Abstract
Maternal nutritional management during gestation appears to modulate fetal development and imprint offspring postnatal health and performance, via altered organ and tissue development and tissue-specific epigenetics. This review highlighted the studies demonstrating how developmental programming could be explored by beef producers to enhance offspring performance (growth, immune function, and reproduction), including altering cow body condition score (BCS) during pregnancy and maternal supplementation of protein and energy, polyunsaturated fatty acids (PUFA), trace minerals, frequency of supplementation, specific amino acids, and vitamins. However, this review also highlighted that programming effects on offspring performance reported in the literature were highly variable and depended on level, duration, timing, and type of nutrient restriction during gestation. It is suggested that maternal BCS gain during gestation, rather than BCS per se, enhances offspring preweaning growth. Opportunities for boosting offspring productive responses through maternal supplementation of protein and energy were identified more consistently for pre- vs. post-weaning phases. Maternal supplementation of specific nutrients (i.e., PUFA, trace minerals, and methionine) demonstrated potential for improving offspring performance, health and carcass characteristics during immunological challenging scenarios. Despite the growing body of evidence in recent years, the complexity of investigating developmental programming in beef cattle production is also growing and potential reasons for current research challenges are highlighted herein. These challenges include: (1) intrinsic difficulty of accurately measuring cow milk production multiple times in cow-calf systems; (2) larger focus on Bos taurus vs. Bos indicus breeds despite the predominance of Bos indicus-influenced beef breeds in tropical/subtropical environments and their specific, and sometimes opposite, physiological and performance outcomes compared to Bos taurus breeds; (3) limited focus on interaction between prenatal and postnatal management; (4) sex-specific outcomes following similar maternal nutrition during gestation; (5) greater focus on nutrient deficiency vs. excess; (6) limited implementation of immunological challenges; and (7) lack of multigeneration and longer periods of offspring evaluation. This review provides multiple evidence that such obstacles need to be overcome in order to significantly advance the scientific knowledge of developmental programming in beef cattle and promote global beef production.

Abstract
Effective early postnatal nutritional management is a crucial component of livestock production systems, and nutrient manipulation during this period has been shown to exert long-term consequences on beef cattle growth and physiology. Metabolic imprinting defines these biological responses to a nutritional intervention early in life that permanently alter physiological outcomes later in life. Early weaning has been used to study metabolic imprinting effects, given that it allows for nutritional manipulation of animals at a young age. This practice has been shown to enhance carcass characteristics in feedlot cattle and accelerate reproductive development of females. Another strategy to study the effects of metabolic imprinting without the need for early weaning is to provide supplements via creep feeding. Providing creep feed to nursing cattle has resulted in transient and long-term alterations in cattle metabolism, contributing to increased reproductive performance of developing heifers and enhanced carcass quality of feeder cattle. Collectively, results described herein demonstrate nutrient manipulation during early postnatal life exerts long-term consequences on beef cattle productivity and may be a strategy to optimize production efficiency in beef cattle systems.

Abstract
Simple Summary The global beef industry is currently challenged with improving production efficiency while fostering judicious use of limited natural resources. Sustainable management systems are warranted to ensure that worldwide demands for beef and ecological stewardship are met. Supplementing cattle with omega-6 fatty acids is a nutritional intervention shown to sustainably enhance productivity across different sectors of the beef industry. The purpose of this review is to discuss recent research that describes the advantages of supplementing omega-6 fatty acids on traits that are critical to beef production efficiency, including reproduction, immunocompetence, growth, and quality of carcass and beef products. Abstract Global beef production must increase in the next decades to meet the demands of a growing population, while promoting sustainable use of limited natural resources. Supplementing beef cattle with omega-6 fatty acids (FAs) is a nutritional approach shown to enhance production efficiency, with research conducted across different environments and sectors of the beef industry. Omega-6 FA from natural feed ingredients such as soybean oil are highly susceptible to ruminal biohydrogenation. Hence, our and other research groups have used soybean oil in the form of Ca soaps (CSSO) to lessen ruminal biohydrogenation, and maximize delivery of omega-6 FA to the duodenum for absorption. In cow–calf systems, omega-6 FA supplementation to beef cows improved pregnancy success by promoting the establishment of early pregnancy. Cows receiving omega-6 FA during late gestation gave birth to calves that were healthier and more efficient in the feedlot, suggesting the potential role of omega-6 FA on developmental programming. Supplementing omega-6 FA to young cattle also elicited programming effects toward improved adipogenesis and carcass quality, and improved calf immunocompetence upon a stress stimulus. Cattle supplemented with omega-6 FA during growing or finishing periods also experienced improved performance and carcass quality. All these research results were generated using cattle of different genetic composition (Bos taurus and B. indicus influenced), and in different environments (tropical, subtropical, and temperate region). Hence, supplementing omega-6 FA via CSSO is a sustainable approach to enhance the production efficiency of beef industries across different areas of the world.

