) or low (1.4:1) (LPR) dietary n-6/n-3 PUFA ratio. On individual samples of longissimus thoracis muscle (LTM), subcutaneous (SF) and perirenal (PF) adipose tissues (ATs), the fatty acid (FA) composition was determined by gas chromatography, and lipid nutritional indices (LNIs) were calculated. The oxidative stability of meat was evaluated by determining the malondialdehyde content on raw and cooked (24 h postmortem) and refrigerated (8 days postmortem) LTM samples. The carcass traits did not vary between genders and diets. The LPR group showed a higher n-3 PUFA level and a lower n-6/n-3 PUFA ratio in all the tissues examined and better LNI, especially in the ATs. Diet did not affect the oxidative stability of meat. Gender did not influence the n-6/n-3 PUFA ratio, while barrows showed improvements in some LNI in ATs. Reducing the n-6/n-3 ratio in the diet of growing-finishing medium-heavy pigs improved the FA profile in all tissues and most LNI in ATs without impairing the oxidative stability of meat.

Abstract
Management of hyperprolific sows is challenging when it comes to controlling birth weight variability and piglet survival in large litters. The growth of low birth weight piglets can be compromised and have a negative impact on production efficiency. The objective of the study was to apply a random regression coefficient model to estimate the main effects of the growth of piglets of highly prolific sows. The dataset contained growth data for 360 piglets from 25 Pen Ar Lan Naima sows. In addition to routine procedures after farrowing, piglets were weighed five times: on day 1 after farrowing, on day 14 of life, at weaning on day 28, on day 30 of nursery period, and at the end of the nursery period when piglets were 83 days old. Data were treated as longitudinal, with body weight as the dependent variable. Fitting age as a quadratic regression within piglets in the random part of the model helped to determine the significant effect of birth weight, litter size, and parity on the growth of the piglets. Since the piglets from large litters often have non-uniform birth weights and this can affect further growth, the use of a random regression coefficient model is practical for analysing the growth of such piglets due to the ability to describe the individual growth pattern of every individual.

Abstract
The objective of this experiment was to evaluate increasing the concentration of lysine on the compensatory gain of finishing pigs during their recovery period after being fed a 97% corn holding diet for 3 or 6 wk. One thousand six hundred and eighty pigs with a starting body weight of 73.5 ± 2.2 kg were blocked by starting body weight and assigned to a nested arrangement. Twenty replicates of seven treatments were comprised of two restriction lengths [3 weeks (3 wk) vs. 6 weeks (6 wk)], and three lysine concentrations during recovery (Lys:ME same as control:100; control + 10%: 110; control + 20%: 120) plus one control (CONT) that remained nutrient unrestricted. Pen weight and feed intake were recorded on days 0, 21, 41, and at marketing. Whole pens were marketed when the pen average met 130 kg and carcass measurements were collected. Data were analyzed by pen with the fixed effects of restriction length and lysine within restriction length. Nutrient restriction lowered (P < 0.01) average daily gain (ADG) compared to control, with 1.2, 0.4, and 0.5 kg for control, 3 wk, and 6 wk treatments, respectively. Restricted pigs showed decreased feed intake while restricted. After the respective restriction period, pigs were allowed a recovery diet until market. Previously restricted pigs had 16.7% and 27.3% greater (P < 0.01) ADG over control pigs for 3 and 6 wk treatments, respectively, in the first 3-wk of recovery. The lysine concentration in the recovery diet impacted (P < 0.01) the ADG with pigs allowed the highest lysine concentration having a 10% greater ADG than pigs fed the lower Lys:ME concentrations, for both restriction treatments. The increase in ADG was not paralleled by an increase in feed intake over control, thus, there was an improvement (P < 0.01) in gain to feed ratio in the recovery period. Control pigs reached market weight (131.5 kg) on experiment day 49 while pigs fed corn diets for 3 wk or 6 wk were slower to market (57 and 69 days, respectively; P < 0.01). Restricted pigs had greater backfat (CONT: 1.47, 3 wk: 1.55, 6 wk: 1.65 cm; P < 0.01), and decreased loin depth (CONT: 7.32, 3 wk: 7.03, 6 wk: 6.61 cm, P < 0.02) which was also impacted (P < 0.01) by lysine concentration. In conclusion, the use of restrictive diets reduced ADG and increased days to market. The use of recovery diets in which the Lys:ME ratio was greater than control pigs, resulted in increased compensatory growth.

Abstract
The aim of this study was to investigate effects of dietary ratio of valine to isoleucine [R(V/I)] on carcass characteristics and meat quality of finishing pigs and whether slaughter weight influence the effect. We carried out a 2 × 3 factorial trial with two slaughter weight (105 vs. 130 kg) and three R(V/I) (0.58, 1.23, and 2.60 at 75–100 kg body weight, and 0.70, 1.24, and 2.39 at 100–135 kg body weight for L-, N- and H-R (V/I), respectively). Data show that increasing slaughter weight significantly increased meat color (a*45 min and b*45 min), drip loss and shear force (P < 0.05). Meanwhile, increasing slaughter weight reduced sarcomere length, the proportion of protein-bound water, and most kinds of muscular total amino acid contents except for tryptophan and arginine, while increased contents of muscular free lysine, tryptophan, leucine, isoleucine, valine, alanine, and arginine in the M. longissimus thoracis (P < 0.05). Health lipid indices based on fatty acid composition of intramuscular lipid were improved as the slaughter weight increased (P < 0.05). Notably, pigs received N-R (V/I) diet improved carcass traits in terms of thinner backfat thickness and higher fat-free lean index, as well as increased meat flavor-contributing amino acids at the cost of reduced intramuscular fat content and increased shear force of cooked meat compared with the pigs fed L-R (V/I) and H-R(V/I) diets (P < 0.05). H-R (V/I) diet decreased ultimate pH value and sarcomere length of the skeletal muscle but increased the proportion of free water (T23), consequently, increased drip loss and cooking loss of fresh meat in pigs (P < 0.05). In conclusion, both slaughter weight and dietary ratio of valine to isoleucine exerted significant impacts on carcass characteristics, meat quality and nutrition values. In particular, carcass traits and meat color of lighter pigs were more susceptible to the influence of dietary R (V/I) relative to heavier pigs.

