Fitness for transport of cull dairy cows at livestock markets

Can 60 days of feeding lead to increased fitness for transport in cull dairy cows?

The welfare of cull cows during transport to slaughter is a current concern in the Canadian dairy industry. Cull cows sold through auction often have a high prevalence of lameness, low BCS, hock lesions, and udder engorgement. To evaluate whether drying off and feeding cull dairy cows before transport can mitigate these challenges, 45 cows designated for culling were randomly assigned to either be fed for 60 d after being dried off (fed group; n = 24) or to serve as controls by being sent directly to slaughter (direct group; n = 21). Two fed group cows were removed for health reasons before completing the feeding period. Both fed group and direct group cows were assessed for locomotion (5-point scale), BCS (5-point scale), hock lesions (3-point scale), udder engorgement (3-point scale), and BW at the time of enrollment. Fed group cows, locomotion, BCS, hock, and udder engorgement scores were assessed weekly until slaughter. Weights of the fed group cows were measured again the day before slaughter. Mixed linear regression models were used to assess continuous outcomes BCS and weight. Mixed logistic regression models were used to assess dichotomous outcomes presence of hock lesions and lameness. Fed group cows gained an average of 116.9 kg over the feeding period (SE ± 8.20). Fed group cows had an average weight at slaughter of 834.2 kg, whereas direct group cows' average weight was 767.3 kg (SE ± 26.8). The fed group cows' average BCS at the start of the trial was 2.4, and at slaughter was 3.6, with an average gain of 1.2 BCS points. At slaughter, the proportion of udders involuted in the fed group was 45.1% (10/22) and in the direct group cows, was 0% (0/21). No differences were found in locomotion or hock lesions between the fed group and direct groups. It is important to weigh potential benefits for the fed group cows with the fact that direct group cows did not endure a drying off procedure, nor were they placed at risk of potential adverse health events. However, despite these potential limitations, due to the improved BCS and udder engorgement scores, cows fed for 60 d may be better prepared for the transportation to slaughter, as well as sell for a higher price due to increased BW and body condition.

Improving market (cull) dairy cows carcass traits and meat quality

Despite a high volume of market (cull) dairy cows entering the food chain every year, beef from market dairy cows is largely considered insignificant when compared with beef from beef cattle in the market and is widely thought to be used for ground beef only. Our study aimed to evaluate the effects of feeding dairy market cows on a lactating TMR diet before slaughter on carcass and beef quality traits. Forty-three Holstein market cows were randomly assigned into 2 treatments: Fed or Direct. Fed cows (n = 22) were dried off, then fed a lactating cow TMR ration for approximately 60 d whereas Direct cows (n = 21) were sent directly to slaughter. Hot carcass weight (HCW) was used to calculate the dressing percentage (DP) together with the animals' body weight recorded when animals left the farm to go to the abattoir. At 24h post-mortem, the rib fat thickness (RFT) and rib eye area (REA) were measured by a certified grader. Afterward, rib samples were collected between the 12th -10th ribs from one side of the carcass and divided into 5 ribeye steaks. The first steak was used for intramuscular fat (IMF) content analysis by NIRS. The other 4 steaks were then aged for 7, 14, 21, or 28 d. Following aging, the steaks available were assessed for tenderness using the Warner-Bratzler Shear Force protocol. Data were analyzed by mixed linear regression to compare experimental groups for continuous outcomes. HCW of the Fed cows was higher than the Direct cows, with a mean HCW of 408.3 kg and 326.1 kg, respectively (SE ± 9.0). Average DP in Fed cows was 49.1%, compared with 42.5% in Direct cows (SE ± 0.69). The average percentage of IMF in Fed cows was 8.1% and in Direct cows was 5.0% (SE ± 0.43). Fed cows had a mean REA of 68.1 cm2 and Direct cows had a mean of 57.7 cm2 (SE ± 11.9). No differences were found for RFT. The steaks aged for 14 d resulted in meat with a mean shear force (SF) of 4.19 kg in Fed cows, while Direct cows had a mean SF of 6.28 kg (SE ± 0.29) Feeding market dairy cows for 60 d before slaughter enhanced carcass weight and yield, IMF content, and tenderness. These results indicate that approximately 60 d of feeding can improve the quality of market dairy cow meat and may help improve market cow value.