Abstract
The supplementation of rumen bypass fat (RBF) has remained one of the preferred approaches used to decrease undesirable saturated fatty acids (FA) and increase beneficial unsaturated FA in the meat. This study was planned to evaluate the influences of rumen bypass fats on meat quality, fatty acid and metabolic profiles in male Dorper sheep (n = 36) with 24.66 ± 0.76 kg (mean ± standard error) initial body weight. Treatment comprised a basal diet (30:70 rice straw to concentrate) with no added RBF as a control (CON), basal diet with prilled fat (PF), basal diet with prilled fat plus lecithin (PFL) and basal diet with calcium soap of palm fatty acids (CaS). The findings revealed that cooking loss, drip loss and shear force in longissimus dorsi (LD) muscle were not affected by RBF supplementation, while meat pH was significantly higher in the CaS on aging day 1. However, the diet supplemented with prilled fat and lecithin modified the meat's fatty acid profile significantly by increasing unsaturated fatty acids and decreasing saturated fats. The relative quantification of the major differentiating metabolites found in LD muscle of sheep showed that total cholesterol, esterified cholesterol, choline, glycerophosphocholine and glycerophospholipids were significantly lower in CaS and PFL diets, while glycerol and sphingomyelin were significantly higher in CaS and PFL diets. Most of the metabolites in the liver did not show any significant difference. Based on our results, the supplementation of protected fats did not have a negative influence on meat quality and the meat from Dorper sheep fed prilled fat with lecithin contained more healthy fatty acids compared to other diets.

Abstract
This experiment compared the performance and physiological responses of the offspring from cows supplemented with Ca salts of soybean oil (CSSO) or prilled saturated fat (CON) during late gestation. Nonlactating, pregnant, multiparous Angus × Hereford cows (n = 104) that conceived during the same fixed-time artificial insemination protocol were assigned to this experiment. Cows were ranked by pregnancy sire (one of two sires), body weight (BW), and body condition score (BCS) on day -15 of the experiment (day 180 of gestation). Cows were then assigned to receive (dry matter basis) 415 g of soybean meal per cow daily in addition to: 1) 195 g/cow daily of CSSO (n = 52) or 2) 170 g/cow daily of CON (n = 52). Cows were maintained in two pastures (26 cows/treatment per pasture) and received daily 12.7 kg/cow (dry matter basis) of grass-alfalfa hay from day -15 to calving. Cows were segregated into 1 of 24 feeding pens three times weekly and received treatments individually from day 0 to calving. Calves were weaned on day 290 of the experiment, preconditioned for 35 d (day 291 to 325), and transferred to a feedyard, where they remained until slaughter (day 514). Cows receiving CSSO and their calves had greater (P < 0.01) plasma concentrations of linoleic acid and total ω-6 PUFA compared with CON after calving. Concentrations of immunoglobulin G in the colostrum and in calf plasma 24 h after birth were greater (P ≤ 0.02) in CSSO vs. CON cattle. Calves from CSSO cows had greater (P ≤ 0.05) expression of adipogenic (adipocyte fatty acid-binding protein and stearoyl-CoA desaturase) and myogenic (myogenic differentiation 1 and myogenin) genes in the longissimus muscle (LM) compared with CON. No treatment differences in birth BW, weaning BW, and final preconditioning BW were noted (P ≥ 0.36). Average daily gain and final BW in the feedyard were greater (P ≤ 0.05) in steers from CSSO cows compared with CON. The incidence of calves diagnosed with BRD that required a second antimicrobial treatment was less (P = 0.03) in calves from CSSO cows, resulting in reduced (P = 0.05) need of treatments to regain health compared with CON. Upon slaughter, LM area was greater (P = 0.03) in calves from CSSO cows compared with CON. Collectively, these results are indicative of programming effects on postnatal offspring growth and health resultant from CSSO supplementation to late-gestating cows. Hence, supplementing CSSO to beef cows during pregnancy might be a feasible alternative to optimize offspring productivity and welfare.

