Abstract
Supplementing trace minerals is common in managing bovine respiratory disease (BRD) in post-weaned cattle; however, its influence on host immunity and metabolism in high-risk cattle remains unclear. We aimed to assess the impact of three supplementation programs on liver and serum trace element concentrations and blood gene expression. Fifty-six high-risk beef steers were randomly assigned to one of three groups over 60 days: (1) sulfate-sourced Cu, Co, Mn, and Zn (INR), (2) amino acid-complexed Cu, Mn, Co, and Zn (AAC), or (3) AAC plus trace mineral and vitamin drench (COMBO). Serum and liver biopsies for Cu, Co, Mn, and Zn at d0, d28, and d60 were analyzed from cattle free of BRD (n = 9 INR; n = 6 AAC; n = 10 COMBO). Differences and correlations of mineral concentrations were analyzed via generalized linear mixed models and Spearman's rank coefficients, respectively (p < 0.05). Whole blood RNA samples from healthy cattle (n = 4 INR; n = 4 AAC; n = 4 COMBO) at d0, d13, d28, d45, and d60 were sequenced and analyzed for differentially expressed genes (DEGs) via glmmSeq (FDR < 0.05), edgeR (FDR < 0.10), and Trendy (p < 0.10). Serum and liver Cu and Co concentrations increased over time in all groups, with higher liver Cu in COMBO (487.985 μg/g) versus AAC (392.043 μg/g) at d60 (p = 0.013). Serum and liver Cu concentrations (ρ = 0.579, p = 6.59 × 10-8) and serum and liver Co concentrations (ρ = 0.466, p = 2.80 × 10-5) were linearly correlated. Minimal gene expression differences were found between AAC versus COMBO (n = 2 DEGs) and INR versus COMBO (n = 0 DEGs) over time. AAC versus INR revealed 107 DEGs (d13-d60) with increased traits in AAC including metabolism of carbohydrates/fat-soluble vitamins, antigen presentation, ATPase activity, and B- and T-cell activation, while osteoclast differentiation and neutrophil degranulation decreased in AAC compared to INR. Our study identifies gene expression differences in high-risk cattle fed inorganic or amino acid-complexed mineral supplements, revealing adaptive immune and metabolic mechanisms that may be improved by organically sourced supplementation.

Abstract
During the preslaughter phase, cattle are transported from their place of origin to a slaughter facility, experiencing transportation, lairage, environmental factors, and novel environments. Although research exists that has focused how the preslaughter phase impacts cattle welfare and meat quality, some significant preslaughter management factors and subsequent welfare and meat quality outcomes have not been thoroughly explored. The objective of this study was to assess the effects of preslaughter management factors on welfare and meat quality outcomes in fed beef cattle in the United States. Transportation factors, environmental characteristics, lairage factors, cattle characteristics, and several meat quality variables were collected from 5 federally inspected commercial processing facilities in the United States. After excluding slaughter lots that included <75% complete datasets, a total of 619 slaughter lots representing 84,508 head of cattle were used for further analysis. Predictor variables of interest included processing plant, cattle breed, sex class, operation shift at the plant, distance traveled to the plant, truck waiting time to unload at the plant, lairage duration and space allowance, temperature humidity index, and windspeed. Outcome variables of interest included cattle mobility, carcass bruising, dark cutting (DC), quality grades, and hot carcass weights. Logistic and linear regressions were used to analyze the associations between the predictor and outcome variables of interest. Increased distance traveled and truck waiting time were associated with higher odds of mobility impairment (P = 0.0009 and P = 0.007, respectively), with each 10 km increase in distance traveled having an odds ratio (OR) of 1.001 (95% confidence interval [CI]: 1.000 to 1.001) and each 1-min increase in waiting time having an OR of 1.003 (CI: 1.001 to 1.004). Conversely, a 10-km increase in distance traveled decreased the odds of carcass bruising (OR: 0.997, CI: 0.996 to 0.998; P < 0.0001). Longer lairage was associated with increased odds of DC (P = 0.0415), with each 60-min increase in duration having an OR of 1.034 (CI: 1.001 to 1.068). The results demonstrate the importance of truck arrival management (i.e., scheduling, prioritizing unloading) on mobility. Focusing on lairage management (i.e., density and time) may provide some opportunities to improve meat quality.

Abstract
Growing animal welfare concerns have pushed some jurisdictions to strengthen regulations addressing live farm animal transportation, but whether they provide satisfactory levels of protection for animals remains to be shown. Using the recent peer-reviewed literature, we identified four major risk factors associated with live animal transportation (fitness for transport, journey duration, climatic conditions and space allowances) and explored how regulations were structured to prevent animal welfare issues in five English-speaking Western jurisdictions (Australia, Canada, New Zealand, the EU and the USA). All legally binding federal regulations were systematically reviewed and compared. Whether these rules were fit for purpose was assessed using the relevant peer-reviewed scientific literature. Our findings indicate the majority of regulations in most jurisdictions are often insufficient or too vague to be deemed fit for purpose. All five jurisdictions fall short in guaranteeing adequate protection to livestock during transport. Using recent changes as well as future policy proposals under discussion, we identify future directions that could form the basis for regulatory changes that may significantly improve the welfare of farm animals during transportation.