Awareness and perceived barriers to the adoption of best management practices for the transportation of lactating cull dairy cows of dairy producers in Ontario

The objectives of this study were to understand dairy farmers' awareness and perceived barriers to the implementation of best management practices (BMP) for the transportation of lactating culled cows being moved to auction or abattoir. An invitation to participate was emailed to all dairy farms in Ontario, Canada. Responses to this invitation were used to recruit additional participants through criterion purposive snowball sampling. In total, 28 dairy producers participated in one of 5 semi-structured focus groups. All focus groups were audio recorded, transcribed verbatim, and analyzed with applied thematic analysis. Four themes were identified including 1) transfer of responsibility, 2) interpersonal relationships, 3) juggling priorities, and 4) complexities of long-term planning. While individual participant knowledge varied, participants described misconceptions that other producers held surrounding transport duration and distances, or the number of possible sales points for lactating culled cows. Participants did not agree whether the producer's responsibility ended once the cow left their property or if shared responsibility remained among all stakeholders from the farm to the final destination. Participants discussed the importance of existing trusted relationships with local cattle transporters and veterinarians to ensure information on best practices are shared. Participants also discussed how business pressures (e.g., production demands, space limitations) often challenge their ability to dry off lactating cows before transport; however, participants mentioned the degree of milk production may influence the destination of their animal (e.g., direct to slaughter for animals with high milk production). Some participants described a dynamic balance between business pressures and the potential for declining welfare of the animals under consideration to be culled during lactation. Participants posited that producers who did not prioritize proactive herd management and producers nearing retirement had limited long-term planning for culling individual cows, which might lead to transport of vulnerable or unfit animals. Finally, the lack of access to transportation direct to local slaughter was identified as an important barrier to adherence with the BMP for cull cows. In summary, many participants did not have an accurate understanding of what happens to cull cows after departing the farm and were unsure if they maintained a level of responsibility for an animal after being transported from their farm. Given the priority placed by participants on trusted interpersonal relationships, greater availability of peer-to-peer training of farmers and professional accreditation of animal transporters in addition to structural changes to increase local slaughter capacity may increase implementation of BMP and enhance lactating cull cow welfare.

A focus group study exploring dairy farmers' perspectives of cull cow management in Ontario, Canada

Introduction

Maintaining the welfare of cull dairy cows from the farm to slaughter is an ongoing challenge for the dairy industry. Recent research suggests that some cull dairy cows within the marketing system are in physical states that are below regulatory standards, and further research is required to determine why these unfit cows are found throughout the journey to abattoirs. Since dairy farms are the origin of these cows, decision making by dairy farmers has been identified as key to preventing cull cows that are considered unfit for transport from entering the marketing system. The objectives of this study were to understand dairy farmers' perspectives on their cull dairy cow management practices, recommendations and requirements of regulations, management tools, and welfare issues.

Methods

Four focus groups with a total of 21 participants were each conducted virtually, video recorded, and transcribed verbatim, with dairy farmers from Ontario, Canada. A thematic analysis of focus group discussions was conducted utilizing deductive reasoning.

Results

There were three themes identified including deciding to cull or not, management of cows being culled, and knowledge and perceptions of cull cow regulations. When making culling decisions, farmers utilize multiple sources of information including personal experiences and values and external referents like veterinarians, family members and other farmers. The welfare of their cows was a high priority but one that was often weighed against the financial outcomes of culling decisions. Finally, most participants considered recent regulatory changes for the management of cows before shipment to be of little importance on their farms.

Discussion

In conclusion, the farmers from this study showed the diversity of considerations they make in culling decisions and the large contribution of animal productivity and economic factors. There was a general lack of knowledge of recent regulatory changes for the shipment of cull cows, and there is room for improving the uptake of new recommendations for culling only cows fit for transportation.