Abstract
Pork hot carcass weights (HCW) have been increasing 0.6 kg per year, and if they continue to increase at this rate, are projected to reach an average weight of 118 kg by the year 2050. This projection in weight is a concern for pork packers and processors given the challenges in product quality from heavier carcasses of broiler chickens. However, previous work demonstrated that pork chops from heavier carcasses were more tender than those from lighter carcasses. Therefore, the objective was to determine the effects of pork hot carcass weights, ranging from 90 to 145 kg with an average of 119 kg, on slice shear force and sensory traits of Longissimus dorsi chops when cooked to 63°C or 71°C, and to assess if differences in chilling rate can explain differences in sensory traits. Carcasses were categorized retrospectively into fast, medium, or slow chilling-rates based on their chilling rate during the first 17 h postmortem. Loin chops cut from 95 boneless loins were cooked to either 63°C or 71°C and evaluated for slice shear force and trained sensory panel traits (tenderness, juiciness, and flavor) using two different research laboratories. Slopes of regression lines and coefficients of determination between HCW and sensory traits were calculated using the REG procedure in SAS and considered different from 0 at P ≤ 0.05. As hot carcass weight increased, chops became more tender as evidenced by a decrease in SSF (63°C ß = -0.0412, P = 0.01; 71°C ß = -0.1005, P < 0.001). Further, HCW explained 25% (R 2 = 0.2536) of the variation in chilling rate during the first 5 h of chilling and 32% (R 2 = 0.3205) of the variation in chilling rate from 5 h to 13 h postmortem. Slow and medium-rate chilling carcasses were approximately 12 kg heavier (P < 0.05) than fast chilling carcasses. Slice shear force of chops cooked to 63° and 71°C was reduced in slow and medium chilling compared with fast chilling carcasses. Carcass temperature at 5 h postmortem explained the greatest portion of variation (R 2 = 0.071) in slice shear force of chops cooked to 63°C. These results suggest that carcasses tend to chill slower as weight increases, which resulted in slight improvements in sensory traits of boneless pork chops regardless of final degree of doneness cooking temperature.

Abstract
A total of 96 Black Slavonian pigs were subjected to the research, in which they were split into 6 groups. Three groups (100, 120, and 130 kg) were fed a higher level (HL) of crude protein in fodder mixtures (CPFM), and three groups (100, 120, and 130 kg) were fed a lower level (LL) of CPFM. After the pigs were slaughtered, pig carcasses were dissected and the meat and halves quality indicators were determined. According to the influence of the final body weight (BW) and nutrition of pigs on the quality of their halves, meat, and dry fermented sausages (kulens), it was concluded that feeding an HL of CPFM increased the proportion of loin, belly rib part, and chin and increased the muscle tissue in the ham, loin, shoulder, neck, and belly rib parts. However, the chemical composition of the meat and the sensory properties of the kulen were not significantly affected by feeding the pigs an HL of CPFM. It was concluded that, by selecting the final BW and adjusting the feeding strategies for pigs, it is possible to modify the conformation and composition of pig carcasses and the quality of meat and kulens produced from the Black Slavonian pig, which is important because consumers prefer products with certain characteristics and of a standard quality and are ready to pay for them.

Abstract
Simple Summary In recent years, pigs involved in the dry-cured ham production system have suffered from excessive leanness. This has led to the increase of slaughter weight (SW) to achieve greater carcass and ham fatness statuses to compensate for the loss in dry-curing aptitude. The production guidelines for the production of Italian dry-cured ham are currently under revision and an extension of the range of carcass weights from 126 to 168 kg, corresponding to about 146 to 210 kg of SW, has been proposed. However, little is known about the influence of SW in the range of 140–200 kg on growth performance, feed efficiency, carcass quality and ham curing aptitude. We hypothesized that an increased SW could exert a positive influence on ham characteristics. Data from 159 pigs fed ad libitum with diets, unlimiting for nutrient contents, up to 8 or 9 months of age (140–200 kg SW) were used. Greater SWs were linearly and positively associated with the growth performance of the pigs and with better ham quality traits. Greater SW increased ham weight, muscularity, and greater fat covering, according to the dry-cured ham industry’s expectations. Barrows produced hams with greater weight and marbling than gilts. Abstract Slaughter weight (SW) is critical for dry-cured ham production systems with heavy pigs. A total of 159 C21 Goland pigs (gilts and barrows) at 95 ± 9.0 kg body weight (BW) from three batches were used to investigate the impact of ad libitum feeding on SW, growth performance, feed efficiency, and carcass and green ham characteristics. Diets contained 10 MJ/kg of net energy and 7.4 and 6.0 g/kg of SID-lysine. Slaughter weight classes (SWC) included <165, 165–180, 180–110 and >210 kg BW. In each batch, pigs were sacrificed at 230 or 258 d of age. Left hams were scored for round shape, fat cover thickness, marbling, lean colour, bicolour and veining. Data were analyzed with a model considering SWC, sex and SWC × Sex interactions as fixed factors and the batch as a random factor. The linear, quadratic and cubic effects of SWC were tested, but only linear effects were found. Results showed that pigs with greater SWC had greater average daily gain and feed consumption, with similar feed efficiency and better ham quality traits: greater ham weight, muscularity, and fat coveringin correspondence of semimembranosus muscle. Barrows were heavier and produced hams with slightly better characteristics than gilts.

Abstract
Nutritional requirements of heavy immunocastrated (IM) pigs and therefore appropriate feeding strategies have not yet been determined. Thus, the effects of changes in dietary net energy (NE) content were studied in 41 IM pigs, fed ad libitum diets with low, medium, and high NE content (LNE, MNE, and HNE diets, with 8.5, 9.3, and 10.0 MJ NE/kg, respectively), from 84 days of age until slaughter at an average age of 172 days and an average body weight of 122.5 kg. In the period from 143 to 170 days of age, there was a tendency for a greater NE intake (p = 0.08) in pigs fed the HNE diet along with greater (p < 0.01) backfat gain. Dietary treatment affected carcass composition, as lower backfat thickness (p = 0.01) and lower area of fat over the longissimus muscle (p = 0.05) were observed in the LNE and MNE pigs. In addition, greater lean meat content (p = 0.04) was observed in the LNE pigs. Reducing the NE of the diet by replacement of cereals and soybean meal with high-fiber ingredients resulted in lower indole production in the ascending colon (p < 0.01) and greater skatole production (p < 0.01) in the cecum. Greater villus area, width, height and perimeter, crypt depth, and thickness of the intestinal mucosa in the jejunum, ileum, ascending colon, and descending colon were found in the LNE group (p < 0.01) than in the HNE group, while those in the MNE group was intermediate. Cell proliferation was not affected by dietary treatment (p > 0.05). The present results show that a reduction in dietary NE concentration lowers lipid deposition, without affecting performance or energy efficiency in IM pigs. This technique provides an advantage in terms of improved leanness, without affecting growth rate in IM pigs after immunization, which is particularly important when the backfat thickness is a determinant of carcass value and IM pigs are fattened to higher weights (e.g., in heavy pig production) or when a longer delay between immunization and slaughter is practiced.

Abstract
The objective of this study was to investigate the influence of increasing carcass weight (CW) on meat quality traits including meat color, water-holding capacity (WHC), tenderness, backfat thickness and intramuscular fat (IMF) content of pork loin. A total of 96 pork carcasses (48 LYD [Landrace × Yorkshire × Duroc] barrows and gilts) were selected at a commercial slaughterhouse. Each gender had commercial CW (≤ 90 kg), heavy CW (91-100 kg) and very heavy CW (> 100 kg) (16 carcasses from each CW group). Loin cuts (Longissimus lumborum) were excised to investigate meat color (CIE L*a*b*), drip loss, cooking loss, released water, Warner-Bratzler shear force (WBSF), and IMF content. Backfat thickness and IMF content of pork loin samples were significantly (p < 0.05) increased with increasing CW, although there was no significant difference in ultimate pH (pHu). CIE a* increased significantly (p < 0.05) with increasing CW, while there were no significant differences in CIE L* or CIE b* among CW groups. Although all WHC measures showed no significant differences among CW groups, WBSF increased significantly (p < 0.01) with increasing CW. Sensory flavor score was significantly increased while panel score for tenderness was decreased significantly (p < 0.001) with increasing CW. Consequently, CW had a positive correlation with flavor but negative correlation with tenderness. These results indicate that the increased IMF content improves flavor, juiciness and palatability, although tenderness deteriorates with increasing CW.