Abstract
With the increasing concomitant demands for Brazilian beef and in particular high-quality beef, there is a need for observational studies of the effects of pre- and post-slaughter practices on beef carcass traits. We hypothesized in our case study that pre-slaughter transport of bovines over significant distances would induce stress in animals, and that this would reduce carcass quality because of higher pH resulting from long-distance transportation. To test this hypothesis, 30,230 Nellore carcasses from a private slaughterhouse were evaluated 24 h postmortem. Analysis showed correlations between animal maturity, ultimate pH, distance, and carcass weight. More precisely, there was a slight positive correlation between ultimate pH and weight (but not with transportation distance) and a slight positive correlation between maturity and weight. A linear regression model (R2 = 0.016) failed to show distance having a significant effect on ultimate pH (P = 0.63), while carcass weight significantly affected ultimate pH (P < 0.001) with a low coefficient of 0.0003. Maturity negatively affected ultimate pH also (P < 0.001) but with also a small effect (-0.0008). Results (from 95% confidence intervals of variance of the random effects and of the random errors) showed that the variability within farms was higher than between farms. The linear mixed model showed that maturity had a significant effect on carcass weight value (P < 0.001) with a large coefficient of 2.90. The R2 of the linear mixed model was 46.03%. In conclusion, while weight and maturity both affect ultimate pH, long distances did not significantly impact ultimate pH and therefore the beef quality from Nellore cattle. This could be because of low stress during transport, as well as the physical characteristics of the Nellore breed that favor greater resistance to tropical climatic conditions.

Abstract
Transport conditions have the potential to alter the physiological responses of animals to the psychological or physical stress of transport. Transportation may introduce multiple physical and psychological stressors to unweaned calves and adult cattle, including noise, overcrowding, food and water deprivation, extreme temperatures, commingling with unfamiliar animals, handling by unfamiliar humans, and being placed in a novel environment upon arrival. Apart from these factors, the type of road and even driving skill may affect the welfare of animals. One of the concerns regarding cattle transport is that the handling and marketing of animals prior to a journey may lengthen the period of feed withdrawal. Furthermore, feed withdrawal can impact animal welfare through hunger and metabolic stress. Transportation is also associated with a decrease in animal performance as well as an increase in the incidence of bovine respiratory disease. It is well established that the transportation of cattle is a stressor that causes a quantifiable response; however, excessive stress during transport resulting in physiological or pathological changes can be reduced with best management practices. The objective of this review was to analyse the available scientific literature pertaining to the transport by road of cattle, including unweaned calves.

Abstract
IntroductionThe impact of pre-slaughter management practices on fed beef cattle welfare is a multifaceted and well researched subject matter. Factors such as transportation, handling, lairage time and several animal characteristics can directly impact the cattle’s behavior, mobility, blood lactate and cortisol levels, likelihood of injury and ultimately overall cattle welfare. Animal welfare continues to grow as a critical component of slaughter in the fed beef industry, yet a formal review of related research does not exist.MethodsA scoping review was performed in order to (1) catalog pre-slaughter management factors that impact fed beef cattle welfare at the time of slaughter, (2) identify indicators used to evaluate the impact of pre-slaughter management on fed beef cattle welfare at slaughter, and (3) gain further understanding of the relationship between pre-slaughter management factors and fed beef cattle welfare outcome indicators at slaughter. Three data bases were ultimately searched: PubMed, CAB Abstracts, and Web of Science. The concepts used in the database searches were the population of interest (i.e., fed beef cattle), the location in the supply chain, preslaughter management factors, and welfare outcomes.ResultsA total of 69 studies were included in final analysis for this review, including studies from six geographic regions around the globe. Studies involving alternative slaughter methods (e.g., religious stunning or mobile slaughter) were not included in the formal analysis of this review, but still merited an in-depth discussion within this paper. After reviewing the studies, a total of 37 pre-slaughter factors and 69 indicators of welfare were measured throughout. Pre-slaughter management factors were then categorized by: animal characteristics; environmental characteristics; handling; lairage; transportation; and water/feed. Outcomeindicators of welfare were categorized into: behaviors; health, injury and disease; physiological; and stunning and insensibility.DiscussionPre-slaughter factors relating to transportation and handling, and welfare outcomes measured by behaviors and physiology were of the most researched throughout the studies.The results of this review offer a catalogue of commonly researched factors and indicators of welfare measured during the pre-slaughter phase, as well ast he relationships between them. This review also offers further substantial evidence that a multitude of events in the pre-slaughter phase affect fed beef cattle welfare and a collection of highly applicable welfare indicators to expedite further research on the effects of pre-slaughter factors and the application of improved practices.