Livestock hauler and dairy farmer perspectives about cull dairy cattle transport and cattle transport regulations in British Columbia, Canada

Dairy cows are usually culled and transported from the farm when they no longer meet the farm's standards for production or are not needed for milk production. Some cows are transported while in poor condition and may deteriorate further during transport. In February 2020, Canadian federal animal transport regulations were revised with the aim to minimise risks to livestock during transport; changes that may impact cull dairy cows included defining compromised cattle and limiting their maximum transport time. This study conducted semi-structured interviews with dairy farmers (n = 6) and cattle haulers (n = 4) in British Columbia, Canada, to gain an in-depth understanding of the effect of the regulations on their practices when shipping and transporting dairy cows to slaughter. Interviews were transcribed in Otter.ai and thematically coded in NVivo 12. While farmer and hauler participants recognised the importance of animal welfare during transport and described practices such as shipping mobile animals to reduce the risk that cows would become non-ambulatory during transport, they also described little change in shipping and transport practices due to the new regulations. Among interviewed participants, barriers to compliance with the regulations appear to be low knowledge of, and mixed or negative attitudes towards the regulations. Participants also described how they felt a lack of communication along the transport chain and limited transport and slaughter infrastructure made compliance difficult. Possible suggestions to remedy these barriers include providing educational resources about the regulations and encouraging communication about cow fitness for transport between responsible parties in the transport chain.

Livestock haulers' views about dairy cattle transport in Atlantic Canada

Surplus dairy calves and cull cows are often transported from the dairy farm to a variety of destinations and may experience compromised health and welfare in the process. Increasing interest in farm animal welfare by many stakeholders, including the public and policymakers, has brought about recent changes to livestock transport regulations in Canada that have likely affected transport operations across the country. The Atlantic region may be especially affected as a result of a smaller number of farms, and geography that often requires cattle to be transported long distances. We interviewed 7 livestock haulers in Atlantic Canada regarding their attitudes toward the recent changes to the transport regulations, particularly with regard to how these changes affected their business practices and dairy cattle welfare, as certain regulatory changes pertaining to calf transport were expected to disrupt existing transport practices. Thematic analysis of interview transcripts revealed 2 themes among participants: (1) calf (and sometimes adult cow) welfare and management during transport and on the dairy farm, and (2) feasibility of transport requirements and the enforcement of the regulations, including animosity toward other haulers and the challenge of satisfying both regulatory bodies and farmer clientele. These findings provide insight into the perspectives of an important, and often overlooked, stakeholder in the dairy industry on the transport system and highlight the need for inclusion of diverse voices when creating new policy.

Investigating the impact of pre-slaughter management factors on meat quality outcomes in cattle raised for beef: A scoping review

Introduction

The pre-slaughter management period is a critical juncture in the beef supply chain, having implications not only for animal welfare and product quality, but also for profitability. During this period, cattle are exposed to many stressors in a short time, many of which have been shown to impact meat quality. Understanding how cattle management during this terminal step in the production chain affects meat quality and economic outcomes is crucial.

Methods

The objective of this study was to investigate, synthesize, and report on research evaluating the impact of management factors during the pre-slaughter period on beef meat quality. A systematic approach was used to search for peer-reviewed and primary studies published in English in CAB Abstracts, PubMed, and Web of Science. A total of 3,217 non-duplicate records were screened for eligibility; articles were deemed eligible for inclusion if they included beef cattle in the pre-slaughter period and reported at least one meat quality outcome. After three screening rounds, 85 articles met all inclusion criteria. Data pertinent to the scoping review’s aims were extracted, including study location, population characteristics, pre-slaughter factors reported, and outcomes of interest.