The effect of sex and slaughter weight on performance, carcass quality and gross margin, assessed on three commercial pig farms. Animal 2019; 14:1546-1554. Abstract
Economic margins on pig farms are small, and changing slaughter weights may increase farm profitability. However, one can question if the optimal slaughter weight is the same for each sex. On three farms, crossbred pigs (n = 1128) were used to determine the effect of sex and slaughter weight on performance, carcass quality and gross margin per pig place per year. On each farm, an equal number of entire males (EMs), barrows (BAs), immunocastrates (IC) and gilts (GIs) were housed separately in group pens. Pens were randomly divided into three categories of different slaughter weights: 105, 117 and 130 kg BW. In BA, the high average daily feed intake (ADFI) and the lower capacity to gain muscle led to a higher feed conversion ratio (FCR) and lower lean meat percentage in comparison to EM and IC. In all sexes, ADFI and FCR increased with an increasing slaughter weight but the effect of slaughter weight on carcass quality varied between sexes. In BA and GI, slaughter weight had no effect on carcass quality, but in EM and IC, carcass quality improved at higher slaughter weights. Gross margin per pig place per year was calculated as gross margin per pig × barn turnover per year, taking into account fixed costs per round, feed costs and output price per pig. The slaughter weight that gained the highest gross margin per year differed between sexes. Slaughtering BA and GI at 130 kg BW, compared to 105 or 117 kg BW, decreased the gross margin per pig place per year due to the lower margin per pig and barn turnover at higher weights. In IC and EM, no difference in gross margin per pig place per year could be demonstrated between slaughtering at 105, 117 or 130 kg BW. In IC, the increasing gross margin per pig with increasing slaughter weights counteracted with the lower barn turnover. In EM, gross margin per pig did not differ between slaughter weights, but the effect of barn turnover was too small to demonstrate significant differences between slaughter weights on gross margin per pig place per year. In conclusion, slaughter weight has an impact on profitability in BA and GI: they should not be slaughtered at 130 kg BW but at lower weights, but no effect could be demonstrated in EM and IC.

Abstract
OBJECTIVE The QingYu pig is well known for its excellent meat quality attributes in Sichuan province, China. In order to improve its production efficiency, the determination of genetic factors contributing to quantifiable economic traits of livestock is important. Moreover, the cross-breeding of QingYu pigs with western breeds possessing strong growth attributes is an efficient way to improve the performance of this breed. METHODS Here, the genetic parameters of several important reproductive traits of QingYu pigs were estimated, include total number born (TNB), number born alive, litter birth weight, individual birth weight, number of piglets weaned, litter weaning weight, and individual weaning weight. The data was analyzed using the ASReml 3.0 software (NSW Inc., Sydney, Australia). Furthermore, the effects of crossing Berkshire with QingYu (BQ) pigs on carcass and meat quality traits, as well as the effects of slaughter weight on carcass and meat quality of BQ were characterized. RESULTS QingYu pigs exhibited superior reproductive traits. The TNB available to QingYu pigs was more than 8 per parity. The observed repeatability of the reproductive traits of the QingYu pigs was between 0.10 and 0.23. The significantly correlated genetic and phenotypic of reproduction traits were consistent. Interestingly, the BQ pigs exhibited improved carcass quality, with a significant increase in loin muscle area, lean percentage and reduction in sebum percentage. As a result, BQ had higher L45min, lower cooking scores, and lower drip loss. In addition, the loin muscle area, body length, and sebum percentage were significantly higher in 90 and 100 kg animals. Cooking loss showed a significant increase at 80 kg, and marbling increased significantly from 90 kg. CONCLUSION The results of this study suggest that QingYu pigs exhibit excellent reproductive properties and heritability of these traits. Crossing with Berkshire is an efficient strategy to improve the carcass and meat quality of QingYu pigs for commercial operations. Furthermore, it appears as though the optimal slaughter weight of BQ pigs is at approximately 90 kg.

Abstract
The objective of this study was to evaluate the effects of increased pork hot carcass weight on loin quality and palatability of top loin chops. Pork loins (N = 200) were collected from 4 different hot carcass weight groups: A light weight (LT; less than 111.8 kg), medium-light weight (MLT; 111.8 to 119.1 kg), medium-heavy weight (MHVY; 119.1 to 124.4), and a heavyweight group (HVY; 124.4 and greater). Following fabrication, chops were assigned to fat and moisture analysis, Warner-Bratzler shear force (WBSF), consumer sensory panels, or trained sensory panels. Chops from the HVY group were rated as more (P < 0.05) tender compared to chops from the LT carcasses. Additionally, chops from the HVY weight group had greater (P < 0.05) consumer overall like ratings compared to chops from both the LT and MLT groups. Carcass weight did not affect (P > 0.05) consumer flavor liking ratings. Hot carcass weight treatment did not contribute (P > 0.05) to the percentage of chops rated acceptable for flavor and overall liking. The greatest (P < 0.05) percentage of samples were rated acceptable for juiciness for chops from the HVY weight group, and the lowest (P < 0.05) percentage of acceptable ratings for tenderness were for chops from the LT weight group. Both initial and sustained juiciness from MHVY carcasses were rated as more (P < 0.05) juicy compared to chops from both MLT and LT carcasses by trained sensory panelists. Additionally, chops from the LT carcasses had the lowest (P < 0.05) myofibrillar tenderness ratings. Chops from MHVY and HVY carcasses were similar (P > 0.05), with greater (P < 0.05) overall tenderness ratings compared to chops from LT carcasses. These results indicate chops from heavier weight carcasses may have improved tenderness and juiciness compared to chops from lighter carcasses.

Abstract
The objective of this study was to evaluate the effect of increased pork hot carcass weights on consumer visual acceptability and purchase intent ratings of top loin chops cut to various thicknesses in a price labeled versus unlabeled retail display scenario. Pork loins (N = 200) were collected from 4 different hot carcass weight groups: light weight (LT; less than 111.8 kg), medium-light weight (MLT; 111.8 to 119. kg), medium-heavy weight (MHVY; 119.1 to 124.4 kg), and a heavy weight group (HVY; 124.4 kg and greater). Loins were fabricated into 4 pairs of chops of specified thicknesses (1.27, 1.91, 2.54, and 3.18 cm). One chop from each pair was assigned to be packaged with or without a label. Consumers assessed chops for appearance, desirability, and purchase intent. For both appearance and purchase intent ratings, chops from HVY carcasses were given more desirable (P < 0.05) ratings compared to LT chops. Consumers gave greater (P < 0.05) appearance ratings to thicker cut chops. There was a hot carcass weight × chop thickness interaction (P < 0.05) for the percentage of consumers that indicated the chop was desirable overall. Regardless of hot carcass weight group, chops with a thickness of 1.27 cm had the lowest (P < 0.05) percentage of consumers indicate they were desirable overall. A greater (P < 0.05) percentage of consumers indicated “yes” they would purchase chops cut to a thickness of 2.54 cm compared to all other thicknesses. Additionally, there was a greater (P < 0.05) percentage of consumers who indicated they would purchase unlabeled chops compared to labeled chops. These results, within the population sampled, indicate that carcass weight and chop thickness can affect consumer preference and thus should be considered by retailers when marketing fresh pork loin chops.