Abstract
In the framework of its Farm to Fork Strategy, the Commission is undertaking a comprehensive evaluation of the animal welfare legislation. The present Opinion deals with protection of cattle (including calves) during transport. Welfare of cattle during transport by road is the main focus, but other means of transport are also covered. Current practices related to transport of cattle during the different stages (preparation, loading/unloading, transit and journey breaks) are described. Overall, 11 welfare consequences were identified as being highly relevant for the welfare of cattle during transport based on severity, duration and frequency of occurrence: group stress, handling stress, heat stress, injuries, motion stress, prolonged hunger, prolonged thirst, respiratory disorders, restriction of movement, resting problems and sensory overstimulation. These welfare consequences and their animal-based measures are described. A variety of hazards, mainly relating to inexperienced/untrained handlers, inappropriate handling, structural deficiencies of vehicles and facilities, poor driving conditions, unfavourable microclimatic and environmental conditions, and poor husbandry practices leading to these welfare consequences were identified. The Opinion contains general and specific conclusions relating to the different stages of transport for cattle. Recommendations to prevent hazards and to correct or mitigate welfare consequences have been developed. Recommendations were also developed to define quantitative thresholds for microclimatic conditions within the means of transport and spatial thresholds (minimum space allowance). The development of welfare consequences over time was assessed in relation to maximum journey duration. The Opinion covers specific animal transport scenarios identified by the European Commission relating to transport of unweaned calves, cull cows, the export of cattle by livestock vessels, the export of cattle by road, roll-on-roll-off ferries and 'special health status animals', and lists welfare concerns associated with these.

Abstract
Fifty-four Angus-cross steers (297 kg ± 12) were stratified by body weight (BW) to pens (six steers per pen) to determine the effects of supplemental Zn on posttransit growth performance and blood and muscle metabolites. Dietary treatments started 25 d before trucking: control (CON; analyzed 54 mg Zn/kg DM), industry (IND; CON + 70 mg supplemental Zn/kg DM), and supranutritional Zn (SUPZN; CON + 120 mg supplemental Zn/kg DM). Supplemental Zn was bis-glycinate bound Zn (Plexomin Zn; Phytobiotics North America, Cary, NC). On day 0, steers were loaded onto a commercial trailer and transported in 18 h (1,822 km). Individual BW was recorded on days –26, –25, –1, and 0 (pre-transit), 1 (posttransit), 6, 27, and 28. Blood was collected on days –1, 1, 6, and 27. Longissimus thoracis biopsies were collected on days –1, 1, and 28. Daily individual feed disappearance was recorded via GrowSafe bunks. Data were analyzed using Proc Mixed of SAS with fixed effect of diet and steer as the experimental unit (growth performance, blood: n = 18 steers per treatment; muscle: n = 12 steers per treatment). Individual initial BW was used as a covariate in BW analysis. Contrast statements to test linear, quadratic, and Zn effects were used to analyze performance and blood parameters. Repeated measures analysis was used for posttransit DMI recovery and weekly posttransit DMI and Zn intake with the repeated effect of time. MetaboAnalyst 5.0 was utilized for statistical analysis of day 1 (off truck) muscle metabolites. Plasma Zn linearly increased due to Zn on days 1, 6, and 27 (P = 0.01), and off-truck (day 1) serum lactate increased over day –1 by 20%, 0%, and 20% in CON, IND, and SUPZN, respectively (Quadratic: P = 0.01). Muscle lactate tended to increase posttransit in CON and IND (P ≤ 0.07) but not SUPZN. Muscle metabolites relating to amino acid and nitrogen metabolism were increased in all treatments posttransit (P ≤ 0.02), and alanine-glucose cycle metabolites tended to increase in CON and IND (P ≤ 0.07). Steers supplemented with Zn recovered pretransit DMI quicker than CON (by d 2: P = 0.01), while IND had greater overall posttransit DMI than CON with SUPZN intermediate (P = 0.04), and Zn-fed steers had greater ADG posttransit (P = 0.04). Zinc supplementation mitigated muscle or serum lactate increases due to transit and increased posttransit ADG.

Abstract
This study evaluated the effects of different pre-slaughter road transportation times on sensory evaluation and instrumental measurements of Nellore cattle meat quality. About 15 farms were classified according to transportation times (five farms per transportation time group) as follows: 1 — less than 2 h (<2), 2 — between 2 and 4 h (>2 and ≤4), and 3 — between 4 and 6 h (>4 and ≤6). The experiment was a completely randomized design with 15 replications and three treatments. Meat analyses were performed on steaks taken from the longissimus dorsi muscle from the 10th rib to the third lumbar vertebra. Road transportation times had no significant effects on pH and mean shear force values. Sarcomere length, myofibrillar fragmentation index, and creatine kinase levels were also not affected by transportation time. Furthermore, road transportation times had no effect on meat tenderness, flavour, odour, and overall acceptability when evaluated by consumers. Thus, a pre-slaughter road transportation time up to 6 h does not affect the sensory evaluation and instrumental measurements of Nellore cattle meat quality when raised using a grazing system.