Abstract
Simple Summary Consumers value quality beef and producers are starting to look at the ways production decisions affect the long-term performance of the animals. Early weaning is a production option in many beef cattle production environments. We are looking at the addition of rumen by-pass lipids in addition to early weaning to increase the marbling of steers. The supplementation of rumen protected lipids’ increased plasma concentrations of fatty acids. Supplementation of rumen-protected lipids improved carcass quality of young steers by increasing marbling scores and lipid concentration of steaks without negatively impacting dressing percentage. Therefore, a combination of early weaning and rumen by-pass lipid supplementation can be used as management practices to meet current consumer demands. Abstract The objective of this study was to determine how weaning age, days on supplements, and lipid supplementation affected the growth and marbling deposition of steers. Steers from a single sire were early weaned (n = 24) at 150 ± 11 days of age or traditionally weaned (n = 24) at 210 ± 11 days of age. Steers were assigned to control (n = 12/weaning group) or an isocaloric, isonitrogenous rumen by-pass lipid (RBL, n = 12/weaning group) for either 45 (n = 6/treatment) or 90 (n=6/treatment) days then harvested. Steer body weight (BW) was recorded on days −14 and −7, then BW and blood samples were collected on days 0, 22, 45, 66, and 90. The right rib section of each animal was collected for proximate analysis. Longissimus dorsi from RBL steers had increased lipids compared with control steers (3.6 ± 0.2 vs. 2.4 ± 0.2% on a wet basis; p < 0.0001). Steers fed for 90 days had greater (p = 0.02) concentrations of Longissimus dorsi lipid (3.3 ± 0.2%) than those fed for 45 days (2.7 ± 0.2%). There was a weaning age by treatment by days on feed interaction for intramuscular adipocyte diameter (p = 0.02) in which early weaned RBL fed for 90 days steers had an increased adipocyte diameter compared to the early weaned control fed for 90 and early weaned fed for 45 days steers with all other treatment groups as intermediates. Supplementation of RBL increased concentrations of C18:2, C20:4, and total fatty acids on days 45 and 90 (p ≤ 0.05). Data show that RBL supplementation increased the marbling content of the Longissimus dorsi. Furthermore, a longer period of supplementation resulted in increased adipose diameter.