Automatic ham classification method based on support vector machine model increases accuracy and benefits compared to manual classification. Meat Sci 2019; 155:1-7. Abstract
The thickness of the subcutaneous fat (SFT) is a very important parameter in the ham, since determines the process the ham will be submitted. This study compares two methods to predict the SFT in slaughter line: an automatic system using an SVM model (Support Vector Machine) and a manual measurement of the fat carried out by an experienced operator, in terms of accuracy and economic benefit. These two methods were compared to the golden standard obtained by measuring SFT with a ruler in a sample of 400 hams equally distributed within each SFT class. The results show that the SFT prediction made by the SVM model achieves an accuracy of 75.3%, which represents an improvement of 5.5% compared to the manual measurement. Regarding economic benefits, SVM model can increase them between 12 and 17%. It can be concluded that the classification using SVM is more accurate than the one performed manually with an increase of the economic benefit for sorting.

Abstract
The objective was to control intrinsic and extrinsic factors associated with the production and slaughter of pigs to determine effects of sire line (Pietrain vs. Duroc ancestry) on growth performance, carcass and belly characteristics, and commercial bacon yields of growing-finishing pigs. There were no differences in growth performance (P ≥ 0.08) or belly processing characteristics (P ≥ 0.09). Pietrain sired pigs had a greater lean yield (P ≤ 0.01). Duroc sired pigs had darker, more highly marbled loins (P ≤ 0.04) and thicker bellies (P < 0.001). Bacon from Pietrain sired pigs had a greater (P = 0.04) lean to fat ratio with 1.58% increase (P = 0.04) in average bacon slice lean. Barrows had more highly marbled loins (P ≤ 0.01) and thicker bellies (P < 0.001) than gilts. Bacon from barrows had a greater slice area (P < 0.001) while bacon from gilts had a greater lean to fat ratio (P = 0.04).

Abstract
Niang Megha is one of the 7 registered pig breeds of indigenous origin in India. The study was part of a programme to improve pig production in India and the information on carcass composition and meat quality are very much essential towards the development of a suitable breeding plan for this pig breed. Gilts (14) and barrows (20) from Niang Megha breed were slaughtered at the age of 10 months for evaluating the different parameters. Moisture: protein ratio varied from 3.38 to 3.64 and no significant difference was observed between gilts and barrows. The cholesterol content in M. longissimus thoracis et lumborum varied from 46.81 mg/100g to 68.15 mg/ 100g, with an average of 60.68 mg/100g. Instrumental colour measurement indicated that the coordinates were in the following range: lightness (L*), 55.83–74.18; redness (a*, red±green), 9.81–19.37; and yellowness (b*, yellow±blue), 19.97–39.38. The haem iron content was significantly higher in barrows compared to gilts. The mineral contents in the M. longissimus thoracis et lumborum were in the following range: potassium, 271–337 mg/ 100g; zinc, 0.54–0.97 mg/100g; copper, 0.03–0.09 mg/100g; manganese, 0.02–0.03 mg/100g, and magnesium, 4.37–7.22 mg/100g. Significant differences were not observed in the concentration of any of the estimated amino acids between the sexes. Fatty acid profiling of M. longissimus thoracis et lumborum indicated that saturated and unsaturated fatty acids were in the range of 32.75%–38.91% and 54.69%–69.28%, respectively.

Abstract
A total of 119 pigs were used to investigate the effect of slaughter weight (107, 115, and 125 kg), growth rate (fast vs. slow), and sex (barrows vs. gilts) on the longissimus muscle biochemical and sensory traits. Increasing slaughter weight to 125 kg resulted in greater postmortem activity of calpastatin (P = 0.01), lactate dehydrogenase (P = 0.01), and citrate synthase (P = 0.02). Pork toughness and juiciness at 6 d were affected by the interaction slaughter weight × growth rate × sex, with pork being tougher (P = 0.04) and juicer (P = 0.03) in slow-growing gilts slaughtered at 125 and 115 kg, respectively. Flavour was scored higher (P = 0.03) in pork from gilts than from barrows. Overall, based on the slight and likely undetectable differences by the average consumer in the meat sensory traits, it can be concluded that slaughter weight can be increased to 125 kg without appreciable effect on the sensory properties.

Abstract
The thickness of the subcutaneous fat in hams is one of the most important factors for the dry-curing process and largely determines its final quality. This parameter is usually measured in slaughterhouses by a manual metrical measure to classify hams. The aim of the present study was to propose an automatic classification method based on data obtained from a carcass automatic classification equipment (AutoFom) and intrinsic data of the pigs (sex, breed, and weight) to simulate the manual classification system. The evaluated classification algorithms were decision tree, support vector machines (SVM), k-nearest neighbour and discriminant analysis. A total of 4000 hams selected by breed and sex were classified as thin (0-10 mm), standard (11-15 mm), semi-fat (16-20 mm) and fat (>20 mm). The most reliable model, with a percentage of success of 73%, was SVM with Gaussian kernel, including all data available. These results suggest that the proposed classification method can be a useful online tool in slaughterhouses to classify hams.

Abstract
The seemingly straightforward question of optimal pig delivery weight is more complex than meets the eye. Despite abundant research insights, the industry continues to request additional applied scientific decision support on the delivery weight problem. The current objective is to investigate whether and how the complex decision of delivery weight can be reshaped (reframed) into a more tangible and comprehensible system of factors that matter for making the right decision. We used a participatory decision problem analysis, which resulted in modelling blueprints that incorporate factors prioritised by stakeholders for determining optimal delivery weights. How to efficiently organise such a ‘problem reframing process’ is case-specific: it depends on the objective, the initial problem understanding by the stakeholders, and their learning potential. Efficient co-learning is a prerequisite for successful participatory problem analysis. Our study reveals that the first step in such a process of ‘problem reframing’ should therefore be to answer the question of how to effectively organise co-learning among stakeholders and researchers, instead of starting with a correct and detailed representation of the problem. Useful guidelines for participatory problem reframing processes are (1) providing sufficient participatory learning steps, (2) having few and clearly defined objectives per learning step, (3) providing adapted learning tools per step, (4) establishing a common language and (5) deliberately choosing stakeholders based on prior knowledge of the problem or its context, potential motivation or incentives to be part of the participatory process step and potential role in up-scaling the co-learning process to a larger group of beneficiaries.