Abstract
The objective of these experiments was to assess the effects of food and water deprivation and transit duration on the behavior of beef feedlot steers. In Experiment 1, 36 Angus-cross steers (353 ± 10 kg) were stratified to 6 pens and assigned one of three treatments (n = 12 steers per treatment): control (CON; stayed in home pens with ad libitum access to feed and water), deprived (DEPR; stayed in home pens but deprived of feed and water for 18 h), or transported (TRANS; subjected to 18-h transit event and returned to home pens). In Experiment 2, 60 Angus-cross steers (398 ± 5 kg; 6 steers per pen) were transported either 8 (8H) or 18 (18H) h. Four 8H pens (n = 24 steers) and six 18H pens (n = 36 steers) were used for behavioral analysis. In both experiments, the time to eat, drink, and lay down was recorded for each steer upon return to home pens. Total pen displacements from the feed bunk were also assessed for the 2 h following feed access in both experiments. Data were analyzed using Proc Mixed of SAS 9.4, with treatment as a fixed effect. Steer was the experimental unit for behavioral activities, while pen was the experimental unit for bunk displacements. Displacements were analyzed as repeated measures with the repeated variable of time. In Experiment 1, the time to eat and drink was similar across treatments (P ≥ 0.17). However, TRANS laid down in 16.5 min while DEPR did not lay down until 70.5 min post-arrival to pen (P < 0.01). Deprived steers had greater bunk displacements in the first 70 min post-feed access than CON or TRANS, though displacements among treatments from 100 to 120 min post-feed access were similar (treatment × time: P = 0.02). In Experiment 2, both 8H and 18H steers laid down approximately 25 min post-home pen arrival (P = 0.14). There was no effect of transit duration or duration by time on bunk displacements (P ≥ 0.20), though displacements were greater from 0 to 20 min than from 20 to 30 min post-feed access (time: P = 0.04). Steers that were deprived of feed and water were highly motivated to access those resources, while transported steers prioritized laying down. Producers should consider these priorities when preparing to receive cattle from a long transit event. Because of the segmentation of the cattle industry, cattle are transported at least once during their lives. The objective of these two studies was to determine if transportation, feed and water deprivation, and/or transit duration changed the behavior of feedlot steers. The first study found steers transported for 18 h preferred to lay down instead of competing for food, unlike steers that were deprived of food and water for 18 h. Bunk displacements were also increased in steers deprived of food and water, indicating increased aggression. In the second study examining effects of transit duration (8 vs. 18 h), steers from both treatments laid down within 25 min of arrival back to the home pens. There were no differences in the frequency of bunk displacements between treatments. Producers should consider the increased motivation for cattle to lay down after transportation and the increased aggression at the feed bunk in food-deprived cattle when developing post-arrival management strategies.

Simple Summary Cattle are transported at least once in their lives, primarily associated with marketing. In Chile one of the main channels for selling animals is auctions. At auction markets, the procedures associated with transport of livestock (loading, unloading and travel) are at least duplicated, affecting their welfare. The aims of this study were to describe the procedures associated with transport and handling of calves (cattle < 9 months old) during marketing through auctions, and to evaluate compliance with Chilean law. A survey of drivers who transport calves from originating farms to markets (OM) and from markets to destination farms (MD) was performed. During loading and unloading, handling by stockpersons, facilities, calf fitness for transport, and behaviour were evaluated using protocols. Most drivers claimed having the training required by law, used bedding material, and provided adequate space for the animals; most OM and MD journeys were less than 2 h. Most calves were assessed as fit for transport. Calves slipped often and some practices associated with poor handling were still observed, mainly during loading. Compliance with the law during transport of calves was adhered to; however, associated handling during unloading and loading is still inadequate, evidencing a need for training. Abstract In Chile, selling animals through livestock markets is common. At markets, stressful events like loading, unloading and travel are at least duplicated. We described procedures associated with transport of calves at 20 markets and evaluated compliance with Chilean law by performing a survey of drivers who transport calves from origin farms to markets (OM) and from markets to destination (MD). During loading and unloading, we evaluated handling by stockpersons, facilities, fitness for transport, and behavioural indicators of the calves through direct observation using protocols. A total of 80% of drivers claimed having the training required by law. The mean travel time was 1 h 31 min for OM and 1 h 44 min for MD journeys (overall range 5 min–40.5 h). Most drivers used bedding material and provided adequate space availability. A total of 99.2% of the observed calves were assessed as fit to transport; slipping, turning back, vocalizing and balking were frequent behaviours observed during loading and unloading. Prohibited practices like prodding and hitting using driving devices were still observed, mainly during loading. Compliance with the law during transport of calves was adhered to; however, the associated handling within markets was still inadequate, evidencing need for training in order to improve animal welfare.

Abstract
This article provides insights into the management of bovine respiratory disease in high-risk cattle populations. Biocontainment strategies, records, procurement, transport, arrival/receiving management, vaccination, and treatment protocols are discussed from practical and systems-thinking perspectives regarding their impact on health in high-risk cattle. Arrival management considerations, such as facilities, nutritional management, metaphylaxis, bovine viral diarrhea virus persistent infection testing, parasite control, and castration, are also addressed. Caretaker morale and job satisfaction are suggested as important factors to consider when managing high-risk cattle. The inter-relationships of variables within the system are explored as contributing causative factors to bovine respiratory disease in high-risk cattle.