Abstract
This experiment was designed to evaluate the effects of lipid source and fatty acid (FA) profile on intake, performance, carcass characteristics, expression of enzymes, and sensorial analysis of Bos indicus animals offered a high-concentrate diet. On day 0, 96 noncastrated animals were blocked by initial body weight (400 ± 19.3 kg), randomly allocated to 1 of 24 pens (4 animals/pen), and pens were randomly assigned to receive: 1) control: basal diet composed of whole cottonseed and corn germ as lipid substrates (CONT; n = 6), 2) calcium salts of fatty acids (CSFA) of soybean: CSFA of soybean oil as replacement for whole cottonseed and corn germ (calcium salts of soybean oil [CSSO]; n = 6), 3) CSFA-Blend: CSFA of palm, cottonseed, and soybean oil as replacement for whole cottonseed and corn germ (calcium salts of vegetable oils [CSVO]; n = 6), and 4) Mix: basal diet containing whole cottonseed, corn germ, and CSVO (MIXT; n = 6). Experiment lasted 108 d and performance, ultrasound measurements, as well as carcass characteristics were evaluated. Additionally, meat FA profile, expression of enzymes involved in lipid metabolism, and sensorial analysis were evaluated. No treatment effects were observed on performance variables, ultrasound, and carcass traits (P ≥ 0.22), whereas animals receiving CONT had a greater intake of C10:0, C16:0, C16:1 trans-9, C18:1 cis-9, C18:2, C18:3, total FA, monounsatured FA (MUFA), and polyunsaturated FA (PUFA) vs. CSSO and MIXT (P < 0.05). Conversely, intake ratios of saturated FA (SFA):MUFA and SFA:PUFA were all reduced for CONT vs. other treatments. Meat obtained from CONT animals had greater colorimetric (L*, a*, and b*) values vs. MIXT (P < 0.01). On meat FA profile, CONT increased C18:0 vs. supplementation with calcium salts (P < 0.02) and supplementation with CSSO yielded greater meat concentrations of C18:1 trans-10 and C18:2 CLA intermediates (P < 0.01). Expression of SREBP-1, SCD, and LPL was downregulated for CSSO (P < 0.05). For sensorial analysis, regular flavor was greater (P = 0.01) for CSSO vs. other treatments, but also greater aroma (P = 0.05) vs. CONT and CSVO. In summary, addition of different lipid sources with varying FA profiles into high-concentrate diets did not affect performance and carcass characteristics of B. indicus animals, but supplementation with calcium salts of soybean oil inhibited the mRNA expression of enzymes involved in lipid metabolism, whereas flavor and aroma were positively affected by this lipid source.

Abstract
The objetive of the current study was to determine the effect of maternal energy status during late gestation on growth performance, carcass characteristics and meat quality of steer progeny. At 180 ± 4 d of gestation 56 multiparous Angus cows were blocked by BW and expected calving date and asigned to three levels of nutrition energy: SR (severe restricted; 50% of NRC requirement), MR (moderate restricted; 75% of requirement) and NR (no restricted; 100% of requirement). After parturition, all cows were managed in a single group during lactation. A total of 25 male calves (SR = 8 calves; MR = 9 calves; NR = 8 calves) were born from pregnant cows and all pens had at least one male calf. After weaning, male calves were separated of female calves and were stockered on native range until 24 ± 0.1 months of age then placed into a feedlot for 104 d before harvest. Cow BW and BCS decreased linearly (P < .01) as nutritional energy restriction increased. Calves from SR dams were lighter (P = .04) than calves from MR and NR dams at parturition, however, at weaning and harvest BW was similar for SR and NR steers and decreased in MR steers. Steers from SR dams demonstrated catch-up growth with a tendecy to increased ADG from birth to harvest compared to MR and NR steers (P = .06). Hot carcass weigth was similar in SR and NR steers and increased in MR steers (P = .01). Longissimus muscle area was not affected (P > .10) by maternal energy status, however, 12 rib fat thickness was greater in SR and MR compared to NR steers (P < .01). Tenderness of Longissimus muscle was decreased in MR compared to SR and NR steers after 3d of aging. No treatment differences (P > .10) were observed in sarchomere length or collagen content. Adipocyte diameter was similar (P > .10) between treatments suggesting that decreased 12th rib fat thicness in MR steers could be due to decreased fat tissue hyperplasia. These results indicate that level of energy restriction during late gestation does no have linear response on growth performance and carcass quality of steers progeny.