Abstract
Rapid assessment of pork quality by packers necessitates using early postmortem (∼1 d) traits as an indication of aged pork quality (∼14 d). Efforts have been made to develop a grading system based on color and marbling of the ventral side of boneless loins. In order for this system to be successful, there must be a correlation between early postmortem quality traits observed by packers and the same traits observed by consumers after aging. However, the strength and direction of those correlations are unclear. It is also unknown if the correlations between early and aged postmortem quality differ between barrows (B) and gilts (G). Therefore, the objectives were to determine correlations between early postmortem loin quality characteristics and aged loin quality characteristics, and determine if those correlations differed between barrows and gilts. Early postmortem (∼1 d) quality traits included: instrumental and subjective color, marbling and firmness, and loin pH on the ventral surface of the loin. Loins were aged until 14 d postmortem in vacuum packages. Aged quality traits included traits evaluated early as well as shear force and cook loss. Correlations were compared between barrows and gilts using a Fisher's z test. Overall, early subjective firmness scores of barrows were greater (P < 0.001) than those of gilts. No other early quality traits differed between sexes. Early pH was correlated with aged pH (r = 0.80 B; 0.75 G), ventral lightness (r = –0.57 B; –0.54 G), ventral yellowness (r = –0.55 B; –0.55 G), subjective ventral color (r = 0.55, B; 0.41 G), and subjective chop color (r = 0.42 B; 0.44 G). Correlations of early pH and aged quality did not differ between sexes. Early lightness was correlated with aged ventral pH (r = –0.56) and subjective color (r = –0.39) in barrows but not gilts (P ≤ 0.04). Early lightness was correlated with aged lightness (r = 0.60 B; 0.51 G) and yellowness (r = 0.49 B; 0.55 G), but was not correlated with to any aged chop quality traits. Early marbling was correlated with ventral color (r = 0.42) in barrows and ventral marbling (r = 0.67 B; 0.66 G) and chop marbling (r = 0.57 B; 0.59 G) in barrows and gilts. In summary, early pH and lightness were correlated with aged quality characteristics and correlations rarely differed between barrows and gilts. Sex does not need to be accounted for when relating early and aged quality characteristics.

Abstract
The objective was to determine the predictive abilities of HCW for loin, ham, and belly quality of 7,684 pigs with carcass weights ranging from 53.2 to 129.6 kg. Carcass composition, subjective loin quality, and ham face color were targeted on all carcasses, whereas in-plant instrumental loin color and belly quality were assessed on 52.0 and 47.5% of carcasses, respectively. Loin chop slice shear force (SSF), cured ham quality, and adipose iodine value (IV) were evaluated on at least 10% of the population. The slope of regression lines and coefficients of determination between HCW and quality traits were computed using PROC REG of SAS and considered significant at ≤ 0.05. As HCW increased, boneless loins became darker and redder, evidenced by lower L* (β = -0.0243, < 0.001) and greater a* values (β = 0.0106, < 0.001); however, HCW accounted for only ≤0.80% of the variability in loin L* and a* values. Similarly, subjective loin color score (β = 0.0024, < 0.001) increased with increasing carcass weight, but subjective marbling score was not affected by HCW (β = -0.0022, = 0.06). After 20 d of aging, HCW explained only 0.98% of the variability in loin L* values (β = -0.0287, < 0.01). Heavier carcasses had lower SSF values (β = -0.1269, < 0.001) of LM chops, although HCW explained only 4.46% of the variability in SSF. Although heavier carcasses produced loins that exhibited lower ultimate pH values (β = -0.0018, < 0.001), HCW explained only 1.23% of the variability in ultimate loin pH. Interestingly, cook loss decreased (β = -0.0521, < 0.001) as HCW increased, with HCW accounting for 5.60% of the variability in cook loss. Heavier carcasses resulted in darker, redder ham face color ( < 0.001), but HCW accounted for only ≤2.87% of the variability in ham face L* values and 0.47% of the variability in a* values. Heavier carcasses produced thicker and firmer bellies, with HCW accounting for 37.81% of the variability in belly thickness (β = 0.0272, < 0.001), 20.35% of the variability in subjective flop score (β = 0.0406, < 0.001), and 10.35% of the variability in IV (β = -0.1263, < 0.001). Overall, the proportion of variability in loin and ham quality explained by HCW was poor (≤5.60%), suggesting that HCW is a poor predictor of the primal quality of pigs within this weight range. Nonetheless, HCW was a moderate predictor of belly quality traits. The findings of this study suggest that increasing HCW did not compromise loin, ham, or belly quality attributes.

Abstract
ABSTRACT The objective of this study was to evaluate the effects of compensatory gain associated with the use of 10ppm ractopamine after a period of feed restriction in finishing pigs on performance, carcass and meat quality. Twenty castrated males and 20 females, at 110 days of age and 66.137±6.13kg live weight, were submitted to four treatments using a 2 x 2 factorial design (fed ad libitum or with 20% restriction between 0(21 days of age and fed with or without 10ppm ractopamine for 22(42 days of experimentation), with 10 replicates (animals). There was no interaction between the factors for any of the evaluated parameters. Animals treated with ractopamine presented better weight gain (1.083 versus 1.259kg), feed conversion (2.910 versus 2.577), warm and cold carcass weight (86.08 versus 89.00 and 83.46 versus 87.20kg, respectively), loin depth (63.02 versus 68.40mm), loin eye area (41.43 versus 46.59mm2) and muscle fiber diameter (27.48 versus 35.85μm). Animals submitted to feed restriction followed by ad libitum feed presented compensatory gain without losses to carcass and meat characteristics, but with a reduction in the ethereal extract (2.19 versus 1.64%) and lower water loss due to thawing in the meat (11.35 versus 9.42%). The effects of compensatory gain after food restriction and ractopamine are independent of the parameters evaluated.

Abstract
Abstract. Reared in extensive parcels, 50 castrated or spayed Iberian pigs were fattened with conventional or high-oleic-concentrate diets to evaluate the effect of diet and sex on the measurements of the loin area depth, back fat thickness and its layers during the last 6 months before slaughter at eight time points in two anatomical locations by serial scans. The scan was the factor that had the greatest influence, followed by sex and diet. Back fat thickness at 10th rib level was higher than at 14th rib level. The thickness of the outer, middle and inner layers progressively increased over the study period. Throughout the experimental period, the differences between two successive scans of the M. longissimus area did not differ significantly, obtaining the lowest value at the third scan and the highest at the fifth scan. The ultrasound back fat depth was affected by sex, being greater in females and in animals with a high-oleic diet. Positive significant correlations were observed for measurements assessed. The R2 values for the regression equations to estimate M. longissimus area were lower than the values found for the prediction of fat measurements, and they differed between sex and diet. The relative back fat growth was higher than M. longissimus area, not permitting the establishment of a similar growth pattern for fat and muscle. The sex and diet was taken into account in the predictive models. The subcutaneous adipose layers in Iberian pigs grow at different rates during the last 6 months before slaughter; with the ultrasound serial scan, it is possible to show these changes. The change in diet and the sex affect the adipose tissue development, being more noticeable in the middle layer of back fat at 10th rib level and the inner layer at 14th rib level. However, the sex and the use of an enriched oleic acid diet do not affect to loin development. As the middle layer of back fat shows more growth, this layer could be the best to be included in predictive models. The middle layer of back fat could also be good to be included in predictive models. Back fat thickness at the eighth scan can be predicted with moderate accuracy from corresponding measurements taken 30 days earlier and with less accuracy as the interval between measurements increases.