Abstract
Animal welfare within the U.S. slaughter industry continues to prevail as one of the top priorities for livestock producers, businesses, and consumers alike. There are federal regulations that enforce the humane transport, handling, and slaughter of cattle. The journey that cattle must make to the slaughter facility is comprised of many environmental and human factors that can positively or negatively affect animal welfare. Cattle may be exposed to multiple stressors, such as noise, unfamiliar animals and humans, temperature extremes, temporary food/water deprivation, variable transport distances and experiences, and new pen conditions. The animal caretakers involved in these processes attempt to minimize stress and discomfort for the animals, but research is needed to focus on the gaps in knowledge and to support the implementation of strategies known to enhance the human-animal interactions that occur from farm to slaughter. This literature review will provide a summary of fed cattle welfare topics, research, and industry tools that span across the beef animal's journey from the farm/feedlot through the slaughter process. In addition, areas that have had little research focus are identified to highlight the need for future work and development of industry tools. Some of these topics include examining trailer design, the use of trailer slats during weather extremes, the welfare aspects of cattle destined for salvage slaughter, multiple preslaughter factors and interactions, abnormal mobility and nonambulatory cattle, lairage environmental conditions, new stunning methods, and the impact of a well-trained, motivated, and stable workforce on cattle and people welfare. The authors conducted a survey at the 2019 North American Meat Institute Animal Care and Handling Conference, which comprised of stakeholders within the meat packing industry, packing plant employees, and food company employees, educators, and auditors. The survey responses identified training/education and communication as areas of need in animal welfare, whereas the majority of survey responses focused on the aspects of the human-animal interaction as the top challenges for the industry. By continuously identifying, measuring, monitoring, and managing animal welfare challenges within the beef cattle slaughter industry, prioritization and execution of programs and training that improve the welfare of cattle can be achieved as animals move through this final stage of the meat production system.

Abstract
Many cows culled from dairy farms arrive at livestock markets or abattoirs in compromised condition, but it is unknown whether cows are compromised at the time of culling or deteriorate during the marketing process. This study followed cull cows from farm to abattoir, monitored any deterioration, and tested the effect of providing such information on subsequent culling. For 11 mo, data were collected from 20 dairy farms, livestock markets, and abattoirs. Cows' body condition, lameness, and udder condition (as binary outcomes) were assessed at 4 points: when placed on the culling list, before leaving the farm, at auction, and at the abattoir. Based on the first 5 mo of data (baseline period), information materials were provided to 10 randomly selected farms (Informed treatment), and the other 10 served as a Control. Logistic mixed models were used to test differences in cows' condition at the 4 points of assessment, using the assessment before leaving the farm as a reference value and cow-within-farm as a random effect. The effects of providing information on outcome measures (proportion thin, severely lame, with udder edema, poor fitness for transport, euthanized, and died) were tested with a general linear model. As demand for milk increased during the baseline period, additional linear mixed models were fitted to test whether the same outcome measures were affected by time (baseline or treatment period) and treatment (Informed or Control) using farm as a random effect. While cows were on the culling list (before shipping) the odds of being thin or having poor fitness for transport increased. After leaving the farms, cows spent (mean ± standard deviation) 82 ± 46 h in the marketing system before being slaughtered. Shipping from farm to abattoir increased the odds of being thin, having udder edema, or showing poor fitness for transport [odds ratio (OR) 5.8, 95% confidence interval 4.2 to 8.1; OR 14.7, 10.7 to 20.2; and OR 7.3, 5.7 to 9.5, respectively]. Providing this information to farmers (Informed treatment) did not affect the outcome measures. Compared with the baseline, during the treatment period fewer cows were shipped when thin (4.9 versus 9.0%) and with poor fitness for transport (15.7 versus 25.8%), and fewer cows died (5.4 versus 11.9%) or were euthanized (13.3 versus 20.5%). Increased demand for milk appeared to lead to delayed culling, such that more compromised cows were sent to slaughter. The results of this study show a need for clear and specific guidelines to assess fitness for transport of cull dairy cows.

Abstract
Bovine viral diarrhea virus (BVDV) is a rapidly evolving, single-stranded RNA virus and a production limiting pathogen of cattle worldwide. 79 viral isolates collected between 1997 and 2013 in Canada were subjected to next-generation sequencing. Bayesian phylogenetics was used to assess the evolution of this virus. A mean substitution rate of 1.4×10-3 substitutions/site/year was found across both BVDV1 and BVDV2. Evolutionary rates in the E2 gene were slightly faster than other regions. We also identified population structures below the sub-genotype level that likely have phenotypic implications. Two distinct clusters within BVDV2a are present and can be differentiated, in part, by a tyrosine to isoleucine mutation at position 963 in the E2 protein, a position implicated in the antigenicity of BVDV1 isolates. Distinct clustering within all sub-genotypes, particularly BVDV2a, is apparent and could lead to new levels of genotypic classification. Continuous monitoring of emerging variants is therefore necessary.