Abstract
This study evaluated the effects of supplementing Ca salts of soybean oil (CSSO) to beef steers at 2 mo of age via creep-feeding, and/or during a 40-d preconditioning period on performance and carcass development responses. A total of 64 steers were enrolled in this study over 2 yr (32 steers per year), with 4 periods each year: creep-feeding (CF; day 0 to 60), preweaning (day 61 to weaning on day 124 and 127 of year 1 and 2, respectively), preconditioning (PC; day 132 to 172 in year 1 and day 135 to 175 of year 2), and feedlot (feedlot arrival to slaughter, day 173 to 378 in year 1 and day 176 to 385 in year 2). On day 0 steers were ranked by body weight (BW) and age (114 ± 4 kg of BW; 66.1 ± 0.9 d of age) and allocated to 1 of 16 pens. Pens were randomly assigned to receive CSSO during CF (80 g/d per steer) and/or PC (150 g/d per steer) in a 2 × 2 factorial arrangement of treatments. During CF and PC, nonsupplemented steers (CON) were provided an isolipidic prilled saturated fat supplement. Steer BW was recorded on day 0, 60, at weaning, and prior to feedlot shipping. Carcass traits were recorded upon slaughter. On day 0, 60, at weaning, prior to feedlot shipping, and during the feedlot period, blood samples were collected and longissimus muscle (LM) biopsies were collected. On day 60, steers that received CSSO during CF had greater (P < 0.01) plasma concentrations of linoleic and ω-6 compared with CON (CF treatment × day; P ≤ 0.05). Steers that received CSSO during PC had greater (P < 0.01) plasma concentrations of linoleic, ω-6, and total fatty acids compared with CON at feedlot shipping (PC treatment × day; P ≤ 0.05). A PC treatment × day interaction was also detected (P = 0.04) for mRNA expression of peroxisome proliferator-activated receptor gamma (PPAR-γ), which was greater (P = 0.04) at feedlot shipping for steers receiving CSSO during PC. Interactions between CF treatment × day were detected (P ≤ 0.01) for mRNA expression of adipocyte fatty acid-binding protein, fatty acid synthase, PPAR-γ, and stearoyl-CoA desaturase, which were greater (P ≤ 0.02) in the feedlot in steers receiving CSSO during CF. No treatment differences were detected for (P ≥ 0.18) performance or carcass traits, including marbling and backfat thickness. Results from this study suggest that supplementing CSSO to suckled beef steers via creep-feeding upregulated mRNA expression of the adipogenic genes investigated herein later in life. These outcomes, however, were not translated into improved carcass quality.

Abstract
The effect of a rumen-protected long-chain fatty acid (LCFA) supplement on live performance, meat quality, blood serum fatty acid profile, and predicted carcass composition was evaluated in this study. Angus steer calves (n = 99) were fed a low energy diet for 77 d prior to finishing. Prior to study initiation, the steers were separated into 12 pens with eight or nine steers per pen. Steers were transitioned from the low energy forage–based diet to a high concentrate diet containing high moisture ear corn, corn silage, dry rolled corn, soybean meal, and a liquid supplement containing monensin across 21 d. Megalac-R (RPFA) was fed to six pens at 2% of the diet dry matter. Control pens (CON; n = 6) received an additional 2% of diet dry matter as dry rolled corn and soybean meal. The final finishing diet net energy for gain (NEg) was 1.20 and 1.19 mega calories·kg−1 of dry matter (DM) for RPFA and CON treatments, respectively. Steers were weighed every 28 d. Growth performance data including average daily gain (ADG), gain to feed ratio (G:F), and DM intake (DMI) were calculated as both monthly and overall data. After a 147-d finishing phase, steers were transported to a commercial abattoir for slaughter. After a 28-h chilling period, carcass data were obtained by trained personnel. Final live weights were greater (P = 0.01) for RPFA than CON cattle. Overall ADG and overall G:F was increased (P = 0.02; P = 0.01, respectively) for RPFA cattle. Ribeye area, backfat thickness, kidney pelvic heart fat, marbling score, and yield grade did not differ (P > 0.05) between treatments. Predicted percent carcass fat was increased for RPFA cattle (P = 0.05). Conversely, predicted percent carcass protein (P = 0.07) and bone (P = 0.06) tended to be greater for CON cattle. Long-chain fatty acid supplementation during the finishing phase did not increase marbling scores of the steers in this study but did increase final live weight, HCW, and predicted total body fat. These results suggest that RPFA supplementation has the potential to increase adipose tissue development. However, it is likely that animal age during supplementation and duration of supplementation impact the effect RPFAs have on carcass characteristics.