Abstract
The objective was to determine the predictive ability of carcass length for the number of equal-thickness chops obtained from a boneless pork loin. Longer pork carcasses are assumed to yield longer loins and, therefore, an increased number of chops. Loins were collected from pigs (1,238 total) raised under commercial conditions and marketed when the mean pig weight in a pen reached 138 kg. Pigs were slaughtered over 7 wk in a commercial facility. Carcass length was measured at 1 d postmortem on the left side of each carcass from the anterior edge of the symphysis pubis bone to the anterior edge of the first rib. Carcasses were fabricated, and boneless loins (North American Meat Processors number 414) were vacuum packaged and transported to the University of Illinois Meat Science Laboratory. Loins were stored at 4°C for 14 d. At the end of the aging period, loins were weighed, measured for stretched length (stretched to maximum length without distortion) and compressed length (compressed to minimum length without distortion), and sliced into 2.54-cm-thick chops. Boneless chops were counted and weighed. Carcass length ranged from a minimum of 78.2 cm to a maximum of 96.5 cm and the number of boneless chops ranged from a minimum of 13 to a maximum of 20 chops. Data were analyzed using the regression procedure of SAS. The dependent variable was the number of boneless chops. Coefficient of determination () was calculated for carcass length, boneless loin weight, compressed loin length, and stretched loin length. Carcass length explained 15% ( < 0.0001) of the variation in the number of loin chops. Loin weight explained 33% ( < 0.0001) of the variation in the number of loin chops. Compressed loin length and stretched loin length explained 28 and 8% ( < 0.0001), respectively, of the variation in the number of loin chops. Multiple linear regression was used to determine a predictive equation for the number of loin chops using the stepwise selection option of all independent variables. The combination of boneless loin weight, compressed loin length, 10th-rib carcass fat depth, and carcass length explained 45% of the variation ( < 0.0001; C(p) = 16.76) in the number of loin chops using a required statistic at the SLENTRY and SLSTAY level = 0.15. Overall, carcass length is a poor predictor of the number of equal-thickness loin chops that can be derived from a boneless pork loin.

Abstract
Pigs ( = 8,042) raised in 8 different barns representing 2 seasons (cold and hot) and 2 production focuses (lean growth and meat quality) were used to characterize variability of carcass composition and quality traits between barrows and gilts. Data were collected on 7,684 pigs at the abattoir. Carcass characteristics, subjective loin quality, and fresh ham face color (muscles) were measured on a targeted 100% of carcasses. Fresh belly characteristics, boneless loin weight, instrumental loin color, and ultimate loin pH measurements were collected from 50% of the carcasses each slaughter day. Adipose tissue iodine value (IV), 30-min loin pH, LM slice shear force, and fresh ham muscle characteristic measurements were recorded on 10% of carcasses each slaughter day. Data were analyzed using the MIXED procedure of SAS as a 1-way ANOVA in a randomized complete block design with 2 levels (barrows and gilts). Barn (block), marketing group, production focus, and season were random variables. A 2-variance model was fit using the REPEATED statement of the MIXED procedure, grouped by sex for analysis of least squares means. Homogeneity of variance was tested on raw data using Levene's test of the GLM procedure. Hot carcass weight of pigs (94.6 kg) in this study was similar to U.S. industry average HCW (93.1 kg). Therefore, these data are representative of typical U.S. pork carcasses. There was no difference ( ≥ 0.09) in variability of HCW or loin depth between barrow and gilt carcasses. Back fat depth and estimated carcass lean were more variable ( ≤ 0.0001) and IV was less variable ( = 0.05) in carcasses from barrows than in carcasses from gilts. Fresh belly weight and thickness were more variable ( ≤ 0.01) for bellies of barrows than bellies of gilts, but there was no difference in variability for belly length, width, or flop distance ( ≥ 0.06). Fresh loin subjective color was less variable ( < 0.01) and subjective marbling was more variable ( < 0.0001) in loins from barrows than in those from gilts, but there were no differences ( ≥ 0.08) in variability for any other loin traits or fresh ham traits. Overall, traits associated with carcass fatness, including back fat depth, belly thickness, and marbling, but not IV, were more variable in carcasses from barrows than in carcasses from gilts, whereas minimal differences in variability existed between carcasses of barrows and carcasses of gilts for traits associated with carcass muscling and lean quality.

Abstract
Marketing weight is an important economic variable that impacts the productivity and profitability of finishing pig production. Marketing weight has been increasing worldwide over the past decades driven by the dilution of fixed production cost over more weight per pig and the improvement of genetic selection of lean-type pigs. This review was aimed to summarize current knowledge and assess the future research needs on producing finishing pigs with marketing weight greater than 130 kg. Based on a thorough literature review, increasing marketing weight affected overall pig growth; in particular, cumulative average daily gain (ADG) decreased by 4.0 g, average daily feed intake (ADFI) increased by 78.1 g, and gain-to-feed ratio (G:F) decreased by 0.011 for every 10 kg increase of marketing weight. Increasing marketing weight by 10 kg increased carcass yield by 0.41% units, backfat by 1.8 mm, longissimus muscle (LM) area by 1.9 cm2, carcass length by 2.2 cm, and belly yield by 0.32% units, but decreased percentage of fat-free-lean by 0.78 units and decreased loin, shoulder, and ham yields by 0.13, 0.16, and 0.17% units, respectively. Studies that investigated the effects of marketing weight on pork quality observed decreased pH by 0.02 and 0.01 at 45 min and 24 h postmortem, respectively, and increased a* value by 0.28 per 10 kg marketing weight increase. Heavier market pigs had increased concentrations of saturated fatty acids and intramuscular fat. However, studies reported conflicting results for L* and b* values, drip loss, Warner-Bratzler shear force, and sensory properties of pigs in response to increasing marketing weight. A limited amount of research has been conducted to estimate nutrient requirements for pigs greater than 140 kg. Increased weight and size of heavy pigs can create challenges to farm and packer facilities and equipment. Discussions and recommendations are provided concerning the adjustments for floor and feeder space, barn design, ventilation, disease control, transportation, and carcass processing needed for increasing marketing weight. In conclusion, increasing marketing weight creates both opportunities and challenges to current finishing pig production, and future research is needed to provide nutritional and management guidelines and improve feed efficiency and meat quality of heavy weight market pigs.