Abstract
Pooled feces collected over two years from 1749 transport trailers hauling western-Canadian slaughter cattle were analysed by PCR for detection of Escherichia coli serogroups O26, O45, O103, O111, O121, O145, and O157. Sequential immunomagnetic separation was then used to collect bacterial isolates (n = 1035) from feces positive for target serogroups. Isolated bacteria were tested by PCR to confirm serogroup and the presence of eae, ehxA, stx1, and stx2 virulence genes. Based on PCR screening, serogroup prevalence in feces ranged from 7.0% (O145) to 94.4% (O103) with at least 3 serogroups present in 79.5% of samples. Origin of cattle affected serogroup PCR prevalence and O157 was most prevalent in feces from south-west Alberta (P < 0.001). All serogroups demonstrated seasonal variations in PCR prevalence, with O26, O45, O103, O121, and O157 least prevalent (P < 0.001) in cooler winter months, while uncommon serogroups O111 and O145 increased in prevalence during winter (P < 0.001). However, isolates collected during winter were predominantly from serogroups O103 and O45. No seasonal variation was noted in proportion of isolates which were Shiga toxin containing E. coli (STEC; P = 0.18) or positive for Shiga toxin and eae (enterohemorrhagic E. coli; EHEC; P = 0.29). Isolates of serogroups O111, O145, and O157 were more frequently EHEC than were others, although 37.6–54.3% of isolates from other serogroups were also EHEC. Shiga-toxin genes present also varied by geographic origin of cattle (P < 0.05) in all serogroups except O157. As cattle within feedlots are sourced from multiple regions, locational differences in serogroup prevalence and virulence genes imply existence of selection pressures for E. coli and their virulence in western-Canadian cattle. Factors which reduce carriage or expression of virulence genes, particularly in non-O157 serogroups, should be investigated.

Abstract
The current study evaluated 17 loads of cull beef cows transported in Canadian winter conditions to assess in-transit temperature and humidity, evaluation of events during loading and unloading, and animal condition and bruising. Regardless of the use of boards to block ventilation holes in trailers, temperatures were higher within trailers than at ambient locations during both travel and stationary periods (P < 0.01). Boarding was associated with smaller differences in trailer temperature, compared with ambient conditions, while the trailer was traveling at highway speeds versus when trailers were stationary (P < 0.01). Moisture levels within trailers were not different from ambient conditions when loads using boarding were traveling (P < 0.01), whereas loads without boarding had a larger difference (P < 0.01). The moisture within trailers relative to ambient conditions increased when trailers were stationary compared with traveling when boarding was used (P < 0.01). The majority of cattle transported were in good body condition (97.4% within BCS of 2 to 3.5) and had calm temperaments (96.7%). Although all comparisons were made, only the doghouse compartment had an increased risk of severe bruising compared with all other compartments (odds ratio [95% confidence interval]: 3.0 [1.6–5.5], 3.7 [2.1–6.4], 2.2 [1.3–3.7] and 3.8 [1.5–9.6] in comparison with the back, belly, deck, and nose compartments, respectively; P < 0.05). Increasing the duration of waiting to unload 30 min relative to a 1 h duration increased the odds of severe bruising by 1.18 times (95% confidence interval: 1.09–1.29; P < 0.01). Scoring systems that have been developed for auditing unloading of cattle had limited variation across loads at both loading and unloading. Pretransport assessment of animal condition using the American Meat Institute’s compromised animal score was the only scoring system that was consistent with posttransport scores. We inferred from the temperature and humidity data in the current study that under commercial conditions, boarding may increase ventilation within trailers during travel and decrease ventilation during stationary periods. The current study provides the first indication that issues in Canadian cull cow transport may be related to pretransport animal condition and management of unloading.

Abstract
This review identifies priorities for beef cattle welfare research in the USA. Based on our professional expertise and synthesis of existing literature, we identify two themes in intensive aspects of beef production: areas where policy-based actions are needed and those where additional research is required. For some topics, considerable research informs best practice, yet gaps remain between scientific knowledge and implementation. For example, many of the risk factors and management strategies to prevent respiratory disease are understood, but only used by a relatively small portion of the industry. This is an animal health issue that will require leadership and discussion to gain widespread adoption of practices that benefit cattle welfare. There is evidence of success when such actions are taken, as illustrated by the recent improvements in handling at US slaughter facilities. Our highest priorities for additional empirical evidence are: the effect of technologies used to either promote growth or manage cattle in feedlots, identification of management risk factors for disease in feedlots, and management decisions about transport (rest stops, feed/water deprivation, climatic conditions, stocking density). Additional research is needed to inform science-based recommendations about environmental features such as dry lying areas (mounds), shade, water and feed, as well as trailer design.

Abstract
Schemes for the assessment of farm animal welfare and assurance of welfare standards have proliferated in recent years. An acknowledged short-coming has been the lack of impact of these schemes on the welfare standards achieved on farm due in part to sociological factors concerning their implementation. Here we propose the concept of welfare performance based on a broad set of performance attributes of an enterprise and describe a tool based on risk assessment and benchmarking methods for measuring and managing welfare performance. The tool termed the Unified Field Index is presented in a general form comprising three modules addressing animal, resource, and management factors. Domains within these modules accommodate the principle conceptual perspectives for welfare assessment: biological functioning; emotional states; and naturalness. Pan-enterprise analysis in any livestock sector could be used to benchmark welfare performance of individual enterprises and also provide statistics of welfare performance for the livestock sector. An advantage of this concept of welfare performance is its use of continuous scales of measurement rather than traditional pass/fail measures. Through the feedback provided via benchmarking, the tool should help farmers better engage in on-going improvement of farm practices that affect animal welfare.