Results

Europe (35, 41%) and South America (21, 25%) represented approximately two-thirds of the studies. Bulls (37, 43.5%) and steers (34, 40.0%) were the most reported sex classes, with the most frequent breed types reported as predominantly British or Continental and Bos indicus breeds (24, 28.2%; 24, 28.2%, respectively). Transportation (n=46), lairage (n=36), and handling (n=35) practices were the most reported pre-slaughter factors. Overall, 59 studies reported pH as an outcome of interest – almost double that of the next highest outcome, bruising (n=35). Muscle pH was most assessed with predictors at the abattoir (n=37); conversely, the effects of transportation were most evaluated on bruising (n=23).

Discussion

A trend across all the categories was that there were relatively few studies evaluating the impact of pre-transport factors on meat quality. Charting the relevant literature is a critical step towards understanding the relationship between pre-slaughter management and end-product quality; doing so will help industry stakeholders in the beef production chain optimize management practices that improve meat quality and enhance profitability.

A survey of dairy cattle farmers' management practices for cull cows in Ontario, Canada

Removal of cows from dairy cattle production is a routine and unavoidable practice of the dairy industry and is often referred to as culling. The objectives of this study were to use a survey to describe current on-farm cull cow management, farmers' perception of cull cows' journeys to slaughter, and the adoption of current recommendations and regulations by Ontario dairy farmers. All Ontario dairy farmers were invited to complete a cull cow management survey between December 2020 and March 2021 that included 44 questions covering farmer demographic information, farm characteristics, and cull cow management. The survey response rate was 7.4% (n = 248); a total of 226 of the responses were included in this study for analysis. Most respondents indicated they have a written standard operating procedure (SOP) for cull cows (62%), and 48, 13, and 15% of those identified they use their cull cow SOP “always,” “sometimes,” and “never,” respectively. The more confident respondents were that cull cows arrived at slaughter in the condition they left the farm the less likely they were to have a cull cow SOP [odds ratio (OR) 0.83]. The most important sources of information for the management of cull cows were the herd veterinarian (64%) and members of the marketing/regulatory organization the Dairy Farmers of Ontario (44%). Drug withdrawal time was the only factor most respondents (73%) considered “very important” for the assessment of cull cows prior to transport. Most farmers believe cull cows journey from the farm to slaughter is three or less days (55%), and the confidence of farmers that cull cows arrive at slaughter in the condition they left their farm was generally high. Lastly, most farmers (66%) identified they were familiar with recent regulatory changes around the fitness, duration of transport, and lactation status for cull cows. These results highlight farmers' perceptions of the impacts and durations of the journey of cull cows differs from reality, and there are misunderstandings of the requirements for cull cow management. Further research should investigate how different strategies for training farmers may lead to improved cull cow welfare and regulatory compliance.

Beef production from cull dairy cows: a review from culling to consumption

Although more than 3 million head of dairy cows enter the food supply chain in the U.S. every year, research on this topic remains limited and scarce. Meat production from dairy cows is a significant component of beef production, accounting for almost 10% of U.S. commercial beef production. Thus, the purpose of this review is to demonstrate the importance of dairy cows as a beef source, and to provide an overview on topics from farm to meat product-culling, marketing, transportation, welfare, body composition and its relationship with lactation particularities, carcass characteristics, meat quality, and traceability. Current scientific evidence has shown that culling a dairy cow at an appropriate time has beneficial effects on cow welfare and, consequently, cow value. During marketing the dairy cow is visually evaluated for health and factors associated with its expected carcass value; thus, marketing a well-conditioned cow will ensure that the animal is fit for transportation and provides high carcass yield. However, limitations such as low body condition score, lameness or mobility problems, and visual defects remain persistent. Even though beef harvest plants accommodate cows in all body composition states, the current carcass grade system does not reflect the mature cow industry needs. Therefore, improvement of the grading system could maximize carcass utilization and increase cow carcass value by recognizing subprimal cuts that could be merchandised as whole muscle cuts. Lastly, implementation of a traceability system would unify information from the farm to harvest assisting the industry in making further advancements.