Abstract
Background The immense growth in global bioethanol production has greatly increased the supply of by-products such as whole stillage and condensed distiller’s solubles, which could be potentially used for animal feeding. The objective of this study was to investigate effects of liquid feeding high levels of corn condensed distiller’s solubles (CCDS) and whole stillage (CWS) on growth performance, carcass characteristics, belly firmness and meat sensory traits of pigs. Methods A total of 256 pigs were blocked by sex and initial BW (13.5 ± 2.5 kg), and pens of pigs (8 pigs/pen) were randomly allocated to 1 of 4 dietary treatments (8 pens/treatment): 1) corn-soybean meal based diet as control, 2) 25% CWS + 5% CCDS, 3) 19.5% CWS + 10.5% CCDS, and 4) 19.5, 26, and 32.5% CWS + 10.5, 14, and 17.5% CCDS in phases 1 (28 d), 2 (38 d), and 3 (60 d), respectively. Inclusion levels of CCDS and CWS for Treatments 1, 2, and 3 were fixed during all the three phases of the experiment. Inclusion levels of CWS and CCDS were on 88% dry matter basis. The liquid feeding system delivered feed from the mixing tank to feed troughs by high-pressure air, had sensors inside feed troughs, and recorded daily feed intake on the basis of a reference feed intake curve. The pigs were fed 5 to 10 times per day with increasing frequency during the experiment. Results Control pigs had greater (P < 0.05) average daily gain (0.91 vs. 0.84, 0.85, 0.85 kg/d) and gain to feed ratio (0.37 vs. 0.33, 0.34, 0.34) than pigs in the other three treatments during the overall period. Compared with the control, the other three groups had (P < 0.05) or tended to have (P < 0.10) lower carcass weight and backfat depth due to lighter (P < 0.05) slaughter body weight, but similar (P > 0.10) dressing percentage, loin muscle depth, and lean percentage were observed among the four treatments. Inclusion of CWS and CCDS reduced (P < 0.05) or tended to reduce (P < 0.10) belly firmness but did not influence (P > 0.10) the overall like, flavor, tenderness and juiciness of loin chops when compared with the control group. Conclusion In conclusion, our results indicate that including 30–50% of a mixture of whole stillage and condensed distiller’s solubles in the growing-finishing diets may reduce growth performance, carcass weight and belly firmness, but does not affect pork sensory traits.

Abstract
To determine whether Lactobacillus johnsonii BS15 supplementation improves the growth performance and meat quality of broilers, 450 1-day-old male chicks (Cobb 500) were randomly divided into three groups: control group (basal corn-soybean diet), L-BS15 group (basal diet + 1 × 105 colony-forming unit BS15/g as feed), and H-BS15 group (basal diet + 1 × 106 colony-forming unit BS15/g as feed). These diets were fed for 42 days. Abdominal fat decreased (P < 0.05) as the concentration of BS15 increased. BS15 supplementation significantly increased the pH at 24 h after sacrifice and decreased drip loss and shearing force (P < 0.05), although meat colour and pH at 40 min after sacrifice remained unchanged. Antioxidant capacity and total protein and intramuscular fat levels were unchanged by the treatments, but BS15 supplementation significantly increased inosine monophosphate level and decreased total cholesterol and triglyceride levels (P < 0.05). The levels of proline, total amino acids, and flavour-related amino acids were increased (P < 0.05) by BS15 supplementation, but the levels of other amino acids did not change significantly. BS15 supplementation significantly decreased (P < 0.05) C16:0, C22:4n-6, and n-6 : n-3 ratio and increased (P < 0.05) C18:3n-3, C20:5n-3,C22:6n-3, total polyunsaturated fatty acid (PUFA), n-3 PUFA and PUFA : saturated fatty acid ratio. These findings suggest that L. johnsonii BS15 supplementation improves the meat quality of broilers by increasing the shelf life and flavour and nutritional substances. In addition, BS15 supplementation can induce changes in fat deposits and fatty acid composition.

Treatments were arranged factorially (2 × 3 × 2) and there were four replicates (five pigs per replicate) per treatment. The female line was Landrace × Large White in all cases. Barrows had greater daily food intake (P <0·001) and average daily gain (P <0·01) and had poorer food conversion ratio (P <0·001) than gilts. Carcasses from castrates were fatter and had a lower yield of trimmed lean cuts than carcasses from females (P <0·001). Longissimus muscle from barrows had more intramuscular fat and higher a* value than muscle from gilts (P <0·05). Pigs from DD sire line grew faster (P <0·05) and had a better food conversion ratio (P <0·001) than pigs from the other two lines. Dressing proportion and backfat thickness were greatest for P × LW sired pigs (P <0·01) and proportion of trimmed lean cuts was greater for DD and P × LW than for ND × LW sired pigs (P <0·01). Longissimus muscle from DD sired pigs had less protein (P <0·01) and more intramuscular fat (P <0·001) than muscle from the remaining lines. Longissimus muscle from P × LW line had more intense colour than muscle from DD and ND × LW lines (P <0·01). Pigs slaughtered at 175 days had poorer food conversion ratio (P <0·01) and less trimmed primal cut proportion (P <0·001) than pigs slaughtered at 160 days. Also, increasing the age at slaughter increased intramuscular fat content (P <0·01), a* value (P <0·001) and colour intensity of the muscle (P <0·01). Danish Duroc boars are a good alternative to ND × LW or P × LW boars for production of heavy pigs whether the crossbreds are sacrificed at 160 or 175 days. Also, an increase in age at slaughter impairs growth efficiency and yield of lean cuts but improves some aspects of meat quality, which might be of interest in the production of heavy pigs destined for the dry-cured product industry.

Abstract
The effects on finishing pigs (80–100 kg BW) fed diets supplemented with oil sources containing different ratios of unsaturated to saturated fatty acids (UFA:SFA ratio) were evaluated in 15 barrows and 15 gilts (Duroc × Large White × Landrace). Three experimental diets were evaluated using a randomized complete block design, with broken rice, soybean meal and rice bran as the main feedstuffs in the control diet. Diets 2 and 3 consisted of the control diet supplemented with 3% oil, with UFA:SFA ratios of 2.5:1 and 5:1, respectively. Overall, there was no significant difference (P > 0.05) found in the average daily gain (ADG) of the pigs fed the treatment diets; however, the pigs fed the control diet and diet 3 had better (P < 0.05) feed conversion ratios (FCR) than the pigs fed diet 2. The pigs fed diets 2 and 3, which were supplemented with oil at UFA:SFA ratios of 2.5:1 and 5:1, had greater (P < 0.05) average daily feed intakes (ADFI) than the pigs in the control group. Additionally, it was found that the gender of the pigs had an effect (P < 0.05) on the FCR. Interaction effects between the experimental diets and the gender of the pigs (P < 0.05) were found in the ADFI and FCR. There were no significance differences (P > 0.05) among the treatment groups with regard to the carcass quality of the pigs; however, it was found that the gilts had greater (P < 0.01) loin eye areas than the barrows fed diets 2 and 3 and the loin eye area of pig fed diet 2 was the largest (P < 0.05). In the case of the meat quality parameters, it was clearly found that the pigs fed the control diet had a greater (P < 0.05) lightness (L∗) in the meat colour, and the lowest cooking loss was found in the pigs fed the diet supplemented with fat containing the UFA:SFA ratio of 5:1. Overall, the dietary treatment did not significantly affect the drip loss, thawing loss and shear force of the pork. In conclusion, the supplementation of oil with UFA:SFA ratios of 2.5:1 and 5:1 has the potential to improve pork quality.