Abstract
This study is the first comprehensive examination of long-haul cattle being transported across Canada and off-loaded for feed, water and rest. A total of 129 truckloads were observed at one of two commercial rest stations near Thunder Bay, Ontario. Data collected included information regarding the truck driver, the trailer, the trip, the animals and animal handling. The majority of the loads stopping were feeder calves (60.94%) while 21.09% were weaned calves, and the remaining 14.84% were market weight cattle. The truck loads surveyed were in transit for, on average, 28.2 ± 5.0 hours before stopping and cattle were rested for an average of 11.2 ± 2.8 hours. These data suggest that loads stopping at the rest station were adhering to the regulations stated in the Health of Animals Act, which outline a maximum of 48 hours in transit before a mandatory stop of at least 5 hours for feed, water and rest. There was a large amount of variability around how well recommendations, such as stocking density were followed. Further research is required to assess how well cattle are coping with long-distance transport under current regulations and industry practices.

Abstract
The objective of this study was to evaluate the effects of the forage-to-concentrate ratio (F:C) of diets fed before and during short-term feed restriction (FR) on rumen fermentation, absorptive capacity of the reticulorumen, and apparent total tract digestibility. Twenty ovariectomized and ruminally cannulated Angus × Hereford heifers were blocked by BW and individually penned in box stalls (9 m(2)), having free access to water throughout the study. Heifers were randomly assigned to 1 of 2 dietary treatments, receiving either a high forage diet (HF; F:C of 92:8) or a moderate forage diet (MF; F:C of 60:40). Diets were fed ad libitum for 14 d before 5 d of baseline measurements (BASE) followed by 5 d of FR where heifers were restricted to 25% of ad libitum DMI relative to BASE. Dry matter intake was measured daily and ruminal pH was recorded every 2 min throughout the study. Ruminal fluid and blood samples were collected on d 3 of BASE and FR whereas short-chain fatty acid (SCFA) absorption was assessed in vivo using the isolated washed reticulorumen technique on d 5 of BASE and FR. Indigestible NDF was used as a marker to estimate apparent total tract digestibility. Diet × period interactions (P = 0.030 and 0.025) were detected for DMI and ruminal SCFA concentration, respectively. The interaction was the result of greater DMI and numerically greater SCFA concentration for MF than HF during BASE, with a reduction observed for both during FR, although treatment effects were no longer present. Period effects (BASE vs. FR) but not treatment effects (P > 0.05) were detected for mean ruminal pH (P < 0.001) and the total SCFA absorption rate (mmol/h; P = 0.038). During BASE, mean pH was reduced (6.4 vs. 6.9) and the SCFA absorption rate was greater relative to FR (674.5 vs. 554.8 mmol/h). Diet (P < 0.001) and period (P < 0.001) effects were detected for DM and OM digestibility with greater digestibility occurring for heifers fed MF than HF (70.5 vs. 63.3% for DM and 73.0 vs. 66% for OM) and greater digestibility during FR than BASE (69.5 vs. 64.3% for DM and 71.7 vs. 67.2% for OM). During FR, NDF digestibility was also greater than during BASE (P < 0.001; 62.4 vs. 55.8%). The effect of FR on serum NEFA differed by diet (diet × period, P < 0.001) with NEFA being greater for heifers fed HF than MF during FR (474.4 vs. 377.7 μEq/mL, respectively) with no differences observed between HF and MF during BASE. It can be concluded that severe short-term FR had a negative impact on ruminal SCFA absorption and energy balance and that altering the F:C of the diet does not mitigate these effects.

Abstract
Our objective was to determine if the severity of short-term feed restriction (FR) affects the timeline for recovery of the absorptive function of the reticulo-rumen and barrier function of the total gastrointestinal tract in beef cattle. Eighteen ruminally cannulated and ovariectomized Angus × Hereford heifers were housed in individual pens. Heifers were blocked by initial BW into 3 blocks and, within block, randomly assigned to 1 of 3 treatments that differed in the severity of FR: heifers were restricted to 75, 50, or 25% of ad libitum intake. Treatments were imposed during a 5-d period of FR followed by 3 consecutive wk of recovery (REC1, REC2, and REC3). Throughout the experiment heifers were fed the same diet (60% forage:40% concentrate) for ad libitum intake (except during FR) and water was available at all times. Dry matter intake was measured daily and ruminal pH was recorded every 2 min during FR and recovery periods. Ruminal fluid and blood samples were collected on d 3 of the FR and d 5 of REC1 and REC3. Short-chain fatty acid (SCFA) absorption rates were evaluated on the last day of FR, REC1, and REC3 using the temporarily isolated and washed reticulo-rumen technique. On d 2 of FR and d 4 of REC1 and REC3, a 1 L solution of Cr-EDTA (180 mM) was dosed into the rumen followed by 48 h of total urine collection. Dry matter intake (% BW) increased rapidly in REC1 for heifers restricted to 75 and 50%; however, heifers restricted to 25% needed at least 2 wk to recover (treatment × period; P < 0.001). Regardless of the severity of FR, the duration that pH < 5.5 was the highest during REC1 (period P < 0.001). However, an interaction was found for the acidosis index, with pH × min/kg of DMI being greatest in heifers restricted to 25% on d 1 of the recovery period. A treatment × period interaction was found for the absolute absorption rate (mmol/h) of total SCFA (P = 0.009). The total SCFA absorption rate was not different for heifers restricted to 75 and 50% across periods, whereas an increase from FR and REC1 to REC3 was detected for heifers restricted to 25% of ad libitum intake. A treatment effect was observed for urinary Cr output (P = 0.027) indicating that heifers previously restricted to 25% of ad libitum intake had greater Cr excretion in urine during FR and recovery. This study indicates that severe FR negatively affects the time required for recovery of reticulo-rumen absorptive function and total tract barrier function. Another important finding is that regardless of severity, FR increases risk for ruminal acidosis when heifers have free access to feed after FR.