Abstract
The concept of developmental programming was established using epidemiologic studies that investigated chronic illnesses in humans, such as coronary heart disease and hypertension. In livestock species, the impacts of developmental programming are important for production and welfare reasons and are used as research models for human and other animal species. Dams should be in adequate nutritional status to ensure optimal nutrient supply for fetal growth, including development of their immune system. Beef and dairy cows with insufficient nutrient intake during gestation produce calves with reduced immunity against diseases, such as scours, respiratory disease, and mastitis.

Abstract
Simple Summary Rising populations and urbanization are transforming into increased demand for livestock products, particularly in developing countries. The world will need more meat and more milk and in order to meet these demands, huge quantities of feed resources will be required. However, there is a substantial deficit of energy feeds affecting the growth and production of animals. The common method to increase energy value of ruminant diets is to provide them with fats. However, higher level of fats in the diet could prove toxic to rumen microbes and affect fibre digestibility, which ultimately results in reducing the feed intake and lowering animal production. These negative effects of fat supplementation can easily be overcome by feeding ruminants with specifically designed fats called rumen protected fats. In order to evaluate the efficacy of rumen protected fats (RPF), three different types of protected fats were examined in sheep. The results suggested that different types of protected fats have no unfavourable influences on the ruminal fermentation and productive parameters. Therefore, prilled fat, prilled fat with lecithin and calcium soaps did not improve animal performance as compared to the diet without protected fats in Dorper sheep. Abstract Rumen protected fats (RPF) are known to improve animal performance without affecting rumen metabolism in sheep. However, comparative effects of prilled fat, prilled fat with lecithin and calcium soap have not been fully studied. Hence this experiment was planned using 36 male Dorper sheep in a completely randomized design in four treatment groups. The diets included: Basal diet (70:30 concentrate to rice straw) with no added RPF as a control (CON), basal diet plus prilled fat (PF), basal diet plus prilled fat with lecithin (PFL) and basal diet plus calcium soap (CaS). The trial lasted 90 days following two weeks adaptation period. The body weights, average daily gain and gain to feed ratio were not affected by treatments. The intake and digestibilities of dry matter, organic matter, crude protein and neutral detergent fibre were not affected, while those for ether extract and crude fibre differed (p < 0.05). RPF had no effect on concentrations of ammonia nitrogen, total volatile fatty acids and total bacterial population. The concentrations of rumen total saturated fatty acids, unsaturated fatty acids, total n − 3, total n − 6, unsaturated fatty acids:saturated fatty acids and polyunsaturated fatty acids:saturated fatty acids differed (p < 0.05) among the treatments with RPF supplementation. Hence supplementation of different types of protected fats did not influence animal performance in Dorper sheep.

Abstract
The objective of this study was to determine whether crude protein intake during the last three months of gestation affects growth performance, carcass characteristics and meat quality of steer progeny. At 134 ± 14 d of gestation, 68 multiparous Angus cows were blocked by BW and expected calving date and randomly assigned to diets that contained either low or high dietary crude protein concentrations and were allotted in 12 pens per treatment. After calving, cows were managed together on improved pastures during lactation. After weaning at 219 ± 13 d of age, steers calves were stockered on natural pastures until 687 ± 13 d of age then placed into a feedlot for 83d before slaughter. Maternal dietary protein concentration had no influence on offspring body weight and growth rate during rearing or finishing phases (P > .10). Rib fat thickness of steers was not affected (P = .38) by maternal nutrition treatments, however, LM area was greater in HP steers than LP steers at entrance into the feedlot (P = .01) and end of finishing phase (P = .04). Hot carcass weight was similar between treatments (P = .69), however dressing percentage was increased in HP relative to LP steers (P = .01). Tenderness of Longissimus muscle was increased in HP compared to LP steers after 3 and 14d (P < .001) of aging. No treatment differences in troponin-t degradation (P = .77) and collagen content (P = .58) were observed. Muscle fiber diameter was similar in LP and HP steers (P = .20), suggesting that increase of LM area in HP steers could be due to muscle hyperplasia. These data indicated that level of protein during mid to late gestation does not affect offspring growth but has impacts on carcass composition and meat quality of steer progeny.