Abstract
A study was conducted with 192 pigs of three sex types with treatments according to slaughter weight (65 kg to 144 kg). The main statistical differences observed were for slaughter weight with significant (P < 0.05) and highly significant (P < 0.01) differences describing more than 10% of variance observed for all characteristics (liveweight, warm carcass weight, dressing percentage, eye muscle area, subcutaneous fat thickness, intramuscular fat area, subcutaneous fat : eye muscle area, intramuscular fat : eye muscle area, fat thickness, muscle depth, carcass length, ham circumference, ham length and chest depth) measured. Sex differences (P < 0.05) were also observed for dressing percentage, fat measurements and muscle depth measured between the 5th and 6th lumbar vertebrae. Sex type differences, in all instances, accounted for 10% or less variance except for subcutaneous fat : eye muscle area ratio (18.47%). It was shown that although significant sex type differences (P < 0.05) existed; slaughter weight had the largest effect on carcass characteristics in the given circumstances accounting for most of the observed variance.

Abstract
Recent genetic improvement has developed pigs with maximum potential for protein deposit at higher weights; however, their optimal slaughter weight still needs to be determined. The objective of the study was to evaluate live performance, carcass traits, and economic viability of 417 Agroceres PIC pigs slaughtered with 100, 115, 130, and 145kg live weight. Pigs were reared in pens with 10-11 barrows and gilts each, offered a feed allowance of 2.8kg/pig/day until the following slaughter weights (SW): 99.65±0.82kg, 118.53±0.98kg, 133.97±1.17kg, and 143.90±1.24. There was no interaction between sex and SW (P>0.05). Backfat thickness, fat area, and loin eye area linearly increased with SW (P<0.001; R2: 70.12-77.44%), and carcass yield increased in a quadratic manner (P<0.001; R²=24.66%). Lean yield was not affected (P>0.05), and feed conversion ratio (R²=43.29%) linearly worsened with SW (P<0.001), but the effect of SW on live production cost (R$/kg) was quadratic, with the minimum point at 134.8kg. It was concluded that, under the applied management, increasing SW results in larger amount of lean tissue with no change in its yield and little effect on growth performance.

Abstract
Nutritional strategies are being researched in pigs to increase fatness and then to improve quality of dry-cured products. A total of 160 Duroc×(Landrace×Large White) pigs, 50% barrows and 50% gilts, were used in a trial. During the growing period (73-118d of age), four feeds were formulated with decreasing levels of crude protein (CP; 21.6, 17.7, 14.7 and 13.5%) to achieve 1.10, 0.91, 0.78 and 0.52% of total Lysine, respectively. From 118d until slaughter, at 123kg (183, 181, 178 or 192d of age, respectively), a common diet was provided (17.7% CP and 0.91% Lysine). Barrows had fatter carcasses than gilts but intramuscular fat (IMF) proportion was similar for both. Dietary CP restriction promoted wider backfat depth and pork with higher IMF percentage which was more monounsaturated and less polyunsaturated. We conclude that CP restriction during the grower period improves desirable carcass and meat traits in barrows and gilts intended for dry-cured products.

Several factors can affect pork belly quality and, subsequently, bacon quality. Going by the recent trends in the bacon market and bearing in mind the more choosy nature of the consuming populace, it is imperative to consider the factors that can affect or improve bacon quality, thereby sustaining the current market surge. In as much as both genetic and environmental factors have been identified as largely affecting muscle food quality, nutritional interventions also seem to be a very viable tool to improve the quality of meat and its products. Processing and storage methods can also affect bacon quality, including microbial quality, physicochemical attributes and palatability. Both objective and subjective measures have been explored in assessing belly quality, most of which use belly softness and fatty acid profile as yardsticks, whereas bacon quality has been widely assessed only subjectively in terms of fat quality and slice integrity. Although consumers’ and producers’ quality perceptions seem to be in conflict, it is the responsibility of all stakeholders in the bacon industries to come together in ensuring a balanced approach to satisfy both parties along the production chain.

Abstract
Ninety (45 castrated males and 45 gilts) Iberian × Duroc pigs were used in this study. During the finishing period (95-160 kg body weight, 74 days) animals received conventional feed (control G0) or the same feed plus 5% (G5) or 10% (G10) of crude glycerine to partially replace wheat. In general, neither the diet nor gender affected ultrasound, carcass or meat quality parameters. The G10 had lower values of cooking loss and a* than the G5 and G0 groups. The fatty acids, C10:0, C12:0 and C18:3, in intramuscular fat were lower in both glycerine groups. Polyunsaturated fatty acids and 18:2 decreased and C20:0 increased at the subcutaneous fat of G10 animals. Castrated males produced carcasses with higher backfat thickness and fat content. Castrated males had a higher SFA content in subcutaneous fat than females (P<0.001). In conclusion, up to 10% crude glycerine could be used in the Iberian × Duroc diet.

Meat quality and cut yield of pigs slaughtered between 100 and 150kg live weight were evaluated. Pigs (417 Agroceres PIC barrows and gilts) were fed a daily allowance of 2.8kg per head from 80kg until 100.71±0.85, 118.58±0.99, 134.07±1.18 or 143.90±1.24kg live weight. Seventy-one pigs were used for the evaluation of primal and subprimal cuts. There was no interaction between sex and slaughter weight for any of the evaluated parameters. Ham, shoulder, and loin weights linearly increased (P<0.01; R2: 84.3-93.2%) with increasing slaughter weight, which, however, had little effect on primal cuts meat yield. Increasing slaughter weight promoted a linear (P<0.05) and a quadratic (P<0.01) increase of red/green coordinate (a* value) of the loin and ham, respectively. Shear force showed a quadratic response (P<0.05), with minimum value estimated at 122kg slaughter weight. It was concluded that, under the applied management, increasing slaughter weight increased the volume of meat, but had little effect on meat yield. The meat of pigs slaughtered at heavier weights showed more intense red color and the same intramuscular fat content as lighter pigs, while tenderness was slightly affected.

Abstract
The first aim of the study was to compare selected meat quality parameters in porkers without the gene RYR1 (T) (ryanodine receptor gene). These were porkers slaughtered at 100 to 115 kg and 116 to 130 kg live weight. The second aim of the study was to determine the occurrence frequency of standard-quality meat (red, firm, nonexudative [RFN]) and the occurence frequency of defective meat (pale, soft, exudative [PSE] and acid, soft, exudative [ASE]). The analysis was conducted on the longissimus lumborum muscle in 114 crossbred porkers. The porkers were a cross of Camborough 22 sows and boars from lines 337PIC (Pig Improvement Company), Norsvin Landrace and Pietrain. All of the animals were provided with identical environmental and nutritional conditions. The average weight of the slaughtered animals in the light and heavy groups was 110 kg and 122 kg, respectively. Both groups had the same average post-slaughter meatiness (56.5%). A statistical analysis of selected meat-quality parameters did not show any significant differences between the weight groups. On the other hand, the classification based on carcass quality showed an occurence frequency of defective meat in heavier crossbred porkers (116 to 130 kg) that was three times higher than in those crossbred animals which weighed 100 to 115 kg when slaughtered. In porkers without the gene RYR1 (T) , the defective meat types PSE and ASE occurred with a frequency of 17.54%.