Lameness in Beef Cattle: A Cross-Sectional Descriptive Survey of On-Farm Practices and Approaches

Cattle lameness is a concern to the United Kingdom (UK) cattle industry, negatively impacting upon welfare and production. Previous work involving one small study (n = 21) has identified that some UK beef farmers underestimate lameness prevalence, but also that farmers vary in their perception of the impact of lameness. Knowledge and skills of farmers were identified as a potential concern, and farmer-reported barriers were identified. However, the extent to which these views can be extrapolated is unknown. Therefore, the aim of this study was to produce descriptive results of UK beef farmer lameness-related activities concerning lameness identification, examination, treatment, and prevention. Questionnaires were circulated online and via post. Postal questionnaires were sent to registered Approved Finishing Units (a specific cohort of beef fattening units subject to strict biosecurity measures as part of UK bovine tuberculosis control) and a stratified sample of all registered beef enterprises in England and Wales. Online questionnaires were circulated on social media and via targeted emails asking selected industry bodies and veterinary practices to distribute to farmers. Descriptive results were produced, and thematic analysis was performed on free text responses. There were 532 usable responses, with most farmers self-reporting their current lameness prevalence as zero (mean 1.2%, range 0–20%). Most respondents did not locomotion score cattle, and most reported that it was not safe to examine feet. Most farmers did not use a foot bath, but of those who did, formaldehyde was the most commonly used product. Some farmers reported use of antibiotic foot baths. Most farmers reported dealing with lame animals within 48 h, but some only dealt with severe cases, and some felt that lame animals would get better by themselves. To deal with animals that have an ongoing lameness problem, transportation to slaughter was considered an option by 35% of farmers. It is worth noting, however, that the majority of lame animals would be precluded from transport under UK legislation. Farmers reported staff shortages, as well as a lack of time, training, and knowledge as barriers to lameness prevention and control. Overall, these results suggest that farmers may be underestimating lameness. Diagnosis is likely to be challenging, with unsafe facilities for lifting feet. The reported high threshold by some farmers for attending to a lame animal is a cause for concern, negatively impacting upon animal welfare, but this is also likely to have negative consequences for animal performance and farm profitability. Many participants in this study expressed a desire for farmer training in several aspects relating to lameness prevention and control, and this represents an opportunity for further knowledge exchange regarding lameness in beef cattle.

The effect of life history events on carcass merit and price of cull dairy cows

Cull dairy cows contribute almost 10% of national beef production in the United States. However, different factors throughout the life of dairy cows affect their weight and overall body condition as well as carcass traits, and consequently affect their market price. Therefore, the objectives of this study were: (1) to assess relationships between price ratio and carcass merit of cull dairy cows sold through several sites of an auction market and (2) to investigate the effect of animal life history events and live weight on sale barn price (BP) and price ratio (as a measure of relative price), as an indicator of carcass merit. Data from 4 dairy operations included 3,602 cull dairy cow records during the period of 2015 to 2019. Life history events data were collected from each dairy operation through Dairy Comp software; live weight and price were obtained periodically from the auction market, and the carcass data were provided by a local packing plant. Cow price in dollars per unit of live weight ($/cwt) and price ratio were the 2 outcome variables used in the analyses. Price ratio was created aiming to remove seasonality effects from BP (BP divided by the national average price for its respective month and year of sale). The association between price ratio and carcass merit traits was investigated using canonical correlation analysis, and the effect of life history events on both BP and price ratio was inferred using a multiple linear regression technique. More than 70% of the cows were culled in the first 3 lactations, with an average live weight of 701.5 kg, carcass weight of 325 kg, and dressing percentage of 46.3%. On average, cull cows were sold at $57.0/cwt during the period considered. The canonical correlation between price ratio and carcass merit traits was 0.76, indicating that price ratio reflected carcass merit of cull cows. Later lactations led to lower BP compared with cows culled during the first 2 lactations. Injury, and leg and feet problems negatively affected BP. Productive variables demonstrated that the greater milk production might lead to lower cow prices. A large variation between farms was also noted. In conclusion, price ratio was a good indicator of carcass merit of cull cows, and life history events significantly affected sale BP and carcass merit of cull cows sold through auction markets.