Abstract
The present review will present the recent published results and discuss the main effects of nutrients, mainly fatty acids, on the expression of genes involved in lipid metabolism. In this sense, the review focuses in two phases: prenatal life and finishing phase, showing how nutrients can modulate gene expression affecting marbling and fatty acid profile in meat from ruminants. Adiposity in ruminants starts to be affected by nutrients during prenatal life when maternal nutrition affects the differentiation and proliferation of adipose cells enhancing the marbling potential. Therefore, several fetal programming studies were carried out in the last two decades in order to better understand how nutrients affect long-term expression of genes involved in adipogenesis and lipogenesis. In addition, during the finishing phase, marbling becomes largely dependent on starch digestion and glucose metabolism, being important to create alternatives to increase these metabolic processes, and modulates gene expression. Different lipid sources and their fatty acids may also influence the expression of genes responsible to encode enzymes involved in fat tissue deposition, influencing meat quality. In conclusion, the knowledge shows that gene expression is a metabolic factor affecting marbling and fatty acid profile in ruminant meat and diets and their nutrients have direct effect on how these genes are expressed.

Abstract
This experiment compared performance and physiological responses of the offspring from cows supplemented with Ca salts of PUFA or SFA + MUFA during late gestation. Ninety-six multiparous, nonlactating, pregnant Angus × Hereford cows were ranked by BW, BCS, and age and divided into 24 groups of 4 cows/group at the end of their second trimester of gestation (d -7). Cows conceived during the same estrus synchronization + AI protocol, with semen from a single sire; hence, gestation length was 195 d for all cows at the beginning of the experiment (d 0). Groups were randomly assigned to receive (DM basis) 405 g/cow daily of soybean meal in addition to 1) 190 g/cow daily of Ca salts of PUFA based on eicosapentaenoic, docosahexaenoic, and linoleic acids or 2) 190 g/cow daily of Ca salts of SFA + MUFA based on palmitic and oleic acids (CON). Groups were maintained in 2 pastures (6 groups of each treatment/pasture) and received daily 10.1 kg/cow (DM basis) of grass-alfalfa hay. Groups were segregated into 1 of 12 drylot pens (6 by 18 m) and individually offered treatments 3 times/wk from d 0 until calving. Cow BW and BCS were recorded, and blood samples were collected on d -7 of the experiment and also within 12 h after calving. Calf BW was also recorded within 12 h of calving. Calves were weaned on d 280 of the experiment, preconditioned for 45 d (d 280 to 325), transferred to a growing lot on d 325, and moved to a finishing lot on d 445, where they remained until slaughter. At calving, PUFA-supplemented cows had a greater ( < 0.01) proportion (as % of total plasma fatty acids) of PUFA, including linoleic, linolenic, arachidonic, docosapentaenoic, and docosahexaenoic acids. At weaning, calves from CON-supplemented cows were older ( = 0.03), although no treatment differences were detected ( = 0.82) for calf weaning BW. During both growing and finishing phases, ADG was greater ( ≤ 0.06) in calves from PUFA-supplemented cows. Upon slaughter, HCW and marbling were also greater ( ≤ 0.05) in calves from PUFA-supplemented cows. Collectively, these results indicate that supplementing eicosapentaenoic, docosahexaenoic, and linoleic acids to late-gestating beef cows stimulated programming effects on postnatal offspring growth and carcass quality. Therefore, supplementing late-gestating beef cows with Ca salts of PUFA appears to optimize offspring productivity in beef production systems.