Abstract
The objective of the present work was to study space allowance in cattle during commercial long haul transport (≥400 km; n = 6,152 journeys). Surveys, delivered to livestock transport carriers, gathered information on the number, BW, and distribution of cattle by trailer compartment as well as the characteristics of the transport vehicles used. Space allowance (SA; m(2)/animal), allometric coefficient (k = SA / BW(0.6667)), and the percentage of deviation from recommended SA (DRSA; %) in the Canadian Codes of Practice were calculated for each compartment of the trailers. All quad-axle (77%) and tri-axle (23%) cattle trailers were reported with 5 compartments (nose, deck, belly, back, and doghouse). Sixty percent of all animals were carried in the middle compartments (deck and belly), 30% in the rear (back and doghouse), and 10% in the front or nose. Approximately 30% of the journeys required that the cattle be redistributed at the Canada-USA border to comply with different axle weight regulations, and most journeys moved them between the deck and the doghouse. Total loaded weight increased and the number of animals decreased with increasing BW of the animals. space allowance, k-value, and DRSA were least for calves and feeders compared with fat and cull cattle (p < 0.01). Both total loaded weight and number of animals increased with the number of axles in the trailer, being greatest in quad-axle trailers pulled by push tractors, which were most frequently used. Space allowance (k-value) was least in vehicles with greater number of axles and transporting the lightest cattle (i.e., quad-axles trailers transporting calves and feeders). Space allowance, k-value, and variability among journeys were least in the middle compartments (belly and deck), followed by the back, then doghouse and nose compartments of the trailers showing the largest values (p < 0.05). Many factors contributed to the variability in SA such as body size (smaller animals are placed more densely), compartment of the trailer (greater density in belly and deck), and number of axles on the vehicle (greater density with more axles). The present study provides a framework to assess and understand factors affecting SA during commercial long distance transport of cattle. This information is vital in assessing the consequences of changing industry standards, guidelines, recommended values, laws and regulations on animal welfare, the industry, and economics.

Abstract
The objective of the present study was to identify and quantify several factors affecting shrink in cattle during commercial long-haul transport (≥400 km; n = 6,152 journeys). Surveys were designed and delivered to transport carriers to collect relevant information regarding the characteristics of animals, time of loading, origin and destination, and loaded weight before and after transport. In contrast to fat cattle, feeder cattle exhibited greater shrink (4.9 vs. 7.9 ± 0.2% of BW, respectively; P < 0.01), and experienced longer total transport durations (12.4 vs. 14.9 ± 0.99, respectively; P < 0.01) due to border crossing protocols which require mandatory animal inspection. Shrink was greater (P < 0.001) for feeder cattle loaded at ranches/farms and feed yards compared with those loaded at auction markets. Cattle loaded during the afternoon and evening shrank more than those loaded during the night and morning (P < 0.05). Shrinkage was less in cattle transported by truck drivers having 6 or more years of experience hauling livestock compared with those with 5 yr or less (P < 0.05). Shrink increased with both midpoint ambient temperature (% of BW/°C; P < 0.001) and time on truck (% of BW/h; P < 0.001). Temperature and time on truck had a multiplicative effect on each other because shrink increased most rapidly in cattle transported for both longer durations and at higher ambient temperatures (P < 0.001). The rate of shrink over time (% of BW/h) was greatest in cull cattle, intermediate in calves and feeder cattle, and slowest in fat cattle (P < 0.05) but such differences disappeared when the effects of place of origin, loading time, and experience of truck drivers were included in the model. Cull cattle, calves and feeder cattle appear to be more affected by transport compared with fat cattle going to slaughter because of greater shrink. Several factors should be considered when developing guidelines to reduce cattle transport stress and shrink including type of cattle, ambient temperature, transport duration, driving quality, and time and origin of loading.

Abstract
This paper reviews the effects of road transport on the welfare, carcass and meat quality of cattle, swine and poultry in North America (NA). The main effects of loading density, trailer microclimate, transport duration, animal size and condition, management factors including bedding, ventilation, handling, facilities, and vehicle design are summarized by species. The main effects listed above all have impacts on welfare (stress, health, injury, fatigue, dehydration, core body temperature, mortality and morbidity) and carcass and meat quality (shrink, bruising, pH, color defects and water losses) to varying degrees. It is clear that the effect of road transport is a multi-factorial problem where a combination of stressors rather than a single factor is responsible for the animal's well-being and meat quality post transport. Animals least fit for transport suffer the greatest losses in terms of welfare and meat quality while market ready animals (in particular cattle and pigs) in good condition appear to have fewer issues. More research is needed to identify the factors or combination of factors with the greatest negative impacts on welfare and meat quality relative to the species, and their size, age and condition under extreme environmental conditions. Future research needs to focus on controlled scientific assessments, under NA conditions, of varying loading densities, trailer design, microclimate, and handling quality during the transport process. Achieving optimal animal well-being, carcass and meat quality will entirely depend on the quality of the animal transport process.