Animal-Based Measurements to Assess the Welfare of Dairy Cull Cows during Pre-Slaughter

Culling is the departure of cows from the herd as a result of sale, slaughter, health, national regulations, salvage, or death. Cull cows are removed from farms with poor health, production, behavior, or other problems, and during pre-slaughter they are sometimes kept without food and water, which compromises their well-being. The objective of the present study was to evaluate the welfare state of culled dairy cows during pre-slaughter using some animal-based measurements and to identify possible associations between them. Data were recorded for 62 different dairy production farms referring to 137 cull cows (n = 60 Holstein and n = 77 Normandy crosses) slaughtered in an abattoir in Colombia (South America). In this study, we evaluated and recorded land transport conditions, the health of animals on arrival to the abattoir, human-animal interaction, stress physiological variables and the association of these variables with characteristic bruises on the carcass, the lairage time, the presence of diseases, and the stage of pregnancy. In total, 98.5% of the cows were very thin, 35.7% were pregnant, and 84.7% had bruising on the carcass. In total, 74.5% had clinical conditions; these included skin lesions (32.4%), mastitis (27.5%), lameness (21.6%), vulvar secretions (8.8%), diarrhea (6.8%), and eye carcinoma (2.9%). The total number of cull cows with bruises during pre-slaughter was associated with lot size, transport time, presence of pregnancy, body score condition, and creatine kinase levels. The results suggest that the cows were not fit for transport because their health was severely affected before they left the farms. The animal-based indicators used in this study are useful for evaluating the welfare of cull dairy cows at abattoirs.

Association between Attitude and Empathy with the Quality of Human-Livestock Interactions

The attitudes and empathy of handlers influence human–animal interaction, thereby affecting their behavior toward animals. In this study, we evaluated the association between the attitude and empathy of livestock handlers towards the animals with the quality of human-livestock interactions. A structured survey instrument was used to assess managers’ attitudes and empathy towards livestock. The quality of handling was assessed by recording the individual behavior of each handler during commercial handling procedures; furthermore, it was ascertained whether the quality of handling was affected throughout the workday. Associations were found between the quality of the interactions used by the handlers towards the animals and the positive or negative attitude and empathy scores. It has been concluded that there is an association between handlers’ attitudes and empathy towards animals and the quality of human-animal interaction pre-slaughter.

Abstract

The human-animal interactions are a key component of human and animal welfare. The quality of this interaction can therefore be assessed by measuring the reaction response of the animals to the handler’s behavior. The aim of this study was to investigate the association between attitude and empathy towards the animals with the quality of human-livestock interactions. Additionally, we aimed to investigate whether the quality of cattle handling deteriorates as the working day progresses. A total of 18 livestock handlers and 1514 Colombian commercial Zebu steers were evaluated. A questionnaire pack consisting of 50 questions regarding demographic information, attitude and empathy characteristics was applied, using a structured interview. Each handlers’ responses to positive and negative attitude and empathy questions were calculated to produce a composite score. Observations of human-animal interactions were made at three times during the day (5:00, 7:00 and 9:00), each observation lasting 30 min. The handlers had an average age of 39.4 ± 3.4 y (range = 18–66 y), with little schooling but a lot of experience in the trade (17.13 ± 14.21 y). During handling, hitting, prodding and hand raising predominated over other actions (p < 0.05), and in response, the cattle behaved by freezing and running. Significant differences were found in the interactions used by handlers depending on the time of day (p < 0.05). The empathy total score ranged from 20 to 100, and the attitude total score between 24 and 120. The average attitude and empathy scores for handlers were 85.05 ± 6.92 (mean ±SD; range, 73–97) and 74.61 ± 4.72 (mean ±SD; range, 65–83), respectively. It has been concluded that there is an association between handlers’ attitudes and empathy towards animals and the quality of human-animal interaction during pre-slaughter.