Abstract
The objective of this study was to determine if supplementation frequency of rumen-protected fat (RPF) influences circulating serum concentrations of fatty acids (FA), NEFA, and urea nitrogen in beef heifers and lactating cows. In Exp. 1, 12 early gestation beef heifers were supplemented 0.5 kg of corn gluten feed (CGF) daily during a 2-wk adaptation period. During the last 3 d of adaptation, blood samples were collected immediately before supplementation and then 8 and 16 h postsupplementation daily. Each heifer was then randomly assigned to 1 of 3 supplementation frequency treatments of RPF (3, 5, or 7 d/wk) for 3 wk in a 3 × 3 Latin square design with 3 periods (4 heifers per treatment per period), with each treatment receiving the same amount of RPF and CGF per wk (1.0 and 2.7 kg as fed, respectively). Blood samples were collected during the final 3 d of each supplementation period as described in the adaptation period. In Exp. 2, 18 Angus crossbred cows in early lactation were supplemented with 4.54 kg (as fed) of CGF weekly either at 3, 5, or 7 d/wk during a 2-wk adaptation period. Blood samples were collected during the last 3 d of adaptation as in Exp. 1. For the subsequent 3 wk, RPF (530, 318, and 227 g/d when supplemented) was added to the CGF supplement so that each supplementation frequency received 1.59 kg as fed/wk of RPF. Blood samples were collected during the last 3 d of supplementation as in Exp. 1. Serum FA profiles on a random subsample of 9 heifers in Exp. 1 and all animals in Exp. 2 were determined via gas chromatograph (GC), and values were analyzed using the MIXED procedure of SAS. In Exp. 1, there were no differences ( ≥ 0.53) in serum FA profile across supplementation frequencies. There was a decrease in serum 18:2, 18:1 -9 and total FA during the sampling time (time effect, < 0.02). In Exp. 2, there was treatment × time effect ( ≤ 0.001) for both 18:2 and total FA measured. The 7 d/wk frequency had a greater concentration of C18:2 and total FA at 8 h of the sampling period when compared to the other 2 frequencies. These results demonstrate that supplementation of RPF at 3, 5 or 7 d/wk resulted in no changes in serum FA profiles in growing heifers. In early lactating beef cows, there were minor time point changes in serum FA due to supplementation frequency; however, the vast majority of time points were not different, indicating no substantial changes in serum FA profiles.

Abstract
The genomics era has led to an explosion in the study of gene expression in production animals. Intramuscular fat (IMF) content (both high and low) and composition are major quality attributes of meat, and more than 90 transcriptomic studies of IMF deposition have been undertaken in the ruminants and pigs since 2001, with the majority since 2008. The studies have implicated many genes involved in the control of adipogenesis, lipogenesis, and deposition of IMF, but there is relatively little consistency between the different studies. However, the genes encoding the synthesis enzymes acetyl-CoA carboxylase α, fatty acid synthase, and stearoyl-CoA desaturase; the fatty acid binding protein 4; the potential signaling protein thyroid hormone responsive; and the regulators C/EBPα, PPARγ, and sterol regulatory element binding transcription factor 1 are supported by 5 or more of the 90 studies. By combining the results of all the studies, complete pathways for long-chain fatty acid (LCFA) and triacylglyceride (TAG) synthesis are identified, as are a number of genes encoding proteins probably associated with the storage of TAG and genes encoding a number of known and potential adipokines. In contrast, support for the association of lipolytic pathways with IMF percentage is less strong. Differences in experimental design-in particular, the age of the animals, the rate of IMF deposition at sampling, the past nutritional history of the animals used, and the complexities of using a tissue with mixed cell types-have contributed to the differences in results and interpretation. Biomarkers predictive of future IMF percentage, facilitating reaching optimal IMF content at slaughter, may have industry utility, but to be useful in animal biopsy and postslaughter samples, where multiple cell types are present, genes must be carefully chosen to ensure that they are informative about the expected processes. Despite these problems, candidate biomarkers for estimation of de novo intramuscular adipocyte LCFA synthesis, LCFA uptake rate by intramuscular adipocytes, and IMF deposition rate have been identified and examples of their utility have been published.
